Responding to customer demand, Cathay Pacific’s Gatwick to Hong Kong service moved to a daily operation at the start of June. The only airline to provide a non-stop service connecting Gatwick and Hong Kong, this boost in frequency highlights the popularity of the route since its launch last September which initially operated four flights per week. This means that together with the airline’s services from Heathrow, Cathay Pacific will now operate six daily non-stop flights between Hong Kong and London – more than any other carrier. The route features the Airbus A350-900 which offers passengers the airline’s latest products in Business, Premium Economy and Economy Class. In addition to the latest seats and an enhanced inflight entertainment system, the aircraft is Wi-Fi equipped, meaning passengers can stay connected throughout their journey – encapsulating Cathay Pacific’s brand promise of a “Life Well Travelled”.

Claws at the Sea Life Brighton From 22nd April 2017, this new installation welcomes a host of fascinating new shelldwelling creatures to the world’s oldest operating aquarium. The undisputed stars of the show will be two statuesque Japanese Spider Crabs. The largest of the crabs, which were previously housed at Sea Life Helsinki, has a leg span of a whopping 1.3 metres and can grow to the size of a car! Visitors will also come face to face with the Peacock Mantis Shrimp, one of the most brightly coloured animals in the world. This fascinating creature is a joy to behold, but don’t let its pretty exterior fool you - it is also one of the sea’s most feared predators. This little shrimp can move its arms with such force that the water around it boils – if humans had the same power in our arms, we could throw a cricket ball into space! In addition, Claws will invite visitors to enjoy a tidal tank showcasing the sea creatures often found around the UK’s shores, such as Velvet Crabs, Starfish and Green Urchins. With a dazzling array of creatures plus Tropical Cray Fish and large Land Hermit Crabs on display, as well as the chance to participate in crabby craft sessions, Claws offers the chance to experience some of the ocean’s most spectacular shellfish.

Te a m w o r k Makes The
Dream Work Absolute meets the creative dream team transforming the tresses of clients (including A-listers) at Ollie Cunningham’s stunning Cuckfield salon.
L
ocated on Cuckfield’s picturesque High Street, the Ollie Cunningham salon is a favourite hotspot for those who want to have their hair transformed to perfection. And it’s not just us ‘regular’ folk who walk out with a new ‘do feeling like a whole new person either, with celebrity fans such as Leona Lewis and model Lottie Moss also giving glowing reviews about their TLC time spent with the Ollie Cunningham team.
Of course talent has a very important part to play when it comes to creating that perfect hairstyle we’re envisaging in our minds, but as Ollie Cunningham (one of the salon’s directors) explains it’s working collectively that makes the magic happen: “Our team are some of the most highly trained and sought-after in the South East. We work very hard as a creative team and each member brings many years of experience and training to the team, leaving every client with excellent results. We are a supportive, friendly team who work together to ensure we uphold our high standards whilst delivering a relaxed and professional service every day.”
Ollie has been in the hair business for over two decades. In that time, he’s been Head of Colour for renowned London salons including Nicky Clarke, Trevor Sorbie and Daniel Hersheson, worked on a plethora of photo shoots and TV programmes and has loyal clientele spanning the media, music, fashion and TV worlds, even including some Hollywood royalty. With awards such as the prestigious L’Oreal colour specialist degree, as well as a Wella Mcs, Mcs and Mce - the highest colouring accolade firmly under his tool belt, it’s no surprise that Ollie is renowned for being the south’s ‘must see’ colourist.
34
But it’s not just Ollie who has clients from across Sussex, Surrey and London (and beyond!) flocking to see him, his talented team do too. His fellow director, Louise, has also worked in the industry for over twenty years and was even crowned ‘fringe queen’ by the Guardian’s beauty editor Sali Hughes high praise, indeed. Louise uses her passions for the technicality of her craft and giving her clients a fresh look, to ensure they leave feeling confident and ready to turn heads. So much so, this earned her the title of Head of Education for Trever Sorbie and has also seen her style at London Fashion Week, along with international music awards.
The team’s third director, Morgan is no stranger to being backstage at London Fashion Week either. During her extensive career, she’s styled the tresses of models for catwalks and for photo shoots, along with local celebrity clients too. As well as all of this, Morgan’s a makeup specialist - making her a go-to-girl for all of your night-out needs. Ollie Cunningham’s fourth and final director is Jon. Just like Ollie, Louise and Morgan, Jon has enjoyed a successful career spanning decades. In the last twenty years he’s worked for some of the largest names in the industry and is a Brazilian blow-dry expert and also a KeraStraight ambassador. Jon loves to create stunning looks for his clients, which are not only fashion-forward but wearable too.
Senior technician, Richard, is also a specialist in transforming locks - especially with colour. A leading colourist, who’s had over 20 years’ experience working with clients in London and Brighton, Richard enjoys talking to clients about their ideas and turning them into beautiful, wearable colours.

Starting his career in prestigious Knightsbridge, senior stylist Gid has worked his magic on hair for fabulous fashion shows, for designers such as Christian Dior and John Galliano, and also on photo shoots for publications such as Vogue and Tatler. As you can imagine, with such experience, Gid has clients coming from across the South East wanting him to transform their tresses.
The final key member of the Ollie Cunningham team is Stephanie - an award-winning manicurist whose celebrity clientele includes Scarlett Johansson, Little Mix and Rita Ora, to name just a few. Stephanie’s work has also been featured in Vogue, Stylist, Grazia and Glamour, along with films and on catwalks.
“It’s paramount that we communicate between stylists, colourists and clients to achieve the desired look,” Ollie tells us, when we asked him the secrets for running such a successful and professional team. “We are a small group of creative individuals and rely on working as a team to ensure the smooth running of the salon. “We all have a common interest which is beautiful hair and realise we can only work in such a beautiful environment if we work as a team. You cannot win a football match with just one player.”

COFFEE
&
CAKE
We drop by the Big Beach CafĂŠ in West Hove and spend an entertaining hour with Dan Stockland, at this popular family destination cafe.
The Cappuccino Kid
Situated out in West Hove, this ever popular cafe plays host to families, busy mums, skateboarders and just those seeking a pleasant, chilled hour. The cafe has been open 4 years and enjoys the propriety of Dan Stockland, and our much-loved city hero, Norman Cook.
The pasta sauce is fresh and our burgers are just ÂŁ5! Even dogs get a good deal. Every dog is offered a sausage on entry." Needless to say, there were a few wagging tales in the queue. The cafe has a full license so there are many community events that take place here. 'Eat, drink, party and meet', seem to be the cafe motto. Special daytime parties can be organised as well as large birthday parties for kids. Now that summer has arrived, leisurely afternoons can be spent at the skate park, playground and splashing in the paddling pool - all with the cafe in the centre of it all.
I took a visit to the cafe and was welcomed by the very amiable Dan. Over a very tasty flat white, he gave a little background to his past colourful career. Dan was a personal chef working for some of the top names and groups in the music business. He also served time at Chelsea's Bluebird and Conran.
Whilst working at the V Bites Cafe, Dan met with Norman, and a new working relationship was formed. When the beach property came up on offer, Dan and Norman viewed the site and the cafe potential was obvious to them. The cafe, and indeed the immediate area was in need of a facelift. With suitable co-operation from the council, the kid's playground was been given a refurb and sits opposite the also spruced up skatepark. All age groups catered for then. The newly painted wall looks pretty cool too. This was art directed and overseen by Aroe, a wellrespected graffiti artist.
Welcome to the Big Beach Cafe. "The emphasis is on the local community of Hove Lagoon and her visitors" explains Dan. I ask him about the coffee we are drinking. Dan pulls out a bag of coffee beans. "We are using
56
this Tudor Milano blend." I'm suitably impressed. Top quality coffee indeed. It's not just good coffee that Dan caters. He offers a range of beautifully packed boxes of tea. These are from Pavilion Health, a range of Ayurvedic Herbal Teas. I take a quick sniff inside the box and amazed at the incredible scent of the contents. There are many health claims and benefits from these teas.
Onto the cafe core business then, the food. "We offer non-pretentious, well-made cafe fayre, simple cafe classics" enthuses Dan. "We serve all-day breakfasts, light lunches, fish and chips, cakes, pastries, and delicious ice cream - all at great value.

The cafe has a full team at your disposal. "We are open to all" Dan explains. He welcomes all types of community events. I notice an enthusiastic young team. "We try to give as many 'first chance jobs' as possible. A lot of students need that first job experience, a bit of customer service and such. Well, if I have a position, this is the place to come to. Bring a smile and a bunch of enthusiasm and we'll endeavour to find you a something. If you are passing through West Hove we are located just a frisbee-throw away from the beach. Spend an hour or the day here. Chill, play, skate, drink and eat... We're the Big Beach Cafe!" INTRODUCTION The election & the possible effects to the housing market by Malsen Estates
The British hung parliament has triggered more questions than answers. This, together with the recent triggering of Article 50, has created a period of economic uncertainty that has had an interesting impact on the British housing market.
The housing market began to wobble in the run-up to the election and property prices have since dropped by an average of 0.4%, the first dip in since 2009. As a consequence, the annual rate of price increase has slowed to 1.8%, the lowest since April 2013. There is still an appetite for buying, however as the number of sales agreed has risen by 7% YoY. Interestingly, markets are performing at different speeds depending on location and sector. The first-time buyer sector is the fastest growing with newly-listed prices within this sector surging by 3.5% month-on-month and 5.5% year-on-year.
London (-2.4%) and the South East (-0.9%) have recorded the largest monthly falls in newly listed property prices, which is dragging the national average down. In contrast, the North is performing well, with an average of 11% increase on agreed sale YoY compared to 3% in the South.
Miles Shipside, Rightmove director and housing market analyst said: “The price of property coming to the market had increased in June in every year since 2009, so buyer confidence has clearly been affected by inflation outstripping their pay packets and current political events. “However, demand is still high and markets in some parts of the country seem to be getting used to coping with instability and are still strong. The high levels of sales being agreed show that the underlying fundamentals are largely unchanged with high first-time buyer demand which drives movement higher up the ladder, all aided by the cheap cost of borrowing.” We’ve seen a drop in house prices in Brighton and Hove, as buyers are no longer prepared to pay over the asking price for properties, and competition is no longer as steep. However, Brighton and Hove’s geographical location, sandwiched between the sea and protected South Downs, means that demand will continue to outweigh supply. As a result, we expect property prices to re-stabilise in the coming months.

n this Absolute Magazine series of staycation
features, I have had the pleasure of road tripping throughout Sussex and beyond together with my toddling daughter and willing hubby,
discovering those dreamy family-friendly
escapes that whisk you away from it all for the weekend. These memory-making adventures are simply magical and the South coast offers
them in abundance, but when I was offered the opportunity of overnight babysitting from the Mother-in-Law, we seized the chance to have
an adult-only one-nighter in the capital. With limited time away from nappies and nursery
rhymes we wanted to make the most of every
single minute and see as many of the sights as possible within 24 hours.

Aside from location, Canary Wharf is riddled with top-notch bars and restaurants, all at the very top of their game, fuelled by the amount of competition that exists locally.
Lured by promises of '360 degree stunning breath-taking views across the city', we chose to stay at the new flagship Novotel Canary Wharf Hotel; a glass skyscraper boasting an impressive 39 storeys and based in a heart of London's financial district. This may seem a bit of an odd location to choose for a leisurely trip, however this not-so-obvious area to reside turned out to be quite a revelation. Firstly the transport links are superb you can choose between taking the car and park in one of the ultra secure car parks dotted throughout Canary Wharf, or take the train and it's an easy hop on the Jubilee Line when you reach London Bridge.
Perhaps more exciting (well it was for me anyway) is the close proximity of the Clipper service - an often overlooked method of public transport around the capital, but quite the adventure and a wonderful way to see London. Simply board at Canary Wharf and you can sail on to Westminster, London Bridge, Embankment, Blackfriars and Tower at your leisure. It certainly beats stuffy Underground travel or hectic buses rides! Aside from location, Canary Wharf is riddled with top-notch bars and restaurants, all at the very top of their game, fuelled by the amount of competition that exists locally. One word of advice when snooping around Canary Wharf - Sat Nav and GPS doesn't seem to work when dwarfed by all the skyscraper that tower around you, so make use of an old skool A-Z map.
The Novotel Canary Wharf hotel surpasses all expectations of this well known hotel brand. Masterminded by leading architects LRW and interiors agency Koncept, this is a design-led hotel that offers a welcomed diversion from the one-size fits all approach so many chain hotels possess. Industrial materials including steel and wood reflect the commodities and produce that passed through the area pays homage to its significant history.

A new landmark for the Capital, this skyscraper hotel offers 313 rooms, including 26 individually designed suites, and has been exquisitely crafted with a truly unexpected and innovative design to offer the ultimate in comfort and style to guests. For the very full effect, try and bag a room on one of the highest levels; standing at 127 meters above street level, every room from the 12th floor and above features spectacular water views across the docks, including the Shard, the Thames Barrier, Canary Wharf, and Greenwich and Olympic park.
We were fortunate enough to be based on one highest floors, making our views from the wall to ceiling windows simply breathtaking. Gaze out on the great city in the world from the comfort of your own room, whilst indulging in the goodies from the well-stocked mini bar! As the sun goes down and the lights of London begin to twinkle, you cannot fail to be swept away with the romance of it all.

All rooms include large Flat screen TVs, work desks, Live n Dream comfort bedding (hands down the most comfortable bed I have experienced from a London hotel) and sleek bathrooms to encourage relaxation in the city. If you want to really spoil yourself, make sure you choose a suite. Elegant suites include, in addition to the facilities found in the bedrooms, full range mini bar, turn-down service and private concierge. Soft-sofa seating areas, stocked bookcases and in some cases free standing bathtubs and crittal style doors. The hotel also includes Executive Terrace Suites with a private terrace for entertaining guests or a relaxing space to put your feet up and enjoy a glass of wine in the very lap of luxury. In addition to the spectacular bedrooms and suites available, the hotel also boasts a New York-style gym and pool, nine design meeting rooms inspired by the goods brought in to these docks, ground floor coffee shop and contemporary bar and restaurant with rooftop terrace - the icing on this very impressive cake. The often monotonous check-in and check-out service is a distant memory as the process is facilitated on tablets with no reception desk in sight. Guests are met by the 'Welcomers' and can quickly take their key and journey up the hotel for their seamless experience of Novotel Canary Wharf. With soft seats, music and in striking distance of Canary Coffee on the ground floor, this is a place where you can feel at home. My husband and I both felt like we had our very own London pad for the night and a blissful haven away from the hustle bustle of city life.

As I mentioned before, the highlight of this hotel for me is the simply spectacular BŌKAN restaurant, bar and roof terrace based on the 37-39th floors. This triumph of a venue is a must-visit whether you are staying at the hotel or not. The views and open air roof terrace are magnificent, matched only by the exceptional seasonal menu crafted by Aurelie Altemaire, (formerly Head Chef at Michelin-starred L’Atelier de Jöel Robuchon) that offers a relaxed take on modern European cuisine, using carefully chosen local British ingredients. Anglo-Saxon for ‘lighthouse’, BŌKAN, stands as the light at the top of this impressive hotel. Let one of the baristas mix you a Royal Captain with Hendrick’s gin, lavender-infused Mancino Vermouth Bianco, elderflower cordial, cold jasmine tea, grapefruit bitters, topped with soda. Or how about visiting on a Sunday for one of their Jazz lunches in the clouds? I just look forward to the next occasion when there is a family or friend's birthday and I can suggest this hidden gem and claim the inevitable brownie points!
If the views from the hotel weren't enough, what came next was the perfect way to see London in one night. We jumped on the Clipper and made our way to Westminster where we boarded the City Cruise's 'London Showboat', ready to 'Wine, dine and dance on this great dinner cruise on the Thames, see spectacular views and enjoy show songs and top hits sung by a live performer'. Our evening began the moment we stepped aboard the glass-sided boat and were handed a welcome glass of fizz (being pregnant, I was offered an orange juice by the waiting staff who had already ensured my temporary dietary requirements would be catered for from the very offset). We were shown to our table and although I was initially a bit surprised to see we were sharing with another romantic couple, as our singer began to entertain, we all relaxed and were able to speak freely and unhushed with our partners. Starters were preset on the tables and so we were able to start enjoying our dinner straight away. The tickets include a three-hour river cruise, four course meal, the sparkling wine on arrival, half bottle of wine per guest (or 3 soft drinks per person for those not drinking), plus the live performer and dancing till late should you wish to. The dinner itself was impressive, with every dish being filled with flavour and boasting unfussy ingredients that people really want to tuck in to. Things just get better as you hum along to the cheesy pop tunes and hit songs from West End musicals that accompany you as you dine.
Most spectacular of all are the stunning views the riverscape gives of the iconic Thames-side buildings. Be sure to take a trip up on to the top decks to experience drinks in the open air as the wind rustles through your hair and you take in the real show of the night - the landmarks of London.
It is easy to forget how very close London is to Brighton and every time I visit, I make a vowel that I will return again in the near future. It is often the case that it is simply the idea of returning home on the late night train service after a West End Show or dinner puts me off, but with the new London bolt hole I found in the Novotel Canary Wharf and the reasonable prices they offer, London is very much back on the cards again, whether it's a whistle stop tour or an extended city break.

Our team has grow over the years, but we are now currently at 12 full timers and sub contractors, most of which have worked with us for a number of years and continue to do so. And where are you sourcing your materials? Is there an eco-angle? We use various builders and timber merchants and always use recycle centres to dispose of our waste. We have installed Solar panels, air source heat pumps and heat exchange units.
Do you offer placements or apprenticeship programmes throughout colleges and universities? We currently have two apprentices at the moment, 1 carpenter and 1 plumber, both of whom are at college in Brighton. What projects/ventures have you got going on at present? We are just finishing 2 large house refurbishments both in Hove. The owner of 1 property was keen to restore the period features which included sash windows, cornices, fireplaces and ceiling roses. HEATING IT UP We speak to local business Accolade Heating UK - a local, Plumbing, Gas, Heating and Electrics business working across London and the South. ccolade Heating UK has served London and the South’s residents and businesses for the last twenty five years. We talk to Accolades head man and founder Mr Jim Hill, in his own words, we all work hard on our customer service, value for money, and provide a honest and experienced service. We put a few questions to Jim to dig a little deeper into the history, ethos and future of this great local business. Explain the start up to your company? How did it begin? It all started 25 yrs ago, I was a loss adjuster working for a big company and just a number on their staff sheet. One of my closest friends and I decided to take the plunge risking a launch of something that we felt was needed for the market locally - a good quality, reliable and affordable plumbing services company. How has your company grown to be where it is now? What has contributed to your businesses success? We pride ourselves on some basic principles and good business practices, strong customer service, the very best quality of product and finish, fast and reliable. When a business or a customer books our services, we are always there until what we promised is achieved. At what point did you recognise the success of your business? We started to see much repeat business, and businesses recommending us to others they knew, one project for a customer in

one road of apartment blocks, then within the days and weeks after, more in that same area would ask for quotes. Word of mouth and happy customers is the key.
Being a recognised company, please name a few of your clients or brands that you do business with? We do now have contracts with quite large businesses, and national contracts. Namely a few that you will know I am sure - Costa Coffee, but also large local businesses like Armadillo construction, even some celeb clients including former ANOTHER LEVEL band member Dane Bowers!, and a few we cannot mention. What was your aim to work closely within the direction of the media service? We have tried to keep up with all modern methods of communicating our message to the market. We have recently updated our main website and will be launching on facebook and twitter in the coming weeks, where our contractors will be able to post jobs and customers can comment as well. We are 100% proud of our work and unlike some businesses, have no fear of social media and customer feedback.
The team must be pretty large these days. How many people are now part of the machine? We are still quite a compact team – we have currently 5 full time staff members, but a long list of trusted valued sub contractors and freelance workers on our books –

An Epicurean Experience with
etch.
Steven Edwards has devoted his career to the sensual enjoyment of fine dining. This British chef won the sixth series of Masterchef: The Professionals back in 2013. Following this incredible accolade, his career and creative flair have gone from strength to strength.
F
ollowing a wealth of training from the country's top chefs including Raymond Blanc and a six year portfolio at Sussex's five star South Lodge, It was not long before Steven decided to share his gift with the nation and set up the original 'etch'. This was a series of pop up dining experiences from private homes to Blenheim Palace. A local to Sussex, Steven sourced the perfect venue in Hove to launch his first restaurant in March 2017. Since opening, Steven has been etching his compositions of whimsical, ultra-modern, flavour forward ingredients onto our minds
Conveniently located on Church Road in Hove, the etch team have transformed this corner venue into a chic, modern restaurant that emanates comfort and culinary sophistication. The original ornate fixtures work in harmony with the sleek, modern furnishings. Burnt orange leather chairs and petrol blue booths set the scene, visually delighting diners as every inch of etch looks carefully planned and implemented. The large windows allow light to flood in during the day and also share the buzz with the outside world at night. They say you eat with your eyes and so to create a delicious looking restaurant enhances the whole dining experience.
60
The etch team have designed a faultless looking venue complete with an ultra modern Japanese toilet.
Arriving at etch, I was greeted with a warm smile and glass of Nytimber English sparkling wine. Etch appears to have achieved a rare feat; an upscale restaurant with a celebratory feel, as well as a perfect laid back dining lounge for locals. There is no formal dress code, yet an air of easy opulence.
The calm and unpretentious atmosphere immediately put me at ease and I felt ready to explore and expand my palate with Brighton's very own Masterchef. What followed was an evening of mindful eating, fully immersing myself as a bonafide foodie.
Tasting menus are becoming more soughtafter as they provide an opportunity to discover the chef’s full repertoire. On offer at etch is a choice of four, six or eight course tasting menus, with a suburb wine list perfectly paired to each dish. As my mum Claire is an avid Masterchef fan, it seemed only right that she be my date for the evening and as not to over indulge we opted for the six course menu. Initially Claire was unsure about six courses, but the joy of a tasting menu is the careful balance of portions and pairings, richness and
ABSOLUTE
freshness, ultimately allowing the chef to take you on a culinary journey - a journey into Steven Edward’s creative world-class kitchen and his inspired tastes, textures, aromas and aesthetics. The staff worked together like clockwork with the service being professional and discreet. The uniforms are smart with waistcoats and dickie bows and they all appear expertly armed with knowledge for every single item that arrives on your table. It was refreshing to hear that all of the staff taste each dish and study the intricate detail in order to reprise the details to the guests in a Masterchef style voice.
An amuse-bouche was presented to our table to start the evening. As we looked up, it was a wonderful surprise to be welcomed by Steven Edwards himself. This magic touch is something that Steven tries to do as often as possible, which in all my years of dining I have never experienced. Throughout the evening, it was a delight to see how happy his guests appeared as each and every table was made to feel like a VIP. The table setting was stylish with British designed Robert Welch cutlery and a nod to Brighton using a pebble from Brighton beach to display the butter.
etch by Steven Edwards is a highly ambitious fine dining experience, executed to perfection.
Next to arrive was the freshest black bream, caught off the shores of Worthing. This course with its succulent fish was meaty and delicious with crispy skin and fennel to slice through the flavours. The delicate sweet flavour of this white fish is the centre of attention and the presentation was exquisite.
As I throughly and mindfully enjoyed each course as it arrived, my favourite dish was the Pea and Mint custard with creme fraiche. This was a texture and flavour I had never experienced before and was so beautifully presented that my camera ate first! Little did I know the pièce de résistance was about to be showcased. A simple and elegant duck breast parcel with a crispy, glazed skin and juices trickling onto the plate. The vegetables were understated and the meat cooked to perfection. We were both bowled over by this dish. As each course arrived it was like a culinary performance of popping colours and shapes with Steven’s signature sharp lines and attention to detail; true works of culinary art. Each course is paired with a wine suggestion, but with six courses I preferred to stick with my personal favourite of English sparkling wine.
The focus is on seasonal produce, with the finest local ingredients and as Steven explained, his emphasis is allowing the 'true' flavour of each ingredient to shine bright and not be covered with excessive seasoning or flavours. Pure, simple and exquisitely prepared. The menu changes weekly, with a few of the favourites being circulated throughout the year. It’s this dedication for going above and beyond that makes etch exceptional.
Creativity and training can make a good chef, but to make an extraordinary chef I believe you must have a natural passion and respect for each and every ingredient used. etch by Steven Edwards is a highly ambitious fine dining experience, executed to perfection. It is enchanting and driven and with a chef as passionate as Steven at the helm, I believe that we are lucky here in Brighton to have welcomed the first of many.

The Jetty There’s nothing like beating summer heat than a seafood feast and luckily the Sussex coast line is rich in ocean delights from oysters to lobster and the meatiest sea bream I have ever tasted.
T
he Jetty is becoming a neighbourhood favourite and offers everything from 'just bite' nibbles to à la carte and a superb, reasonably priced set menu. A combination of the crowd pleasing menu, along with the glorious panoramic seaviews make Jetty the perfect place to pop along for a little alfresco dining in the sunshine. That is exactly what my husband and I decided to do last week. The welcoming atmosphere never fails to impress. The fresh décor and open plan layout is relaxing and perfect after a stressful day at work.
As regulars to The Jetty we now know several of the staff and it's always lovely to be remembered. It’s this personal touch that makes this restaurant stand out for my husband and I.
Carlos was looking after us and immediately suggested a summer cocktail from the mixologist. A Grey Goose Fizz complete with an artistic ice flower and beautifully arranged red currents started our early summer feast. The large French doors were open allowing access to the cute tables on front terrace. I couldn't think of a more perfect location for delicious food, excellent service and wonderful people watching.

This bright and airy corner restaurant is cheery and laid back and since its opening, it has reliably good food.
The menu is extensive and allows for various dining experiences. We were keen to have a leisurely catch up. To start, we ordered a few nibbles. The calamari and whitebait were fresh and tasty, the batter light and crispy and the portions ample. Seafood is the name of the game for The Jetty and whilst we have previously enjoyed other items on the menu, including the steak special, today it was all about being seafood lovers living in a seaside city. There are several 'Jetty specialities' including the 'chunky fish soup' which was flavoursome and rather hearty for a starter. To be honest I would have been satisfied if this had been my main course.
The Jetty's Chef Alex Aitken truly stands by using fresh, regional ingredients and this is reflected in the menu. The fish is caught daily and lands only a stones throw away in Newhaven. The catch of the day is a whole fish grilled or poached; Bream, Bass, Plaice or Sole and at a mere £14.50, it truly lives up to its name. My husband ordered the Bream with
ABSOLUTE
broccoli and truffle parmesan fries on the side. The presentation was elegant and the simplicity of the preparation allowed for the true flavours to come through.
There are four Jetty Classic mains which have become firm favourites and therefore stay on the menu ranging from £12-£18.
I ordered the seared fillet of stonebass, served with a mini fish pie in a tiny copper pot. A substantial portion and aesthetically pleasing, but also a recommendation of Carlos that did not disappoint. Our midsummer evening was very agreeable and whilst we had not planned to indulge quite to this extent, The Jetty has so many wonderful delights on offer that it is hard to say no. On that note, I very rarely order a sweet desert, but given our royal banquet from nibbles to main it seemed only fitting to finish the evening and share two.
The sticky toffee pudding was the clear winner, smothered in caramel sauce and topped with creamy vanilla ice cream. Following closely, we both thoroughly enjoyed the peanut butter parfait with toffee popcornand chocolate sauce. These are not for the faint hearted, but definitely worth every calorie.
Since my last review of The Jetty six months ago, there is certainly an air of being established as the team are now incredibly confident and knowledgable and the service is effortless. Our early evening dinner was relaxed and the atmosphere convivial. By 8:00pm the restaurant was buzzing and nearly every table full. The now candle lit tables had transformed the venue into a midweek romantic hideaway. The Jetty is the perfect place to luxuriate and spoil yourself.
Whether a light lunch or celebration. The bar is chic and the newly opened spa is exquisite and well worth a visit. The Jetty restaurant is a firm favourite of ours with delicious dining and a splendid atmosphere. All tastes and desires are catered for in this stylish and exceptionally good restaurant. Summer dates are better than Winter dates; there, I’ve said it. Yes, in Winter there’s ice skating and Christmas lights, chilly countryside walks and cosy Sunday pub lunch, but add 20 degrees, some bright summer sunshine and green grass and it makes for a great day.
S
ussex is a fantastic place for couples in the Summer, whether it’s your first date or 50th, there’s so much to do in so many beautiful locations.
One of my favourite date locations is Swanbourne Lake in Arundel. If you happen to be lucky enough to have a free Sunday where the sunshine is out and both you and your partner are free, either drive or jump on a train to Arundel, and head here. You can hire a little boat for a very reasonable price; I think it’s around £7.50 for an hour (don’t quote me on that, but that was the price last time I went!) and boat around the lake, which is filled with ducks. If you want to see the swans, they’re usually walking around just outside of the lake, rather than in it.
You can buy a bag of duck feed for 50p from the shop at Swanbourne Lake and feed them
68
as you go round; when the sun is shining and it’s warm, it’s a brilliant day out. As you’re on a date, you can sit back and relax whilst your partner does all the oar work! After boating, you can head to the Black Rabbit for lunch and sit outside overlooking the lake. I can’t think of a better date day, personally.
If you’re wanting something just a little bit less strenuous, you could go for a leisurely walk around Arlington Bluebell Walk, which is in Polegate. There’s 7 different walks over 3 farms, littered with miles of bluebells and a café where you can enjoy scones after your walk. I used to come here a lot when I was little and it’s since transpired into an ideal date location if you want a walk that’s a little bit different.
ABSOLUTE
If you want to do something in the Countryside, you could head to Roundstone Farm in Worthing and go fruit picking. Roundstone specialises in strawberries, gooseberries, rhubarb, broad beans and onions, meaning you can pick berries to use to make a crumble later on in the day (me and my partner are planning on doing this in a few weeks time!) or get the vegetables for your Sunday roast. Different crops are also available throughout the season too.
I know that a lot of people associate fruit and vegetable picking with children, however I actually think it’s a great date day out. It’s different, you can walk and talk and you end up with a basket of fresh fruit and veg at the end of it, which can never be a bad thing.

One of my favourite days out in Sussex has always been Devils Dyke. Although there is little that remains of the castle, I love walking down through South Downs Way and ending up at one of my favourite country pubs, The Shephard & The Dog. It’s good to have an end game on a long walk, especially when it’s a pub. There’s a lot of different routes you can go for Devils Dyke and most of them give you spectacular views. You’ll usually pass other walkers, although for the most part, you’ll probably be on your own, at least until you get into Fulking village.
The Shepherd & the Dog do an amazing Sunday roast, but their lunch/dinner menu on any other day is great too. There’s seating inside, however I usually head here in the Summer and there’s picnic tables all around the outside, including a few lining the stream that runs through.
70
Lastly, a more indulgent, ‘inner city’ date day idea. The Harbour Hotel & Spa has recently opened along the seafront and it’s just as a luxurious as promised pre-launch. I visited with friends for a spa evening, however I’d love to go back as a couple; their spa facilities are in the basement; hot tubs in the wine cellar, dim lighting, soothing music, with rooms available to stay in upstairs if you want to make your date day a date night. The Jetty restaurant is also available for lunch and drinks if you really want to make it special. A couples countryside day out is all well and good, however sometimes you do just want a touch of luxury, and The Harbour Hotel & Spa is just that. So there we have it; my Summer Date Recommendations for Sussex. From a spa day to a country walk, everything I’ve talked about is guaranteed to give you the date of dreams, whether you’re in a new relationship or you’ve been together for decades and know each other inside and out.

If you live in Sussex like myself, you are so lucky to be surrounded by so many places that will house the perfect romantic day out. If you’re from outside of Sussex, I’d thoroughly recommend jumping in your car or on the train and coming to visit, whether it’s a planned day out or a sweet surprise gesture. Whatever it is you’re coming for, pick a sunny day and enjoy it; happy dating.

Lucky Bride A bridal revolution is taking place in St George’s Road, Kemp Town.
“The dress is a major part of representing who you are on your wedding day,” says Louise Hill, the fashion conscious owner of the Lucky Bride boutique. “But, we noticed people often had to compromise themselves on their big day due to budget constraints. Lucky Bride was born.”
The bridal industry is complex with hundreds of designers competing for the eye of the bride – and her mother, who often holds the purse strings. With this in mind, Louise spotted an opportunity to offer high-end, off-the-peg, designer dresses by independent and international designers – including Claire Pettibone, David Fielden, Delphine Manivet, and Flora Bridal – at huge discounts of up to 50%, and occasionally more. “All boutiques have to buy samples from the designers. They are often unworn, or may have been tried on only a couple of times, but always with the upmost care and attention.”
White Leaf Bridal Boutique The White Leaf bridal experience is unique in Brighton, offering brides an opportunity to create affordable bespoke wedding gowns. Either adapt and customise from their made-to-measure in-store range or create a truly one-of-a-kind piece with their design team, complete with an illustration of your exclusive dress. Ensure you book an appointment to have an unhurried styling session with their designer, who will help you find or create the perfect dress for your special day. Everything is custom-made, helping White Leaf provide fantastic and flattering dresses for all shapes and sizes, including pregnant brides. www.whiteleafbridal.com
Sarah Janks Sarah Janks was born of a desire to offer accessible luxury apparel and eschew the hype and fast, faddish, disposable side of fashion and dress women in a modern yet classically elegant fashion, a house that would still be relevant many years from now. Sarah launched her bridal collection late 2011, and in the USA in 2012. By 2015, the label had grown to stock 28 stores worldwide, with a flagship store in Sydney, Australia and company offices in Los Angeles and New York. A juxtaposition of old design inspiration executed using modern techniques underlies the brand’s handwriting. Soft and delicate in fabric and detail yet clean and unfussy lines, slim silhouettes and a truly modern interpretation of the wedding dress, Sarah Janks dresses are distinctive in their look and feel, each collection being another chapter in the same, timeless, classic story.

Wax & Thread
Bullit Photography
This is where you can find alternative, vintage inspired and beautiful eco-friendly wedding stationery that is created just for you. All designs are exquisitely hand-drawn and painted by illustrator and designer Julie Annis, from her little cottage in rural Sussex. You can choose from ‘The Collection’ for creative ready designed personalised stationery or ‘Bespoke’ if you have ideas for a custom designed set of stationery of your own.
Getting silky smooth ready for your wedding has never been so easy, and dare we say it, enjoyable! The Wax & Thread Company opened its doors in January 2015 and is the only salon in Brighton and Hove dedicated to waxing and threading, for women and men. The age old tradition of ‘threading’ is now a preferred first choice method for hair removal, as opposed to invasive waxing.
With his work regularly published in many publications ranging from The Times to the front cover of OK Magazine to Elle magazine, and many more, Robin Bradshaw is a wedding photographer with a VIP client list.
www.hollyhocklane.co.uk
Although hair removal couldn’t be described as a luxury treat, it doesn’t mean it has to be an unpleasant experience one has to endure. While the emphasis is on removing the hair, clients are encouraged to relax in the calming luxurious environment and be confident you are in good hands. The salon itself is cool, clean and contemporary with a relaxing atmosphere. As well as two treatment rooms, there is also a dedicated threading room. Centrally located in the heart of town, the salon opens six days a week including evenings. www.thewaxandthreadcompany.co.uk
Stemming away from traditional wedding photography, Robin sees each wedding as a blank canvas. If you are looking a wedding photographer who turns up for the ceremony, then spends hours setting up family shots, he is probably not the photographer for you. A normal wedding day for Robin would be to arrive when the bride is getting ready and stay until half an hour after the first dance or beyond. There is no set formula to the day and each one is unique. Robin aims to capture people through different approaches, through different angles and by keeping his eyes open watching for those amazing offbeat moments.
Having shot over 400 weddings in the last nine years, wedding photography has taken him all around the world. Although officially based in Cheltenham, in the middle of the Cotswolds, luckily for us, he is happy to travel wherever his camera takes him! www.bullitphotography.co.uk
Sacco & Sacco Photography Sacco & Sacco Photography specialise in wedding and lifestyle photography. Their style and approach is creative, natural and storytelling. Capturing real moments in life, and on your big day: a lovers’ embrace, side-splitting giggles, true family connections. Maldives The Maldives are the most beautiful small islands on Earth. The 26 utopian islands, elegantly scattered upon the Indian Ocean, are not only the proud hosts of crystal clear waters with vibrant marine life beneath, pristine white sands and exotic coral reefs, they also boast the finest in luxury resorts, all featuring with world-class cuisine at every turn.
The 26 coral atolls that make up The Maldives are positioned in a chain reaching down to cross the equator, comprising 1192 islands. Ever since ancient times, the Maldives were ruled by kings (Radhun) and occasionally queens (Ranin) and has historically always had a strategic importance due to its location on the major marine routes of the Indian Ocean. The Maldives' nearest neighbours are Sri Lanka and India, both of whose cultural and economic ties with Maldives have had a huge influence on the Maldives you see today. The ancient Hindi culture, brought to the islands by Kalingas of ancient India (the earliest sea traders to Sri Lanka and Maldives from India) continues to have an indelible impact on modern Maldives, attracting culture hungry tourists from far and wide. Following the 16th century, when colonial powers took over much of the trade in the Indian Ocean, the Portuguese, Dutch and the French all occasionally played a part in local politics. However, his meddling eventually ended when the Maldives became a British Protectorate in the 19th century, eventually gaining total independence in 1965.

Whether you are a keen diver ready to plunge in to the depths of those iconic turquoise waters, you’re desperately seeking solace as you sip upon a sundowner at the waters edge, or perhaps you are looking for that that ultimate family trip of a lifetime, brimming with adventures, activities and memory-making, the Seychelles has all the answers. Talking Tattooing With
North Road Tattoo T W
ith one in five adults in the UK having at least one tattoo, creative body art is as popular as ever. Absolute’s Shelley Welti went behind the scenes at one of Brighton’s most established studios, North Road Tattoo, to talk inking and inspiration.
Owned by professional tattooist, Steve Griffin, North Road Tattoo has become the place to visit, whether you’re a veteran or tattoo newbie and with Steve and his artistic team’s experience, it’s easy to see why. Starting his career over fifteen years ago, after graduating from art school in California and then returning to the UK to start his tattooing apprenticeship, Steve is clearly passionate about his craft. He enjoys the ever-changing designs being asked for and updating his skills to be able to deliver a client’s dream design. “My favourite thing about being a tattooist is the endless changes and metamorphosis of art and design,” he explains. “There’s always something new to learn which keeps you moving forward.”
Steve and his small, but perfectly formed, team (including fellow tattooists Sarah Whiten and Max Palumbo) are well-known for their creativity and thrive on making their designs perfect, for each individual client. After all, it’ll hopefully be something they’ll enjoy looking at for the rest of their lives.

“We have great artists that are comfortable creating an array of styles and are open to customising their work to both satisfy their artistic journey, as well as giving our customers personalisation,” the studio owner says. “We stand out from other studios due to our attitude towards our customers. Our work is clean and reasonably priced but we excel in customer service, in that we treat our customers with the utmost respect that they are spending their hard-earned money with us. There are a lot of pretentious tattooists out there who are more about themselves than their customer.” Speaking of the work that goes into being a tattoo artist, Steve explained that they don’t just work during the studio’s open hours, but instead spend much time thinking about a client’s tattoo – sketching and talking to them out of hours, to ensure that they’ll be inked with a design they’ll love.
“I think a lot of customers think ‘oh I wish I could start work at 11am every day and finish at 5pm’ but that is not the case,” Steve laughs. “Any fellow tattooist out there is having to be a tattooist after studio hours; drawing or prepping designs and answering customers’ questions, even at 10pm at night.” Right now, the team are being asked for mandala inspired tattoos. These pretty circle designs are a spiritual symbol usually associated with Buddhism and Hinduism,

although they have become a must-have for celebrities, boho babes and fashionistas alike. However, one of the most popular requests is still for memorial tattoos. “I like doing traditional tattooing and putting personal ideas together for customers such as memorial tattoos,” Steve tells us. This gives the studio’s artists the opportunity to craft something extra-special for their client, as it’s so personal and meaningful. Whether you’ve got loads of tattoos already or are contemplating your first permanent piece of body art, it’s important to think not only about your design, but also the studio where you’ll be getting inked, as Steve explains:
“My top tip for people getting a tattoo is to research online firstly. Look at the studio’s feedback on social media sites such as Facebook and Instagram then when you’ve decided on a few, go into the studio and ask to talk to the tattooists about what you are after. Personally, I don’t trust a studio that’s not owned by a tattooist either.” “I would encourage people to come get tattooed by us because of our vast experience and knowledge, our humble attitude and, of course, the quality of our tattooists’ work.” Find North Road Tattoo at 71 North Road, Brighton www.northroadtattoo.co.uk.

Saltdean Lido T h e S ev en t h Wo n d e r of t h e E n g l i s h S e a s i d e On Saturday 17th June, Saltdean Lido once again came alive with the sounds of laughter, splashing and delight from swimmers and sunbathers basking in the holiday-like atmosphere, as the art deco lido reopened - thanks to the dedication of local volunteers.
N
ot wanting to miss such a momentous occasion Absolute’s Shelley Welti grabbed her swimming costume and met with Deryck Chester, director of the Saltdean Lido Community Interest Company and lifelong Saltdean resident to find out all about the community project. Hi Deryck, how does it feel to be reopening? It’s very exciting. It’s been seven years since the former leaseholder announced plans to fill the pool with concrete and build 125 apartments on the historic site. It’s been a mammoth journey and thousands of hours have been spent by our team of volunteers getting us to this point. There have been many twists and turns but we feel elated. Saltdean Lido is a magical site and seeing all these people here, enjoying themselves, has made it all worthwhile!
Why was it so important for you to bring the lido back to life? Saltdean was once a proud holiday resort village, developed as a gentrified extension to Brighton’s tourism industry. We lost its sister building, the Ocean Hotel, to residential development. If we’d lost the lido too it would have been a travesty, not only for Saltdean, but Brighton as a whole. The tourism industry of Saltdean, Rottingdean and east Brighton has suffered since the closure of the Ocean Hotel. The reopening of Saltdean Lido, we hope, will bring back increased footfall to the region.

Hundreds of people have already contacted us saying they will now be holidaying in Brighton, for the first time in years, so that they can visit Saltdean Lido again.
What made you get involved? I grew up in Saltdean in the 80s when it was a bustling holiday destination. I learnt to swim at the lido and as a teenager, used to visit with friends. My first job was also at the Ocean Hotel. Being surrounded by this wonderful modernist architecture, in a fun holiday environment, was a simple pleasure I took for granted as a child. However, after studying history and learning of the lido’s plight as an adult, I decided I’d use my local knowledge and research skills to get involved with the project and join the team of professional volunteers who’ve helped make this project happen.
How much has it cost so far? Phase one has cost £2.9 million. This has included reinstating the original 1938 pool tank, a brand new plant room, a wet play area, landscaping and new changing room facilities. The majority of capital funds have come from the Coastal Communities Fund, Social Investment Business and People’s Millions.
Donations from the community have been vital in helping us get set up, especially when we were fighting to stop the development of flats. Our sponsor a brick in the ‘wall of fame’ was also important in helping us build a new
ABSOLUTE
substation. Without those donations Saltdean Lido wouldn’t have a power supply.
What are you looking forward to most about opening up to the public again? To see people enjoying this pool as it was originally intended – plus the fact that it’s now heated properly for the first time in its history, at 27 degrees!
Saltdean Lido is Brighton’s last historic pool - we’re so lucky to have this on our doorstep! There’s something incredibly special about its design. When swimming in the pool it feels like you’ve been transported back in time to the hedonistic days of the 1930s when outdoor exercise and pleasure-seeking were all the rage. The way the rotunda rises above the pool like the bow of an ocean liner, with its wings gracefully hugging the crescent end of the pool, it feels like being on holiday at some chic European holiday resort. If you’ve not been here before, try it! I think that most people will be pleasantly surprised! The volunteer-run Saltdean Lido Community Interest Company are now working towards Phase two of the project, to restore the building to its former glory with a cafe/restaurant/ events space, community spaces and library, subject to funding. If you’re able to help, please contact: info@saltdeanlido.co.uk. Saltdean Lido is open every day from 8th July – mid-September. www.saltdeanlido.co.uk

Cloudhelix’s B ri g h to n
While its clients are based all around the country, Cloudhelix’s Brighton base is a crucial part of its identity. Here, Commercial Director Dave Blesovsky shares his go-to spots across the city that make running a business in Brighton so brilliant.
G
o into a pub late on a Thursday afternoon around The Lanes or Preston Circus and you can guarantee that a good proportion of those enjoying a post-work pint are from one of Brighton’s many digital businesses. Just imagine the creative ideas and problem solving power that could come from a bar full of developers, designers, MDs and marketers… before the drinks start flowing, of course. Our city is filled with places, events and people that support us in running our business that we simply wouldn’t get if we were based elsewhere in the UK. Whether it’s for some gastronomic goodness to thank our clients, to catch up with local partners over a beer or network with likeminded professionals at industry events, Brighton always serves up the goods for our business.
street food style eateries that make each and every midweek lunchtime something to get a little too excited about. Our favourites include Carlito Burrito, Curry Leaf Cafe, Lucky Beach and Orange Buffalo at The Joker for food that will transport you to somewhere far, far away from the Sussex Coast.
You’re spoilt for choice when it comes to impressing your most special client. Whether it’s a bowl of fresh pasta at CinCin for a quick chat over lunch or a brilliant multi-course feast sat at the pass of The Set, the foodie community in Brighton is always growing, changing and pushing boundaries, which makes for a pretty impressive night out with clients.
That great cup of coffee you need to keep you going is always just around the corner. We’re far from coffee snobs at Cloudhelix, but being spoilt by the great roasts on offer around town certainly raises your standards. There’s so many brilliant spaces to take a quick call, drop in for a meeting or pick up that flat white on the go, plus a change of scenery always helps the work flow. Some of our favourites include Cafe Plenty Coffee at 33, Marwoods, Bond St Coffee and Cafe Coho, all of which are independent. As a business

When it’s time to talk industry, there’s always a meet up or event around the corner. From Develop Brighton to BrightonSEO, Brighton hosts a variety of large scale industry conferences, which bring the attention of whole industries to our city once (or sometimes twice) a year. On a more local, regular level, Glug Brighton, Brighton Farm and the Brighton and Hove Chamber of Commerce all hold events that give us a regular opportunity to meet fellow businesses, talk about our passions and gain remarkable insights that help Brighton’s business innovate and collaborate. It’s a great thing to be a part of.

ourselves, we understand the importance to go local and keep our thriving city growing.
Business support is never far away. Initiatives such as the Happy Startup School and Barclays Flight Programme provide mentorship to make entrepreneurs out of bright ideas, plus through networking as a business, it’s not long before the laid back approach of the city means you’ve got a bunch of friends you can count on for business advice. With so many migrating to Brighton after growing tired of London rat race, and with two universities nearby, the talent is second to none, especially for the size of the city. From bright eyed graduates through to that next strategic, board level hire, we benefit greatly from tapping into the talent pool Brighton offers. What ties all this together, making Brighton different to anywhere else in the UK, is the mentality of the people who call this city home. Spend a couple of years in Brighton and you are bound to be that little bit less stressed and perhaps a little more reasonable, which has a great impact on business, especially when everyone joining our team locally comes in with the same perspective. It’s something rather special we’ve got down here. You can find the Cloudhelix team at the Eagle Labs at Preston Circus, so if you want to talk about your business or technical challenges, we should chat–in true Brighton style–over a beer one lunch time. Just pop in and say hello.
