The Treason Show – Brighton’s famous satirical comedy show now in its recordbreaking 15th year – was founded by artistic director, Mark Brailsford, in 2000. The show ran for nine years at the Komedia before setting up shop at the Pavilion Theatre in 2010. The show also tours with an international version in Berlin and produces other national and international touring shows.

Written by a team of over 40 writers and performed by multi-talented sketch performers, The Treason Show continues to wow audiences with its fast-moving, gag-a-minute sketch show which, since the show’s premier in June 2000, has become a Brighton institution.

Gin aficionados will have an excuse to visit their local time and time again with high-end gins on offer broken down into categories to best match each variety: Floral and Modern; Light and Citrusy Savoury and Dry; Juniper Heavy and Robust; and Something a Bit Different.

On Saturday 16th July at the Corn Exchange, expect gin sampling and trade stands, gin talks and presentations from some of the finest gin producers, cocktail demos, an indoor gin garden party, and live DJs. brightonginfestival.co.uk

Brighton Kite Festival is a free public event not to be missed and brings some interesting shapes, sizes and colour to Stanmer Park. Founded in the 1970s, the club has developed into a flourishing group with worldwide membership. It is one, if not the longest, running kite festivals in the UK and is fast approaching its 38th consecutive event.

Some of the planned arena displays will be allowing flyers to show off their kites including their now traditional Martin Lester Spirit kite fly, kite fighting both Indian and rokkaku, kites made in the children’s workshop, team and single flying from some of the world’s best sport kite flyers. This is a free event to enter but they do ask for donations for parking to help keep the festival going.


MARCH OF THE MERMAIDS Saturday 23rd July Hove Lawns This July the shores of Brighton and Hove will once again be invaded with mermaids, mermen and sea creatures of all kinds! Inspired by the famous Coney Island Mermaid Parade in New York, the event was the first of its kind in the UK. The aim is to celebrate our seas and sea life, raising awareness of marine conservation issues. marchofthemermaids.com

FOLKLORE MAGIC AND MYSTERIES Preston Manor, Brighton 1st-31st July In 2013, Doreen Valiente made posthumous history by being the first ever witch to be awarded a blue plaque for her achievements on her home in Brighton. The show is a unique display of artefacts, manuscripts and documents from her eponymous foundation, alongside Gerald Gardner’s original 1940s handwritten book of witchcraft rituals, the Book of Shadows. brightonmuseums.org.uk

RONI SIZE & KRUST Present Full Cycle Friday 22nd July Patterns, Brighton Patterns welcome original Junglists, and drum and bass pioneers, Roni Size and DJ Krust to present Full Cycle, featuring MC Dynamite. Born and raised in Bristol, the sounds of 1970s blues parties and sound systems happening in the St Paul’s area of the city ingrained themselves deep in Roni Size’s psyche. From his initial obsession with dance culture, Roni leaned towards acid house and hardcore as the genres swept the nation. This coincided with meeting DJ Krust and Full Cycle Records was born.

Exploring what it means to love and form relationships in the modern, technological world, this show unfolds in a rapid quickfire succession of scenes, a kaleidoscope of snapshot conversations; at times funny, at times, poignant. Mark Woolley Electric Hair A cut above the rest, (sorry, we couldn’t resist it), Electric Hair owner and international director, Mark Woolley is revolutionising the hair industry.

ecognised as a celebrity hair stylist, he has also worked with Gok Wan on ITV’s This Morning, as part of the ‘styling squad’, and created and developed six ‘Electric Hair’salons across the UK in Brighton, London, Reading, Liverpool, Oxford and Edinburgh. Recently returning from teaching at a seminar at a hair show in Argentina – attended by over 3,000 people – Mark takes time out from his busy schedule to talk to us about what the future holds…

How and where did you gain your experience?

“At the age of 15 I started an apprenticeship at a hairdressers in my hometown in Yorkshire. This is where I grew up. During my time there, I felt the need to develop my skills further; the city to do this was in London. So, at 19 I moved south to pursue my passion for hairdressing at renowned salon, SAKS. In a short space of time, I progressed to managing the company’s salons. I had desire to progress further I franchised and successfully ran the Brighton salon when I was 21.”

What was your vision behind the name Electric Hair?

“ ‘Electric’ is used as a descriptive word. In fact, a true definition is: current, emotionally exciting, positive atmosphere, shining. Each word describes the brand, service and experience given by our salons. My vision is to offer an experience like no other, an experience which is ‘electric’.

Why did you choose Brighton to open your first Electric Hair salon? “I love Brighton; there is a similarity to London. I feel Brighton is very unique and offers a lot of creativity. It has a large talent pool. I believe the city is becoming a new haven for talent and my aim is for Electric Hair, Brighton, to become my next flagship salon.”

Explain your five concepts to Electric Hair?

“Firstly, we created the Education and Art team in 2005. Their philosophy is simple: education is everything. This is the key to a successful salon. In demand for both national and global attendance and participation at hair shows, seminars, educational events, including fashion shoots, our Art team deliver exceptional training and offer the latest trends to both experienced and non experienced hair enthusiasts. “In the same year we also created Electric Studio within our salon building, an open area with excellent light space for photoshoots, delivery of education and a creative hub and events venue.

“In 2007, I created The Salon Experience. From the beginning of the consultation to the final tips on product home care, this personalised service will be like none other. Our mission is to create superb hairdressing in a superior setting. “Finally, Professional Products launched in 2009. Our award-winning products are crafted by leading professionals at a world-class British laboratory. Each product is formulated to keep hair in superb condition whilst

helping the customer create the salon style themselves. Electric Professional Products are sold both nationally and internationally, including famous department stores such as Fortnum & Mason and Harvey Nichols.”

Can you give us any exclusive information on forthcoming projects?

“Yes, there is a lot happening at the moment. One of my team (Lara Tree) is competing in the finals to win the L’Oreal Colour Trophy awards 2016, in London. This is the biggest hairdressing award. I will be at the event supporting her and cheering her on. She has done really well so far. We will also be conducting a re-fit on part of the Brighton salon soon. Funnily enough, in the ten years I have owned this building, I have never done a refit and I am very excited about the new look. Gresham Blake #Passion4Fashion

Gresham Blake is an innovative and contemporary designer creating both made-to-measure and traditional bespoke tailored goods, as well as seasonal ready-to-wear collections.

S

ixteen years on from the ‘cool Britannia’ era, Gresham has gone from strength to strength. In addition to his Brighton store, there is a now a branch in Shoreditch, and a thriving online presence. They continue to deliver outstanding tailored pieces and limited edition seasonal wear, which, over the years, has caught the eye of many A-list celebrities. Gresham and his team have been planning the SS17 collection photoshoot, taking place on a decommissioned British Airways Concorde (AW16’s shoot was on a British Navy Submarine, we see a theme). Gresham invites us to his Brighton store to interview him for Absolute Magazine’s first birthday issue…

Talk to me about your mother’s influence on your career, and how you began to develop your passion for fashion?

“My mother started her career as a dressmaker in a large department store, in Bayswater, London, back in the 1950s. She was also a costume designer/maker for a Paul Raymond review bar in Soho. She always had a passion for what she did and is still very creative today, an artist who regularly has pieces shown in the Serpentine, Discerning Eye, Sunday Times Watercolor Exhibition and the Royal Academy London. It is hard not to admire her work ethic, something she definitely passed down. “As a child it was hard not to pick up and learn her skills, she got me using a sewing machine from a very young age, when I wanted my drainpipe jeans, which weren’t in the shops, I had to alter them myself, that’s how I began to develop my skills.”

Where do you get your inspiration?

“I have always been inspired by my own creativity, I’d rather not follow trends; if I

did this my clientele would end up wearing the same as everyone else. Inspiration comes from everyday life and experiences; I could see someone or something in the street and this can give me an initial idea, which I will then develop further. “A prime example of this is a Jolly Roger flag I saw on an episode of The Antiques Roadshow. This went on to inspire our whole AW16 ready-to-wear collection entitled ‘Submariners’, a great collection that I can’t wait to see in-store and online.

“At the moment, I am very interested in the late 1960s’ New York gang culture and the associated trends, the turning point between the New York kids wearing scruffy biker clothing and the clothing we now instantly associate with Hip Hop… I am finding this very inspirational.”

Explain the ‘Gresham Blake experience’ offered by yourself and your team?

“Myself and my wife, Gresham Blake co-founder Fal, work relentlessly to build long-lasting relationships with our clientele. We talk to each and everyone of our clients, building a rapport, getting a strong understanding of their wants, needs, expectations and, most importantly, their personal style. It doesn’t matter if the customer is spending £1,000 plus on a bespoke suit, or £120 on a shirt, we treat everyone with the same level of respect. “Bespoke consultations with our team are very much a collaborative experience; it is the job of our tailoring consultants to guide the client in the right direction, making educated suggestions along the way. Getting bespoke/made-to-measure garments made is a luxury experience from start to finish.”

What upcoming projects have you

got coming up in which you can exclusively tell Absolute magazine?

“It’s a really exciting time at Gresham Blake. We have loads of great projects and expansions in the pipeline. One of them is a documentary made by the guys at Meantime Brewery in association with The Discovery Channel. Meantime tasked Gresham Blake to design and make some waistcoats for the staff of a pop-up bar. This is collective project with five other craftsmen from five other cities. Each craftsman has a beer created and named after him/her/ company; all will be put on sale to the public. Ours has aptly been named ‘The Tweedster’. “In July 2016, we will be doing our seasonal photoshoot on a Concorde, which I am really excited about, we have a great photographer and the final images will be really unique. Lastly, we were recently commissioned to re-design the corporate uniform for the Grand Hotel, Brighton, kitting out the hotel’s front-of-house team in some slick tailoring.”

Lastly, can you name a few of the celebrities who wear your suits?

Trevor Sorbie

at the L’Oreal Colour Trophy awards (Southern regional finals) 2016 Trevor Sorbie MBE is well known for his hairdressing skills and hair styling. With many salons across the UK, he has created his own brand of hair products including electrical tools for hairdressing.

L

earning his craft working for the likes of Vidal Sassoon, Toni & Guy and John Frieda, Trevor has produced work for magazines including Harper’s Bazaar, Grazia and Prima. He has also appeared as a hair expert or stylist on television programmes such GMTV, This Morning, The Salon and Mary Queen of Shops. Supporting his Brighton salon at the The L’Oreal Colour Trophy awards 2016 (Southern regional finals) annual event in Marylebone, London, Trevor joined us for a chat.

Can you describe the atmosphere here at The L’Oreal Colour Trophy awards?

“The atmosphere tonight is electric. The venue is filled with supporters and creative stylists. Every year The L’Oreal Colour trophy awards never fail to deliver. The lighting is perfect, the make-up on the models is on point and the hair is simply incredible.”

How has the trophy developed since you first started?

“I have been involved with this event every year, and fortunately our team have been in the finals several times and won a couple of awards.

The competition has gone from to strength every year enabling hairdressers to showcase their creativity and develop their skills further. The most important thing about this competition is new blood coming through in the hair industry and developing new skills.”

Have you ever competed in the awards? “Yes, I have entered the competition many times, but unfortunately I haven’t won one yet. My team has though, in which I am really pleased about. My Brighton team, are in the regional finals, so who knows, we may just get through and win again. Hopefully. “

Where did your team get their inspiration for this year’s awards?

“The one thing I never want to do is to try and clone a stylist within my team. What I do is instill discipline in to them, and once they have passed their final test, I can take the shackles off and they can be themselves and develop their skills further. This is what I call ‘free expression’. That’s how you get the best out of people. If you hold back hairdressers, it limits their creativity.”

What advice would you give to the contestants? “I always say this, to be a good winner you have to be a good loser. All I can say is whoever wins, it’s amazing and fantastic and will catapult them to another level. What I say to the majority that don’t win is take from tonight, what experience you get, and add it to next year’s event. You will automatically improve. That is what it’s all about, taking the next step up the ladder. BRIGHTON Pride 2016 Paul Kemp Managing director Paul Kemp has been involved with Brighton Pride since its inception. Paul has established and produced the main dance big top whilst also co-ordinating and staging fundraising events throughout the year and becoming Pride’s biggest business investor and fundraiser for almost 18 years. With Pride weekend just around the corner, Paul talks exclusively to Absolute Brighton.

What does pride mean to you?

“It’s a celebration of the amazing diversity of our city, but more importantly Pride should have a purpose. Since I formed the new community interest company with my co director Dulcie Weaver, we have worked hard to build Brighton Pride’s reputation as one of the UK’s leading campaigning and community fundraising Prides. It is now the biggest annual fundraiser for the Rainbow Fund. Supporting our local charities and good causes is the cornerstone of our Pride – a ‘Pride with Purpose’ – and 2015 broke all fundraising targets, with over £210,000 raised over the last three years in total. This has only been achieved through the hard work of all the team and the support of the community.”

Do you feel Pride had helped assist with equality and diversity within society? If so, how?

“Yes, I do. Bringing together different communities helps build understanding and tolerance within society. Pride is not just a weekend of parades and parties for thecity, but also a time when family, friends, neighbours and the city itself, recognises, celebrates and promotes tolerance and diversity within all our communities. Brighton and Hove is known for embracing our LGBT community, but with a recent series of homophobic attacks, allegedly by visitors to our city, clearly we still have some way to go in tackling homophobia and transphobia in the UK.”

Explain why it is so important to raise money for Pride?

“Pride is a not-for-profit organisation that has its roots in the community and in the last three years we have raised over £210,000 for local good causes. With statutory funding being cut, it’s even more important to look after the charities and groups that serve and support our community. “Groups benefitting include Allsorts Youth Project who provide vital support for young people; MindOut who deliver pioneering work for people with mental health issues; GEMS and Older & Out, both organisations who are providing essential social networking and support opportunities for older people, and the LGBT Community Safety Forum who facilitate delivery for the Accessibility Matters project making Pride more accessible and safer for disabled, blind, deaf and older people.

“In addition to Pride’s continued commitment to fundraising for the Rainbow Fund, in 2015 we also established a social impact fund from Pride’s additional activities. Pride will continue to work with community organisations to develop projects and ideas that could be of social benefit to the wider community.”

What events will be taking place in Brighton for the Pride 2016 weekend? “This year’s Pride Festival in Preston Park has already confirmed a diverse line up of main stage entertainment, but Pride should never be just about the main stage artists

Bella Vou Bella Vou plastic cosmetic surgery clinic in Tunbridge Wells is home to leading plastic surgeon Dr Amir Nakhdjevani, who set up the practise nearly a year ago. Since then, the cottage-sized surgery has earned a growing reputation for being the only one of its kind – in the world – to offer the Concept facelift.

P

ioneered by Dr Amir himself, the innovative new procedure alludes to the more traditional methods of surgery. Patients are treated under general anaesthetic and able to carry out a full conversation whilst under the knife! The Concept facelift has attracted the attention of the media recently and featured on the BBC’s Facelifts and Fillers. The growing popularity of the clinic has put Tunbridge Wells on the map and has even landed itself its own TV series showing the day-to-day life of Bella Vou.

You’ve been able to work in some really amazing places overseas such as Georgia as well as Harley Street, London. What made you want to come to such a rural area? “Well, I studied and trained in London, at St Thomas’ and St George’s, and was in Cambridge for a while. As part of my training to become a plastic surgeon I went abroad, specifically to get training in Taiwan and Georgia for specialist or niche procedures. London has a status and everyone knows Harley Street, but people can just rent spaces; anyone can work there, you don’t have to be a top surgeon to have a clinic. I was also bought up in central London. I now have a wife and two children so I don’t want them to be bought up in central London – they can have an outdoor life here. In Tunbridge Wells I’m still close enough to commute to London. I still work in Harley Street at The London Wellbeck once a month, and I have patients come from abroad to see me here.”

After working in Harley Street do you think there is a difference in the kind of surgeries people in London want compared to here?

“I set up this practise nearly a year ago, and we wanted to keep it relaxed and friendly for our customers. The staff take care of you, the nurses can stay to comfort you, and I think patients prefer smaller clinics; it’s less daunting, less busy. We have five basement surgeries and two upstairs. The equipment is all new, unlike some bigger surgeries, and the whole building is ventilated and sterile to reduce the likelihood of infection.”

One of the things I looked at was trying to address those concerns. Two-and-a-half years ago, I started working on the Concept facelift. I get patients from all over the world and they come to me because no-one else offers it. When I realised this, I trademarked it. It’s a mixture of techniques; the patient is under local anaesthetic, they can talk about their holiday and their weekend, and it’s just like going to the dentist. We don’t need bandages or drains because there is virtually no bruising. They have a cup of tea and then they go home! The oldest patients I’ve had were a 94 year-old lady, and an 86-year-old man. There are less hospital bills and it’s suitable for almost everyone. I had one lady from up north who told her husband she was going to some spa in Tunbridge Wells. She had the procedure then went home the next day. She says her husband told her she looks amazing after her long weekend, but he never found out she had a facelift! The scars are very small and hidden and it’s a very natural looking result.”

“There are many different techniques for a facelift, but the results are the same. The patients have bandages and drains and sometimes it takes four to six weeks for that all to go so they can resume normal activity. With celebs on TV, they always show the result weeks after so people don’t realise it takes so long. Today, everyone has social and work commitments, unless you have the luxury of being able to hide away, it’s difficult to stay indoors for six weeks.

“I did a Concept facelift on someone from the BBC. I didn’t realise she worked there and she had the procedure, went and told her bosses and they came to me and asked if they could film it. It was only on the show for about two minutes but since then we have been approached by another producer who wants to film a day-to-day series about what goes on here. We started a month ago. As they are a private production company, BBC, ITV and Channel4 are bidding for it. It will be filmed for a year then edited down so it can be showed weekly.”

“In London, people are very focused on their looks. There’s a big demographical change if you look across the country, but from London to Tunbridge Wells it’s essentially the same; the only difference, I guess, is in London there are more people who aren’t suitable for surgery. They might have problems with their self-esteem and they hop from one doctor to another, so we wouldn’t do it if we thought there was a psychological problem.”

In your experience is it better to smaller work environment?

Bella Vou has received so much attention because you have pioneered your own facelift procedure, which is performed under general anaesthetic. Can you explain a bit for our readers please?

I hear you’re currently filming a TV show at the clinic. Is it just a rumour or has it got the green light?

Do you have a favourite procedure? “Hair transplants are a favourite for me. We can do eyelash and eyebrows from the hair of your head and there is no other plastic surgeon in this country – apart from me – who performs this procedure. They look fuller and better than before because we can design shapes for your eyebrows.”

What does Bella Vou mean?

“In a lot of countries Bella means beautiful, so in French it’s ‘Bella Vous’ which is beautiful you. And it’s similar in Italian and Spanish. We purposely spelt it the ‘wrong’ way so we could trademark it – it’s unique.”

What’s next for Bella Vou?

“I’d like to eventually expand into a small hospital, so we can offer even more procedures. But our most recent project is face creams. We are releasing a range aimed at a number of different things, such as scars, anti-aging, discolouration. Lots of different serums for different conditions.” Bianca Ditrana

Have you always had a career in beauty? What was your background before starting your business?

“I have 13 years’ experience in beauty therapy, and I did a lot of other things too. I own another company called Amazing Lashes (eyelash extensions) and offered some training in that. I also did, and still do, semipermanent make-up, as well as teaching. I’m also a qualified beauty therapist (Level NVQ 3) a PTTLS lecturer, specialist in Micropigmentation and a qualified aesthetician.”

Why did you decide to open a salon?

“Being freelance was good but I just wanted premises where I could still offer my training, somewhere I could do my semi-permanent make-up, and all my other services. I’ve lived in Lancing for a while and I wanted to give something back to the community so it made perfect sense to open up a salon.”

What treatments do you offer, and what’s most popular?

“All the therapists have their own niches, something they specialise in, so it’s hard to say because we have customers coming in specifically to see that person. For example, people would come to me in particular for lashes, semi-permanent make-up and aesthetics (dermal fillers), but we also do hair extensions, tanning, waxing, nails. We do a lot of different things.”

Have you ever noticed trends in the kind of treatments people want?

“Definitely! At the moment, fillers are really popular, especially with younger girls. You see celebrities like Kylie Jenner on TV and I think it influences people. The filler I use is bio-degradable, it’s safe and it’s medically approved. Hair extensions are also quite popular too. We have a sister salon in

On your website there is a Macmillan logo, what is your involvement?

“We like to hold charity events here, and we try and raise as much money as we can for a really good cause. Any funds we raise are donated to them. I chose to support them because I have a friend who works there and the charity is very close to us.”

Cocoon SPA A recent addition to the Brighton treatments offering is Cocoon Spa on Gloucester Place. It opened in June 2015 after psychologist Emma D’arcy relocated from London. In 1988, she was the first person to open a commercial flotation tank centre in the UK, Floatarium.

Cocoon Spa also offers subsidised care for those who are ill and unable to fund their treatments. I caught up with Emma to find out more..

What was the idea behind Cocoon Spa? “I am a psychologist with a successful practise in London and relocated this philosophy to Brighton. I was inspired by the American psychologist Dr John Lilly whose work fascinated me. In those early days, the tanks were totally different than the ones we know today. Dr Lilly was able to monitor the various responses and established that heightened awareness, as well as relaxing brain waves, were produced as a result of the sensory deprivation in the tank. I mostly wanted to be able to give that experience to people myself, so the idea was mainly to provide the tanks, but we also offer a lot of additional treatments to help heal people.”

Can you explain what exactly floatation therapy is?

“These days, tanks are far more sophisticated. There are a variety of shapes and sizes available, from single and various larger units. The more sophisticated are made from fibreglass and generally provide the new floater with more space and comfort

– not so overwhelming for someone having their first experience. These larger units are referred to as cabins and our cabin at Cocoon is actually big enough to float two people, something we find exceptionally popular with couples and friends.It’s a very effective way for people to recover from stress; your body is weightless and it’s a way of healing pain. Essentially, it’s meditation.”

What kind of services do you offer?

“All our practitioners are well versed in a variety of ‘the healing arts’ and are specialists in their fields. These practices aim to help via non-invasive physical treatments, including a wide variety of massages, some of which are deep tissue and sports, aromatherapy, Swedish massage, Thai massage and cranial sacral. Cocoon offers a wide variety of treatments, as well as the various massages listed, including food sensitivity testing, colour healing using the Swiss Bioptron lamp, sound healing and hypnotherapy.”

Do you think there are certain things medicine alone can’t heal?

This lovely pub has been open since 1882, making it the oldest pub on the seafront. It is a good meeting place if you are going clubbing on the seafront. There are DJs playing at the weekends and it always has a friendly atmosphere and is never too crowded. The décor has a maritime theme and the pub provides beautiful views over the seafront. It has an outside seating area and a buzzy atmosphere during the summer months.

Things are on the way up in Worthing. Tucked away in a quiet street just off the seafront is NRG Cavern. First class coffee and food come as standard. Whilst on a coffee hunt I delightfully stumbled across this little gem. I talked to partner Mark Reynolds.

Q. What’s the ethos of the NRG Cavern ? The ethos of NRG Cavern is to provide customers with balanced healthy nutritional meals using quality local ingredients where possible, focusing on macros for example rather than calories, and ensuring our customers can make good choices across proteins, fats and carbs. We wanted to be the 1st cafe/restaurant in Worthing that provided this for customers, as well as serving our own home baked guilt free treats and cakes and hand made smoothies as well as the best coffee in town.

there are certainly signs with ourselves and numerous other independent shops opening and giving the chains something to think about. Worthing has become a spill over town to Brighton now in terms of affordable commercial and residential property and I can therefore only see that continuing with more cafes/ bars/restaurants opening. We see this as an opportunity rather than a threat, showing there is demand and appetite for coffee and good food.

Q. The cakes look quite ‘homemade’, they taste fabulous. What’s the secret of the baking and ingredients?

Q. OK, on to the coffee. What kind

of beans blend are you using? Do you rotate blends at all?

Again we are very keen to promote locally roasted coffee and after extensive research we are now using a blend of Central and South American beans as an espresso. This gives a sweet acidic taste with a creamy mouthfeel. Customers should be able to taste berries, and spice with chocolate overtones. We also serve a filter coffee using a clever dripper and currently using a Kenyan AA Kisii Peaberry blend which our customers seem to really love. We also have guest coffees on occasion so that we are able to give customers speciality coffee through variety and choice.

Cappuccino - and in Worthing! Do you maintain this consistency day to day?

Q. Worthing isn’t really on the Coffee shop radar as yet. Do you see this changing in the manner of the coffee revolution that Brighton enjoys?

They are baked with simple ingredients mostly, and the repeat business and demand shows customers are becoming wise to the harm sugar can do to your body and that you can produce delicious treats without it. Often customers don’t believe there is no added sugar in their cakes. Q. The food selection is quite

comprehensive and very much on a good health vibe. What kind of options are you offering generally?

Our menu focuses on balanced nutrition across the 3 main food groups, good fats, carbs and protein as it is essential to include all of these in an balanced healthy diet. For example our most popular lunch offering allows customers to choose from a seared chicken breast or a salmon fillet pan cooked in coconut oil, with a choice of 2 sides from brown rice salad, Dahl, 3 bean salad, and a leafy salad. on a weekly basis, plus a range of sandwiches on a choice of artisan breads. Our breakfasts include home made granola, banana pancakes, frittata, and salmon fillet with eggs, spinach and tomato. Nothing on our menu is above £8.50 so we believe we provide great value as well as amazing food.

Q. When did NRG Cavern open ? We opened in June last year so as we enter our 2nd year of trading, we can look back with pride on what we have achieved, a loyal and regular customer base, a top 20 slot on trip advisor, almost 2000 followers on social media, plus we also supply food to local business and gyms, who have come to us on recommendations and want to provide healthy balanced and tasty food to their staff and members alike. Q. How are your future plans shaping? In terms of the future we would like to expand our business and our set up and decor is conducive to a franchise or 2nd/3rd outlet opportunity. We would also like to expand our evening offering. We opened last summer and over Christmas for ‘themed evenings’ with a set menu, which our customers loved and we sold out on them all, so this is something we would like to build on. We are also in the process of obtaining our alcohol licence so we can provide a small selection of local organic wines, ciders and craft ales for our customers on occasion.

Brexit what will happen to MY house? James Gordon

I�m not sure it mattered which way one voted or felt about the outcome after waking that Friday morning, turning on the news with one eye open, one thing that overtly united us all was the double take and shock, but more covertly, regardless of the horror or elation was the instant wave of unease or anxiety about what the future holds. Cutting to the chase, I genuinely don’t think we are going to see a falling market in the short or medium term (1-4 years) There could be a dip between now and October but we’re already in a dip. Don’t listen to the media, recently they’ve say “house prices have gone up” but use the house price index, these are properties which completed the previous month... yet sold possibly 3-6 months ago. What we have seen is an incredible increase in prices since mid-2013, It’s not that between 2008 - 2013 nobody wanted to buy a house, there was just no money available to do so. People move for many reasons... Schooling, retirement, lifestyle change, job relocation, pushed out by parents, sick of renting, nest egg... these needs certainly haven’t changed overnight... Let’s look at the reasons behind the two last price crashes. In the early 90’s the government spiked interest rates to try and keep the pound strong against foreign currencies, an obtuse reaction that lost thousands of families their homes through repossession. Imagine if interest rates spiked to 15% today, thankfully the ability to change interest rates was removed from politicians who today finally admit, they didn’t really know what they were doing.

In early 2008 major banks started to hold their hands up that they too, had made the same mistakes as Northern Rock... institutions we’d grown up with, trusted and respected. Institutions the layman assumed could “never go bust”, we’ll how could they?... surely they have all our money locked away in a safe don’t they?” They were shown to be absurdly irresponsible and arguably criminal. Credit Crunch was an understatement, there was almost a blanket freeze on all borrowing/ lending. A crutch most families, businesses and young people had foolishly become accustomed to because we’d been lead to believe “borrowing is good for the economy”.

What we’ve seen in the first few days following Brexit from London to Sussex are the same viewing levels and incoming enquiries as the preceding weekend if not possibly a little higher. Agreeably the urgency seems to have come out of the market a little but that’s not since Friday, it’s been slowly winding down since March 2016 and a knock on effect of the London market starting to settle down towards last year. There are more price reductions on Rightmove currently than new instructions. This does not mean prices are coming down, I think agents who’ve been used to over promising of late, are being caught short much to

the detriment of their vendors. Listen to the agents who talk the most sense not spoon feed you the highest price without justification (1 comparable is not justification).

Mortgage applications being declined at underwriter stage seem to have risen leading into this referendum but hey, the big lenders were hardly going to publicly say “psssst guys, slow your lending down so we can balance the books in case of Brexit, especially for first time buyers as they only have a 5% deposit”, they just find excuses to say “computer says no”. The Bank of England have said they have pledged £250 billion pounds of liquidity... quite a crazy sum, to process that sum, it’s about 1 million mortgages, on top of what the lenders are prepared to offer themselves... I think we’re okay for funding! What about interest rates?... Don’t think they are going up for a while, infact the opposite could happen and if it does, they will stay lower for longer. We’ve heard the BOI talk about raising interest rates for a couple of years now, but they’ve been scratching their heads about how to go about it. It became even more difficult when inflation fell to 0%, if you increase interest rates and you increase government debt, with 0% inflation how can they offset that?

What may the government do?... with the money markets extremely damaged and fragile right now, they will be desperate for “green shoots” and optimism, given that property prices contribute to our GDP figures (how we measure growth), they are going to want to show Europe and the world that we’re doing well (even if we are not). The quickest way of artificially inflating our GDP is a strong UK housing market. It’s this stays strong right now so they may have to bring out new measures to fuel the market should it start to stagnate any further. Recent measures designed to slow the market down, (second home stamp duty rises, buy-to-let tax relief changes) may have to be reneged on and what better way to do it than with a new prime minister at the helm blaming the U-turn on their predecessor’s bad choices.

The long and short; if Brexit does have an effect on the property market it’s already done so... the next few weeks will be people waiting to see what is happening, looking right, left and then right again. Oddly, most of our sales in the last few weeks have been at the higher end of the market although sub £1million. I think if you decide you want to “wait and see” you may get caught out in the rain and only realise you’ve missed out on getting a good deal when you notice house prices creeping up. Unless you’re an estate agent it can take a couple of month to notice an upward shift in the market, this could mean you lose out. I wouldn’t wait and see, I suggest it’s pretty much business as normal, however right now, there are some fairly competitive deals to be had. Better than 2 months ago but that won’t and cannot last.

As such, creating tranquil, exquisite, designed spaces becomes a mission and not just a business!” After an early morning start I was able to tour the grounds of their new Hove developments which feature wine cellars, basement cinemas and en suites. What kind of developments do you specialise in? “Well, we only make houses and flats at present. I’m passionate about architecture and we want to create spaces for the way we think people live their lives. It’s not just about profit for us, it’s about the design aspect, and it’s not just rich man’s architecture, we make houses suitable for everyone.”

What will your new developments bring to Brighton? “Brighton has a reputation for being so innovative and forward thinking, but I don’t think it’s reflected in the architecture. What I’m hoping for is to start an interesting architectural movement and move the conversation along. Our developments are modern, much better than some of the 1950s’ and 1960s’ designs you see around the city. I also use local tradesmen where possible, and when I can I use local HR and geographical resources, so we can give back to the community.”

On your website you’ve described your projects as ‘boutique’. Can you explain what that means? “‘ Boutique’ is the adjective that works best for us. It allows us to pick and choose, even create individual houses and lots. It refers to the scale and scope of what we do as developers. In easy terms, it’s the difference between high street and designer.”

In your recent Hove developments, did you have any difficulty securing planning permission as most of the other houses in the area are more traditional looking. “Yes, we did but not really because of the design. It actually took us a year with planning permission, the previous developer who had owned the lot went bust and owed money, so the bank and council wanted the lot to be sold as a whole, which we didn’t want. In the end we were able to take them as individuals. There was a lot going on at the time; the council lost a big part of their planning department so that slowed us down as well and we just wanted to do something a bit less ‘bling’ than the last developers. It was a very long, tedious process but we knew what we wanted, so we got there… eventually!”

How much is the project worth all together? “Our new Hove project is a high-end one. There are three homes, each has five bedroom, and we have already sold two; one for £2.25m. This development in particular is worth a lot.” How did you get into this trade? “I have always been interested in it, but I had other plans. To be completely honest, I wasn’t very academic at school and didn’t get the grades I would have needed in some other jobs. I started off doing up my first house and it grew from there.” What does BAOBAB, your company name stand for?

“It’s not an anagram it was the name of the first house I redeveloped. It belonged to a Zimbabwean lady and it means ‘Tree of life’ and then when my wife and I moved in we kept it. I know it sounds cheesy, but it makes sense; if you buy a home it’s a new start. Plus, the fact it was my first development the name seemed to fit.” I saw a sign on the construction site and it stated you’re a drop off point for Syria? “In partnership with Aid Convoy, we’re a drop off point for clothes and all donations for all those displaced and in need in Syria. We have a number of clothes and shoe banks that are taken by lorries to Syria.” What are you plans for the future with BAOBAB?

“Just to keep doing what we are doing. We’ve expanded into London now. I still want to pick and choose the houses we develop. I hope we earn a reputation for the kind of house we do and the indoor/outdoor lifestyle we believe in. It’s always nice to work with different people and see different ends of the markets.” Bianca Ditrana

HEALY & NEWSOM If there was ever a person who knows the Brighton housing market inside out, it would be Simon Candler. After spending the majority of his adult life dedicated to learning the secret ways of the estate agents, Simon recently bought the established Healy & Newsom in Hove.

He talks exclusively to Absolute magazine about his experiences in taking over the company and what the key to success really means…

Simon Candler is eager to talk about Healy & Newsom’s journey since he took over in 2015, not just about the services they can provide – all members of the team have 18 years-plus experience in the field – but why it’s important to make clients as comfortable as possible. Recently, the shop has been totally refurbished and the website has undergone a make-over. According to Simon and the team it’s about keeping up with the 21st century, the premises have been untouched since 1990 and this is an all new Healy & Newsom, ready to take on Brighton. How did Healy& Newsom begin? “The company was formed in 1990 by John Healy and Graham Newsom, two of the most respected and trusted estate agents in the business.”

How did you become part of such a well-known organisation? “In February 2015, we purchased the business. When I was at school I did work experience at a very well-known estate agents and I loved it! So when I was in college I had a Saturday job there, and then went into it at a junior level. I’ve been in this industry since the late 1990s really. I managed to work my way up to a senior position and then went on to study surveying practice at the College of Estate Management in Reading as I wanted to learn more about the built environment together with a deeper understanding of valuation methods. Ultimately, this has helped me provide my clients with the best advice and guidance I can. Our main focus is getting you moved in the right timescale for them, for the best price, from the best buyer in the market place.” Although you have only been with the company since 2015, they have been

established for 26 years. What do you think is the key to their success? “The key being and continuing to be successful is about transparency, hard work, giving proper advice and listing to what the market is saying to you, whether that’s buyer and seller sentiments, the economy, current design trends or being able to move with the times, so to speak.

“My view is that with any business which provides a customer-based service, the most important thing is respect. It has to be earned over time; you need to be good at listening and understanding the needs of each client and buyer, matching them together to ensure the right deal. It is crucial to understand that not everyone is the same and neither is every property. The property market is imperfect and the more experience you have the better you can be. You have to work hard and be nice to people and ensure you are an industry expert. You have to have integrity too.” What has been the hardest challenge since taking over? “It was quite nerve wracking at first. It’s a big responsibility, but within a very short space of time any feelings of trepidation had soon left me. Although I am responsible now for staff more so than ever before, and I have to run all aspect of the business, it’s a real challenge but it is amazing to be able to make my own decisions and not run it past anyone. Clients can suffer if directors who aren’t at grass roots level don’t really know their company well and know what changes need to be made. It’s not like that with us, we are constantly adapting to try and create the best business we can for us and the people that use us for buying and selling.” Have you worked with any well-known clients? “I have indeed. Throughout my career I have worked with many famous people: writers, singers, artists and high-end executives. However, discretion is key in our line of work> Normally, we sign

confidentiality agreements and have to respect that. So, I’m afraid that is top secret information! I will say I was able to work with one client in particular who I am a big fan of, so it was really great to work with them and get to know them on a somewhat personal level too.”

What about Brighton as a location, do you think it’s been helpful to have such a friendly and vibrant community around you? “We are situated on a local parade of shops, that are all independently owned and we all know each other and help each other out. All of the businesses have been open for many years and a lot of them (including us) are well known to local residents. Brighton as a whole is great just for the fact there are so many different types of people, but specifically, where we are everyone is so lovely. We have been welcomed with open arms since our rebrand.. It really has a village feel to it and we love it!” How involved are Graham Newsom and John Healy with the business still? “They are not involved in the dayto-day running of the business anymore, but they pop in from time to time and wish us well and have a cup of tea. What has been great is their support for us as a team. They can see what we started growing, organically; using the very same work ethic they did when they started out.”

How has social media affected the company? Do you use it all for business? “We have a Facebook and Twitter page. We use Instagram with some industry news, and it’s a good way of letting people know what you are up to. But, in all honesty, it’s just not the same thing as coming in and seeing us, or having a conversation over the phone. MOUNTAIN Finance After spending almost 15 years living and working in south-west London, we decided a change was needed for our family. Brighton and Hove just ticked all the boxes, with the beach, cosmopolitan lifestyle and only a 55-minute commute to London…. we just couldn’t resist!

fter almost a year in Hove, we are all now finally settled. Coming from a background in the mortgage market, it has been interesting learning about a new area. Since being down here and understanding people’s opinions towards price and what is deemed good value for money, it would seem that within an ever increasing market, value is hard to gauge or even find…

The average UK house price is now £200,000. However, the average price for Brighton and Hove is £264,000. This increase has been occurring at a steady annual rate. It would be sensible and unmindful of me not to mention the UK’s decision to leave the EU in the recent referendum, where the opinions of the whole country seem divided. It’s great news that so many people from all generations came out to vote but the future is now more uncertain as to whether Britain will be better or worse off – from a political and financial point of view.

There are, of course, pros and cons to both sides. The decision has now been made and it will be fascinating to see how this will directly affect the property market and subsequent

bank lending. Prior to the EU vote, governmental changes within the budget also forced many aspiring home owners to consider their options.

The Chancellor, George Osbourne caused a lot of people to sit up and make a choice in relation to the short and long term benefits of owning property. Gross mortgage borrowing totalled £17.1bn pounds in March 2016. This was 64% higher than the previous year’s figures and the highest on record since the 2008 crash. One of the key reasons why mortgage approvals and borrowing went up significantly in the period before the budget was because there was almost a ‘gold rush’ occurrence of people trying to get purchases approved prior to the stamp duty deadline date. Breeze Brasserie Modern, European cuisine

B

righton is spoilt for choice when it comes to good places to eat. With such fierce competition the city’s restaurants need to be on top of their game and, with the added peril of the social media reviewer, maintaining quality is essential.

Breeze Brasserie in Trafalgar Street, in the heart of North Laine, is, as the name suggests, a bright and breezy establishment serving ‘modern, European cuisine’.

A warm greeting welcomed my dining companion and I. We plumped for a comfy corner table, ideal for people watching and getting a feel for the place. There’s an Eastern vibe with ornamental Buddhas adorning the walls, exposed brickwork throughout, Frenchstyle bistro tables in the middle, flanked by black seating around the edge, and a fully stocked bar with selected beers on tap. As we sampled our cold pints of Peroni, picking from so many delicious options on the menu was tricky. After much deliberation, I chose the spicy prawns, with garlic, ginger, coriander, shallots cumin, chili and Teriyaki sauce. They certainly lived up to their name; the perfect amount of ‘spicy’, packing a real zing. My dining partner opted for the spicy squid, with avocado, tomato and a red pepper salad and a lime chilli dressing. It would have been rude not to try some and, despite not usually liking the consistency of squid, I really enjoyed it. Again, choosing a main was tricky so restaurant owner Max recommended the slow-roasted pork belly with chorizo mash, roasted carrots, kale and cider jus. It was excellent. The pork was cooked to absolute perfection, the mash nice and creamy, and the carrots were really sweet. My friend had the chargrilled fillet steak. He requested it ‘rare’ and was not disappointed.

Unfortunately, we didn’t have time for dessert so I roped in a couple of friends who had eaten at Breeze a few weeks earlier. They enjoyed a cocktail or two as well…

In Karen’s words: “I opted for the Banoffee pie while Simone picked the chocolate fondant. “The desserts arrived promptly and, as with our starts and mains, they were gorgeous. The Banoffee pie had coffee whipped cream and the biscuit base held together well. There was a good balance of toffee, cream and bananas. The diet can wait! “The chocolate fondant was a warm, round bubble that oozed warm runny chocolate. The berry coulis was an ideal accompaniment and vanilla ice-cream is always great with warm chocolate.

“We had to try the cocktails and they were wonderful; Simone had the French 75 (Prosecco, lemon juice, brown sugar and gin) and I had a White Russian (Kahlua, vodka, double cream) – lip-smackingly tasty.”

The service was excellent and the food was superb. The meal was a bit spur of the moment so we didn’t have time to check any previous reviews. A quick internet browse on returning home and everything I read was incredibly positive. From the 514 reviews on Trip Advisor, an average score of 4.5 out of 5 was awarded. Very impressive indeed. Here’s an example:

lovers, it feels like whatever mood you are in they will cater for it. I’ve eaten many different things from the menu and each time it has been delicious. They also do roasts later than most normal pubs on a Sunday so I don’t have to worry about getting up too early. I keep coming back again and again and again. The price is really good with starters and light bites around £5-£6 with mains ranging from £8 to £20. Pasta risotto, steak, burgers, salads, breakfast up until 3pm, mussels, duck, grilled fish, falafel… There is such a large selection of good, quality food but not so much that you are overwhelmed with choice. The sweet potato chips are to die for! They also have a large selection of cocktails and a happy hour between 4-8pm. I kind of almost don’t want to write this review as I want to keep this little gem of a place all to myself but it is my favourite place in Brighton.

I spend many afternoons sitting outside in the sun enjoying good food and drink, listening to the music and feeling like I am in a bistro on the Med. As long as Breeze is open I will continue to visit and encourage you to do the same!’ Breeze also collected ‘the best venue for families’ at the Brighton & Hove Food and Drink Awards 2013.

An Indian Summer Night “Leave your preconceptions at the door and come and sample our Indian food for yourself.”

Indian Summer, located on East Street, Brighton, isa r estaurant w hose r eputation precedes it.W idely h ailed a s t he vanguard of the new wave of modern Indian restaurants and listed in the ‘Top 100’ restaurants in the UK by the Cobra Good Curry Guide, it isi mpossible t o d ine there without preconceptions, excitement and high expectations. When invited to review this Brighton institution, I suspected my regular weekly Sunday westernised curry takeaway would never feel the same again.

With a spring in my step and a rumble in my tummy, I headed out on ‘date night’, through the bustling Lanes, to arrive to a warm welcome from Tim, the manager at Indian Summer. Contemporary brightness comes from the murals adorning the walls, complimented with touches of opulence here and there from the chandelier lighting and the purple velvet furnishings. At each table sat eager diners, with the front section playing host to smaller tables; romantic couples, double dates, girlie outings, and the back section hosting large circular tables of family gatherings, groups of friends and special occasions.

The menu is constantly changing, reflecting the seasons and hosting the chef’s new creations as they are developed. With a mission to offer truly authentic regional pan-Asian food, on offer is a mix of classics such as the Masala Dosa and bespoke creations such as the Indian Summer Thali (a mezze or chicken, lamb and aloo subzi. Served with Dal, papad, pickle, roti and basmati rice.) The pricing is actually rather reasonable with two courses coming in at £24.95 and three for £29.95. Lured by the appeal of the organic beers and lagers on offer, the hubby ordered Freedom Organic Lager, so I went for a glass (or two) of Viognier Reserva, De Gras. The wine list is extensive with a botte to suit everyone’s tastes and budgets. House wine starts at £17 but you have the option of wines from around the world costing anything up to the £45 mark. Prosecco comes in at £26 and Veuve Clicquot at £60.

The service is friendly and efficient. These are people who know their trade, their customers and understand the line between attentive and intrusive. The menu, although eloquently explained beneath each dish, can be daunting and so the expert advice and recommendations that came from Tim

were gratefully received. I went for Tandoori Salmon to start and The Indian Summer Thali for mains. The salmon was simply superb; beautifully moist and infused with aromatic spices and the portions are sizable. The main course was a smorgasbord of pan-Asian delights, with each individual element singing with flavour. The roti serves as the perfect complement to the light curries and the dal adds a comforting flavour and texture. My husband opted for the Masala Dosa for starters, a classic South Indian and now world -wide loved dish, ranked number four on the list of ‘Ten foods to try before you die’, compiled by The Huffington Post. As any Masterchef fan will tell you, if you are going to produce a classic, by golly you have to create the perfect version of it and the chefs at Indian Summer have this dish down to a fine art. For main course, he chose the Hyderabadi Murgh, an in-house version of a dish rich in history influenced by the Nizams in the mid 17th century. The dish consists of tender chicken in a marinade of yoghurt, nutmeg and cinnamon. The sauce is prepared with red chilli, roasted coconut, mint leaves, cashew nuts and then tempered with ghee and shahi jeera. Served with basmati rice, garlic cumin butter roti, mango pineapple chutney and pickle. A feast for both the eyes and and palette, the flavours sing to you, and the


spice levels are enough to keep you on your toes, without being overbearing.

It is so very clear that the chefs at Indian Summer are at the very top of their game. They are a team who have worked in many of India’s leading restaurants including Bukhara, Delhi, Delhi and Karvalli, Bangalore. Indian Summer owners Minesh and Byron have assembled a brigade of talented chefs drawn from across the regions to create this dining triumph. Intrigued as to how it all started and what the future holds for Indian Summer, I caught up with co-owner Minesh…

How did the Indian Summer story start and what was your aim when you opened up the restaurant?

My mum always wanted to open a proper Indian restaurant. I was in my career in prosthetics and then decided to try and fulfil my mum’s dream, so I got together with my brother’s best friend Byron who was also looking for a place and in 2001 we formed Indian Summer.

food, service and ambience. Our ideas meet in the middle with the cuisine and philosophy

Described as ‘one of Brighton’s best loved restaurants’, what sets you apart from the rest?

Our attention to detail and customers being looked after. We are in it for the long run. Indian hospitality means its an honour for us to entertain your guests and that’s how we still feel today. We try to be friendly but also deliver with the quality of our offerings. We have had stability in our team with three of our key members having been with us over 10 years.

Which items on the menu do you particularly recommend and do you have a signature dish

We have just started serving a Tandoori Black Bream fish which is going down particularly well. All our dishes are cooked individually and we do not use any additives or colourants. Our mango creme brulee has been on since we opened and has a bit of a following.

What advice would you give a budding restauranteur?

Do your research and do it again. Find a market and get some professionals onboard who know what they are doing straight away (eg, the right accountant and marketing people). Ask some leaders in the industry, take advice and then look for the right opportunity. Do not be guided by your romantic ideals and emotions. Be ready for some serious hard work, harder then you have ever worked before, be prepared to shed some tears but when you get it right you will feel on top of the world. It is not for the faint hearted and remember to keep going and stick to your philosophy.

What inspires the creation of your dishes?

My memories from India and travels as well as our different chefs and their experiences. Eating out and whatever takes our fancy!

What does the future hold for Indian Summer?

Stock Burger I love burgers! In fact I would class myself as a burger connoisseur! I have made it my mission to try out all the top-rated burger joints in Brighton and Hove and I even have a list of my top-ten burgers in the city. Today, I found my new number one!

adies and gentleman, burger lovers everywhere, do yourself a favour and get yourselves down to Stock Burger Co!

Located slightly back from the seafront at the foot of Little Preston Street, next to the Holiday Inn, at first glance you may not notice it as it could easily be mistaken for being part of the hotel, but it’s completely independent from it. The location benefits from a beautiful sea view and has a large sun-terrace, popular on sunny days and warm evenings. Once inside you will notice this is not your average American Diner-style burger joint. Spacious and airy, with simple décor designed by one of the best internal designers in the country, this eaterie promotes a relaxed atmosphere, with a background of chilled out Balearic beats.

We were greeted immediately by a friendly waitress who was knowledgeable and keen to take us through the comprehensive menu of mouth-watering burgers, which all made me salivate at the prospect of devouring them! The menu is well set-out with tantalising nibbles, starters, ’the main event‘ – with vegetarian and chicken options, and even lists the best locally sourced craft beers to complement each of their bespoke burgers!

If the bespoke options don’t tempt you then you can turn the page to the ’build your own‘ burger section which lists the individual chicken, beef and vegetarian patties, sauces, and cheeses to satisfy even the fussiest of diners. The waitress was more than happy to take us through the tantalising sauce options and suggest which would go with the patties. Great for kids, and fussier eaters too.

For starters we had shrimp fritters with their home-made citrus tartare sauce which was quite possibly the best I have ever tasted, and buffalo wings which had been recommended by someone who had previously visited. We were not disappointed! Topped with Frank’s red-hot original sauce (optional) and with a creamy blue-cheese dip, the crispy delicious batter and fresh free-range chicken was a taste-sensation – not to be missed!

For the main event I had to try the chef’s 2016 National Burger Award winning ‘El-Toro Burger’, which completely blew me away!! Two patties; one regular and one oxtail, drizzled with ox double jus and topped with Swiss cheese. Simply sensational! My partner went for the ‘build your own burger’ option with tasty, tender butterfly chicken, cheddar cheese and

their very own Stock Burger Co sauce, which she thoroughly enjoyed!

The sides were superb also! Chunky courgette chips, with their own tangy IPA sauce, skinny crunchy sweet potato fries with sweet chilli dip, creamy crisp slaw and buttery sweetcorn all went down a treat!

If, after all, this you are still not beaten then you must try the desserts! We shared a brownie and banana option which was quickly demolished, even though we were stuffed! Served in a mason jar big enough to share, it would not overwhelm someone who wanted their own. The menu also described a tempting selection of cocktails, milkshakes and coffees (with prohibition and alcoholic options) and soft drinks to wash it all down! We will be returning! Boho Gelato What goes hand in hand with the British seaside? Ice cream: a traditional summertime favourite, (when the weather is on our side!) Where better to experiment with the most unusual, out-there flavours than Brighton? That’s where Boho Gelato comes in.

G

elato is traditional Italian ice cream but there are a few things that make the difference between artisan and the basic shopbought kind. In the north of Italy, near France, gelato is made using no eggs and whole milk, which according to Boho Gelato owner, Seb Coles, makes the ice cream lower fat, more dense and gives it a less eggy, more natural flavour.

its kind when it was established in Pool Valley in 2010. In a city filled with vibrant, creative people and ‘foodies’, there is no shortage of people willing to try new things.

“When I was young my mother had a small catering business so I was always interested in food and drink. I worked in bars for a long time. Cocktails and ice cream are actually very similar because you have to think about what flavours will go well and what is going to be easy to mix in, so it’s something that helped me.

“My inspiration for the flavours comes from anywhere and anything. We try and stick to either classics or something with a twist. We take real life things such as pies and foods and try and turn them into gelato. Sometimes I just wake up with an idea, we discuss it, and it’s not very often they don’t work out.”

Seb was living in Italy at the time, working in a different industry, when the idea came to him.

“From 2006 to 2009, I was working in Italy and in the printing industry at the time. One day I was just thinking ‘there are so many gelato places here’. It was so simple, I just thought to myself, ‘yeah, I could do this back home’, so I did. I used all my connections I had made to learn about the traditional methods of preparation.” Brighton is the ideal location for anyone to set up a business, especially if it’s one less ordinary and although ice cream is hardly uncommon at the seaside, Boho Gelato was one of the first of

Some of the most unusual concoctions available are strawberry, basil and black pepper, lavender and honey and olive oil.

In fact, over the last few years the artisan style gelatos have become so popular you have probably eaten it without realising, in one of 45 different restaurants in the region including Riddle & Finns and The Curry Leaf Café. Though our winters seem to go on forever, which can make business very tricky for someone in the ice cream trade as predominantly they make all their money in the summer, around 50% of Boho Gelato’s trade comes from restaurants stocking their product – even in the colder months. And now it’s earned a well-known name

around Brighton, they have been able to introduce ‘fundraising flavours’. Previously, Seb and his team have supported YCR (Young City Reads), The Rocking Horse Children’s Charity and Fair Share, who donate left-over food, which is then made into gelato. With all the success, Boho Gelato is set to expand soon. While the Pool Valley branch has been established for six years now, Seb and his dedicated staff have their eyes set on a place in Ship Street in the hope that during the colder months shoppers in The Lanes will want to come in and enjoy a traditional Italian hot chocolate. There is even talk of a brand-new site opening in a top secret Worthing location. “It’s been a challenge, but it’s important people remember we are not just an ice cream shop, but an ice cream producer too. We’ve been voted second best in the country by The Telegraph and we want to grow our reputation. Lunch at the Curry Leaf Café Fun dining

I took my partner to the Curry Leaf Café today, the first time I’ve ever managed to convince her to go to an Indian Restaurant as she’s always been adamant she dislikes curry! She now wants to return next week as she enjoyed the food – and restaurant – so much!

This isn’t your typical Indian restaurant. It’s a street food café, and as soon as you walk in you feel the relaxed atmosphere, with a light funky décor and chilled out, friendly staff.

We were asked where we wanted to sit and chose the area at the back of the restaurant which was spacious, cool, and naturally lit by a giant skylight. Once seated, the waiter was more than happy to go through the menu to help with our choices. The drinks menu was comprehensive with a great selection of draught and bottled craft beers, plus a wide selection of wines. With the drinks we had nibbles consisting of mini poppadums with a selection of dips, chutneys and masalaroasted peanuts tossed in finely chopped

onions, tomatoes, coriander and chilli, which tantalised the tastebuds and filled us with anticipation for the food to come.

For a starter we had a street food platter of cauliflower Gobi (crispy cauliflower florets marinated in rice flower, curry leaves, chilli, ginger and garlic), chilli bhajis (stuffed long chillis), and vegetable pakoras, all served with dips and chutneys to compliment the flavours. It was all delicious, in particular loved the pakoras and mango and lime chutney.

For the main course, went for the vegetarian option of paneer cheese and pepper wrap (the café also has vegan, dairy free, and gluten free options) which she thoroughly enjoyed, and I went for Mangalorean Mutton Thali which comes with a spicy warm drink to wake the pallet, and various naans, spicy poppadums, rice and other imaginative side dishes. The mutton curry was delicious and the meat melted in the mouth. The sides were delicious too.

For dessert, we sampled the banana fritter with coconut and lime sorbet, and pistachio and rosewater ice-cream (we both agreed it was the best ice-cream we have ever tasted!)

The whole experience was excellent. The food was varied, exciting and great value for money. We would both wholeheartedly recommend the café, even to someone who does not usually like Indian food! 10/10!

icture a rustic European setting, a quiet cobbled alley surrounded by galleries, vintage shops, cafes and boutiques. I’m actually describing the scene of Brighton’s very own Hotel du Vin. Set in The Lanes, the oldest part of the city filled with beautiful period features that were first built by a wine merchant in 1695, it’s the ideal romantic setting for a short getaway or a long weekend with your friends.

The charming Hotel du Vin is home to a recently restored carved staircase. Upstairs you’ll stay in one of 49 distinctive rooms, fully furnished with Egyptian cotton linens, fluffy towels and roll top baths, inkeeping with the period feel of the hotel.

About Bistro du Vin

Summer is approaching (or supposedly here) and this is the perfect place for evening outside under the vine-leaf covered pergola in the courtyard. Inside at the bar you can try over 100 different whiskey and rum varieties, maybe not in one night, but certainly good for entertainment over a longer stay! Don’t worry if you’re not a spirit person because you can seek guidance in wine tasting from the in-house sommelier in the cellar. In the bistro dishes are made using locally sourced produce to create simple, hearty dishes, nothing too over the top, and served in a cosy, relaxed atmosphere. If you’re looking for something a little more homely then don’t forget to stop at the hotel’s sister venue next door, Pub Du Vin.

Previously considered as space for a special occasion, Bistro du Vin is now described as a top restaurant and venue in the city and it has become a regular part of the Brighton and Hove Food Festival. The menu is described as ‘French-style home cooking’ and portion sizes at the bistro were fair without an overly pretentious presentation. Breakfast and lunch are served daily, not just dinner, and the lunch-time menu is made up of two sections: the bistro classics and the A La Carte menu. Some tasty options include the perfectly prepared French onion soup. Other tempting courses include Normandy Chicken, 28-day aged steaks and the house favourite Roast Du Vin. The French theme continues with desserts such as crème brûlée, tarte tatin and also the traditional Bakewell tart.

Hotel du Vin About Pub du Vin

The Pub du Vin is all about British tradition. You’ll find quality ales including Sussex Best Bitter, Hophead and Thatchers Gold, to name a few, as well as a vast selection of wines. Classic home-cooked meals and excellent portion sizes, some of the best on the menu are beer-battered fish and chips, rump steak, pies and thick cut chips. However, there are much lighter options available at the bar like pickled eggs and pork pies. The Pub du Vin is a really traditional, old school pub with really hearty, well cooked food. The inside is very much designed around comfort with large leather sofas and exposed brick work. The ideal place in the summer for after-work drinks. The Arun and Wey Canal Boat Trips

London Zoo

Hop on the train or pack up the car and make your way to the world’s oldest scientific zoo; ZSL London Zoo. RHS Hampton Court Palace Flower Show Family Day

Time for a little culture! The RHS is always seeking ways to spark an interest in horticulture among the younger generations. For the first time, on 9 July 2016, the RHS Hampton Court Palace Flower Show is hosting a ‘Family Saturday’, featuring additional children’s activities including seed sowing, a family trail, story time, and a number of child-oriented cookery classes. The activities will have a Rocket Science theme to tie in with the RHS Campaign for School Gardening’s partnership with the UK Space Agency to discover whether space travel impacts on the growth of seeds.

There are Cycling Trails all over the UK to suit all abilities following historical pathways and taking in dramatic sights. Build a Bug Hotel

If the weather is putting pay to outside activities you can always take it indoors – but there is much more to do on rainy days than sit and stare at the computer or the TV. With a few bits and pieces that are readily found around the garden or in the shed you can build a bug house. Encourage wildlife into the garden or allotment by offering a dry place to rest weary wings and addled antenna at the end of a long day pollinating! A basic design can be made and, when the sun is out again, kids can build their structures and wait for the bugs to arrive.

The beauty of day festivals is you have all the fun and enjoyment with none of the hassle of trudging for miles with your sleeping bag and tent, then having to wake up face down the next day in a muddy field. You can arrive fabulous and then pootle home for a night of comfort in your own bed. Here are Absolute’s top Do’s and Don’ts for a cracking day out.

• Put on sunblock, at least on your face. Yes, it’s the UK and likely to be raining, but you don’t want to be the wally with a burnt face in the office on Monday morning.

• Take a parker or waterproof jacket. You may want to show off your tan or tattoos but if the heavens open you will be glad you brought along something waterproof with a hood. You want to enjoy the music, not be soaking wet wishing you were at home. • Get a travelcard or Oyster to make sure you can jump off and on any bus or tube around London as getting a taxi can be an urban nightmare. Once at your festival, stash your card in a safe place so you don’t find yourself at the end of the day in a mild

panic when you have lost your travelcard and have spent all your dosh on booze. • Go for a pre festival brunch to line your stomach.

• Take ID with you, especially if you are collecting tickets from the festival entrance. • Get a festival guide at the start and make a plan of bands or DJs you would like to see at which stages before you have consumed too much booze. It’s great to start off with the best of intentions, even if after one hour you have lost your music guide and mates. But hey, give it a go.

• Take cash for drinks. Don’t be that person at a festival who spends the best part of two hours traipsing around in search of a cash machine while your favourite DJ is playing your all-time favourite track.

• Be prepared for zero phone signal. Losing your mates is highly likely so before you all get too sozzled try and decide on a meeting point if you all get separated. • Expect to make new mates in the toilet queue. You will spend a high proportion of your time at a festival waiting in the queue for the loo, so it’s likely you could come away with some new acquaintances, especially after your fourth pint of cider and/or bottle of vino.


• Take a packet of tissues, wet wipes or at least stuff some loo roll in your pocket. Don’t expect the porter loos to have an endless supply.

• Girls – forget the heels – just don’t do it. • Don’t take anything with you that you don’t mind losing or damaging just in case you should completely lose your mind, marbles and dignity. • Do remember to take photos. This a great chance to make some memories with your mates, but don’t forget to enjoy the music and atmosphere. But leave the selfie stick at home.

• If you are desperate to get to the front of the stage, try and approach from around the sides. It’Zs highly stressful attempting to push through the middle of a crowd only to be squashed in the middle at the front of the stage – with no means of escape. At least at the side you can get out quick once you have had enough. • Try to leave before the end. The tubes and buses will be packed with other festival goers who are all fighting their way back in a booze-fuelled fluster to get across London and back to Victoria station before the last train leaves.

Litho print is used for 500 copies up to anywhere really. With both we can handle quantities from just 50 business cards, up to 500,000 booklets. What kind of products do you print?

What was your inspiration behind doing this?

“We have only been established for a year now, but I think Sussex Print Direct is a real innovation in design and print buying. With Brian Cheetham’s Design Studio we decided to provide a personalised design service coupled to our online print shop. This enables our clients to have bespoke designs and to work with a dedicated studio designer, to have a real person they can talk to and someone hands on. Can I ask who some of your clients are?

“Our clients are split between small local clients and large organisations like the NHS across the UK. However, I wouldn’t want to mention our clients names, but I will say I have personally worked on international customer loyalty programmes for clients such as The Hilton Hotel Group, worked with the NHS on many projects nationwide and owned a mailing house and I feel, without doubt, that Sussex Print Direct is the most exciting of any venture I have been involved in. With the combination of a personal design service coupled to our online prices, clients really do receive a personal, affordable and reliable print buying service.”

What will the future hold for Sussex Print Direct?

“We are already incredibly happy with the success we have achieved in such a short space of time, but there is always room for improvement. For the future we would like to introduce third-party products to our shop connected to media marketing, for instance direct mail, promotional items and consultancy for marketing services.”

What has been the hardest part for you? “The hardest part has been to create a suitable website where any client can choose a product and also to make a seamless automated production with delivery on time for over 99% of all jobs produced online.”

Dj style Seamus Haji The name Seamus Haji may already be familiar to you. One of the most creative and technically gifted house DJs of our time with many more strings to his bow. He began his DJing career at the tender age of 16 with a south London soundsystem playing a mixture of early house, soul and hip hop. With a barrel- full of drive, enthusiasm and determination he went on to secure his first residency at The Satellite and later took on regular guest spots at MOS, Garage City, Release The Pressure, Hard Times and Back To Basics. Tune into Juice on Saturday nights to hear his show packed with great music. Absolute’s Pete Hayward catches up with Seamus...

Q. Going back in time, tell us a little history pre ‘DJ Saved My Life’ your mutliple creative personalities are well known in DJ circles.

I released under the Big Bang Theory moniker (this was before the hit US TV show) in the late 1990s. It was sample heavy house influenced by my taste in soul, disco and jazz funk. The first was an ode to NYC post-disco underground classic Go Bang by Dinosaur L. I then released a number of EPs on Slip’N’Slide whilst I was A&R for them and then produced God’s Child for Defected (again, I was doing A &R for them) and hit the top 50 of the pop charts in 2002. When my wife and I left Defected we set up the Big Love imprint. Without a rep or money to pay people I made all the records under different guises. So, Mekkah was for more soulful cuts like Race Of Survival, Get This! was for funky, go-go ( the Washington DC heavy percussive sound from the 80s) sampling tracks, Big Bang Theory sill disco and funk based, 11th Dimension (with partner Paul Emanuel) more futuristic percussive house and a few oddities like Heart & Soul, Undercover Lover and I-Jah and, of course, Haji and Emanuel stuff. It was a way of releasing lots of my own music without every release being Seamus Haji all the time.

Q. When did you get into music production? Was it before or after DJ activities?

I started to DJ in public at the age of 16 and got into production many years later when I was in my early to mid 20s. It wasn’t as easy back then. It was before Logic Audio and Macs. My first production set up around 1991 was an Akai S950 sampler, Fostex mixing desk, Yamaha keyboard, Alesis HR-16B drum machine and Atari 1040 STE computer running Notator Logic software. When I

got more into production I bought an Akai MPC-60 which was convenient for knocking up beats with a great groove. The Americans like Masters At Work and Roger Sanchez were using the MPC60 and Emu SP1200 and I was very inspired by their beats.

You have been associated with some huge names on remix duties. Do you have any stand up faves?

Roisin Murphy Overpowered, Late Night Alumni - Empty Streets, Mariah Carey - Touch My Body are some of my favourites. Roisin is an amazing talent just doing her own thing writes and sings her own songs in her distinctive style, Late Night Alumni (Kaskade’s alter ego) just resonates with a lot of people. Our mix really broke that track and Mariah Carey is simply an amazing singer. I still get people requesting these songs.

Q. Do you think the UK scene has diminished compared to say the ‘new’ scene places such as Croatia and Poland? Where is your favourite territory these days?

The UK has gone through a big change over the last 10 years. The crowd has changed and you now have youngsters who don’t know much about dance music from five years ago let alone 10. I love playing for the Pride events in Brighton, London and Manchester as the crowd tends to have a bit more history and a mixture in age range so I can play new and old stuff, which I like to do. I like to join the dots from new tracks that hark back to a 90s sound for example to new tracks that have the same influence. My favourite places to play over recent years have been Eastern Europe, Australia and South America.

Q. I remember often seeing you in

Soho’s Black Market Records in the vinyl days. Do you miss that record shop experience, the banter and gossip? I do miss it yes. I worked in record shops in Soho for almost 10 years. Started at Red Records in ‘89 when Trevor Nelson was working there and went onto work at Unity, Catch-A-Groove, Release The Groove and then finally Uptown Records. Whichever side of the counter I was on it was great seeing people, catching up and sharing releases and tip offs with each other. Most of my childhood heroes like Africa Bambaatta, Arthur Baker, Grandmaster Flash I met in record shops. That whole social aspect has gone now. Yes, it’s all online now but those days were special. We didn’t realise how good we had it!

Q. How are you enjoying being a DJ on air? Is there much preparation to be done before a show?

I started out doing radio in the mid 90s on pirate station Girls FM which was the biggest of it’s kind at the time. I started just after Kenny Hawkes and (I think ) Luke Soloman had been there. A lot people got their break from that station. I also hosted the Defected Radio show on Ministry Of Sound’s web station around 2000 with Guy Williams when we both worked at Defected and when I left I started my Big Love show on MOS also. I stopped it a year or two afterwards as they wanted me to go weekly and as I had moved to Brighton around 2002 I couldn’t justify the time and expense of doing it. Years later I hosted the Strictly Rhythm podcast when I was dong A&R for them in 2010 and when I left I decided to start my Big Love show again as I really enjoyed it. Fortunately, a spot came up at Juice Brighton on Saturday nights so it was perfect timing. I think it takes a while to ‘find your voice’ on radio and I think I finally found mine at Juice. be able to play in a club so doing features like In Deep I can drop the tempo and play whatever’s touched me that week. More soulful or laid back stuff and The Original Cut is where I can show of my knowledge of old music that’s either been sampled, remixed or covered on a new track. There is a lot of prepping but it’s good because it keeps me up-to-date going through my promos each week and buying new stuff. That’s the main part of the preparation. I basically go into Juice to record my links and then produce the show with Ableton on my laptop whilst travelling on trains. I love doing the show as it’s a way of exposing new talent and pushing stuff that I believe in. My show has been on Juice for five years now and is also syndicated to almost 40 stations around the World.

Q. This brings me to your new project - DJ School. What’s this all about? As I’m on the BMC (Brighton Music Conference) Advisory Board I also get involved in the panels. The last two years I’ve been moderating panels in the academy side of things. I got speaking to a few music schools who were represented there and I was asked to do some guest lectures at the likes of BIMM, and Northbrook College in Brighton and Worthing and also SSR and PointBlank in

London. After that I was asked if I’d like to teach Music Business as some spaces had come up at PointBlank and Northbrook which I’ve been doing this year part time. I’ve also covered one of the DJ courses at Pointblank which gave me the idea to run my own course at Northbrook this su-mmer. The reason behind it is that I feel there are too many youngsters buying certain software to run on their laptop and then press sync. I’ve heard young DJs warming up at a couple of nights in Brighton and they may have Traktor for example so the tracks are on time but they’re bringing tracks in on the wrong beat...it’s a joke! They’re looking at a waveform on their computer but not listening properly or feeling it. I think the art of DJing is an important thing to pass on and without sounding arrogant, I’d like to pass it on. I’ve had the good fortune to play at some of the best clubs around the world on a regular basis and play small intimate nights to festivals and there’s obviously a difference in the way you play and the same applies to playing a onehour set, as opposed to a five or six-hour set. All of this and more is what I want to teach. I was an early ambassador for Pioneer starting in 2002 when they brought out the CDJ-1000 so I used to get a lot of free equipment to endorse and I played a some trade shows for them too. I’ve always been quite technical as a

DJ as I started off mixing and scratching hip hop and soul in the 1980s on vinyl (before house music had hit our shores) and that was hard to do. You had to know your records and where to mix. There were lots of different tempos too but that was how you earned your stripes as a DJ if you could mix. So, my Summer School is powered (sponsored) by Pioneer which means we’ll have all the latest equipment and one of their expert demonstrators Rob Anderson will also be making an appearance. I only ever use Pioneer equipment. I’ve no interest in playing from a laptop in a club.

Q. What’s on the drawing board these days? Any major future plans you would like to share?

I just keep doing what I do. As long as I’m making a living out of music I’m happy. I revived my Big Bang Theory moniker recently so I have another EP due on Big Love soon, another Seamus Haji single too and I also started doing some re-edits of 1970s disco and 1980s boogie just for fun under the ReLoved By Seamus Haji moniker for Yam Who’s Midnight Riot label. Proudly a ‘saucy seaside stopover’ I was not only intrigued by the unusual name, but also the 19 themed rooms ready to tickle every individual’s fancy. Each is inspired by music, art and popular culture from ’Cloud cuckoo land’ to ’Ali’s room’ paying homage to the LATE great Muhammad Ali. The prices are reasonable, starting from £79 and everything you may need is on your doorstop. The hotel also caters for wedding receptions, meetings and parties with a difference. It is original and quirky with a touch of English eccentricity and a perfect reflection of Brighton.

Glamour oozes from every corner of this seductive room. A leopard print chaise lounge perfectly placed in the window for an amazing sea view. It was a perfect balance of cosy and saucy and full of little surprises from the curly wurly chocolates to the spa bath for two!

n my case, it was a night away in a stylish and contemporary boutique hotel where I could relax and have a little midweek fun.

A five-minute walk from my house and in the heart of Brighton, Hotel Pelirocco is situated on a townhouse on a Regency terrace.

After a very busy day at work I arrived around 7pm and was given a warm welcome and an introduction to the wonderful world of Pelirocco.

I immediately felt my day of stress disappearing as I was overwhelmed with the unique, quirky and quite frankly fabulous array of icons and imagery covering every inch of the walls and stairwell.

There was no faulting my spectacular room ‘Betty’s Boudoir’ dedicated to the American pin up Betty Page.

Each of the charming rooms is beautifully decorated with fine linens and quaint, imaginative touches. Despite my desire to stay in the room all night I was keen to head to the cocktail bar and sample what was on offer. The cocktail menu is extensive and some of the names are rather risqué, all adding to the fun and relaxed Pelirocco concept. The bar was surrounded by funky mirrors and naughty innuendos and was a refreshing setting for a relaxed drink. In fact, it’s the first hotel bar that I’ve been too that livens up as the night progresses with

the eclectic mix of guests arriving back to the hotel the party seemed to start and continue!! The morning after the night before was slightly hazy, but this was soon rectified with the Bloody Mary breakfast. All the guests were smiling and chatting from group to group, unlike your usual quiet breakfast room, and I was surprised to find out how many locals had booked in for the night. One couple gushed about how Pelirocco is a welcome break from the children and reminds them of when they first met.

However, my favourite guest was an American doctor attending a local conference who, as he stood up to leave, said proudly “I’m staying in Darth Vader’s cabin!!” This truly was an unusual, unforgettable and totally captivating experience. I had so much fun and left the next morning revived and ready to face the world. Brighton is a cheeky seaside town that has so much to offer and now I know about this little gem around the corner I will certainly be taking more time out for mini vacations in my city. 10 Regency Square, Brighton, East Sussex BN1 2FG 01273 327055
