Potato Salad New Mexico Style

I ngredient s

5 lbs potatoes (red or Yukon gold) 1 medium sweet onion chopped fine 1 large roasted fresh green chile (peeled and chopped)*. 4 eggs hard boiled and coarsely chopped 1 cup mayonnaise Â˝ cup salsa 1 tbl fresh lime juice 1 tsp salt Â˝ tsp ground black pepper Chopped fresh cilantro or parsley if desired

*If it is off season and you can not get frozen green chile, you can use a 14 oz can chopped green chiles or 12 oz jar diced pimentos

Directi ons

â&#x20AC;˘Boil potatoes until fork tender, remove from water, and let cool until you can hold them to peel*. Cut potatoes into bite size chunks. â&#x20AC;˘In a large bowl, combine the potatoes, eggs, onion, pimientos and chile peppers. â&#x20AC;˘Combine the mayonnaise, lime juice with salsa, and seasonings. Add to the potato salad and mix until well blended. If desired, add more mayonnaise. If desired, garnish with chopped cilantro before serving. *note â&#x20AC;&#x201C; warm potatoes gain and hold flavors better than letting them cool completely prior to mixing with other ingredients.

The Lincoln County War, which raged during 1878 until 1881, included many famous participants such as Pat Garrett and William “Billy The Kid” Bonney. Billy was a member of the Tunstall-McSween “Regulators” and a number of them took refuge in the Ellis Store during a five day gun battle. Billy was later held in house arrest at the Ellis Store awaiting his pardon from Governor Lew Wallace.
