We are now almost a year into our mission of re-branding, re-launching and

News Brighton Salons Make L’Oreal Colour Trophy Finals Three Brighton Salons have made it through to the regional finals of the L’Oreal Colour Trophy 2016. This means that they will go on to compete in the Grand Final in June. There are currently 6 finalists including Headmasters in Jubilee Street, Simon Webster Hair in Gardener Street and Electric Hairdressing on Ship Street which won a space out of the two positions for the Men’s Image Award.
The three salons were out of 1000 initial entries which was narrowed to 540 finalist, the three will compete in the “Southern Heat” division. On the 13th June The Grand Final will take place at the O2 London, the competition is certainly heating up as a three day European trip with a photo shoot to showcase the winning look, a fashion shoot with a leading U.K glossy mag, a personalised plan to promote their salon and PR opportunities through their winning year, are all at steak! First Shows announced for Kids Week Kids Week, the annual London theatre initiative, returns for the whole of August 2016, with more than 30 shows offering free tickets for children.
The annual London theatre event kids week returns for August this year with more than 30 shows on the agenda, Now in it’s 19th year running, Kids week offers free tickets for children in the hopes of encouraging an interest in live theatre. Love Supreme festival returns Taking place between July 1st- 3rd, Love Supreme is back with even hotter line up for this year’s show including the infamous Grace Jones. The festival is the UK’s only major greenfield jazz festival to take place and will be held at Glynde Place. Across the weekend, 50 acts will take place including multi award winning Kelis, Grammy- winning song writer Burt Bacharach, Dutch sensation Caro Emerald, Lianne La Havas and Mark Guiliana who was the drummer on David Bowies “Black Star”. Not to mention at the heart of the festival ( the band stand ), there will be a whole different vibe with performances from artists such as Paul Richards Trio, Harry’s Tricks, Barnacles, Ezra Collective and Eddie Myer 5tet. Arundel To Brighton Walk On Saturday 17th September we are all invited to walk from Arundel to Brighton in aid of The Dame Vera Lynn Children’s Charity that supports babies and children with Cerebral Palsy.
There are two distances available, 35km (8-9 hours) or 12km(2-3 hours), the walk starts at Arundel castle and will span across the south downs before finishing at the Devil’s Dyke on the Brighton outskirts. The Big Screen
As a part of Brighton Artist Open Houses, Hannah Adamaszek, an award winning Sussex based street artist will transform My Brighton’s Mercury Room into an enchanting garden called “The Brighton gARTen from 30th April – 29th May.
The Ibis Brighton city centre hotel basement was transformed into a Hollywood red carpet on the 7th April for the launch of The Brighton Big Screen, which saw many celebrity appearances.
Hannah Adamaszek is an award-winning artist from Crawley, West Sussex. In 2015 she won the Most Outstanding Artwork at Femme Fierce, Europe’s largest women’s street art festival as well as her first solo show at Curious Duke Gallery in London in 2013, 2014 her second at Fousion Gallery in Barcelona. The transformation will take place in collaboration with Artfinder, where there will be a selection of theirs and Hannah’s work for sale.
Since then the open air cinema has gained a huge amount of interest and early next month from the 10th June- 10th July, it will be screening some of the biggest recent Hollywood block busters including Star Wars: The Force Awakens.
The Big Screen presented by Ibis Hotels is actually one of Europe’s biggest open air cinemas, it’s expected to attract over 100,00 people and was recently features in Conde Nast traveller. Perfect date night out or what?! www.brightonbigscreen.com

From Brighton To Barcelona Brighton is set to star in a new London underground advertising campaign by Loco2, the train search engine company. The advert will highlight just how easy it is to travel from the UK to Europe by train, Brighton was chosen because it’s actually a very simple journey to one of travel current “in” locations, Barcelona. A straight forward journey taking 12 hours and 30 minutes, a long journey but lack fuss. Kate Andrews, co-founder of Loco2 says “I was keen Brighton should figure in our campaign – I studied at the University of Sussex and lived in Brighton for several years. Not only does this mean that Brighton has a special place in my heart, but it’s also where the original idea for Loco2 was conceived.” You can expect to see the Brighton To Barcelona campaign on trains across London from 25th April.
What’s New Pussy Cat? Unexpectedly, Sir Tom Jones will be playing a concert at The County Ground, Hove on 17th as part of his new UK tour following the release of his autobiography “Over the Top” and his new album “Long Lost Suitcase.” To date Jones has 100 million record sales and now, coming to his 50th anniversary in the business and at the age of 75 (can you believe that?!), his reviews just keep getting better with every new album.

Peter James Born and raised in Brighton, Peter James is an International best-selling crime thriller novelist. Published in 36 languages, he was educated at Charter House before attending film school. In 1994, Penguin published Host on two floppy discs, which is now in the Science Museum as the world’s first electronic novel. Peter takes some time out from his busy schedule to talk to Absolute Brighton about his career, and his new book.
When did you first realise you wanted to be a writer?
When I was 14 I read Graham Greene’s Brighton Rock and it totally changed my life. It is quite simply the book that made me realise I wanted to be a writer. It is also the inspiration behind setting the Roy Grace series in Brighton. This timeless novel is both a thriller and a crime novel, although police play a small part and the story is almost entirely told through the eyes of the villains and two women who believe they can redeem them. Greene has a way of describing characters, in just a few sentences, that makes you feel you know them inside out – and probably met them at some point. His sense of ‘place’ is almost palpable. For me, it is an almost perfect novel. It has one of the most grabbing opening lines ever written: ‘Hale knew, within thirty minutes of arriving in Brighton that they meant to kill him.’ And one of the finest last lines: very clever, very tantalizing, and very, very ‘noir’ – yet apt. Greene captures so vividly the dark, criminal underbelly of Brighton and Hove, as relevant now as when the book was first written, and the characters are wonderful, deeply human, deeply flawed and tragic. And yet, far more than being just an incredibly tense thriller, Greene uses the novel to explore big themes of religious faith, love and honour. And additionally, a bonus, it is also unique for being one of the few novels where the film adaptation is so good it complements, rather than reduces, the book. But, it is not just Brighton Rock – I learn so much from Greene’s writing. I don’t think any writer before or after him has been able to create such vivid characters with so few words and description.
How long does it take you to write a book?
Most of my books take approximately seven months to write the first draft, then a further four months of editing processes. But, I

actually plan a book months – and more often years – in advance, and I always do many weeks of research before commencing.
The Perfect Murder, starring Jessie Wallace and Shane Richie, has been a great success. How pleased were you to see this on stage? I have hugely enjoyed getting involved in theatre. It has always been a dream of mine to see something I have written appear on the stage. For me, it’s a magical experience. I’ve had three of my books adapted for television and I’ve never been happy with the adaptations. But, the stage adaptations of The Perfect Murder and Dead Simple have been just brilliant. I love watching the audience, as much as I love watching the play. Every time is different. The current tour of The Perfect Murder is doing fantastically with Shane and Jessie as the leads, the audiences are really great and it has been a sell-out in the venues so far. I’m currently working with my co-producer, Josh Andrews, director Ian Talbot and Shaun McKenna, who adapted both plays for the stage, to bring another of the Roy Grace series to the stage in 2017.
Are there any writers that inspire you? There are so many writers that have inspired me since I started to read that I have an endless list. Here are a few of my favourite books:

How many books have you written? Which is your favorite?

I’ve written 28 books, including 12 in my Brighton-based detective superintendent Roy Grace series. My favourites would have to be the entire Roy Grace series, but also I am very proud of my standalone Perfect People, which took me 12 years to research and write.
Explain to me how you published the 1st e-book? The idea came while I was editing the book Host. I’d had a lot of research help from the Computing Sciences department at Sussex University. One of the students who had been helping me phoned, very excited, to ask if I had ever considered publishing a book electronically, and that Host would make the perfect vehicle because of its subject matter of the downloading of a human brain.
It was probably the fastest sell of my life to my publishers! I phoned Andy Welham, then the marketing director of Penguin, and asked him what he thought about the idea of putting the book out in electronic format alongside the traditional hardback. He loved it! The content of Host filled two floppy discs, and separate Mac and PC versions were made. The discs were placed inside a hard jacket that opened out, like a book. One thing that was very different was that instead of having the traditional author photograph on the jacket, there was a Quicktime video of me at the end of the book that readers could click on and get a very klunky 30-second message from me, saying I hoped they had enjoyed the book! The electronic books were priced at £10, which was then the same price as a hardback. We did an exclusive deal with the old bookstore chain Dillons, who bought 10,000 copies of each platform for a 30-day exclusive in the UK, and then it went on general sale.
Are there any upcoming novels you can exclusively tell us about?
“ I receive letters from

It has style, but beneath the surface it can be very sinister.” Not exclusively, but I have three books being published in the coming months! I’m excited about my new Roy Grace novel called Love You Dead which is the 12th in the series, out on May 19th. There is a big, big development in the Sandy saga in this one, I promise! The central character is a true black widow… An ugly duckling as a child, Jodie Bentley had two dreams in life – to be beautiful and rich. She’s achieved the first, with a little help from a plastic surgeon, and now she’s working hard on the second. Her philosophy on money is simple: you can either earn it or marry it. Marrying is easy, it’s getting rid of the husband afterwards that’s harder, that takes real skill. But hey, practice makes perfect… On June 16th the paperback of my ghost story novel, The House On Cold Hill will be published.
Then, on July 14th my first non-fiction book, Death Comes Knocking – Policing Roy Grace’s Brighton will be published. I have co-written this book with the former Commander of Brighton and Hove Police, Chief Superintendent Graham Bartlett.
Why is Brighton so special to you?
I grew up in Brighton, where all my Roy Grace novels are set. In books, place is as important as the characters – in the way that Oxford is to Morse. I receive letters from all over the world from readers wanting to come to Brighton – many of them asking if they’ll be safe! Brighton’s the perfect place to set my crime thrillers. It has style, but beneath the surface it can be very sinister. Three chief constables have told me that Brighton’s the favourite place to live for some of the top criminals. There’s a harbour either side, ideal for importing and exporting contraband – and for a quick getaway there’s Eurotunnel and Gatwick airport as well. With two universities and its legendary reputation
as a party resort, it has a massive recreational drugs market, and the antique and jewellery shops of the Lanes have been legendary in the past for fencing stolen goods. In 1932, it was given the unwelcome titles ‘Crime Capital of the UK’, and ‘Murder Capital of Europe’. Titles which, fortunately for my novels, have never been lost! For me that adds to its appeal as it’s the cities with a dark underbelly that are the most vibrant. It has almost every kind of villain under the sun – and I’ve made it my business to know a fair few of them!

Paddle Round The Pier After 20 years of successfully raising money for 30 charities, Dave Samuel, director of Paddle Round The Pier shares his story of how it started and how his love of the sea and Brighton turned into the city’s most popular event.
P
addle round the pier is publicly funded event created by Dave Samuel, For over 20 years Dave has been responsible for one of Brighton’s most talked about and loved family fun days that include sports such as SUP polo, kayaking, swimming races and of course, the star of the show –The mass paddle.
From the past 20 years of your event, are any of the original members involved?
There is only really me from the originals. Our longest serving member of the crew is Alison Harris who began in 1998, and she’s so going to hate me for telling you that!
Ali is a legend among the crew, she’s a “do it all kinda-girl”! She has done practically every job there is in the Paddle Crew - even moving an illegally parked tank from the seafront one year. We hope to have everyone back sometime this year to celebrate our 20th anniversary!
Where did your inspiration for the original concept come from? Has it changed over the years and why?
My inspiration was simple . At the time I was doing a fair amount of campaigning for the then new environmental group Surfers Against Sewage. It was my way of raising awareness for the poor state of the sea and a way of bringing a social gathering of surfers. At the time there were only a limited number of surfers in the area, something like 100-150 not like now where there must be over 1000! By year two I realised that we needed to tag SAS alongside a more recognised charity in order to reach a wider audience, so we started with two and later added the third charity in subsequent years. The essence of the event remains the same - raise some money for charity but have a good time doing it.

Did you ever expect the event to get up to your current amount of 50000 annual visitors?
Certainly not in the early years but by 1999 I realised the potential as the water sports community rapidly grew once the advent of surfing in mainstream marketing & culture was upon us!
Brightonians are spoilt for choice when it comes to events in the city, but they know a good one when they see one!
Paddle is everyone’s event; it doesn’t belong to me or any other individual. It’s collectively owned by the people and the city, and I am merely the custodian.
Do you normally advertise your event or just rely on word of mouth?
Paddle has a rule of never paying to advertise. We rely on the good will of our media friends to put the message out there each year. It’s not an event that has ever been heavily PR led, it doesn’t need to be as it’s such a simple concept. It’s good work is spread by word of mouth, it’s reputation for being genuine is key. Our biggest form of advertising is locals supporting Paddle stickers on their cars or vans! Have you got yours yet???
What do you think makes people volunteer for Paddle round the pier?
People volunteer for all sorts of reasons and in different types of ways. Some are pre-planners doing most of their work in the lead up to the event, others are there just on the weekend, the one thing that connects us all is our belief that it’s good to do things for the betterment of others. The Paddle Crew are some of the best people I have ever met and consequently we have all become lifelong friends.

Q. Where do your profits from the event come from?
Initially they used to just come from the sponsorship people raised to Paddle Round The Pier, but these days its more about donations on the gate. The event cost over 95k to put on last year so it’s vitally important that everyone pops £2 in the bucket on the way in. Paddle are determined to keep the event free to enter but unless people donate a little bit then it’s a lost cause which can’t be sustained. I’m embarrassed to say that we only raised about £16k on the gates in 2015 - think about that for a moment, with 50,000 people attending... who’s not putting their hand in their pocket?
Do you have a mission statement, has it changed over time?
For the betterment of others is our mantra, alongside spread a little aloha spirit. Aloha is such a wonderful word as it means so many different things but in essence for me it’s about sharing our love of the ocean and its cleansing properties with as many people as possible. I sound like an old hippy now don’t I!
How would you describe the event to someone that’s never been? and what in your opinion is the best part of the event?
Wow that’s a tough one! I suppose the best way I could describe it honestly would be to say it was like a village fete on steroids. We try to reinvent the Paddle Village each year with new items alongside old favourites. My two personal favourites has to be the Beach Flags competition on the Jeep Beach Sports Arena as its so competitive, and the Access Beach sponsored by Brighton & Hove Bus company as this genuinely changes lives. Both are a joy to watch and help on! The Paddle Round the Pier event will return this July on the 2nd and 3rd. All proceedings will be donated to charity.

Dean Goodman Working in the industry for over 15 years, fashion casting director Dean Goodman is the guy to work with.

is portfolio boasts recognised clients including Italian vogue and he is the man that helped start the careers for well-known faces such as Rosie Huntington- Whitley and Suki Waterhouse. Using his knowledge gained within the fashion industry including his experience, Dean specialises in all aspects of fashion, casting, model placements and directing. Within Dean’s hectic schedule, he agrees to take time out to talk to Absolute magazine about the fashion industry and the high profile clients he works with
When did you first become interested in the fashion industry?
I have always had a passion for fashion so at the age of 16; I attended The London College of fashion, for one year. Following this, I began to work for fashion retail stores and quickly progressed to management, and soon after working within the buying department. Following this, I began working for a model agency and learnt as much I could to progress further. During this time, I got to travel around the world seeing new collections including the fashion shows. This had given me the opportunity and experience to cast myself.
Can you describe what a typical casting session is like, from start to finish?
Each casting session is different, say for example

if the shoot were for a commercial or show, then the process would be different to a magazine editorial. With shows, the client and I would evaluate what the models look like wearing the fashion clothing and how they walk on the catwalk. Within this type of casting the fashion clothing can be customised and altered to suit the model. If my client requires a casting for a photo shoot within an editorial, then I would be sent a brief including criteria of what they are looking for. It is then my job to provide them with a model meeting their description. The key to this, is to find exactly what the client is looking for.
Why do clients want to work with Dean Goodman?
I feel over the years of working within the fashion industry, I have built a good reputation and I have always delivered. Most of my castings have come from recommendations through my clients. I am lucky to have clients that continue to use my services and enjoy working with myself. I really feel my experience and my portfolio is what encourages clients to work with me.
Can you name some of the brands/ designers you have worked with?
For the past 3 years I have been head of casting for Japans most preeminent brands TOGA, making it the seventh season. I have also cast for Italian vogue, Whylde magazine, PPQ. A lot of my work can be seen on my website. www. thegoodmancreative.com

You’re constantly seeing new faces. What would you say is the trend at the moment?
Honestly speaking, I do not follow a trend. I never have and never will. For Women models in particular a classic beauty, glamour look with a slight edge is generally what casting directors look for.
What upcoming projects can you exclusively tell Absolute magazine?
I have recently finished a big shoot for GQ magazine, which I am excited about. This is the first time I have worked with them, and I am impressed with the new style direction in which they are taking. This issue will be coming out July, so make sure you buy a copy.

There are some days when the idea of having a massage appeals to me and others when the thought of someone touching me is ‘No thank-you very much’. I have to admit that it was one of the later type-of-days that I was having when I was scheduled to visit Jonathan Paul Life Therapy at his treatment room at the Shadi Danin Medi-Spa.
The therapy room I arrive at is modern, warm and inviting which is just what I need on a freezing cold day, (come on Brighton, where is our summer?). Jonathan is welcoming, calm and an advert for what they call ‘beautiful on both the inside and out’, spending time over a detailed consultation which took in to account my lifestyle, feelings and any issues I might have in my body, such as pain or tightness and finally to find out exactly what I was looking for from this treatment. There are six types of massage treatments that Jonathan Paul Life Therapy offers.
Release, Balance, Rejuvinate, Energise, Relax and Boost. The main difference between them is the mix of essential oils that he mixes up in front of you using a base oil of coconut oil. Together we choose ‘Relax’ for me as I am the last appointment of the day and have a no hassle evening ahead of me in front of the TV. This gorgeous smelling potion of vetiver, lavender, ylang ylang and roman camomile is meant to induce calmness and be the ideal antidote to a stressful day. It will apparently be helpful to unwind before a hopefully stress free evening. My back and shoulders are full of tight muscles that feel like knots and we discuss that I like a firm hand when it comes to massage. Jonathan is trained to administer relaxing, deep tissue or sports massages (or a combination of all), so getting right to crunchy areas of my back was not a problem.

Lying on the heated bed, cosied up in fluffy towels, with the occasional explanation or question from Jonathan’s incredibly soothing voice, (Back in the day, he should have read Jackanory!) I could actually feel my muscle knots bending and loosening under the pressure of the massage. Yes, this was a very firm deep tissue treatment but exactly what I needed and I would recommend it to anyone. If you are paying good money you want it to work! I left Jonathan Paul Life Therapy feeling totally relaxed, smelling quite fabulous and slept like a baby that night.

The Goodfella’s Barber “ You’re only as good as your last haircut.”

Tolghan Gul, or “T Boss” as he’s referred to by colleagues and friends alike, owns one of Brighton and Hoves most popular and well known Turkish barber shops. When I walked in to our arranged meeting I was greeted promptly and served a traditional Turkish tea compliments of a family friends café next door. Goodfella’s is not just your average barber, most shops now will offer a wet shave and hot towels, but it’s easy to see that Tolgahan and his crew have gone the extra mile with their services.
Being a women I can’t say I’ve particularly spend that much time in a barbers, but I can see why it’s so popular. After a successful few years, Tolgahan has been able to open a second shop down London Rd, equally as sought after as his Western Rd shop. It was difficult for us to really spend 5 minutes talking to each other, but he managed to fight of the customers and spare me just enough time to talk about his passion.
How did you get into barbering?
I’m originally from London, and my uncle had his own barbers there. I was trained up by my dad and my uncle when I was younger.
What made you want to open The Goodfellas?
Well it just made sense, it’s all I’ve ever

known, and I’m good at it. I’ve also got a few family members in Brighton and they would always ask me to come and see them, I was spending a fair amount of time here, so it just seemed to fit. I came straight from my uncles shop to owning my own.
Where did you get the name “The Goodfellas” from?
Obviously, it’s a film and it’s one of my favourites. As a barber you have to get physically close to people and respect them, you’ve got to be a “good fella!” I think it stands out as well, it’s a name that has been used but not one you can easily forget.
Do you have any plans to expand? What does the future hold for The Good Fellas?
Wouldn’t you? If you could expand why wouldn’t you? I do have another shop already, but in the future I would probably expand again. However, it is difficult because I won’t hire just any old staff; even though I can train them up they’ve got to be the best at what they do. If I can find the right people then I will expand because our style or service is popular. We shall see.
Do you feel like it’s necessary for you to try and stand out from the crowd? There’s a lot of other barbers around here.
We already do! It’s not always about who got the best shop front and making yourself visible. Our shop is good looking, but we

offer so much more than most barbers do. You don’t just have a haircut here, you can have skin fades, foot massages, mud masks, threading, hot towels, and the list really does go on. We don’t have to go the extra mile, but we want to. It’s a whole experience here, and like you said to me earlier, you don’t even get this in a woman’s hairdressers!
Another thing I’ve noticed lately, it seems like barbering has become a trend now, there are barbers everywhere; three or four were I live. What does that mean for you and for The Good Fellas?
When I’m not at the shops, I have four or five people working inside, because they are loyal. I try to find loyal staff so they won’t go to other shops and work there, and the staff I have got at the moment are dedicated. I’m not really worried about other shops opening up, I have a lot of repeat customers, and there is never a day when I’m short of business, if I don’t have a lot of repeat customers, then people tend to just walk in off the street on the off chance of getting a cut. If they’ve never been before I like to think it catches them out, I hope they are surprised by us going the extra mile. Plus it’s always nice to have new customers too. How did Pretty Eccentric start?
Pretty Eccentric was born in 2009 from a desire to bring back glamour and femininity to the modern wardrobe. Having worked in the fashion industry for more than 20 years, I created the Pretty Eccentric label because I saw a gap in the market for glamorous, vintage inspired occasionwear as an alternative to high street brands.
Why did you choose to be based in Brighton?
Brighton is such a vibrant city and has a unique independent quarter. It has become a popular destination for those seeking an alternative to the same old boring high street shopping and this fits with our ethos perfectly.
How you would describe your vintage inspired collections?
I reference silhouettes from across the

decades. I take inspiration from the 1920s to 1950s eras and I design or handpick every element of the Pretty Eccentric collections so our customers can dress from head to toe. I am always on the lookout for inspirational vintage pieces and I have a library of well-thumbed historical fashion books. I love original details and often incorporate them into my designs.
Which designs are your timeless bestsellers?
Our lace dresses are always popular. They can be worn to so many special events and are a great alternative bridesmaid dress. We also design some fabulous 1940s shapes that bring a quirky femininity to your wardrobe.
Any pieces we MUST have for 2016? The Bacall Dress is the magic musthave for 2016. It is a wiggle style dress that incorporates a fishtail skirt. This style is slightly wider at the shoulder, to create the illusion of a smaller waistline. It suits all figure types - fabulous and flattering for curvy shapes and effortlessly stylish on smaller frames.

If you’ve ever thought about trying Sri Lankan food, then Moonstone should be your first choice. It is the only Sri Lankan restaurant on the south coast, but why travel anywhere else when you have something so wonderful on your doorstep? All the chefs are Sri Lankan natives; you won’t find food healthier than this. Most Sri Lankan food is already gluten free anyway, but they also come with other amazing health benefits from the allnatural ingredients in almost every meal.

Meaning there is no reason to not go and enjoy yourself. There is something for everyone at The Bali Brasserie.
Iydea is a well-known vegetarian café located in the busy Kensington Gardens, they offer a large variety of hot food that is either marked as vegetarian or gluten free. The little café is so popular that in 2014 they were awarded “Best Café” and a silver award for “Best takeaway” at the Brighton Food And Drink Awards. Iydea is a much loved café that’s always busy particularly during lunch time!

Offering traditional Indian food in a variety of flavours from all over the continent. Although in general the food of India is a fairly healthy diet, the food of the south is renowned for being much lighter and lower in fat than the food of the North. Many of the Curry Leaf dishes are made using chickpea flour instead of wheat, in the afternoon and unexpected treats are served during their afternoon tea, which are also gluten and dairy free.

Q. So, BREWED suddenly popped up on Lewis Road. What’s the story? No huge story really, Chris and I have been banging on about opening a cafe where we could basicallly hang out making excellent coffee and breakfast. We really wanted to be not just a coffee shop with sarnies and cakes, but a place with a food menu that was a little bit more exciting.
Q. The Coffee quality is as the best in Brighton, what kind of beans blend are you using? I note an intriguing variety on the shelf.
We dont use any specific blend here. We mainly use single origins. And because BREWED does not have a tie to any roastery, we are able to select coffees that we like. Our espresso changes every 10-20 kilos. We’ve used roasteries like Nude, Cast iron, Horsham, James Gourmet and currently we are serving a Nnicuraguia from North Star.
Q. Tell us about the coffee and your latte art techniques...
The coffee is just stuff we like. It will always be of a certain standard because we have total control over what we bring in. As for latte art, its just one of things that comes with being focused on coffee. It is just the finishing touch on somthing to show you really care. The technique is hard to explain. But fundamentally its all born out of having a great base and steaming good quality milk.

Q. You have kept the Coffee options very simple and minimal. Was this a very considered idea? It’s very boutique. Yes, spot on. As a great man once said “less is more”. Q. The cakes and pancakes are a tasty
addition. Are these homemade?
Yes, we bake all our own cakes and make the majority of our food from scratch. We endeavour to buy as much of our ingredients from local suppliers and the open market on london road. Q. How long has BREWED been serving? Only 3 months, very early days.

Please Sir, May I Have Some MAW MAW restaurant in Brighton Square will have you going back again and again….
Chef Mark Wadsworth has always been a foodie and loved cooking. After working in various restaurants and bars throughout Brighton, he decided that food is where his heart is and applied to some of the best restaurants in London to undertake an internship. The Latimar at Penny Hill Park accepted his request. Lucky old us that they did so, as Mark has well and truly honed his chef skills and MAW is where you can sample it.
It started with the occasional pop up restaurant in Brighton and purely through word of mouth these evenings became quite an event with Brighton and Hove’s ‘people in the know’. It would not have been unusual to find yourself sat next to DJ’s such as Russell Small from The Freemasons, Carl Cox and Norman Cook….to name but a few. The food was of an excellent standard and of the calibre that you would expect to find in any fine dining restaurant. This is no exaggeration! With so many people wanting to attend these infamous meals, Mark made the leap in to opening a small MAW restaurant in Brighton Square and this is where my review begins…. The restaurant is both cosy and contemporary. A large black board at one side, a serving bar at the front and clean white tiled walls. The evening I visited there were twinkling candles abound, glowing off the monochrome surfaces. Although the restaurant is small, there is plenty of space between tables, with a mix of Phillip Stark ghost chairs and clean white modern seats. It’s very cool indeed and you can’t help but feel you have found a rather special place.

There is a choice of two menus, one vegetarian and one for the carnivores, with eight courses on each. The grazing menus offer small bites of interesting and varied flavours. These little dishes that keep on coming are like a taste explosion in your mouth!
Each menu started with bread (artisan style) served with truffle stuffed butter and mushroom salt. Be warned, don’t fill up on this as it is so good it is hard to put down. Break into the butter and the black truffle is found. It’s an intense and fragrant flavour and totally delicious.
Next up were some plates of snacks, that looked like mini pieces of artwork –‘ Black Olive Sponge, Feta, Red Pepper and Basil’ – ‘Chicken Crisp, Tom Yum and Coriander Salt’, (I have no idea how they make a crisp so fine and to taste as if you are actually eating chicken!) – ‘Smoked Quail Egg’, which was served on a bed of delicately shredded, crispy leeks – ‘Rice Cracker with Smoked Cod, Lemon and Dill’. The layers in these flavours are incredible and reminded me of the type of food a Heston Blumenthal establishment might serve. It’s all twists and turns and really quite clever.
The next course I had was Duck done in four ways, and all I can say is that who knew Duck could taste so different and so fabulous? The Duck soup was one of my favourites and left to my own devices, I could have drunk a pint of it. This was followed by ‘Cod Poached in Olive Oil, with Red Pepper, Garlic Chips, Chorizo and Mussels’. Then, a dish of ‘Suckling Pig with Sherry

Caramel, Burnt Apple, and Miso and Bok Choi’, again totally delicious and which had my table of four smiling with delight.
I was starting to feel a little full now but the great thing about these menus is that they are just the right amount and hopefully prevent you from overeating. Quite often I get to the end of meal and can’t manage desert which at this restaurant would have been a travesty. Luckily I was able to enjoy the next three courses of desert, which consisted of ‘Brie, Truffle and Caramelised Onion’, ‘Yorkshire Rhubarb and Vanilla Meringue, Doughnut (the most perfectly formed tiny doughnut I have seen), Pistachio and White Chocolate’ and a ‘Sweet Box’. What’s a ‘Sweet Box’ I hear you cry!! It was a clear Perspex box with drawers filled with gooey pastels that melt in your mouth, decadent mini chocolate treats and teeny-tiny sugary bites. Passing the box around the table and opening the drawers to find your favourite was a superb ending to an amazing meal. On another note, one of our table was vegetarian and for once did not have food envy, as she was equally impressed with her menu .
To sample this type of food in the heart of our city, at £40 is incredibly reasonable and not only that, it is a B.Y.O restaurant … even better! It’s all in the HOOD Neighbourhood have got it all going on. This uniquely styled Kemp Town hotspot has evolved from the originally themed Brooklyn styled dive bar. The delightful interior with über qirky design themes remain, whilst outside a stunning major make-over has to be experienced.
had the recent pleasure of dining at Neighbourhood on a sunny, Saturday afternoon. The newly refurbished garden area has been transformed into a fabulous contemporary Ibiza styled terrace, complete with shading Palm trees and some typically cleverly designed details. With a suitably loungey soundtrack and attentive, friendly staff, I was all set for a quality meal in an oasis of chill in the heart of the city - St. James Street, no less! Previously voted as Brighton’s best outdoor space, the new garden area firmly cements this position.
Unsurprisingly named as one of the top 16 bars in the land, Neighbourhood now offers a new menu, wine and cocktails. Starting off with the Buffalo Wings in an authentic Buffalo sauce, and Chicken Snake Skewers in a sticky Asian sauce. The menu is still very much burger led, so I chose the ‘Boston Chilli Beer Bun’ with White Trash Fries. My aperitif was the aptly named Chilli and Mint G&T (double Gin muddled with Thai chillies and fresh mint). My partner went for the vegetarian option of the ‘Spiced Black Bean Bun’ with Buffalo Blue Fries, complimented with a Negroni (London Gin, Aperol and Rosso). Neighbourhood describes the burgers as made with a distinctively original artisan feel, using only the best ingredients and finest produce, daily baked bread, local farms artisan cheeses, highest quality local meats and only aged steak in their burger patties. Everything is made in- house, unlike most burger places.

I would say our meal was superb – a fine balance of chilli spice and tasty flavours. The meat was tender and juicy, the rye whiskey glaze was a nice touch. Utterly moreish. The Black Bean Bun was every bit as good. A scan over the menu reveals some wonderfully themed appetisers such as the Asian Pulled Pig Bun – 8 hour rubbed and slow roasted pork with sticky Asian sauce. The Buffalo and Blue Bun – ten spice fried buttermilk whole chicken breast, Brighton blue cheese, maple glazed smokey streaky pig, in the original anchor bar authentic buffalo sauce recipe, topped with julienne celery on seasonal mixed leaf, in a chive and shallot brioche bun. Calamari and Chorizo Bun Tempura calamari, griddled chorizo, siracha mayonnaise, seasonal mixed leaf, in a chive and shallot brioche. All tasty stuff. The terrace was packed, so getting there early is recommended. I could see around me that I was in burger heaven. The menu has plenty of choice, however, and is equally creative with fish, chicken, pork and amazing sides.
Neighbourhood does fine breakfasts from 10am until 12.30, and eaten in the garden on a warm day is a must. Lunch menu is served from 12.30 every day after breakfast. Try ‘The Hood’ fry up or even the Breakfast Burger. The hashes are proving popular and there is much to choose from. On Sundays neighbourhood put their new charcoal BBQ to use with a weekly fish offering. From 3pm every week (weather permitting).

Neighbourhood has an extensive wine list with some rather lovely, hard-to-find Albarino’s and Pinot Noir. The USA Pinot Noir is rather naughty. With the wine selection so reasonably priced compared to many restaurants, it’s an incentive is for people to come here on a regular basis. A super selection of Gin from all over the world, in fact the best money can buy - thus the cocktail menu is Premium Gin-based and perfect for the summer sun. It’s a proper Gin palace! It’s a must to sample the craft beers, far from the norm, and mostly small batch/artisan brewers products. Neighbourhood is fiercely independent and supports such ventures.
The venue is the first choice if you want to organise a party. Garden parties are organised throughout the summer. There are a few special occasions to note. Beds or Cabana can be hired for groups parties with the addition of a charcoal BBQ. Neighbourhood attracts a colourful in-crowd, scene DJs and fashionistas. When the sun shines, you are as close to Ibiza or Miami as you can wish to be.

am writing this article the day before Brighton & Hove Albion’s final match of the season and I can only think of reasons to compare the current market with the situation BHAFC find themselves in before the big decider. They have had a superb season but the uncertainty of the outcome of the match will mean a considerably different future for the club and its city in the coming years. The Brexit match is still a month away but in full swing and I can only hope that the arguments both sides believe in do not affect the last few years we have had of economic stability and security that has made them special. With Brighton & Hove having experienced a amazing growth over this time, it is clear that the referendum is one of a number of factors contributing to a slowdown of a London property market on which we so depend.
A recent Zoopla report suggested a dampening outlook on the overall pattern of the national property market, stating that vendors are accepting large discounts to help jump start the interest in their homes. Londoners, who would normally move their properties very quickly are finding it is taking a little more time and a little more negotiation to agree a sale. Whilst this hasn’t dulled enthusiasm for moving to our beautiful city, the reality is that this years buyers, particularly after taking into account the stamp duty and taxation changes around housing, are a little more cautious. The “panic buying” of 2015 has gone, and with it so should some of the unrealistic asking asking prices set by over over excited estate agents to their enthusiastic clients. At Mishon Welton we have had a great few months even excluding the figures from the ‘Buy to Let’ rush that caused a flurry of activity at the end of March. The market has since stabilised and I consider it a good moment for the more experienced investor to invest as the panic is now over. With an increased standard of property perfect for this market it is now much more focused on the quality/value equation even though the stamp duty change is now firmly in place.
With this comes more letting properties on the market so the cost of rent has seen a slight reduction but there is still a big demand for landlords with 2/3 bedroom garden flats and mid-sized family homes. Couple this with the Brighton & Hove micro business environment with a lot of small tech and creative firms flourishing, we are experiencing strong demand for nice mid-range properties for professional people tempted to dip their toes into life by the sea. Life is good in Brighton & Hove whatever the state of the market. I really hope that you have had a glass of champagne to celebrate the promotion of Brighton & Hove Albion to the top tier of football. We are definitely lucky enough to live in a top tier city with no chance ingoing down a division. I hope we are now lucky enough to have hindsight plus one. A tale of two
developments Last year Lining Properties & Design ended on a high note as we successfully completed our twin house developments along Hove street, 2016 has the potential to be an even busier and even better year for us, we are about to launch another individual development on the same the same street.
The twin house project was a combination of cutting edge techniques and integrated technology exclusive to construction to create a unique set of home that are not only eco-friendly but intuitive to use. Our clever design allows you to access the house’s temperature, lighting, security and even who is at the front door, all via smart phone or tablet anywhere, anytime.
The modern contemporary exterior uses a cantilevered first and second floor, which you can differentiate from the use of materials. We pride ourselves on individuality however we are conscious of creating a product that still conforms to the street scenes from the other houses on Hove Street. To make sure we achieved this, we looked at design cues from the immediate neighbouring properties, we kept a similar scale to the new houses surroundings and we also used materials that were sympathetic to the long standing homes around our site. It’s a more private location, gated and named

Adelaide Mews has a homely, traditional feel from the outside, with Victorian style pavers laid along the front. The more recent architecture of Brighton strikes up more controversy, in the 1960’s the Churchill square swallowed up a large portion of the iconic Grand Hotel in the 1960’s, which of course was

a travesty and the current “Marmite” construction of the i360, something that not every has made their minds up on.
I like to always keep in mind the great architecture of the past, but I don’t think we should be overly tied to it. There’s some really stunningly modern architecture around Brighton and Hove that reflects the vibrancy and diversity of this city. I always appreciate that architecture should be sympathetic to it’s surroundings, but I also believe that it should push boundaries, be inspirational and above all things, materials should be used in innovative ways. Sometimes in life we have to take risks. I hope in some small way Living Properties & Design are contributing to the rich architectural legacy of this great city of ours. My local Hero THE CONNAUGHT is my local, two minutes around the corner from my home and the sea. It does an amazing Sunday roast and is dog and family friendly (children are welcome until 7pm), which are all pluses for me. So, why oh why have I not tried any of the other food in THE CONNAUGHT BAR & KITCHEN and why have I never taken a seat in the restaurant area? Well, I have now and I’m more than glad that I did!
As you walk in through THE CONNAUGHT’S front door, you are greeted with an esthetically welcoming place; distressed and wooden floorboards, mismatched wooden chairs and banquet seats. It has a wonderful homely feel, with the trendy edge of a few large pop up pictures placed here and there. The pub section is on the left, where they serve food in a more relaxed area, with ordering at the bar. The family pet is allowed in this section and I have to say, all in all, I love it.
On the right is THE CONNAUGHT’S restaurant. This is table service and the service is helpful and friendly giving honest opinions and advice on what dish to choose and which wine would work.
The food is made with locally sourced ingredients where possible with no GM produce used and everything is fresh and

made to order. My friend and I decided to share a couple of starters and went for the, ‘home cured salmon gravlax, devon crab and peppered advocate tienne’ and ‘yellow fin tuna tartare with Kentish asparagus and parmesan salad, poached quails egg and lemon hollandaise’. In general I am not a big avocado fan, however the layers of these flavours and textures together was delicious. The tartare tasted incredibly fresh and the quails egg yolk ran perfectly when broken in to.
For our mains, my friend chose the Kentish lamb chops that were tandoori cooked and came with a separate pot of rich tomato rogan josh. The plate looked gorgeous with colourful scorched pomegranate scattered about and a side of beetroot raita. I admit, we were chewing on the very last of the bones…. It was that good! My dish of pan fried seabass, crayfish butter (with chunky bits of crayfish), crushed new potatoes and spring greens was

amazing and incredibly filling but we still managed to share a warm chocolate pot with frozen berries. This was pure decadence with the rich, runny chocolate complementing the crisp sharpness of berries. The menu here offers home-cooked style dishes with interesting twists and added flavours, such as marmite chips served with your ham hock. The food is worthy of any top class restaurant and nothing here is ordinary.
Expect special nights such as ‘MEAT FREE MONDAYS’, a Mexican inspired ‘THE SMOKIN’ GRINGO’ on Thursdays and ‘PROSECCO FRIDAYS’ when bottles of Prosecco are half price. Worthing’s jewel in the culinary crown is tucked away, hiding on a quiet road, just off the seafront; Crescent Road Cafe.
D
on’t be fooled by the casual title, this isn’t your average cafe. In fact, come the evening, it isn’t a cafe at all! This is a hush hush eatery serving exquisite fine dining dishes, without any of the usual accompanying pomp and ceremony.
Crescent Road Cafe is a cosy little restaurant serving Modern British food in both a relaxed and friendly atmosphere. The venue is an ideal meeting place as a cafe during the day and an intimate restaurant to enjoy with family and friends in the evening.
On the night my dining partner and I visited, it was incredibly frosty outside, and so the warm and welcoming glow of the restaurant beaming through the floor to ceiling windows was a very welcomed site. Even warmer was the reception that we got from Nicole the co-owner of the restaurant, which she runs with her partner and the Head Chef Zek. The couple couldn’t do enough to please us, and it was clear from the offset the pride and passion that they have for their beloved restaurant.
The menu is seasonal and although not extensive, offers dishes to suit every pallet. For starters, I opted for the Scallops, Celeriac and Pickled Pear, which on paper sounds like my idea of heaven. What I was presented with was not only a work of art on a plate, but a dish that was created by a master chef. The scallops were cooked to perfection. Soft, succulent and melt in the mouth. The pickled pear added the zing you needed and the celeriac was comforting and silky smooth.

For the main course, I kept with the seafood thread and ordered the Smoked Sea Trout, Fricassee of Samphire, Peas and Asparagus with Grapefruit and Ginger Salsa. This was a beautiful taste of Spring. The exotic grapefruit flavours fused perfectly with the salty fish and the earthiness of the vegetables and, luckily for me, although fine dining in quality, it wasn’t in quantity. These are good hearty portions, and at this level of moreish-ness, they need to be! By this point in the meal, I had completely forgotten that I was in a Worthing back street. I could easily have been in a top Michelin-starred London restaurant. But there is one big difference. The price of these exquisite dishes is half of what you would expect to pay. I have rarely seen better value for money than at Crescent Road Cafe. Usually, I’m far too full for a third course, but in this case I simply didn’t want to miss out! Honey Panna Cotta, Passion Fruit was my dessert of choice. Their beautifully presented, perfectly smooth and creamy panna cotta accompanied by tangy fruit is a triumph in my books. Plus it was light enough to leave the plate sparkly clean!
Worthing is clearly a town on the up with the nightlife and restaurant scene improving dramatically over the past few years. Why would you recommend Brighton residents to jump on the train and head over to Worthing?
Worthing has a large number of independent restaurants & a growing night life which is continually improving. It is turning into a vibrant town with a really cool, laid back feel. There are some great hidden secrets worth searching out for.

Sussex has such an incredible wealth of homegrown produce available. Do you source your ingredients locally?
Whilst we concentrate on British ingredience, we do source fabulous produce that is in abundance in Sussex from cheese & dairy from local farms to seafood caught off the Sussex coast. We have a few Sussex beers & spirits & for wine enthusiasts a fabulous sparkling wine from Breaky Bottom.

Cucinetta Little Italy - Just a short stroll away
There is little doubt that Brighton is a foodie heaven, boasting an incredible array of restaurants to suit every taste and every budget. With this being the case, it is so easy to stay within our city walls when planning on heading out and about for dinner and drinks. I am on a mission to convince you, every now and then, to head further afield into Sussex and explore the wonderful pockets of gastronomic delight that are dotted about throughout the county. This month we start with a hop, skip and a jump over to the coastal town of Worthing to reveal a couple of hidden gems. Worthing, over the past three years, has seen a vast overhaul in its night life offering. With many young families, creatives and professionals buying up properties in this more affordable area on the coast, the demand for upmarket bars, restaurants and pubs has soared and Worthing has certainly come up trumps delivering on that front!
It is remarkable the amount of independent restaurants Worthing has to offer, with very few chain restaurants being based in the town. If a taste of Italy is what floats your gondola, then Worthing will be right up your street. Now becoming increasingly known as ‘Little Italy’, the town is riddled with pizzerias and Italian bistros, all incredibly popular, busy most nights and offering exceptional cuisine. One such restaurant, based on Portland Road (just off the main shopping precinct), is a real hidden gem; Cucinetta. This small, and charming little eaterie not only boasts the warm hospitality for which Italy is renowned, but serves up the most delicious Italian fare you could wish for.

“Cucinetta opened in November 2013. I have always been in this trade. I had spent the previous 10 years working for others, and before that had owned the successful restaurants Le Gourmet and Cafe Lupa. Three years ago I decided it was time to branch out on my own again, with my aim being to basically to continue where I had left off. It’s been great to see so many of my old customers again from my first restaurants return, plus a whole new crowd of Worthing residents and tourists. Cucinetta is best known amongst locals for two things; The best brunch in town and honest, fresh and incredibly flavoursome Italian dishes.
I can’t recommend having brunch there more. Marco serves up classics like Eggs Benedict, Florentine and Royale as well as slightly more unusual dishes such as Calazione (toasted ciabatta, fried eggs, pancetta, mushrooms & grilled tomato) and Uova E Salmone (toasted muffin, smoked salmon & scrambled eggs). They are created using the freshest ingredients available, in a pristine kitchen that is viewable from your table. My review of Cucinetta took place on a beautiful sunny Saturday afternoon, and I arrived to a bright airy restaurant, greeted by the charismatic Marco. Feeling full of the joys of spring, and like we had been transported across to the Mediterranean it seemed only fitting to order the classic Bruschetta as a

starter, together with a cool and crisp glass of their house Pinot Grigio. With the Spring sunshine on my face and a mouthful of perfectly ripe peppers, tomato, torn basil and balsamic vinegar I was in culinary heaven.
Being a die hard seafood fan, for me the perfect test of any Italian restaurant is the quality of their Linguine Marinara and this is where Cucinetta scores top marks. My main course had a brilliantly garlicky tomato sauce that just sung with the flavours of the sea and packed a good punch with chilli. The quality of the seafood was exceptional, with the mussels, prawns, and clams being of hefty size, upmost freshness and incredibly tasty. As well as classic and more modern pasta dishes, Cucinetta offers a wide range of ‘secondi’ mains including steaks, veal, chicken and fish.
If you have any more room, then I strongly advise you to accept the invitation of looking over the desert menu! On this occasion I opted for the lemon sorbet, served with a shot of limoncello and my dining partner went for the infamous tiramisu. Both dishes went down a treat, with the tiramisu being everything it should be; creamy, surprisingly light and incredibly boozy. Not quite as boozy as my dessert which left me in the perfect holiday mood. This holiday mood was short lived as we said our ‘Thank You’s’ and stepped out into reality to find the weather had turned from glorious to grotesque. Touro Allessadro Morelli, chef and owner of the Brighton Steak house, Touro, shares with me what Brazilian festivities and foods are really about.
If someone said to me “Let’s go out for dinner?”, Brazilian food is not the first thing that comes into my mind, purely because you never see many Brazilian restaurants around, but i’ve been eager for a while now to learn about their foods, ever since I saw an episode of an “An Idiot Abroad” in Copacabana. I’ve recently learnt of Touro, a steakhouse in Brighton that specialises in traditional Brazilian food and drink, chef and owner Alessandro Morelli tells me that he’s been in the business for 25 years now, and started out in Victoria, London alongside his business partner. If you spend enough time around the area, you may have heard of Rodizio Preto. Together the duo own 2 restaurants in London, but after deciding to try out his career solo, Alessandro opened up Touro, formerly known as Preto in 2012. Located not too far from the shopping centre on West St, Touro boasts a different and exiting dining experience complete with original Brazilian recipes and my favourite part yet, cocktails.
What made you want to come down from London to Brighton and open up your restaurant here?
Brighton is Brighton , you know? The people are generally more relaxed, I think London is a great place and I enjoy it there but it’s too cosmopolitan. Here you’ve got the seaside; the city has a different feel. It was an opportunity to show a completely different set of people what we do. Brighton is just lovely.
Did you need to alter Touro in any way to fit Brighton more?
No, we didn’t feel like we needed to alter anything, this is who we are.
What was your aim for the restaurant?
I was just 17 years old when I started working as a waiter, eventually I was a chef, my whole life has been restaurants. I’ve worked in lots of places over the years including the famous

orient express train. It’s my life, but we’ve changed over the years to stay current. When we opened, I had the experience and my partner had the funds! I just wanted to do something I loved, it was a dream really.
Your food for your restaurant is authentic South American/ Brazilian food. Can you explain a little bit about what the flavours and themes are in traditional Brazilian food?
We serve many famous dishes from Brazil. Feijoada , (pork with black beans) is like a casserole type dish. It takes about 4 to 5 hours to cook. It’s a very slow cooking dish like a lot of other Brazilian food. Actually we also serve a little Italian food here too, Brazil is a very mixed race country, it’s very diverse. There’s Japanese, Italians and Africans, probably more. So although we are a Brazilian restaurant, we want to show you what Brazil is actually like, so we serve a small amount of dishes from different countries too. We do a lot of our meat Barbequed, just like in Brazil.
I’ve never eaten Brazilian food before and I’m not sure that there are any restaurants like you in Brighton. Would you say that it’s a plus for you that it’s something so unique here? Or has it ever been a problem trying to get the Brighton market on board?
It could of gone either of two ways; you are right there’s not really any competition here meaning no one really knows what the food is like, so we could have been really deserted. Or they could have been really interested to try something different, luckily for us that was the case. I think that English people are willing to try different flavours and cuisines. If you think about it you eat it all the time, even in take-aways. You may not think about it but it’s still foreign food. We serve real good quality food, there are a lot of different types of steaks here, fillet mignon, Rib-Eye steak,

you know, there are loads to choose from. I never had a problem with the fact that we were something different to the area, I rely on people’s word of mouth; they tell their friends when they’ve been here. The feedback we get is normally very positive so hopefully they’ve enjoyed themselves.
You have also got a really interesting bunch of staff working at Touro, I noticed that yourself and some staff are Italian as well as others being Brazilian. But does it ever make it hard for staff who aren’t from Brazil that don’t know the culture well? No I think it’s a benefit, it’s nice to be surrounded by so much culture, all my staff treat each other with respect and when we get someone new, if they don’t know about Brazilian food it’s not long before they pick it up, we would make sure we teach them properly anyway.
Touro seems to be really popular, by looking at your Facebook page I can see that you have events here a lot. Can you tell me about the types of the events you have and what they’re about?
Yes, we like to have events here, on Fridays we have a piano night, on Saturday we have a girl called Hannis who performs. Saturday is aimed a little more at English people, although our events are about bringing Brazil to our customers, I think it’s important to do something a little more traditional for our English customers, we want to accommodate everyone. On Sundays we have the Samba, which is like a party, which is the Brazil we all know and love. Those are the regular events, but last year we held the traditional “ Carnava do Brazil l”, and we had almost 1000 people here during the day, can you imagine that? Imagine how busy we were! It was great, we had Brazilian girls dancing in the traditional Carnaval costumes, Brazilian DJ and food. People bought their children and their friends, it was a great

We also had the “Ano Novo” Festival, for New Year’s eve, a similar festival but much bigger, and the “ Festa Junina”, which is the All Saints festival. So we like to do the festivals from Brazil to keep the culture alive, we bring Brazil to England.
What’s been the best part of working at Touro for you?
Well, like I said it’s my whole life, but I love the “Ano Novo”, it’s like a huge carnival, it’s like being in Copacabana during festival season, minus the men in thongs…
Can you give me an example of something that’s traditional in Brazil that you apply to Touro?
We don’t serve food unless it’s done EXACTLY like in Brazil, because we don’t want to change traditions, the dishes there are old fashioned so we do the same here. It must be exactly like the original otherwise it’s not the same. For example we serve Picanha, a really popular cut of beef in Brazil, and we have traditional cocktails too. There’s one called Caipirinha, made with Cachaca, sugar and lime, there’s quite a few other we have too.
What do you think the future holds for the restaurant?
I’d like for us to grow, to be able to show more people what we can do. It would be nice to open another restaurant but we are happy at the moment. I want to really get to know Brighton well. I really enjoy sharing with the local community our traditions and festivals, our future in Brighton is looking very promising and I’m looking forward to the Olympics this year! Fountain Inn Busy city jobs require an outlet for stress, and we all know how over the top Brighton life can feel at times. If just for a day you could escape to another world, then why wouldn’t you ?
Picture this: a little country pub, nothing unusual in that, but the scenery makes all the difference. Tranquil ponds, 16th century structures and trellis archways. If ever there were a personification of traditional Sussex, this would be it. Located just off the Steyning By-Pass on the A283, The Fountain Inn is a charming little hide away that is just made for a calm summers day.
Inside it’s very atmospheric with lots of period detail including a beautiful 16th century fireplace, low beamed ceilings, farmhouse tables and creaky old floor boards, a great location for those who haven’t explored this part of Sussex yet, country dining at it’s best.
The food is all home cooked and traditional, ingredients are supplied by local farmers. Some of the well-loved dishes of The Fountain Inn are the steak-frites, fish and chips, sharing platters and even a children’s menu. The specials boards changes daily to cater for regulars and locals.

For my starter I went for the English Asparagus, Crispy Parma Ham, Poached Egg, Parmesan, Balsamic £8. And my partner, Salmon Fishcake, Lemon Mayo, Dressed Rocket £8, When our starters arrived we were both impressed with the quality of the food, very nice indeed, For our main courses I decided on the ‘Hutchings’ Sausages, Onion Jam, Buttered Mash, Red Wine Gravy £10 with my partner choosing (v) Roasted Butternut Squash, Goats Cheese, Rainbow Chard & Pine Nut Salad, Beetroot Dressing £12, as with the starters, were pleased with what we saw when our plates arrived at the table. All in all we left full and highly satisfied the service as with the food was excellent with a lovely relaxed atmosphere within

The Foragers The Foragers pub is a pretty, vintage pub located in Hove that prides itself on it’s locally sourced produce.
On a sunny day even the most run down looking of places looks better, but I was struck by how truly beautiful this building was. With hanging flowers all over the outside and a perfectly painted facade, I already had a very good feeling about what I was about to encounter.
On arrival we were greeted by Bruce the manager, who talked to us a little about what The Forager pub is really all about. He explained to us in great detail the lengths they go through to get their organic and free range ingredients, even down to working with game keepers in Uckfield, which is particularly close by, and seafood is caught on a daily basis by a local Brighton family. The name “The Foragers” is more than just a title, it’s very accurate considering all the herbs and greens are foraged from their own garden! There were a few local ales to choose from, which included Harvey’s of Lewes, and if you’re more of a wine person like me, then there is a selection of new world wines and the classics too. It was beginning to feel obvious why The Forager has won so many local awards, and I could tell that Bruce and his team are passionate about what they do. We were seated in the back of the pub, where I noticed there was an outside eating

area. The furnishings inside were all made of dark wood and the whole building has a retro feel to it. Despite the dark colours and the old-fashioned decorations, I would still say the pub was bright, cosy and well looked after. It is a comfortable place for Sunday lunch or a quiet evening drink. There is a lot to say about their food. I surprised by the selection of vegetarian mains on the specials menu. For starters I ordered the anti pasti which was just the right size and tasted very fresh. My partner ordered pan roasted scallops, pea and mint pureed in parma ham. To be honest we could’ve got away with starters for mains the portions are a fair size.
For mains we had a squash, sweet potato and lentil burger with camembert and pan roasted chicken, mini potato fondants and red cabbage veloute. The veggie burger was HUGE but delicious and I still managed to finish it. What was also really interesting was the selection of veggie dishes; normally a lot of places will only do a stuffed mushroom or are nut roast dish, which is nice but it’s always good to see a large selection of choices to offer. Needless to say I was very impressed. It’s true that “you eat

with your eyes” and they served what I call “pub sized” food, meaning there are no pretentious sized portions and you really get your money’s worth with your meal.
There is also a children’s menu available and it included much more than the usual burger and fries options. It’s aimed at being a bit more healthy which is great to see. The specials board is updated daily and the set menu changes every few weeks, which is welcomed if you are a repeat customer. Recently Bruce has introduced cocktails to the menu at The Forager. They are definitely the ‘in thing’ at the moment and it makes me love a place even more when they serve them. We both had a blue gin, muddled strawberry and black pepper cocktail; pretty to look at and very sweet, but with a strong kick. Something that you might find catching up with you very fast!

A Secret Plot Down a quiet side road hides one of Brighton’s best kept secrets. Out of the way from the hustle of the city is The Plotting Parlour, a cross between a 1930’s speak easy and a Victorian bar.
A newish- addition to the Brighton scene, it has only been around for just over a year, in it’s nonchalant location, the Plotting Parlour has been building it’s reputation using not much else but word of mouth. It has often been described as a clear reflection of the Owner Chris Benjamin’s attention to detail. This is a table service venue and the atmosphere is carefully managed to keep an under-the-radar feel, only one booking of 12 people are allowed during weekends to maintain the intimate environment. A true speak easy.
The name was inspired from the original concept, a Victorian style parlour where you gather with friends to plot the night ahead. The staff of The Plotting Parlour all work closely together ,adding their own input to the menus. The idea behind the ingredients to each cocktail is created in a unique way, the name comes first and then the ingredient are thought of after. There is a responsibility and respect that comes with working for such a decadent and unique establishment.

As the night unfolded I was recommended “The Bee Keeper.” A cocktail with Buffalo trace, Borage leaves, Lemon and Lavender marmalade topped with honey and Lemon. Very much an oldy-worldy English concoction, beautifully presented with edible flowers. The warm atmosphere, wood panelling and small details in everything just transport you back into time to what feels like a whole other world. It has a magical atmosphere to it, and one room features a renaissance painting that has been blown up to cover the walls to the ceiling. This setting is ideal for a romantic date or special occasion. No dress code or pretence, with a large diversity of customers makes it all the more captivating.

A little slice of
Paris
is the heart of Hove Newly refurbished garden area now open
The day we decided to visit the Paris Bistro Bar was like many days recently; cold and windy, and so stepping in to meet a smiling Elvis (the Manager) was a godsend. Already I was in a lighter mood as I was escorted to the back section of the restaurant where our table sat underneath a beautiful glass roof which (I would imagine) would be beautiful on a summers day. The restaurant was busy from the moment we arrived, with a wonderful alfresco atmosphere that heightened as we dined. Although the surroundings were bustling, the service was exactly as you would expect from a Parisien restaurant; calm, attentive without lingering and at a relaxing pace. In traditional French fashion I enjoyed a very generous glass of red wine as I examined the beautifully enticing menu.

For starters I tested out the potted ‘King prawns in garlic, extra-virgin olive oil, lemon wedge and warm baguette’. I’ve never been a huge seafood fan previously, however I was surprised to say that I enjoyed every single mouthful. The prawns were a good texture, large in size and beautifully infused with garlic. I was actually able to leave my plate sparkling clean as the warm baguette served as an excellent tool for mopping up every last bite! I chose the ribeye steak for my mains, which weighs in at 10 ounces and is chargrilled and served with A side of sautéed mushrooms and cherry tomatoes. I enjoy my meat very well cooked and so am unfortunately often presented with a rather dry piece of meat. This certainly wasn’t the case here, as the piece of prime steak was succulent, melt in

the mouth and was served together with a portion of fries (add an extra £3). The dish was beautifully presented on a chopping board and also included vegetables which were well cooked and full of flavour. To finish off my meal, Elvis, who is not only an excellent manager but a talented cocktail maker, mixed us up a special cocktail of vodka, triple sec and fresh grapefruit juice. A complete pallet cleanser and a great finish to the meal. The overall design of the restaurant is inviting, with a large seating area at the back and patio heaters outside, making it a great place to eat on a call a day as well as somewhere very magical on a Summers evening. www.pariswine.bar

Aberdeen Steak House I have been wanting to visit Brighton Aberdeen Steak House for years, ever since I saw the “Steaks as big as you like” signs over the door and the pics online of the truly huge special steak dishes, I finally had my chance with two of the Absolute team
I think people’s doubts about visiting the restaurant mainly stem from the older style & maybe to some, not very modern exterior. Yes the exterior is older in style (I prefer the term retro or vintage) but I have to be honest it made a nice change from the modern - minimal look places we have been used to visiting these past mths, and as they say change is good, and I for one loved it! I felt like I’d stepped into a family restaurant of my childhood such a warm welcome from the team there to every diner that entered with fun conversation with our waiters that made the meal even better, It’s not the biggest of restaurants with around 150 covers at a guess so a nice intimate atmosphere, what’s nice is that they haven’t crammed more tables in like some places do, so you’re not banging elbows with the diners next to you.
The main menu is varied with a lot of fish & chicken dishes & even a couple of veggie ones along with a wide array of steaks. The starter menu is more limited and is one of the reasons we chose a selection to share between us. My two team members both love fish so it was fine for them with lots of choice. they had the King Prawns Cooked in white wine, lemon and garlic sauce, also the SPICY SQUID Squid cooked in tomato, red chilli, parsley and garlic sauce and finally my two dishes the GARLIC MUSHROOMS Sautéed mushrooms cooked in white wine, garlic and parsley BBQ Ribs Half rack of slow cooked ribs !! I have to say when they arrived we all said we hadnt ever seen starters of this size !! you most certainly get your monies worth at this

restaurant !! all our starters were amazing !! and after a glass or two of house white and red we were ready to take on the mains.
For mains everyone went for steak, I had the FILLET STEAK (12OZ) A nice and lean cut that melts in your mouth, coming from the small end of the tenderloin, also a side of their famous mash, my two dining partners went for the special THE TOMAHAWK !! a huge steak for two people that made the boast of being the largest in the venue !! we also ordered a few sides, the grilled tomatoes, the fried onions & a couple of other bits. It’s worth noting that your steak comes with just potatoes (Either saute or chips) so if you want anything else as an accompaniment you have to order it. My fillet was lovely & the blue cheese sauce was also delicious, all the steaks were perfectly cooked & the chips & saute potatoes were also delicious, sounds like a small thing but a steak dinner can really be ruined by bad chips, no fear of that here, they were crispy & lovely. The fried onion & grilled tomato accompaniments were also well cooked & one order of each was enough for a few people to share.
We had a bottle of house red which was very good & a bottle of house white which I though was absolutely delicious and also another which name escapes me but was ordered on the advise of our fab waiter for our mains and I have to say this choice was great, worked so well with our meat mains. We finished the meal with a selection of desserts which were all very nice & coffees,

Service was perfect, friendly & we were made to feel welcome & given attention despite there being numerous repeat customers in (They seem to have a lot of very loyal repeat business which is always a good sign) we didn’t feel like we got less attention than the regulars. The man that works front of house was friendly & inclusive & shared a giggle or two with us (Especially over the enormous TOMAHAWK dish we had ordered!). I’d definitely go back & definitely recommend it, I kind of fell in love with the place which, as a steak lover, I kind of thought I would, but the quaint inside & friendly service were unexpected joys. For me personally it’s a 5 star, I loved everything about it, It’s not the cheapest place in town but the quality of the meat & the service make it worth it in fact I would class it as affordable and top quality. Folk STYLE Sam Brothers is a 21 year old singer-songwriter, performer, based in the South of England. Although he is rooted in the raw traditions of the travelling Troubadour – he reflects the ever-changing world we live in through the wide eyes of his generation. He has even played on stage with The Pretty Things.
You may have walked past Sam on the streets of Brighton. If you have an ear for something special you would have recognised an exceptional emerging talent. Meet Sam Brothers...
What would you call your self – an acoustic artist or a folk singer?
Folk singer makes more sense. I sing traditional songs but I tend to rip them apart and use their pieces for new songs. Perhaps Folk artist or Folk surgeon would be a better term. Its best to stay away from the term acoustic artist though because that is now used as a label for a certain type of modern singer songwriter who if they did do surgery, would only do it on themselves.
How do you earn your living – is it just busking?
I earn my living from playing gigs and busking. It is quite common for people actually to put money in the case for advice on guitars and directions (If I know the way!). The music pays better.
Where do you normally busk?
Canterbury, Royal Tunbridge wells, Kingston on Thames, Winchester and Brighton amongst others. I usually go to places with an interesting history because folk music is appropriate for the setting and because I can make better money.
Where & How did you meet your record company/manager/producer? I met Mark while busking outside The Dorset, North Laine, Brighton one day in April. He came and bought a CD of me and we met up for a Coffee a short while after.

What are his credentials?
Mark has done loads of stuff, the list is very long. He started off playing drums for artists like Donovan and Arthur Brown, is the owner of a number of studios including the Ronnie Lane mobile studio, produces the Pretty things and has worked on numerous legal cases getting unpaid royalties for the Bob Marley catalogue, the Rolling Stones and the Bay City Rollers amongst others. He runs a music publishing business with Crispin Evans who was the Vice president of Universal music publishing for 17 years.
So, is there an album in the making? Yes and it has all been recorded now and we are just in the process of deciding on a final order for the master.
Are all the songs yours, on the album?
They are apart from the Phil Ochs song ‘There but for fortune’, a very socially aware song, it adds a different kind of flavour to the mix. The rest of the album covers a large time span of my creative life - some of the songs go back about 6 years and others were written only last year. Although I have written all the songs, My Producer/ Manager Mark has helped me improve some of the songs quite considerably a bit like Hank Williams producer did for Hank.
Do you perform any older/cover songs Yes, I play a big range of older songs, particularly American folk songs such as 900 miles, Down in the willow garden and Long Black Veil. I play a lot of 60’s folk revival songs and take that kind of attitude of mixing it all up a bit so play Country, English folk, Scottish folk, Bluegrass and

a blues here and there. Its all roots based music though and the songs are often pretty simple (Compared to say Jazz or prog rock) so I can remember lots of them.
Where are you recording the album?
911 studio, Cowfold, East sussex. When I arrived there was this big old Georgian manor kind of place but the studio wasn’t there and turned out to be in a semi underground complex in the outbuilding. The sound is fantastic. I was blown away by a Pretty Things recording of the 2” tape machine and I knew as soon as I heard it that this was the place I wanted to record.
Is it true that you’re recording it entirely in analogue and in the oldfashioned, “all full performance, with nomoverdubs” style.
Yes we have recorded it purely in analogue because the sound is great. It is quite a challenge recording something this way because there is literally no room for error and some of them took a number of takes for me to get right. One idea this process consolidated for me is that analogue recordings sound so good partly because of the limitations of the technology. You can’t just go back and overdub one word, you have to do all of it or most of it again to get the take. I think this helps retain a certain human element to the recording, something missing from a lot of modern recordings.
Are you using old, analogue recording equipment and have access to old guitars and stuff?

fantastic gear. Interestingly, the guitar we ended up using the most was this dusty stringless thing I found at my ex-girlfriends house. Its an old Japenese Dreadnought with ‘Chaser’ written on the top and sounds great, better than most of the high end Martins I’ve played. Also the Harmonica was done with some dodgy (very dusty) harmonica from the studio but it worked really well!
Is it true that you stood in for a member of The Pretty Things on a short tour of Holland and played to big, rock n roll crowds.
Yes I stood in for Frank Holland and we played three nights in Apeldoorn, Rotterdam and Hoorn all of which I enjoyed a lot. I was on rhythm guitar, harmonica and backing vocals. I enjoyed playing the early RnB tracks like ‘Honey I need’ and ‘Don’t bring me down’ the most, but also the psychedelic ones like ‘Defecting Grey’. It was a real honour to be able to play with such a legendary band and I would do it again without hesitation.
Are you having a film documentary made of the recording and of your start with your new record company.
Yes we have had someone in to get some shots and at the moment it has been cut into a promo video with potential to be made into a documentary. It looks good so far.
Is it true that your manager is looking at the famous “Topic” record label as a potential outlet for your new record – and weren’t they the major founder and outlet for the original “first-wave” of British folk acts in the 1950’s and 1960’s?
My manager asked them but they are not taking on anyone new at the moment even though they liked the music. Also, they are looking for acts who sing the songs in a more traditional manner which is fair enough. People are always going to want to listen to it done that way, myself included. Luckily my manager Mark has lots of experience and is good at what he does so we have other options.
What are your principal, musical influences?
My principal influences are people like Leonard Cohen, Nick Drake, Townes van Zandt, Ola belle Reed, Devendra Banhart amongst others. Artists that that treat their work with an incredible respect and whose lyrics are often as important as the music itself.
You are an accomplished fingerpicking guitarist – how did you learn that rare style?
I had a guitar teacher when I was at school and he showed me on one of our last lessons about age 16 how to do Travis picking which is this country folk picking you hear a lot. I then learnt pretty much the whole of Five leaves left by Nick Drake over that summer which set me up pretty well. I listened to people like Bert Jansch, Davey Graham and Lightening Hopkins to learn the subtleties.
but if my work is good enough, I would like to to perform it to audiences across the world and make enough from that and record sales to support myself and a family. That said, the music must come first and I would rather die a busker than sacrifice my artistic integrity.
I believe your manager has an involvement in a major, cult, Paris club – do you have expectations of performing there, maybe next year?
Le reservoir looks and sounds like a great place to play and I hope to get a chance to play there sometime soon, I even know a very bad joke in French to create a bit of room tension if its needed.

What are your long-term ambitions.
It is important not to be to overly ambitious and I think a lot of people, especially younger people, are making music because they want fame and money. Personally I don’t want to be rich or famous

BEACH the hidden gem
Eco Beach, located in Kimberly, capital of the Broome region of Australia. Never heard of it? Neither had I until recently. Although I wish I had heard of it sooner because it seems I’d been missing out on some really strange history from this place. The Ramada at Eco Beach is now a popular resort for holiday makers, mostly for it’s breath taking views of the sea, but it’s also a highly historical town, it is one of the pearling capitals of the world and has been since the 1870’s.
A history of Broome
We were lucky enough to have been able to learn all about the heritage and history of the lands during a group touring activity. As it would turn out, there is a lot more to Broome than just an indigenous background. It’s had it’s turn with pirates, cyclones, two wars and even feuds between civilizations and it’s yet to meet it’s match.
In 1668 when a young man William Dampier first visited “New Holland” as it was known at the time, this would turn out to be something that would change the lives of the indigenous people. It started a clash

between two cultures, like many places that the western people visited back then, it was eventually taken over. The Aborigines were forced into becoming skin divers for pearl shells and working aboard the ships. Something completely off of their culture!
European Discovery
Anyone who visits Broome today will recognize the place names and a lot of the landmarks names after William Dampier, who was known as a navigator and explorer, but above all things; he had a large reputation as a pirate. Today the region known as Kimberly in Western Australia is credited to him for the discovery.
Dampier had kept a journal of his experiences in Broome where he interacted with the natives, and his journal was enough to spike an interest in the area’s rich pearling beds. By the late 1870’s the pearling industry in the waters of North West Australia had started to develop and continued to grow. The largest base for it was just 700km away from what would later become Broome. In 1879 Charles Harper, a legislator suggested that the Roebuck Bay should

be set up as a pearling port, by the time it reached 1883, a town site on Roebuck Bay was selected by John Forest, a local surveyor. He predicted that a site with three native wells belonging to the Aborigines would later become the town centre. The site was just east of Dampier Creek, it was later proclaimed as the capital of Kimberly, and it was named Broome, after the colony’s governor, Fredrick N. Broome.
The town of Broome was rapidly developing into the town we are able to explore today, town lots had already started to sell by 1886, and two years later Broome was established as a port. Broome was losing it’s isolated, Aboriginal routes, the town was fitted not long after with a telegraph cable linking the colony directly with England, via Singapore, India, Egypt, Malta and even Gibraltar. Between the years of 1889 to 1891 the price of mother of pearl rocketed to new highs and Broome became known as the Queen City. It was quickly becoming industrialized and at 1898, it was the principal cargo port for North Western Australia and by the First World War, the port of Broome was the second biggest port next to Fremantle!

At this time , Roebuck Bay’s pearling industry was almost completely colonized with men from the UK , but by the turn of the century most of them had retired back to England or other places to enjoy the fortunes they had earned. As these men retired, men from New South Wales or Victoria started to replace them.
World war 1
When the war broke out in 1914, Broome had over 300 pearl luggers and a population of over 1,000 white men and 2,000 colored. Of course as soon as this happened the fleet numbers halved, they needed to enlist in the war in go to Europe. It was bad news for the pearling industry of Broome. The markets for mother of pearl began to slow down so much so that many people thought the industry might even completely cease. During the years of the war the only additional uses for mother of pearl came from the buttons on the soldiers’ uniform. By December 1916 Broome was almost in economic ruins and any shipments they did have, were threatened by enemy ships. The future of Broome looked bleak and
empty for natives and new westerners, many English people chose not to return to Broome after the war, and to add insult to injury, Broome suffered a terrible amount of damage in the cyclones of 1908, 1910 and especially 1912. The majority of the town would need to be rebuilt. Once again the town was having to start from the bottom and rebuilt it’s self from scratch. The 1920’s was just what Broome needed as it brought exiting new economical promises to the town, the new port thrived when the price of pearls was at it’s highest ever.
World war 2
During world war II after pearl harbor was attacked, Australia joined America against Japan and immediately, all pearling activity stopped in Broome.
At the time, Broome was a culturally diverse place and many of the pearl divers were Japanese, people found themselves having to cut ties with co-workers or friends just because of their backgrounds. The town of Broome was suffering through a very difficult period, and it’s hard to imagine is as the beautiful land we know today!

Not long after pearlers were informed that their luggurs would be purchased or destroyed in hopes it would deter a Japanese landing .By the time the war ended, just like the first war Broome was pretty much in ruins, derelict and in need of being rebuilt. This time Broome came back bigger and better than it ever had been before, the industry evolved to marketing cultured pearls which changed the way pearls would be harvested forever.
South Sea pearls are still known as the best in the world and are used in a lot of jewellery today. The pearling industry of Broome is still there, and still is a major part of the town. After everything that Broome has been through, it has helped leave indentations into the distinctive character and cultures that you’ll find there, there isn’t many other places that have been through that much and the people are still the friendliest bunch you’ll ever meet!

The Yawura Aborigines The Yawura are the native people to Kimberly, Broome.There way of life are what makes the location what it is today. The people of Yawura believe that everything stems from Bugarrigarra, the spiritual world creating force that defined almost everything in existence including the season,landscapes social laws and different customs. The law of Bugarrigarra has been passed down through song lyrics, poems, stories and rituals over many years. It’s the very thing that the Yawura people live their life by in their daily existence, it gives them a sense of peace and respect that many other cultures haven’t yet adopted.
For a very long time there was an ongoing fight, since the first European travellers arrived on the North West coast, it was a struggle for the Yawuru people to stay on their own land! In 1978, the Yardoogarra community ( where the Yawura’s lived) were one of the first Kimberly Aborigine to actually start campaigning for land rights, it was they could set up a community, which just so happens to be what we would call Eco Beach today.
The Ramada Eco Beach Resort In sunny, hot Australia, a place famed for it’s beauty and incredible wildlife, of course it’s hard to find anything to fault as it is, but Eco Beach made it almost impossible. The resort is set just 10km from the great Northern highway so there wasn’t a huge amount of traveling time, but when we did arrive, it was totally unexpected. The resort’s accommodation was quite, relaxed and understated. The huts where on wooden platforms, with either a garden or a sea view to choose from. The rooms were comfortable, fresh and had all the amenities close by that you could need, or that you could want. If someone were to ask me I would be more likely to say comfortable rather than a luxury, but nowhere near inadequate. The location makes up for not having a champagne bucket waiting in your room.
The more upscale rooms have fans, wi-fi and on-suites whereas all accommodation has separate kitchen quarter and living quarters as well as air conditioning.
in 2006 the Yawura people finally got the native recognitions that would allow them to become the rightful owners of over 530,000 hectares of traditional land around Broome.This would include access via Thangoo station near their traditional coastal homelands. Some of Yawuru’s main law grounds are on Thangoo and many of the Yawuru people were born there and worked in the station, it was great news for them because it meant they could reconnect themselves with their heritage, and it’s great news for holidays makers since you are now able to enjoy the relaxation of your holiday, but it’s still culturally relevant.

Some of my favourites were The Dragonfly – 2 and a half hours at $285 – Starting at your feet with a soak and exfoliation, full body exfoliation, body massage and a custom facial treatment, the Holistic Massage – 90 minutes at $150, 60 minutes at $110, 30 minutes at $65. – Your therapist will speak to in detail about what your body needs, any problem area’s any your emotional state. Holistic massage is an ancient form of healing.
There are also classic treatments available such as “travellers delights”, which is shoulder and feet massage for those have spent a long time on their journey, and also manicures and pedicures, the standard spa favourites. If your still not sold then you can also try out a Swedish massage, hot stones (something I’ve never been brave enough for ) or even reflexology massage for tension and balance. cont.

At the Dragonfly Spa we were expected to arrive around 5/10 minutes prior to our appointment time and asked to shower of any salt and sands from the Eco Beach. We were provided with a consultation card and a cold drink upon arrival and greeted by our friendly therapist. If for some unknown reason you would want to cancel your spa appointment ( who knows!), you do have to give at least 4 hours’ notice or you will be charged 50% of the original fee. You don’t need to worry about extra baggage, literally not just physically. There is no receptionist; your fee’s will be charged to your room so don’t worry about bringing your wallet If the holiday you’re seeking is adventurous and adrenaline filled then you’ll be more than pleased to know that some brave souls took part in helicopter tours as well as kayaking, fishing and bush tours. There really is something for anyone.
Close by you’ll find Broome museum, not too far from the hotel ( around 30 minutes from resort), Broome is a placed absolutely filled history and cultured, there is no shortage of information around about the Yardoogarra people, the original civilazation that lived in Eco Beach.

From your villa, you’ll be able to see a giagantic sandstone cape. To the locals this is known as Cape Villaret. It was named after the French admiral, Louis Thomas Villaret De Joyeuse, he was rewarded for his dedication to the French navy. In 1788 on an expedition, a colleague name the rock formation after him. The coastal scenery along Eco Beach is stunning and even on a rainy day you will be able to see Cape Villaret from your villa decking. The whole experience of Broome and Eco Beach was surreal, the history surrounding the resort is incredible, from pearling to cyclones to the French navy stopping by, I’m sad to say it’s understated. But it’s somewhere I would totally recommend to anyone who wants a unique, none touristy holiday, this is just that place.
The Yardoogarra are refered to as “Salt water people”, they have an understanding and appreciation of marine life, they are excellent marine divers which is why they were used

Useful information The difference between the wet and dry seasons at Broome can be dramatic, changing the landscapes a lot. Wet season doesn’t continuously rain, but when it does they can be very heavy down-pours and last for a long time, but generally it is warmer than the dry season. Dry season- May to October temperature low 30’s.
Wet season-November to April temperature around mid 30’s.
The hotel are able to arrange car transfer or even care hire for customers who want to explore further out. The currency is the Australian dollar. The resort is just 10km from the great Northern Highway.

Mercure Hotel Lately there has been some news surrounding the Mecure Seafront Hotel, Brighton. It’s been talked about for some months now in light of some renovations taking place. The hotel has always been well decorated, so I was eager to take a look and see how it has been improved. So far the rooms have been described as “ Even more stylish.”

The Mecure is beautiful Victorian grade ii listed building, dating all the way back to 1864, just a stones throw away from the sea. Set in the very heart of Brighton it’s just a short walk away from the shopping centre, lanes and of course restaurants. Onsite there is a bar and a The Brasserie too for those nights when you want to just stay in. The Mecure still has some of it’s original features like the chandeliers in the ball room, hotel front and mirrors, it’s lovely to see the hotel still has it’s period features and 19th century charm.

Scott Gibson, head of area within the South east, takes time out to talk about the family business, services offered and exclusive news for Absolute magazine readers.
So to be honest SAMA is my life and my family’s life and we want everyone to we teach to experience to same journey as all of our SAMA black belts have taken, gaining many great life skills along the way.
My father started SAMA in 1970’s and the vision was just to train and teach so he could do what he loved full time, starting with 5 students and now having 15,000 the way of doing what you love and passing it on really worked. I started karate in 1983 at 3yrs old and reached black belt when I was 10yrs old and since then continued teaching and competing as a junior black belt. I only stopped when I joined the forces in 1998 for 4yrs, although still practising and keeping fit. When I left in 2002 I started to get back full time training and teaching, when I took control of the area I decided to expand the SAMA name and create SAMA group (Martial arts, fitness and fun for the whole family) This was because our instructor were so good with children and their teaching as they had started from a young age that we had allot more to offer. So now we offer kids parties, holiday clubs and a soft play centre.
We now have 5 full time instructors, 3 part time, 10 junior black belt helpers and over 70 classes running weekly in my area, but SAMA as a whole we run across most of the south coast and up to London with over 200 instructors, and all instructors are graded by one man, our chief instructor and my father, 8th Dan black belt Alan Gibson.
What was your vision behind creating SAMA?
What is your role within SAMA?
My role is head of area; I am in charge or Brighton, Hove, Lewes, Peacheven, Newhaven and Seaford. I was given this area in 2005 and followed the same path as my father, training, teaching and competing, but also expanding our services, and giving our students opportunities in apprentices and an career So with lots of hard work I am now head of SAMA GROUP, a 4th Dan black belt instructor, 2 x British kickboxing champion, commonwealth K1 champion and European kickboxing champion.

Our classes we offer are karate for children aged 4yrs old upwards, youths and adults, the style we teach is Wada ryu. We also teach kids kickboxing from 6yrs old upwards, youths and adults. We also hold extra fitness, free training sessions, seminars, and courses at our full time training centre. We also hold youth projects for secondary school children that we mentor, and also give free taster, anti bullying and P.E sessions in schools within my area.

With school summer holidays around the corner, what clubs do you hold for parents who have to go to work? A part of SAMA group is to offer out skills as full time martial arts instructors to as many children as possible, so we hold holiday clubs through half term holidays, these are for children who already train in martial arts and for the children who do not we will incorporate the fundamentals of martial arts such as, anti bullying, stranger danger, discipline, team building, fitness and confidence. What big events are coming up for SAMA?
I am also back in training to hopefully compete for the world kickboxing title in November to be held in Brighton, we are also holding a summer charity event for children to take part in and around the city. Details will be available soon.

Hell For Leather Born and raised in the Netherlands and Africa, Charlie S-man was 20 years old with a fashion degree under her belt when she bought a one way ticket to Paris.
The dream was to become a portrait painter, the reality was meeting a makeup artist who showed her how to paint faces. After a year in the French capital, she moved to New York and Australia but eventually settled in London where she attended the Delamar Academy for Fashion and Film makeup and became the assistant of SJ Teasdale, Dior’s former creative director.
After many years of working as a freelance makeup artist for big brands and magazines, Charlie became a mum of her gorgeous little girl Peony and decided to move to our glorious seaside city. “I can’t think of a better place in the UK to bring up a child”.
Filling her evenings with drawing, her fashion illustrations were being published in Dutch magazines and some of her work exhibited in a London Gallery. It was not until her best friend, the fashion stylist Vix Adams,
asked to help her out on a styling job, that she started painting on leather. “Vix was styling the band McBusted for their UK tour and needed some one of a kind pieces for guitarist Matt Willis. I thought painting on leather would be the same as on paper or canvas, but it’s a very different technique. First of all I work on an ironing board instead of an easel!”

What’s On At Brighton
Race Course?
Historic Brighton Race Course has been around since 1738 and was even visited by George IV during it’s early days
Since establishing itself as Brighton’s premier racing track in the 18th century it has become a well-loved member of the local community. With breath-taking views of the Sussex Downs and the English channel, the race course features 21 race fixtures per year from April to October as well as popular non racing year round events. 28th May London 2 Brighton Challenge
However you can, walk, jog or run you can chose the 100km or 44km challenge as an individual or with a team. This fun race is setup to raise a set target amount for the competitors for a charity of their chosing. With regular marquee stops, a 2 day option to camp half way and a free hot meal on route, you can make the end of May bank holiday count by being a spectator or even be inspired to join, next year! Conservatory On The Drive in Hove there is perhaps the most unusual interior decoration shop in Brighton and Hove! (perhaps even in the South of England)
As dusk falls, you are immediately struck by the glow of the many chandeliers shining through the windows of this former Victorian conservatory building. Apart from the extensive range of reproduction Italian Murano glass chandeliers, there is a vast array of differing styles of ceiling lights; some with matching wall-lights. Pop in and see the large range of French Empire-style `bag` chandeliers ; all rewired and ready to go!
Then we come to the Flemish furniture!Two and three door knock-down wardrobes, which date from around 1900 -1920 and are sourced from Holland and Belgium. These come in oak,
mahogany or walnut, and can be waxed, or painted `shabby-chic` to your specifications. Bombe – front chests of drawers, in various colours are available-some are even covered with animal print fabric! Display cabinets, desks etc. can all be found here, all reflected in the vast selection of some of the largest heavy gilt frame mirrors I have ever seen.
The small garden area is crammed with a selection of tubular steel gazebos and arches, along with dining sets , fountains and castiron urns. Then, when you turn round, you are aware of a life-size fibre glass cow looking at you! Apparently, anything from a six foot

They serve breakfast, lunch and dinner from their British menu with a host of craft beers on tap. The food is terrific! Sit in the bar and feast on homemade scotch eggs and pork pies. The pub dining area stretches on through the back and here you can sit and enjoy hearty food including steak, bangers and mash, and lamb shank in the warm, comfortable and homely atmosphere. Above the pub are six unique and cosy boutique bedrooms, all furnished in dark wood and rich jewelled tone fabrics. Our room had a gorgeous chaise lounge, heavy thick velvet curtains and the softest Egyptian cotton bed linen. You will feel like you are stepping back in time, surrounded by wonderfully luxurious decor and but still having all the latest technology. Surprisingly when upstairs you don’t hear any pub noise from the bar below. Peaceful and quiet, you would hardly realise you were staying above a pub in East London. The bathrooms are classic and traditional with huge copper roll top bath tubs and sinks. Book a Boutique double room for a Saturday in May for around £199.
