A SMALL COUNTRY THAT WAS ONCE PART OF YUGOSLAVIA, MACEDONIA IS A HIDDEN GEM. ITS FOOD, HOWEVER, IS WIDELY KNOWN FOR DELIGHTING VISITORS, AND YOU CAN’T VISIT MACEDONIA WITHOUT TRYING THIS ORIENTAL PIZZA ALTERNATIVE CALLED PASTRMAJLIJA. Macedonian cuisine is naturally eclectic because the region has experienced so many influences throughout the ages. From ancient Romans who strarted olive oil production to the Ottoman Turks in the Middle ages and finally the Italian and German influences have made their cuisines and gastronomic customs more sophisticated. Macedonian answer to pizza is called pastrmajlija, a rustic bread pie consisting of dough topped with cubed or sliced meat (usually pork and cured mutton) and eggs. Pastrmajlija is often baked in traditional ovens at ver y high temperature. This ov al-shape d delicac y is sometimes accompanied by hot pickled peppers, called feferonki and it is especially popular during the colder, winter months. In the past, pastrmalija was made with meat called “pastrma”. Pastrma is dried salted sheep meat used widely in the past. 1

THE MEAT: 1 pound boneless pork chops, cut into small cubes 1 TBSP olive oil plus a little extra 1 TBSP salt 1/4 tsp ground black pepper 1 TBSP red Bukovska pepper

THE TOPPINGS: 2 large eggs 4 TBSP lard divided

Instructions 1. In a stand mixer or large bowl add the warm water and sprinkle the yeast over top. Add the flour and the 1 tsp salt, mix until well combined and dough pulls away from sides of bowl. 2. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook. Preheat the oven to 450°F. 3. Form the dough into a ball and place in a large bowl with the 1 tsp of olive oil. Flip the dough ball around to cover in the oil then loosely cover the dough and put in a warm place to rise for about 45 minutes. 4. In a large bowl add the cubed pork, the 1 TBSP olive oil, 1 TBSP salt, 1/4 tsp ground black pepper, and 1 TBSP red Bukovska pepper. Toss to combine, cover and set aside.

5. When the dough has risen punch it down and form it into 2 equal size balls. Place the dough balls on a lightly oiled baking sheet and form each ball into an oval shape roughly 14 inches by 6 inches and roll up the edges to form a lip about 3/4 inch high all the way around. 6. Brush the inside of the dough oval with the lard. Sprinkle the pork cubes on top of each dough oval then bake in the preheated oven for 10 minutes. 7. Remove the pastrmajlijas from the oven. Whisk the eggs in a bowl then pour evenly over the inside of the pastrmajlijas over top of the pork. 8. Return the pastrmajlijas to the oven and bake for about 5 more minutes or until eggs are set and crust is golden brown.
