Ingredients Cake 6 eggs 1 box super moist devil's food cake mix 1/2 cup water 1/4 cup vegetable oil 1 tablespoon powdered sugar Rich Chocolate Frosting 1/2 cup whipping cream 1 cup semisweet chocolate chips

(6 oz) 1 tablespoon corn syrup 1/4 teaspoon vanilla Filling 1 container whipped vanilla frosting (6 oz) 1 tablespoon corn syrup 1/4 teaspoon vanilla

1 Heat oven to 375°F (350°F for dark or nonstick pan). Line bottom only of 15x10x1inch pan with foil or waxed paper; spray with baking spray with flour. Place paper baking cup in each of 8 regular-size muffin cups. 2 In large bowl, beat eggs with electric mixer on high speed about 5 minutes or until thick and lemon colored. Add cake mix, water and oil; beat on low speed 30 seconds, then on medium speed 1 minute, scraping bowl occasionally. Pour 3 1/2 cups batter into pan. Divide remaining batter among muffin cups. 3 Bake 14 to 16 minutes or until cake springs back when lightly touched in center and cupcakes test done when toothpick inserted in center comes out clean. If necessary, run knife around edges of pan to loosen cake. Turn cake upside down onto clean kitchen towel sprinkled with 1 tablespoon powdered sugar; carefully remove foil. While hot, carefully roll up cake

and towel from narrow end. Cool completely on cooling rack, about 1 hour. Cool cupcakes 10 minutes. Remove from pan; cool completely, about 30 minutes. Save cupcakes for another use. 4 Meanwhile, in medium microwavable bowl, microwave whipping cream uncovered on High 1 minute to 1 minute 30 seconds or until it just starts to boil. Stir in chocolate chips and corn syrup; let stand 3 minutes. Beat gently with wire whisk until smooth. Beat in vanilla. Refrigerate about 1 hour, stirring every 15 minutes, until spreading consistency. 5 Unroll cake carefully, and remove towel. Spread filling evenly over cake; roll up cake. Place cooling rack on sheet of waxed paper. Place cake roll on cooling rack; frost cake. Using fork, drag tines through frosting to look like log. Let stand 15 minutes. Transfer cake to serving platter. Store loosely covered in refrigerator. Let stand at room temperature 30 minutes before serving.

Stress & Food Do you tend to eat when you are stressed, even if you aren’t hungry? According to a study published in the journal of Obesity, the comforting effect of food is not an illusion. For those with Binge Eating Disorder, just the sight or smell of food can trigger the release of dopamine, which has a relaxing effect. This trains the brain to think of food and to crave it in times of stress.

Another reason people turn to food in times of stress is that it gives them something to do to take their mind off of the situation. Here are a few tips to overcome overeating during stressful times: Consider talking to a friend or counselor about your stress. Work towards being more mindful: Take mindful bites by using all of your senses to eat your meal. Think about the

aroma and texture of your food, and the way it looks and tastes. Avoid multitasking while eating. Try not to snack while cooking, socializing, studying or working unless you are truly hungry. Check In. On a scale of 1-10, how hungry are you? How full are you? Aim to eat until you are satisfied, but not stuffed. Have a plan. Write down a few activities that you can do when you are stressed

besides eat, such as: go for a walk, call a friend, or read a book. Write these down on a note card and post on your fridge. Being in a consistent state of stress puts a heavy burden on your body and causes it to quickly burn through nutrients. Give yourself a boost by getting plenty of fruits and vegetables (at least five cups a day), plenty of fiber and healthy fats.

Now that winter is here, most of us are curled up on our couches with nice warm blankets and a cup of hot chocolate. Families snuggle by fireplaces, protected from the winter storms that rage outside the window panes. However, this is not the case for everyone in our area. For those who are homeless, few options exist to protect them from the elements and provide safety. It is impossible to ignore that this problem exists in Ada. More often than before, it is easy to spot someone who is living on the street, and there are many more that we don’t see. Because of this problem, several local philanthropists and visionaries have come together to form a homeless shelter, that is also more than just a homeless shelter, Mama T’s B&B. Mama T’s is named after Mother Teresa, who was a great humanitarian. The B&B in the name serves two purposes. First, it stands for “Bread and Blessings” because they will be providing sustenance and also doing so out of their strong commitment to the generosity proclaimed by their faith. Second, being homeless is embarrassing. So many people who face these trials do so with a certain amount of shame. The phrase “B&B” can also stand for “bed and breakfast,” and while they know it is a shelter, there is a certain dignity allowed by saying that you are stay6 • www.adahub.com

ing at “Mama T’s B&B” instead of at the local homeless shelter. While the original plans called for a day center that would eventually become a “24/7 safe haven,” plans have changed and they are going ahead with plans to make Mama T’s a full shelter from the beginning. This is “a hand up not a hand out” type of situation, though. Individuals who need assistance may stay there for seven days and receive room and board free of cost. However, after the seven days, in order to stay longer, they must be engaging in some sort of program to help get them on their feet. During that first week, the residents will be given a list of free-ofcost programs within the area, or in-house, that will help lead them to full, independent lives. They can offer assistance with alcohol and drug abuse, transitional language problems, lack of education, medical assistance, anger management, emotional issues, and more. As long as the resident is participating, and making progress, in these programs, they are welcome to stay. The goal, however, is for them to leave, moving in to their own homes and on with their own lives. Even though this enterprise is a God-centered organization, it is not tied to any single faith or denomination. Anyone who wants to help, whether religious or not, is welcome to

do so. They also provide an open and inclusive environment. No one will be discriminated against based on race, religion, sex, national origin, sexual orientation, or disability. The one exception, however, is sex offenders because there will most likely be children on the grounds. They strive to make this as safe a place as possible in order to give people the stability to get back on their feet. Mama T’s should be open in fall of 2016 and has been made possible because of many generous people. The building, at 222 E. 12th St, was donated by Tawfik and Siham Ramadan. Board members have also reached into their own pockets for the initial funding, contributing $40,000, some even pledging $50 a month for three years. Mama T’s is even investing in a cow herd that will provide sustainable income in order to fund the shelter in years to come. However, this project is not inexpensive. It takes a great amount of funds in order to bring the building up to code and be livable for its residents. Help others get off the street. It will help the individual and it will help the community as well.

Morgan Lamb and her husband purchased Chaney Lane Design in July of this year. “The opportunity came along at just the perfect time, and I couldn’t say no,” Morgan shared. She really felt like this was the right thing for her. They have brought in a lot more women’s and girls clothing over the past few months. The great designs would make any girl happy if she happened to open up a box full at Christmas. They have also started a Ladies Night Out once a month. Guests can enjoy snacks and drinks while they shop and they do giveaways during the night. If you are interested in attending one of these special nights, be sure to like them on Facebook to learn more about dates and details. Morgan’s friend, Sydni Buchanan, opened up a photography studio in the back portion of the store. There are lots of wonderful things to find within this unique store. One of the things that stands out in the store, is a real tree emerging from the wall. It just comes out at you like a 3D piece of art. They decorate the tree for special occasions

and holidays. You will also find a Keurig stocked with coffee and tea so you can have a nice warm drink while you shop. You will notice that a strong focus of the store is on home decor items. They have some old, some new and definitely something for everyone. A few special brands in the store are Inkity Blinkity Knob Charms and Bridgewater Candles. Chaney Lane Designs is a great place to do a bridal or house warming registry. If you are getting married or moving into a new home, don’t hesitate to set up your registry with them. Loyal customers are even starting to ask about renting some of their decor or displays for weddings, photo shoots and events. If it’s pretty enough for a picture, then it is definitely pretty enough for putting in your home. They will be doing a giveaway each day in December up until Christmas. The items vary from day to day, but will include a tablet, headphones and even an mp3 player. Be sure to check in on the weekends, because there is usually a special or a sale going on that you will not want to miss. During the holiday sea-

son they will be running a Holiday Gift List for customers. When something is purchased off your gift list, there will be a 15% discount. Come by for more details. Morgan has lived in Ada all her life. She is a graduate of Byng High School and has three kids with her husband. Morgan says, “When I am not at the store, I love to work on projects pieces, or go junking to find those one of a kind items I know my customers will appreciate.” Her favorite thing about being the owner of the store is walking around with customers. Morgan loves to help them pick out the particular item that just seems to speak to them. Some customers will even bring in a picture of a space in their home and just need some help figuring out how to fill it. “The best part is when they come back in with a picture of how it looks with the pieces they found here at Chaney Lane Designs”, Morgan said with a smile. For the past thirty years, young school children get a special surprise. Their bus parks at the end of a long, winding trail. They disembark, all bundled up, and skip down the path, barely able to contain their excitement. As they round a corner, I’m sure some of them gasp at the Christmas beauty before them—the lights, the decorations, and the house where they will get a taste of Christmas magic from another world. These excursions are the fruits of kindness and Christmas spirit, brought into being by Greta Thompson but also in the spirit and memory of her late husband, Chuck Thompson. Greta and Chuck first met at a dance in 1955. All the girls were flirting with him, but Greta just rolled her eyes. They got married when she was a senior in high school. He left for a deployment

while she finished high school and then returned for her graduation, after which they left for Hawaii. Chuck Thompson, however, dropped out of high school and signed up for the Marines when he was seventeen. Of course, he wasn’t supposed to, but those were different times. When the Marines discovered his true age, they sent him to Japan to wait it out until his birthday. Once he turned eighteen, he shipped off for Korea. Later he did three tours in Vietnam. After twenty-three years, Chuck retired from the Marines. He wanted to be a teacher. He wanted to inspire people in the ways that he hadn’t been. He wanted to change lives. While this might seem like a lofty goal, it was one that he did end up realizing. He went to ECU and studied for his teaching certification. He then spent another twenty

A Scandinavian Christmas tree, complete with straw ornaments, greets the children as they enter the house. The entire house is made up to celebrate Christmas as Greta reads the Christmas story in Norwegian. The fully lit and festive house stands in stark contrast with the Christmas of Greta’s past, where they had to celebrate in silence and darkness with blackout blinds in order to appease the Nazis. Her entire past informs this Christmas celebration with the children. Her cultural heritage, her appreciation for freedom, and the family passion for education all help make this a truly special moment. It is special for the children, but it is also special for Greta, because the light in each child’s eye brings her a spark of happiness and Christmas spirit.
