Eat California Vibrant recipes from the West Coast By Vivian Lui
CALIFORNIA GRAIN BOWL Grain bowls are a popular way to showcase heirloom grains and farmers’ market bounty. They have become a staple at many eateries throughout California. This breakfast version is a cosy way to start the day but is suitable for lunch or dinner.

It’s safe to say that California has a lot going for it: a laid-back lifestyle, golden beaches and a vibrant food culture. The seafood is fresh, the produce organic and plentiful, and the farmers’ markets are a wealth of riches all year round. Thanks to the coastal state’s fertile soil and temperate climate, local produce is varied and abundant, from the famed citrus to the beloved avocado.
Bring the stock to a simmer in a small saucepan. Reduce the heat to low to keep warm. Heat a large sauté pan over medium heat. Add 2 tablespoons of the olive oil and stir in the grains to coat. Add 1 teaspoon salt and a ladleful of stock. Stir frequently for 5 minutes until almost all the liquid is absorbed. Add another ladleful of stock and repeat until all the stock is used up, about 30–35 minutes. The mixture will be slightly creamy but still have little bite from the rye grains. Turn off the heat and cover. A splash of water can be added to reheat just before serving. While the grains are cooking, bring a small pan of water to the boil. Use enough water to cover 4 eggs by 2.5 cm (1 in). Lower the eggs into the water and simmer for 6 minutes. Transfer the eggs to an ice bath. Gently crack the eggs all around and leave to cool just enough to handle. Peel and set the eggs aside. Heat a large frying pan over medium–high heat. Add the remaining 2 tablespoons olive oil, the shallot, mushrooms, ½ teaspoon salt and ¼ teaspoon pepper and cook for 5–8 minutes until the mushrooms are golden. Stir in the spinach to wilt. Season lightly.

PIZZA The key to a great pizza is a light touch with the dough and a very hot oven. The simple base allows for the sweetness of the vegetables and aromatics to come through. If liked, substitute squash for other thinly sliced vegetables, such as mushrooms.

340 g (12 oz) mixed summer squash ½ small red onion, thinly sliced Grated zest and juice of 1 lemon 2 tablespoons extra virgin olive oil, plus extra for drizzling 170 g (6 oz) ricotta 170 g (6 oz) mascarpone 40 g (1½ oz) parmesan cheese, grated, plus extra to serve (optional) 2 garlic cloves, grated Medium polenta, for dusting 25 g (1 oz) mixed soft herbs, such as nasturtium leaves and flowers, marjoram, chives and parsley Sea salt flakes and freshly ground black pepper

Divide the dough in half and gently form into 2 balls. Dust lightly with flour, cover with a clean dish towel and rest for 30 minutes. Preheat the oven to the highest setting and place a pizza stone or upside down baking sheet on the bottom shelf to heat. Thinly slice the squash about 3 mm (¹⁄8 in) thick, then transfer to a colander and toss with ½ teaspoon salt. Leave to drain for 10 minutes, then pat dry with a clean dish towel and transfer to a bowl. Add the onion, lemon zest, 1 tablespoon juice, the olive oil, 1 teaspoon salt and ½ teaspoon pepper and toss to combine. Place the ricotta, mascarpone, parmesan, garlic, ½ teaspoon salt, and ½ teaspoon pepper in another bowl and whisk to combine. Generously dust an upside-down baking sheet with polenta. Stretch the first piece of dough on a lightly floured work surface to an oval, about 23 x 33 cm (9 x 13 in), leaving the borders slightly thicker. If the dough is offering resistance, leave to rest for 10 minutes longer. Lay the base on the baking sheet, shaking once or twice to make sure it moves freely. Dot and spread half the cheese mixture over the dough. Lift half the vegetables out and place on the cheese. Transfer the pizza to the hot pizza stone and cook for 8–10 minutes until the crust is deeply golden and puffed. Transfer to a wire rack and repeat with the second piece of dough letting the oven and baking sheet come back up to temperature before cooking. Serve with the herbs, a drizzle of olive oil and extra parmesan, if liked.

Heat the oil in a small frying pan over medium–high heat. Add the beaten egg and swirl to coat the base of the pan, then cook for 1–2 minutes until the egg starts to set. Fold the omelette in half, cook for a few more seconds, then remove from the pan and set aside. Slice the bread roll in half. Spread the butter on one side and the mayonnaise on the other side. Heat a frying pan over low heat. Place the buttered half of the roll butter side down in the pan, and the other half of the roll mayonnaise side up in the pan. Once the buttered half is lightly toasted, flip it over and spread the frijoles refritos over the top. Lightly toast, then remove both roll halves from the pan. Spread the avocado over the mayonnaise and top with the tomato, onion and salt. Preheat a grill (broiler) to high. Layer the meat and cheese on top of each other, then grill until the cheese starts to melt. Scoop the meat and melted cheese onto the onion and top with the omelette. Drizzle with mustard (if using) and add pickled jalapenos or chipotle chilli, to taste. Close the roll halves together and devour.

Out of all of Mexico’s sandwiches, torta de milanesa is undoubtedly the best. I often dream of visiting my favourite torta stall in Mexico and devouring this giant sandwich, which is extremely hard to eat because of its ridiculous size. It’s super easy to make and you can swap out any of the ingredients with your favourite fillings – just grill and layer them up.
To make the veal schnitzel, combine the egg, milk, salt and pepper in a bowl. Add the veal and soak for 3 minutes. Place the breadcrumbs in another bowl, then add the soaked veal and press the breadcrumbs into the steak, making sure it's completely covered on both sides. Heat the oil in a frying pan over medium–high heat, add the schnitzel and cook for 2–3 minutes on each side until crisp and cooked through. Place the schnitzel on a plate lined with paper towel to drain, then slice into 3 cm (1¼ in) wide strips. Wipe out the frying pan. Slice the bread roll in half. Spread the butter on one side and mayonnaise on the other side. Heat the frying pan over low heat, then place the buttered half of the roll butter side down in the pan, and the other half of the roll mayonnaise side up in the pan. Once the buttered half is lightly toasted, flip it over and spread the frijoles refritos over the top. Lightly toast, then remove both roll halves from the pan. Spread the avocado over the mayonnaise and top with the tomato, onion and salt. Preheat a grill (broiler) to high. Sprinkle the cheese over the veal schnitzel. Grill the schnitzel and cheese until the cheese melts (the cooking time will depend on the kind of cheese you are using: American cheese melts quicker than Oaxaca cheese, for example), then pile the cheesy schnitzel on top of the onion and add pickled jalapenos or chipotle chilli to taste. Close the roll halves together so you have one giant torta and dig in!

For the coconut ice cream, place the ingredients in a saucepan over medium heat and warm until all the sugar has dissolved. Do not let the mixture boil. Transfer to a bowl, cover the surface with plastic wrap and refrigerate for 8 hours. Place the coconut ice cream in an ice-cream machine and churn according to the manufacturer’s instructions. Scoop the ice cream into a log mould and smooth the surface with a spatula. Repeat with the mango ice cream, spooning it on top of the coconut ice cream. Scatter the almonds over the top (reserving a few to garnish), then place in the freezer for at least 6 hours. To make the coulis, place the ingredients in a small saucepan over medium heat and bring to the boil for 2 minutes, whisking constantly. Remove from the heat and let stand for 5 minutes. Unmould the log onto a serving plate and drizzle the coulis over the top. Decorate with the reserved almonds and flaked coconut and serve.

Pavlova with candied chestnuts Preparation 40 minutes – Baking 2 hours – Resting 12 hours
Serves 8 75 ml (2½ fl oz) aquafaba 1 teaspoon white vinegar 1 teaspoon arrowroot powder 150 g (5½ oz) caster (superfine) sugar
Whipped chestnut cream 400 ml (13½ fl oz) tin coconut milk, chilled overnight 50 g (1¾ oz) chestnut cream (see Note)
Decoration 30 g (1 oz) vegan dark chocolate 60 ml (2 fl oz/¼ cup) soy cream 5 candied chestnuts, roughly chopped
Preheat the oven to 120°C (250°F). Line a baking tray with baking paper. Using electric beaters, beat the aquafaba and white vinegar on high speed for about 10 minutes until soft peaks form. Add the arrowroot powder and whisk for another minute. Continue to whisk and gradually add the sugar, 1 tablespoon at a time, whisking well after each addition so that the sugar dissolves. Continue to whisk on high for a further 10 minutes or until stiff peaks form. Spoon the meringue onto the prepared baking tray in a 23 cm (9 in) circle, then bake for 2 hours. Turn off the oven and leave the meringue to cool overnight, without opening the oven door. To make the whipped chestnut cream, scoop the solidified cream (about 200 g/7 oz) from the top of the chilled coconut milk and place in a bowl. Reserve the remaining milk for another use. Using electric beaters, whip the cream for 3–4 minutes, until thickened. Add the chestnut cream and gently stir through. In a saucepan over medium heat, melt the chocolate with the soy cream, stirring until smooth. Gently drizzle the chocolate mixture over the meringue. Cover with a layer of chestnut whipped cream and scatter over the candied chestnuts.

Melt the chocolate in a bain-marie.
500 g (1 lb 2 oz) vegan dark chocolate 380 ml (13 fl oz) soy cream 50 g (1¾ oz) rice malt syrup or maple syrup 80 g (2¾ oz) coconut oil 200 g (7 oz) speculaas or ginger cookies, roughly broken into pieces 150 g (5½ oz) raw almonds 150 g (5½ oz) hazelnuts icing (confectioners’) sugar, for dusting
In a saucepan, bring the soy cream and syrup to the boil over medium heat, then pour the mixture over the melted chocolate. Stir until well combined, then add the coconut oil and stir again until fully incorporated. Stir through the broken cookies, along with the almonds and hazelnuts. Mix well.

Prepare the two ice creams the day before serving. To make the mango ice cream, place the mango in a blender and blend to a puree, then transfer to a bowl. Place the sugar and milk in a saucepan over medium heat and warm until the sugar has dissolved. Do not let the mixture boil. Pour the milk mixture over the mango puree and mix well. Cover the surface with plastic wrap and refrigerate for 8 hours.

Line a loaf (bar) tin with baking paper and pour the mixture into the tin. Place in the fridge to set overnight. Thirty minutes before serving, invert the log onto a serving plate and dust with icing sugar.

Uruguay was the very first country in the world to legalize cannabis. HOORAY URUGUAY! I visited the country on a whirlwind trip for work and discovered that not only is it forward thinking but it’s also caramel loving; I ate more dulce de leche in that week than I thought possible. It’s in yoghurt, on toast, in pastries, cakes, cookies … there are just jars of it everywhere. I went to the grocery store and there was a whole aisle of the creamy milk caramel. Heaven. You can buy dulce de leche at the grocer, or use sweetened condensed milk as a base, but nothing will compare to making your own. If you’re going authentic, note that it will take a few hours to make your own dulce de leche, so plan accordingly.

Making your own dulce de leche is a labor of love. Milk caramel can scald easily, so use a very low heat and the thickest pan you have, and watch carefully. If you do get a few dark flecks, don’t give up – you can sieve them out at the end. If you burn the bottom of the pan, taste the caramel; if it doesn’t taste burnt, pour the caramel into a new pan without scraping any from the bottom of the pan. Combine the milk, sugar and split vanilla bean in a large heavy saucepan and place over a medium–low heat. Bring to a simmer and stir until all the sugar has dissolved, about 3 minutes. Add the baking soda, stir to combine, then reduce the heat to very low. Cook for 1 hour, stirring frequently and skimming off and discarding any foam that forms. Remove the vanilla bean and scrape any remaining seeds and add them to the mixture. Continue to cook on a very low heat for a further 1½–2 hours, stirring frequently until the mixture is a dark caramel color and has thickened. Strain the mixture through a fine sieve, and pour into a glass jar to cool. Seal and store in the refrigerator for up to 1 month. This will make more than you need for this recipe.

Vegan Mango Fruit Gummies
This book also explains the basics to making herb butters, oils and other essential cannabinoid baking bases. Best of all, the mild-melting component of each of these desserts can be cranked up, dialled down or removed completely – depending on your personal preference.
If you are looking for a vegan gummy, try this recipe. Fruit-based and thickened with apple pectin, it has a slightly different texture from gelatine gummies, with more of a clean bite through and not as sticky. You can use almost any fruit, although you may need to boost the pectin if you use a very thin fruit puree. This is a softer gummy and doesn’t work well in very small moulds.

Preheat the oven to 350°F (180°C/160°C fan/gas 4). Line 2 baking sheets with baking parchment. In a mixing bowl, stir together the flour, cornstarch, baking powder, baking soda and sea salt, then set aside. In the bowl of a stand mixer fitted with the paddle attachment, mix the butter, cannabutter, vanilla extract and brown sugar on medium–high speed for about 3 minutes until very smooth. Scrape down the sides of the bowl and add the egg yolks, then mix for a further 2 minutes. Scrape down the sides of the bowl, add the flour mixture and mix on low speed for about 2 minutes until well combined and a dough has come together. Cover and let rest for 30 minutes. Lightly flour a work surface and roll out the dough to ⅛ in (3 mm) thick. Use a 1½ in (4 cm) cookie cutter to cut the dough into 48 rounds, re-rolling as necessary. Lay the rounds on the prepared baking sheets and bake for 8–10 minutes until pale golden brown. Let cool on the sheets for about 5 minutes, then transfer to a wire rack to cool completely. To assemble, spoon a rounded teaspoon of dulce de leche onto a cookie, and sandwich with another cookie. If using, put the shredded coconut into a shallow bowl and roll the edges of the cookie sandwich in the coconut to coat. Store the cookies in an airtight container for up to 3 days in the refrigerator. Label the container clearly

This fancy chocolate cake is enhanced with the umami flavor of malted milk and built with several elements to build the malty flavor and bring a soft texture to the cake. It is coated in a whipped chocolate cream frosting, which has an unusual creamy texture – it’s a whipped ganache technique that I think you’ll like. Also, remember that serving size matters with larger cakes!

oil cooking spray, for greasing silicone moulds 2 tablespoon apple pectin 1½ cups (10½ oz/300 g) plus 3 tablespoons granulated sugar 1 tablespoon freshly squeezed lemon juice ½ teaspoon citric acid powder 1¼ cups (10½ oz/300 g) mango puree (pureed until very smooth and pourable) 1 cup (12 oz/350 g) light corn syrup or cane syrup 2 tablespoons Green Dragon (see page 20 – approx. 100 mg THC) ½ cup (3½ oz/100 g) superfine (caster) sugar, for dusting pan and sprinkling
If using, prepare your silicone candy moulds by misting them very lightly with an oil spray. Alternatively, line an 8 in (20 cm) square baking pan with non-stick foil and dust with superfine sugar. In a small bowl, combine the pectin with the 3 tablespoons of granulated sugar. Set aside. In another small bowl, combine the lemon juice and citric acid. Set aside. In a large saucepan, combine the mango puree with the remaining 1½ cups (10½ oz/300 g) of granulated sugar and ⅓ cup (3¾ oz/115 g) of the corn syrup. Warm over a medium heat for about 1 minute, then slowly whisk in the pectin–sugar mixture while continuing to heat. Whisk well or use an immersion blender to completely blend in the pectin and avoid any lumps. When the pectin is incorporated, increase the heat to medium–high and bring to the boil. Stir in the remaining ⅔ cup (8 oz/235 g) of corn syrup. Continue to boil, stirring occasionally, until the temperature reaches 232°F/111°C on a candy (sugar) thermometer. Turn off the heat and stir in the lemon– citric acid mixture.
Pour into the prepared moulds or pan, then sprinkle superfine sugar over the top. If you have made this in a pan, let cool for 2–3 hours until firm enough to cut, then cut into 90 pieces, each about ½ x 1 in (1 x 2.5 cm). If using moulds, leave overnight to set before removing from the moulds. If they are difficult to remove, chill first. Toss all the pieces in superfine sugar to coat, then spread over baking sheets lined with baking parchment to dry for 2–3 days at room temperature. When the candy feels dry and not sticky, pack into an airtight container. Store for up to 3 months. Label the container clearly with the date and contents.

Grease a 23 cm (9 in) springform cake tin. Combine the crushed biscuits and butter, then press into the base of the cake tin.

Place the gelatine in a bowl of cold water, stand for 5 minutes, then drain and squeeze out the excess water. Return the gelatine to the bowl and pour over 60 ml (2 fl oz) boiling water. Whisk until dissolved, and then allow to cool slightly.

Epipremnum is a genus consisting of flowering evergreen perennial vines that climb with the aid of aerial roots. As such it is not difficult to see why they are often confused with other genus within the Araceae family such as Rhaphidophora and Scindapsus. Found in tropical forests from China, the Himalayas, to Southeast Asia, Australia and the western Pacific these prolific growers can reach lengths of over 40 metres (131 ft) with leaves up to 3 metres (10 ft) long, just be sure to lower your size expectations when growing in pots indoors. This fast growing, tropical vine is native to French Polynesia but has become naturalised in tropical and sub-tropical forests further afield, from Northern Australia to Southeast Asia and the Pacific Islands. Even indoors they can grow to an astounding 20 metres (66 ft) long, with minimal effort on your part. Thankfully they are equally easy to tame with regular pruning. When first described in 1880, this species was named Pothos aureus, which explains why it is commonly referred to as “pothos” to this day. In the 60’s it was reclassified as Raphidophora aurea before researchers finally settled on Epipremnum for its observed similarities to Epipremnum pinnatum. Its other common name, devil’s ivy, is believed to have arisen it’s ability to be almost impossible to kill. Characteristics that make it a tremendous houseplant by anyone’s standards. The resilience of this enduring vine means it is forgiving of those of us with a

propensity for neglect. They will happily tolerate low light and can even withstand periods of drought. But having said that, try not to take advantage of their laid back ways. Bright, indirect light and a regular watering regime will allow the devil’s ivy to thrive. Allow the top 2-5 centimetres of soil to dry between drinks as roots left in soggy potting mix will easily succumb to rot. Propagation by stem cutting is easy peasy, simply take a cutting about 10 centimetres long from just below a leaf node, remove the bottom couple of leaves, and place it in water. Once roots develop (generally within a few weeks) it is ready for planting in soil. Devil’s ivy will also happily survive in water, just be sure to change it regularly for good plant health. Available in a variety of different cultivars, from the common gold and green variegated golden pothos (pictured page xx) to the light green neon pothos and the stylish white and green speckled marble queen there’s an option to satisfy even the most voracious of aureum lovers.

Gang of Four formed in the fine art department of Leeds University. The department also spawned bands The Mekons and Delta 5.
Gang of Four
Gang of Four formed in Leeds in 1976. The band consisted of Jon King on vocals, Andy Gill on guitar, Dave Allen on bass and Hugo Burnham on drums. With music that was disjointed, monotone, nihilistic and repetitive, Gang of Four took punk’s DIY, anythinggoes attitude and shaped a new sound. Their unapologetically left-wing politics and social commentary set them up as more cerebral than most punk bands. Andy Gill described the band’s sound as having been driven by ‘living in a late capitalist society’ and said they were ‘very concerned about the spectre of Thatcherism, and what it was going to do to the people’. All that angst and deep thinking didn’t mean they couldn’t lay down a groove, however. Gang of Four’s social and political commentary was layered over angular beats, funk rhythms and sparse, robotic instrumentation. Earnest young intellectuals and bedroom rebels had a band they could champion before their adulation would turn towards Joy Division and The Smiths. Artists who have namechecked Gang of Four include REM, Flea from Red Hot Chili Peppers, Kurt Cobain and later Franz Ferdinand, Bloc Party and The Rapture. The original line-up reunited between 2004 and 2006, although post 2011 Andy Gill would be the only original member in the band. Gill died from pneumonia at the age of sixty-four on 1 February 2020.
Despite being an underground band, Gang of Four had a surprise pop hit in 1982 with ‘I Love A Man in Uniform’, which reached number 27 on the US dance club chart. In 1983 their track ‘Is it Love’ breached the top 10 of the same chart.
Gail Ann Dorsey, bass player in Bowie’s band from 1995 until his death in 2016, appeared as a bass player in various line-ups for Gang of Four over the years and sang guest vocals on ‘First World Citizen’, on their 2015 album, What Happens Next.
