Pushing boundaries The world is getting smaller and genuine travel experiences are harder to find. We track down Charlie Hopkinson, director of Dragoman Overland, to discover which destinations still inspire him to pack his bags and head for the open road. Charlie has been part of the driving force behind Dragoman for nearly forty years. Based in Debenham, they specialise in truck-based overland trips that range from a 10-day expedition visiting the tribal lands of the Rift Valley of Ethiopia and Kenya, to an epic 210-day Pan American Overland, which takes you from the wilds of Alaska down through the Americas to Ushuaia at the very tip of Argentina. The company, which consisted of just one truck at the beginning, was founded in 1981 by George Durie (aka G), who is still the mastermind 4
behind the design of the specially adapted trucks, and Mike Sykes, who sadly passed away earlier this year. Charlie was a passenger on their second trip, a trans Africa from Cairo down to Nairobi. ‘It was a spur of the moment decision. I saw the trip advertised in ‘Timeout’ and thought why not!” It was a decision that changed his life as Charlie stayed on to help G crew the next leg down to Cape Town, and on his return borrowed £10,000 and bought a third of

the company. They then bought a second truck, and in 1984 G headed off along the old ‘hippie trail’ towards Kathmandu whilst Charlie took over the African routes. “Life on the road was sometimes tough in the early days. We had to brave ridiculously haphazard river crossings or dig the trucks out of 12ft ruts, but the experiences were always amazing, such as sitting quietly to watch a family of Mountain Gorillas or lying in your tent listening to the soft chuckle of a hyena.” Dragoman pioneered the first trips through Central Asia and the Silk Route into China, and now operate 27 trucks through The Americas, Central and South East Asia and all of Africa. Charlie has stories of racing the nomadic horseman of Kyrgyzstan, wild camping in the stunningly remote landscapes of Mongolia and partying ‘til dawn at the Rio Carnival. “We promise
a genuine travel experience, one where you have time to immerse yourself in the culture. It is a philosophy that stems from the early days of overlanding, where we would get off the beaten track and be invited into the homes of local people to share food and stories.” Dragoman is still pushing the boundaries, and as Charlie describes the new trips planned for West Africa, Pakistan and Western Mongolia, it is obvious that he still has a burning desire for adventure. Together with his wife Karen, he has travelled extensively across most of the continents, so I am intrigued to know which of these amazing destinations is his favourite. Nestled amongst the Suffolk countryside, within the glorious grounds of the Sotterley Estate and only fifteen minutes from the Heritage Coast, sits The Garden Coop, a delightful cottage that has been cleverly converted from a garage into a luxurious holiday let. The Garden Coop belongs to Nikki Horton, who lives in the farmhouse next door and originally built the double garage when they moved here from Somerset in 2007. “A few years back we decided it would be fun to create some extra accommodation and had the idea to convert the garage.” It was quite an ambitious project as the space was only fifty square metres, but by working together closely with Southwold-based architect Paul Bradley and local builders J.Briggs, Nikki has created a wonderful eco chalet-style cottage that can be used as an overflow when she has a houseful, such as at Christmas, and also rented out as a beautiful holiday home.
The design cleverly maximises the space available and by incorporating bi-folding doors from the sitting room out to a pretty covered veranda, the living space flows effortlessly from the inside out, making the whole room feel so much bigger. This feeling of space is reinforced by the addition two large windows that allow the natural light to flood the central area. “The veranda is integral to how people use this space. They love to eat out here in the summer or just to relax with the Sunday papers over a coffee, and in the winter it is still lovely as on a fresh crisp morning you can huddle with a blanket and enjoy the views out 19

across the estate.� Nikki has created a beautiful, enclosed courtyard garden with table and chairs, and there is a fire pit to keep off the chill if you fancy a spot of star gazing. On the ground floor, Umbrian flag stones have been laid throughout and underfloor heating means it stays cosy whatever the weather. A Scandinavian-style wood burning stove adds another welcoming touch, and as well as a lovely deep twoseater sofa, there is also a comfy armchair that invites you to warm your toes after a brisk walk around park. Nikki installed an Eco Air Source Pump that supplies the hot water, the underfloor heating and radiators on the first floor, and each room is temperature controlled making The Coop very energy efficient. The fully fitted

kitchen has character, with a small butler sink, oak work surfaces and some funky retro touches that keep make it feel fresh and quirky. A bespoke U-shaped staircase leads up to a large double bedroom that takes full advantage of the wonderful views and there is also an ensuite bathroom with an oversized shower. There is a real feeling of luxury up here, with a Loaf king-size double bed, expensive bed linen and the most beautiful sky-blue fired earth tiles within the bathroom. Nikki has chosen a simple colour palette, using Farrow & Ball Ammonite throughout the whole property to help emphasis the feeling of light and space, and in the bedroom a feature wall of Stiffkey Blue adds character and warmth. She has furnished the rooms with her

characteristic style, blending contemporary light fittings with vintage pieces. “I love exploring the local antique shops and auction rooms for interesting finds. I have a studio at The Reading Room in Sotterley where I run an upcycling business so am always looking for antique furniture that I can bring back to life with a coat of paint.”
a short drive away, a paddle in the sea is also on offer. The Coop was given its name as Nikki’s free-range chickens were always in and out of the original garage, and although I am sure they would love the chance to explore this luxurious new pad, they have now had to find a perch elsewhere.
The Garden Coop is a delightful bolthole, somewhere you can hide away on a grey day with the wood burner blazing, or to enjoy exploring the surrounding countryside. Dogs are welcome, and with the Sotterley Estate on your doorstep, you have access to thousands of acres of grass tracks that lead through oak woodlands, past lakes, meadows and an ancient chapel, and with Southwold and Walberswick only

What will be gracing your table this Christmas? Roast turkey and all the trimmings, perhaps a more traditional goose or even a big juicy chicken? Whatever your choice, the most important question we need to ask is to do with the bird’s welfare, so I am off to Suffolk Turkeys to learn what it means to be free range. Suffolk Turkeys is run by Philip Hunter, a third-generation farmer near Fressingfield. Originally a dairy farm, Philip now specialises in rearing a mix of slow grown free-range turkeys, geese and chickens in time for the festive season. He lives in the family farmhouse with his wife and three daughters, two of whom are away at university, and I am also greeted at the gate by two cheeky and very muddy dogs, keen to show me the way. The birds are bought in from local hatcheries as one-day old chicks and Philip will typically have 500-600
geese delivered in May, 4000 turkeys in June, and 700 chickens in early October. All are free to roam and forage and are matured slowly, using no artificial light (which is used to speed up growth), and being fed on nutrient-rich cereals, some of which are grown on the farm. As we walk across the farmyard, I can already hear the distinctive gobble of the turkeys. The male turkeys, known as stags, are in the first building and as we approach, they calmly turn their heads in

acknowledgement. Strangely, although the doors are open, they all seem to be inside, unlike the hens opposite who are lining the fence and craning their necks in a desperate attempt to see what all the fuss is about. “The stags are always much more laid back. Just a hint of rain and they decide it is much nicer to stay in the warm where the food is, whilst the hens are very nosy and love to know what is going on.” Gender stereotypes, it seems, also extend to turkeys! The turkey chicks are initially kept within cardboard rings to ensure the heat from the lamps is directly over their backs, but once they are old enough, they are separated into stags and hens and reared in the open barns. We go in with the hens and while they investigate and peck at my wellies, Philip points out the different breeds 32
Bronze, Black and White – which will grow to different weights so that he can offer oven-ready birds from 4.5-15kg. They are busy and curious, flapping up onto the straw bales, rushing over to the long grass to look for insects, all very happy and contented – especially the lonesome stag I spot who has been overlooked in the separation and is smugly strutting his stuff to all the ladies! In the enclosure next door are the geese who, after the recent rain, are having a fabulous time dibbling in the puddles and wading through the muddy pools. They are reared completely outside, with just an open-sided barn strewn with straw for shelter. “They often sleep out in the open and are much happier outside as they can get stressed if you try to keep them in.” I love the geese, their constant honking

and the way they move together in small groups, bodies slung low to the ground and webbed feet waddling. As we enter, they move back to a safe distance and then proceed to slowly encircle us. Philip tells me that they are relatively easy to keep and although there are over five hundred geese and ganders in here – apparently is it very hard to sex geese and so they are not separated – they are very calm with no squabbling or fighting. As we walk back, the turkeys give us another outburst of gobbling, and I notice that still none of the stags have ventured outside – men, eh? Over a cup of tea, Philip explains that for him the biggest challenge is juggling the weight bands of the different birds. He must ensure that he can fulfil the orders in terms of some customers wanting a 5kg turkey for the family or the larger
15kg birds for restaurants. The birds are killed and processed on the farm in small batches so there is minimum stress and the plucking is finished by hand. Being game birds, they are then hung for ten days to produce a richer flavour and are sold via local butchers and farm shops, with private orders ready for collection on the 23rd December. During this busy time everyone is expected to help: the older girls already under instruction to come home in time, and family and friends at the ready. Before I leave, I have one more question. Goose or Turkey? “Philip grins, “We always have two dinners, roast goose with the family and roast turkey with the in-laws.” Now that’s a solution that just might catch on. Identifying himself as a painter rather than an artist, Rob Wyn Yates creates striking geometric paintings that are bold and beautiful. They give the illusion of being three dimensional but with a unique sense of perspective that seems to distort reality and play tricks with your mind, wherever you stand. I meet Rob at his new gallery and studio space in Framlingham where he is busy preparing for an up-coming exhibition. The walls are lined with examples of his work and at his desk he is painting a triangle with layers of yellow acrylic straight from the tube. The paint is laid thickly so you can see the raised edge of each shape, thereby adding depth and dimension that is then enhanced with tone and shadow. Rob has always been fascinated by form, shape and colour, and studied three-dimensional design at Chelsea College of Art. This led to a successful career as an interior
designer and with his partner, Richard, he then launched the antique business, in da cottage, opening a shop in Framlingham six years ago. Rob has always loved to paint, taking his inspiration from the world around him: modern architecture; cool furniture design; and even the natural world, especially bird plumage, with its perfectly precise lines and intricate detailing. His father was an amateur artist and his mother a successful potter, whose work was commissioned by stores such as Liberty, but Rob only decided 37

to pursue his own path as a painter a few years ago. He had inherited a collection of antique French frames from his grandfather and decided to replace the existing paintings with some of his own geometrical designs. These were then used as props for an antique pop-up shop curated with Richard in 2012. To his surprise there was lots of interest in his work and this encouraged him to take up his brushes and start painting regularly. Rob explains that for him the starting point for every painting is the frame. Like his pictures, there is a slight irrationality to this, as for most artists the frame is added at the end, once the picture is complete. He is very specific about the type of frame he uses – mostly antique and preferably with a vintage linen border that can be painted to add texture – and from there he 38
creates a composition of shape and colour that is totally complementary to its surround. Initially drawn out on tracing paper, the designs are then transposed and the layers of colour added. The work is precise and controlled, twisted triangles interlock with cubes, squares and parallelograms; Rob playing with the light and shadow to create his unique optical illusions. The application of each layer of paint can take hours, each one having to satisfy his high level of perfection, and only when this is completed will he sign and date the reverse. Rob exhibited at the first two Art for Cure exhibitions, has had his work shown at Snape Maltings, and more recently has exhibited at numerous London galleries, including the prestigious Flowers Gallery and the Mall Gallery. He is represented by

the Wood Society of the Arts, which has been instrumental in promoting his work to a wider national and international audience, and earlier this year he had a solo show at the Alex Eagle Studio, a luxury concept store in the heart of Soho synonymous with high end fashion and lifestyle brands. He also collaborated with British clothing brand, Orlebar Brown, who specialise in tailored men’s swim shorts, emblazoning Rob’s paintings across their Summer ’19 Collection, and is looking forward to exhibiting at The Fall Show in San Francisco and the Decorative Fair in London with the Catharine Miller Gallery.

With this new gallery and large studio space, Rob is looking forward to experimenting with scale, finding the perfect balance of positive and negative space and working with single colours, layering white upon white, black upon black. This feels like a pivotal moment in his career, one which I have no doubt will be followed closely by collectors and connoisseurs, and it will be intriguing to see where he will indeed, draw the line.
Rob’s work is becoming highly sought-after by designers and private clients alike and standing in the studio surrounded by his work it is easy to see why. I love his kaleidoscope designs and colour

Who doesn’t love an allium? Spheres of symmetrical beauty that bob about your borders from May through to August. They may be related to the onion family, but for me they are intriguing globes that rise out the foliage and burst into brightly coloured orbs that look fabulous dotted throughout the garden or planted in drifts. Each sphere is made up of a cluster of identical miniature flowerheads - a perfect example of nature’s amazing mathematical precision – and they range in colour from the deepest purple to a delicate cream laced with pink to frothy balls of bridal white. Alliums add structure, shape and colour to any-sized garden, are great for cutting and also do well planted in pots. The bulbs are very easy to grow and are incredibly long-lived. Autumn is the best time to plant them as they like a warm bed of soil. First off, choose the right allium for you. They come in all shapes and sizes: if
you want height then you can’t beat the statuesque stipitatum ‘Mount Everest’; looking for a show-stopper then the dazzling spheres of cristophii ‘Star of Persia’ are hard to beat; hollandicum ‘Purple Sensation’ looks wonderful planted in drifts, and ‘Millennium’, with its gorgeous rose pink flowers, provides a spectacular display that is irresistible to bees and butterflies. For best results plant in free-draining soil in full sunshine and preferably in a sheltered spot to protect their long stems from being blown over. Plant at a depth of approx. four times the diameter of the bulb, 7-10cm apart for smaller varieties and at least 20cm for the taller species. They should not need any winter care but just be careful during your spring weeding sessions that you don’t disturb the bulbs. If you have chosen wisely you can then expect tiers of beautiful colour from spring to late summer. 43

The big chill October is upon us and the autumn chill sets in. Foliage starts to fade, petals drop and stems, once strong and proud, begin to slowly shrink back into the soil. Now is the time to enjoy the last of the autumn colour: the swaying white flowers of Japanese anemone; the soft-lavender blue of the longflowering asters; and the cheerful, brightly coloured salvias that happily nod and smile from May through to the end of the month. Come November and the leaves have finally lost their grip. This is the time to tidy your borders and prepare the garden for winter. Prune your roses, insulate outdoor containers, raise pots off the ground to prevent waterlogging, cut-back the

yellowing foliage of any herbaceous perennials and lift and divide overcrowded clumps. Give the grass one last cut as this is also any easy way to clear away the fallen leaves. December and the garden sleeps. There are still a few hard jobs to be done, such as digging over and preparing beds for next year’s planting or sharpening the secateurs and pruning your climbing roses, wisteria, and apple and pear trees. And, the best bit about rolling up your sleeves and getting out in the garden on a frosty morning is that you can then reward yourself with a lazy Sunday roast once darkness falls.

The exquisitely decorated pastries of Victoria Pereira of Rosa Farine Patisserie are a thing of beauty. Combining traditional favourites with a twist of Nordic flavours and topping them with tiny flower buds from the garden or berries freshly plucked from the Suffolk hedgerows, they are almost too good to eat. Victoria set up Rosa Farine Patisserie just over two years ago, and her delectable buns, cakes and biscuits have already earned her a reputation as something of a Master Baker. She bakes from her home in Saxmundham and currently supplies Leo’s Deli in Framlingham and New Street Market in Woodbridge with a daily dose of sweetness. Victoria also takes private orders and bespoke commissions for celebration and wedding cakes. A student at Thomas Mills High School, she went on to do an Art Foundation Course in Norwich before deciding to express her creativity through cooking and enrolling on a two-
year Patisserie course at Westminster Kingsway College, the UK’s leading school of hospitality & culinary arts. The course required these budding bakers to gain experience in the kitchens of some the most-established hotels in London, and Victoria found herself mixing up a macaroon at the luxurious Hyatt Churchill, Marble Arch in the first year and then baking and preparing over 300 perfect pastries a day for the world renowned Afternoon Tea at The Ritz in the second. These high-pressure kitchens do not suffer fools lightly, but Victoria enjoyed working as part of such a 49

highly skilled team and gained an invaluable insight into the methodology and techniques of London’s leading pastry chefs. On her return to Suffolk, she developed her baking skills further by working at Pump Street Bakery for two years and then the opportunity arose for her to work as the demi chef de partie at the Hyatt Liverpool Street in London. During this time, Victoria continued to hone her skills as a pastry chef whilst developing her individual style. Trips to France, exploring the bakeries and patisseries of Paris, fuelled her imagination and discovering the Swedish Bakery, Bageriet, in Covent Garden led her to experiment with new flavours. She also met her husband Angelo, a chef working at the Hyatt, and together they made 50
the decision in 2016 to return to Suffolk. Once established in their new home in Saxmundham, Victoria decided to set up by herself, and while Angelo was working as the chef at Darsham Nursery, she spent hours perfecting her recipes. From her tiny cellar kitchen, she produced trays of oval-shaped almond tarts glazed with white icing, known in Sweden as Mazariner, spicy and aromatic cardamom buns sprinkled with cinnamon sugar, golden coconut macaroons known as kokostoppe, rich Portuguese custard tarts and a selection of delicately flavoured friands. At the local farmers’ markets Victoria’s pretty pastries were an instant hit and she now has a selection of around twenty individual pastries and twelve larger cakes that she makes on a regular basis. Down in the cellar the shelves are stacked with trays

of free-range eggs, industrial-sized bars of Pump Street Chocolate, sacks of French flour (farine), assorted jars of Victoria’s homemade jams and marmalades, and a jumble of cake tins and fluted metal pastry cases. She is up at 5am every day to bake her orders in time to deliver them by 9am and then returns to clear down and prep for the following day. After recently completing a three-day cake decorating course, Victoria is now looking to develop her wedding and celebration cake commissions, and she also runs seasonal baking courses at the Food Hub Cookery School in Kenton.
I discover later is a slice of the most amazing vanilla chiffon cake. The texture is like a Bundt cake, soft and pillowy, and the meltingly sweet icing is studded with sprigs of rosemary and topped with maple pear crisps and fresh figs. As I said earlier, it looks too good to eat... well almost! Lady Florence has been shortlisted for the prestigious Good Food Awards. These annual nationwide awards are by invitation only and each year only hand-picked, selected eating establishments are included.
Poppies and Daisies is a new vintage style tearoom in a former Grade II Listed townhouse in Stradbroke. Run by Mike and Emma, it is already making quite an impression on the locals, offering classic afternoon cream teas and a selection of homemade cakes, breakfasts and lunches. Mike is an experienced caterer with a passion for home cooked quality food and Emma, who previously had a furniture upcycling business, has a love of loose-leaf teas, and there are over 30 to choose from. They opened Poppies and Daisies to combine all these passions with the aim of providing a relaxed, cosy and pleasant meeting place to appeal to all ages.
The Blossom Appeal is a charity raising funds for a state-of-theart Breast Care Centre at Ipswich Hospital, and a few ladies in Debenham have really taken this cause to their hearts, already raising £1000’s for the charity. If you are a lover of puddings, one simple way in which you can help them generate more funds is by going along to The Charity Pudding Club on Sunday 3rd Nov 2.30 – 5pm in Crowfield Village Hall. Soft Amaretti Cookies These sweet almond cookies, with their hint of orange and deliciously chewy centres, are perfect with a strong shot of Italian coffee. Ingredients Makes approximately 16 cookies: 180g almond meal 110g caster sugar 2 egg whites 2 tsp clear runny honey Zest of 1 orange Small bowlful of icing sugar

Method Preheat your oven to 180C. Place the almond meal and caster sugar in a large mixing bowl and combine well using your hands. Add the orange zest. In a separate bowl, or a freestanding mixer with a whisk attachment, whisk the egg whites and the honey together until you create a stiff peaked meringue. Carefully begin to fold the meringue into the dry mix, one third at a time. Try not to over mix, just until it is well combined. You will end up with a thick almond paste consistency. Using slightly dampened hands, split the mixture into 16 evenly sized balls.
Prepare your baking sheet with paper. Roll each ball into the bowl of icing sugar, giving them a heavy dusting. Place good widths apart on the tray to allow an even bake. You can pinch the tip of the ball to create a slightly less rounded shape. Once all amaretti are coated and on your baking trays, place in the preheated oven for 12-15 minutes, until they have just a slightly golden tint to their edges. Store in an airtight container. Serve with a good strong coffee.

Bounty hunting Autumn is my favourite season. I love its earthy smells, the screech of the seagulls following the plough, the thrill of catching a falling leaf and the delight of hedgerows laden with sweet blackberries. That is why it is such a joy to be out walking again, this time with some of the Brandeston Breast Friends (BBFs); no longer marathon fit but always up for the challenge, which today is a seven-mile walk from Brandeston to Debenham. We start in Mill Lane, Brandeston and follow this up to a bridleway that leads out along the side of farmland and underneath the crackling telegraph pylons. At the end of the straight, instead of bearing right, we

go through the gateway and turn left along the side of the hedge and up to a grassy track. It is a lovely sunny day, but the wind is chasing our tails and we are buffeted by the strong gusts as we stop for our first blackberry fix of the day. The footpath leads through a couple of small woods and as we emerge from the second, we take the right fork which leads past the tennis court and out onto Earl Soham Street. Here we turn right, and just before the primary school head up the driveway towards Earl Soham Lodge before turning left and rejoining the footpath. We fall into step and slowly start to catch up with each other’s lives: our summer holidays, exam

results, new jobs, and new puppies – Lidunka, finally fed up with all our shaggy dog stories, has gone and got one of her own! We pass through a farmyard and then head right, past a pretty pink cottage and down to another fork where we turn left and then follow this until we reach a bank of poplars. We cross a wooden bridge and as we come to the road, take a left and then pick up another bridleway on the right that leads us all the way across to Waddlegoose Lane at the top of Debenham. It is a lovely grassy stretch where the dogs can run ahead, and we let the fresh air fill our lungs. It feels good to be out walking again. The hedges are laced with golden hops and twisted wreaths of rose hips, and the mushrooms are beginning to sprout from their mossy beds. More blackberries
and flapjacks are enjoyed and the dogs snuffle through the fallen leaves in search of crumbs. Reaching Kenton Lane, we head down into Debenham via Hoggs Kiss Wood and the allotments, where people are busy harvesting autumn’s bountiful crops, and then along Priory Lane to The River Green Café. With seven miles already under our belts we feel justified in loosening them to enjoy poached eggs with avocado on toast and bacon butties. The volume of the chatter increases and we huddle over stories like naughty schoolgirls, wind-swept and rosy cheeked – what better advertisement can there be for getting outside and enjoying a walk with friends.
