Well where do we start?

We have all been through a lot, that’s for sure, over these last few months hopefully you have come out of it all ok, safe and healthy, but its certainly been a challenge and worry no doubt too.

At Absolute we have done our best throughout to continue working and publishing where we can with our website and social pages being made available to support local companies, and this issue too, to high light those outstanding businesses in our home city and region but also a few further afield that also need our support in this recovery period.

I hope we can enjoy,with care and thought for others, the rest of the summer either within the UK with a staycation or if you are able to travel then you couldn’t go wrong looking at safe areas like Ibiza, Seychelles and Maldives where cases have been low to zero, meaning you can enjoy a safe holiday in paradise. Anyway we hope you like the issue and maybe it can inspire or remind you of some of our great businesses around us all that we can enjoy and in turn support over these summer months. Absolute.

News United We Stream Brighton Ever since mid-June, Brighton has joined the global streaming community with ‘United We Stream’. A movement that started in Berlin during lockdown that has spread to over 65 cities around the world, United We Stream Brighton showcases the music, culture and free-thinking rainbow infused spirit to viewers at home each weekend, whilst raising money for the city’s night-time economy, cultural organisations and charities.

The idea is for locals as well as people around the world to enjoy and experience Brighton’s music, art and culture through the website and social platforms. United We Stream Brighton is free, but with donations welcome, and all proceeds will go to support bars, clubs, pubs, venues, restaurants, performers, freelancers and cultural organisations across Brighton & Hove as well as contributing to the fight against homelessness and the vital work undertaken by the Grassroots charity. United We Stream Brighton features some of Brighton’s most-loved venues including; British Airways i360, The Tempest, Big Beach Cafe, Enter Art Gallery (formerly Art Republic), The Brighton Centre and many more, streaming live music and performances every weekend uniting the city during the coronavirus pandemic. Kitesurfing Armada Festival 2020 Europe’s largest kitesurfing and 3-Day family festival is taking place on Hayling Island’s West beach. Featuring awe-inspiring kitesurfing demonstrations, The British Kitesurfing Championships, live music, DJ’s, family zone, circus skills, slackline, face painting, bars, street food, wellbeing zone, arts and crafts, merchandise and beach front camping and caravan sites.


A Prince’s Treasure In September 2019 a spectacular loan from the Royal Collection will go on display at the Royal Pavilion. The culmination of a collaborative venture between Royal Collection Trust and the Royal Pavilion & Museums, over 120 remarkable decorative works of art that were originally commissioned by the Prince Regent, will be relocated from Buckingham Palace and reunited in their previous setting of the Royal Pavilion.

This unique project lasting for approximately 2 years will provide a once in a lifetime opportunity for visitors to see these magnificent items in their former home. Many of the works of decorative art have not been on public display for over 170 years and will be on loan to the Royal Pavilion whilst essential building works in the East Wing of Buckingham Palace take place. These magnificent items will illuminate the interpretation within the building, helping to further our understanding of the future George IV’s love for his exotic palace by the sea, and the spirit and times in which he collected these rare and fascinating pieces.

The

NATIONAL TRUST This year the National Trust celebrates its 125th anniversary. With the help of its supporters, the conservation charity - Europe’s largest - protects and cares for nature, beauty and history for the nation to enjoy. And entirely independent of Government, it’s all thanks to the 5.6 million members, 65,000 volunteers and 14,000 staff that support it. Without their help, the organisation wouldn’t be able to care for the 780 miles of coastline, over 250,000 hectares of countryside, hundreds of historic buildings, gardens and precious collections that it protects. In Sussex this includes Capability Brown’s famous landscaped grounds at Petworth Park, Nymans’ romantic, flower-filled gardens, and acres of wildlife-rich downland, woods and heath on the South Downs.

n 1895, the National Trust’s founders, Octavia Hill, Robert Hunter and Hardwicke Rawnsley pledged to preserve our historical and natural places. Their aim was not only to save important sites, but to open them up for everyone to enjoy. From this trio of environmental pioneers, the National Trust was created – and their original values are still at the heart of everything we do 125 years later.

Today, the charity is also a key player in the campaign to tackle climate change – the single biggest threat to the precious landscapes and historic houses it cares for. From changing the way it manages its gardens and cutting carbon emissions, to restoring wildlife ha bitats, it’s adapting in many ways. To help mark its 125th anniversary milestone, the Trust has committed to becoming carbon net zero by 2030, planting and establishing 20 million trees to help tackle climate change, creating green corridors for people and nature near towns and cities, running a year-long campaign to connect people with nature and continuing investment in arts and heritage.

Reopening the National Trust in Sussex In June, the charity started a phased reopening of some of its gardens and parklands, keen to share these beautiful places once more with the thousands of people wanting to escape into fresh air and nature. At the time of going to print, advance booking is required, to limit visitor numbers and maintain public safety, and the safety of staff. Over the summer, the Trust hopes to gradually reopen some of its houses too. Throughout this time, the organisation is urging people to ‘stay local’ – enjoying visits to their local garden and green space rather than travelling further afield. Director-General Hilary McGrady said “I am so thankful that our members and supporters have stood by us as we work through these unprecedented times. We know they desperately want to return to our places, and we need their support to do our vital conservation work to look after the coastline, countryside, rivers and properties in our care.” “Like so many other organisations, the Trust has been badly affected by the coronavirus lockdown, not least our vital conservation work and our finances. Reopening is the first phase of our recovery, and we need our members and supporters to help us make this gradual transition a success so we can get back to offering nature, beauty and history for everyone.” To find out which places are open in East and West Sussex please visit the website, however here are our favourites…

Sheffield Park

Located between East Grinstead and Lewes, this magical garden is a horticultural work of art formed through centuries of landscape design, with influences of ‘Capability’ Brown and Humphry Repton. Four lakes form the heart of the garden, with paths circulating through the glades and wooded areas surrounding them. Each owner has left their impression, which can still be seen today in the layout of the lakes, the construction of Pulham Falls, the planting of Palm Walk and the many different tree and shrub species from around the world. The historic parkland forms a larger footprint for the Sheffield Park estate. Dating back several centuries, it has had many uses including a deer park and WWII camp, and is now grazed with livestock and home to a natural woodland play trail in Ringwood Toll. The River Ouse runs across the bottom of the parkland and the original meanders are still visible winding across the meadow. This area has been transformed into a wildlife haven and is home to a diverse range of species including kingfishers, birds of prey, butterflies, and dragonflies.

Standen House and Garden

In West Sussex you’ll find Standen House and Gardens, an Arts and Crafts family home, set in a beautiful hillside garden. James and Margaret Beale chose an idyllic location with views across the Sussex countryside for their rural retreat. Designed by Philip Webb, the house is one of the finest examples of Arts and Crafts workmanship and is set amongst a garden which features the plants that inspired the iconic patterns created by Morris & Co. A major restoration of the 5-hectare (12-acre) hillside garden showcases year-round seasonal highlights and an award-winning plant collection. On the wider estate, footpaths lead out into the woodlands, Ashdown Forest and wider High Weald Area of Outstanding Natural Beauty.

Bateman’s

Bateman’s sits nestled in the High Weald countryside, surrounded by fields and woodland. The garden that made Rudyard Kipling feel like an English country gentleman includes a river running through a wild flower meadow, a watermill, orchard and a formal rose garden. When Kipling saw Bateman’s it was the retreat from the outside world he had been looking for, with the combination of garden, meadows and woods. He set about enhancing the garden, making an orchard, dividing up the spaces with yew hedges and created a kitchen garden within the walls of what is known as the Mulberry Garden – because of the tree Kipling planted. The Kipling’s lived here from 1902 until 1936 and during this time they gradually bought the surrounding farmland, which now comprises the 300-acre estate. The 12-acre garden nestles comfortably in the centre of the estate.

When Kipling saw Bateman’s it was the retreat from the outside world he had been looking for, with the combination of garden, meadows and woods. 34

Local summer walks

During these tough times, we can at least relieve some of our stress and frustration by taking a summer stroll through a local stretch of countryside. If you’re lucky enough to be close to the South Downs, you might like to take a look at the Trust’s series of downloadable walks, which will take you out into glorious open downland covered in wildflowers, scented herbs and flitting butterflies. From gentle one mile strolls to longer more challenging trails, a walk is a chance to mentally and physically unwind, to instil a sense of peace, and give us space to gather our thoughts. And of course it also brings us closer to nature – an opportunity to take in the smell of wild honeysuckle, listen to skylarks singing high above us, or simply to sit and drink in an amazing view. You can find favourite Sussex walks on the National Trust website, including the 3.8 mile Nore Hill walk across the picturesque Slindon estate near Chichester. The route meanders through sun-dappled ancient woodland and up to Nore Hill folly – built in 1814 for the Countess of Newbury’s picnic parties. Enjoy your own picnic there and soak up panoramic views down to the sea. In East Sussex, the two mile Devil’s Dyke Fulking walk takes in banks of chalk downland teaming with flowers and wildlife, and spectacular views across the downs and the village of Fulking.


Practical picnicking

Talking of picnics, now that much of our glorious countryside has re-opened, we can once again enjoy this great British summer pastime. Eating al fresco makes everything taste nicer, but if you want a helping hand, the National Trust has put together some top tips on how to have a successful picnic, together with delicious summertime recipes, from lemon and oregano chicken skewers, to bite-sized raspberry and white chocolate mini sponges. During the first four weeks of the country’s lockdown, thousands of people visited the online recipes, with cheese scones topping the list at over 54,000 visits! Be sure to visit the website to discover these iconic recipes for yourself and in the meantime, here are some of the top picnicking tips…

• Set

the scene

1. Blowing hot and cold Think about cool-bags and ice packs for hot days, and flasks for keeping food or drink hot or cold. Make sure to pre-heat flasks with boiling water or pre-chill them with ice, as appropriate. Flasks are good for soups (this is a UK picnic after all) or for carrying ice cubes or cold milk. Carry milk separately for a bettertasting hot drink.

2. Basket case Picnic baskets come in many shapes and sizes, from the suitcaselike hamper with place settings for several people strapped into the lid, to the double-lidded shopping-basket. The former has the blessing of tradition and neatness, but the change in orientation when carried by the handle, makes it less suitable for some foods. The shopping-basket with a lid is better for delicate items and things that need to be kept upright. Put a frozen ice pack or two underneath anything that needs to be kept cold. For the more practical option, picnic backpacks are more convenient to carry. Less traditional, but with compartments for keeping food or drinks hot or cold, they can be a solution for those who want a more elaborate meal as part of a long walk. 3. Presentation is everything When presenting food, consider the occasion. Is your picnic supposed to be romantic, a reference to elaborate nineteenthcentury affairs, or a throwback to the glamorous 1930s? Or is it something that picks up on the current vogue for mid-twentiethcentury design with twenty-first century touches? Picnics are, at heart, frivolities and it’s fun to look beyond the simply practical.

4. To spork or not to spork that is the question? Much picnic food, especially sandwiches and things in pastry, don’t need anything except fingers for eating, but bigger, more elegant meals do. Sporks – spoon–fork hybrids – are an ideal solution for minimalists. However, a collection of inexpensive lightweight cutlery is a great investment for picnics. Remember to think about the environment and choose sustainably.

5. It’s the little things... Take a small board and a sharp knife or two for cutting bread, cheese, fresh fruit and cake, a butter knife, and spoons. It’s always good to have a corkscrew and a bottle opener in the pack. Add salt and pepper mills, bottled sauces and other seasoning mixtures. Cloth napkins are an excellent idea. Biodegradable wet wipes and kitchen paper is invaluable, as is a bag or two for collecting rubbish. Always, always, take your rubbish home or dispose of it in designated bins. 6. No-one wants a prickly bum Comfort is important. Take a couple of picnic rugs with waterproof backings to sit on, and a couple of nonwaterproof rugs to wrap around yourself if the weather turns cold. A few cushions soften the ground for those who prefer to lounge.

7. Not all guests are welcome As much as we love insects for pollinating flowers, they’re not always the most welcome guests at a picnic. Citronella tealights in holders, if they can be placed safely and avoid any risk of fire, are a possible solution against insects in the evening. Try to avoid ants’ nests, accept that wasps will be keen to join your party in late summer, and take an environmentally friendly insect repellent. The best solution is to find a spot with a slight breeze, which helps keep biting insects at bay. 8. Mad dogs and English men... Don’t forget hats, cover-ups and sunscreen – you never know, they may be needed. Important picnicking stuff: when choosing

your picnic spot, try not to set up camp close to grazing herds or wildlife that might be

disturbed by your presence. Litter and discarded picnic items are not only a visual blight, they put wildlife at risk of become trapped and

tangled. Many animals will attempt to eat food

packaging too, causing internal injuries. And just as importantly, please don’t bring a barbecue

or make a campfire; it only takes a small spark

from a single barbecue to ignite the surrounding grass or foliage – the National Trust and other

conservation organisations have experienced a number of large fires already this year.

Summer garden know-how

Whilst we’ve been stuck at home, many of us lucky enough to have our own outdoor space have turned to gardening for comfort, therapy and joy. In the Trust’s historic gardens – places like the Arts and Crafts garden at Standen near Haywards Heath, and Rudyard Kipling’s former home Batemans near Burwash – a skeleton team of gardeners continued to carry out essential maintenance, so that these beautiful places would be ready to safely welcome visitors when the time came. Throughout, the Trust’s gardening experts have provided a host of inspirational gardens-themed content online, for use to enjoy – from basics like how to keep on top of weeds and when to water plants, to the serious business of dealing with black spot on roses. There’s advice on summer lawn care, how to create a mini meadow and spot wildflowers, even garden design. You’ll find top tips on cucurbit care too – that’s courgettes, cucumbers, squashes and pumpkins.’ Plus discover how the Trust’s own gardening experts started their careers in horticulture.

Making a wildlife-friendly garden

One of the most important things you can consider of course, is how to make your outdoor space more nature-friendly. This is something at the very core of the National Trust’s values, and rangers and garden teams work tirelessly to increase the wildlife diversity of its gardens, alongside woods, heaths, rivers and downs. Whether you live in the countryside or the city, our gardens represent valuable havens for wildlife to thrive in even the most built up landscapes. By making your garden attractive to insects and other animals, it’ll give you a chance to observe nature up close and personal on a daily basis. Flower-rich borders, shrubs, mini-meadows, bird boxes and bug hotels all help to support and attract wildlife. Even a small garden can be transformed from a wildlife desert to a species-rich habitat if you choose the right plants and are not overly tidy. For instance, bees love herbs such as thyme and marjoram. Primroses, foxgloves and ivy are also good. The National Trust’s ‘Nine ways to build a wildlife-friendly garden’ is packed with fun ideas that the whole family can get involved in. How about building an insect hotel? Shopping in the North Laines, Brighton We all know that Brighton has a lot to boast about; a beautiful and buzzing seafront, an action-packed pier, an endless array of indie cafes and restaurants and an incredible and varied nightlife scene. Brighton has, however, one very well kept secret that captures the very essence of our Bohemian town; The North Laine. A shopping mecca for in-the-know Brightonians, this maze of over 400 colourful, wonderful and often weird independent shops keeps its visitors busy for hours as they wander through treasure troves stocking goodies that you just simply don’t find in the large chain stores. The name of this riot of retail dates back to Saxon times when ‘laine’ was a word used to describe the large arable fields that lay in Brighton. In this case, the laine in question consisted of five separate farming plots which themselves were split into smaller sections of land. It is the access tracks between each section that actually make up what is now the North Laine. The North Laine is so easy to find when you know where to look! Rampion Wind Farm Tour Brighton As you journey along the Sussex coast, you won’t fail to spot the battalion of wind turbines, standing proudly out to see. Such is the demand that Ross Boat Trips now offer 120 minutes sightseeing trips to the new Rampion Wind Farm array aboard Catamarans “Adept” (formally a wind farm transfer vessel) and “Voyager”. The 116 turbines are more than 8 miles off shore from Brighton and it takes about 45 minutes to get there. 1| Littlehampton: Sea Road, BN17 5GB East Beach Cafe was completed in June 2007 and has since won more than twenty national and international awards for design, architecture, steelwork, craftsmanship and engineering. Not dissimilar to the hull of a ship, it is a self-supporting structure and an extremely complicated piece of engineering. The whole process from commissioning the architect, Thomas Heatherwick, to completion took 18 months. Thomas heads one of the world’s leading design practices and was described recently by The Times as “the most creative mind in Britain”, the East Beach Cafe was his first UK building. The emphasis is on fresh fish and locally sourced produce, cooked in a style that lets the quality shine through. The Ritz trained kitchen team produce a standard of food that is fit for such an amazing setting.

5| The Bali Brasserie is proud to present vegan, vegetarian and dairy free dining as well as gluten free. The restaurant inside, ‘Rijsttafe’, (the rice table) is Indonesian themed food on a set menu, but they are able to adapt a meal to almost any dietary requirements. If you fancy staying the night in Lewes, you can book a night in their elegant accommodation – “The Room”. If you are visiting Lewes for site seeing, or a special occasion getaway, The Room would be the perfect place to stay for a luxurious night after a delicious meal in the Limetree Kitchen restaurant. The menu consists of tapas style small plates which give diners the opportunity to try more on the menu. This is an informal way of eating out and you can either share a few dishes with friends or enjoy them on your own. This colourful, laid-back 75-seat dining space – decked out with exposed brick walls, wooden tables and vintage Indian design touches – operates as a cafe-cum-lunch spot during the day, offering a range of coffees, teas, snacks and traditional South Indian street food, as well as more substantial meals such as thali platters, dosas and Masala-battered fish 'n chips. 6| If you are looking for a good, old fashioned, comfy pub with a great atmosphere then this is the place for you. The Lion and Lobster is very popular with the locals and has become a bit of a Brighton institution. It is a good venue to start your night before going out on the town. The pub is spread over three floors with a main bar downstairs complete with cosy real fires in winter. The second floor has a small bar within a beautiful dining room and the third floor is the outside smoker’s area complete with mini bar and outside heaters. The Sunday roasts are very popular but make sure you get there early.

7| Horsham: 21 Piries Place, RH12 1EH, West Sussex A cocktail bar with a difference! Opened by a group of bartenders in 2014 who are obviously passionate about their craft. The Dead Parrot boasts a fantastic menu of unique and eccentric cocktail as well as some classics, well as a fine selection of beers and delicious wines. Split over two floors with cool and quirky décor featuring some interesting taxidermy and a giant chessboard on the ceiling! An unashamedly hipster joint serving cocktails in all manner of vessels from beer cans with sombrero hats, to metal tankards and even the odd dainty glass. Lots of fun!

8| A lovely start to your evening in a classy venue. The bar is part of the Hotel du Vin chain and is open to non-guests to come in and enjoy the relaxing atmosphere. It is a little on the pricey side but if it is sophistication you are after then look no further. The bar has an extensive list of wines and a wide selection of whiskies, rums and countless spirits. As well as relaxing in the main bar you can also enjoy a game of billiards located on the balcony above.

10| Hastings: 71 George Street, Old Town, East Sussex TN34 3EE Owned by the same people as the famous Dragon Bar in Shoreditch and centrally located in the Old Town in Hastings, just a stone’s throw away from the beach. This is a fantastic bar and eatery where during the day you can sample a diverse and delicious sounding menu made up of fresh local produce, and relax and watch the hustle and bustle of the old town. I

t’s fair to say the unprecedented circumstances we have been in the last few

months has had a profound affect on all our lives. The lockdown and subsequent

forced temporary closures of businesses around the country and indeed the world will mean that many will struggle to survive. Here in Brighton businesses have

been forced to adapt to make ends-meat, with many of our favourite restaurants

now offering takeaway and delivery services to keep going and ensure survival. In some cases, even this might not be enough.

One household name that I am certain will weather the storm and come out of this

situation stronger than ever, is Curry Leaf Café. A favourite of Absolute Magazine that has taken Brighton by Storm over the last few years, the

team launched their flagship street food diner on Brighton’s ship Street in 2014. They quickly become one of Brighton’s most loved Indian restaurants, winning multiple awards

for their incredible authentic South Indian street food. We swung by their Kemptown café to try out their takeaway menu and have a chat with Co-Founder Euan Sey about what has been going on behind the scenes

announced by the government. The scheme was already in the pipeline and due to

be launched this Summer. The lockdown only encouraged them to speed it all along

and launch early. The company is transporting meals in a refrigerated van as part of its Curry Leaf Café at Home service. Hot meals are still available through Deliveroo, however cool meals travel further in good

condition, meaning cooped-up hungry customers far and wide

can tuck into their favourite South Asian dishes from the safety of

their homes, and the quality is identical to the dishes served in the

restaurant. Initially the service was launched to cover Brighton and

Hove, but they recently expanded the delivery area to places further afield such as Worthing, Lewes and Burgess Hill on certain days of

the week. The meals arrive with easy to follow heating instructions and packed in biodegradable, compostable containers that keep them fresh in the fridge for at least three days.

I asked what the future holds for Curry Leaf Café and Euan was

excited to tell me all about the imminent launch of their Tiffin meals for one which come in branded Tiffin boxes which will also be

circulated to select cafes around Brighton and Hove for takeaway, and by mid-June they will have distribution centres in Chichester Eastbourne Haywards Heath and Worthing so they can supply to households in these areas seven days a week!

On to the food. I ordered Goan Pork Ribs, Chicken 65, and some

Spinach and Onion Pakoras to start us off, a Hyderabadi Lamb

Curry and a vegetarian Aubergine Kuzhambi tiffin for mains, and as Curry leaf Café’s selection of craft beers has synonymous with their incredible curries. a couple of tins of Burning Sky Arise IPA to wash it all down.

The dishes take mere minutes to heat up in either the oven or

microwave, so we are able to tuck straight into our starters. The Goan Pork Ribs are so tender I could lick the meat off the bone.

Sticky, messy, fun to eat and the flavour of the fiery sweet and sour marinade completely blew me away. The light as a feather Pakoras were charmingly moreish, subtle and incredibly well balanced

fresh and fragrant spices encased in a light crisp shell, which when

dipped in the mango chutney produced harmonious flavours which danced around the tongue.

Our main courses were equally as impressive if not more so.

My Hyderabadi Lamb Curry was nothing short of spectacular. Slow cooking was certainly evident as the Lamb melted away

releasing the meats full flavour which went perfectly with the

rich, spicy, intensely fragrant and colourful sauce that hit all the

right notes. My wife’s Aubergine Kuzhambi tiffin was just sublime. The aubergine was cooked to absolute perfection, soaking up all the wonderful flavours of the aromatic sweet and sour sauce it

is cooked in. The IPAs were perfect for washing it all down and refreshing the pallet between courses.

We absolutely loved every bit of our takeaway meal; the food

really was restaurant-quality and I am seriously tempted to stock up on some of their delicious curries to keep us going until the

restaurant opens its doors again. Because so much of it is saucebased and coated in spices, the food is ideally suited for home

freezing. The ordering process could not be easier, you simply visit the online shop, add your dishes to the basket, choose a delivery date that matches your postcode and checkout up to 3pm on the day of delivery.

With regards to the restaurant, the Brighton location will still

be able to seat 30+ guests with a two-metre distance between

them. The safety of their customers and staff will be paramount. If necessary, they will go above and beyond any guidelines that

iddle and Finns seems like they have been a big part of Brighton’s

abundant foodie scene forever! Their flagship restaurant in the lanes is the first place that usually springs to mind if my wife and I want to

eat out for a special occasion. We just love the not too overly polished

New York Glamour vibe with its shiny tiled walls, beautiful candelabra,

dimmed vintage chandeliers and gleaming marble tabletops. Or if it is a long

leisurely lunch with incredible sea-views we are looking for, Riddle and Finns on the beach would be our go-to, with its slightly more relaxed vibe, yet still unmistakable glamorous edge. Either way it is the quality of the food that

brings us back time and time again, always top notch and as fresh as can be, literally exceeding our expectations on every visit.

Ever since lockdown, Riddle and Finns have been doing things a little

differently. Not by choice, but because of restrictions that have been placed on all our lives due to COVID 19 which meant that they had to temporarily

shut up shop at both locations. The team behind Riddle and Finns have been quick to adapt however, with their beachfront location serving up delicious takeaway seafood dishes, and more recently launching a “finish at home”

menu from the lanes (which looks incredible by the way). Last weekend with

the weather being so lovely, I thought it high time we paid the beach a visit and grab ourselves a posh picnic to enjoy on the pebbles.

After finding a prime spot on the beach with views of the iconic West Pier at around midday, I thought it best to try and beat the crowds and head off immediately to grab our picnic. I had seen a friend of mine

post a picture of a lobster roll that she had got from Riddle and Finns along with a seriously

tantalising description of just how good it tasted on social media the day before and I had not

been able to stop thinking about it ever since.

I was surprised to see a socially distant queue

was already forming. It seems word has already

gotten around. Thankfully it did not take long to

reach the front and place my order with the very

friendly and welcoming team who were only too happy to recommend items

from the menu and chat with me whilst I sip on a frozen margherita and they busily take and prepare orders.

Riddle and Finns It turns Riddle and Finns have a lot to be thankful for, and indeed look forward to too. The takeaway food has been very popular since they launched several weeks ago albeit being very weather dependant. Plans are already in place for when they can open both restaurants with a reduced capacity in order to keep their customers safe, and as soon as the shelter hall restoration is finished Riddle and Finns will be moving from the current beach location to take over the whole second floor, which will be decked out in a similar fashion to the lanes restaurant with the added bonus of 180 degrees of beautiful sea views. As well as this, because the takeaway menu has been so popular, they are considering keeping it going serving from a stall in the food hall which will be opening on the ground floor! Our food arrives within a matter of minutes all packed in bio-degradable packaging with wooden cutlery provided also so I risk brain-freeze to guzzle the rest of my margherita and pop back to our spot on the pebbles. We begin as we would usually on a visit to Riddle and Finns with eight fully prepared delightfully plump Carlingford Bay rock oysters which come with a selection of condiments. Super fresh and bursting with flavour, tasting just like a summer beach day. Sublime. The ceviche of the day is Salmon, bathed in tigers’ milk and nestled in a crisp lettuce leaf which is handy (and fun) for just picking up from the box and chomping on. There is no mistaking the freshness of the fish. The citrusy marinade, coriander and chilli flakes only enhance this. The lobster roll that I had been hankering for certainly did not disappoint, in fact it really was quite special! Packed with beautiful lobster meat, spicy mayo, moreish chicken skin crisps and served with salad and melted butter. It was everything I had imagined and more. Perfect for a posh picnic on the beach. It was the Prawn, Scallop, Chorizo and Chilli flat bread that really blew me away however. The light fluffy and flavoursome bread, generously topped with skewers of part-peeled plump and juicy prawns and juicy buttery scallops, a crunchy chunky slaw, all drizzled with a garlic yoghurt to compliment the delicate flavour of the scallops. Served with a pot of green salsa which really set it all off with a bang. A phenomenal dish that had me savouring ever mouthful. Now that is how you do a lockdown lunch! We loved everything about our takeaway picnic. We do miss the unique dining experience we have come to know and love about Riddle and Finns and we will be first in the queue when they do open again. I am super excited about their new beachfront home in the shelter hall. For now, the takeaway menu is every bit as good as you would expect from this Brighton institution and more so. The accessibly priced menu is incredibly well thought out and all the seafood is prepared so there is minimal fuss and mess when eating. I certainly know where I will be lunching for the next few weeks until lockdown is over. Indian SUMMER Award-winning authentic Indian cuisine from the comfort of your own home, and an exclusive preview of their soon to be launched innovative street food inspired menu.

W

ith some of the unprecedented challenges that the hospitality industry has been facing of late, I was beginning to be fearful that some of my favourite eateries might not be able live to tell the tale. I have however, been truly amazed by some of the stories I have heard from local restaurateurs about how they have adapted to survive, some having to rethink their whole business model. Indian Summer were one of the first in Brighton to adapt their regular menu so they could still provide delicious award-winning authentic Indian cuisine during a challenging time, and they have some very exciting plans for the near future when they are able to open to the public again. I recently tried out their takeaway menu and had the pleasure of speaking with Rob, local Jazz musician with the likes of Brighton based Soul City and Freakout, and restaurant manager, who gave me a sneak peek at his plans for the future of Indian Summer. Here’s how it went. Rob, who was more than happy to recommend dishes to suit our tastes when I called to order our takeaway, selected some vegetarian starters and a meat and a prawn dish as mains, as well as a selection of naan to soak up the sauces. There were plenty of spaces to park right outside on East Street and despite it being heart-breaking to see this normally lively restaurant devoid of customers, it was comforting to find all the recommended precautions are being adhered to. A pristinely clean makeshift serving area has been constructed at the entrance with a waiting area big enough to be able to keep your distance from the staff and other customers. Rob eagerly tells me all about their plans for when they can open, and they sound like music to my ears! He has been working with the chefs to come up with an exciting new menu concept based on Indian street food and, as I have mentioned, Rob is a keen Jazz musician, and plans to make full use of the grand piano sitting in the corner that regular customers will be familiar with, holding regular live music events. We begin our takeaway dinner with our vegetarian starters of Tandoori Paneer and Onion and Cauliflower Pakoda. The Paneer is lovely and creamy and had a lovely subtle flavour from the tandoor, served with lacha onion which went well with the accompanying coriander and tomato chutneys. The Pakodas are a delight, subtle and incredibly well balanced fresh and fragrant spices encased in a light crisp shell. Served with Tamarind sauce and Coriander chutney which were both lovely and perfect for dunking them in.

SUMMER For mains we plumped for Chicken Saumy, and Prawn Tamarind, with plain and lemon rice and some paneer naan. Everything was exceptional. The fragrant colourful cashew and tomato Saumy, packed with meaty chunks of chicken breast, had a lovely delicate flavour which somehow stays with you. The Prawn Tanarind was slightly spicier with sour notes from the ginger in the sauce was just sublime. The rice was cooked to perfection with a nice intensely fragrant aroma of its own. My favourite part was of course mopping it all up with the best naan I have ever tasted, perfectly spiced, with the paneer cheese giving it a lovely doughy texture to boot. Later that week we took Rob up on his offer for me to come down and try out some of the dishes from their new Indian street food inspired menu, and it really was a delightful treat. Everything we tried looked and tasted absurdly good. When the chef brought out the beef and chicken burgers my eyes nearly popped out of my head. They were truly a sight to behold and both tasted delicious. Juicy and tender tandoori chicken breast or beef patty stuffed with melted Paneer cheese topped with red onion, tomato, green and tamarind chutneys, and lovely crisp “pakora rings”, with a lovely creamy raita drizzled over everything in a lightly spiced bun. Both burgers were so tasty we devoured them in seconds. These were certainly the most innovative burgers I have tasted and highly addictive to boot. After a little breather, we were treated to Indian Summer’s fresh take on the quintessential Indian street food dish, Biryani. We tried both the shoulder of lamb and half chicken options and both really were amazing. The Biryani rice itself had some inspired twists, such as tangy passion fruit seed and crisp pakora shavings that added an extra dimension to this classic dish. It was adorned with either a succulent slow cooked lamb shoulder that fell apart at the slightest touch of my knife and melted in my mouth to release the full flavour of the meat, or half a delicately spiced and perfectly cooked plump, juicy and flavourful tandoori chicken that was just incredible. Both came with a lovely pot of creamy raita to drizzle or pour over the top to your taste, which did a great job of soothing everything down. We tried our very best to finish them, but after the burgers we ended up taking a rather sizeable doggy bag home with us, and it was every bit as good heated up the following day! I loved frequenting Indian Summer and getting the whole restaurant experience before the restrictions. It is a huge relief that they are offering a delivery and takeaway service so I can continue to get my fix. All the dishes travelled exceptionally well in the environmentally friendly packaging. If you are after treating yourselves to a takeaway, Indian Summer will surpass all expectations. I am super excited about the plans for the future of the restaurant and their soon-to be launched innovative street food and cocktail menu too, from what I have experienced so far, I am certain it will all be a huge success. or anyone who has not heard of them, Boho Gelato have been one of Brighton’s go-to foodie destinations since they opened their flagship institution in Pool Valley nearly twelve years ago, and have since opened a parlour on Ship Street, as well as more recently expanding to open stores in Worthing, Weymouth, and Swanage. This is the brainchild of founder Seb Cole, a former mixologist, who after spending some time in Italy eating a lot of ice cream, decided to utilise the skills he honed through creating intricate flavours in drinks. He would use these skills to make great tasting Gelato, going back to Italy to study the art before returning to Brighton to open up shop. Like many businesses in Sussex, the Boho parlours have been closed for several weeks due to the lockdown, and they have been forced to adapt to survive. However, the recent relaxing of the rules has meant Seb has been able to once again open his flagship Poole Valley store to the public. As soon as we heard this we were there quicker than you can say “ice-cream” to sample some exciting flavours from their ever-changing repertoire of seductive offerings, and to chat to Seb about what it has been like for him the last few weeks and his plans for the future. The fine weather we have been experiencing is probably the one thing that has made this lockdown bearable for us Brightonians. With the plethora of outdoor spaces available to exercise and the beach and South Downs on our doorstep, it has certainly made a difference to our lives. The sunny weather does, however, make me crave gelato, and beer… but mainly gelato. So, I simply could not wait to get back to my favourite ice-cream store, arriving bright and early just after the shop had opened.

Our style of Gelato has a very low air content, plus lower fat and sugar than other ice creams which means it is very dense and luxurious

Seb emerged from the back room as I entered the shop, apologising for not being out front to greet me. With all his staff furloughed, he must do everything from making the ice-cream to serving it up to the public. I asked what it has been like for him, and he was incredibly upbeat about it all “It’s been like going back in time to when it all started, with just me in my shop doing what I love, which is making ice-cream and being with my customers.” Sensing I was keen to get sampling, Seb loaded me up some pots of all sorts of weird and wonderful flavours whilst excitedly telling me all about the process of creating them. “Everything is made on site using only the best quality, locally sourced ingredients, a state-of-the-art Gelato machine, lots of care and attention, and a sensitive palate to make sure the Gelato tastes just right! Our style of Gelato has a very low air content, plus lower fat and sugar than other ice creams which means it is very dense and luxurious, but also fresh tasting and sweet.” As I tucked into wonderfully creamy and decadent flavours such as Sea Salt Caramel, and Blood Orange Nougat, I could not help but to nod unreservedly and make approving noises in agreement. In between scoops, I quiz Seb some more about what he has been up to since the shops were forced to close. It turns out he has kept himself very busy, by offering an ice-cream delivery service, which has been more popular than he could have ever imagined. You can now pre-order online from a wide range of dairy and vegan options and have them delivered to your door in 520ml tubs. As well as this, he has been busily preparing the store for social distancing with extra signage and a queueing system outside, which there is plenty of space for. Anyway, back to the task in hand of sampling flavours. Luckily, as it was so early in the day I was able to stick around and try a few before people started queueing outside. Boho Gelato are well known for their exceptional vegan offerings, made with water, soya and rice milk, in which they make over one hundred ever-changing options, one of which being the next one I tried, Chocolate Raspberry, which I could not get enough of. Bursting with flavour and degenerately creamy, I honestly could not tell it was non-diary. Next up, one of Seb’s more “out there” creations, Tonka milk tea. Inspired by a Japanese tea blend, it tasted a bit like marzipan with interesting vanilla high notes which certainly tickled my tastebuds. Seb’s tropical sorbet was possibly the most refreshing thing that has ever passed my lips, and the incredible Malted White Chocolate gelato instantly transported me back to hanging out in American style diners in my youth. My personal favourite, the “Truffle Shuffle,” a gloriously rich offering of hazelnut white and dark chocolate, had my eyes rolling into the back of my head in pleasure with each mouthful. As I speedily cycled home, high on the inevitable sugar rush that comes with eating my bodyweight in gelato I reflected on how apparent it is that recent events have by no means dented Seb’s passion for making great ice-cream. This visit has truly rekindled my love for the outstanding, diverse and exciting flavours you will only find at Boho Gelato, and I will most certainly be stopping by regularly in the coming months for more. Easy Tiger Slow cooking was certainly evident as the pork melted away, releasing the meat’s full flavour which went perfectly with the rich, intensely fragrant and colourful sauce that hit all the right notes.

A

relative newcomer to the Brighton foodie scene that has been on my list to try out since it was opened by the team behind The Pond and Chef Kanthi Kiran Thamma back in 2018 is Easy Tiger. I was kicking myself that I had not yet visited and thought I would have to wait until the lockdown was over before being able to try the innovative and explorative menu showcasing Kanthi’s passion for Indian street food that has already earned Easy Tiger a place in Brighton’s top 20 restaurants. This is not the case however, and it turns out Kanthi has been very busy providing a takeaway service to Brighton and Hove’s hungry quarantined residents. As well as this, I learned through the wonder of social media that every Sunday, he and his team have been providing hundreds of meals to our NHS heroes in the Brighton general hospital COVID 19 ward. This incredible act of generosity, and the fact that I was hungry and bored of my wife’s cooking, spurred me to give them a call to give their takeaway food a try, and I have to say it really was nothing short of remarkable! Although Deliveroo is an option, I opted to give them a call and collect myself, as everything on the menu looked so damn delicious, yet unfamiliar, I needed some guidance. I got straight through to Kanthi as they are currently operating a skeleton team due to social distancing measures. I can only imagine how hard these guys must be working, to not only keep the takeaway service going, but also provide all these meals to the NHS. Kanthi was more than happy to chat and recommend dishes to suit our tastes and dietary needs, insisting I try their KFC (Keralan Fried Chicken) as it is the most popular thing on the menu and is always highly praised. I take his advice on this and everything he recommends. After some clear instructions as to how to collect (go to the black door not the red) we jumped in my car and headed down. After ringing the bell, I was warmly greeted (from a two-metre distance) by Kanthi who seemed genuinely grateful for our custom. We chatted for a bit before the absurdly intense aromas emanating from the paper bags got the better of me and forced me to canter back to my car. I learnt that things have not been easy for Kanthi and the Easy Tiger team, but it has turned out to be quite a spiritual and emotional journey. Kanthi was visiting India and Sri Lanka in January when he learned of the virus. “It was one of the chef-curated food-centric trips that I lead around the subcontinent and getting to know Sri Lanka was such a revelation for a southern fellow like me. And then trickled in the news of this new virus with a fancy name and little did I realise, how life as we know it would cease to be the same ever again.”

Upon returning to the UK the disbelief that such an invisible threat could affect humankind on a global scale gave way to anxiety with the onset of lockdowns and worry about the threat to the future of the tourism and hospitality industry. However, Kanthi was determined to keep the kitchen fires burning, and after some initial supply issues, he launched a pre-order and collect service. This was a resounding success with his regulars and neighbours, and the praise and gratitude he was receiving from them for keeping the Easy Tiger kitchen alive made it all worthwhile. Soon after this he was contacted by my good friend Simon Livermore asking them for help providing food to the NHS staff which he was more than happy to offer. What started off as a one-off donation, escalated to a fully-fledged crowd-funded operation by Brighton’s restaurant association. At last count Kanthi and his team have sent over 500 meals to the NHS staff! Back home we begin as I would any Indian takeaway, by tucking into the Poppadum’s and dips which come in the form of a mixed bag of ready broken up plain and spiced crisps. The various chutneys varied massively in flavour, from the ludicrously sour lime-pickle to the sublimely sweet mango mint, and they were all absolutely delightful. I recall the exact moment we both realised we were in for something special; we were tucking into our starters, Punjabi Samosas and Keralan Fried Chicken. My wife was biting into a chunky crispy Samosa, stuffed to the brim with soft delicately spiced potato, dripping with incredibly rich and flavoursome Tamarind Sauce at the exact same time that I chomped on a chunk of seriously intensely flavoured tender Boneless chicken thigh pieces rubbed with ginger, garlic, rice flour and chilli mix and we looked at each other, eyes widened in disbelief. No words were needed to express our emotions as we greedily devoured the lot.

The main event was even more impressive! My wife plumped for Hybderabadi Bhagaar-E-Baingan, a sublime vegan aubergine and celeriac-based dish from Kanti’s hometown, which is cooked in a nutty sesame and peanut sauce with coconut and tamarind, cumin, coriander and garam masala. The aubergine was cooked to absolute perfection, soaking up all the wonderful flavours of the peanut sauce and melting in the mouth to release them all. My choice of Malabar Pork Curry from the coast of Malabar region, flavoured with ginger, garlic and aromatic spices, was nothing short of spectacular. Slow cooking was certainly evident as the pork melted away releasing the meats full flavour which went perfectly with the rich, intensely fragrant and colourful sauce that hit all the right notes. The light and flaky Malabar Parottas we mopped the sauces up with deserve a special mention too, perfect for soaking up the juices and quite delicious on their own! I cannot recommend Easy Tiger enough! Literally everything we had made us wish we had bottomless bellies, so we will be returning for more. Brighton favourites The Coal Shed are back with a ‘finish cooking at home’ menu, so you can now enjoy the very finest restaurant quality food in the comfort of your own home!

I

was deeply saddened recently when I cycled past Brighton’s prestigious multi award-winning steak and seafood restaurant and saw it all boarded up. Little did I know the talented chefs were working extremely hard behind the scenes creating gastronomical delights for their new takeaway menu “Coal Shed at Home” which was launched soon after lockdown. As soon as we heard this we were straight on the phone to them to order, drooling at the prospect of being able to experience the very best cuts of meat, prepared and expertly cooked by one of the finest restaurants Brighton has to offer, and from the comfort of our own home! Ordering is easy and can be done online via the website or by calling them direct. The website lists all available options, with a choice of Smoked beef Short Rib, Moroccan Shoulder of Lamb, or Roast Sirloin of Beef (Sunday only). All designed for two to share with dessert included, and cost a very reasonable £20.00 per person, with the option of adding a starter for £4.00 per person. We opted for the Short Rib, which seemed to be the most popular choice, being listed as soon to sell out this week. Wine pairings are on offer; however, I was keen to crack open a bottle of red I had been saving at home for just an occasion. Delivery is available for a small fee and is easily arranged, though we chose to collect as is not too much hardship considering we are local and have transport. I arrived just after three to find several bags of food being loaded into Brighton taxis for delivery. It was great to see the Coal Shed supporting local taxi drivers, who have obviously suffered from a sharp downturn in custom of late. The restaurant itself was still boarded up and no-one was allowed inside apart from the staff. Social distancing is always adhered to as customers are given a thirty-minute window to collect to avoid crowds gathering. Dinners are served in paper bags to customers waiting outside. As I wait for my food, I spot director of the Coal Shed and Salt Rooms Razak Helatat, and take the opportunity to find out what it is has been like for him since lockdown. “It is hard for any business owner to be told to shut with no idea when we will be allowed to open again, and I felt helpless being stuck at home… We definitely did not want to be a sleepy bird and just come out of hibernation at the end of it all. We needed to find a way to stay positive, stay connected with our customers, keep our talented staff inspired, and find a way to utilise the access we have to such amazing produce.”

He went on to talk about the challenges they have faced; “This whole concept was completely foreign to us, as we are used to serving great food freshly cooked to order. We had to ask ourselves questions like ‘how do we cook it?’ At what point do we take the cooking to before we leave it to the customer to finish off? How do we get it to the customer so that it is still fresh? I feel like we have been making good progress and have been humbled by the incredibly positive feedback we have been receiving.” I ask Razak what the future holds and he tells me they will likely continue with the Coal Shed at Home for the foreseeable future as they will likely not be allowed to operate at 100% capacity when they open again. When they do open the strictest hygiene measures will be in place (as they already are) and he has confidence in the venue and that his customers will feel safe. For now, they have a strong following and are happy to keep connected with the customers and keep their staff motivated and inspired during these tough times. As my order arrives, he tells me; “I am confident Brighton will bounce back. Brighton people love their independence and I am really proud of the community spirit we have and the support everyone offers each other here.” As I left with my bounty, I started to feel a little nervous about the prospect of finishing off the cooking at home. My culinary skills are almost non-existent, and my wife’s even worse. Our diet at home consists mainly of pre-packaged ready meals and jacket potatoes with a variety of toppings. My fears soon dispersed when I saw a card with super easy to follow cooking instructions that even I could not mess up! Once home, the dinner took about thirty minutes to finish off in the oven, the only thing I had to do was turn the potatoes occasionally and spoon some glaze over the immense hunk of meat once it had finished cooking. Simple! The accompanying carrots and spring greens you just bung in the oven till they’re heated. Instructions to serve are also included, which I follow to the letter, spooning some chimichurri sauce over the rib and scattering pickled red onions, chilis and crispy shallots “to taste,” which basically meant I emptied everything on top of our dinners.

Everything about our meal was exceptional to the standard one has come to expect from the Coal Shed, which has never once disappointed. The short rib had enough meat attached to feed an army. It had obviously been gently smoked for hours on end and given the care and attention such a meaty marvel was due. The meat literally fell off the bone at the slightest touch, but still had a satisfying texture, and the flavour was just immense! The Argentinian Chimichurri sauce provided a lovely additional piquant kick to the proceedings. They accompanying sides were very impressive indeed. The spuds were cut into hasselback style, so they soaked up all the rosemary butter they are cooked in. The Spring greens were cooked to perfection with just the right amount of crisp. The carrots were obviously slow roasted to provide a wonderful meaty consistency and incredible earthy flavour. The whole thing was jazzed up by the picked red onion, crispy shallots and chilis, which add some lovely visuals to the plate as well as enhancing the flavours and textures. We have to leave it a good hour to let it all settle before tucking into the dessert, which was a superb black forest gateau style chocolate mousse pot with a sublime mix of white, milk and dark chocolate mousses, each with their own consistency, and with cherries, crumbly chocolate biscuits and crispy chocolate balls thrown in the mix to make this a heavenly way to finish off a wonderful meal. It was so lovely to be able to to experience the luxurious food we have come to know and love from the Coal Shed during these crazy times. Everything about our meal was perfect and it was actually quite fun finishing off the cooking and serving it all up at home. I wholeheartedly wish the Coal Shed the very best with this new endeavour and thoroughly recommend every one of you order a meal from them at your earliest opportunity. Mercure Brighton Seafront Hotel Regency Relaunched

W

idely regarded as ‘architecturally unrivaled,’ Brighton and Hove’s magnificent seafront features a diverse plethora of outstanding buildings, ranging from the ultra-modern to the clean lines of Art Deco and the grandeur of the Regency period. Sat magnificently on the front row, with the finest views towards the theatre of the sea beyond is the Mercure Brighton Seafront Hotel, a proud example of Regency finery, and now, thanks to a £3 million-pound transformation, a hugely impressive 4 star hotel that celebrates the building’s and the city’s history through exquisite design. The Mercure Brighton Seafront Hotel has redecorated and redesigned all of its 116 guest rooms and communal spaces. The new look completed in mid-April and the hotel hosted a party for local press, influencers and businesses to celebrate the grand reopening on the 25th April, as well as inviting me, on behalf of Absolute Magazine to experience a stay in one of the newly appointed guest rooms. Few Brighton hotels can match the seafront location and the fantastic sea views and as I entered the hotel through the revolving doors, the sight I was greeted with was simply breathtaking. Visitors will not fail to be stunned by the dramatic changes made to one of the South’s finest listed properties. Dominated by a grand sweeping staircase that visibly winds round and round to the top of the building, the redesign of the nineteenth century hotel encapsulates the perfect blend of exquisite Regency splendor, with a dash of quirky Brighton charm. Led by a local Hove based interior designer, Helen Hooper, this listed building has had no structural changes made, but the bespoke refurbishment has introduced modern décor throughout, with elements of Brighton’s rich history seen in every room. A colour palette of inky blues and welcoming whites has transformed the lounge and reception area. The bespoke carpet is set to make waves

with visitors, as design inspiration was taken from the ripple effect of the tide going out from the sea – which is only a few yards away from the hotel’s doorstep. The lounge has been transformed into an impressive gallery showcasing the finest creations from local artists, really putting Mercure at the heart of Brighton’s buzzing art scene. Clearly proud of their setting, the staff welcome their guests with warmth and are keen to ensure their stay is as comfortable as possible, exceeding all expectations. Iain Lindsay, General Manager at Mercure Hotel Brighton Seafront commented: “The modernisation of the hotel will make the Mercure a thriving cultural hub for guests, the artwork that can be seen all around the hotel shows how proud we are to be a part of the busy Brighton community. A lift is available to assist with those heavy cases but I decided to take the atmospheric and majestic staircase, leading me up to where the three floors of bedrooms have been transformed, brimming with charm and providing an ode to the era, whilst modern finishes bring all the creature comforts for a memorable stay. The bedrooms are spacious, comfortable and calming - a serene retreat away from the buzzing beachfront. The décor takes inspiration from Brighton’s infamous beach, with seaside imagery and textiles adorning the newly refurbished bedrooms, celebrating the quirky history of the surrounding area. Taste buds tingle with diners being able to choose from many delicious options Check in was swift but attentive, with the team happy to make local recommendations, take bookings for the restaurant, arrange your morning newspaper and book you taxis. A lift is available to assist with those heavy cases but I decided to take the atmospheric and majestic staircase, leading me up to where the three floors of bedrooms have been transformed, brimming with charm and providing an ode to the era, whilst modern finishes bring all the creature comforts for a memorable stay. The bedrooms are spacious, comfortable and calming - a serene retreat away from the buzzing beachfront. The décor takes inspiration from Brighton’s infamous beach, with seaside imagery and textiles adorning the newly refurbished bedrooms, celebrating the quirky history of the surrounding area. Firstly there are the Classic Bedrooms which all offer supremely comfortable beds, HD TVs, complimentary high speed WiFi, en suite bathrooms, hairdryer and tea/ coffee making facilities. The Privilege Rooms are upgraded bedrooms which sleep two people, with a handful offering sea views and others located within the brand new Mews. As well as offering all the creature comforts that the classic rooms offer, the 16 sea view rooms have been updated with a plush grey silk effect décor, beautiful glass and brass chandeliers and antique mirror glass on the desk and bedside tables. If you are looking to really push the boat out, then the Superior Bedroom is the best in the hotel, with sea views and balcony. Featuring a spacious room complete with HD TV, complimentary high speed WiFi, Nespresso coffee machine, robe and slippers, this is the perfect luxury seaside retreat. If you can pull yourself away from the comfort of your bedroom, then be sure to take a trip down to the ground floor and visit the Goulty Restaurant which, following its full refurbishment, is unrecognisable with splashes of jewel colours sapphire, emerald, and amber adorning the walls. Comfortable and plush seating provides the perfect perch to gaze out to sea through the vast windows that provide exquisite seaside views. It’s not just the furnishings that have been given an update, a new food and drink menu has launched that reflects the culinary delights that can be locally sourced in and around Brighton. Taste buds tingle with diners being able to choose from many delicious options on the menu from the Chef’s signature locally caught beer battered fish and chips, to the Brighton Deli Burger, made with Sussex Cheddar – for those with a sweet tooth finishing up with the signature Brighton Rock Knickerbocker Glory.


Take a stroll across to the other side fo the hotel and you’ll find the modern and sophisticated Norfolk Hotel cocktail bar whose bar front is the new home to pieces from the iconic West Pier, which were salvaged from the fire that destroyed it almost two decades ago. The bar offers a fine selection of white, rose and red wine from around the world, as well as a choice of Champagne & sparkles to enjoy in the stylish surroundings of the newly renovated NH Bar. Relax before or after your meal, soak up the tranquil atmosphere or use it as the perfect place to meet friends. After a peaceful night’s slumber, I found the perfect start to my day in the decadent setting of the building’s original ballroom, where I enjoyed a delicious continental breakfast of pastries, cereals, ham and cheeses. Also on offer is a delicious traditional breakfast including a selection of egg, back bacon, Cumberland sausage, black pudding, vegetarian sausage, sautéed mushrooms, grilled tomato, fried bread and baked beans. The Ivy has seen international success; starting in London’s iconic West End in 1917 and lasting the test of time due to its famed integrity, history and its delivery of both stellar food in tandem with exceptional service. Extending across London, Britain and Ireland in recent years, it has spread its wings and solidified itself as a restaurant giant and glitterati hotspot with stars of the golden age of cinema such as Marlene Dietrich being among previous guests.

I

t started with The Market Grill in Covent Garden, and the rest was history. With over thirty different restaurants, cafés and brasseries, The Ivy would be deemed by most as unstoppable. But no one was prepared for the COVID 19 outbreak, leaving even the restaurant juggernauts quaking in their boots. Despite the catastrophe of this year, The Ivy has now reopened its doors as of July 4th and is ready to wow us again as it has done for over 100 years. I was introduced to the chain more than 20 years ago, and have remained a huge fan ever since. The pairing of the cuisine with unparalleled glamour to me is inimitable. When it finally came to Brighton, I jumped at the chance to review it, especially to see just how well they could encapsulate the conviviality of Brighton with the opulence of a quintessential West End venue. But its journey to Brighton was a rocky one.

Speaking to the Executive Director of operations Yishay Malkov, he enlightened me about the mercurial essence of The Ivy, and how each venue has its own identity while maintaining the quintessential Ivy values and spirit. Locations are very carefully thought out. Brighton was an ideal place given its chic seaside style, but the meticulous work necessary in order to strike the perfect balance such as the backdrop for the venue took a considerable amount of time. Eventually, it of course found its home in the very heart of Brighton, the lanes. And just like that, a grade II listed old post office was transformed into a chic but vibrant all day brasserie.

The Ivy in the Laines sits within the building that used to be old post office, which has been brought back to life as such a colourful and opulent place. Though so many establishments have found their home in the legendary lanes throughout the years, something about The Ivy settling down here was particularly exciting. I knew from the moment you see the green canopies, it’s clear this is something special.

The Ivy experience begins from the moment you lay eyes on it; but you’re truly transported into a unique, sleek and glassy world upon entry. With the iconic Ivy green omnipresent, from the very outset you are part of this one of a kind experience. Not a detail goes untouched, with fastidious approach to all components imaginable. From the grand glass doors serving as the portal to this glamorous green world to the impeccably dressed hosts wearing cropped cream jackets with exquisite tailoring. The essence of the original Ivy is well and truly here in Brighton. The decor is vibrant, charming and celebratory. It is a sensory experience. The masters of crafting a totally unique ambience, they effortlessly make a building with high ceilings and 6000 sq ft of space seem intimate. Larger booths and smaller corner setups are expertly placed to make the most of the space and maintain a sense of cosiness. The staff exude charm and confidence. They are as enjoyable to look at as the decor. The burnt orange booths create an effortless combination of warmth and elegance. Despite it being such a vibrant and buzzing place, guests feel relaxed at all times. This unrivalled atmosphere allows one to truly live in the moment and just be. The waiters are delightful as they were insightful. Upon visiting, the waiting staff always take time to describe the different dishes with immense pride and pleasure, happily answering any queries one may have had. With the knowledge of the intensive training all staff members do, including tasting the entirety of the menu, guests can afford a huge amount of confidence in the team. The waiting staff are as knowledgeable as they were passionate about their work, and this creates a great sense of camaraderie among the team. The menu has a fantastic amount of variety, from Eggs Florentine at dawn to Grilled Whole Lobster at dusk. There is a sense of ambition and excitement with unconventional dishes but also a wonderful sense of familiarity with classic restaurant staples. The cocktails, no exception to the rest of the experience, are refined and perfectly crafted. Be sure to start the evening with a superb English spritz which showcases the mixologist’s expertise, and be sure to take a recommended as to which wine would compliment your meal. When we visited, we opted for the Martinborough, craggy range Sauvingon Blanc as highly suggested by the manager as we had both chosen the white fish. To no surprise, they were a match made in heaven. To begin, I had the yellowfin tuna carpaccio with tomato, watermelon, ponzu dressing, miso Mayo and sesame. If you’d like to know *just* how much we enjoyed it, I will admit that I returned half a dozen times over several weeks to relive the experience, although swapping my spritzer for a much-needed flute of The Ivy champagne. Always reinventing their star dishes, this dish has been updated to include cucumber, baby basil, apple, jalapeño and avocado sauce which I’m keen to try when I return. My dining partner ordered the tempura prawns; crunchy fried Nobashi prawns with pickled mould, cucumber, edamame and a matcha tea sauce. Texture wise, they provide a perfect balance and did not leave her overpowered and reluctant to eat her next course. The newest update of this contains wasabi, miso sauce and spicy Sriracha.

For my main, I chose the blackhead cod fillet; baked in banana leaf with citruspickled fennel, grilled broccoli and chill yuzu mayonnaise. The texture was fantastic and overall the dish was superb; with a truly succulent flavour and evidently outstanding cooking. Though the Ivy is renowned for so many different dishes, I simply cannot recommend this dish enough particularly if sea food is your bag. The fact it remains on the menu unchanged speaks volumes to its popularity. My fellow diner also went for the fish, which was an oven roasted sea bream with lightly spiced aromatic fennel. Although this is no longer available, I have heard rave reviews from friends about the monkfish and prawn curry which is a stellar alternative. Olsi was the name of the chef who prepared our food, and given the electric atmosphere we knew that everyone was immensely enjoying the cuisine. Though the first two dishes were nothing short of divine, Olsi’s magnum opus was the melting chocolate bombe. Luckily, this is still on the current menu. Our jaws hit the very beautiful floor when the waitress arrived; pouring hot caramel sauce across the crisp shell to reveal a honeycomb centre with decadent vanilla ice cream. It was craftsmanship Willy Wonka himself would have envied. We ended the night with a cocktail at the bar, which was a wonderful excuse to even further marvel at the interiors. Even the toilets are known for their beauty; with the gold flowery walls becoming an essential photo op for keen Instagram users. It is incredibly rare that somewhere can creative a simultaneous vibe of exclusivity and inclusivity. Each detail is opulent and grand but the atmosphere and the price point is welcoming to all. In the wake of Covid-19, The Ivy has made a formidable commitment to prioritise the wellbeing of patrons over anything else. This includes thermal cameras, tracking software for all employees and professional deep cleaning and disinfecting on a daily basis. One can only assume the thermal cameras are luscious green and diamond encrusted, I intend to go back soon to find out. W

hat a strange year we have had so far. Festivals

have been cancelled, holidays cancelled, weddings cancelled. Despite this we need to remind each other that 2020 has not been cancelled. The seasons of summer, autumn and winter will come and go as they always do, and this year will very much continue to soldier on as it always has and therefore so must we. Over the past year, our team of writers and reviewers have searched the county and it’s surrounding towns to discover the very best of Sussex and beyond. Now, as we take a look back at our encounters and expeditions, we have narrowed down this extensive list to bring you our guide to the ultimate must-visit places for you to add to your bucket list!

2020 has so far been challenging and quite different from everything we could have imagined at the start of the year. This period may have been a stressful,

tedious, and sad time for many, and possibly physically, emotionally, and mentally draining. It will however be a time of much needed change. Challenging periods in our lives can often symbolise the start of changing circumstances which can

be incredibly positive if viewed with mindfulness, openness, and optimism. This time of change will be an accomplishment for many. Those that turn challenging situations in to opportunities, and those that try to grow and learn in times of

turmoil will thrive and accomplish so much. Individuals, families, and businesses will evolve and adapt to find new ways of behaving, living with each other, thinking, and working together safely.

We are now in the glorious summer months, so let us use our time wisely to be

with our families and friends virtually and with social distancing and get outside safely as much as we can. Let us prepare, plan, and look forward to the future

and try not to be disheartened by our cancelled plans. We want to look back and realise we made the absolute best of this challenging time and know that we

London Parks and Green Open Spaces. It is so important to still enjoy the outdoors while observing social distancing, but do also be mindful of observing the changing of the seasons which help you realise there is so much beauty in our surroundings to be grateful for, as long as we slow down long enough to notice it.

It is vital we all visit parks and outdoors spaces regularly for recreation and exercise to help boost our physical health and mental wellbeing. However, the toilet situation for many of us has become somewhat of an issue when visiting outdoor places during the Covid-19 epidemic. Now thankfully more parks and public open spaces with public toilet facilities are becoming available and re-opening. Phew!

The Royal Parks. The Royal Parks include Hyde Park, Greenwich Park, The Green Park, Kensington Gardens, Richmond Park, The Regents Park and Primrose Hill, Bushy Park and Victoria Tower Gardens. Currently, the car parks and the toilets in the Royal Parks remain closed, and the Royal Parks are asking Londoners and visitors to respect the open spaces they visit and adhere to the 2-meter social distancing. Two of my favourite parks are Greenwich Park and Richmond Park.

Greenwich Park is one of the single largest parks in London and is part of the Greenwich World Heritage Site with amazing views that overlook the Thames. This park is also home to the Prime Meridian point and The Royal Observatory, and certainly worth a visit as it is simply bursting with beautiful ancient trees and tranquil flower gardens. Greenwich park, London, SE10 8QY. Richmond Park is open but there is no vehicle access and the main carparks are closed. Cycling in the park has been limited to before 10am and after 4pm on weekdays only. The Richmond Park Golf Course has been re-opened since May. Dogs can be walked but need to be kept on leads, and the park cafés are open offering take-away refreshments., while the children’s playgrounds and toilets facilities are also currently unavailable. Richmond Park, London, TW10 5HS. Crystal Palace Park. Crystal Palace Park is a huge leafy Victorian public park in South East London. The small farm, the play park and toilets in the park are currently closed, but access to the car park remains open. Crystal Palace Park. Thicket Road, London, SE19 2GA. Blackheath. Blackheath in Greenwich is a beautiful open space, great to visit with a picnic or to fly a kite on a windy day. There is limited metered car parking on the residential roads around the heath. Blackheath. London, SE3. Clapham Common. Clapham Common is 220 acres of green space and urban park in the centre of Clapham in South London with three ponds and a Victorian bandstand. The Common is usually a popular place for concerts and festivals over the summer months, however, it is still a pretty, large open green location great for picnics and with space to walk, jog or cycle around the perimeter. National Trust The National Trust has started to open parks and gardens in the UK and Northern Ireland, and these will require tickets to be purchased in advance to help with the social distancing measures. Entry availability and tickets to new locations and their carparks are being released every week online.

Morden Hall Park. The Morden Hall park and garden centre are open daily from 10am until 4pm. Unfortunately, the café, book shop and toilets are still closed. The car park has no direct access through to the park and this also closes at 4pm. No dogs are allowed except assistance dogs. Morden Hall Park. Morden Hall Road, Morden, London, SM4 5JD. Osterley Park. The beautiful Osterley Park is a Georgian country estate in the county of Middlesex in the suburbs of West London. Osterley House, along with the shop and play trails, are unfortunately still closed but the gardens are open to visitors. Dogs are allowed in parkland only and must be kept on leads. The toilets are also open and have baby-change facilities available. The garden and parkland on the estate boasts colourful manicured gardens, fragrant rose gardens, herbaceous boarders and ornamental vegetable beds, and there is also a picturesque lake, manicured lawns, wild woodland walks and an ancient wildflower meadow to be discovered. The garden is open 10am until 5pm and the park is open 9am until 5pm. The car park costs £7 per car per visit, and there is free parking for National Trust members. Pre-paid tickets are required for your visit and entry to the gardens, parkland, and car park.

Ticket prices: Adult ticket £12, Child ticket £4, Family tickets £20 and one adult family tickets are £12. Osterley Park and House. Jersey Road, Isleworth, Middlesex, TW7 4RB. Gardens at Ham House. Ham House is a 17th century mansion in Richmond on the banks of the River Thames. The House itself is infamous for its collection of antique paintings, textiles and furniture and is rumoured to be haunted. Unfortunately, this beautiful house, its café and shop have been closed but the garden is open for visitors, and the toilets and baby-changing facilities are also open. Entry tickets for your visit to the Ham House gardens will need to be booked in advance online via the National Trust website, and this includes members. The National Trust at Ham House also request that you arrive within your 30-minute time slot and then you are welcome to stay the whole day until closing if you wish.

Ticket prices: Adult ticket £5, Child ticket £2.50, Family tickets £12.50 and one adult family tickets are £7.50. Its fee entry for National Trust members, however, pre-booking online is still required as a designated arrival time slot will be allocated. Ham House Gardens. London Life... after lockdown

English Heritage. Eltham Palace and Gardens. English Heritage look after many historic buildings, prehistoric sites, medieval monuments, Roman forts, and country houses around the UK. Many of their sites will be back open from 4 July, and hopefully almost all the sites will be re-opened by August. Entry tickets will need to be booked in advance to be allocated a specific visiting time slot and visitor numbers will be limited. Each site will have special measures in place to adhere to social distancing.

Opening in July will be the 19 acres of magnificent gardens of Eltham Palace in South London. This is a wonderful time to visit the beautiful art deco style gardens which were formally a medieval estate and Tudor residence, full of pretty rock gardens, stunning rose gardens, herbaceous boarders, a picturesque moat and also London’s oldest working bridge. The café is open for take-away drinks and light refreshments. The Palace itself is unfortunately closed but the toilets are open. London Walks. As we all know walking is great exercise, and there are plenty of walkways in and around London that are all free and a great way to see the sights and famous landmarks of our capital. Visit the TFL -Transport for London website for heaps of walkway route inspiration and for maps across London. Below are just a few Absolute London favourite sight-seeing walks. www.tfl.gov.uk/modes/walking/top-walking-routes The Thames Path river walk. This infamous Thames Path river walk will take you past some of London’s most iconic landmarks on both the north and south banks of the River Thames from Hampton Court and Richmond all the way down to the Thames Barrier and the River Darent. The most central and infamous sights you will pass are Syon Park, Hampton Court Place, Kew Gardens and Chiswick Pier, Kingston Pier and Teddington Lock. The further along on the walk in central London you will spot the Houses of Parliament, Tower Bridge, Westminster Bridge, The London Eye, and Canary Wharf, then as you walk along down the river you will pass the Tate Modern, The Globe Theatre and the Millennium Bridge. The walk then snakes its way around Borough Market, past Southwark Cathedral, by the Shard and then on towards the end of the path walkway are the sights of Erith Marshes and the Thames Barrier. The route of this 75.9-mile walk is divided in to 4 sections on both the North and South Banks of the River Thames. The signage for this popular walk is marked with the Thames Path National Trail symbol and beyond the Thames Barrier you will find the route marked with the Thames Barge symbol.

North Bank: Section 1: Hampton Court to the Albert Bridge, Section 2: The Albert Bridge to Tower Bridge, Section 3: Tower Bridge to Greenwich and Section 4: Greenwich to the East India Dock.

South Bank: Section 1: Teddington Lock to Battersea Park, Section 2: the Albert Bridge to Tower Bridge, Section 3: Tower Bridge to Thames Barrier, Section 4: Thames Barrier to River Darent. London Loop. The London Loop is a huge circular route mapped all the way around the outskirts of London and split into 24 shorter flat or gently sloping walks from Erith station to Purfleet. Popular areas in these walks are Bushy Park, Farthing Downs, Hall Place and Hainault Forest Country Park. The Jubilee Greenway. The Jubilee Greenway is the 60km walking route created to mark the Queens Diamond Jubilee and the London Olympic Games in 2012. Just a few of the famous sights to be seen and areas to visit on this popular walkway are Kensington Place, Victoria Park, Olympic Park, Greenwich Park, HMS Belfast on the River Thames, Buckingham Palace, and Regents Park. This route is split into 10 shorter walking routes which are marked by iconic glass paving slabs. Cycling in London. Over the summer, TFL - Transport for London are planning to create more space on London streets for cyclists and pedestrians to travel around London safely while social distancing. Strategic cycling networks are being created and London town centres will be improved to help safer cycling and walking. Dulwich Park, in the borough of Southwark in South London is a 30-hectare park with plenty of scenic open space, with a great cycle route, which makes it the perfect place to visit for a bike ride and a picnic. The tennis courts, cricket ground and fishing facilities are also open. Dulwich Park. College Road, London, SE21. Regents Canal. The Regents Canal cycle route offers a scenic bike ride along the Regents canal in Camden and through Regents Park. he British summer is not famed for its blistering sunshine and consistency, but regardless of whatever hand we are dealt with, each setting embellishes the Darwin Forest in a unique and beautiful way. There are a large still a range of activities available with social distancing and Covid measures incorporated. If you’re looking for an outing to fit the whole family during the COVID era, you can take part in instructor led activities such as archery and body zorbing. Guest led activities available include tennis, mini golf and an array of woodland walks and cycling trails. Though all lodges are self-catering and come with stellar kitchens, no worry if you’re not keen to cook after your spa day. Foresters bar and restaurant is there to save the day, or Explorers café if you’re only after a light bite. Both are still open during this time. If you’re not feeling very Nigella but still want to take advantage of the al fresco veranda chez vous, you can take your food from Foresters to go; cooked with the finest local produce and freshest ingredients. Just outside the holiday park you’ll find a whole host of quaint market towns such as Ashbourne, Bakewell and Chesterfield which are easily accessible. Though they all host extraordinary seasonal markets, Bakewell is one to visit in particular as it’s known as the birthplace of the tart. Make sure to pay a visit to the Original Bakewell Pudding Shop! Your tastebuds will thank me kindly. An array of picturesque villages can be found in the Peak District. These villages are home to some dreamy and delightful tea rooms and authentic country pubs. The most wonderful aspect of visiting the district is that these villages are often connected by footpaths and cycling trails which in themselves are an adventure. The local area has a heap of family attractions and stately homes to visit. But for those who are feeling their inner Lara Croft, you can take a cable car above the Derwent Valley and explore the underground caverns or just behold the breathtaking views. If you’re a museum buff, the Crich Tramway is the perfect place. Reopening on July 11th, the museum showcases over 80 trams built in the 1800’s and is set within a period village containing a cafe, a pub, an old style sweetshop and tram depots. The museum’s collection of trams are found laden throughout the village setting with visitors transported to the past. For those looking for something that will leave you on the edge of your seat, quite literally, the one and only Alton Towers is just 10 miles away with a multitude of rides to fulfil your inner dare devil. Note that you will have to pre book at this time. Alternatively, Gulliver’s Kingdom can be found in Matlock Bath and is a great alternative for younger children. Social distancing measures have also been implemented there to ensure safety for all visitors.

Just outside the holiday park you’ll find a whole host of quaint market towns such as Ashbourne, Bakewell and Chesterfield which are easily accessible. Only 20 minutes away by car is Chatsworth House, a world-famous home. In addition to viewing the famed residence, there is also a large playground for children and farmyard animals to befriend. You can also avail of the fantastic farm shop so you can take home some of the Chatsworth Estate’s wonderful produce. Unfortunately, Haddon Hall which is a close by attraction for Pride and Prejudice fans is closed at present but hopes to reopen soon. Haddon Hall recommends that all visitors in the meantime visit the Summer Mercatum Artisan Markets held in Haddon’s private organic parkland. For those visiting after reopening, Haddon Hall made a number of appearances in the Pride and Prejudice film as well as Jayne Eyre and other period films. Dating back to the 12th century, it has been described as “the most perfect house to survive from the middle ages”. Overlooking the River Rye, it is a sight for sore eyes and is situated within its elegant Elizabethan terraced gardens. ovid-19 was the guerrilla attack no one saw coming, but has been particularly detrimental to the nightlife and

hospitality sector. This has not only devastated so many

working in the sector due to people losing jobs and livelihoods, but

each and every one of us has been deprived of much needed spaces to socialise, decompress and connect.

Karl Ryan is the Group Manager of the one and only Shoosh,

Brighton’s super club, plus the infamous music venue The Arch, the grassroots Hideout and some of the biggest music festivals on the

area. Absolute Magazine spoke to him about the rollercoaster Covid experience for himself and the business.

What has been the biggest struggle throughout lockdown ? Worrying about the future for our business, jobs, suppliers, and so for. Still with no news about when nightclubs can open, we are playing a waiting game. Thankfully we have been able to open two of our venues, one as off license and now Shooshh for our day trade summer business. The government furlough scheme has been a massive help for our staff, who all live locally and with quite a few of them solely depending on the part time income to live. We have been keeping in touch with our staff, especially over the first few weeks, which was a hard time for most people. It’s all about looking after your staff and showing them that you care. How can Brighton bounce back? Brighton is like no other location in the UK. From small pubs and bars to our VIP Club, Shooshh, to live music venues, Brighton always has something going on. Just the other day there was a singer and drummer on the beach performing to people late at night. Brighton is a one off. That is why I believe so many people come to the area. Brighton can come back just as strong as long as we all support each other and work together. It’s not going to be easy, but together we can come back.

What are you most looking forward to when Brighton returns ? Brighton being back to the best city in the country; vibrant, people socialising, meeting up again, music playing, businesses open and busy. Although it is going to be tough, the new norm is here for a time. But by working together Brighton will be back!


Have you taken anything away from the COVID experience ? It’s a situation that has allowed us to stand back, learn, think outside the box and move our business forward. Turning the font of The Arch, which is a fantastic music venue where Fat Boy Slim performed for his charity just before lockdown, into an off license has allowed us to provide our staff with a source of income. It’s helped us provide our local suppliers with trade at a time where they were all very worried about the future. It has been a time where local suppliers have stood up and worked with places that are open for the best for all parties. COVID made it happen and now we have a second business within a business. Now more than ever people are desperate to hit the tiles again, but wanting to go out unfortunately won’t make the virus go away. So: where can people go, what can they do and what measures are being implemented to ensure punters have a safe time as much as an enjoyable one?

Let’s start with the clubs:

Shoosh nightclub Shoosh is the crown jewel of Brighton clubbing, rightfully earning its spot at the top with a swanky upmarket experience and unrivalled VIP edge. A £1 million refurb solidified Shoosh as the Rolls Royce of the city with contemporary interiors, lavish VIP areas and a dance floor like no other. Past performers and party goers include none other than Snoop Dogg and Jason Derulo. But make no mistake, it is convivial and welcoming at is is luxe, with a feel good vibe throughout. Shoosh is usually wall to wall with clubbers, so most would be scratching their heads as to how such a club would adapt to Covids rules. But Shoosh have you covered. Shoosh are bringing you pure Ibiza magic; transporting you to the iconic party island with their new opulent beach terrace refurbishment. Patrons can now avail of Cabana beds where you can relax in the height of comfort by the sea side with your nearest and dearest. There are a variety of packages available to cater for whatever occasion you desire. Shoosh have also added brand new photo boards and a massive tiki head on the terrace to spruce up the venue for the wave of eager summer punters. To get business back in full swing, they are reinventing their iconic club nights. Runway Fridays and Glam Saturdays will move to the terrace where you can take in the stunning panoramic sea views with the music and atmosphere Runway and Glam are known oh so well for. With free entry, Shisha services and the best view in town, these nights are not to be missed. 2. The Hideout The Hideout has only been open for one year now but has quickly established itself as an up and coming hot spot for DJs and Brighton nightlife folks. It’s one of the south’s newest grassroots music venues, but also offers VIP services such as private tables for those more special soirées. Being such a new venue meant a particularly tumultuous time for the newly established music joint, but they have returned to the scene with socially distanced sumptuous cocktails and Shisha. This spot is definitely one to swing by.

3. The Arch The Arch is a cherished treasure among Brighton venues, and it has not been around for decades by coincidence. They have curated stellar nights over the years featuring music royalty such as Fatboy Slim, Carl Cox and Annie Mac. Not only is it loved for the music glitterati it hosts behind the decks, but it is respected for giving space for fresh faces to broadcast their talent. Stars both old and new have the pleasure of playing on one of the greatest sound systems in the world, a monster set up of twelve twenty-one inch speakers that mirrors that of the legendary Space Ibiza. With a performance stage at the venue, you can guarantee a spectacle at The Arch. With reinvention coming naturally to a venue that has been open for so long, The Arch have risen to the challenge again by giving the venue their biggest face lift yet. Two rooms over two floors have been converted to three, as well as other exciting new additions to the venue. And if The Arch doesn’t scrub up for you, you can head to their sister venue The Hub which is known in its own right for party starting almost as much as its older sibling.

Moving on to festivals. Gosh, remember those.

1. Land Beyond Festival A newcomer to the festival circuit, Land Beyond was due to celebrate its second year before Covid struck. However festival goers will have much to look forward to as the festival has been condensed into one day but with a larger space and capacity. This is sure to provide an even more electrifying atmosphere. With a huge scape of sounds from grime star Dizzee Rascal, house music giants Abode and underground bass juggernauts SuperChargedLand, there is something for everyone to whet their musical appetites. Beyond Festival has been moved to the 2nd of May 2021 to the disappointment of eager attendees, but as they say hunger truly is the best sauce.

2. Noughty 90’s festival This festival was due to debut this year before the festival circuit came to a grinding halt. Celebrating the best of the 90’s, this festivals aim was to bring us all back to good old days and simpler times. It was set to be a whopping success before Covid intervened. But fear not, the festival has already been given a new date in 2021. 90’s favourites Fatman scoop, S club and many more are set to take to the stage at Brighton’s Waterhall. Not only providing a knockout musical experience with four huge stages covering a multitude of genres, there are also funfair rides, an arcade, a roller disco and exclusive VIP areas. Falling on the May bank holiday weekend, this is sure to be one for the books.

3. Boundary Boundary holds the title of Brighton’s biggest festival. It has grown consistently since its debut 5 years ago, with each year with 2019’s celebrations bringing 15,000 guests. Names that have taken to the stage include Chase and Status as well as Craig David, and 2020 was due to be the biggest year yet. But no one was left untouched by the pandemic and its cruel consequences. The festival has been moved to 2021 in accordance with government guidelines, but that gives another year for the team to cook up an even more sensational celebration. Boundary consists of three equally epic stages as well as boasting a vintage fair and delicious local food. It’s due to close festival season in Brighton 2021, so this is one to save your pennies for if you haven’t already purchased a ticket. TEDDY EDWARDS It’s not very often that one gets the opportunity to have a casual conversation with the owner of a successful and extremely busy business. So, when I got the chance to quiz Alex at Teddy Edwards on the success of his ‘brand’, I leapt at the chance!

O

ne of the things I love most about going into the barbers is the

atmosphere. That heavy scent of hair related products, mixed with the low hum of one to one conversation between two men - one the client

and the other the professional. It’s one of the few places, in my humble opinion, where men get the chance to relax and push aside

the day’s stresses knowing that judgments won’t be

passed for the next twenty to thirty minutes. And to me, this is exactly what Teddy Edwards represents. Forget about the ‘Wham Bam Thank You Mam’ you might be used to at other establishments, because Teddy Edwards isn’t a place to just get your hair

cut, it’s a place to take a load off, and if you’re lucky, have a beer. Seriously, a beer. So, what could be

better than having your hair cut, and then casually being asked if you fancy a cold one? Ok, I could

think of something, but let’s not forget where we are…

After the customary greetings and a quick

chitchat, I got myself seated, and asked Alex what

Teddy Edwards meant to him. The simple answer

was, “a passion”. And folks, that’s what it’s all about. You can see it in the way the staff are happy to be

working, and the way the place has been decked out. It’s snazzy, it’s fun, and dare I say it, it’s on trend.

The entire place, from the bronze mirror swivels and the taps, down to the Japanese barbers sign which stands as a glorious centre piece have all be sourced by Alex himself, and as if that wasn’t enough, Alex told me he’s put his own blood sweat and tears into the actual renovation of the building too! “I was doing a full day at our shop in Hove, then coming here and laying floorboards till ten in the evening…” To me it makes sense though, Alex has that vibe about him. A can-do attitude that gets things done, which is why when you ask for a buzz cut and a beard trim you know that you’ll leave as clean as a whistle, and as sharp as a thistle. You’d be forgiven for thinking that all this is going to come at some unaffordable cost. But, you’d be wrong. Given I spent a good forty-five minutes in the chair, (and a right royal treatment to boot) it only cost me £22… Yes, that’s right, £22. So, in a city where the prices of just about everything in the service industry are sky rocketing it’s good to know that such a swish establishment as this can cater to all. Young and old. When I told Alex that nearly everyone has heard of Teddy Edwards, he simple smiled and looked off into the distance for a moment, obviously wondering whether he should respond to my statement. After a second or two he resumed my beard trim, and said quietly to me that “I don’t like to boast, but we’ve won several awards over the past couple of years. Even up against some of the big names in London…” He went on to explain that it’s not about beating people, but about achieving something. And that’s why I think his brand works. It’s not about getting one over on people and boasting about your success, but it’s more about how your business best represents you, and the place it’s in. And that’s the point. SARA ABBOTT She once lived the dreary London 9-5 life; with a company car, a mortgage, a wardrobe laden with grey business suits and a lack of joie de vie to boot.

“My child minder spent more time with my kids than I did. I was constantly drained” she said.

“It took me time to realise it was my hectic job that was weighing me down”.

Sara always dreamed of being an artist. She studied at the Camberwell School

of Art in the 80’s, but wound up in the dismal corporate side of London. After she was met with immense stress and feeling unfulfilled

Sara decided to trade in her pager for a paint brush just after the millennium and move to Brighton to follow her true passion.

“Back then, I did pretty well. In the start,

I created classic figurative works using

contemporary models. I regularly showcased my work at a gallery called Synergy, which is now known as The Bee’s Mouth on Western

Road.” Her love for animal portraiture began when she showcased a piece named ‘Diana

the Huntress’. “She was a tattooed lady with a German shepherd. A friend saw this and

requested I do a painting of his dog Badger for him. After someone else saw this, the

chain of people looking for animal portraits continued and the rest is history.”

She cites Brighton as her greatest source of

inspiration, and that the “utopia” at the coast was the catalyst for her freedom. “Moving to Brighton was a true mixing pot of cultures

coming from the quiet country village I was raised in. Over time I hopped from studio

to studio, initially sharing one with another artist on Farm Road.”

Sara has used a studio in Shropshire for some years now but is currently relocating further north. “There is always more to learn no matter how long you’ve trained, they don’t call it practice for nothing. But as long as you keep positive and creative people around you, you will maintain a love and motivation for what you do.” Though a savvy business attitude is a requisite she says, for Sara her business is about far more than filling anyone’s purse. “It’s about creating a balance between a robust work ethic and sincere passion that fosters a business to really grow. I’ve done portraits for 15 years now and I love each one of them. It’s imperative to truly listen to your clients vision. It means a great deal for them to immortalise someone they love so dearly, so I endeavour to make it the most wonderful experience I can.” Though certainly most known for her portraiture of our furry friends, she dabbles in a host of other works from wall murals to nude pieces; most famously her Alice in Wonderland piece on Middle Street several years ago. Sara creates a collection of works once if not twice a year. She says they are a “mix of more unregimented and colourful albums of work, using many different media in tandem with the more refined animal portrait staples.” She has also taken on still life projects saying it has “crept” into her work as of late. Being an artist of any kind requires a considerable amount of diligence and independence particularly in the concrete jungle of London. Artists often must take on the role of being their own biggest fan in order to persevere up the ranks. Though Sara is confident and says she does not actively seek external praise, she says a certain amount of it is still reassuring. “What is far more than any material gain is the joy I feel creating art for others. True fulfilment is the only thing that can drive you, but that’s not to say that appreciation from others is not rewarding”.

The most validating experience she had as an artist she says was when she took on the role of in-house animal portraitist at the Harrod’s Pet Department. “At the time, I said to myself that I must be doing a lot of things right”. Sadly, the pet department closed in 2014 but she says it was still an invaluable experience in her career. However, irrespective of the London glitterati she may have encountered working in such a place, she says that she treats each and every client like an A-lister; as every commission is it’s own unique and exciting exploit. Making personability a top priority of her practice, she visits each client before beginning her piece and has a photoshoot with them. “Right now I’m spending most of my time in the Pennines as I have a studio there. But I’m on the South Coast at least one week per month.” Being on the road it makes it easy for her to visit all of her clients she says. “It’s essential for me to visit them because being send a photo in the post is simply not the same. I spend time with the dog and get to know them a little bit before taking the photograph I will use to create their portrait.” She says this gives her an opportunity to observe the unique relationship between the dog and their owner. “What kind of atmosphere is it? This helps me capture their true essence and make the most authentic portrait I can”. Sara is as altruistic as she is artistic, and donates £100 from each commission to an animal rescue causes. Every six months she works with a different organisation, from the RSPCA, PSDA, Dogs Trust and lesser known organisations. She receives promotion from these charities which generates a lot of press. “I give back to dogs as much as I can, and I set myself a target of £2k per campaign.” Sara has utilised social media to foster her business. Though much of her work comes through word of mouth and is country wide, she still says this is an essential part of her profession. But she also uses social media to keep in touch with these clients, as working together can be such a memorable and emotional experience on both sides. With that said, she still believes it’s paramount to be as present in the “real world” as she is online. “What I do is such a personal thing. It’s lovely to keep in touch and to meet new people via the web, but it’s important I spend a lot of time meeting my clients too in order to really connect”. Sara says it is a “privilege” to capture these stories and make them last a lifetime. “No piece is more important than another, I treat each work as if it’s the most important commission I’ve ever made”.
