Couples of New Mexico Bonnie & Clyde

One of the most (in-)famous couples in the USA visited Carlsbad, NM in August 1932: Bonnie & Clyde the outlaw couple! On August 13, 1932 they were trying to keep a low profile at Bonnie’s aunt Nettie’s Ranch, just outside of Carlsbad, when Sheriff John of Carlsbad came in checking, because of an idle un-known car at the Ranch house. When knocking at Aunt Nettie’s door, he was met with the steely blue barrel of Clyde Barrow’s .38. Nettie was in shock, because she did not know of Bonnie & Clyde’s spree of crime and watched from the window, as her niece Bonnie and Clyde forced John into their car and drove off. She hurriedly telephoned the police station. Fortunately John survived his ordeal and was released in San Antonio, Texas.

King Kong and Fay Wray

Bruce Cabot was most remembered as Fay Wray’s savior from the hairy clutches of King Kong (1933 Blockbuster Movie). Few people know, that he was born in Carlsbad, NM with the unlikely name Etienne Pelissier Jacques de Bujac, the son of French Col. Etienne de Bujac and Julia Armandine Graves. His father was one of the official state delegates from the newly appointed State New Mexico to attend Theodore Roosevelt’s Bull Moose Convention in Chicago in 1912.

The Story Of Rebecca and the Lumberjack

There is a popular legend at The Lodge in Cloudcroft that dates back to the early 1900’s. The account that has been related through the years involves a beautiful young chambermaid with striking blue eyes and shocking red hair who disappeared from her quarters after her lumberjack lover found her in the arms of another. They say her spirit haunts The Lodge, none of the encounters with the guests are threatening or frightening, but more of the fun and playful nature. There are some who believe that Rebecca is in search of a new lover or friend who might appreciate her flirtatious and mischievous ways. – The Lodge Resort & Spa, Cloudcroft, NM graciously gave us permission to re-print her story.

New Mexico and the Irish In honor of St. Patrick’s Day we all are Irish! But, New Mexico and the Irish have true family ties, as well. Irish Americans served as soldiers and made up a large portion of the American troops fighting in the Mexican-American War. Between 1869 and 1900, the vast majority of railroads in the expanding US were being built by the Irish. The Santa Fe Railroad brought many young Irish-American men to New Mexico, who would go on to serve as rodmen, chainmen, and firemen once they left work on the railroad. When in 1859 gold was discovered at Pinos Altos in New Mexico, many Irish-Americans traveled there from California and settled in the nearby town of Silver City before migrating further east to the silver mines. You find many Irish descendents in our Southeast area. Of course the most famous of these was Billy the Kid or William Bonney, he was first generation Irish-American. His mother Catherine McCarty fled Ireland in 1845 during the Irish Potato Famine and settled in New Mexico. In the 2000 Census nearly 134,000 people, or 7.4 percent of the population of New Mexico, claimed Irish heritage. The presence of the Emerald Isle is alive and well in Southeast New Mexico and throughout the state.

Easter in New Mexico Our state, New Mexico, is infused with the wonderful traditions of Mexico and the Old World. While Catholics have had no meat for lent since Ash Wednesday, at Easter you will find everybody rejoicing with lamb, chicken and beef enchiladas, burritos and tamales. After visiting church on Easter Sunday, with friends and family you will also find pecan pies as part of New Mexico’s Easter tradition. New Mexico has the largest concentration of pecan orchards in the world, representing 36,000 acres of pecan producing trees. A handful of pecans has about the same amount of fiber as an apple and is rich in antioxidants. New Mexico is ranked second in production of pecans in the United States.

Each year during Holy Week thousands of people make a pilgrimage to Chimayó in Northern New Mexico to visit the Santuario and take away a bit of the sacred soil, where in 1810 a cross was miraculously found. Pilgrims walk a few yards or a hundred miles to visit the beautiful little chapel that was built on top of the location. Many claim to have been cured there of diseases, infirmities and unhappiness. The walls of the sacristy are hung with discarded crutches and before-and-after photographs as evidence of the healing.

Lobster Artichoke Fettuccine DGDining Guide

Ingredients

½ package (16 oz) Fettuccini noodles 1 tablespoon olive oil or butter 1 cup wine (We used Cottonwood’s Overo wine – a light Chardonnay) ½ cup of heavy sweet cream 1 garlic clove minced 1 fresh lobster tail, de-shelled and chopped in thick, 1 inch pieces 1 marinated heart of artichoke, chopped Âź pound portobello mushrooms, finely sliced Âź pound green asparagus, chopped 1 half of garlic clove to “seasonâ€? the serving plate 2 teaspoons of finely chopped fresh Italian parsley

Directions

•In a medium-sized pan heat up the olive oil or butter (careful, do not let it turn brown), and sautÊ the chopped garlic, lobster cubes, artichoke, asparagus and mushrooms in olive oil or butter on medium heat.

•Once the lobster is fully cooked (no longer translucent, but white), add wine and reduce. •Add the sweet cream and reduce by half.

•Cook the Fettuccini pasta al dente (not too soft)

•Rub each plate with the half clove of raw garlic, to give it a fine coating.

•Pour the strained pasta on each plate and pour the Lobster sauce over it. •Sprinkle the plates and pasta with the chopped parsley. Serve and enjoy!

New Mexican Pozole DGDining Guide

Ingredients

3 lbs. pork loin 2 cans white hominy 2 cans corn 1 lg onion, diced 4 oz chopped New Mexican green chile 2 tsp Oregano 1 ½ tsp garlic powder ½ tsp thyme 2 tbsp salt 1 tsp black pepper 1 tbsp red chili powder

Directions

•Boil 3 pounds pork loin until tender. Cool and cut into 1" cubes. (I like to use a combination of meats - pork, beef, and chicken - and whatever quantity I have.)

•Put 2 #2 1/2 cans of white hominy in large pot. (I use a crock pot.) Cover with 2 quarts water. Simmer one hour. (I like to use 1 can white and 1 can yellow hominy and 1 can white and 1 can yellow corn.)

•Add meat, one large diced onion, 2 teaspoons oregano, 1 1/2 teaspoons garlic powder, 1/2 teaspoon thyme, 2 tablespoons salt (I use much less), 1 teaspoon black pepper (I use much less.), and 1 tablespoon red chili powder (I definitely use much less. Other seasonings can be used as desired, such as parsley, paprika, etc.) •Simmer 6-8 hours. Last hour add 4 ounces chopped green chiles (I use the mildest I can find) and one 16 ounce can stewed tomatoes (I use tomato sauce).
