WELCOME Now the autumn is setting in there’s really no better place to escape from it all than the leafy and quite magnificent Christchurch Park, in Ipswich. It’s the location for our dog walk this month and it really is a jewel in Suffolk’s crown, an urban oasis, complete with the free to enter Mansion and Wolsey Gallery offering art, culture and heritage. This month Essential Suffolk has explored Ipswich and discovered there’s a great deal to see that might not at first meet the eye. Besides its beautiful parks and splendid Waterfront there’s much to discover not only if you want to shop and eat out but for those with more esoteric interests there are one or two ghosts as well. As we approach Halloween we look at Haunted Suffolk. We visited the Ancient House and discovered the story of Mary Lakeland who once lived there and The Woolpack on Tuddenham Road with any number of rogues, sailors and smugglers. Of course October is very much a month when we look forward and prepare for the winter and the Christmas period too. Our fashion pages are about wrapping up for the forthcoming winter season, we focus on Christmas dining and parties and we talk to Age UK about looking after the older generation through the cold spell. We’ve also visited a magnificent charity art exhibition by two war artists, held at Lavenham Hall, to commemorate the 1914-18 war. Stepping back further in time we’ve visited the amazing Suffolk village of Huntingfield to find out more about its forgotten Baron and link to the Magna Carta. As well as all of this Essential Suffolk has everything you need to know about eating out in the county, an exciting property guide and what’s on listings to make sure that you don’t miss anything on the cultural or entertainment front. Finally, for those celebrating Halloween, we have some gorgeous recipes so that this year you can do more with pumpkins than turn them into novelty lamps. We hope you enjoy them. T
hanks to our famous war poets – Wilfred Owen, Rupert Brooke, Robert Graves and Siegfried Sassoon images of the First World War never seem far from our mind’s eye. Their words created images that are indelible on the mind, proving art, in its many forms, plays a vital part in times of war. This month a powerful new exhibition of paintings, which opens at Lavenham Hall Gallery on October 15, brings war very much into the visual medium. It features the work of two acclaimed British artists; 91-year-old Ron Olley who has devoted the last 18 months to his war pictures and Anna Redwood who was invited to work with the
‘Desert Rats’ on their final tour of duty in Helmand province in Afghanistan. Gallery owner, Anthony Faulkner says he’s set up this exhibition because the subject matter is so important. “This is not an exhibition about the wars of yesteryear and today – it’s about the lives of those who have fought in them. It is not a money-making venture either, the aim is to raise funds for Help for Heroes.” He explained that he and his wife, the acclaimed sculptor Kate Denton, have known Ron for many years however it’s only recently that he’s started painting war pictures – as a tribute to his father who was a regular soldier and served in the First World War and was awarded Gallantry Medals at Ypres.
Ron himself served during the 1939-45 war with the 8th Army and he’s used that experience along with photographs of the 1914-18 war to create these paintings. Anthony says what makes these pictures special is that they are overlaid with first-hand knowledge of the desolation, despair and destruction of war. Having spent a career as an artist drawing for newspapers, advertising agencies, doing portraits and landscapes for a London gallery these pictures are very different from those Ron has created before. They are powerful, haunting and very memorable – so not surprising that he’s attracted attention from the national press with The Times devoting an entire page to this new work. ‰

Artist Anna Redwood
Anna Redwood, who shares this exhibition has also had national publicity – in the Daily Telegraph and on Radio Four – after her works were first put on show to critical acclaim in June. She comes from a military family and specialises in portraiture and military subjects. In 2013 she spent a month at Camp Bastion and in the Forward Bases in Helmand Province, at the invitation of the 7th Armoured Brigade. She describes the experience as ‘life-changing’ – shocked that there were people who wanted to kill her simply for being a Westerner or watching soldiers in camp carrying towels and toothbrushes in one hand with a rifle slung over the other.

Anthony says, “By bringing these two artists together we are seeking to make a major contribution to the region’s events commemorating WW1 and also to underline that, although the nature of the war has changed over the intervening 100 years, the experiences of the men on the ground remains a mixture of fear, elation, boredom and horror.”

SUFFOLK in brief Suffolk Community Foundation have announced the appointment of Tim Holder as their new Development Director. Suffolk born and bred, Tim’s career began at The East Anglian Daily Times before migrating to Times Newspapers in London. Senior roles in a variety of marketing and communications agencies were then followed by several years leading the UK division of an international charity where he co-created World Hunger Day – an international day of action against hunger and poverty. Chief Executive Stephen Singleton says “We are delighted that Tim is joining the Foundation’s team. Tuddenham Mill, hotel and restaurant in Suffolk is celebrating the prestigious Good Food Guide 2015 Editors’ Award for “the best set lunch”.The Good Food Guide Editor Elizabeth Carter has said, “It would take a jaded palate not to be thrilled by (relatively) new Head Chef Lee Bye’s cooking. The winners of the YBFs (Young British Foodies) 2014 Awards were recently announced at the TATE Britain and Suffolk company The Artisan Smokehouse run by husband and wife team Tim and Gill Matthews received the Top prize in the ‘Meat’ category. Judges said The Artisan Smokehouse went through a number of rounds presenting their choice of product to compete against diverse national meat producers from independent butchers to chacuterers, products as diverse as jerky to sausages. The Artisan Smokehouses ‘Smoked Beef Fillet’ won through on all levels! The judges of the meat category said ‘The dish totally blew us away. Stunning.’
In another ‘foodie’ award for a local business The Sibton White Horse has won the title of ‘Best County Dining Pub 2015’ from The Good Pub Guide. This is the second time the pub has won the award and comes on the back of a series of other accolades. See our feature on page 75.

HALESWORTH ARTS FESTIVAL St Marys (Halesworth), Holy Trinity (Blythburgh) and The Cut. October 11 – 26 This year the 13th Halesworth Arts Festival promises to bring north Suffolk alive with 15 days of events which range from jazz, comedy and theatre to classical, film, art and conservation. Opening the festival with The Armed Man is Halesworth Festival Voices & Orchestra with a performance written for the victims of the Kosovo conflict. The piece was premiered in 2000 and has since been performed more than a thousand times. As the 100th anniversary of the outbreak of the First World War approaches, this moving work with its powerful message of peace is being performed at St Mary’s Church on the evening of October 11.

The next day Seraphim, a wonderful female octet, under the direction of Vetta Wise explores the universal themes of birth and death in works by Bach, Brahms, Holst, Martini, Schubert, Tavener and others. The programme at Blythburgh Church will also feature the first UK performance of Peter Klatzow’s serene ‘Three Carols in Honour of the Blessed Virgin Mary’. Poet and Performer Patience Agbabi is appearing on October 14 in association with The Poetry Trust with an inspired remix of all the stories of Chaucer’s Middle-English masterwork The Canterbury Tales in her new poetry book, Telling Tales. From the Miller’s Tale to the Wife of Bath’s, this boisterous and lyrical collection gives one of Britain’s most significant works of poetry thrilling new life.
We all know – or we all think we know – the Bard’s ultimate love story, Romeo and Juliet. However this month at the New Wolsey Theatre performance company Custom/Practice is presenting a new interpretation that might just raise a few eyebrows. Shakespeare’s immortal lines are being segued with dynamic street dance in an attempt to lure new younger audiences to the joys of classical theatre. Custom/Practice is one of the UK’s most highly regarded young companies and has already got an impressive track record – last year it took A Midsummer Night’s Dream on a successful national tour so this new production should be something to look forward to. The dance has been created by the team behind Olivier Award Winning Hip Hop dance company Boy Blue – London-based choreographer Kenrick ‘H2O’ Sandy and composer Michael ‘Mikey J’ Asante. Boy Blue is acclaimed for presenting the perfect marriage of music and dance, laying down the beats and delivering thrilling and raw dance sequences. It’s also home to some of the UK’s most sought-after hip-hop artists. Both dance and spoken elements in this new vision of Romeo and Juliet will be underscored with newly commissioned music.
Also taking part is the Carducci String Quartet and Simon Callow, one of Britain’s best loved actors, performing The Man Jesus. Meanwhile Halesworth’s World Land Trust is bringing BBC 2’s Springwatch presenter Nick Baker to the festival, talking about the Weird Creatures of Paraguay and beyond.

SPILL FESTIVAL Venues across Ipswich. October 29 – November 2 The Spill Festival, now in its sixth edition, is renowned for its ground breaking experimental performances. This year it’s bringing more than 100 ‘uncompromising’ events on the theme of Surrender to Ipswich including live performances, installation, film and discussions. There will be world premieres and special commissions and events taking place in all sorts of unexpected locations like the old police station, churches and galleries. Expertly curated by Artistic Director Robert Pacitti, SPILL is supported by the Jerwood Charitable Foundation and has a reputation of unearthing upcoming talent. As a festival which champions the public response and role of art in society, SPILL will run a Think Tank programme alongside the performance schedule, specifically devised to spark public conversation and encourage active responses to the work on show. It’s set in an urban oasis, a place of refuge from ordinary life where eight characters play, fight, fall in love and learn to survive. In this playground of relationships, young lovers wrestle in a historic fountain, a graffiti artist sprays his story, a busker finds his only appreciative audience in a bag lady and a flag-waving bully rants worn-out political beliefs. Their stories intertwine, creating a modern day fairy tale that is alternately sharp, funny and cruel. The masterclass workshop with the Jasmin Vardimon Company is on October 18 at 2pm.
Think Tank Events will feature Heather Cassils and Diana Damian who will act as SPILL Thinker-In-Residence and SPILL Writer-In-Residence respectively. Cassils, an artist who uses the physical body as sculptural mass and recognised by the Huffington Post as one of 50 Transgendered Icons, and Damian, a London-based performance critic, will convene a group of writers who will operate across the festival to explore and deconstruct approaches to writing. They will both be working in person throughout the festival and their findings will be published online.

Haunted Suffolk
O
ctober is the month of Halloween, when the ‘veil’ between this world and a spectral parallel universe is supposed to be at its thinnest. It’s the month when we deck out our homes and gardens with carved pumpkins and children assume fancy dress to trick and treat – USA style. It’s also the month when the clocks change and a seemingly growing impenetrable darkness descends across daily life. And so we ask – was that the floorboards, the old water pipes or the tree outside creaking? Was that a shadow or a will o’ the wisp that you saw out of the corner of your eye or was it unexplained footsteps from beyond the grave with a message for the living? Of course you might well believe that it’s all fanciful imagination and that science and technology can explain many things, including an apparent flickering across distant marshes. There are some spooky things that remain unexplained though – many of which relate to the sea, secret smugglers tunnels that are alleged to have once existed and the contraband trade of centuries past.
The most famous of these must surely be the bells of Dunwich – dubbed Britain’s Atlantis – which toll apparently at times of an approaching storm. It might be the roll of the shingle and the swell of the waves but it’s said that the tolling of the bells from the lost city of Dunwich is particularly apparent in December. Once one of the ten largest towns in England and the seat of the first Bishop of East Anglia, Dunwich was a thriving town with 18 ecclesiastical buildings, a shipbuilding industry and even a mint. But then as now, like much of the east coast, erosion has been eating away at our shores and with the great storms of 1328, 1337, 1560 and 1570 this thriving community fell into the sea. Maybe it’s not surprising then that not only are the bells said to chime but there have also been reports of ghostly figures walking the beach from time to time. Fanciful perhaps, but in centuries past this might have just been a handy way for local smugglers to keep villagers and curious eyes away from the beach when landing their illegal booty.
There are legends of phantom black dogs right across Britain but perhaps the most famous is Black Shuck – apparently an apparition of the devil in disguise – and is associated with Bungay and Blythburgh. On August 4, 1577 this ghostly hound visited St Mary’s Church in Bungay during a thunderstorm and it began tearing around the congregation with its cruel teeth and claws. It then went off to Blythburgh Church where it killed and mauled three more people and left scorch marks on the north door. In those days of course extreme weather had no logical explanation and thunder storms were much feared for practical reasons because many buildings were made of wood. However maybe these could be incidences of the rare phenomena, and still unexplained, ball lightening? Legends aside’ there have been many reports in Suffolk of hauntings – and Essential Suffolk, accompanied by spiritual therapist Lizzie Falconer took a tour of two properties in Ipswich renowned for psychic activity. Haunted Suffolk
Tuddenham Road in Ipswich, the Woolpack is an ancient inn dating back to the 1600s with a rich history, it seems, of smugglers and intrigue. Rumour has it that there were once secret and haunted tunnels that ran from the pub to the docks that have since collapsed. But while there’s no modern day evidence to support this, many of the hauntings at the pub are said to be connected to the cellar beneath the bar. Tim Howard, a retired English teacher who now works as a barman says he has yet to detect this ghostly presence. Down in the chill of the cellar below the bar Lizzie felt definite connections with the sea and marine activities. “Someone was trying to hide something down here. I think there was a lot of trouble here and a lot of blood. I think somebody may have died and they are buried in a church nearby.”
handful of ghosts including an Admiral Vernon nicknamed Grog, a barman called George, a monk who died of starvation in a priest hole and a pony tailed sailor. There’s even a spirt said to be a ‘local’ called Fred, who’s seen inside the pub sometimes calling in perhaps, for a glass of ghostly ale.
She also had an overwhelming feeling that knives in particular might go missing – a check in the kitchen with the chefs revealed that yes they had lost knives, but put it down to forgetfulness. Another member of the bar staff, Hannah Farrar, says a couple of strange things had happened to her. “About a year ago I was serving some customers when a glass flew off a shelf. It smashed into tiny pieces, just like someone had deliberately thrown it. We sometimes drop glasses here and they always break with large chunks – this was completely different.” Subsequent research suggests the Woolpack is one of a number of establishments said to be among the most haunted pubs in the UK, with a

It also has a reputation for its ghost and Lizzie felt a presence immediately apparent especially towards the back of the building. “Something really sad happened here. Something with children. I feel like somebody was taken away from here. There’s the name of a woman, it was something simple and really pure – like Mary. It’s like someone is waiting here – waiting for someone to come back.” Lizzie said there were religious connotations, maybe nuns in black and pressed white linens and a man in a tall black hat. “I think if you were in here at night you’d see things move around the place.” A staff member confirmed, “We do sometimes find things on the floor when we come in during the morning. Strange things do seem to happen in this building but most of them took place when the building was renovated some years ago”.
According to website, Hidden England, there are claims that there might be some factual evidence to back up these occurrences in the form of a pamphlet at the local Records Office. Apparently there was real a woman called Mary Lakeland, a Professor of Religion, who was tried at Ipswich Summer Assizes for witchcraft 350 years ago. It was alleged that she killed her husband, a Mr Lawrence and a child. She was prosecuted, it’s said by the famous Witchfinder General, Matthew Hopkins and burned at the stake. There was no evidence however of her living at the Ancient House until Peter Jennings, a local writer and broadcaster discovered that her husband was a barber who used to live in St Stephen’s Lane, next door to the Ancient House. The likelihood too was that she wasn’t a witch; a secret room was uncovered during renovations to the property. So she may have been hiding someone, perhaps even Charles II, who was said to have taken refuge there after the Battle of Worcester in 1651. So from our investigations what have we discovered? While opinion will always be split on unexplained events whether they are fact or fiction, real or imagined for those with an interest in the supernatural Suffolk has a wealth of history that will no doubt continue to be debated and, who knows, perhaps this Halloween events may add to this ethereal heritage. NO TRICKS ALL TREATS In an attempt to reclaim the pumpkin and its cousins from novelty lamp to culinary centre piece Essential Suffolk spoke to David Grimwood, chef and proprietor of the delightful Froize Inn in Chillesford
W
ith Halloween soon upon us the farm shops and supermarkets will be groaning under the weight of bright orange pumpkins destined to be carved and placed outside front doors, signalling – it seems – that residents are open to the visits of the local children in search of sugary treats. Ironically, as the pumpkin briefly becomes one of the UK’s best-selling vegetables – Asda alone sells over 1,000,000 in Halloween week – few actually ever make it to the table and those that do tend to be turned into either pumpkin pie or soup. David Grimwood is not only a big fan of cooking with pumpkins but also grows his own at The Froize. He told us “while the ubiquitous orange pumpkin is a perfectly fine vegetable there are so many more interesting varieties out there. Pumpkins, marrows and squashes make delicious meals and it’s worth your time seeking out something a little bit different at farm shops and food markets. I have suggested some varieties for these recipes but if you can’t find the exact ones don’t worry, feel free to experiment. The most important thing is just to enjoy them” David has shared four of his favourite recipes with us.

Stuffed Yellow Badger Marrow with Sticky Red Onion
Pumpkin Risotto with Pigeon Breast
We’re all used to seeing green marrows but David prefers these beautiful yellow Badger marrows. The yellow Badger marrow doesn’t grow as large as its green cousin but one marrow prepared in this simple way will serve four people.
For this recipe David has chosen Festival pumpkins which, as well as looking beautiful in your kitchen, have a firm flesh – ideal for this dish. This recipe serves two people. INGREDIENTS
INGREDIENTS One yellow Badger marrow 2lb of your favourite butcher’s sausage meat Hill Farm rapeseed oil For the sticky red onion topping: 2 large red onions 2 tbsps soft brown sugar 2 tbsps red wine vinegar 1 tbsp black treacle Splash of red wine (optional) If you don’t have time to make your own sticky red onion topping choose a jar of red onion marmalade or caramelised onion chutney METHOD First make the sticky red onion topping: 1. Slice onions and place in a pan, with lid, with all other ingredients and heat gently stirring occasionally. 2. Let the mixture reduce until sticky but do not burn. 3. Let the mixture cool. Next 1. Split the marrow lengthways and remove seeds. 2. Place the two halves of the marrow in a roasting dish and drizzle with rapeseed oil. 3. Divide the sausage meat into two and shape into the marrow halves. 4. Generously spoon the red onion over the sausage meat. 5. Cover the roasting dish with foil and place in a preheated oven (180°C) and bake until tender. The cooking time can vary depending on the size and age of the marrow. Allow 1-2 hours and uncover for the last ten minutes. Serve with a rustic tomato sauce of your choice.
1 festival pumpkin Hill Farm rapeseed oil 100g risotto rice (50g per person) 1 onion 1 clove of garlic finely chopped A good handful of mixed wild mushrooms of your choice Sundried tomatoes 500ml mushroom or vegetable stock 50g Flaked parmesan cheese 1 tbsp double cream 4 pigeon breasts Salt and pepper Parsley METHOD 1. Chop the pumpkin flesh into cubes (approximately. 1.5cm) season with salt and freshly ground black pepper, drizzle with rape seed oil and place in a preheated oven (180°C) for 30 minutes. 2. Gently fry the mushrooms in rapeseed oil and the garlic. When cooked take off the heat. 3. To make the risotto: Finely dice the onion and 1 tbsp oil in your pan over a medium heat – not too hot. Add the onions. Once the onions are soft but not getting brown, add the rice. Stir well to coat in the oil for about 1 minute. 4. Now add half a cup of the stock and stir every now and then until it has all disappeared into the rice. Carry on adding and stirring in a large splash of stock at a time, until you have used up all the stock – this will take about 20 minutes. After ten minutes add 2/3 of the roasted pumpkin and sundried tomatoes. 5. In a separate pan add the oil and gently fry the pigeon breasts for approximately 2-3 minutes each side. Take off the heat and rest. 6. Check the rice is cooked. If it isn’t, add a splash more stock and carry on cooking for a bit. Once the rice is soft enough to eat gently stir in the double cream, mushrooms, half the parmesan and remaining pumpkin until gently heated through. 7. To complete the dish slice the pigeon breast and arrange in the centre of the risotto, sprinkle with flaked parmesan and chopped parsley to serve.

Scallopini Squash
Invincible Pumpkin Curry
David is passionate about these little delights. Eating the whole squash you get the crunch of the seeds, the softness of the flesh the firmness of the skin. They can be served hot or cold and will keep well in the fridge for up to ten days. They can be used as a vegetable and work well with roast lamb or they can be a perfect snack on their own with a beer of glass of wine.
David says that the Invincible is the perfect pumpkin to use in curry dishes. The flesh, which has a chestnut flavour when roasted, is firm and dry and takes on a sauce perfectly. As a base for this recipe David suggests you cook your favourite curry sauce and then add in the ingredients as described below. INGREDIENTS Scallopini squash Hill Farm rapeseed oil Smoked garlic Fresh rosemary Fresh thyme Good quality balsamic vinegar Cracked peeper Sea salt Parsley

1. Preheat the oven to 200°C 2. Cut the squash into segments and arrange in a baking dish skin side down with the smoked garlic. 3. Drizzle with rapseed oil add the rosemary and thyme and season with salt and pepper. 4. Bake in the oven for approximately one hour. You want the tops of the squash to catch and start to caramelise but not burn. 5. When cooked remove from the oven and drizzle with rape seed oil, add a few splashes of balsamic vinegar and chopped parsley.
1. Cube the pumpkin and aubergine and place in separate roasting dishes 2. Drizzle with rapeseed oil and place both in a preheated oven (200°C). The aubergine will be cooked and just starting to caramelise in approximately 30 minutes and the pumpkin will be soft in approximately 40 minutes 3. When cooked combine the two and add to your curry sauce. 4. While the pumpkin and aubergine are roasting deseed a piece of cucumber chop into small pieces and add to the yoghurt with a few leaves of finely shredded mint. 5. Serve with good quality basmati rice and top with a good spoonful of the yoghurt, cucumber and mint.
If you are going to store these in the fridge first let them cool and place in an air tight container.

SUFFOLK’S FORGOTTEN BARON October kicks off a year of celebrations to mark 800 years since one of the most famous events in England’s history – the signing of the Magna Carta – in which Suffolk and a little known village called Huntingfield played a crucial role. Anne Gould reports

rowing up in ‘sleepy’ Suffolk it was always hard to imagine it being a place of seismic historic shifts and a key influence in our national civil liberties. Long suffering school teachers might have told us otherwise, but the Abbey Gardens in Bury St Edmunds felt like a backwater, with swings, slides, a flock of hungry ducks and a few old ruins. Through the eyes of 20th and 21st century youth it’s more somewhere to play and hangout than the place of radical thought and revolt against the crown. Yet step back 800 years to the time of ‘Bad’ King John and the altar of Bury St Edmunds Abbey (on the site of the Abbey Gardens) was where the 25 ‘rebel’ barons took an oath of allegiance to force the King to accept the Charter of Liberties or Magna Carta. Of course the document itself wasn’t signed until June 15th the following year – famously at the meadows of
Runnymede – but Suffolk’s role was pivotal. The town’s motto ‘Shrine of the King – Cradle of the Law’ reflects this and a series of spectacular Magna Carta events are planned. Between October 19 and 24 there’s a Sound and Light trail and on the 28th a Cathedral reception with the Minister of Justice Lord McNally. But while Bury’s celebrations have been long in the planning another Suffolk community at the other end of the county is celebrating a link to the Magna Carta that, until a matter of a couple of years ago, had lain dormant, secret and almost forgotten for generations. The small exquisite village of Huntingfield is in the shadow of the magnificent Heveningham Hall near Halesworth. It’s the sort of beautiful untouched unspoiled Suffolk ‘secret’ that can take you by surprise, even if you’ve lived here all your life. But, while Huntingfield is on the road to nowhere
(the B1117 bypasses it completely) its importance to the foundations of western democracy are quite astonishing. Sally Simpkin, the vice-chairman of the parish council says that until two years ago villagers had no idea about its rich history. “We received a letter from the Magna Carter 800 national committee asking us what we were planning to do on June 15th 2015 to celebrate our links to the charter. It was the first we’d heard of it.” While Sally went off to London to find out more, other villagers set about searching out doing more local research. “We learned that Baron William de Huntingfield, who lived at Huntingfield Hall was one of three Suffolk barons – the others were from Framlingham and Clare who had met at the Abbey Gardens.” Baron de Huntingfield, she says, owned lands that covered all that the Heveningham estate owns today but stretched even further; over to the ‰

sea at Southwold and also right in to south Norfolk too. He was the Sheriff of Norfolk and Suffolk and was also the Commander of Dover Castle. Ten generations of father and son owned the land until 1377 when it passed through the female line to William de Ufford, the Earl of Suffolk. At the time the village was well known as a stopping off point for pilgrims en-route to take a passage from Dunwich to Europe and beyond. Sally says that unfortunately they have not been able to trace any surviving pictures of William and the house where he lived has since been rebuilt. But, in the process of searching for William, the village made another happy discovery – it was the home of Sir Edward Coke, an Elizabethan barrister and judge who wrote the Petition of Rights, which is the basis of Common Law. “It’s astonishing that Huntingfield has links to the Magna Carta, which was the basis for constitutional law and the American Constitution and the Petition of Rights too,” she says.
As a result the village has rallied round to organise celebrations obtaining £6,000 from the Heritage Lottery Fund for a special weekend next June. Sally has become involved in the national tourism side of the Magna Carta, tours are being organised across the country so that visitors can visit all they key places involved and Huntingfield is very much on that map. “We are the smallest of the Magna Carta villages but there’s already been a lot of interest particularly from the Americans.” Local celebrations will take place from June 13 – 15 and villagers have really joined forces to make it a weekend to remember. The village is going to be decked out in red, white and gold – the colours of the de Huntingfield coat of arms. “We’ve arranged for a village planting day with local nurseries so people can buy plants of appropriate colours for hanging baskets and tubs.”
They are in the process of setting up a Magna Carta trail which will take in the exquisite Grade One listed 15th century St Mary’s Church with it’s beautiful painted ceiling. It will take you past Huntingfield Hall and the magnificent Queen’s Oak where Elizabeth I was said to have rested on a visit to the area. Sally says the walk will start and finish at the village pub, the Huntingfield Arms. “We hope to set up a history board outside which will explain our history to visitors.” There are plans to get local children and schools involved in projects around William de Huntingfield as well. For the celebratory weekend itself there’ll be a hog roast, fireworks, bell ringers are going to be involved in a national peal of bells and the village will also have a fire beacon, which will be lit on June 15. TIME TO CARE The first of October has been dedicated as Older Person’s Day. Essential Suffolk talks to Age UK Suffolk about its work helping and supporting our silver generation
O
nce a fine old age was measured as three score years and ten – a spring chicken by today’s standards maybe. But, as we all live longer and increasing numbers of people get to 80, 90 and beyond the problems of age increase. There are issues with health, money, dementia and for those whose partners die and whose children have moved away, loneliness can become a huge complication too. That’s where Age UK Suffolk, an independent charity working solely for people in the county makes a vast difference. Jo Reeder, its Business Development Officer, explained that the charity has a whole range of services, offering advice
on benefits, independent living, dementia and domestic information. This includes everything from help with household tasks, shopping, gardening and odd jobs, she explained; “We want people to be able to live as long and happily as possible in their own homes and what we do is give them the support to do this.” This information alone has the potential to really change lives – in just one year for instance the charity helped 3,500 people claim more than £6 million in benefits that they were entitled to but had previously been unaware of. Besides this Age UK Suffolk has various other services, depending on which part
of the county you live in. There’s home help, in the west of the county a welcome home service offering practical support for those just released from hospital, there are seven day centres, computer lessons, Food ’n’ Friends groups that encourage people to host a meal once a month and a very vital befriending service too. Jo says that all of this requires dedicated fund-raising and is achieved in various ways through the Age UK Suffolk shops, events and donations. In October for instance there’s a campaign to promote inspirational older people on social media. “You can nominate anyone – your mother, a grandparent or even ‰

BEFRIENDING What’s wrong with kindness? A question that from time to time we might all ask but one that has taken Age UK Suffolk volunteer, Jane Hamerton on a three year journey that’s really changed lives – for the better. She’s just one of scores of people across the county who have given up their time to make a regular commitment to visit an elderly person for an hour once a week, just for a chat. While Befriending is just one of the services offered by Age UK Suffolk, it’s one that really reaches out with humanity to people who are alone and just want someone to talk to. “Three years ago I was on Facebook and people were talking about giving up things for Lent,” explained Jane. “I thought this was a little bit selfish and asked what’s wrong with kindness and decided to really do something about it and offer my time to help someone instead. So I got in touch with Age UK Suffolk and asked to be a befriender. I have always had an affinity with older people because I think they have so much to offer.” It was six months later when Jane’s vow was put into action after being CRB checked, vetted and trained and she was matched with a centenarian, Freda, half a mile from her home in Ipswich. “She lives so near I can cycle which is great and since then I have become a
massive part of her life and the reason she is still in her home.” Jane, who runs a small business in Ipswich, says they just sit and just talk about relatives and things that have happened. They have become great friends. As they’ve got to know each other she’s realised that they’ve become like a family and it’s a time that they both really look forward to. “The brilliant thing is that Freda’s relatives know I am a safe person and if something happens to her I am someone she can contact close by to ask for help. I’ve also got to know other befrienders and the sorts of things they talk about can be very varied. The charity takes immense care to match people. So there may be a man who wants to meet someone to talk about motorbikes or sport or a woman who wants to talk about a hobby she’s involved in.” Jane said, she’s been so impressed with the service and particularly the rigorous vetting procedure that she’s felt confident enough to ask for an Age UK befriender to visit for her own aunt who lives alone in Sussex. “It’s also really helped me in so many ways. I have a really hectic life with my business but visiting Freda means that I take an hour out every week to sit and do something completely different. It’s very rewarding.”
Fuel poverty and keeping warm have been headline news since the start of the most recent money crisis and the people who suffer most are the elderly. But a ground breaking campaign by the Suffolk Community Foundation in partnership with Age UK Suffolk, will see extra money going to homes in real need. For the fourth year running the Surviving Winter Appeal asks those who can to forgo their winter fuel payment to be redistributed. Last winter £67,003 was raised in Suffolk, helping 259 older households cope better during the colder months, with an average grant of £210. The appeal was promoted last year by the East Anglian Daily Times, Ipswich Building Society, the East of England Co-operative Society and had the support of a generous private local trust. Separately, Suffolk Community Foundation also gained additional support from the ‘Warm Houses, Healthy People’ initiative which enabled extra support to be distributed to vulnerable people through local Citizen Advice Bureaux and REACH. s the county town there’s a presupposed and somewhat ubiquitous identity for Ipswich as a large urban centre with big high street names and while that’s not completely inaccurate Ipswich is also a town with a long and interesting history, far reaching cultural offering and a strong core of independent retailers that differentiates the town from others of its size. Located on the meandering River Orwell the town is ideally placed as a base whilst exploring the county. The waterfront is the undoubted jewel that seamlessly blends moored yachts, the iconic university building, a working port, modern apartments and the nationally renowned Jerwood DanceHouse – home to DanceEast – alongside a lively mix of retail bars and restaurants. But the marina is not just to be enjoyed in the summer – it’s a hive of activity during the festive months with a good choice of dining venues for a lunch or evening meal with family and friends or even a Christmas party. As well as Jerwood DanceHouse East Anglia’s waterfront town offers numerous
key cultural venues. Ipswich is home to three producing theatre companies – the New Wolsey Theatre, Eastern Angles and Gecko, plus the Pacitti Company. If you are interested in history, Ipswich is a really interesting place to explore. As England’s oldest town it first took shape in the Anglo Saxon times. The town’s history includes the birthplace of Cardinal Thomas Wolsey and has strong links with Geoffrey Chaucer, Charles Dickens and Lord Nelson. The history today is marked by a number of architectural treasures including the outstanding Grade 1 listed Unitarian Meeting House, one of Ipswich’s oldest surviving buildings. Next to this is Norman Foster’s Willis Faber building which was completed in 1975. It is one of the modern icons of high-tech architecture and the youngest building in the UK to receive Grade 1 listed status.

Other destination exhibitions in the town can be found at the UCS Waterfront Gallery, hosting nationally acclaimed artists as well as ‘creatives’ of the future, and the Ipswich Art School that has hosted two internationally renowned Saatchi Exhibitions. EYE HEALTH Nuffield Health Ipswich Hospital Consultant Ophthamologist Mr Deepak Vayalambrone talks about the importance of looking after your vision, the health of your eyes and the treatment of one of the most common eye problems – cataracts. Many of us take our eyes for granted and do not look after them as well as we should. Research suggests that regular eye tests, healthy eating and not being overweight will help keep your eyes as healthy as possible and reduce your risk of developing an eye complaint. Vitamin A is particularly important in helping to maintain the good condition of your eyes. “In addition to the long-standing association between carrots and good eye health due to their vitamin A content, spinach, kale and dark, leafy greens are now known to be important. They contain an anti-oxidant called lutein, which has been found to increase pigment density in the macula. A greater pigment density can lower the risk of macular degeneration for example”, explains Mr Vayalambrone. Factors such as smoking and sun damage also have an effect on our eyes. Over 1.8 million people in the UK are living with sight loss, (www.visionmatters.org) for around 53% of these a simple eye test and some new glasses could really help! This highlights that regular eye tests are really important. It’s easy to neglect your eyes because they rarely hurt when there’s a problem. Having an eye test will not only tell you if you need new glasses or a change of prescription, it’s also an important health check. It can spot many general health problems and early signs of eye conditions before you’re aware of any symptoms – many of which can be treated if found early enough. It is recommended that you have a sight test at least every two years and visit your GP if you are concerned with any aspect of your vision.
Anyone can develop sight problems, but some people have a higher risk of eye disease. It's especially important to have regular eye tests if you are above 60 years old, developing diabetes or already diagnosed diabetic. Certain ethnic groups are also more at risk of eye disease. A family history of eye disease could also be another potential factor. Cataracts are probably the most common eye problem we hear about but they are very easily treated. SO WHAT ARE CATARACTS? Cataracts are cloudy patches in the lens (the transparent structure at the front of the eye), which can make vision blurred or misty and can develop in one or both eyes. Over time, the patches can become bigger and more of them can develop. As less light is able to pass through the lens, vision is likely to become more distorted and the cloudier the lens becomes, the more sight is affected.
CATARACT SYMPTOMS Symptoms of cataracts can differ for each person, depending on the type of cataract they have. They may include blurry vision or glare from car headlights, especially at night. Sunlight or indoor overhead lighting may seem to be too bright or cause glare. You may notice that bright colours appear dull. You may also notice everything seems to be slightly yellow. Sometimes cataracts can cause double vision and you may find that you are frequently changing contact lens or glass prescriptions. The degree of vision change depends on the intensity of the light entering the eye and the location of the cataract.
In most cases, a cataract will continue to develop and surgery to remove it is the only way to restore vision.
Occasionally you may experience cataract-like symptoms, but those symptoms may be a sign of another eye-related problem. Mr Vayalambrone stresses, “It is important to approach a healthcare professional such as your doctor or optometrist if you are experiencing any distortion of your vision (straight lines appearing bent or wavy) or a sudden onset of numerous black dots known as ‘floaters’, not just deterioration in your sight”.
Many people are able to return to their usual daily routine 24 hours after the operation. The procedure can be performed in 20 minutes in many patients, and it may be possible to have a local anaesthetic administered through eye drops, eliminating the need for any injections. Vision is improved almost immediately. If you have cataracts in both eyes, surgery will be carried out on separate occasions. This gives the first eye time to heal and your vision time to return. Cataract surgery is common and associated risks are low – your consultant will discuss these with you and explain the procedure fully during your consultation.

OPTIONS FOR FUNDING CARE HOME FEES

How to fund a shortfall in care home fees can be a difficult and stressful situation for the person requiring care but also for attorneys. These are often the children, trying to fund the shortfall. The first place care fees should be funded from is income. Often this will not be enough to cover care fees in full. Income is likely to include State Pension, Attendance Allowance (higher or lower) and private pensions. There are various options available in order to fund a shortfall and often a combination of approaches may be appropriate. Existing savings and investments should be reviewed as to whether these could meet the shortfall. Subsequently a property may need to be sold, which can be a difficult decision to make as often it has been the family home for a number of years. With available capital or property sale proceeds there are a number of options available to meet a shortfall. One would be to fund the shortfall by depleting the capital whilst held in cash accounts on a monthly basis. With current interest rate levels this will simply deplete the cash accounts with minimal potential for growth.
Alternatively an option is to invest some or most of the capital in line with an individual’s attitude to risk and invested across a range of asset classes including Fixed Interest, UK Equities, Commercial Property and Overseas Equity. Over time fixed monthly withdrawals can be taken from the investment portfolio to cover any shortfall. It is possible the level of withdrawals will deplete capital but by investing the proceeds as opposed to holding the capital in cash there is greater potential for growth over the medium to long term. A further option is to purchase an immediate care plan. The cost is dependent on medical information and care requirements. The plan can provide monthly payments to the care provider tax free to cover the costs. Immediate care plans can be good value if the individual requiring care survives longer than expected however if they survive a shorter period than expected they can offer poor value. To start there’s a warming cream of vegetable soup with thyme and garlic, a seasonal goat’s cheese salad with figs and walnuts jewelled with pomegranate and mint crystals but we were tempted by Atlantic prawns with Asian flavoured salad and the barbecue pulled pork terrine. The prawns are deliciously nestled in a fresh, crunchy salad that

An East Anglian beauty replete with bacon rolls, sage and onion stuffing, roast potatoes and all the rest will keep the traditionalists among you happy while vegetarians are well catered for with parsnip, honey and chestnut roast loaf. Our choices of 12 hour braised beef shin with peppercorn sauce and baked fillet of sea bream proved great alternatives; the beef was so tender it fell apart at the lightest touch and although the essential Brussel sprouts weren’t available for our rather early visit they’ll sit very nicely among the other seasonable vegetables. The sea bream pulls away from the traditional though as it’s served with a Moroccan spiced lentil and chickpea casserole and is packed with flavour. Side stepping the very tempting Christmas Pudding and cheese options we chose mulled wine trifle and a chocolate choux pastry dessert. The trifle looked like Christmas in a glass – rich, red, wine soaked fruits, golden spiced cherry custard and green candied pistachios topping the cream – and as we dug through the layers the pistachios tumbled down to give a satisfying crunch to every mouthful. The choux buns were truly indulgent; generously filled with cream cheese and praline mousseline and topped with white chocolate sauce – an evening of dancing would certainly be in order to work off a few calories – especially as there’s still coffee and mince pies to come! PUB WALKS with Darcy
We’ve spent a lot of time this month exploring what Ipswich has to offer, so where better to take Darcy for her latest pub-dog-walk than on a circuit of Christchurch Park, finishing with a beer and a bite at The Woolpack on Tuddenham Road Regular followers of our ‘Pub Walks with Darcy’ series will know that we love getting away from it all with a countryside or coastal walk whenever we can. The key is to find a great dog friendly pub for refreshment once the walk’s complete and I have to admit that I wasn’t expecting to find that combination so close to Ipswich town centre. While The Woolpack has a spacious car park it should be noted that it is strictly reserved for patrons but there’s plenty of roadside parking very close by. From the pub we enter the park through the Bolton Lane entrance and then follow a circuit that takes in all the various sights on offer including the Mansion, Cenotaph and Wilderness Pond.

For me though the northern end is the favourite, where the parkland really opens up, dotted with countless magnificent trees. Of course a park walk is ultimately so versatile. There are loads of well laid out paths in Christchurch Park and following all of them it’s possible to wander for hours easily forgetting the hustle of urban life just a few hundred yards away. Our route will probably take 30 to 40 minutes depending on pace leaving plenty of time to enjoy a freshly brewed coffee, a well-earned pint or whatever your favourite tipple might be at the Woolpack. If you time it right there’ll be freshly baked Scotch eggs and pasties on the bar too!

1. With the front entrance to the Woolpack pub at your back cross Westerfield Road and enter the park through the Bolton Lane entrance approx. 50 yds down the hill on your right. 2. As you enter the park keep left and as the path forks keep left. Continue past the Wolsey Art Gallery and tea room to the front of the mansion. 3. Turn left in front of the mansion and circle the front lawn. Continue back toward and then past the mansion and take the left fork towards the Round Pond. 4. Before you reach the pond the path turns left towards the lower Fonnereau Road entrance.Turn left and then immediately right towards the Cenotaph. 5. Passing the Boar War Memorial on your left turn right following the path away from the Cenotaph towards the Wilderness Pond. As the path forks keep left and then head north keeping the pond immediately to your right. 6. As the path forks keep left towards the loo building and follow the path up the small incline onto the tree lined path above the croquet lawn and tennis courts. 7. Just before the last tennis court turn left, through a short tunnel and then take the right hand path through the trees. 8. At the T junction turn right, through the gates crossing the bridle way and back into the main area of the park. Continue to the next path junction and turn right. 9. Follow the central path past the play area, forking left at the Martyrs Memorial, passing the visitor centre and back to the entrance and back to the Woolpack.

RAMSHOLT REVISITED Ramsholt is a tiny village beyond Sutton Hoo on the road towards Bawdsey where the pub, enviably positioned right on the banks of the Deben, beckons for some riverside relaxation. Lesley Rawlinson explores
W
e all tend to be creatures of habit. Living and working where we do my husband and I often make time to enjoy the Deben estuary but almost always from its southern/western bank. Whether we’re down at Felixstowe Ferry, walking the dog and enjoying a pub shaped pit-stop at Waldringfield or taking a mooch round the boatyard and quay at Woodbridge, we have a tendency to stick to ‘our side’ of the river. It wasn’t until very recently, when a friend asked if we’d been to the Ramsholt Arms lately, that we even considered giving it a look. But why? After all it’s a pub you want to love. It’s in a stunning location that beckons for walking, cycling or just a drive out into the beautiful Suffolk countryside. However the answer is very simple and possibly one of the single most powerful reasons not to make the effort – in it’s a previous incarnation we’d just got fed up of it not living up to expectations. Admittedly it was some years ago but with all the very lovely options closer to

home we’d made a subconscious choice not to give it another chance. But of course things change and I’m very glad to have been redirected to this incredibly pretty spot on the north eastern side of the river because in my ignorance I was certainly missing out. In the summer of 2013 the successful team behind The Crown at Ufford – Polly and Max Durrant and head chef Will Hardiman - took on the Ramsholt Arms. They had a clear vision for reestablishing the venue as a ‘must visit’ for locals and holiday makers alike and despite the setback of a kitchen fire in January this year – that meant they couldn’t serve hot food until the middle of March – the couple have achieved exactly that. We called in for an evening meal back in late August. There was still enough warmth to enjoy a drink outside on arrival and there were a number of families doing the same; making the most of the last few days of the school holidays.
But you don’t need good weather to enjoy Ramsholt. Inside the pub the huge picture windows mean that from most seats the view westwards across the river can be enjoyed and of course, a rare phenomenon in our east coast county – a waterside sunset. We were lucky enough to bag a corner table tucked between dual aspect windows and the changing light over the evening water was just incredible to watch. The interior of the pub has had a considerable ‘refresh’; clean, bright and simple with a riverside twist there’s an airy outdoor feel but I can also imagine cosying in by the wood-burner after a good dog walk. I was pleased to see too that the menu is relatively uncomplicated and includes a good smattering of what I would consider to be traditional pub style food choices. That’s not to say though that the food isn’t interesting – far from it! I decided to start with goat’s cheese and red pepper pate on toast and my husband took an unusual stance for him

ordering a half pint of shell-on prawns. He can’t usually be bothered with the ‘faff’ of shelling the wee beasties but said there was something about sitting overlooking the river that made him happy to while away some time with this quite therapeutic task. I was quite simply stunned with my starter – beautifully presented and full of well thought out flavour combinations, even the side salad (so often a poor relation and given little thought) had me reaching for the superlatives. I was tempted to order sweet and smoky chilli con carne to follow but swayed at the last moment, wooed by pan roasted English lamb rump served on crushed new potatoes with a chickpea and chorizo stew. All that juicy, pink lamb infusing the potatoes from above while the chorizo worked its magic from below it was a temptation I was glad to have given in to. Adrian stuck to his fishy theme choosing the open fish pie. Cod, salmon, smoked haddock and
crayfish all topped with creamy dill mash – absolutely delicious. We always like to have a good ‘nose’ at the food ordered on tables around us and from what we could see (and the comments we could politely over-hear) we weren’t alone in our praise of both the quantity and quality on the plates before us. Of course it’s always dangerous to spy on desserts arriving at another table, especially if the will to resist is anything less than iron-clad. Across the way from us a family had ordered a variety of sundae style desserts, delightfully presented in retro styled ‘knickerbocker glory’ glasses. It had to be done. One banoffee mess – a delightful toffee and banana twist on the classic Eton mess – and one chocolate brownie sundae later it was doubtful we could ever consume another calorie. Rich, creamy extravagance, the former packed with home-made meringue and honeycomb and the latter bursting with chocolate by the bucketful.
They’re the kind of treat desserts that will keep customers of all ages coming back for more, I sure. The menu can change from day to day, depending on the availability of good local and seasonal ingredients so it’s going to be a real treat to return because return we shall. I can envisage an autumn visit for a good long riverside dog walk followed by a hearty, warming meal relaxing and enjoying the views. What more could we wish for?

For the past decade Lauren Gregg, Head Chef at Café 1885, has had the opportunity to work with a host of very experienced and gifted chefs. Working alongside such talent she’s created some amazing dishes and feels that the heart of every dish should be good fresh local ingredients – which exactly reflects the ethos at Snape Maltings. The café is right at the heart of the Maltings and with so much wonderful Suffolk produce right on the doorstep it’s not surprising that Lauren is constantly inspired by our county’s seasonal offerings. FISH CURRY AND COCONUT RICE
INGREDIENTS
METHOD
Serves 6
Curry 600g of fish (mixture of salmon, cod, haddock and prawns – 100g per person) Paste 2 red chillies 1 onion 1 lemongrass stick 6cm of fresh ginger 1 tbsp sesame oil 100g Demerara sugar 2 cloves garlic 4 lime leaves Juice of half a lime 1 tbsp coriander 1 pint fish stock Half a tin of coconut milk Salt and pepper
1. To make the paste, place the de-seeded chillies, onion, garlic, ginger, lime leaves, lime juice, Demerara sugar, sesame oil and lemongrass into a food blender and blitz. 2. While the rice is cooking place your fish stock and coconut milk into a separate pan and bring to the boil. 5. Remove from the heat and add the warm paste and fish. Cook on a low heat for eight minutes to allow the fish to cook. Add the coriander at the last minute. 6. Once cooked, drain the liquid from the rice and place into a serving bowl and add the fish curry.

SIBTON WHITE HORSE As the Sibton White Horse once again receives national recognition Essential Suffolk caught up with landlords Neil and Gill Mason to discover the secret of their success
W
hat is the secret of success? Whether on a personal or business level it’s something I’m sure we’d all like to know and, based on their recent track record, talking to Neil and Gill Mason from the Sibton White Horse may be a good starting point. The hard working husband and wife team are now entering their tenth year at the pub and this significant anniversary has been marked by them recently being awarded the title of ‘County Dining Pub of the Year 2015’ by the Good Pub Guide. This is the second time the pub has been awarded this accolade – having previously won in 2012 – and they have also been awarded the title of Suffolk Dining Pub of the year three times in the Suffolk Food Awards as well as maintaining an AA Rosette since 2010. So what do they put their success down to? Neil is very clear. “When we arrived in Sibton we had a definite vision for the pub. We wanted to produce excellent pub food but also wanted to make sure we remained a good traditional country inn where local residents know they are equally welcome to pop in for a drink. I think some ‘gastro’ pubs have lost
sight of this and non-diners are not always made to feel welcome. I like to think that we have been successful in creating a seamless blend between pub and restaurant.” Gill added “We have a great team here, made up of local people who are proud to play their part in the pub’s success. I have worked with some good chef’s and two years ago we promoted one of our team, James Finch, to the role of Head Chef and this has proved to be the right decision. James has a passion for local ingredients – much of which comes from our kitchen garden – and a talent to create evolving menus based on the seasons which people want to come back and eat again and again.” The appeal of the White Horse however is not only to ‘locals’. Since taking over Neil and Gill have pursued an ongoing programme of renovation and development of their accommodation, which has recently been completed. As a result they can now boast four stars from both the AA and Visit England for their six rooms situated in a separate annexe beside the pub and they have also been awarded the Visit Britain Breakfast Gold award. Having stayed there the
Essential Suffolk team can only fully endorse this recognition. There is something very comforting about seeing the hens that lays your breakfast eggs contentedly pecking and strutting in the kitchen garden beside the restaurant. Despite their success the couple have no intention of sitting on their laurels. Neil commented “We have never taken our success for granted. We are always looking for ways to improve the experience for our valued customers. Some changes are big such as the development of our rooms and the building of our outside eating area and some are more subtle. We have just introduced a new look for our menus and introduced new locally made table linen. In a previous column I recounted the story about clearing a house where finding an accumulation of ammunition and hand grenades resulted in the Firearms Services being alerted to attend. Thankfully there were no missiles, land mines or mortars involved.
Well, the mortar is the bowl like object which can be found in a variety of materials including stone, bronze, wood and bell metal. The early metal mortars usually have rather larger flared rims when compared with the base giving a somewhat waisted appearance.
involved in the original partnership! Very often they became ‘divorced’ with the mortar being used on its own for some other purpose while the pestle lay idly by in a drawer or a cupboard, largely as there is not much use for a pestle on its own!
But mortars do regularly turn up in auctions, not of the explosive kind (mortars that is!) but more the ones which you use when grinding foodstuffs or medicines.
Decoration varied and the early models might have involved heraldic emblems, monograms, simple initials, decorative bands, probably in a relief pattern and occasionally dates (of the numerical variety). Those mortars at the very upper end of the scale might even have carried a royal coat of arms.
For those of you of a studious disposition then all this talk of mortars in either of the foregoing guises may well be a little confusing; but such is the wonder of the English language that the academics among you may well be contemplating your graduation photographs complete with mortar board – airborne or not!
The first thing to clear up is do you know your pestles from your mortars? Very often the two are talked about together but which is the vessel and which is the item used to crush, pulverise and grind?

SHOW STOPPERS Catharine Howard looks at how to make the most of your Autumn dahlia display
D
ahlias yo-yo in and out of fashion. Right now the spool is taut and this genus of perennials is spinning high. Funny to reflect then that the first plants arriving from Mexico 200 years ago were introduced as food - an alternative to the potato. James Wong, ethno-botanist and TV presenter, praises them for a flavour reminiscent of the Jerusalem artichoke and recommends grating them into that delicious Swiss dish, rosti. A word of caution, the breeding for ornamental looks has been at the expense of flavour and the bits you eat are the fat salami like roots that deer and rabbits love too. It was the Victorians that crazed the fad for competitive bloom-growing. Dahlias hybridise easily and the breeding has seen them go in a bewildering direction of colours and flower shapes. Why use them? They bring punch. The kernel of dahlia excellence is that they put up strong growth in one year, heave themselves to about a metre and a half and then start spitting buds into magnificent showy blooms. This firework display starts in July, just when your roses are a little sulky and many of the favourite perennials are spent. Then there is the choice of colour – not dissimilar to choosing swatches of silk.
Dahlias are a flower arranger’s delight and picking them will promote the formation of new buds. Picking aside, how do you grow them? I bought my tubers in February and potted them straight into two litre pots. A little bit of nurturing is involved at this stage so, keep out of frosts and the pots should be kept watered but not drenched. A cold frame would be an ideal place to store them but a sheltered place, perhaps under a tree, with some protection, will keep the worst of squalling rain at bay. Once the frosts are over, plant out, stake with a stout piece of wood. Dahlias are massy plants so leave a metre between each one. Put out slug pellets round the new plants. Once the buds form, feed every two weeks or so with a liquid feed and water once a week if we get a really dry spell. From then on it is plain sailing; tie in as the plant grows, keep an eye out for snail incursions and get ready to start picking. The dahlias will flower and flower until the first frosts. At this point, cut back the top growth and mulch heavily with leaf-mould or similar. As well as filling gaps in your borders dahlias look great in large pots on your terrace or by your front door.
MY FAVOURITE DAHLIAS J Gerri Hoek – pale pink and reminds me of a peony; Western Spanish Dancer – a shockable two tone red and yellow sea urchin; Downham Royal – dark very small controlled honeycomb; Happy Halloween – super orange; Bleu Bayou – lilac bloom with dark centre; Sam Hopkins – velvet black red; Bishop of Llandaff* – pillar box red on black stems; Thomas E. Edison – shocking magenta on black stems; Twynings After 8* – that black again with white flowers; Jescot Julie – orangey with a plum afterglow. I have a certain weakness for the black foliage – but all dahlias are leafy and robust healthy looking things. In order to encourage pollinating insects, choose the *single flowered forms.

hen Walter Bristo started the Bristo's company as a horse and carriage taxi firm in Ipswich around 1910 it’s unlikely he could imagine how it would develop to become the prestigious Renault, Dacia and Škoda franchise we see today. A year ago we reported on their brand new Renault showroom, and regular readers will have seen our article last month about another growing part of the business – electric cars. However the big news this autumn from Bristo’s is the impressive refurbishment of their Škoda showroom. Answering our questions is Ian Head, Bristo’s Managing Director.

Speaking of staff can you give us a Who’s Who of your Škoda showroom?
Well, I’d say the overriding feeling of the new showroom layout is openness. We’ve got a wonderfully light and bright space here on Woodbridge Road and the refit has made the most of that. Of course the key thing is to have plenty of space to look around the Škoda range in the warm and dry, and then to feel comfortable to take a seat and discuss what is, after all, quite a major purchase with our very knowledgeable staff.
Yes, the service reception and waiting area has all been brought right up to date too. We’re interested in making sure that our customers have a completely positive experience whether they’re coming in to buy a new car, have their current car serviced or MOT’d or simply make an enquiry. We hope you’ll agree that the new showroom feels far more accessible with our staff positioned where they can be of most help.
Mark Sherman is our long standing and hugely dedicated General Manager. The sales team comprises of mature experienced advisors Rod, Chris and Jonathan – guided by Sales Manager, Mark Perry. Where were you born and how did you come to live in Suffolk? I was born in Gravesend, Kent and grew up in Medway. I worked in London and moved up to Suffolk 18 years ago as we decided that we wanted to bring our family up here. What makes the county special? The people, the businesses and the countryside. It took a while to get used to people talking to me as I pushed my daughter along in her pram having come from London! I love it that I now know so many different people in all sorts of walks of life. There are also so many entrepreneurial people up here running their own companies and shops, so there's real variety. I love the fact that I can take my dogs out for a walk without having to get in the car first or when you head out to the coast it’s a drive through stunning countryside.

Do you enjoy walking and if so where do you like to walk? To be honest I don't get a great deal of down time but when I do I love to walk my dogs. I have two very energetic huskies that will happily walk for miles. There are some lovely walks around here, I usually walk them over farm land to Keddington or along the old train line to East Town Park in Haverhill where they can go for a paddle in the river. We will sometimes drive out to the coast or over to Ickworth House for a walk in the park. Where do you like to eat out? I don't get the chance to eat out much other than with work or a quick bite with the children. There are some lovely pubs near me and great restaurants in Newmarket and Bury. What my husband and I do like to do occasionally is sneak in a weekend away. There are so many lovely high quality places in Suffolk we don’t have to go too far. I love the Crown and Castle at Orford and recently stayed at The Bildeston Crown. Are there some special places in west Suffolk that you’d recommend to the people of the east? Haverhill has a fabulous arts centre which has a very good programme. We go to the cinema nights, which are particularly special as you can take your glass of wine in to the screen! They also have some fabulous comedy nights. A couple of years ago I saw one of my heroes, Humphrey Littleton and his

band in what turned out to be his last tour. Bury St Edmunds obviously is beautiful. It's great for a wander on a Saturday morning, lots of good, independent cafés and fabulous stalls on the market. Ickworth is lovely and of course Newmarket for the races. I love the ‘Newmarket Nights’ and go to a couple of the concerts every year. We’ve seen some fabulous bands; highlights for me have been Spandau Ballet and Simple Minds. One of the things I like about the races is that you can go with the kids and a picnic or dress up in your finest, everyone is welcome. Adnams, Aspall’s or Greene King? Aspall’s for me! I love their cider and don't drink beer. However I do buy, and very much enjoy, Adnams rather fine gin and my husband enjoys a pint of Greene King’s IPA. Do you have any hobbies? I have three children, two dogs, a busy husband and several jobs so not much time left. I do like to sing and have done a couple of the really big chorus events at the Albert Hall. Where do you like to shop? I shop locally whenever I can. So for me that means the local butchers in Keddington, local farm shops, I shop at the market in Haverhill on a Friday, excellent fruit and veg stall and a fresh fish van. I fit my shopping in around work, for instance if I’ve been in Bury St Edmunds I’ll pop into the farm shop at Depden which stocks a lot of Suffolk produce, including Suffolk gold cheese and Pinney’s smoked fish. It also makes rather fine sausage rolls! Is there one picture you’d take to sum up our county? One would be a real challenge because you need the water and the countryside and some of the beautiful architecture. I'd go for a shot across the river Stour at Clare Country Park showing the lovely Victorian station in the background. Where would you take newcomers on a tour of the county? Depends how long they’ve got! I usually take people over to Lavenham to see all the Tudor buildings or in to Bury St Edmunds for the day. If we had more time I’d take them over to Orford and the coast too.
