Time may not be on our side, but you’ll feel it slowing down as you sip this version of the classic Salty dog. Sometimes made with gin, but always with grapefruit juice, the addition of thyme adds a woody note to this 1920s-era tipple. Singing sea shanties is an optional extra.
Thyme Salty Dog 55 g (¼ cup) caster (superfine) sugar
Make a thyme syrup by combining the sugar, thyme
3–4 thyme sprigs, plus an extra sprig to garnish
to the boil and stir until the sugar dissolves. Remove
Himalayan pink salt, to garnish lemon wedge ice cubes, plus 1 large cube to garnish 60 ml (¼ cup) vodka 100 ml (3½ fl oz) pink grapefruit juice lemon twist, to garnish
and 60 ml (¼ cup) water in a small saucepan. Bring from the heat and set aside for 30 minutes to infuse. Strain into a small bowl, discarding the solids. Sprinkle some salt onto a small plate. Run the lemon wedge around the rim of an old-fashioned glass and dip the rim in the salt to coat. Place one large ice cube into the glass. Fill a cocktail shaker with ice and add the vodka, pink grapefruit juice and 20 ml (¾ fl oz) of the thyme syrup. Shake for 10–15 seconds until well combined, then strain into the prepared glass. Garnish with a lemon twist. The remaining thyme syrup will keep in an airtight container in the fridge for 4–5 days. SERVES 1

Here, the classic French 75, named for a military gun that had a bit of a kick, is given a floral makeover. The taste of lilac is characterised by sweet floral tones, with a hint of citrus, which is amplified in this recipe by pairing it with some fresh lemon juice.

Shake vigorously for 30 seconds, then strain into a champagne tulip. Top with Champagne and garnish with a lemon twist. The remaining lilac syrup will keep in an airtight container in the fridge for 4–5 days. SERVES 1
