Primosale Cheese

Primosale is an Italian sheep's milk cheese primarily produced on the island of Sicily. The name itself literally means "first salt" and is used to describe early stages of maturation. Because the cheese is young, it has a bright white colored paste and milky in flavor. It is a rindless cheese that is semi-hard in texture.
