The Budapest Business Journal, with its prominent track record spanning nearly three decades, has always seen it as one of its goals to provide readers with a comprehensive overview of the best gastronomic venues across Hungary. Our Fine Restaurants magazine, first published in 2004, has long been one of the most reliable guides regarding the finest culinary destinations both in the capital and the countryside. The publication aims at informing locals, expats, and visitors alike in terms of the most recent developments on the Hungarian gastro scene. It is also important to note that our publication features a number of restaurants which are currently closed due to the coronavirus pandemic. We believe it is extremely important to support the catering industry in its efforts to survive the virus, and reopen successfully. But decisions of whether or not to close will also change over time; therefore, we suggest our readers contact their venue of choice prior to visiting to make sure that the restaurant is open, and under what conditions. The editorial section of this year's edition of Fine Restaurants takes a closer look at the year's highlights and helps readers in picking the best venue for each occasion, be it a business lunch, a weekend brunch, or a winding-down session with a cocktail or two at one of the capital's most exciting bars. Michelin-starred restaurants and exciting new openings are both featured in order to satisfy every lover of the culinary arts. For the first time ever, our guide features the capital's best Asian restaurants in a dedicated section. We also like to offer our readers a glimpse behind the scenes, looking at the latest trends in Hungary, while offering guidance with the help of some of the most influential expat CEOs in the country, who share their thoughts regarding topics such as their favourite restaurant for a business meeting, their favourite Hungarian dish, and their top choice of domestic wine. Foreword While the coronavirus pandemic cast a shadow on the global economy, and especially the catering industry, life did not stop for the Hungarian gastronomic scene in 2020. The Budapest Business Journal looks to provide an insight into the latest market developments, of which there are plenty, despite the extraordinary situation today, with the Fine Restaurants publication providing our readers with a valuable, comprehensive review of the most exquisite venues, both in the capital and the countryside. Over the past decade, the diversity of types of cuisine from which to choose has grown spectacularly, and that process did not stop this year. Besides a number of haute cuisine and traditional Hungarian-style establishments, there is now an abundance of high-end cocktail bars, Asian restaurants, and excellent locations for a business or Sunday brunch. The variety of these places now easily rivals the selections on offer in many European metropolises, with new venues popping up every month despite the pandemic. However, we would like to kindly ask our readers to contact their venue of choice before visiting in order to make sure that the restaurant is open in today's rapidly changing circumstances. Tradition and Hospitality in the Heart of the City Salt Budapest, located in the capital’s District V, was created on the foundations of traditional Hungarian cuisine, where chef Szilárd Tóth’s kitchen herbs and wild plants play an important role. The majority of these are collected by the chef himself in the countryside, the rest are produced by farmers. Everything in the dishes is freshly pickled and fermented. Poultry products come from Tóth’s own family meat business from Szatmár. Bread, a prominent part of the Hungarian food culture, is baked and served by Salt Budapest every day. Friendliness and hospitality define the atmosphere of a meal spent at Salt, as if it were a family dinner in the countryside. The chef’s table stands in the middle of the restaurant so that guests can easily have a few words with the hosts, the chef himself and restaurant manager, Máté Boldizsár; they often serve the dishes themselves. Salt serves home-made fresh juices and wines from the best European wineries, also offering natural wines alongside classics.

Aristocratic Hungarian Flavours in Buda Bobo Restaurant at Haris Park opened in April 2019, serving the traditional flavours of the Hungarian cuisine in a modern layout, paying homage to the history of its location; the chateau itself was already a popular meeting point for aristocrats more than a century ago. With its huge garden, 40 parking spaces, and separate rooms, the venue can be booked for events with up to 200 participants. The exquisite internal and external areas are accompanied by home-style flavours and the joys of everyday gastronomy. While the dishes are traditional, they meet the standards of the 21st century, with ingredients such as Austrian veal in the case of the Wiener Schnitzel, and Atlantic cod in the case of fish and chips.

Hidden Treasures at Arany Kaviár Arany Kaviár is located in the heart of Buda, surrounded by historical sites full of tradition. A kitchen team lead by chef László Kanász and the service team lead by Dániel Kovacsik work together to enchant guests and guide them through a gastronomic journey where they experience a variety of sensations, aromas and flavours. The wine list prepared by sommelier Ákos Varga is constantly bring updated with unique items. In September 2020, Arany Kaviár introduced a new drink pairing concept introducing “hidden treasures” of unjustly forgotten Hungarian grape varieties. The concept is also accompanied by special Hungarian short drinks. The restaurant has a first-class champagne selection, naturally, and a range of vodkas too.

Brunch Spots for a Sunday Getaway While the COVID-19 pandemic did impose a heavy burden on many eateries in the capital, the popularity of a good Sunday brunch is still unbroken, with several venues offering a chance for guests to unwind after a stressful week. And, when it comes down to it, is there a better way to close a week than relaxing in a calming atmosphere with soothing music, excellent food, and perhaps a glass of wine or a cocktail in hand? Restaurants Homely Brunch, French Style. Guests at A 'la Maison often ask their hosts a question: “This place is so homely, what does the name mean?". The name of the restaurant means exactly that: home, homely. “In 2014, when we opened our first small restaurant with my brother, Nándor Zöldhegyi, there were no breakfast places in the city centre,” recalls Andrea Zöldhegyi, owner of A 'la Maison restaurants. “We wanted to create a restaurant where our guests could start their day in a comfortable, cosy atmosphere. We started with the basics, our first dishes were Croque Madame, Croque Monsieur and, of course, Eggs Benedict, which has become our trademark. We have experimented with the recipe to create the perfect homemade English muffin, and we make it in the restaurant ever since.” The restaurant soon outgrew its original location, moving to Servita tér. Then, in the summer of 2020, the second A 'la Maison restaurant opened in Buda, at the bottom of the Hegyvidék Shopping Centre. Both locations offer a wide selection of breakfast and brunch dishes, seasonal chef offers and even cocktails. And the portion size? Well, the dishes such as Eggs Benedict are more than enough to fill one’s stomach until lunch.

The Best of Asian Restaurants
The ever-diversifying culinary scene in Budapest has spawned a number of excellent restaurants offering French, Italian, Middle Eastern, and Jewish cuisine at a level that that more than matches international standards, but perhaps one of the most authentic foreign cooking styles offered in Budapest is Asian. The Asian community in Budapest has expanded greatly in the past two decades, and the capital has its very own Chinatown in District X. Chinese Specialties From the Kitchen of a True Master Wang Mester Konyhája (Master Wang’s Kitchen) offers a truly authentic Chinese dining experience in Budapest’s District XIV. Restaurant manager Wang Qiang followed the path of his grandparents to become a professional cook and refined his talent in some of the best restaurants in Beijing. He believes that he can give some insights into the mysteries of the 5,000-year-old Chinese cuisine on both a theoretical and a practical level. Dear reader, please look no further for suggestions; we have asked some of the most influential expat company leaders in Hungary to share their experience about the best of the country’s gastro venues, their favourite Hungarian specialties, and their top pick wines.

Which is your favourite restaurant in Budapest? There are many that I like. Our family is a big fan of Asian food, so we many times find ourselves in Spicy Fish for a weekend lunch, or Tokio Budapest for dinner. My foreign guests I like to treat at the Bock Bistro or in the wonderful setting at the Workshop. And when it is time for a good meat dinner, we go to La Pampa. Do you have any favourites outside the capital? Most of my free time I spend in Budapest, so I don't have much experience of the options outside the capital. But I do remember visiting a wonderful place in Etyek called Rókusfalvy Inn; they had super food and wines. Is there a Hungarian dish you are particularly fond of? I have many favourites. The first, and the one that never fails, is duck leg with red cabbage and mashed potato. The second is rakott krumpli, which a Hungarian friend made and introduced me to. The third is lecsó tojással, which we made in one of our company summer events. And all these I’ve learned to make at home too. And not to forget the deserts: I really enjoy kürtös kalács. Which restaurant in the capital would you recommend for a business meal? For me, Bistro Déryne is an ideal place for a business breakfast or lunch, and sometimes even for a gathering with good friends just for good food and atmosphere. To mention a couple more locations, Fricska Gastropub on Dob utca is a wonderful spot with their lunch menus, and a third one would be Dunapark, due to the diverse menu and good location from the Váci Corridor. Do you have a favourite Hungarian wine or spirit? I don’t usually drink spirits, but wines yes. I love Hungarian rosé wines! Here I’ve had the best rosé wines ever, and my favourites are the Bock rosé or the Sauska rosé. Actually, it was here in Budapest that I learned to even drink rose wine to start with. From the white wines I like the Tokaji Furmint type, for example from Mad. An easy going tasty red for me is Takler Cabernet Franc, from the Szekszárd region.

Managing Director, Arval Hungary Which is your favourite restaurant in Budapest? Basically, I enjoy Hungarian, Italian and French (of course) cuisine, so I go to Pomo D’Oro, BorKonyha or Bock Bistro. And I am still discovering fantastic new ones. Do you have any favourites outside the capital? I don’t remember the names, but I was in Eger recently and had a good time in some simple and local bistro-restaurants, as well as in Tihany. Is there a Hungarian dish you are particularly fond of? I have been living outside of France for 15 years; I am very attached to discovering local cuisine and I especially enjoy Hungarian food. I have tried several types of goulash, depending on the season. Also, in winter I really enjoy walking the streets and tasting Kürtős Kalács. Which restaurant in the capital would you recommend for a business meal? I enjoy having “business breakfasts” and for this, Déryné Bisztró and Kollázs are at the top of my list. Do you have a favourite Hungarian wine or spirit? Wine is part of my [French] culture, as it is for Hungarian people, I guess. For white wine, I appreciate Furmint, especially in the summer, as well as the wines from Villány. For red wines, I have never been deceived by St. Andrea or Sauska. I recommend these when having dinner with friends or colleagues from abroad.

A 'la Maison Restaurants
A 'la Maison Buda is a new addition to Budapest’s culinary scene, having opened in the summer of 2020 at the bottom of the Hegyvidék Shopping Center. Just like its sister restaurant on the other side of the Danube, it offers authentic Frenchstyle meals, such as flat avocado roast or goose liver Benedict with Edam cheese and red onion jam. The cuisine in general can be summed up by a compliment the establishment received from a French gentleman: Everything tasted so good, as if he had visited his grandmother.

Tiszavirág Café
As one of Szeged’s most famous restaurants, Tiszavirág has gained an outstanding reputation both domestically and internationally. The building dates back centuries, as the Balassa House was built before the city’s great flood of March 12, 1879 and its walls and interiors are a piece of living history, with the establishment’s design adding a modern twist. The hotel and the café combine the duality of past and present. The café has been experimenting and developing constantly, meaning that it would be difficult to describe the cuisine in simple terms. Bistro elements are mixed with traditional flavours, and the taste of the River Tisza often appears in a street food format, but heartwarming home-style dishes are also on offer.
