The history of our most beloved Valentine s Day is a shrouded one. According to one legend, an imprisoned Valentine actually sent the first valentine greeting himself after he fell in love with a young girl - possibly his jailor s daughter - who visited him during his confinement. Before his death, it is alleged that he wrote her a letter signed From your Valentine, an expression that is still in use today.
Today, Valentine s Day is celebrated not only by young lovers, but also by married couples. Even our kids love the tradition. Here are some ideas to enjoy our most romantic holiday and of course, you can use the ideas for your anniversary, too :
No time to get out of town, because Valentine s Day falls on a Thursday this year? L e a d y o u r L o v e o n a t r e a s u r e - h u n t ! This takes a little preparation. Find his/her favorite stores and talk to the shop owners. In every store, buy a little gift it doesn t have to be pricy and attach a little love note with the next location. Depending on the weather and his/her taste you can have it end in a romantic location for a picnic where you are waiting for your love, or in your loveDs favorite restaurant. C Yes, ladies, Valentine s Day goes both ways, so why not take the initiative yourself?

(Artesia’s own Award Winning Photographer) Kimberly is a native of the desert southwest, and life-long resident of Artesia, New Mexico. Over the last seven-years, Kim has expanded her photographic interests to include nature, travel, stock, oil and gas, and farming industry photography. Kim’s award-winning work has been featured in New Mexico Magazine, Steppin’ Out New Mexico periodical, Ghost Ranch 2012 calendar, and included annually in the internationally distributed New Mexico Department of Cultural Affair’s engagement calendar. Kim has also won several awards in the annual Artesia Arts Council photography contest, and participates in the annual Fall American photography contest held by the Hubbard Museum of the Southwest in Ruidoso, New Mexico. Her oil and gas, and farming industry photographs are on permanent display at The Paddock Café, as well as the offices of Mack Energy Corporation in Riverside, New Mexico. She is a member of the Professional Photographers Association of New Mexico, the Texas Professional Photographers Association, the Artesia Arts Council, and the Roswell Museum and Arts Center. Valentine's
Wedding Banana Pudding Submitted by: Kire Cole
Ingredients:
1 Cup sugar ½ Cup flour ¼ Tsp salt 3 Cups milk 3 Eggs (separate the yokes from the white)
½ Tsp cream of tartar 1 ½ Tsp vanilla 1 Tblsp butter 1 Bag (or box) vanilla wafers 1 Lb. Bananas (3 – 4 large)
Preparation:
Put 1 cup of sugar, ½ cup flour, ¼ tsp salt, 3 cups milk into a high pan with a heavy bottom – Get a metal spatula …. and a chair …. this takes a while. You must stir constantly to keep from burning! About 20-30 minutes. (If you have a double boiler, it is easier.) Bring above ingredients to a boil until mixture thickens. Get your partner and have him or her separate the eggs, reserve the whites for later. Let your partner beat the yolks in a glass measuring cup and then add a little of the hot mixture into the beaten egg yolks.
Add the yolk-mix to the hot mixture and take off the fire, still stirring. Add a tblsp of butter and 1 ½ tsp vanilla and stir.
Line a 7” by 10” baking dish (glass will look best for presentation) with the vanilla wafers. Pour some pudding on top, add a layer of sliced bananas. Layer until you have about 1” to the rim.
With a mixer make the meringue out of the egg whites, cream of tartar. Mix until it is foamy. Gradually add ¼ cup sugar and ¼ tsp vanilla and beat until glossy peaks are forming. Spread on top of the layered pudding mix.
Bake at 400 degrees in a preheated oven for 8 to 10 minutes or until the merengue is turning brown. Remove from oven. Let it cool before serving.

Sweet Potato Squash Soup Ingredients:

4 Cups butternut squash, peeled 6 Cups broth (chicken or turkey) 1 Large onion 1 Tbsp extra virgin olive oil 1 Granny Smith apple 1 Large sweet potato Salt/Pepper to taste
Chop onions. Cut apple into thin slices. Pour olive oil into pot & add onions & apples. Sautee over medium heat and stir until softened. Chop squash & sweet potatoes. Add to pot and stir. Add broth. Bring to a simmer and let the vegetables get super soft, about 25 minutes. Use whisk or immersion blender to briskly stir & mash the veggies into the broth. Add Salt and Pepper to taste. Green Chile Cheese Meatloaf Ingredients: 1 Can (8 oz) tomato sauce ½ Cup ketchup 1 lb. Lean ground beef 2 Eggs 1 Cup fresh bread crumbs 7 oz. Whole green chiles

8 oz. Jack cheese in a block

Preparation:
Preheat your oven to 350 degrees.
Cut half of the cheese into strips and stuff four whole green chiles with it. Grate remaining cheese & cut the remaining chiles into strips.
Mix tomato sauce & ketchup in a small bowl. In a large bowl combine beef, eggs, bread crumbs and half of the tomato mix. In a well greased 5” x 10” x 3” loaf pan pour half of the tomato mixture to cover the bottom. Spread half of the meat mix over this. Lay 4 stuffed chiles in pairs on the meat mix. Cover with the remaining meat.
Pour remaining tomato sauce over the top and garnish with the grated cheese and chile strips. Bake in the pre-heated oven for one hour.
Remove from oven and allow to set 10 minutes before serving. Serve with sides of your choice.
