Cheeky chicken pittas
Gorgeously meaty burgers you can flavour any way you like.

Ingredients
• Glug of SPAR olive oil
• 1 red onion, finely chopped
• 1 tin SPAR red kidney beans
• 2 tins SPAR sweetcorn
• 50g breadcrumbs
• ¼ tsp chilli powder
• 3 tbsp plain flour plus a little extra for dusting
• 1 tbsp barbecue sauce
• Salt and pepper
Method
1 Heat the olive oil in a frying pan and gently fry the onion for 4 mins until starting to brown. Transfer to a blender or food processor along with the kidney beans, sweetcorn, breadcrumbs, chilli powder, flour, barbecue sauce and seasoning, and blitz until combined. 2 Use your hands to form and press the mix into 6 patties, then lightly dust with flour. 3 Grill on the barbecue for 15 mins (avoid direct flames), carefully turning regularly until cooked through.
Ingredients
• Glug of SPAR olive oil
• 1 onion, finely chopped
• 500g lean minced beef
• 1 tbsp barbecue sauce
• Salt and pepper
• Your choice of herbs and spices
Method
1 Heat the olive oil in a frying pan and gently fry the onion for 4 mins until starting to brown. Once barbecued, this mix will taste great as it is - but you can add any extra flavours you like at this point if you like: chilli flakes, dried mint, chopped coriander, a dab of mustard… then form into 4 patties. 3 Grill on the barbecue for 15 mins (avoid direct flames), carefully turning regularly until cooked through.

Zesty, smoky chicken bits and fresh crunchy veg in a pitta. Go pesto or go spicy – it's up to you.
Cook: 15 min Serves: 5-6
4 chicken breasts, diced
3 tbsp olive oil
2 tsp SPAR Pesto Genovese or 1 tsp chilli flakes Squeeze of lemon juice Salt and pepper
5 tomatoes, roughly chopped
½ cucumber, roughly diced
1 red onion, roughly chopped 6 SPAR pitta breads
Place the chicken in a bowl. In a separate bowl, mix the oil, pesto or chilli flakes, lemon juice and seasoning. Pour about 2 thirds of the oil mix over the chicken and stir. Thread the chicken onto 3-4 metal skewers. 2 Add the tomatoes, cucumber and onion to the bowl you made the oil mix in and stir.
3 Barbecue the chicken for 15 mins until cooked through, then remove from the skewers into a fresh bowl. Cut each pitta in half widthways and place on the grill for 2 mins, turning once. Use a knife to open up each pocket and fill with a spoon of the tomato mix, followed by the chicken.

Ingredients
1 bottle SPAR red wine

Ingredients
• Handful of SPAR frozen mixed berries
• 6 ice cubes
• 200ml SPAR cranberry juice
• 100ml SPAR vodka
• Dash of SPAR lime cordial (optional)
• 2 fresh strawberries
Method
Use an electric blender to blitz the frozen berries and ice cubes, then transfer to a 1-litre jug. Add the cranberry juice, vodka and lime cordial, and gently stir. Pour into 2 tumblers and serve with a strawberry on the edge of the glass.

Switch the alcohol
The night before, mix the lime cordial with 100ml of water, pour into an ice cube tray and freeze. At cocktail hour, blitz your lime ice cubes and normal ice cubes in an electric blender. Add the tequila, lemonade, the juice of 4 limes and sugar, and blitz again briefly. Pour into two cocktail glasses and serve with edge of lime on the rims.

A classic bacon and egg combo in salad form for a lighter but just as hearty summer lunch.

Ingredients
• 10 baby potatoes
• 6 SPAR eggs

300g SPAR spaghetti
300g SPAR frozen peas
Method
Glug of SPAR olive oil
1 red onion, finely chopped
40g SPAR butter
Juice and zest of 1 lemon
Salt and Pepper
Pinch of chilli flakes
1 Cook the spaghetti as per the packet instructions. Add the peas for the last 2 mins of boiling, then set aside. 2 Gently fry the onion in the olive oil for 5 mins until translucent. Add the butter and melt, then add the lemon juice and zest, seasoning and chilli flakes if desired. Stir in the spaghetti and pea until coated, then plate up. Serve with a few

1 Boil the baby potatoes as per the packet instructions and set aside to cool. 2 Hard-boil the eggs for 8 mins in a pan of water, drain and allow to cool before de-shelling and cutting in half.
3 Grill the bacon for 5-8 mins, turning halfway, until crisp. Once cooled, break into bits. 4 Put the salad, spring onions and dill in a large serving bowl and toss with dressing. Chop the potatoes in half and carefully fold into the salad along with the eggs and bacon bits. Finish with a crunch of salt and pepper.

• ½ red onion, chopped
• 1 garlic clove, chopped
• 2 tomatoes, chopped, plus extra for garnish
• ½ red pepper, deseeded and chopped (optional)
½ slice SPAR white bread
3 tbsp SPAR olive oil
3 tbsp SPAR balsamic vinegar
Splash of tabasco sauce (optional)
2cm of cucumber, chopped Basil leaves (optional)
Put the onion, garlic, pepper and tomatoes in a food processor. Remove the bread crusts, tear into bits, add to the processor and blitz until finely chopped. Tip into a large bowl and stir in the passata, water, oil, vinegar, tabasco, and seasoning. Cover the bowl with cling film and chill in the fridge for at least 2 hrs. Serve with a little chopped cucumber, tomato and basil.

1 Preheat your oven to 220°C/200°C fan/gas mark 7. Mix the flour, baking powder and salt in a large bowl, then add the oil and water, stirring until a ball is formed (it should be soft but not sticky). On a floured surface, knead the dough for 5 mins, then cut into 4 equal balls. Use a rolling pin to flatten each one into a pizza base.

Cucumber 4 ways with
Be cool as a cucumber: make these amazingly quick and easy little dishes to win favour at barbecues, garden parties and al fresco lunches galore this summer.
1. Pickled ribbons
Pickled cucumber is super tasty and super easy too!
Use a wide -cutting grater or spiralizer to cut 1 cucumber into ribbons, then toss with a big pinch of salt in a colander. Leave for 15 mins then squeeze out any excess moisture and pat the ribbons dry with kitchen towel. Place in a bowl and stir in 1 tbsp vinegar and 1 tbsp sugar, and you're pickleready to go.
Delicious on a BBQ burger, with smoked salmon or as part of a summer salad.
2. Easy tzatziki
Grate a cucumber and squeeze out the excess moisture. Place in a bowl and stir in about 500g SPAR Greek yogurt and 1 crushed clove of garlic. Add a dash of vinegar, a dash of SPAR olive oil, salt and pepper and, if desired, a handful of chopped mint leaves or a sprinkle of dried mint. Makes a great dip for crisps or SPAR pitta breads, or a tasty condiment with SPAR lamb koftas.
3. Cool soup
Roughly chop 1 1/2 cucumbers and 1 spring onion, and blitz in a food processor or with a hand blender, along with 150g SPAR Greek yogurt, the juice of 1 lime, salt and pepper, plus a handful of mint leaves (optional), until smooth. Taste the soup and add more lime juice if desired. Serve with a scattering of finely chopped cucumber on top, and a drizzle of SPAR olive oil.
Refreshingly simple served cold with SPAR breadsticks or toasted SPAR pittas.

4. Feta bites
Blitz 1 clove of garlic, 200g SPAR feta cheese, 100g SPAR Greek yogurt, salt and pepper in a food processor or with a hand blender until smooth and thick. You can also add 1 tsp of dried mint if desired. Cut a cucumber in half lengthways, then scoop out the seeds and discard. Spoon the feta mix into where the seeds used to be and smooth over. Cut into slices about 3cm thick and arrange on a plate for immediate consumption. Lovely as a canapé at a garden party, or a side dish for your barbecue.

• 1 garlic clove, crushed
• Generous splash of SPAR balsamic vinegar
• Juice of ½ lime

Method
Combine all the ingredients in a bowl and refrigerate until you're ready to serve. This will keep in an old clean jam jar for up to a week!

This lovely circular walk is spectacular in summer, taking you along the cliffs from the little bay of Cwm Tydu to Cwm Soden, spotting a colourful array of butterflies as you go.

Super quick picnic...

Facing the sea, bear right onto the path up the cliffs, via the kissing gate, before zig zagging along the coast. After another gate, continue along the coastal footpath, past a clifftop Iron Age hillfort, down to the mouth of Afon Soden at Cwm Silio, and onto the beach where you might glimpse a seal if you’re lucky. Cross the wooden footbridge over the stream (you can explore the maritime grassland on the cliffs here), before heading inland along the main footpath, descending into meadowland on your right. Walk over two bridges, turning right after the second, following Cwm Tydu signs through a field gate and up the hill through a wildflower meadow to a kissing gate onto a short dirt track. Turn right at the end of this into the lane, arriving at Pen Y Graig house. Go through the gate to your right and you’ll be back on the cliff top above Cwm Silio. After the gate bear left, following the path over a bridge towards the Castell Bach settlement, then bear left back along the path to Cwm Tydu.
2. Gorges and rivers walk: Aberglaslyn, Llyn Dinas and Cwm Bychan, North Wales
Walk through the dramatic Aberglaslyn gorge, the Glaslyn river flowing beside you, and explore the village of Beddgelert and the placid waters of Llyn Dinas.

3. Fun by the water… inland!
Rutland Water, Leicestershire
Live far from the sea? No worries! Head to Rutland Water, a beautiful spot on Rutland’s huge reservoir, complete with sandy beach, wildlife-spotting opportunities, a dog-walking area, childen’s adventure playground, mini golf course and plenty of lovely spots to enjoy a picnic and a relax in the sun. Towards the western end of the reservoir you’ll also find a 9-mile long nature reserve etched with nature trails and shallow water lagoons, and there’s a sailing club, aqua park and watersports centre nearby too.

Go through a gate from the car park (near the toilet block) and turn left for Aberglaslyn, up through the woods to the river, turning right to follow it upstream, along the side of the Aberglaslyn gorge. Take care, as the route here is rocky! Continue to the railway tracks and carefully cross the line. Turn left onto the bridge to cross the river, then right towards Beddgelert Once at Beddgelert, head right over a footbridge then left, following the river before crossing a street and going through a gate. At the next gate, turn right onto a narrow lane, going past Sygun Copper mine to the river. Turn right, following the path towards the lake shore (Llyn Dinas), then turn right again, zig-zagging up the hill. At the top continue for half a mile (ignore the first path on the right), then bear right at the fork. From Bwlch y Sygun take the left path, then bear right, down Cwm Bychan to the car park.

KITTED OUT FOR SCHOOL SPORTS DAY!
At SPAR we understand the importance of sport at school, and the vital part it plays in helping children keep active and engaged. That’s why, for the second year in a row, we ran our School Sports Day Kit Grants Scheme – giving 250 schools a total of £50,000 in grants towards Sports Day equipment. Each lucky school also received a sports day kit of supporting material for the event itself, including a poster, banner and stick-on bibs for competitors. It’s safe to say it definitely made a difference to the sporting prowess of schools all over the UK!

This summer marked the third year of our UK-wide Community Cashback scheme, which distributes an impressive total of £100,000 to local voluntary, community organisations and charities in recognition of their outstanding contributions. Entries closed on 22 May this year, with grant winners contacted directly and announced at the end of June 2024. We’re sure the scheme will make as big a difference this year as last. Ty Hapus, an organisation that received a £10,000 grant in 2023, provides a distinctive haven of "home away from home" daytime care and respite for individuals impacted by dementia. The grant has enabled Ty Hapus to now offer an extra day of enjoyable activities for their guests, granting muchneeded respite for the devoted caregivers.

This July, the week-long Para Sport Festival returns to Swansea Bay, featuring judo, table tennis, boccia, wheelchair rugby, target shooting, rugby league and many more exciting sports, across multiple venues.
This year’s festival is the biggest yet, with more national status tournaments, more competitors from overseas and more opportunities to get involved – as a participant, volunteer or spectator. The aim is to inspire and encourage people of all ages and abilities to participate in sport – for free!
The festival kicks off on 8 July with one of the biggest free participation days on the Disability Sport Wales calendar: the SPAR insport Series event.
Taking place at Swansea University’s magnificent Singleton Park Campus sports facility, over 20 different sports will be delivered under the guidance of qualified coaches. Schools will be invited to attend, while anyone else can register online.
“Creating a fun environment where disabled people can try different activities, meet new people and enjoy playing sport is so important” says
Welsh para-athlete Kirsty Taylor.
“The Para Sport Festival allows young people to see others with similar disabilities, and shows that everyone has a place in sport and can compete at the highest level. I realised I could compete in disability sports at an event like this. I then trained with Disability Sports Wales for many years and now my sport has taken me all over the world.”
Robyn Wilkins, Disability Sport Wales Para Sport Festival Senior Officer, said: “Two years ago, Welsh Government, Disability Sport Wales and Swansea Council came together and set out their aspirations to develop both participation and competitive opportunities for disabled people in Swansea.
As we reach our third year, we’re delighted to see further growth in our competitive schedule; returning faces proving just how successful previous years have been; and the growing reputation of Wales as a go-to host for elite para sport events. We’re also pleased that the event kicks off with the SPAR insport Series event. It’s an ideal opportunity for individuals to find their own journey within inclusive physical activity, and will create a buzz within Swansea for the rest of the week.”
