“A MAGAZINE? ARE YOU HIGH?” That was the general response we got when we started asking friends, family, and random strangers about the idea of a local magazine celebrating Bay Area’s burgeoning craft beverage culture. (Actually, most random strangers answered with “Get away from me!” But we interpreted it the same.) Once they saw this prototype however, and we showed them similar publications in other cities like San Diego, San Antonio, Denver, and Pittsburgh – and even ones covering the whole states of West Virginia and Tennessee – they not only came around to why and how such a magazine would benefit the local breweries, distilleries, cideries and meaderies, they embraced it. The free rounds of beer we offered in return for their opinion might have had something to do with it too … And so here we are, and here you are, holding the first issue of ABV% magazine. Our mission is simple: to elevate the culture and the community behind our favorite neighborhood craft libation destinations. We have hundreds of brewers and distillers throughout the Bay Area creating worldclass beverages, constantly innovating and improving their offerings, passionate about serving their communities the best they have to offer. ABV% magazine is all about these men and women who literally pour their heart into every glass, bottle, and barrel that we then get to enjoy, sip by sip. ABV% also about you – the ones who support and inspire these entrepreneurs to reach higher, to not settle, to always bring their best to the table. Or bar. Or growler. Whatever. You get what we mean. We hope you enjoy ABV% magazine. We think you will. This is going to be fun. We’re dealing with alcoholic beverages, after all. How can it not be fun? Cheers! www.abvmagazine.com | Fall 2017 | 3

CONTRIBUTORS

TIM FENSMITH Tim has been a part of the Bay Area craft beverage scene for almost 15 years, since brewing his first beer in his garage (it was a very drinkable APA). Nowadays he is an independent consultant working with several local breweries, a few distilleries, and even a meadery.

VONDA LIM An avid fan of anything sour, Vonda has been roaming the breweries and distilleries for that perfect combination of thirstquencher and lip-puckering refreshment. She has been kind enough to take us along on her search.

JANET MENDAYOFF

KENNY BAKER

Janet recently finished her Cicerone training, meaning she now knows more than any of us, which has been incredibly helpful as most of us around here don’t know much. We hope she sticks around long enough before some big shots snap her up.

Kenny launched three breweries and one brewpub before hanging up his apron to focus on his family. With more time to write, he has been one of our best contributors and all around mentor to all things craft beverage in the Bay Area.

WHAT’S BREWING /// NEWS AND NOTES

beer DOWN WITH TAXES, UP WITH CRAFT BOOZE! Whatever their differences, both Republican and Democrat members of congress seem to agree on one thing (finally): craft beer is good business. The Craft Beverage Modernization and Tax Reform Act of 2017 — introduced by Senators Roy Wyden (Oregon), and Roy Blunt (Montana) along with Representatives Erik Paulsen (Minn.) and Ron Kind (Wis.) — would halve the excise tax on barrels from $7.00 to $3.50. This move would be a real financial boon for Northern California vintners cider-makers, and distillers; it would reflow around $34 million dollars back into the hands of our craft brewers and distillers, allowing for increased expansion, innovation, and industry job growth. Other provisions in the tax bill include: “permitting the transfer of beer between bonded facilities without payment of tax,” modernizing the ATF labeling requirements, and – this is big news for some of us – the bill would exempt home distillery establishments that produce distilled spirits solely for personal or family use from excise tax and bonding requirements. GET INVOLVED: Write your senators and representatives and tell them you back this bill. Don’t know who your congressional representatives are? You do now: www. govtrack.us/congress/members/CA You can see the bill here: www.congress. gov/bill/115th-congress/senatebill/236

beer SPEAKEASY GETS A REPRIEVE The bad news: San Francisco’s infamous Speakeasy Brewery, home of the Bay Area’s iconic Prohibition Ale, is still under receivership as of this writing (mid-April, 2017), and in the process, has had to shut down its taproom. The good news: They’re anticipating new ownership soon. The really good news: They’re still making beer! They just released their first new beer of 2017, Murky Business APA as part of their Perfect Crime series. Yay!(?)

At only 4.5%ABV, the result is a sessionable, crisp, light beer, perfect for sweaty summer days behind the lawnmowers, cool summer nights by the beach, or watching Brandon belt out some more balls out of the park (see what we did there?).

CIDER SUMMIT RETURNS TO SAN FRANCISCO

RUM COMES TO CALIFORNIA (FINALLY)! While there are plenty of ways to wet your locally-crafted whiskey, gin, or vodka whistle here in Northern California, finding a rum that has been distilled locally is a bit of a treasure hunt.

Cider has been making some impressive inroads into the Bay Area’s craft beverage culture. With the Presidio being host to this year’s Cider Summit for the second year in a row, our area cideries can once again summon those apple-colored spotlights on the quality of our local offerings. This year’s event will feature over 150 ciders, including 30 California cideries: Ace Cider, Sonoma Cider, Santa Cruz Cider Co., Two Rivers, Tilted Shed, and mucho mucho mas.

They’re open for tours most Saturdays (there go our plans for this weekend ...), and have free tastings on select dates. www.hookeroakdistillery.com

Event is April 22. General admission tickets are only $40 (that’s about a quarter for each cidery featured!). Find out all of the crisp information at www.cidersummitnw.com

GLOSSARY

That hunt has just gotten easier thanks to the efforts of J.T. Martin and Billy Ahumada, both of Chico. Thanks to their own thirst for a good California-made rum, they opened up Hooker Oak Distillery in their hometown and have released three rums since their 2016 launch: a regular rum, as well as a pineapple and an apple pie flavored variety.

BEYOND THE BAY /// NEWS AND NOTES

Columbus, Ohio STAYCATION? NO. BEERCATION! Craft beer fans worldwide can rejoice as their dream for a craft beer hotel has just had the green light. Scottish brewer, BrewDog today announced plans to build the world’s first crowdfunded craft beer hotel in Columbus, Ohio, where the company will open its first international brewery later this year.

Sisters, Oregon HOP IN THESE BEER SPAS

The state-of-the-art hotel, dubbed The DogHouse, will boast a craft beer spa with beerbased treatments, a craft beer tap in every room serving the brewery’s flagship beer, Punk IPA, and an in-shower beer fridge so guests can sip whilst they shower. Guests who stay in the luxury suite will also get to enjoy a hot tub filled with the brewer’s award-winning Punk IPA. There’s more but seriously, do you need more? The joint is set to open in 2018, but we’re already booking our month-long stays, future deadlines be damned. Beer-filled hot tub ... wtf ... We are so there. www.brewdog.com Copenhagen, Denmark

There is a new spa in Sisters, Oregon, and like our awful pun suggests, offer body wraps, facial scrubs and full-on beer-filled spa tubs. While this may sound like most of our wet dreams (admit it), there is some science behind this: hops have been known for centuries for their medicinal properties. Sally Champa, the therapist behind Hop in the Spa, got the idea from helping a client find some new forms of healing therapy, including taking a hot bath brewed in hops.

THIS BEER IS NEVER GOING TO GIVE YOU UP, NEVER GONNA LET YOU DOWN, NEVER GONNA ... YOU KNOW THE REST No, this is not a rick-roll (that is so like 2003 anyway). Rick Astley, the man, the legend (and if you don’t know who he is, put down the beer and go to Youtube … it’s okay, we’ll wait) has teamed up with Denmark’s Mikkeller brewery and released his own beer, Astley’s Northern Hop Lager.

And while this is still a relatively new idea in the continental US, there are several beer spas in Europe.

The beer will officially launch on April 13 to coincide with his sold-out concert at Royal Albert Hall in London. The most surprising thing about this news is not that Rick Astley is coming out with a beer, but that he has a sold-out show. www.astleysnorthernhop.com 8 | Fall 2017 | www.abvmagazine.com

Get it? Hop? As in hops used for beer because these spas have beer in them. Sigh.... Anyway, moving on.

Note on etiquette at a beer spa: don’t drink the bath water. Just don’t. www.hopinthespa.com

BEYOND THE BAY \\\ NEWS AND NOTES

Tain, Scotland HOW MUCH IS THAT 41-YEAR OLD SCOTCH WHISKY IN THE WINDOW? For most of us, spending $45 on a decent bottle of whiskey is a moral dilemma. Now comes Glenmorangie Distillery and adds another layer to our quardry: do we spend $9,000 on silly things like rent and food (and Bay Area beer, of course), or do we “invest” it in their limited-release 1974 Glenmorangie Pride? The single malt whisky was originally barreled on October 30, 1974 – perhaps to the rhythms of Stevie Wonders’ “You Haven’t Done Nothin’,” which was top of the charts at that time. The barrel has been lovingly cared for ever since, provided lots of exercise and fresh air, and three square meals a day. The end result is a 54% ABV marriage of two whiskies from two casks, one matured for its entire life in ex-bourbon casks, the other in ex-Oloroso sherry butts (heh, you said “butts.”) Per the distillery, the whisky exhibits a “salt and spicy character, intensified wth age.” We’ll have to take their word for it, though I would ponder the question whether one might really tell the difference between this 1974 batch and their earlier 1981 batch, which sells for a scant $4,000 less? Hollywood, Calif.

Under Our Christmas Tree? Please?

GENIUS? BLASPHEMY? OR BOTH?

IT’S JUST ANOTHER $4,000 TEQUILA SUNRISE

Because rock megastars have time and apparently money to waste on their slightest inclinations, Sammy Hagar – no stranger to distilled spirits – has teamed up with Adam Levine (he of Maroon 5) to reinvent both tequila and mezcal by, what else? Combining them into a whole new spirit they’re dubbing Mezquila (Get it? It’s the combination of the words “Mezcal” and “Tequila”! Oh those crazy rock and roll stars.) Their product is called Santo Puro, because this is a holy union of the two agave spirits. Their words, not ours, so Lord, don’t strike us down with the same lightning bolt as those two heathens, please. Their marketing seems to be aimed at Spring Breakers too chuffed on crappy beer and testosterone to know what the hell they’re ordering – the advertising slogan is “There are still places your tongue hasn’t been yet,” and their imagery borders on religious porn. Maybe their hoping Santo Puro will be the new Jaegermeister?

1972 was a weird year for rock and roll. And by weird, we mean there were tons of drugs everywhere. Bucketfuls of the stuff. It was also the year the Rolling Stones began their world tour that would climax in a whirlwind of sex, drugs, and decadence... and tequila sunrises. Mick Jagger happened to be at a party with concert promoter Billy Graham and was served his first tequila sunrise cocktail, using Cuervo tequila. Jagger liked it so much he introduced it to the band, and the libation ended up being a mainstay for the whole tour, so much so that the RS dubbed the tour the “Tequila sunrise and cocaine tour.” We guess because the cocktail goes good with blow? Forward to the present, and the fine foks at Cuervo have decided to memorialize this “partnership,” by releasing a 100-year old tequila (which has probably aged much better than Keith Richards did) in a special Rolling Stone commemorative collector’s set. For only $4,000 – which is about the price of a Rolling Stone concert ticket these days – you receive a bottle adorned with the iconic lapping tongue symbol cast in 14 karat gold, protected by golden spikes and comes with a glass blown stopper – all protected in a leather-bound guitar case. There are only 25 of these made, so .. good luck grabbing one before Keith grabs them, mistakingly thinking their his own private stash.

geek squad

What do you get when science and biology geeks take on the whiskey glass? You get what might trully be considered one of the greatest whiskey glasses available today, if not ever. Using words like “biomimicry,” “fluid dynamics,” “wave shapes,” and volatility, the Norlan Whisky Glass (that is how they spell it, and it is not a typo... Google it) sets out to revolutionize the whisky sipping experience through basic knowledge and an in-depth scientific approach.

ART LEBEDEV CTRL+O BOTTLE OPENER

By combining modern digital technologies and advanced double-walled glassblowing handcraft, Norlan has created a hybrid-designed glass that not only brings together the best qualities of the archetypal tumbler and snifter, but improves upon the essential scent delivery. Through scientific study and bio-mimicry, Norlan has developed a patent pending feature that dramatically increases the rate of oxidization within the glass. This feature, a series of specially positioned protrusions, or “fins,” inside the glass, serves to agitate the liquid, creating ocean-like waveforms that release the ethanol vapors more quickly and deliver the expressive and desirable flavor notes to the drinker.

A great gift for anyone who spends way too much time in front of their computer (“Ctrl+O” is a shortcut command to open a file), this sturdy metal opener is perfect for that afterwork beverage ... beer. Who are we kidding. It’s perfect for that after-work beer. $16 www.artlebedev.com

All that in the last paragraph? Yeah, we lifted it from Norlan’s press release. We don’t science very well. We like to think we whisky sip pretty good though, and we can say unequivocally that these glasses do make a difference in your dram. $48 for two (and they only come in sets of two). www.norlanglass.com

booze and a book KEN GROSSMAN BEYOND THE PALE: THE STORY OF SIERRA NEVADA BREWING CO. Ken Grossman’s passion for brewing began when a friend showed him the basics of home brewing. Using homemade equipment, he began brewing five-gallon batches of beer on his own, and soon became a proficient homebrewer. In 1976, Ken opened his own store, The Homebrew Shop and soon after, began building a small brewery in the town of Chico, California. His goal: to brew exceptional ales and lagers.

don’t leave home without it HAND MADE GROWLERS THE SHARK GROWLER You’re at your favorite watering hole, wanting to get your brew to go. Do you (a): plop down your tired glass growler... yawn... or worse yet, get one of those insulated thermos jobs; or, (b) do you plop this bad boy down on the bar and immediately grab everyone’s attention (and probably a faster fill)? Their web site offers literally dozens of different styles, including several monster and retro designs, or he can custom design one for you. Pricing range from $45 and up based on your design. www.handmadegrowlers.com

“Building and running a brewery is all-consuming,” said Grossman. “After decades of keeping my nose to the grindstone, this book was a refreshing chance to reflect on the journey I’ve taken alongside patient family and friends, loyal employees, and driven industry peers. We’ve all helped make craft beer something that’s both exciting and enduring.” Ken Grossman couldn’t have known that his early fascination with taking apart household appliances would eventually lead to welding together Sierra Nevada’s first malt mill and customizing its bottling equipment. Grossman’s determination to brew the kind of beer he liked to drink and be his own boss led to the success of one of America’s best-loved craft breweries. Grossman recalls the role models and life experiences that fed his curiosity and drive—from a neighbor’s obsession with science and gadgets to the friends who drew him to hiking, and, finally, to the brewing community that provided both support and friendly competition. It shares the business decisions that nearly broke him, yet eventually drove him to success. The sum total of his life provides the foundation of the “Sierra Nevada way,” a company philosophy that emphasizes sustainability, nonconformity, following one’s passion, and doing things the right way. www.amazon.com

I faced this Saison on a gloomy, overcast San Francisco winter afternoon. My mood being what it was, I wasn’t expecting much from this. However, once this golden sunshine met my lips, that all changed. Crips flavors, a beautiful lacy head of foam, and orange blossom mouth will tickle any funny bone. True story.

Is that … is that peach I detect? And cherries? Why yes, yes it is. Not an award winner (yet), but good enough to surpise my saison-suspicious beer-trading buddies with.

I argued with the editor about including this, the newest offering from Pacifica BrewPub, because it’s so f*cking good that people are going to start clamoring for it. And then this sweet little hole-in-the-wall brewpub will be lost to me forever. Don’t buy this, it’s sh*t. Stay away.

BOOZE & BANTER

NAME: Clark DeSaulier LOCATION: Mephisto Breweries, Milpitas WHAT ARE YOU DRINKING? Devil’s Brew Triple IPA SNOW LEOPARD VODKA Alameda Distillery Works Alameda / 36.0 ABV%

www.awdistillery.com A worthy California vodka, part of whose profits go towards the preservation of these rare big cats. Made from spelt grain which is distilled six times and made in small batches.Just think, with every sip you’re saving a big kittie’s lfe! Aww, look at you all galant and sh*t.

STRAY CAT GIN North Bay Distillery

WILD ENGLISH SEA CIDER

Healdsburg / 48.6 ABV%

Menlo Meadery Menlo Park / 18.0 ABV%

www.straycatgin.com

www.mpmeads.com Stray Cat is a small batch artisanal gin created from an apple brandy-based spirit that was double distilled in a copper pot still. Of course, the classic gin botanicals were added to the mix, and the gin was aged in medium-char Serbian juniper barrels for a year.

Not sure why it’s called “Sea Cider.” Were the apples found in the sea? Where they bobbed in the sea? It’s not salty, and while the taste is pleasant as ciders go, there is nothing in there that reminds one of oceans, beaches, or sea monkeys.

BREW YOUR OWN

U Brew Brewery

Berkeley • www.ubrewberkeley.com

Are you searching and searching for that perfect beer but alas, cannot find it? Do you swear to yourself at night that you could make a better IPA than those idiots down at the corner pub? Well, now it’s time for you to bring it. For a measly $250 and four hours on a Saturday, U Brew Brewery will school you in the basics of brewing, and then set you up with your own hops, malt, mash tun, hot water, and yeast, and let you loose to do that brew that you do so well.

DESCRIBE IT IN FOUR WORDS. Hoppyfrickinlicious. THAT’S ONLY ONE WORD. And yet it says so much. WHY ARE YOU DRINKING WHAT YOU’RE DRINKING? My good friend Abe Nickels just bought it for me, saying I had to try it. WOULD YOU HAVE BOUGHT THIS OTHERWISE? I’m more of a wheat beer kind of guy, so probably not. But I do like it. Also, it was free. WHAT BRINGS YOU TO MEPHISTO? They’re only three blocks away from my apartment, and they always have something new on tap. And, their anchovie nachos are freaking awesome!

Luptat facitium simaion sequibus: DON JUAN PLATINUM Origin: Dominican Republic Shape: Churchill Ring gauge: 49 Length: 7”

A new offering from a well-established cigar maker, the Don Juan Platinum is produced in the Dominican Republic, unlike its Nicaraguan counterpart. The Platinum is a medium-bodied smoke with the flavor one expects from the rich Dominican soil. With subtle hints of nuts and spices continued throughout each puff, the Platinum is an outstanding selection. From tip to cap you can feel and see skill. If you are a fan of Dominican cigars, you’ll enjoy the Don Juan Platinum.

DIAMOND CROWN Origin: Dominican Republic Ring gauge: 54 Length: 5-1/2”

Much like the Opus X or Montecristo, some cigars are rare and very hard to find, mostly because of the exceptional craftsmanship and tobacco selection present in the cigar. Such is the case with the Diamond Crown. A Connecticut wrapper — aged five years — produces a mildbodied smoke that is a sensual delight to the palate. The construction is truly Fuente, perfect in every sense. One of the top five cigars I’ve ever had the pleasure of lighting up.

ST. JOHN’S OAK-BARREL AGED WHISKEY

River Valley Distillery Sonoma, www.rivervalleydistillery.com The oak permeates this rye-infused whiskey, giving each sip a beautiful smokey compliment to every puff of the Don Juan. I would suggest serving with one ice cube to give some textural contrast to the cigar.

DAWN PATROL COFFEE PORTER Monterey SkunkWerks What goes best with a cigar than a nice cup of coffee? And what goes best with coffee but 9% ABV slightlyhopped beer? Nothing. Nothing goes better.

HUMIDOR 101 LA FLORA DOMINICA: RESERVA Origin: Dominican Republic Shape: #2 Ring gauge: 52 Length: 6-1/2”

Another special offering, La Flor Dominica has produced its Reserva Especial line, dressed in a wonderful maduro wrapper. Most of the flavor in a cigar comes from its wrapper, and this beautiful Mexican wrapper produces a heavenly taste: fullbodied, with a creamy flavor and an enjoyably spicy (though only slightly so) finish. The construction is flawless, a solid cigar on all fronts. 18 | Fall 2017 | www.abvmagazine.com

Buying a humidor should not be an easy task. You’re purchasing something that is going to keep your cigar investment in good condition. Make sure the box you select has a solid construction and will seal tight. Above all, make sure that it can track and regulate the humidity inside the box. Also, make sure the box is big (or small) enough to hold your collection.

RUSSIAN HILL

T

he neighborhood’s name goes back to the Gold Rush era, when settlers discovered a small Russian cemetery at the top of the hill. Russian naval and merchant ships frequently visited San Francisco throughout the 19th century beginning in 1806, and there are several mentions of burials of crew members in the Russian Hill cemetery in the first half of the century. The cemetery was eventually removed, but the name remains to this day. Although Holy Trinity Cathedral, the oldest Russian Orthodox church in San Francisco, is located a few blocks away on Van Ness and Green Street, there is no significant Russian presence in the area, as the city’s Russian community is located primarily in the Richmond District. breweries

Texas actually has four different styles of barbecue, and what you get depends on which side of the invisible line you’re standing on. East Texas style is slow cooked to the point that it’s “falling off the bone.” Central Texas’s focus is on the meat, which is typically rubbed with spices and cooked over indirect heat, served with sauce on the side. South Texas barbecue is coated in either a molasses-like sauce or a spicy Mexican style called barbacoa, while West Texasstyle meat is cooked over direct heat and can have a bitter taste. Nob Hill resident Jeff Weigers had a problem. Jeff had been dating JoElle for 16 months and wanted to ask her hand in marriage. She was the one. He had the ring. The one thing he didn’t have was a plan. He wanted something unique, something memorable, something she would not forget. And then, as he and JoElle were hanging out at their favorite neighborhood brewpub, enjoying an after work refreshment, an idea came to him. Propose to her in the place where they met. Propose to her at the brewery they were sitting at right now!
