Apple OH MY MY Time
There is something significant yet familiar about autumn. The air is sharp and clear. Leaves turn brilliant shades of red, orange and yellow and float to the ground. Despite the inevitable winter, we toast the harvest with a hardy cheer for the abundance of our favorite fall fruit– the apple.
Cozy days with the smell of apple pie in the oven, a mug of hot apple cider, and the first bite into a crisp red apple freshly picked from the orchard are all fondly remembered and enjoyed once again.
Apple Time in the mountains is a glorious celebration of our area’s history, culture and heritage. We hope you all enjoy these recipes from the Gilmer Chamber of Commerce and The Ellijay Lions Club.

Bottoms up! These Apple Cider Floats, by Paige Green, can be a dessert all on their own.

Drizzle caramel sauce on sides of glass. Place 2 to 3 scoops of ice cream in your favorite float glass. Pour equal parts apple cider and sparkling cider over ice cream. Honey Crisp Apple Roses
These lovely Apple Roses, from Thanna Chadwick, make a delightful addition to any occasion.
Ingredients 1 large apple, cored and very thinly sliced 1/4 cup white sugar 1 teaspoon ground cinnamon A pinch of my secret spice (allspice) 1 sheet frozen puff pastry, thawed 1/4 cup melted butter 1 egg 2 teaspoons water 1/8 teaspoon of vanilla 1 teaspoon confectioners’ sugar (optional)
Preparation Preheat oven to 375 degrees F. Use cooking spray on metal muffin pan and dust with white sugar. Place apple slices on a plate, overlapping slightly if necessary. Microwave on high about 45 seconds, just until slices have softened a bit. Cover plate with plastic wrap and a kitchen towel. Mix together sugar, allspice, & cinnamon in a bowl. Roll puff pastry sheet to less than 1/8-inch thickness. Using a pizza cutter, cut two 3-inch by 12-inch rectangles. Reserve remaining pieces for another use. Spread melted butter over dough; top with a generous amount of spice-sugar. Place apple slices along 1 long edge of dough, about 1/4 inch beyond edge of dough, overlapping slices slightly. Fold bottom half of dough over the apple slices to form a long “folder” of dough with rounded edges of apple slices exposed. Beat egg and water together in a bowl. Paint surface of dough with egg wash. Sprinkle with more spice-sugar, to taste. Starting from one end, roll dough not too tightly to form a rose-shaped pastry. Seal roll with end of dough strip. Transfer roses to pan. Sprinkle with a little more spice-sugar. Place directly on middle rack of preheated oven. Bake until well browned, about 35 minutes. Remove from oven, cool 5 to 10 minutes. Remove apple roses from pan and finish cooling on rack. Dust with confectioners’ sugar before serving. ACLM

He’s Yankee born but wooed indeed By Appalachian mountains; You might say it’s a love affair. He dreamed of this life as a boy Smoky Mountain National Park Especially beckoned him there. He’s hiked 500 miles of trail Known well as the Appalachian; Yet he is an educator And can’t always be in the hills So with his hands, he built a place To escape the ruckus and roar. At his Tennessee woodland home A hedge for safe serenity He planned the rustic shelter space, No need of a steeple or bell Just simplicity at its best Where the man and his wife find peace, A place of renewed energy Away from the whirlwind of life, Like a treehouse above the plight. This Cumberland retreat made with Hand tools took him two years to build, Cutting trees, moving them to site, Milling into beams, carving logs, Both for the floor and for the walls. The woods taught the teacher lessons: Bend to the Hermit Thrush’s song, Listen to the rain and thunder, And enjoy critter companions; Nature taught him well then and now The prayer shelter is sturdy built, It provides space for a slow pace Where the man and his wife take time To listen to each other’s thoughts And pray together for God’s grace.

AAs we bid farewell to another summer and the air begins to cool and we all long for the nostalgic smells of the fall season. At the Blue Ridge Mountain Trail Rides at Hells Hollow, guests of all ages are invited to climb a top a majestic horse and experience the sights, sounds and smells of fall in the crisp mountain environment. With breathtaking views of the
Cohutta Mountains and trails for every skill level, the Blue Ridge Mountain Trail Rides at
Hells Hollow will give you and your family the perfect introduction to the fall season and give each and every one of you memories to last a life time.
Ride along with one of the trail’s very well trained, experienced guides and view the beautiful Cohutta Mountains rise against the north Georgia sky. In fact, the Cohutta
Mountains are some of the oldest known mountains in the entire world and the Cohutta
Wilderness is the second largest wilderness in
Georgia. These trails are so deep in nature that for a while, the trail’s attendants enjoyed the company of a curious bear who would sit in the trees and enjoy the fresh air with his human friends. At Blue Ridge Mountain Trail Rides, friendship, hospitality and a love for the great outdoors are all a huge part of a mission and passion for horseback riding.
Join the trail guides as they guide you through a variety of relaxing rides. Whether you’re a beginner or an expert; want a short trip or an all-day adventure, our guides are sure to take great care of you. No matter who you are, big or small, rookie or pro, Blue Ridge Mountain Trails at Hells Hollow will make sure you feel safe and relaxed.
For the enjoyment of younger children, the trails now offer a Pony-Go-Round. Kids will absolutely love their first riding experience. It is also great exposure which may enable them to grow into more experienced riders. While picnicking by the Hollow, little ones can feed the trout. Kids absolutely love watching the beautiful fish leap up and out of the water to grab the food. At the trails, every animal is respected and cherished.
The horses on the property are very well cared for and loved. All the attendants believe the relationships with the horses have a major impact on each guest’s experience. The barn manager explains, “We go the extra mile. We show the horses love, and we get a loving attitude in return.” Because the horses are so happy and well cared for, they can be knowledgeably matched with a rider. This level of care helps to add an extra level of safety to every trail ride.
For years now, the Blue Ridge Mountain Trail Rides at Hells Hollow have proven to be one of the most relaxing, adventurous and beautiful activities in North Georgia. Come by yourself or bring the entire family to enjoy this Blue Ridge favorite. No matter what your riding skill level, the folks at these trails will keep you safe and ensure you have a wonderful time building great memories. This fall season, be sure to join the Blue Ridge Mountain Trail team and experience the fall colors the way they were meant to be experienced. They guarantee you’ll have the best seat in the house.
