To meet the highest hygienic standards in commercial kitchens, the Waste – Jet system should be installed to avoid cross contamination, as well as eliminate the occurrence of the unpleasant smells that accompany food waste.
While metal and plastic waste is easy to dispose of, kitchen waste must be kept and handled in a specific way. Food residues are usually collected in wheelie bins, which have to be stored in cool places in order to avoid the creation of bad odours and maggot infestation. The bins are removed at regular intervals by a specialized waste collection company. Handling of commercial food residues is both costly and time consuming but hygiene is a critical factor.

The use of container bins and bio-bins for disposal and handling of animal and plant kitchen waste (wet waste) creates significant risks for a smooth operation and responsible functioning of commercial kitchens. Many commercial kitchens generate waste water contaminated with animal and/or vegetable fats and grease. Fats and grease from these applications can cause pipe blockages, corrosion and ultimately the malfunction of public sewage networks. These risks give rise to considerable water damage and repair costs – not to mention the hygienic and environmental issues resulting in flooding of the food preparation area and the increased potential for rodent infestation. ACO grease separators prevent this potentially devastating problem from occurring by utilizing an effective functional principle of gravity separation. Food scraps and organic of matter created during the preparation process must not be drained via channels or gullies for similar reasons to wastewater containing fats and grease. A grease separator for full disposal operates entirely on the basis of gravity (density differences), i.e. heavy wastewater constituents sink to the floor of the separator, light substances such as animal fats rise to the top of the grease separator. The treated wastewater is discharged into the sewers via a drainage outlet pipe. Behind each grease separator, which is built in under the back water level (generally at road level), it is essential to install a double lifting plant or a finishing pumping station. The individual requirements which businesses and industry set on the efficiency of grease separators, lifting plants and finishing pumping stations, require flexible products in various sizes and materials. Food storage areas will require occasional cleaning. The drainage unit should be ideally accessible allowing water to be directed to it, and enabling easy cleaning and maintenance of the drain itself. Where cold storage rooms are used local drainage is required for the evaporator condensate water to be discharged. The ideal solution is an adjacent drainage gully complete with a tundish to prevent splashes.
The preparation stage of food production such as washing, paring or peeling, cutting, trimming or shaping often involves the use of water either in automated machinery or manually in a sink. Drainage layout should ensure efficient surface water removal, such as having centrally located hygienic box channels that allow water interception along their length and have the benefit of simple one way floor gradients. Gratings should be removable, but also properly fitted to allow mobile racks and goods trollies to travel easily over the system. Ladder gratings are ideal for the high point loads that might be imposed in these areas.
Production area
The production area is the busy heart of the kitchen, where most slips & falls and cross contamination via bacteria trap is liable to occur. Floor drainage aids in the removal of water that is being used in or discharged from specialist cooking equipment, protecting your employees and your production area.
Washing area
Operations in this area involve the pre-wash and washing stages. Care must be taken to reduce the build-up of fats and grease in drainage plumbing as well. Simply wiping off food residues can have a dramatic impact on the overall system.
Disposal area
Wastewater with fats and grease can cause pipe blockages, corrosion and ultimately malfunction of public sewage networks. ACO tray channel range incorporates the hygienic principles to ensure the top hygienic performance.
