HUNNYBEEZ FOOD TRUCK

A

Although certainly not unique to Portland and the surrounding areas, the food truck industry in our region has been a booming business for several years now. Pods began popping up on every corner and are such high quality that they rival the finest brick and mortar restaurants. CNN even proclaimed Portland to be “home to the world’s best street food.” Catering to every whim and fancy, there is a food cart located somewhere in town to satiate even your wildest cravings. The astounding thing about food carts is that, with slightly lower overhead costs, they are able to focus all of their energy and expertise on the thing that matters most: the food. And they are able to create specialized dishes at affordable prices that you may not otherwise find in “normal” restaurants. Case in point, the delicious American-Filipino fusion food found exclusively at Hunny Beez Food Truck in Newberg (with a second location now in Aloha). This is a true passion project for co-owner/founder Andrew Wegman and his partner Honey Blossom Robles. The two of them have been friends and co-workers in the food industry for over 20 years. Two years ago, Andrew found himself at a bit of a crossroads, looking for a new opportunity. Through conversations with

friends, the idea of a food truck was presented, and the concept intrigued him. Once he spoke to Honey Blossom (he refers to her simply as Blossom, like the 90s sitcom character) the idea began to take shape. Blossom is Filipino, and over the years she had cooked many traditional Filipino dishes for Andrew. He did a lot of cooking for his family as well and the two of them often assisted one another with various elements of these dishes. She would perhaps make noodles for something he was working on while he would simultaneously smoke meat for one of her dishes. It was from these early forays into combining such unique cultural perspectives on food that Hunny Beez was founded. While the cards seemed to initially stack against them (they were caught up in a nationwide food cart scam which resulted in them buying a $25k cart that did not actually exist and they lost their money!), they were able to subsequently get their hands on an older used truck that had previously seen 30+ years of action in Vega and sported numerous bullet holes! This thing had character and they nicknamed the truck “Murphy,” since anything that could go wrong with it, generally did. Still, in September 2019, with great tenacity and perseverance, they fixed up the truck and opened their first location in Newberg, to rave reviews. Those reviews are well earned. The cuisine they’ve developed at Hunny Beez is simply fantastic! Every meal on the menu is American, Filipino, or (most often) a fusion of the two, and it was all conceived by the minds of Andrew and Blossom. Many of the dishes are Filipino-inspired but with an American twist. Some are vice-versa, but they are all delicious!

Favorite dishes include the Lumpia, which are amazing Filipino spring rolls made with lumpia wrappers (thin filo pastry-like skins enveloping sweet and/ or savory fillings). The outsides are perfectly crispy and delicious in and of themselves, while the various insides burst with incredible flavor. Smoked pulled pork, smoked chopped brisket, veggie, or Shanghai style; every stuffing promises to transport your taste buds to new and amazing heights.

slaw, green onions, sweet chili mayo, sriracha ketchup, and their own, home-made Hunny Beez sauce), and sliders (including Kari Kari pork sliders with peanut sauce on toasted sweet Hawaiian rolls), a kid’s menu, and of course, an abundance of sides and appetizers. They’ve also partnered with a local Newberg business, Gonzalez Bakery, to provide some fantastic desserts.

Their entree plate is another popular dish providing a nice cross section of what they have to offer: meat, 2 sides, and lumpia. They have a terrific selection of sandwiches and burgers, all with some interesting twist on the standard. For those looking for something more traditional, they do have a classic cheeseburger that comes with smoked garlic aioli (that’s the twist) but you can get it without and it’s “just” a great cheeseburger.

This is not a chain, folks! This is two people, Andrew and Blossom, working 50-100 hours per week to bring their specialty foods to you. Everything is made from scratch and fresh daily. All of their extremely high quality meat comes from Corfini Gourmet, and is delivered fresh 2-3 times per week. Their special Hunny Beez sauce, like every recipe on their menu, is made on site from scratch with real ingredients. Nothing is prepackaged. It’s fresh, it’s delicious, and it’s unique to Hunny Beez.

S

ince 2010, Mikey’s Pizzeria on Highway 99W in north McMinnville has served up hand-crafted pizzas in a family fun atmosphere with arcade games and large-screen TVs. A couple years ago, owner Mikey Howard spotted a vacancy downtown that would enable him to realize a dream he’s had for awhile: To expand the Mikey’s brand, but with some variations.

Joysticks Arcade & Eatery on Third Street between Baker and Cowls has much the same vibe as Mikey’s Pizzeria, but he’s done some fun and creative things with the state fair-style menu, and added arcade and pinball games—a lot of them. It opened in January 2020 but then closed doors when COVID hit. Mikey pivoted fast. “I still followed all the rules, but I wasn’t going to close my doors, so I brought on all the delivery platforms and we started delivering our new expanded menu,” he said. You can also get pizza at Joysticks Arcade, but it’s unique from what you can enjoy at Mikey’s Pizzeria a couple miles up the road. “At Mikey’s Pizzeria, we put onion rings, fried zucchini, and mozzarella sticks on pizza. I fry up fries, and we throw ’em on top of the pizza and coat them with cheddar cheese. It’s those creative oddball staple pizzas that I’ve had since the beginning that helped introduce my signature style.” To Advertise With Us, Call 503.825.2111

That style carries over to Joysticks Arcade with Mikey’s own homemade fry bread recipe instead of traditional pizza dough and imaginative pairings like the Galagarlic, which includes garlic butter, mushrooms, olives and cooked tomatoes, or the Smash Bro, which is topped with sausage, blue cheese and jalapenos. You’ll also find a bountiful supply of corn dogs, sliders, wings, with a dessert menu that includes deep-fried Twinkies, Oreos and cotton candy. The taplist includes more than a dozen local draft beers. Mikey is a video game, arcade and pinball aficionado. Over the years, he has acquired an impressive collection of vintage games, from the Nintendo he still has from when he was a child, to pinball machines and arcade games he’s found at garage sales, on Craigslist, auctions, eBay, friends. He even knows how to repair them, though he credits his brother Howie as the in-house technician. “If I can’t fix it, he can,” he said. There are dozens to choose from, from retro games like Pac-Man, Teenage Mutant Ninja Turtles and Donkey Kong to newer games like Halo, Outnumbered, and Aliens Armageddon. The pinball machines offer a chance to lose yourself in the worlds of Iron Maiden, Stranger Things, Guardians of the Galaxy and Avatar, among many others. THE HISTORY OF THE YAMHILL SOIL & WATER CONSERVATION DISTRICT By David Bates Active Media Contributing Writer

T

he Dust Bowl of the 1930s was a disaster that happened nearly a century ago more than a thousand miles away, but it’s not a stretch to say that the Yamhill Soil & Water Conservation District and the work they do in the McMinnville area is a direct result. The Dust Bowl of the Great Plains, which affected more than 100 million acres, was caused by years of heavily cultivating farmlands without doing anything to ensure the long-term health of the soil, which was swept into the sky in “black blizzards,” driving thousands of Americans west and delivering a blow to the nation’s economy. In response, President Franklin D. Roosevelt, declaring that “The nation that destroys its soil destroys itself,” established the Soil Conservation District in the U.S. Agriculture Department. In 1937, all states were encouraged to launch locally-controlled efforts to promote and conserve soil health. Today, the U.S. has nearly 3,000 such districts, one in almost every county. In 1939, the Oregon Legislature authorized the creation of such districts. The Yamhill Soil Conservation District was founded in the spring of 1953. The first board included Frank Geisler, Aubrey Tangen,

Ivan Dent, Louie Magee, Jack Shelbourne, Rex Brown, and also a WWII veteran and Oregon State University agriculture graduate named Stanley Christensen, who became the board’s chairman the following year and served until 2004. At the time, the district had no local funding. According to the 1953 annual report, the district’s balance was $107.87, donated by board members who were inspired by the conservation movement. “It felt like we were doing some good with natural resources,” Christensen said in a newspaper interview in 2003. The district initially focused on providing technical assistance to area farmers on drainage, irrigation water management and woodland management. During the first quarter century or so of the district’s life, more than 2,500 miles of field drainage tile were installed on local farms in cooperation with the district. With an eye to educating the public, the district in 1961 also began supporting an outdoor school. “Water” was added to the district’s name in 1963. Seven years later, the YSWCD partnered with the OSU Extension Service to launch the Cruickshank Woodland Tour, which is still an annual event, held on the Cruickshank family’s Three Oaks Farm near Dayton. As the district’s focus turned to wetland protection in the 1980s, the board realized that they would need stable funding. Christensen and other board members made their case to voters, many of whom by now had enjoyed a positive experience in dealing with the YSWCD. In 1984, voters overwhelmingly approved a tax base, making Yamhill the first in Oregon to do so. This enabled the district to hire staff to provide specialized technical support to the community on conservation efforts. In 1990, the district sponsored its first native plant sale, starting an annual tradition that has served ever since to expand the dialogue with area residents, whether they live in the city or the country, to use native plants in their gardens, yards, riparian areas and on their farms. Since 1990, the district has sold more than one million seedlings. Some of the YSWCD’s most high-profile projects have been the establishment of conservation easements, which are voluntary but legal agreements that permanently limit a property’s use so that conservation values are a top priority. The district currently holds four such easements, including Miller Woods, a popular natural outdoor education area northwest of McMinnville. The 131 acres


was bequeathed to the district in 2003 by Frieda Miller. Headed by long-time area farmer Larry Ojua, the YSWCD’s staff of more than half a dozen stand ready to assist any property owner in the district, which is contained within the boundaries of Yamhill County, with a variety of land stewardship issues, including:

It’s estimated that only about one percent of native prairie habitat remains in its native condition in the Pacific Northwest, which means it’s tougher for native species that depend on those areas to survive. Armed with the right information, you can help.

Pesticide Stewardship

Years ago, testing in several sites in Yamhill County showed high concentrations and frequencies of pesticides in Palmer Creek and Cozine Creek, which ultimately drain into the Yamhill River. The district has been working on that problem ever since

Backyard Habitat

Creating backyard habitat takes a bit of planning, and the district can provide suggestions to those who embark on “nature-scaping” in their own yard. There’s plenty of information on the website, including what you need to know about bird houses and bee boxes. These are just a few of the programs and resources available through the Yamhill SWCD. risten Stoller embodies Chehalem Valley Dance Academy’s motto, “Dance Skills are Life Skills.” Growing up in McMinnville, she first danced at the community center when she was 11 years old. It was a positive experience, one that gave her the life skills to do what she’s doing now: She is the artistic director and owner of Chehalem Valley Dance Academy. “How we express ourselves matters, our discipline, what it takes to achieve a goal, the importance of diligence and determination, how to work individually and in a team,” Kristen says. “We are dynamic beings who can both create art and execute challenging athletic skills. That is what makes dance such an incredible activity for youth.” For nearly a quarter century, CVDA has enriched the area’s cultural life while offering dance (and life skills) training to thousands of local youth. The Newberg studio opened in 1996, and a second studio was added in McMinnville in 2008.

Typically, the academy offers two sessions: a 9-month fall-spring session and an 8-week summer session. Hundreds of students take the classes and then perform in annual showcases, local venues, parades and a benefit Nutcracker performance (in Newberg) that has raised more than $155,000 for local charities in the last decade. When Covid shut down in-person classes, CVDA went virtual. The school did door drops of mats, tap floors, props and other supplies for students. By April 2020, all students were taking classes over Zoom. “Our staff rocked it!” Kristen said. Her team of alumni and “local rockstars” include operations manager Lindsey Palmer and instructors Karley Styles, Courtney Guillmette, and Lauren Krebs. “We are so thankful for the amazing families that stuck with us!” Kristen said. “We feel loved and supported.” Kristen says CVDA has “all the precautions” for students returning to the McMinnville and Newberg studios this summer, when classes in ballet, tap, jazz, hip hop, tumbling, and more will be offered for ages 2-adult. In an era of quick fixes, Kristen adds, “dance teaches you the long game. Dance teaches you that you are a human with different feelings and a different story and the ability to share it freely, safely, and in your dynamic ways,” she said. “ That your voice and your expression are both art and athletics. You may need to make adjustments to make something work, and that is not a failed path but a journey around, under, over, or back in order to find your way.” CVDA’s alumni have found their way all over the United States doing amazing things with their careers and families. 1 cup packed brown sugar 3/4 cup ketchup 3/4 cup reduced-sodium soy sauce 1/3 cup sherry or chicken broth 2-1/2 teaspoons minced fresh ginger root 1-1/2 teaspoons minced garlic 24 boneless skinless chicken thighs (about 6 pounds) DIRECTIONS

1. In a small bowl, mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. 2. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. Refrigerate, covered, for 8 hours or overnight. 3. Drain chicken, discarding marinade. 4. Celebrate National Rose Month In Portland

une has been recognized as National Rose Month since 1959, when it was part of an effort to designate the rose as our national flower. The latter event didn’t actually occur until President Reagan made it official in 1986, but for over 6 decades now the month of June has been widely and formally recognized as the perfect time to enjoy the beauty of roses. As all Portland-metro area residents know, there is nowhere better in the country to celebrate National Rose Month than in the City of Roses! The incredible Rose Festival would, in normal years, be the most iconic way to do so, but in 2020 and 2021 celebrations were canceled due to public health restrictions. Don’t let that stop you from getting out and smelling the beautiful flowers, though! Here are the best places to go for optimal rose viewing (and sniffing) around the city this month: The Portland International Rose Test Garden - As anyone who has ever visited will know, this is the place to go for all things roses. The garden features more than 650 varieties and over 10,000 individual rose bushes, making it the largest public rose garden in the entire country. The garden serves as a testing ground for new rose varieties, and in its earliest days roses were sent from around the world to Portland for testing, and in the hopes of preserving them from the ravages of World War I.

Situated in Washington Park in the West Hills of Portland, the garden features stunning views of the city and admission is free. That means it’s a very popular place to visit, especially in June and throughout the summer, and parking can be extremely limited. It’s recommended to visit early in the day to avoid peak crowds, and once you’re in the park you can use a free seasonal shuttle to explore more of the park. See ExploreWashingtonPark.org for more information. Peninsula Park Rose Garden - Peninsula Park, located in North Portland, was actually home to the city’s very first rose garden. The garden was established in 1913 and was the original location of the annual rose show, before festivities were moved to Washington Park in 1917. The Peninsula Park Garden, though smaller than the Test Garden, remains a stunning place to visit and enjoy not only the blooming flowers, but also the ornamental fountain, street lamps, brick walkways, and music pavilion. The gazebo-like structure was designated a Portland Historic Landmark in 1973 and is the last of its kind in the city. The park is often reserved for weddings, so keep that in mind when visiting! Ladd Circle Park & Rose Gardens - Located on the East side of the Willamette between Hawthorne Blvd and Division Street, the Ladd Circle Rose Garden is a small but wonderful place to drink in the beauty of early summer in Portland. Named for Portland settler, business tycoon, and mayor William Sargent Ladd, the formal landscape of the park was designed in 1909 by Park Superintendent Emanuel Mische. It features 4 diamond shaped rose gardens, containing over 3,000 roses and 60 different varieties in total. Pittock Mansion - Returning to the West Hills, the jaw-dropping Pittock Mansion is worth touring in its own right, but if you don’t have the time or simply can’t bear to be indoors on a glorious early summer day, be sure to at least walk through the gardens and take in the amazing views. You’ll also find 100 different species of roses to enjoy as you stroll. HISTORY

A RITE OF PASSAGE FOR OREGONIANS Enchanted Forest

T

o anyone who grew up in Oregon, or even anyone who has driven the I-5 corridor through Turner (south of Salem), you will be familiar with the fantastic little gem of a roadside attraction known as the Enchanted Forest. Many readers looking at this story will be swept away by warm feelings of nostalgia. It seems that virtually everyone who spent time in Oregon as a child has made at least one visit to this magical place. When the topic comes up among friends of a certain age, stares begin to wander, countenances begin to soften; eyes moisten. It’s a different response than you get when you mention big money efforts like Disneyland, or Magic Mountain. It’s not as wide-eyed or excited as that perhaps, but I’d argue, it’s deeper. It’s more profound because the Enchanted Forest takes us through a portal to a better time; a simpler time; a more innocent time. It’s a treasure to so many of us, and it’s one we need to protect. It all began in the mid 60’s. Roger Tofte had retired from the Navy after the Korean War and was working for the Oregon State Highway Department as a draftsman and artist. He’d always had a very artistic creative side but hadn’t had much opportunity to put it to use. When he took his family on a long road trip, he realized that many other states had attractions, various examples of glorious Americana, but there was very little in Oregon. He saw a vision, and without hesitation, got to work on it. The original section of the park, the Storybook Trail, was that vision and it was his alone. He drew up the plans and did almost all of the work himself. He had some help from friends and family, of course, but the vast majority of it was just Roger out there digging holes with shovels.

Owner Roger Tofte He initially thought it might take about 2 years to complete. It took 7! But he persevered and on Sunday, Aug. 8th, 1971, they opened. It was an instant success! That first weekend, they had 75 people. The following weekend, after they had an article in the Statesman Journal, over 1000 people showed up! Roger continued to work full-time for another year until he was sure he could support his family, then he devoted himself to the park 100% and never looked back. I had the pleasure of speaking with Susan Vasley, one of Roger’s daughters (and one of the current co-managers of the park), and I was incredibly moved by her story; by the whole family’s story. Since it opened, this park has been their life. They grew up here. It was dad’s vision; it was his dream, but the entire family was involved in it. There are family businesses...and then there is the Enchanted Forest! It was the 70’s and of course, there were no child labor laws. Nobody even thought about that kind of stuff back then. If you were capable, you helped out. It was as simple as that. And they did; all of them, and they loved it! Susan, who was 14 at the time, worked the entrance building. Her sister Mary (who is the second current co-manager), worked the food stand and was only 9 years old. Their brother, Ken, kept all the trash picked up and the trails cleaned. He was aged 12. And


their littlest sister, Lori, who wiped tables in the food area was at the ripe old age of 4! Mavis, their mother worked behind the scenes. She had a mind for business which allowed Roger to focus on the creative. It was the perfect balance. And so things went. In the following years, Roger consistently built onto the park. The Tofteville western park was constructed in year 2 with the Haunted House coming shortly after. The Comedy Theatre followed next and then the famed Ice Mountain Bobsled roller coaster (the first ride to require some professional outside help) made its debut. Then came the Old Europe Village with it’s Jolly Roger Water-Light Show, the Big Timber Log Ride (the 2nd big ride), and most recently, the hugely popular Challenge of Mondor ride!

This past year has been difficult for all of us. For the Enchanted Forest, it has been devastating. Prior to COVID, they were in great shape, but they have a lot of annual fixed costs which they need to pay whether they are open or not (insurance, ride maintenance, employee payroll, etc.). They were able to open last season but only at a fraction of their full capacity. At the end of last season, the reality of their situation was that they needed $500,000 just to open back up this year. A GoFundMe was set up and the community came to the rescue, raising almost the entire amount needed. The Tofte family is so grateful to everyone who came out in support and they were able to plan to reopen this year with your help.

Interspersed throughout, they’ve added several other smaller rides, and expanded on some of the existing themed areas. All the while, Roger and the entire family have worked side by side to make his dreams— dreams which were now shared by his children and by children all over the state and beyond—a reality. Even as the rides

Roger still works at the park every day. That just goes to show that when you do what you love, it’s not work! Susan and Mary have the same balanced relationship that Roger and Mavis did back in the early days. Susan is the creative force (she actually writes and directs all of their plays, composes and records all of the music played throughout the park and performs in the house band!) while Mary takes care of all of the business.

Tragically, then the ice storm hit in February and caused mass destruction across the property. Hundreds of trees came down, damaging multiple exhibits and rides and a huge chunk of that money they had received from your generous donations, had to be redirected towards the clean-up rather than the day-to-day costs of keeping them open. Susan is optimistic and hopeful they can make up some ground this year, but the fact is, the park is dangerously close to having to close their doors, possibly for good. The Enchanted Forest is a special place, folks. There is literally nothing else quite like it. It is the realization of one man’s dream and his family’s love and continued support. Generations of kids have walked its magical paths and been “enchanted” by its fairytalecome-to-life exhibits and rides. This August is their 50th Anniversary. We need them for 50 more! Visit the park this summer. Bring your kids. Bring your friends! Bring your kids’ friends!
