The trail makes its way down to Paseo Verde all of Green Valley. Follow this trail about two and half miles to South Valle Verde Drive, cross the street and turn right. As you head up the sidewalk, you’ll see a turnoff on your left. This small trail will take you all the way to Stephanie, where you can connect with the 215 Beltway trail by turning left and heading to the traffic light, just before the 215. Cross the street and jump on the 215 trail. Here you’ll take a short downhill ride all the way to the Acacia Park. You’ll pass a portion of the 215 that always looked to me like it needed a giant troll resting under the beltway.

As you enter Acacia Park, you’ll be on our next portion of the trail, the Union Pacific Railroad Trail. This is a fun trail that follows the railroad tracks out to past College and Horizon all the way out to Nevada State Drive, where the trail ends at what is meant to resemble a railway station waiting area. This trail runs alongside and crosses the railroad tracks in many areas. There is an asphalt trail on one side of the tracks and, for most of the way, a dirt trail on the other side. Prep Time: Less than 15 minutes Cook Time: 4 hours on high or 7 hours on low

Makes 5 or 6 servings, depending on the size of the chicken

Step 2.

Place the onion in the bottom of the slow cooker.

Special tools needed: Slow cooker 2 teaspoons paprika 1 teaspoon salt 1 teaspoon onion powder 1 teaspoon dried thyme ½ teaspoon garlic powder ¼ teaspoon cayenne pepper ¼ teaspoon ground black pepper 1 onion, peeled and cut into large pieces 1 large whole chicken (about 4 pounds) 18 Simply55+ May/June 2017

Step 3.

Remove any giblets from the chicken (or leave them if you wish, but be sure to remove any plastic or paper bags), then rub the spice mixture all over the outside of the chicken. You can even put some of the spices inside the cavity and under the skin covering the breasts.

Step 4.

Put the chicken breast-side down on top of the onions and cover the slow cooker. There’s no need to add any liquid.

Step 5.

Cook on high for about 4 hours or on low for 7 hours, or until the chicken is falling off the bone. Remove the edible chicken pieces from the slow cooker and serve. +

Remembering Nevada Happy Holidays Long-time Vegas-types joined hands to help create a memory for Jack Dailey and introduce young people to the value of gardening By Mike Henle www.mikehenle.com

Gardening has always been good for the soul, and a project named after a late Las Vegan is blossoming at Jack Dailey Elementary School on Reno Avenue between Tropicana and Hacienda avenues. A Title 1, At-Risk School, the Jack Dailey garden was kicked off about three years ago thanks to donations provided by several long-time Las Vegans. Named after a long-time Las Vegan who died in a flash flood 43 years ago at Nelson’s Landing along the Colorado River south of Boulder City, the garden has flourished thanks to dedicated efforts of Dailey’s daughter, Julie Dailey Neil; former six-year veteran of the Las Vegas Metropolitan police and current real estate executive Kevin Buckley along with local businessman Jelindo Tiberti of Red Star Fence Company. Interestingly, Dailey Neil is a 1974 graduate of Valley High School, while Buckley graduated from Bishop Gorman in 1972. When Dailey Neil heard about the need for a garden at Dailey Elementary, she immediately opened a network

with Buckley to find the funds and the deals to make the garden become reality. Before anyone had time to think about the proposed project, Tiberti heard from Buckley and turned the duo into a trio as a simple 90 by 40-foot garden became a dream-cometrue that even the pilots flying in or out of McCarran Airport can see from the cockpit. In what has proven to be a true example of the giving hearts of long-time Las Vegans, the garden has grown to a colorful attraction while also working as a perfect learning tool for the students of the school where the students are reaping the benefits of working in a garden. Or as Buckley put it, “My father once said that if everyone did a little, a lot would get done.” School teachers and others involved initially with Dailey Elementary sought and received a grant from the Rotary Club of Las Vegas West. The school was awarded the $10,000 grant over several other competing schools. But wait. So much else has taken place in Not That Old And Loving It!


About three years ago, the students of Jack Dailey Elementary at 2001 E. Reno Ave. joined with several prominent long-time Las Vegans for the creation of the Jack Dailey Garden.
