08 BREAKFAST Bean shakshuka with coriander SERVES: 2 PREP / COOK TIME 10 minutes / 15 minutes 1 tablespoon olive oil 1 small red onion, finely diced 2 garlic cloves 2 teaspoons smoked paprika 1 teaspoon ground cumin 1 teaspoon chilli powder 3 kale stalks, leaves removed and chopped 400g (14oz) tinned diced tomatoes 400g (14oz) tinned cannellini (lima) beans 200g (7oz) tinned black beans 2 tablespoons Tofu cream cheese (p.90) 5g (¼oz) coriander (cilantro) leaves, chopped salt and pepper crusty bread, to serve 01 Warm oil in a large pan over medium heat and fry onion and garlic for a few minutes. Add spices and kale and fry until kale has wilted slightly. Pour in tomatoes and beans and simmer for 5–6 minutes. Top with dollop of tofu cream cheese and coriander. Season to taste. Serve with crusty bread.

Roasted cauliflower salad
SERVES: 1 PREP / COOK TIME 5 minutes / 15 minutes 5g (¼oz) wakame (dried seaweed) 1 heaped tablespoon kimchi 15g (½oz) white miso paste 1 spring onion (scallion), sliced, to serve 01 Bring 250ml (1 cup) water to the boil in a medium pan. Reduce heat to a simmer, add wakame and kimchi and heat through. Remove a few spoonfuls of cooking water and mix in a small cup with miso to soften. Whisk miso into pan and simmer gently while stirring to combine. 02 Divide among serving bowls and top with sliced spring onion. Nutrition per serving: 38 cals /1.05g fat / 5.54g carbs / 2.31g protein

MISO SOUP WITH KIMCHI
½ red onion, cut into wedges 200g (7oz) sweet potato, diced ¼ cauliflower, cut into small florets ½ tablespoon olive oil 2 tablespoons pine nuts 50g (1¾oz) mixed baby spinach and rocket (arugula) leaves sea salt and pepper 2 tablespoons Red wine vinaigrette (p.80) 01 Preheat oven to 190°C (375°F). Combine red onion, sweet potato and cauliflower on a large baking tray. Drizzle with oil and season well. Roast for 15–20 minutes until edges of vegetables are starting to caramelise. Spread pine nuts out on another baking tray and toast for the last 5 minutes of cooking.

Spread coconut flakes out on a baking tray and bake for 4–5 minutes until toasted. 02 Meanwhile, blend acai, banana, milk, strawberries and protein powder until smooth in a blender. You may need to add a little extra milk, depending on how thick you like it to be. Pour into a bowl and top with toasted coconut and chia seeds. 01 Soak bread by running it under cold water for a second to soak, then squeeze out all liquid. Add bread and remaining ingredients to a blender and blend until smooth. Taste and add extra seasoning as required. Either serve immediately or chill in a sealed container for a few hours to let the flavours develop. 02 Top with toasted pine nuts, black pepper. and a drizzle of oil. BEAN SHAKSHUKA WITH CORIANDER
Prepare this delicious breakfast the night before so all you need to do is reheat it in the morning. You can also make extra and mix into a weeknight dinner.
01 Cook shallots in ½ tablespoon water for a few minutes. Add spices, barbecue sauce, passata, jackfruit and 250ml (1 cup) water. Bring to the boil, then cover and simmer until jackfruit is soft. Uncover and cook for 10–15 minutes to reduce liquid. Toss cabbage, jalapeños, coriander, oil and seasoning together in a bowl. Layer each taco with jackfruit, guacamole and cabbage mix. Serve with lime . Store leftovers in fridge. Nutrition per serving: 555 cals / 22.57g fat / 88.77g carbs / 8.24g protein

In the cooler months, beautiful earthy heirloom carrots make a lovely warm salad, coupled with a zesty Asian-inspired dressing. This dish also works well in warmer months as a cold salad offering. –VV
½ teaspoon sea salt 30 g (1 oz/¼ cup) slivered almonds, toasted coriander (cilantro) sprigs, to garnish KAFFIR COCONUT DRESSING
125 ml (4 fl oz/½ cup) coconut cream 2 teaspoons kaffir lime juice

Preheat the oven to 180°C/350°F (fan-forced). Line a baking tray with baking paper. Trim the leafy green tops off the carrots, leaving 2 cm (¾ in) of the stalks attached. Wash and scrub the carrots well, then place in a large bowl. Add the coconut oil, cumin, coriander, ginger and salt, tossing thoroughly with your hands until coated. Transfer the carrots (and any excess coating) to the baking tray and roast for 30–35 minutes, or until the carrots are tender. Meanwhile, in a small bowl, whisk together the dressing ingredients. Set aside. Arrange the roasted carrots on a serving platter. Season with salt and freshly ground black pepper. Give the dressing another quick stir and drizzle over the carrots. Onion tarte tatin SERVES 8
You can use a combination of baby onions and shallots for this tart, or just make it with your favourite member of the allium family. If some of your baby onions are slightly larger, cut them in half and place them cut side down in the pan, just before you top them with the pastry – they’ll look good too, like little onion flowers. –CG 800 g (1 lb 12 oz) shallots and/or baby onions, unpeeled 50 g (1¾ oz) butter 2 tablespoons olive oil (or use the oil from the Garlic confit on page 245) 2 tablespoons rapadura sugar or brown sugar 2 thyme sprigs, leaves picked, plus extra to garnish 60 ml (2 fl oz/¼ cup) red wine vinegar 8–10 Confit garlic cloves (see page 245) flour, for dusting 350 g (12½ oz) block of frozen good-quality puff pastry, or 2 puff pastry sheets, thawed
Put the shallots and/or baby onions in a heatproof bowl and pour over enough boiling water to cover them. Leave for 10 minutes, or until cool enough to handle, then drain and peel. Preheat the oven to 180°C/350°F (fan-forced). In a 20–22 cm (8–8¾ in) heavy-based ovenproof frying pan or tarte tatin pan, heat the butter and olive oil over low heat. Add the peeled bulbs and cook gently for 15–20 minutes, or until quite soft and lightly browned. Stir in the sugar, thyme leaves and vinegar. Season with salt and freshly ground black pepper. Cook for a further 5–6 minutes, or until the liquid has reduced and caramelised. Remove from the heat and set aside to cool for 10 minutes. Nestle the cloves of garlic, evenly spaced, under the bulbs on the bottom of the pan. If any of the baby onions are a little larger than the rest, cut them in half horizontally and place them cut side down in the pan. On a lightly floured surface, roll out the pastry to about 3 mm (1∕10 in) thick and cut out a circle slightly larger than the pan. (If using pastry sheets, press them together and trim to a circle.) Prick the pastry all over with a fork and place it on top of the bulbs. Ease the pastry between the bulbs and the side of the pan. Transfer the pan to the oven and bake for 30–35 minutes, or until the pastry is cooked through, puffed and a deep golden brown. Remove from the oven and allow to settle for 10 minutes. Place a large serving plate upside-down on top of the pan, then carefully turn the tart upside down onto the plate. Serve warm or cold, scattered with extra thyme. BEST: ALL YEAR ROUND

Morning in Bangkok beautifully captures the Thais’ way of life. Dawn invites the locals to begin their routine by preparing and giving food to the monks, who each morning leave their temples to accept peoples’ gifts as part of the daily Buddhism practice. Food is embedded into Thai culture and plays a vital role in all parts of lives. It is a symbol of goodwill and merit in the Buddhism practices. The locals believe that donating food to the monks is one of the ways to build good karma.

It is though not surprising that breakfast for the Thais is not too dissimilar to lunch or dinner. Rice, noodles and sometimes curries are often served at breakfast tables and as such, there are many food stalls offering such cuisines from early morning.
However, this is not to apply to everybody and weekends are generally very different. Morning meals at home may be steamed eggs, rice soup with condiments or congee. Younger generations visit cafes for brunch which mostly have been heavily influenced by the Western style breakfasts and beverages. Local markets are filled with busy shoppers with shopping lists in their hands, ready to cook for their families on the weekends. Growing up in Bangkok, we remember visiting Lumpini park at early morning hours on the weekends. The park, situated in the midst of the city chaos, is well known to the locals for its beautiful greenery escape, aerobic and tai chi communities, not to mention the food stalls inside the park, serving up warm congee, Chinese style buns and dim sim.

Visit Chowrasta market and you’ll find variety of Penang specialties like tau sar piah (mung bean paste biscuit), belacan (shrimp paste), spices and other popular sweet and savoury snacks. Just outside the market, there are many stalls selling food and drinks, but the one that really caught our eye was the berangan panggang (coffee roasted chestnut) stall. It’s fascinating to watch the hawker roast the chestnuts with coffee beans – the hint of smokiness from the aromatic coffee works so well with the sweetness of the chestnuts. Wrapped in a newspaper cone, the chestnuts make a welcome snack after a good stroll around the market. Serves 4 450 g (1 lb) fresh chestnuts (see Note) 40 g (11/2 oz) butter 3 cups (240 g) dark roasted whole coffee beans
1 Wash and drain the chestnuts, then wipe dry with paper towel. Cut an ‘x’ into each chestnut to prevent them popping during roasting and set aside.
3 When the chestnuts are cool enough to handle, wipe them with paper towel, then peel and enjoy while they are still warm.
2 Melt the butter in a large castiron Dutch oven over medium heat. Add the chestnuts and stir to coat in the butter, then add the coffee beans and stir for another 1–2 minutes. Cover and roast over medium–low heat, stirring every 5 minutes, for 15–20 minutes, depending on the size of the chestnuts. They will look nice and charred when they’re ready. Transfer to a bowl to cool slightly, discarding the coffee beans.

Fresh chestnuts are readily available during the autumn and winter months at Korean or Asian groceries, produce markets and some larger greengrocers. Ensure your kitchen is well ventilated when roasting the chestnuts as they can get quite smoky.

Bathrooms can be one of the most fun but also one of the most challenging rooms to build or renovate, due to the staging and co-ordinating of various trades, fitments and plumbing requirements. It all starts with a clear vision, brief and design, which will direct the project and team. When designing your dream bathroom, you need to understand the requirements of those using the space. One of the key elements here is to think about access for people who might have mobility issues later on in life.
Kribashini Hannon & Rebeka Morgan founded the BuildHer Collective in 2017. With success as a commercial construction project manager and registered builder, respectively, they decided it was time to use their shared knowledge to demystify the building process for women everywhere. This is their first book.
Essentially, all bathrooms are about combining the following items: the vanity sink and mirrors, shower, bath and toilet. Yet there are so many scenarios of how this can be achieved, it can seem like an epic task! If you are renovating, then begin by identifying where the plumbing is currently and what it is about the layout you would like to change. Moving plumbing isn’t necessarily hard if you have a lot of underfloor clearance; however, if you are on a slab or in an apartment, then it may be prohibitive. If this is you, then try sketching up an ideal of what you would like to achieve, and then have a fallback plan which keeps all the plumbing positions in the same location. The trades required to install or renovate a bathroom can include carpenters, plasterers, painters, joiners, electrician, plumbers, tilers, caulkers and glaziers. Many of these trades need to come back several times in the process. For example, the plumber will need to rough in before the plastering and then return at the end of the process to fit the fixtures. Getting the co-ordination of these trades and having the correct materials on site when required is critical to keeping the cost down. It can be expensive and frustrating to get people back many times to do a job that is not ready, so make sure you understand the process before you start, to facilitate a speedy renovation or build!

Watering
This practical (and adorably illustrated) book offers tips on how to turn random garden cuttings into lifelong plant friends.
Plants don’t like being without water when they’re actively growing – usually from spring to early autumn. Water the compost around the base of the plant, soaking it thoroughly. As a simple rule of thumb, water your pets every one or 2 weeks during this period, then reduce the frequency to once a month or so over winter, just to keep the compost moist. If your pet has fleshy or swollen stems or leaves, as cacti, succulents and some others do, you can allow them to dry out between winter waterings.
Buying houseplants is an addiction. You might start with a charming fern in the corner of your living room, and, before too long, every windowsill in your home is groaning under the weight of 100 succulents. As your addiction grows, the cost adds up. That’s why adopting plants – says author Andrew Mikolajski – is the best course of action. This adoption process can, of course, involve taking sick plants off your less-thangreen-thumbed friends and nursing them back to health. Or perhaps finding the occasional freebie placed by the curb, abandoned and in need of a new guardian. But adopting a plant might also be as simple as growing a tiny cutting – a chunk of any plant, which has fallen or been gently snipped off – into a full-size plant.
Most will be happy drinking tap water. Ideally, draw it 30 minutes before watering and let it come up to room temperature. If you live in a hard water area, splashes can dry to leave a calcium deposit on the leaves. You can boil the water first to get rid of this, then let it cool, like you do with a baby. If you’ve got a lot of pets to deal with, to save time you can put them in the shower. They’re not shy and will all quite happily stand together in the tray with the water on the cold setting. Alternatively, you can stand them all in a sink, basin or large tub full of water for 30 minutes or so until the compost is saturated. Allow them to drain completely. During mild, wet weather, most of them like going outdoors for an hour or so – it firms up the leaves.
Flowering plants, such as orchids, have special feeds. These contain a different balance of ingredients that encourages flower production. Your pets don’t need too much feeding, however, and less is better than more – overfeeding can make the stems droop.
Grooming
Your pets will love attention. To keep them looking their best at all times, remove any faded or withered leaves. Depending on the plant, you can either cut them off at the base with a pair of sharp scissors or snippers, use a small kitchen knife or pinch them out with your thumbnail. You can buy special wipes or sprays for shining up smooth leaves – a sort of plant moisturiser. Most leaf shine products not only give leaves a healthy, polished look but also deliver a small amount of feed to the plant via the leaves.

Online abusers use many different tactics to drive people offline. Sometimes, they even work together, participating in campaigns that overwhelm and cause harm. This type of abuse happens to public figures all the time, who are often deified for having a platform – but it can also happen to regular degular people. Trolls might create fake social media accounts with your name and photos to post offensive comments or humiliate you. They may also share your personal information, like your name, location, and ways to contact you. This is called doxxing and it has led to threats of violence and prank calls to police (which, in the context of police brutality, endanger vulnerable communities by increasing their contact with police officers). Trolls might also share non-consensual sexual images of their targets as well, either to shame someone they know or to ‘out’ sex workers whose images may exist behind a pay wall (where they have some form of anonymity). I interviewed an online sex worker for Galore who explained that someone once threatened to publish screenshots of her if she didn’t pay him. In doing so, he would be revealing to her friends, family, and followers that she was doing online sex work. To take her power back, she ended up sharing the images herself. This story speaks to a particular form of patriarchal violence that, when combined with digital technologies, punishes those who display sexual agency and attempt
to profit from it. It stems from the core belief that women (and people perceived as women) are not allowed to be sexual beings. But also, it comes from societallyheld beliefs that online sex work isn’t real work – and that those who do it deserve harm. It is an expansion of violences against sex workers that already exist offline. And it shows us how digital spaces grant bad actors with new, more insidious ways of targeting already vulnerable communities. The broader issue is that race, ethnicity, religion, age, profession, and gender and sexual identity play a huge role in exacerbating instances of cyber abuse. While men do face online harassment and abuse, there is a huge difference in the abuse that women and people who are

Perhaps you could offer to speak to someone’s family on their behalf. Ask if you can go and find some resources to help educate any family and friends who don’t understand the process. You could provide company when your loved one goes to the doctor to discuss transition options, or to get mental health support. There are so many ways to support someone. Even cooking a meal for someone — or bringing them groceries — can really help when they’re having a tough time. 84
But this is important: Never act on someone else’s behalf without their consent and be very careful to not disclose their private information. If you’re not sure how to support someone, and they don’t know how to ask, make sure that you are at your strongest. Rely on your own support networks for strength. This means that when your loved one does turn to you for help, you’re in a position to provide that support. Lastly, be proactive and inform yourself about trans and gender diverse lives. That’s always a great place to start.

I have a test for you. Next time you hang out with a kid — a nibling, a student, or even your own kid! — just take note of the ways you’re speaking to them. What words are you using to describe them? Pretty, strong, smart, lovely, polite, independent? See your own assumptions about gender inform your choice of words. Are you choosing specific toys to gift them? And do the books you’re reading to them feature diverse characters? It’s worth a thought. Back when I was a kid’s swimming instructor, I sometimes caught myself using really gendered language when talking to my students. Of course, I considered myself very attuned to all things gender. I mean, c’mon — I’m trans. But social conditioning runs deep. I was calling my kids ‘good boys’ and ‘good girls’. Without even realising, I was giving them specific pink or blue floaties in the pool. And when I created puppets for the kids — yes, there was puppetry involved in my swimming classes — I usually defaulted to making them male characters. So, I checked myself. I started to relearn my behavior. Instead of ‘good boys’ and ‘good girls’, my students became ‘cheeky monkeys’. Sometimes they were ‘cheeky chickens’. No matter the animal, they were always cheeky. Then, I made sure most of my puppet characters were strong girls. Some of the puppets used they/them pronouns (not that the kids noticed that anyway). I know my swimming class and puppet making might seems like a little, trivial thing. But sometimes, when it feels like the world is against you, any small disruption to the system feels like a win.
Providing support for a friend or family member when they come out is a very personal thing. There is no single nugget of advice that applies to LGBTIQA+ people across the board. For trans and gender diverse people, the roadmap to coming out is even blurrier. So, my general advice would be to just ask them. Check in with the people you love about the best ways to support them. Also offering examples of support can be really helpful when someone is distressed or going through a hard time.

But every time I try to get a rope around her neck, she starts speaking in Mandarin and walking backwards towards a river that I’ve never seen before. I get my arms around her, but we fall in the water together. Then as I try to swim back toward the edge I can see the pig crawling up the bank to safety, wearing a pair of dry denim pants. My head sinks beneath the water and I wake up in a cold sweat.
Last night’s dream was upsetting to me. Miss Maroney was there, and so was Mr. Jordan. But we weren’t at work, we were in the belly of a huge whale and everybody was wearing pants except me. Also there were albinos watching us.

When the day of the engagement party arrives, Carrie is drawn to the Plaza, where Big and Natasha’s engagement brunch has just been held. When Carrie asks him why he didn’t choose her, he tells her it all got too hard, implying that Natasha was easy. As Carrie walks away she encounters a man trying to control a horse wildly struggling against being restrained. In a moment of clarity, Carrie realizes that Big gave up on her because she was a woman who could never be tamed.
Season 2, episode 18: “Ex and the City”
Brooke’s simple advice to the girls regarding marriage is “It’s always better to marry someone who loves you more than you love them.” At the wedding reception the gals find themselves on the singles table with a bunch of complete oddballs, including Bernie Turtletaub (aka the Turtle), known around town for good investments and terrible breath. Samantha decides to take on The Turtle as the ultimate public relations project, but despite cladding him from head to toe in Helmut Lang, Samantha realizes that there are some personality flaws that a head-to-toe makeover just can’t fix.
This episode was the most talked-about Sex and the City episode of the first season and was also responsible for the infamous rabbit vibrator boom of the late 1990s.
Meanwhile, Miranda discovers an amazing new vibrator called ‘The Rabbit’ and declares men to now be obsolete. Charlotte is horrified, claiming that a vibrator is no substitute for a man. Charlotte appears less horrified when they visit a sex store after brunch and she picks up a Rabbit for herself.
The girls attend “your average $100,000-dollar wedding”, of interior designer Brooke to Alan, a man who appears to be older, balder and much less exciting than the A-list suitors Brooke was known for dating previously. 80

engaged to be married, and Carrie is so shocked that she storms out. A few days later she receives an invitation to their engagement party, which she vows not to attend.
Charlotte soon becomes so enamored that she ends up bunkering down in her apartment and ditching social events just to spend more time with it. In the end, Carrie and Miranda intervene and confiscate the Rabbit so that Charlotte can return to reality.
This classic episode is peppered with horse-based themes and innuendo but ends up being one of the most heartfelt of the series so far. It is also a pivotal moment in the Big and Carrie story, with Carrie finally coming to terms with the real reason they can’t be together.
Season 3, episode 9: “Easy Come, Easy Go”
The episode begins with Samantha learning the true meaning of girth when she hooks up with a man hung like a Clydesdale. In a more innocent storyline in Central Park, Charlotte strikes up a friendship with a real-life steed and regains the confidence she lost after being thrown from her treasured childhood horse.
This divisive episode firmly sorted fans into Team Big or Team Aidan after Carrie commits the ultimate act of betrayal – cheating on the unsuspecting Aidan after Big tells Carrie that his marriage isn’t working out.
