Doggone Silly American pet shop owner Dorothy Hunter is eating nothing but dog and cat food for a month to prove how nutritious it is. Hunter owns the Paw’s Natural Pet Emporium in Washington and is prepared to prove her pet food is natural and healthy. She started her pet food diet in June and stayed on it for a month. She told the Tri-City Herald: “You’d be surprised how tasty dog and cat food can be when it’s made right.” It hasn’t taken long for her unique month-long diet to generate the publicity it was clearly designed for.

Great Escape Security has been tightened up at a Nottingham school after pupils used stolen cutlery to tunnel their way out in a Great Escape style incident. Five students used knives, forks and spoons from the canteen to dig their way under a 15ft metal fence at the Djanogly City Academy. All of the escapees are said to be under 14-years-old and have been “spoken to” about their bid for freedom. Acting headteacher Elaine Crookes said: “We can confirm that five pupils tried to leave the school at lunchtime by getting below the fence on the fields at our Gregory Boulevard site. “We have spoken to the students concerned, and taken action to repair the hole.

“That part of the fence has also been reinforced. Our staff are supervising that area to ensure our students stay safe and in school.” In an email, assistant head Andy Roach asked staff to be on the lookout for more escape attempts. Pupils aged under 16 are not allowed out of the grounds without permission during the day.

Freedom of the Press I never had time for the News of the World when it was in print and have certainly not mourned its demise. When the former Editor of the sleazeball publication, Andy Coulson, was jailed over phone hacking recently my only surprise was at the leniency of the sentence. Their corrupt, malicious practices shamed the profession I was once proud of and it is rare these days that I use the word journalist if asked what I do for a living.

Keeping Cool! A Chinese dad has made sure his son stays cool in summer by making him a pair of underpants out of a watermelon. Ruifeng Fan from Taiwan had the idea after his five-year-old son complained about being too hot. He said: “I gave him a watermelon to eat which is usually the best way to cool down, and after cutting out the inside I suddenly thought that actually

the watermelon itself could probably be used to make a really cool pair of underpants. “So I cut out two holes for his legs and fitted it with a makeshift pair of braces, and he instantly had the coolest underpants in town.” In fact the youngster Hao loved the underpants so much, his dad later made him a watermelon hat and watermelon boxing gloves.

Postman Cat A postman had to make a special delivery to an animal rescue home after finding a cat in the back of his red van while delivering mail. The two-year-old tortoiseshell hitched a 67-mile ride from Southampton to Langley in Berkshire before being found by the real-life Postman Pat. The feline passenger was taken to the Old Windsor Battersea Dogs and Cats Home and named Jess by the staff in honour of Postman Pat’s beloved cat from the children’s TV series.

Tamara Willis, Battersea Old Windsor’s Cat Rehomer, said: “We have a lot of characters turning up at Battersea, but this week we had our very own Jess the cat. “Jess probably came from a loving home, but sadly her curiosity must’ve got the better of her before she got into the van and started her 67-mile journey from Southampton to Berkshire. “Her long journey shows the importance of microchipping your pet as you never know how far they can travel from home.”

Highlights of Morocco as a solo traveller by Diana Davies from Silver Travel Advisor. This is my first trip as a single traveller, taking a tour of Morocco with Archers Holidays. It’s also my first coach touring holiday, but I am always ready for a new adventure! DAY 1 Travelling to Marrakesh, and my first blast of the dry heat as I stepped down onto the tarmac and met Graham or Asis (he used both names) who was to provide an amazing commentary as he looked after us all throughout the week. The first hotel was very comfortable, overlooking High Atlas Mountains with their first sprinkling of snow. The wide tiled corridors were scattered with Moroccan rugs; the communal areas were cool and light separated by long voile curtains. DAY 2 Travelling to Casablanca where we met our first local guide; a very knowledgeable, devout Muslim who spoke perfect English, along with 7 other languages; she took us for the tour of the Grand Mosque Hassan II, the 7th largest in the world, built on pillars over the sea, and described its beauty, structure and importance to Muslims. DAY 3 We left for Rabat and Graham gave us wonderful information with amusing anecdotes. The heavily guarded Royal Palace grounds were enclosed by a twelfth century wall, and we learned that thrones were available in the ablution area – so as not to spoil the King’s view of course! On to view the Kasbah of Ouidais a maze of 8,500 streets, and to Meknes. This visit was only marred by the rain but then all of Morocco was praying for rain against 34 tourists who were not! Next stop Fez, the oldest of Morocco’s imperial cities where my room at the Hotel Mezneh with its draped curtains was reminiscent of a Bedouin tent.

DAY 4 By now we had become a group and mixed very easily with each other: joining together at dining tables and chatting as we got on and off the coach and moved around the various points of interest; I was no longer a lone traveller but a group member, an acquaintance. We began exchanging information about each other, our homes and families. We visited the Mullar, the Jewish quarter, then onto a panoramic view of the Medina, An evening out took us to a Riad (town house) with a belly dancer who also ate fire! A full evening finished off by the youngest lady in our group being dressed in traditional bridal wear and “married” to our tour director! Dull it was not.

DAY 5 -7: Through the mountains to Iframe; a lovely town showing much French influence. The temperature was soon reaching 30 degrees and we reached Rissini market. Back to the hotel where several guests had a swim before getting ready for a trip to the sand dunes to ride camels and watch the changing colours as the sun set. The Road of the 1000 Kashahs took us alongside the Sahara and to Ourarzazate, home of international movie making. DAYS 8, 9 and 10: The next day we passed areas where many films had been made, and

TRAVEL- LEISURE travelled 105 km along a mountain road arriving back at our first hotel in Marrakesh; this hotel had provided a great start to the holiday and would now be a fitting place for us to say goodbye. A visit to the Jmaa el Fna square at night alive with snake charmers and entertainment. A couple from our group volunteered to get up on stage after our meal and seemed quite unfazed by a scorpion placed on his face and a snake draped around her!. Where had the 10 days gone? They had passed in a kaleidoscope of colour, facts, countless anecdotes from Graham, and a variety of delicious foods all enriched by the companionship of my travelling companions. VISIT FLANDERS So far, 2014 has been an eventful year for VISITFLANDERS, with the centenary of the Great War taking place. The onset of Autumn is no exception and this month we bring news about the new Lace Museum opening in Bruges in mid September. Another opening taking place in Brussels, this September, including another famous Belgian export comes in the form of the new Belgian Chocolate Village. Also taking place next month is the long awaited Rubens exhibition. Looking further afield, we take a look at what is planned for Christmas this year with a full programme of festive fun ahead. So enjoy those late summer barmy evenings (we certainly hope so) and make the most of the long daylight hours! The New Bruges Lace Museum – Opening 19th September 2014 The Bruges history of lace began in the 16th century. Lace rapidly played an important role in art as well as on an economic and social level. The handicraft was protected and in the 19th century, religious congregations, such as the OLVHemelvaart Sisters (the school of Leo de Foere) and the Apostolinnen Congregation, also started schooling in lace.

On the 19th of September, the new Lace Centre will open its doors in the renovated old lace school of the Apostollinnen sisters on Balstraat 16. The new location, designed as a museum has been divided over three halls. Visitors will be acquainted with various types of lace and their geographic origin, the special nature of the lace industry in Bruges, the value of handicraft, the rapture and the aesthetics of lace. The concept is based on a contemporary and international perspective.

Hollywood director Lee Tamahori is preparing a new blockbuster production based on the story of Charles V. The film starring Adrien Brody casts him as the Holy Roman Emperor. The film, entitled ‘Emperor’ - will be partially shot in Flanders and in November, Ghent, native town of Charles V, will host the cast and crew for some crucial fliming scenes. The opening scene of the movie will be shot in Ghent and the Graslei and the Korenlei will temporarily be transformed in a 16th century port. Additionally, several other locations (mainly monasteries) and works of art (tapestries) will serve as location and/or inspiration for the movie.

The Belgian Chocolate Village opens 20th September 2014 - Brussels

Art and Culture Bozar Electronic Arts Festival - Brussels 25th -27th September 2014

Belgium’s biggest museum centre dedicated to chocolate (900 m²), opens on the 20th September 2014. It promises organised activities, culture and history for both adults and children. This protected heritage setting of the old Victoria chocolate & biscuit factory presents a modern museum exhibition, a workshop for making chocolates, a tropical greenhouse with cocoa trees and a chocolate parlour… all in the centre of Brussels, in the “chocolate-crazy” Koekelberg district.

Now into its second anniversary, the Bozar Electronic Arts Festival (BEAF) is already a reference for lovers of the electronic arts. BEAF attracts both specialists and the general public with artists who exploit the lightning pace of technological developments in order to express their ideas. Sensation and Sensuality – Rubens and his Legacy 25th September 2014 - 4 January 2015 – BOZAR Brussels

Rubens was a powerful creator of images who influenced artists from his time and indeed for centuries to come. Van Gogh, Van Dyck, Jordaens as well as Gainsborough, Piccasso and Klimt were just some of the artists he influenced. The exhibition in Bozar will feature at least 150 exception loans and will concentrate on six themes, Violence, Lust, Power, Elegance, Compassion and Poetry. The collection will open at the London’s Royal Academy early next year afterwards. In March next year, Rubens House in Antwerp will also host a separate exhibition entitled “Rubens and his Legacy” (28 March to 28 June 2015)focusing on portraiture and will include loans from Alte Pinakothek in Munich, the Liechtenstein Museum in Vienna, the Musée du Louvre in Paris and the British Museum in London.

To mark the 500th anniversary of Vesalius’s birth, the City of Leuven is offering a wide-ranging programme of cultural, academic and tourist activities in the autumn of 2014. In this new exhibition the M Museum not only highlights Vesalius the historical individual but also examines how, through the centuries, the image of the human body was clearly influenced by his work and the anatomical tradition developed after his example. It also focuses on the artistic conventions in anatomical prints, the architecture and setting of anatomical theatres, the moralizing discourse on the ideal body, and the rise of modern The Vesalius exhibition in M is the highlight of a broad cultural programme focussed on this medical genius. Also taking place around the theme will be productions focused around dancing, theatre, film, video, music and historical town walks.

Upcycling Festival - Hasselt 19th -21st September 2014 Hasselt is home to a great Fashion museum and the city attracts a great shopping reputation in Flanders. Designs to transform Ashton-under-Lyne Market PLANS to transform Ashton-under-Lyne’s historic Market Square into a modern, vibrant area have been submitted by Tameside Council. The redevelopment will see the introduction of new stalls and kiosks, high quality landscaping and trees, a performance area, seating areas as well as new street furniture and lighting. The plans follow extensive consultation with traders, shoppers and residents to ensure the space meets their needs while providing an attractive and inviting shopping and meeting point, which will enhance the markets already award winning offer and reputation. The new look square will also complement the Grade II*listed Ashton Market Hall and the ambitious Vision Tameside masterplan, where the Council is working in partnership with Tameside College to deliver a new

town centre campus and shared work space. This move is set to bring more than 3,000 students and staff into the town centre, increasing footfall and helping the market to remain a busy and thriving hub. Tameside Council Executive Leader Cllr Kieran Quinn said: “Ashton-underLyne Market Square is rich in history and holds a special place in the hearts of the public and traders alike. We want to retain the award-winning market’s charm and appeal while also giving it new life for the future – which is vital if it is to remain a strong contender to attract investment, new businesses and shoppers. “We have listened to the views of those who matter most – our residents, traders, local businesses and visitors and will continue to

DAWN FRENCH The Queen of British Comedy We’ve got so used to seeing comic actress Dawn French in roles where she’s anything but Dawn French that her latest solo tour is proving a bit of a revelation – both to audiences and to Dawn herself. 18

INTERVIEW It’s called “30 Million Minutes”, which is the amount of time she reckons she’s been on this earth. But in what she describes as a “sliver of time between the madness of my menopause – now thankfully over – and the impending madness of my dementia” she’s boldly, and at times bawdily, going where she has never gone before. Dawn is 56 now, arguably the long-term holder of the title Queen of British Comedy, and an award-winning actress, best-selling novelist and all-round funny lady. She’s written this new show based on her life and career, all with a sharp eye for comic detail as you would expect and a wicked ear for the absurdities of life. Dawn French of Cornwall shares how she misguidedly spent her whole life vigorously attempting to be a fully functioning female human. “It’s not a stand-up show. It’s not a play. I guess it is a monologue because it’s just me talking,” she states. “It’s a slide show to an extent. But not JUST a slide show. It’s not like your awful, most feared auntie who’s just come back from Egypt where you have to sit and watch everything. It’s quite autobiographical so I show you the people that have made me – so to speak.”

Growing up, she and her brother had been shielded from his depression. It was, she states, “just like a bomb went off in our family. My mum, of course, would have known there was danger. He’d lived his whole life with it but this was in a time when you didn’t say you had mental illness if you were the head of a family. I still have sadness about it. Massive sadness. And I think it’s been a centre point of my life, what happened with my dad.” Soon after her father’s suicide, Dawn started at the Central School of Speech and Drama in London to do a teaching course. There she met Jennifer Saunders, with whom she would form a hugely successful comedy double act. The pair began to make names for themselves on the alternative comedy scene in the 1980s and their longrunning TV show, “French and Saunders”, launched in 1987 introducing us to their madcap world. Roles in TV - including the iconic lead part in The Vicar of Dibley - and in the theatre have followed. She also has an autobiography and two novels to her name, not to mention high-profile TV advertising appearances that have kept her in the public consciousness and firmly associate her with chocolate oranges and insurance. Three years ago, Dawn revealed that she had lost seven and a half stone. She has since said that she’s put some of it back on and admits that eating is very comforting. “It’s a lovely thing to do,” she states. “We love tasting things. You don’t get to be spherical without liking eating things.”

Reviews of the show, now touring until the end of November from Nottingham to Southend and Bournemouth to Manchester, reveal a national ongoing affection not just for the characters that Dawn has played which have passed into entertainment folklore but also for Dawn herself. All of which is just as well because the show is a riveting 120 minutes about her life and, being Dawn, it’s not only larger than life but also deeply affecting. She was born in Holyhead, Wales, in 1957 when her father was stationed there with the RAF, but she spent much of her childhood in Cornwall and went to boarding school in Devon. At home, Dawn was a performer and her dad was, too. “He would tease me to discipline me,” she recalls. “Very loving teasing. Lots of things were dealt with at that quite sophisticated level of lots of fun.” Her father gave her confidence, and she remembers a “key moment” when she was leaving for a party. “I’ve always been a big girl and shouldn’t really have been wearing hot pants,” she says. Her father, though, was supportive. “He told me I was completely beautiful and how amazing I looked in them and that I would get loads of attention. So my dad gave me a sort of telling off that was about totally infusing me with confidence and I went on cloud nine to this party, and I’ve never actually left that party. It was armour.” Bearing in mind that closeness, however, it’s not difficult to imagine how devastated she was at 18 when her father killed himself.

And, although these days she is far from spherical and is a beautiful woman, she will only admit that she is “less than I was.” Fortunately, there is a generally held theory that Dawn French is rightly not defined by her weight, simply by her talent. She had a much-publicised divorce from comedian Lenny Henry after 25 years together, but they have an adopted daughter and she says they still have a “great” relationship. After the split, she found – in her 50s – that she was going on dates. “I’m not good at flirting. I’m good at being coy. What I’d rather do is give a questionnaire out and get people to tick boxes,” she says, laughing. Now, though, she has finally found happiness with Mark Bignell, who runs a charity, and when she talks about him she shuts her eyes in delight. They have recently had their first wedding anniversary and she says: ”It’s so new. It’s completely thrilling. It’s almost too delightful. I could almost burst with it.” And, for the thousands of fans who will see Dawn in person around the country, discovering more about who she really is, this is a wonderful – and very happy – postscript to her life so far.

1. Keep advice to a minimum Having had children yourself, you can use your experience to help your son or daughter but be warned – don’t offer it if you are not asked unless you really feel you need to. Try not to be too dictatorial, they may opt to do things differently which you must appreciate. This new stage means many visitors and lots of attention on the baby so be intuitive and resourceful and offer help when needed. 2. Reward and treat carefully Treating your grandchild and making them smile is what everyone wants. However, buy things in moderation and with the clearance from the parents. Overdoing treats can become more of an expectation rather than a reward. 3. Grand-parenting V. Child Care You may find at times you are asked to be a child carer. It is really important to find the time to spend with your

grandchildren. However, know when it’s too much for you and be fair to yourself too. 4. Brainstorm Brainstorm day trip ideas with your grandchild. Let them be involved so you end up doing what they truly would like to do (within reason!). There are lots of things you can do for little money like going for a walk in the woods using a compass and map, having a home-made picnic in the hills, making a campfire in the garden, cooking and arty things. 5. Reading Record yourself reading a few of your favourite children’s books and send the recording along with the books, or make a tape of songs you would sing if you were together with your grandchild for holidays. 6. Share Treasured Keepsakes Don’t litter your home with trinkets but a picture is pretty worthless unless

The young brain develops and changes at an incredible rate whilst learning and soaking up new information and experiences, but this means they are vulnerable to negative input which can have an adverse affect on their well being. This is why a child needs love, encouragement and sensible boundaries in order to mature into a well balanced adult and this is something the whole ‘team’ can help with. Allyson Houghton is an interior designer, with her own company, Ideas Interior, and she offers several useful tips on changing your home for the better on a sensible budget. “If you’re changing things, it’s worth trying to look at your home with a fresh eye,” she explains. “Start at the front of your house with the approach to the front door. Do you need a new front door or does the current one just need re-painting, perhaps adding new door furniture? Hanging baskets or pots can result in fragrance and colour here, too.” 25

Creating more light in your property can make rooms look fresh and attractive. “Begin with the HALLWAY as it’s the gateway to your home,” states Allyson. “Unless you’ve got a massive hallway with plenty of space, don’t go for wallpaper with big designs. “The idea is to push the walls back so go for plain, light colours and use mirrors to add to the illusion of space and reflect available light.” Paint all ceilings white, she advises. “Don’t be tempted to have colour on any of the ceilings as you lose precious light and start to bring the ceilings down.” Adopt the same principle for flooring. “If you’ve having carpet, avoid bold patterns or big stripes – go for plain in smaller areas as you keep the feeling of space.” And only go for wooden floors in areas practical for them: “Remember that outdoor shoes and stiletto heels can leave marks, so pick your area carefully.” If you want to put a feature wall in, for example, the LOUNGE, “think twice before using the fireplace wall as your feature wall – this could bring the room in. And go for the best wallpaper you can afford for this wall as it’s meant to last. You can often buy ends of lines from stores which are good value.”

To create a contrast wall, go for a deeper shade of the same colour as the other walls. “When shade and colour testing, don’t make the mistake of lining up your test colours side by side on the same wall. How can you get a true idea of the colour? Test each one separately, one at once,” states Allyson. “Use lining paper to achieve a true shade match if you are painting over magnolia walls.” Invest wisely in appropriate lighting for individual area, “Changing the lighting in a room can make a really big difference,” states Allyson. “For your lounge, select relaxing lighting perhaps with additional lamps. Don’t have a huge chandelier, for instance if the room isn’t very big and ensure the bulbs are pointing upwards. If you’ve got a really high hallway, though, a beautiful chandelier can look wonderful.” Strategic use of big mirrors throughout the house can make a real difference to a dark or narrow area. In the lounge, go for neutral shades on the walls but pick out accent colours in cushions and other soft furnishings. Investing in rich materials for your curtains can also give a room a new, opulent look.

If your sofa or three-piece suite is looking a bit dowdy, rather than buying a new one, why not have the old one re-covered? “This can look amazing,” states Allyson.


HOME buying the latest type of freestanding fridge, for example, will give it a more modern look. “Don’t necessarily go for an island unit just because everyone else does if you haven’t really got the space,” states Allyson. Changing the tiles – not necessarily going for expensive ones – can also refresh a kitchen’s style, as can changing the colour of your kettle, toaster etc for instant impact. BATHROOMS always benefit by looking pristine so ensure all surfaces are clutter-free and sparkling clean. If you can’t afford to change the suite, change the taps which can make a great difference and modernise the look of the suite. Alter the flooring to plain, light-reflecting tiles to maximise space here. Take a look at the latest shower panels and put in the odd splash of colour with bathroom accessories. Lighting is also really important here so consider installing inset ceiling lights which free up more space. And if you’ve still got an old water tank or boiler in the bathroom, buy a combi boiler - better value all round and it can be installed in the loft out of the way.

Just clearing surfaces and putting things away can make a great difference to a room. Rather than have laptops and computers kept out in a lounge, put them away in a desk or drawer and relax away from technology for a while. If you’re having a large, wall-mounted TV in your lounge, consider installing a studded wall to hide all the wires. “It’s tidier and gives you more wall space and clean lines,” advises Allyson. “Putting glass into doors between rooms can also really open up a room and affords more light.” Re-paint old doors otherwise – “and it’s surprising the difference that just changing the door handles can make,” she says. “Anything that gets your body moving”- this is what the specialists seem to say that constitutes an activity. So after retirement this means that there is a whole world of possibility of sports and leisure activities that are open to you. The basic thing to remember as you get older is to keep moving. On a basic level, making sure you don’t spend hours on end sitting down during the day. While some activity is better than none at all, to get the maximum health benefit, you should aim to do at least 150 minutes (2 Hours and 30 minutes) per week or moderate-intensity aerobic exercise. Studies have shown that outdoor activities are more effective than indoor activities, but one can adapt those activities to indoor as well. Leisure at this point in your life is very important as it replaces almost all of what you would have once done i.e. work. Aim to do about 10 minutes of activity per day. The more you do, the greater the health gains. A fun leisure activity to do could be RacketBall. It is played on a squash court with similar rules but with a bigger ball, and a shorter racket, which means you don’t have to warm up before you play and - all of which makes it easier than squash. However simpler sports like Running you might prefer. Anyone can do it. Running is accessible, although you might need to start with walking and slowly build that up to speed walking and then possibly running. But speed walking might be more appropriate, especially if you have hip or leg problems. Research has even 30

now shown that running can help slow ageing. In summary, a study was conducted in the University of California and examined 284 people, those who attended a running club and those who lived with a healthy attitude, but didn’t run. All participants were aged 50 and older, the study lasted for 21 years and the study showed that those who regularly ran lived longer and had a significantly reduced risk for heart disease, cancer, sleep disorders, and neurological diseases. Another good sport that demands good hand-eye coordination and discerning judgement can often be seen on greens and private clubs during the warmer months is Bowls. The bowls needed can be expensive to buy- from £53-£100- but through EBay, cheaper equivalents can be purchased. The sport encourages team activities, so has social benefits as well as health ones. If you’ve been inactive for a while, you don’t have to rush into exercising. It’s important to build up activity gradually to reach recommended levels. For a sport that is not only bound to England’s history, but is accessible to anyone of any age and is even available to people in wheelchairs, Archery has had a long history and is well renowned for its skill and precision. The most popular type of archery is at a stationary circular target so it is not necessary that you haven’t had training on horseback having shot an apple off someone’s head. Sports which focus more on flexibility and movement include Yoga and

Pilates. Linda Obertelli-Roden explains that these are especially important for older people because “As we get older our flexibility reduces muscles many shorten and tighten. Yoga can help get people flexible again”. It is a form of exercise that adapts to your needs and abilities and it can be done even by senior citizens, and deals with your whole being. It helps get your mind more relaxed, which is through the breathing exercises that can make you, feel more refreshed and cleanses the air passages when helps prevent respiratory ailments. One sport that anyone can try at any sport centre, and quite cheaply is Badminton. The aim of the sport is to hit a shuttlecock across a net and prevent opponents from returning it. Most sport centres provide badminton facilities and prices would depend on membership. Similar to badminton, Tennis has similar health benefits and is just as accessible. Tennis offers a wide range of cardiovascular benefits and the thrust and power of this sport it will rejuvenate and keep you young because of the pace and movement. Unlike badminton, tennis has larger benefits on your muscles because in a double-hand swing, to get that ball across to the other side your biceps will be working overtime. Like tennis and badminton Table tennis is a sport for all levels of fitness and also for those with disabilities or just restricted movement. Clubs and centres often have tennis tables set up and an informal game amongst friends would be great fun. If you’ve been inactive for a while, you don’t have to rush into exercising. It’s important to build up activity gradually to reach recommended levels. “The key to successful aging is adjusting,“ says Martha Grove Hipskind, a gerontologist.

RICK STEIN - IN SEARCH OF THE PERFECT CURRY

BEEF VINDALOO I have chosen to use shin of beef of here because it matches the beef in India, which can be pretty tough. This famous recipe from Goa calls for the overnight marination of the beef in vinegar and spices, and then a long, slow cooking till tender. The result is meat that falls apart and a rich, dark, thick sauce which has a delicious hot and sweet ‘vinegariness’. This is the real thing, quite unlike those absurdly hot vindaloos you get in Indian restaurants in the UK. When filming in Bangladesh a few years ago, our guide told me that a couple of his friends from Sylhet with restaurants in the UK had been to my restaurant in Padstow, had the monkfish vindaloo and pronounced it not a vindaloo at all. I said nothing, but the recipe came from Rui Madre Deus, my friend in Baga Beach, Goa, and I reflected that I probably knew more about Goan vindaloo then they did. Of the dishes in the book, this is one of my favourites.

SERVES 6 RECIPE NOTE The beef needs marinating for 12 hours or overnight. 750g boneless shin of beef, cut into 3cm-thick medallions For the marinade 5cm piece of cinnamon stick 1 tsp black peppercorns 1 tsp cloves 1 tsp cumin seeds Seeds from 12 green cardamoms 1 small onion, roughly chopped 40g/8 cloves garlic, peeled 25g/5cm ginger, roughly chopped 2 tbsp Tamarind liquid (SEE BELOW) 1 1/2 tsp salt 1/2 tsp sugar 2 tbsp Kashmiri chilli powder 1/2 tsp turmeric 5 tbsp white wine vinegar

METHOD

To cook the vindaloo 2 tbsp (30g) ghee or vegetable oil 1 small onion, chopped 3 medium, ripe tomatoes, sliced 3 fresh green chillies, halved lengthways, seeds removed 100ml water

For the marinade, grind the cinnamon, black peppercorns, cloves, cumin seeds and cardamom to a powder. Put the onion, garlic, ginger, tamarind, salt, sugar, chilli powder, turmeric and vinegar and all the ground spices into a mini food processor and blend together to a paste. Mix the beef and the paste together in a large bowl, coating the beef well. Cover the bowl and transfer to the fridge for 12 hours. To cook the vindaloo, heat the ghee in a large, sturdy pan or casserole over a medium heat. Add the onion and fry for 10 minutes until golden. Increase the heat to medium-high, add the beef and all its marinade paste and fry for 5 minutes, stirring occasionally. Stir in the tomatoes, green chillies and water, cover with a lid and cook for around 2 hours until the meat is tender, checking every so often that it’s not sticking or becoming dry, in which case add a splash of water. Serve.

TAMARIND

TAMARIND LIQUID

The dried pods of the tamarind tree are used as a souring agent, like kokum. The sticky pulp from inside the bean-like pod of the tamarind tree is used to add a slightly sweet tartness to many Indian dishes. Sold in two forms: rectangular blocks of raw pulp, which need to be mixed with warm water and strained to remove the hard black seeds, or in jars and tubs as a concentrated paste that might require diluting. I don’t think very much of the stuff in jars, it seems to lack the mouth puckering sourness that tamarind should bring to a dish. Instead it’s worth preparing it yourself.

Take 60g tamarind pulp and put it in a bowl with 120ml justboiled water. Leave to soak for 15 minutes, then work the paste with your fingers until it has broken down and the seeds have been released. Strain the slightly syrupy mixture through a fine sieve, rubbing it well against the sides of the sieve to extract as much of the liquid as possible. Discard the fibrous material and seeds left behind. The liquid is ready to use and will keep in the fridge for 24 hours.

AMRITSARI FISH In India, unlike in the UK, they are blessed with massive rivers everywhere, so the sight of plentiful, large freshwater fish is common in markets all over the country. They treat fish as they might mutton or paneer, and quite often cook it with a lot of spicy accompaniments, which I think we would find very agreeable if we were more familiar with it. This Amritsari fish is a case in point. When I first tasted it, I knew I had to get it on the menu in the Seafood Restaurant. In India it is often made with singara - a mildly flavoured, local river fish that tastes like a white sea fish with no trace of muddy flavour. I’ve used farmed bream in this recipe; you can also use bass. I like the chickpea flour in the batter; it gives the fish a pleasing savouriness. METHOD For the fish, mix together the ginger, garlic and vegetable oil, then rub this over the fish fillets and leave to marinate for 15 minutes. To make the batter, sift the chickpea flour, turmeric and salt into a bowl. Mix the egg with the ginger and garlic and 2-3 tablespoons of cold water. Whisk the liquid into the flour, adding a little more water if needed, until you have a smooth batter with the consistency of double cream. Heat the mustard or vegetable oil in a sturdy, deep sided pan over a medium-high heat. Drop a tiny amount of batter into the hot oil to check it’s hot enough; the batter should rise and bubble. Coat the fish in the batter, carefully add to the hot oil and fry for 2-3 minutes, turning once, until golden and crisp. Remove with a slotted spoon and drain on kitchen paper. Sprinkle with a pinch of chat masala and serve with lemon wedges, green chutney and kachumber salad.

Cool, then combine all the ingredients in a spice mixer or pestle and mortar and make a fine powder. Store in a sealed container out of the sunlight.

300g vine-ripened tomatoes, thinly sliced 1/2 cucumber, sliced 100g red onions, halved and thinly sliced 1 fresh green chilli, finely chopped 1/2 tsp toasted ground cumin seeds 1/4 tsp Kashmiri chilli powder Large handful of fresh coriander leaves, roughly chopped Freshly ground black pepper 1 tbsp freshly squeezed lime juice or white wine vinegar Lime wedges (optional), to finish Layer the ingredients, or gently toss together, just before serving. Serve with lime wedges, if desired.

2 tbsp black mustard seeds 4-6 tbsp mustard oil or vegetable oil 1 medium onion, thinly sliced 1 tsp turmeric 250ml coconut milk 250g fresh or frozen coconut flesh, blitzed in a food processor or grated 1 tsp salt 350g peeled raw prawns 4 fresh green chillies, with seeds, cut lengthway into sixths Handful of chopped coriander, to finish.

There are quite a few recipes for prawn and coconut in my book, but I love the combination. This is different in that I’m using coconut flesh as well as the milk. It’s a popular dish in Bengal, where of course both prawns and coconut abound. It’s normally served in a whole green coconut there, but that’s a bridge too far for us. I would suggest serving it, as in Bengal, as a little course in its own right, but it’s also delicious with some rice and flatbreads. METHOD Put the mustard seeds into a mini food processor and add 2 tablespoons of water. Blend for one minute then add another 2 tablespoons water and continue blending until the seeds start to break up (this can take a minute or two of persistent blending; add more water if you’re having trouble). Keep blending until you have a rough paste that resembles wholegrain mustard, adding a splash more water if needed. Set aside. Heat the mustard or vegetable oil in a heavy-based saucepan or karahi over a low-medium heat. Add the onion and fry for 10 minutes. Add the blended mustard paste, turmeric, coconut milk, grated coconut and salt. Bring to a boil then simmer for 4-5 minutes. Add the prawns and green chillies and simmer for a further 3-4 minutes until the prawns are pink and cooked through. Scatter with coriander and serve.

NIMISH This is a light, set cream from Lucknow flavoured with saffron and rosewater - a typical sweet from the era of the Nawabs and their very inventive chefs. It is standard practice to present the nimish covered with silver leaf as well as pistachios. Due to the almost unbearable heat in Lucknow in the summer, it’s a dish only produced in the cooler winter months; actually, the season only lasts when there is dew on the grass. I had heard that nimish incorporated the early morning dew and assumed this was a bit of romantic frippery, but it’s true; they do collect the dew at night and in the morning whisk it into the cream and milk.

SERVES 6-8 RECIPE NOTE Make the day before you plan to serve it. 450g double cream 50g icing sugar 1 tsp rosewater Pinch of saffron strands, soaked in 100ml warm milk for 15 minutes TO DECORATE Few chopped pistachios and edible silver leaf (optional).

METHOD Whip the cream until soft peaks just start to form - it’s important not to over-whisk it. Sift in the icing sugar then add the rosewater and the now cool saffron milk and strands. Whisk together for a minute until smooth and a few bubbles appear on the surface Pour gently into small serving bowls or glasses and chill overnight. Decorate with sliced pistachios, and silver leaf if you like. Serve.

A loving companion “Dog-walking is also a great way to socialise with other people. Dogs are 100 per cent reliant on their owners, which can give their owner a sense of purpose and someone to look after. They can also offer a great sense of security. Many people find that their retirement affords them the time needed to care for a dog and enjoy the constant companionship they offer.” First, there needs to be a realistic assessment of their situation by anyone wanting to own a dog. If you’re not able to take a dog out for daily walks then it may be worth considering a breed that doesn’t need that kind of exercise.

FOR many people a pet is a much-loved and constant friend to share daily life with and to provide a comforting presence. Of course, individual pets can mean far more to us. They are often a life-line to socialising with others, someone to make observations to and another live presence in the home when children have flown the nest. Even in a recession, we are still a nation of animal lovers with around 67 million pets in the UK. There are about 8 million dogs – about 23 per cent of all UK households owns at least one dog – and around the same number of cats. We keep about 20 to 25 million fish in tanks and the same number outdoors in ponds, 1 million rabbits, 1 million caged birds, 1 million guinea pigs and half a million hamsters. And that’s not to mention the assorted snakes, lizards, gerbils, horses, ponies, rats and even pigeons people in this country keep as pets today. Dogs, in particular, make wonderful companions for many older people. As Rebecca Eighteen from national rehoming charity Dogs Trust explains: “The general care of a dog means that owners have to stay active, come rain or shine.

If you live in a tiny apartment then, plainly, taking on a huge dog is not sensible. The same applies if you haven’t got a lot of time for grooming a long-haired dog that may require regular attention when a short-haired breed might be far more suitable. A frail person might find a large, boisterous dog hard to control. So breed, size, temperament and level of care all play a part in that choice. Dogs are also not cheap pets to keep. As well as the right food, a dog needs certain vaccinations as they could be at risk from distemper, parvo virus, viral hepatitis, leptospirosis, para influenza and kennel cough. Neutering also needs to be considered and it’s sensible to get your dog microchipped. This is a one-off fee that means he or she is then on a national database and can be returned if found wandering or lost, so this offers real peace of mind. There has been much publicity recently about puppy farming and the dangers of not buying a dog from a registered breeder. Seeing the conditions where the dog currently lives and, preferably, one or both of its parents is a good idea. This also gives an idea of how big the dog is likely to grow and its temperament. Rehoming centres, as run by charities like the Dogs Trust and the Border Collie Trust GB, are also good places to choose your pet. Adds Rebecca Eighteen: “At Dogs Trust we have many dogs in our rehoming centres that would

prefer an adult-only home without the hustle and bustle of young children. “If you are retired or nearing retirement and cutting back on your hours at work, a dog can be a wonderful way to stay active and connected within your local community.” Dogs like five year-old Rambo are awaiting owners. “He’d be well suited to a quiet adult home where he is the only pet. He would enjoy leisure walks with his new owner and a small garden where he can relax in the sunshine. He’ll make a very loyal companion and reward you tenfold with love in return for a warm, comforting home.” Similarly, at the Border Collie Trust, Ben Wilkes explains: “For those who don’t feel a pup or young dog is for them, we often have middle-aged or older dogs who, through no fault of their own, are looking for a new home and will provide an opportunity to enjoy the intelligence of the collie.” In common with most animal charities a rehoming fee is charged (in their case, between £80 and £150 depending on the dog’s age) as these groups tend not to receive any funding from central or local government or the National Lottery and have to raise funds for their vital ongoing work. All their dogs will be micro-chipped and vaccinated. In the same way, there are many abandoned cats of all ages that need a loving home. Cats also need vaccinations against a variety of feline diseases including cat flu. Vets’ fees can prove expensive so it’s worth shopping around, but it’s also well worth investing in pet insurance. For a relatively small monthly premium, you can cover a variety of treatment – often, in the case of something traumatic like an accident, when you are upset about your pet and glad of having this kind of practical cover. Many older people find that caged birds are very good companions and, again, it’s worth considering your lifestyle before you invest in your bird and the equipment it needs. For example, a vividly coloured Macaw may well catch your attention in a pet store and prove entrancing. But prospective owners need to realise that

long-living Macaws have special dietary requirements and should be handled and let out daily. Finches, canaries and budgerigars may not need as much daily care and are wonderfully rewarding birds. It’s certainly worth looking at the daily time commitment you can give to a pet, and your genuine willingness to make a pet part of your household. Whatever you decide, looking at all the options first – and taking out the necessary insurance – will ensure that you and your pet exist happily together for many years to come. A CHANGE OF DIRECTION

After having been made redundant from my job managing a health and social care watchdog earlier this year, I found myself in a quandary. Things at work had been horrible for some time before the axe finally descended, and I wanted to do something very different for a living. But what would I do? Whilst I was excited at the thought of change, being a ‘woman of a certain age’ (which sounds so much more romantic and mysterious than being within waving distance of sixty) I worried about the risks of starting a whole new career. I’m very keen on animals, particularly dogs, so I decided to look in that direction. I considered dog grooming, even going over to Dublin for a few days to meet up with a cousin who’s a groomer and help out in her salon. She loves her job (it is good fun) but finds it physically demanding, to the extent that she has regular appointments with a chiropractor. I knew whatever I was going to do, I was going to be doing it for some years (my pension pot is not fantastic), so I decided not to take on something which would require me to develop a whole new set of muscles and might result in repetitive strain injury. I next looked at home dog boarding. This is a growing field as people nowadays tend to take more holidays and, as they treat their pets as members of the family, they don’t like to put their dogs in kennels while they are away. In home boarding, the dog is looked after in the carer’s home. Owners can specify the routine that is kept (where the dog sleeps, when it is exercised, what it eats etc.) so they come back to a pet that is not stressed out by being stuck in a foreign environment like a kennel. I came across a business called

PetStay which had been set up in 2005 in Yorkshire. Carole Davy, the owner, had begun franchising the business a couple of years ago. I had a chat with her on the phone and then drove over to Hull to meet her and discuss taking on a franchise. I liked Carole straight away. She’s a good businesswoman, but also cares deeply about dogs and operates her business in an ethical, honest manner. I decided to take the plunge and buy a franchise. Thus, PetStay East Lancs & Bury was born. I’ve been operating for several exciting and nerve-wracking months now and so far have no regrets. I’ve met some lovely people (carers and owners) and some gorgeous dogs. I’m completely shameless when it comes to plugging my business; you can’t take your dog for a quiet walk in the park near where I live without me appearing over the horizon, waving a leaflet. My current priority is finding good carers (I’m very picky). They need to be at home during the day, so dogs aren’t left on their own for too long. They need to like to walk, they need to have a secure garden and, of course, they need to love dogs. Active retired people are ideal; caring for dogs is not going to provide an income you can live on, but will allow you to save up for a holiday while you’re keeping fit enjoying walks, cuddles and playtimes with lots of delightful dogs. I’m not going to make my fortune either, but by the second year I hope to be making enough to live on. Also, and most importantly, I will be doing a job I enjoy.

DEMENTIA FRIENDLY BOLTON Bolton Dementia Support Group are working hard to make Bolton a dementia friendly community. Staff and volunteers have been visiting local shops and businesses to make them more aware of the needs of people with dementia. Shop keepers are asked to read an information leaflet and providing they understood it they are awarded a ‘Purple Angel’ window sticker and lapel badge to show customers that they are a dementia friendly business. We are pleased with our progress on this project as over 100 shops and businesses in the Tonge Moor and Horwich areas have been awarded. Costa coffee shops in the borough have shown a particular interest in this project. Not only have they been awarded with the Purple Angel but they have also asked can they display our information leaflets in their coffee shops. Asda stores have also shown a particular interest in becoming dementia friendly, in particular the Astley Bridge store and their Community Life Champion Christine Baldwin. Christine was interested in making the staff at Asda dementia aware and so she organised a training session for staff with the chief officer of the charity Barbara Clarke. Christine plans to cascade this training to Community Life Champions in Asda stores across Greater Manchester in the hope to train all Asda staff. Christine Baldwin, who is a Community Life Champion at the Bolton ASDA says:-

“The Manchester region which has 20 super stores is currently fundraising for each of their local Dementia Support 58

Groups. Bolton, Farnworth Burnden Park and Horwich stores are raising funds for the Bolton Dementia Support Group. It is the hope that in the future the Dementia Awareness training will be cascaded around all of the regions within the business, resulting in Asda becoming a caring retail business for sufferers of Dementia.” Norman McNamara, a former Boltonian who now lives in Torquay, was diagnosed with dementia at the age of 50. Norms, along with his wife and friends down in Torquay, was instrumental in establishing one of the first dementia friendly communities in the UK. One of Norms’ most recent projects has been to create an information booklet for care staff in residential homes. We have adapted this booklet to make it more relevant

to Bolton and we hope to distribute these booklets to all residential homes in the borough to ensure that staff are trained in dementia care. Staff are asked to read the information and complete a questionnaire afterwards to demonstrate their understanding. Staff are then awarded a certificate and Purple Angel lapel badge and once the home have trained all of its care staff, the home itself is awarded a certificate and Purple Angel window sticker. Hyde Lee and The bungalow are the first two homes in Bolton to receive the Purple Angel. Our latest project is called Dementia Positive and will involve a drama production, dance production and artwork which portrays positive images of living with dementia. Sixth form drama students at Turton school have been asked to take part in the

drama production and have been involved in dementia simulation training to provide the students with an insight into what it is like to live with dementia.

“As a group of young Theatre Studies students, being part of a Dementia Positive programme has been an eye-opening experience. Dementia Positive is celebrating the strengths, creativity and insights of those living with dementia.” “Bolton is well on its way to becoming a Dementia Friendly town; we had the opportunity to visit the memory café at Trinity Church on Bury Road where we chatted with people living with dementia and their carers. From this experience, the theoretical information we had learnt became a reality. We spent an afternoon at the café where we played dominoes and learnt to line dance, whilst also taking part in activities to help with memory and coordination, which gave us an insight into stark reality of living with dementia. We were moved and amazed by what goes on in our town and we’re determined to play our part in helping Bolton become more dementia friendly.” “For our A level performance examination we will be performing verbatim accounts that we are gathering from our family members, teachers and the people in our community living with dementia. This subject has had a profound effect on us all.”

WHEN YOUR PARENT BECOMES YOUR CHILD The Alzheimer’s Society (2012) estimates that more than 670,000 people in the UK are acting as primary carers for loved ones with dementia, but this is putting dangerous levels of pressure on families who are already under excessive strain according Cognitive Psychologist Dr Lynda Shaw. Dr Shaw says: “Psychologists have charted the development of a growing child and their relationship with their parents for many years but there is little talk of the psychological effects of adult children becoming carers for their parent despite the huge strain on the carers which can affect their own mental state, finances, relationships, work and family. What is being underestimated is that the carer’s mental health is at risk and this depends on a myriad of factors such as their physical health, age, social support, level of resilience and cultural background.” It is nothing new that we are expected to look after our elders across many cultures, but as we are living longer what is new is the extent which we are needing to do this whilst balancing an ever increasing complex lifestyle. The figures are staggering. The population of older people in the UK is increasing and is only set to continue so that by 2034, 23% of

Three in five people will be carers at some point in their lives in the UK and carers save the state some £119 billion a year (Carers UK and the University of Leeds). “Often people become carers for all the right reasons; they love their parent and want to support them as they were supported as a child. However, older people often need care around the clock and this wears the carer down. The carer may become exhausted, frustrated and even isolated from their normal social and working network. The effect can lead to high levels of stress and anxiety.” So how can we help ourselves as carers? “Not being caught by surprise and being informed about the challenges and difficulties a loved one with dementia may face helps a carer with their role. The carer themselves having support and respite is crucial to being able to keep up the role as care-giver. Knowing that you are not alone and not being afraid to ask for help are also key.” Shaw says that carers can feel overwhelmed by the responsibility and how they can meet the needs of their parent as well as the rest of their family. Being a full time carer for a loved one can take its toll both mentally and physically. Shaw advises carers should try not to feel guilt if they need to prioritise their own family or they need to enlist outside help because of their work or other commitments.

TIPS FOR CARERS 1) Having a team of carers, perhaps with you at the helm, can ensure you are giving the best care to your loved one. Create a rota so everyone knows what the routine will be and so that there are no blank times when your loved one is alone when they shouldn’t be. 2) Talk to your family GP and ask about what help is available to you and your family and contact carers help groups to get further support. 3) Talk to your own family and discuss the issues so that everyone including your own children know what the situation is and how things may need to change. 4) Remember to enjoy spending time with your loved one. Laughing uses up the same amount of energy as crying. Try to keep upbeat and talk about what is happening outside of your caring role and about fun things you did together and perhaps can still do. 5) Get respite when you can. If you are exhausted you won’t be of use to anyone and then the whole house of cards will come tumbling down.
