Designing a Path for the Well-Being of Montana’s

In 2024, Alternative Energy Resources Organization (AERO), the parent nonprofit to Abundant Montana, celebrates its 50th year! For half a century, its members–farmers, ranchers, and community activists–have worked at the intersection of alternative energy, stewardship agriculture, and community food systems to promote a more sustainable Montana for all. Many resources, policies, and opportunities we rely on today exist due to AERO’s continuous education and engagement in novel and risky arenas. With such a legacy behind AERO, what is in store for the next 50 years?

In 1950, Montana produced 70% of its food supply. Today, that number is down to 3%, an unacceptably low number that puts the future health and wellbeing of Montana's citizens and communities at risk, especially for an agricultural state. So, moving forward, AERO and Abundant Montana are committing 100% of their efforts to growing a resilient and reliable Montana food system for all Montanans.

In celebration of this commitment and its 50-year legacy, AERO is dedicating its 2024 annual Expo to promoting the well-being of Montana’s future generations. Join AERO in Billings in October for their 2024 Expo: #FuturegenMT: Designing a Path for the Well-Being of Montana’s Future Generations.

The inspiration for this year's theme comes from Jane Davidson's book, #futuregen: Lessons from a Small Country. Jane helped pass the Well-Being of Future Generations (Wales) Act of 20151 and wrote the book to support others wanting to make lasting changes where they live.

Wales is the first country in the world to pass legislation requiring public bodies at all levels of government to improve the country’s economic, social, environmental, and cultural well-being. The Act requires published objectives and action across seven goals: resiliency, health, equality, cohesive communities, vibrant culture and heritage, global responsibility, and prosperity (including being responsive to climate change).

Encouraged by this example, AERO’s 50th Expo will invite Montanans to think creatively about what this might look like in the state.

Specific Expo session tracks will include:

• Montana youth-led initiatives on climate, food/ agriculture, Montana’s constitution, and energy

• Elder-led initiatives for the well-being of future generations

• Strategies for growing food in hotter, drier, less predictable weather

• Strategies for getting more Montana food on ALL Montana plates (in fact, 33% by 2033 – see pages 22-23 to read more on this initiative)

• Storytelling workshops that build ambassadorship and connection

• Workshops on creating compelling legislative testimony

In Browning, Montana, FAST Blackfeet is using soil, soup, and stories to reconnect with healthy and traditional foods and bring generations together toward a better future. During their two-year Growing Health program, participants learn the basics of how to grow and process their own food. While visiting various locations on the Blackfeet Nation, they’re instructed by elders and cultural knowledge keepers about sustainable and respectful wild harvesting methods, mindfulness practices, and traditional plant usages, and hear culturally significant stories and lessons. At the end of each season, participants have the opportunity to contribute to the wellness of their community by donating or selling any excess produce or tea back to the pantry. Many continue to grow their own gardens after completing the program, passing on the acquired knowledge and interest to others.

Keshawna Yazzie-Wolftail has experienced the benefits of these programs firsthand. Having grown up amidst the consequences of disconnection and lack of access to traditional foods, she wanted a healthier future for her children. This led her to join the Growing Health program. “My son was around two at the time, and he was able to help us plant the starter plants, come out and water with me, and just be around it. And I thought, ‘This is really special because I never grew up having this. I never grew up going with my mom into our garden and watering plants and watching them grow,’” recalls Keshawna. Growing Health provided her with foundational knowledge about gardening, identifying wild foods, cooking healthy, culturally significant meals and teas, and opportunities to pass on knowledge to loved ones.

“I noticed that people are really doing it with their families. The little kids are so interested in it,” says Marissa Bremner, FAST’s Growing Health Program Manager, “That's where I see it shaping our future generations–we're bringing back that knowledge of plants right to people's homes, recreating something that might have been lost for a while…making a connection for the different generations.”

own experiences to lead others toward a more holistically healthy lifestyle through nutrition education classes. “I wanted to be a part of helping our community in a meaningful way so that when my kids get older, it'll be a different reality than it is now.”

Recognizing that one part of regenerating culture, as well as health, is to create opportunities for generations to spend time together, FAST’s nutrition programs often encourage the mixing of different age groups. Cooking classes teach children and parents alike meal preparation skills that can be easily implemented at home. During another program, Soup and Stories, a meal is prepared using culturally significant ingredients, some of which were grown by Growing Health participants, and then enjoyed while elders pass on their knowledge and traditional stories.

“It’s a really special thing to have both elders and kids in the same space because they’re two separate energies, but they complement each other really well,” says Keshawna.

Many Montanans have experienced standing in a wheat field, running their hands over the tops of the golden stalks, and letting the spiky, hair-like awns tickle their palms. But imagine, as you look up and let your eye follow the wind rippling across the grain towards the horizon, if, instead of seeing rolling foothills, your eye is halted by an imposing wall of skyscrapers.

Forty-two years ago, Hungarian-born, New York-based artist Agnes Denes brought such imagery into reality. In the spring of 1982, in the landfill left in the wake of the recently built World Trade Centers, Agnes was inspired to plant a two-acre wheat field. Over the next few months, the project grew into the germinal ecological art installation Agnes would call Wheatfield – A Confrontation. The installation, though only around for one brief growing season, left an indelible mark on the psyche of the city’s art community and led to the iconic photographs of the artist standing in a shimmering autumn wheat field amidst a backdrop of stately high rises, smack in the heart of the Manhattan financial district.

The piece, for Agnes, was meant to be precisely that: a confrontation. It was meant to confront and challenge her fellow New Yorkers’ minds with questions about land: its uses, how we value it, the inherency of those values, and whether or not we should re-evaluate them. It also opened the opportunity to examine other related tangents, such as land development, loss of agricultural and natural landscapes, food insecurity, increasing global population, and what we want our environments – the spaces we are surrounded by daily – to consist of.

So when Jenny Moore, the director of Tinworks Art in Bozeman, who has worked in unique and prestigious art spaces around the world, including the Guggenheim in New

York, was pondering the best use of space that could center art in the lot of land on the corner of Tinworks’ home on North Ida, her mind automatically went to Agnes’ iconic Wheatfield

Jenny, who was recruited from her last position as Director of The Chinati Foundation in Marfa, Texas – an unconventional art museum on an old military base comprising 34 buildings on 340 acres –became Tinworks’ inaugural director in March 2023. As Jenny became increasingly familiar with her new home in the Gallatin Valley, Agnes’ Wheatfield project gained even more meaning for the Texas transplant. Wheat is an iconic aspect of Montana, carrying historical, agricultural, and economic significance. Additionally, agricultural land loss due to development is rising throughout the state, nowhere more so than in Gallatin Valley. As Jenny put it, “Bozeman is in a dynamic moment of change, currently poised in a juxtaposition between rural and quasi-urban, on the cusp of transitioning from what was once a primarily rural farming community to a burgeoning micropolis.”

Jenny contacted Agnes and proposed recreating Wheatfield. To Jenny's delight, Agnes agreed. Now 92 years old, this is the first time Agnes has accepted the invitation to reimagine Wheatfield in the United States and the first time the work will be positioned in the West.

While Agnes agreed to revive her work, including paying homage to the original, she also views this piece as distinct, a sentiment reflected in how she markedly contrasted the titles. Where the original is titled Wheatfield –A Confrontation, the current piece at Tinworks Art is Wheatfield – An Inspiration. The seed is in the ground.

The new title reveals the inspiration that was ignited in Agnes through her journey into the Bozeman project. Agnes has re-envisioned the piece with a new level of community engagement, inviting Bozeman residents to become part of the artwork by planting their own patch of wheat in solidarity with Wheatfield in any fallow piece of ground throughout the city, whether in their backyard, around their mailbox, or even along an alleyway.

In the fall, people can harvest the wheat and bring it to Tinworks, which will have several small-scale mills onsite to process. Wild Crumb, an artisan bakery in the neighborhood, has partnered with the project to use the flour from the wheat to bake bread and other baked goods for purchase, with loaves also redistributed back into the community through the local food bank.

In addition to residential participation, the project has already brought together many other collaborators. Bozeman-based Site to See, LLC came in with excavators, haul trucks, and bulldozers to remove rock and gravel piles and level the ground. Members from Montana State University’s soil testing labs tested the soil and found it excellent, which, according to Jenny, wasn’t surprising to Kenny VanDyke, the local farmer who planted the wheat and helped educate her on just how good the agricultural land in the Gallatin Valley is. “I always think it’s amazing the places art can take us,” said Jenny. “In this case, I’ve had the opportunity to learn about the incredible history of wheat in Montana… [and] I’ve certainly been inspired to have conversations I’ve never had the chance to have before, about agriculture, and a whole host of other issues.”

Kenny who, along with his older brother, farms 7,000 acres across Montana, including 2,000 in the Bozeman area — has been instrumental in this project and is a living example of the type of considerations Agnes’ original Wheatfield posed to viewers about land use, most of which are still relevant today.

The VanDyke brothers, fourth generation Montanans born and raised in Bozeman who, despite being raised on a dairy farm turned cattle ranch, consider themselves first generation grain farmers, are willing to try just about anything once to “make it work.”

Starting in 2011 as conservation farmers practicing no-till farming to conserve topsoil and water retention, the brothers have recently moved towards regenerative practices to improve soil nutrients and reduce reliance on costly chemicals and fertilizers.

Despite these efforts, the increasing development of agricultural land around Bozeman has added significant challenges to Kenny’s ability to farm the area. Not least is land ownership, which although always a challenge for beginning farmers is incredibly prohibitive in Bozeman’s current market.

Development even affects the more common alternative of land leases. Fewer and fewer landowners want to tie up their land in leases in case they decide to sell, leaving farmers in the area to increasingly rely on “handshake” deals that can fall through at the last minute. Kenny has gained and lost 800 acres in a year, with landowners calling him in the spring after he’s bought all the seed to tell him not to plant because the land has sold.

Yet another challenge comes from waning infrastructure, which is indirectly influenced by development. Several years ago, a grain elevator burned down and was never replaced. “No company is going to spend millions of dollars to build an elevator in a valley that’s losing farmland at an alarming rate,” states Kenny. A similar thing happened regarding a fertilizer plant recently as well, where the aging plant needed an entire rehaul, yet rather than rebuilding in a waning farm community, the company opted to simply sell; yet another “slice” in what feels like death by a 1,000 cuts.

“It’s one of those things where we joke, ‘You either got to change locations or change professions!’”

says Kenny, who foresees eventually having to take his small family and leave the area to join his brother farming up north along the Montana Hi-Line. The notion is not without a bit of nostalgia for the Bozeman native. “We have some gorgeous places, some beautiful properties in Bozeman, you know, down in the trees by the river, that we farm,” says Kenny. “…The thought of leaving is pretty hard.”

While Kenny sees the trend of losing ag land to development as somewhat inevitable and sympathizes with anyone who chooses to sell in such a market, he has witnessed examples of the alternative. Some landowners ones, according to Kenny, who may be in a financial position to value having the land over the money it’s worth have opted not to sell. Others have found ways to stay afloat, including long-term leases with farmers who can guarantee a more minor but steadier income stream for the next 30 years.

According to Brendan Weiner, Conservation Director of Gallatin Valley Land Trust, landowners choosing to protect their land in conservation easements is also becoming increasingly popular. The organization has seen an uptick in landowners opting for that route in the last decade, especially as more people are beginning to see and contemplate that the very things that brought them to the valley like wide-open spaces, acres of agricultural land, and beautiful natural landscapes — are precisely what’s at stake. “I have the utmost respect for some of these people that do keep it ag,” says Kenny, “And I think it’s good for people to have some awareness about [these issues].”

Agnes and Tinworks Art are clear that Wheatfield–An Inspiration. The seed is in the ground is an invitation for us all to consider where we are today, where we’re headed, and, possibly, reimagine and redirect our trajectory. The seeds of change are in the ground!

Montana Feeding Montana:

The Alliance to Get 33% Montana-Grown Food on All Montana Plates by 2033

On a windy day in early December 2023, 37 individuals from around the state gathered for the second time to explore the question, “What would it take to get 33% Montana-grown food on all Montana plates by 2033?”

Like the first, this meeting was particularly remarkable because the attendees came from 31 separate enterprises, representing Tribal Nations, trade organizations, food and farm businesses, human health organizations, philanthropic changemakers, the Department of Agriculture, Montana’s Office of Public Instruction, economic development centers, Montana Food and Agriculture Development Centers, institutions of higher education and research centers, and a wide range of nonprofits.

Before the COVID-19 pandemic disrupted Montana’s food access, it’s unclear whether these groups would have seen a need to come together. Many work within separate spheres of influence and are unintentionally siloed in their efforts. COVID changed that.

Why was the pandemic so disruptive to Montana’s food access? Montana only produces 3% of the food its citizens eat today; in 1950, that number was 70%. That means Montana relies on a global supply chain for 97% of the food it eats. When COVID disrupted that supply chain, most towns in Montana lost reliable access to food, and many of Montana’s rural communities simply did not get food. In contrast, many Montana producers had food they couldn’t get to market.

While the pandemic-caused disruptions have stabilized, weather impacts on the supply chain are rising. A significant portion of the 97% of food that Montana imports is grown in California, which is also responsible for half of all the fruits and vegetables grown in the United States. 3 Record fires, floods, and temperatures in California make our state’s reliance on outside food sources particularly vulnerable.

Inspired by a report series called New England Feeding New England, 4 published in the spring of 2023, the Alternative Energy Resources Organization (AERO) called two meetings that fall and invited over 100 stakeholders to collaborate on building a more resilient and reliable Montana food system.

“The response was immediate and enthusiastic,” says AERO Executive Director Robin Kelson, who sent out the initial invitations. “Not only that, the engagement from those first two sessions is strong. A brainstorming cohort has been meeting biweekly this winter to help guide a process for moving forward. We’re at the beginning of the beginning here, and I am confident something will take hold. Over 40 organizations are leaning in, and everywhere we talk about the ‘33x33 campaign’, people get excited.”

Stakeholders acknowledge that significant system changes across all sectors will be required to get 33% Montana-grown food on all Montana plates by 2033. Meeting the target means increasing consumer demand and building Montana markets for Montana food producers. It also means expanding family and community food production by backyard gardeners and community farmers, and knowledge and ability to forage wild foods. Community farming, foraging, and hunting are particularly critical in hyper-rural and Tribal communities where access to grocers selling Montana-grown food is challenging.

Other levers include increasing institutional procurement of Montana-grown and raised foods, including from K-12 schools; working with more wholesale food buyers, like grocery stores and restaurants, to improve their purchasing of Montanagrown foods; and resolving food production, processing, and distribution bottlenecks.

“Many of these challenges have been known and worked on by separate sectors of the food system for years,” says Robin. “The ambition here is to find new pathways forward by working together. Montana is also a bit of a unicorn compared to other states. We have a small population, a lot of land, and a strong history of community food system collaboration. So we have many resources working in our favor here.”

Though achieving 33% food self-reliance by 2033 may feel like a stretch goal for many, all participants have been overwhelmingly supportive of and excited by the target and its ability to increase collaboration, decrease hunger, improve nutrition security, and support a more resilient and reliable Montana food system for all.

Banks

Food banks and pantries across Montana are employing a surprising strategy to combat food insecurity in their communities–local food. During the COVID-19 pandemic, many food pantries relied on local producers to help fill the voids on their shelves, consequently finding that sourcing local food benefited not only the pantries but the community, farmers and ranchers, and the economy. Now, these pantries are taking steps to drive the presence of local food on all Montanans’ plates.

Although the pandemic years are behind us, many food pantries have not seen the decrease in demand they believed they would. “In the last two years alone, we saw double the need for food assistance in our communities,” says Sophie Albert, Executive Director of North Valley Food Bank (NVFB) in Whitefish, Montana. Sophie attributes the increased need to several factors, including inflated food, gas, and housing costs.

Contrary to common belief, finances aren’t the only factor contributing to food insecurity, “the inability to access food consistently, resulting in reduced quality or a lack of nutrient-dense food.” Many Montana residents live in “food deserts," where there is limited access to grocery stores

or a variety of healthy food. These areas can be found in urban and rural settings, meaning that more than 1 in 12 Montanans are food insecure.

Elle Ross, Executive Director of Helping Hands Hardin (HHH) in Southeastern Montana, has witnessed this difficulty accessing food firsthand. “So many food access issues stem from just how vast our communities are, just the physical space between our communities.” During COVID, Elle often saw multiple households carpooling together to drive the multi-hour trip to the pantry.

Montana’s landscape also affects how food pantries acquire food. This is where the Montana Food Bank Network (MFBN) comes in. MFBN secures largescale amounts of food through generous donations, grants, or wholesale, then breaks the bulk food into manageable, family-size portions and distributes them across Montana. In 2023, MFBN distributed 13,896,595 meals to 360 community food banks, pantries, schools, senior centers, shelters to end hunger, and other partners, including NVFB and HHH.

To support the health of your community and the presence of local food on all Montana plates, get involved by doing one or all of the following:

‣ Check to see if your pantry accepts fresh produce, and donate food from the farmers market or excess food from your garden.

‣ Donate legally harvested game through the MFBN Hunters Against Hunger Program.

‣ When purchasing shelf-stable products to donate to the pantry, look for Montana-made products.

‣ Support them financially. HHH purchases 80% of the food they distribute!

‣ Most pantries rely on volunteers, so consider donating your time!

‣ Talk with your local pantry about the best ways to support the presence of local food on their shelves.

Operations Officer at MFBN, says the nonprofit aims to change this. “One of the challenges in Montana is that we are a large agricultural producer of raw products. Meaning lots of cattle, barley, and wheat. But we don't have food manufacturing facilities, per se.” Brent says that many produce growers are small-scale, and there aren’t facilities nearby to combine, process, and distribute their products.

This year, MFBN will break ground on a new facility in hopes of making strides toward solving this missing link. “One of the exciting things about the new facility is that it will allow us to expand the amount of local fresh produce and local agricultural commodities we source and distribute [in food banks],” says Brent. The facility will have a designated quarantine, inspection, and cleaning room, in addition to doubling the size of the current cooler and freezer spaces, a vital part of having a local food presence year-round since Montana’s growing season is so short.

While this new facility will increase the ability to get local food into food pantries exponentially, Sophie and Elle aren’t waiting until the ribbon is cut to stock their shelves with local food. NVFB has already become a food hub in their region, running a rural pantry delivery program, providing a gleaning space and a certified prep kitchen for the community, as well as a Wild Game Processing Program for local hunters who wish to donate legally harvested game. They also collaborate with other pantries to pool resources and increase local purchasing power to make more significant bulk purchases from Montana businesses. Along with these resources, NVFB closes the loop by operating the Food Rescue Program, which partners with local businesses to keep consumable food out of the landfill by transforming food close to expiration into meals and composting unusable foods with Dirt Rich Compost.

HHH dreams of building similar capacity but, for the time being, is focusing its efforts in a different direction. During the pandemic, they started managing the local farmers market, ensuring farmers had a space to sell their products, and purchasing excess produce at the end of the market. This allowed farmers to stay in business and pantry shelves to stay stocked. These relationships have since grown into partnerships, allowing HHH to purchase directly from nearby producers. They have also added raised garden beds on site, which re-engage community members with their food sources, educate them about growing and eating nutrient-dense food, and provide a tasty snack for those walking by. Montana's Producers are Leaders in Water Conservation Innovation

“We farm in a place that’s too dry for cows,” laughed Anna Jones-Crabtree, with a wry smile. Anna and her husband, Doug Crabtree, own Vilicus Farms, a large-scale, dryland, organic farming operation outside Havre, Montana. Like many Montana farmers and ranchers, the Crabtrees rely largely on precipitation and snowmelt to offset their yearly water needs. And as most Montanans know, snow is in increasingly short supply.

In January 2024, the USDA released the Montana Water Supply Outlook Report.5 The report indicated that many snowpack monitoring sites, testing sites used to measure the water supply for Montana watersheds around the state, were logging recordlow snowpack levels. The consequences of these low levels: a forecast of high-severity drought.

No stranger to dry conditions, however, the Crabtrees have implemented an overlooked method to mitigate water shortage: snow collection. Funded by the LOR Foundation’s Field Work initiative, Anna and Doug repurpose snow fences, commonly used to keep roads clear of snowdrifts, for snow retention. This unorthodox strategy allows for an increased feeding of existing stock ponds with water during the melting season and provides a low-cost, low-energy method of boosting water availability during the growing season.

To address this obstacle, LOR launched “Field Work,” an initiative aimed at empowering farmers and ranchers to implement creative water projects on their land. “We recognize that those who are closest to the problem often have the best solutions, but often face too many barriers to get the funding they need to try something novel or innovative,” says Bill Jaeger, LOR’s Strategic Initiatives Officer.

A Community Supported Agriculture (CSA) program strengthens the local food economy by connecting consumers and producers. In a typical CSA model, consumers sign up for a subscription, or share, then receive a weekly box of farm fresh products throughout the growing season. Three Cheese and Bacon Pizza

INGREDIENTS

Favorite pizza dough recipe or premade dough

Favorite pizza sauce

6-7 strips of Farm-to-Market Pork bacon

3 cups Flathead Lake Cheese: Doc Arnold’s Notzarella cheese, shredded

½ cup Flathead Lake Cheese: Joe’s Hawaiian Shirt Feta

½ cup of Flathead Lake Cheese: Galiki Gouda, grated and shaved

1 cup arugula

1½ cups cherry tomatoes, sliced in half

Sprinkle of cornmeal

Drizzle of olive oil

Basil for garnish

¼ tsp red pepper flakes (optional)

DIRECTIONS

Preheat Oven: Preheat the oven to 515°F.

Prepare Toppings: Cut Farm-to-Market Pork bacon into halves or 1-inch pieces and cook until crispy. Slice cherry tomatoes and set aside. Shred the Flathead Lake Cheese: Doc Arnold’s Notzarella Cheese and shave the Flathead Lake Cheese: Galiki Gouda.

Shape Dough: Roll dough into a 12-inch crust. Sprinkle a sheet pan with cornmeal and place the dough on it.

Assemble Pizza: Spread pizza sauce on the crust and arrange sliced cherry tomatoes on top. Bake in the preheated oven for 8 minutes.

Add Toppings: Remove pizza from the oven and top with Flathead Lake Cheese: Doc Arnold's Notzarella cheese, Flathead Lake Cheese: Joe's Hawaiian Shirt Feta, and Farm-to-Market Pork bacon, and brush the crust with olive oil. Return to the oven and bake for an additional 7-8 minutes, or until the crust is golden and the cheese is melted.

Finish and Serve: Remove pizza from the oven and let cool for 10 minutes. In a bowl, toss arugula with a drizzle of olive oil, a sprinkle of Flathead Lake Cheese: Galiki Gouda grated cheese, and red pepper flakes, if using. Top pizza with arugula mixture, shaved Flathead Lake Cheese: Galiki Gouda, and garnish with basil. Enjoy!

RAMEN INGREDIENTS

3 Tbsp neutral oil

½ cup shallots, chopped

4 garlic cloves, minced

1 Tbsp ginger, freshly grated

1 cup mushrooms of choice

2 Tbsp soy sauce, or substitute

2 Tbsp rice vinegar

3 Tbsp white miso paste

½ tsp salt

1 cube chicken stock

4 cups water

1 cup coconut milk

2 packs of ramen (no seasoning)

1 Tbsp hot chili oil (optional)

GARNISHES

Green onions, thinly sliced

Carrots, thinly sliced

Baby bok choy, sautéed

Kale, sautéed

Crispy mushrooms

Sesame seeds

Chili flakes or oil

Hard or soft-boiled eggs, halved

Bacon

DIRECTIONS

Prepare Toppings: Wash and prepare all produce. Cook all desired toppings to your preference.

Cook Broth: Heat large pot and oil over medium heat. Sauté mushrooms for about 5 minutes, then add in shallots, garlic, and ginger and cook 2-3 more minutes. Add in soy sauce, miso, and vinegar, stir to combine, and then salt, chili oil (if using), coconut milk, water, and stock cube. Reduce heat to medium-low and simmer for 20 minutes.

Assemble Ramen: Add ramen noodles to broth and cook for the time indicated on the package (usually 3-4 minutes), making sure to omit any seasoning packet included. Dish ramen into bowls, garnish with toppings of choice, and enjoy!

DIRECTIONS

Cook bison thoroughly in a skillet over medium-high heat. Then, add the drained and rinsed beans and corn. Season with taco seasoning.

In a bowl, add spring mix and slightly crushed blue corn tortilla chips. Combine bison mixture with the salad and tortilla chips. Top with toppings of choice and enjoy!

Crispy!

Cauliflower Wings

Servings: 4

Vegetarian, Gluten-free

INGREDIENTS

1 small head of cauliflower

Organic canola oil

(32 oz minimum)

2 cups all-purpose flour (can use gluten-free, if desired)

¼ tsp cayenne pepper

2-3 eggs

1 Tbsp water

4 cups cornflakes, crushed to a fine crumb

Flaky salt

2 Tbsp parsley, chopped

Hot sauce

RANCH DIP

1 cup plain Greek yogurt

2 Tbsp fresh chives, chopped

1 tsp dried parsley

¼ tsp dried dill

½ tsp garlic powder

½ tsp onion powder

Black pepper to taste

Carrot and celery sticks for serving

DIRECTIONS

Prepare Cauliflower: Cut cauliflower into small florets, 2 inches or less. Steam over water for 10 minutes until just shy of fork tender. Set aside to cool.

Make Ranch Dip: In a small bowl, combine Greek yogurt, chives, parsley, dill, garlic powder, onion powder, and black pepper. Refrigerate until ready to serve.

Coat Cauliflower: In a large pot, heat canola oil to 375°F. In a shallow bowl, mix flour and cayenne pepper. In another bowl, whisk eggs and water. Place crushed cornflakes in a third bowl. Dip each cauliflower floret first in the flour mixture, then in the egg mixture, and finally in the cornflakes, pressing gently to adhere.

Fry Cauliflower: Working in batches, fry cauliflower florets in the hot oil for about 2-3 minutes, until golden brown and crispy. Remove with a slotted spoon and drain on a paper towel-lined plate. Sprinkle with flaky salt.

Serve: Transfer crispy cauliflower wings to a serving plate. Garnish with chopped parsley. Serve with ranch dip and your favorite hot sauce on the side.

Basil Huckleberry Jam Mocktail

DIRECTIONS

Make Simple Syrup: In a small saucepan, add water and sugar. Heat until the sugar is dissolved but the water is not boiling. Remove from heat and add basil leaves. Steep for 15 minutes, then strain and discard the leaves. Let cool before using.

Mix Mocktail: In a cocktail shaker or tall glass, combine jam, lemon juice, and basil simple syrup. Shake or stir well, until smooth. (Optional: muddle fresh basil leaves with jam mixture and strain before splitting between glasses.) Split the mixture between two glasses. Fill the glass with ice as desired. Top off the glass with tonic water or lemonade. Garnish with basil springs, lemon, or blueberries, and enjoy!

Servings: 2 Dairy-free

BASIL SIMPLE SYRUP

20 fresh basil leaves

½ cup sugar

½ cup water

JAM MOCKTAIL

2 Tbsp room-temperature huckleberry jam (blueberry if huckleberry jam isn’t available)

½ lemon, juiced

1 Tbsp basil simple syrup

2 cups tonic water or sparkling lemonade

Ice

2 sprigs of basil for garnish (optional)

Blueberries and lemon for garnish (optional)

Spaghetti Squash Relish

Servings: 10-12

Vegetarian, Gluten-free

INGREDIENTS

1 spaghetti squash

1 onion

½ cup sugar

1 cup celery, diced

½ cup red pepper, diced

½ cup green pepper, diced

½ cup vegetable oil

¼ cup vinegar

DIRECTIONS

Cook Squash: Pierce squash on each side and microwave for 3 minutes to soften. Cut squash in half lengthwise, scoop out seeds, and place cut side down on a baking sheet lined with parchment paper. Bake at 350°F for 30-40 minutes, or until soft. Let cool.

Combine: Dice celery, onion, red pepper, and green pepper. Combine sugar, vegetable oil, vinegar, and salt in a bowl. Add diced vegetables to the oil and vinegar mixture. Use a fork to scrape cooled spaghetti squash out of its rind and add to the vegetables. Chill relish for two or more hours. Serve over hamburgers, brats, hot dogs, BBQ chicken, or any grilled meat.

Lemony Cabbage Carrot Slaw

Servings: 6-8 Vegetarian, Gluten-free

INGREDIENTS

1 small head of cabbage, cored and shredded

2 carrots, grated or peeled

4 green onions, thinly sliced

1 red bell pepper, sliced thin and cut into inch-sized pieces

1 daikon radish, quartered lengthwise and then thinly sliced crossways

½ cup Italian parsley, chopped

DRESSING

1 lemon, juiced and zested

½ cup olive oil

1 Tbsp dijon mustard

1 Tbsp honey

1 tsp red pepper flakes

Salt and pepper to taste

DIRECTIONS

In a small bowl, whisk together the dressing ingredients with a fork. In a larger bowl, toss the vegetables together, then add the dressing and mix well to incorporate. Serve immediately or chilled.

INGREDIENTS

2 small sweet potatoes

2-3 small beets

3 medium carrots

3 parsnips

2-3 daikon radishes

2-4 small potatoes of choice

Parmesan

2 apples (optional)

2 small red onions or shallots (optional)

Red pepper flakes (optional)

SAUCE

1 Tbsp salted butter

3 cloves of garlic, minced

1 cup chicken broth

2 Tbsp dijon mustard

1 cup heavy cream

½ tsp salt

¼ tsp pepper

4 sprigs fresh thyme

DIRECTIONS

Prepare vegetables: Wash all vegetables. Slice into ⅛-¼ inch slices using a sharp knife or mandolin. Do your best to keep all slices the same diameter and thickness. Peel if desired. Core apples, if using.

Prepare Sauce: Preheat oven to 400°F. In a medium skillet, melt butter over medium heat. Stir in garlic for 1 minute until fragrant. Stir in chicken broth and dijon mustard, then whisk in heavy cream, salt and pepper, and thyme. Remove sauce from heat and set aside.

Prepare Tian: Starting at the outer edge of a 9-inch baking dish or skillet, arrange the vegetables in groupings of 2 or 3 slices of each vegetable, layering and overlapping slightly, circling around the skillet. Continue making circles inward until the skillet is filled. Alternatively, make straight rows of vegetables. Tuck remaining slices in the center as needed to fill up extra space. Pour sauce over the vegetables and top with a sprinkle of thyme.

Bake: Cover with aluminum foil and bake for 35 minutes on the center rack. Uncover the skillet, then continue baking for an additional 25-30 minutes. Top with a sprinkle of salt and parmesan, if desired.

In the 1970’s, Montana raised and processed 70% of our own food. Today, we raise and process less than 10%. In our local communities we had mills, bakeries, butcher shops, and local delivery dairies. Our grocery stores had mostly Montana food on the shelves. Now we import most of our own food and travel miles to a major city grocery chain to buy it. We used to have thriving communities which in some cases have turned into ghost towns. This is a result of over 50 years of a cheap food policy. Cheap food policy is about corporate control of our food dollar.
