Now taking their passion for local food one step further, the gastronomy team are busy experimenting and adding a new flair to the smorgasbord of tempting traditional flavours, particularly driven by the opening of Fortolana restaurant in the new Amavi (on 29 September 2018), serving fine modern Cyprus cuisine fusing innovative culinary techniques and ingredients of the highest quality. “Presentation, innovation and quality, combine to create phenomenal tastes as our chefs across all Kanika Hotels & Resorts experiment with novel techniques, new ingredients and fresh ideas,” chef Nicolaou lets on. Cultivated for thousands of years, the trees bear carob pods, whose syrup is drizzled over a variety of local dishes. Walnut spoon sweet accentuates the divine local taste experience; a nut cooked in syrup, preserved and served cold, just as it has been in local houses over the centuries – a treat for guests often enjoyed with a strong cup of Cypriot coffee.

OF HOSPITABLE WATERS INSPIRED BY THE SUCCESS OF LIMASSOL’S STATE-OF-THE-ART FACILITY, MULTIMILLION-EURO MARINA PROJECTS ARE NOW TAKING SHAPE ALONG CYPRUS’ SOUTHERN COAST, USHERING IN A NEW ERA OF NAUTICAL TOURISM.
In spite of Cyprus’ pristine waters, year-round sunshine, ideal cross-continental location and deep roots in Eastern Mediterranean hospitality, the island’s southern coast had – until very recently – only limited berths to accommodate sailing enthusiasts, unable to muster the hefty investment required to manifest its potential. It wasn’t until Limassol’s state-of-the-art marina opened in 2014 – defying the financial crisis that rocked the EU country in 2013 – that a new, profitable era of hospitable waters dawned for Cyprus. Modelled by architect Xavier Bohl on St. Tropez’s Port Grimaud, Limassol’s €500-million facility today is boosting Cyprus’ nautical tourism enormously. Thanks to its 650, 8-110m berths able to accommodate superyachts, its 74 villas and 211 luxury apartments, as well as its high-ticket shopping, dining and leisure offerings, it is drawing a steady stream of holiday home seekers, boating enthusiasts and locals. The marina’s premium real-estate has proved particularly attractive to foreign investors, and unsurprisingly, Limassol Marina’s success is now powering similar developments along Cyprus’ southern coastline. Agia Napa’s €250-million marina is next in line for completion with construction between Agia Thekla chapel and Makronissos beach currently under way. “We are very happy, as we are the first to have made such a big investment here,” says 'Ayia Napa Marina' CEO. “It’s important for us to see that the local authorities agree with us that we must upgrade our product to a higher standard, which will eventually bring better results for the local economy and for Cyprus as a whole.’’
