7 ounces white chocolate, chopped into very small pieces 2 egg yolks 2 tablespoons sugar ¼ cup heavy cream, plus 1 cup 12 fresh raspberries, for garnish Mint sprigs, for garnish (optional)

1 cup fresh or frozen raspberry 2 cups of sugar 2 cups of water Chopped pistachios, for garnish (optional)

Directions

Raspberry Coulis Place raspberries, sugar, and water in a saucepan and bring to a boil. Once boiling, simmer for 1 hour then allow to cool for 30 min in the refrigerator. Place the mixture into a blender and blend 2-3 min. Pour the raspberry coulis in a tall shot glass half way, then top the last half with your white chocolate mousse. Garnish with fresh raspberry and chopped pistachios or even a VINCENT WILLIAM // CHEF chocolate heart. Oak Hills Country Club

In a large glass bowl, place the chopped white chocolate and set aside. Add the egg yolks and sugar to a small bowl and whisk until pale in color. In a saucepan, over low heat, bring 1/4 cup of the cream to a simmer, and slowly add the cream into the yolk and sugar mixture to temper. Pour the creamy mixture back into pan and stir with a wooden spoon until it coats the back of it. Pour hot mix into a fine mesh sieve placed directly over the bowl with the chopped chocolate. Stir until completely smooth. In another bowl, whip remaining 1 cup of the cream to almost stiff peaks. Fold half the whipped cream into the white chocolate mix to lighten and then fold in the remaining whipped cream. Place the mix into the refrigerator for about 1 hour or until it sets.

FOODS for a FIT HEART The heart amazingly pumps five to six quarts of blood to all parts of your body every minute. It is essential to your health that you keep your heart in good shape, and yes, there are things you can do to help your heart stay fit. Besides managing lifestyle and health factors such as getting plenty of physical activity, controlling stress, and avoiding cigarette smoke, what you eat is critical in keeping your heart fit. The following are some important foods for a healthy heart and minimum/maximum limits (assuming you need around 2,000 calories per day): Fruits & Vegetables Aim for at least 4½ cups each day. The more variety, the better! Fruits and vegetables contain antioxidants, nutrients and fiber that help your blood vessels stay clear and your heart pumping strongly. Fatty Fish At least 10 ounces per week (salmon, halibut and sardines are good choices). Don’t worry... the fat in these fish is good for your heart; it keeps cells moving fluidly through the blood stream instead of creating more solid structures that don’t move as easily, stick to other structures and promote inflammation. When it comes to fish, wild is better than farmed and due to mercury content in some fish, limit consumption to 12 ounces per week. If you find it difficult to get 10 ounces of fatty fish per week, take an EPA/ DHA supplement each day that you don’t have fish. Fiber-rich Whole Grains At least half of your grains every day should be whole grains. Look for the whole grain seal on the front of the package or the first ingredient on the label to read “whole...” If it reads “enriched” that is a good indication that it is not a whole grain. Whole grains are another food that contains fiber, an important nutrient in keeping your blood vessels squeaky clean. Sodium Try to get less than 1,500 mg a day. There is 2,300 mg of sodium in 1 teaspoon of salt, so this might be challenging. Avoid processed foods and using the saltshaker at mealtime. Too much sodium attracts extra fluid and places a burden on the heart as it pumps. Lean Cuts of Meat Any meat you eat should have no visible fat. When purchasing ground meat, aim for 90% or higher lean portion. Replace Unhealthy Fats Decrease your intake of fats from processed foods and replace with heart healthy fats like olive and canola oil.

IT’S OUR CITY, let’s make it better This is the question that Ada city manager, Cody Holcomb, posed to citizens during the Take P.A.R.T. (Planning Ada Right Together) meetings back in April of 2013. There were five meetings with about 50 people at each. During the course of these meetings, citizens engaged in a frank discussion of their vision for Ada. What can we do to make Ada the place we want it to be? They gathered the information and brought in a consultant to examine the results, trying to decide what was possible and what was most important right now. This resulted in a list of many improvements to our city and community that Holcomb now strives to enact. It is an ambitious project, but one that Holcomb is well suited to, as he set up the necessary infrastructure to make our dreams a reality. Holcomb, whose background is in business and engineering, started as interim city manager in February 2012. During his time as interim, the consultant came in for a Community Visioning and identified 37 different improvements that would make our city better and run more smoothly. When he became full-time city manager on November 5, 2012, it was up to him to finish actualizing these improvements. Each department in the city received a checklist of changes to make and they report back to him on their progress. Holcomb certainly stays busy, managing every department in the city, from police to parks to the municipal airport to utilities. The original improvements suggested by the consultant were only the beginning, though. Holcomb states, “We’re drawing a new road map.” Now it was time to figure out where we wanted to go. This is where Take P.A.R.T. comes in. Decisions were made concerning city improvements

and task forces were developed in order to address these issues. The task forces are not just made up of city employees. Rather they are you, the citizens of Ada, who are coming together to make our city better. They meet monthly, not just to talk, but to take action, forming specific plans to improve our city. Some focus on economic development or education, others on beautification, quality of life, or health and safety. They want to increase retail sales but also increase the average wage. They want to increase the high school graduation rate, attendance, and make sure challenging course work is available to students. But these things are also dependent on making sure affordable housing is available and that our water supply is plentiful. And while some of the improvements are fun, such as the creation of a biking and walking trail, Christmas lightings, and a big event this summer, others are very serious. They want to decrease our poverty rate by 5% and also decrease the overall annual cost of healthcare by 10%, all by 2015. Even though these committees have already been developed and goals have been set, you still have the opportunity to improve our city. Lisa Bratcher, customer relations specialist for the city of Ada, wants to hear your ideas. For instance, one citizen made the suggestion that we have a dog park. Now we have a dog park at Matthew’s park on 18th and Hickory. People also wanted something to do with their families in the summer, so the city purchased a 20 ft. screen to do a movie at Wintersmith Park, complete with hotdogs and canoe rides on the lake. This screen will also be used for other com-

Cody Holcomb wants you to get involved in our city. They are creating a playbook that guides the decisions and finances of the city. You can only have input into these decisions if you get involved. Part of this involvement also comes from spending your dollars in this city. Your sales tax dollars goes toward these improvements and they do take a lot of money. For instance, they are designing a plan to help secure our supply of drinking water, but this alone takes 25 million dollars. It’s not cheap to make a better home, but it will be worth it after the work is done. Ada, like any great city, is a work in progress. It is constantly changing, and, with programs like these, for the better. So be a part of this new vision for Ada. Spend your dollars here, get on a committee, tell Lisa about the changes you want to see. This is our city and its future is our responsibility. 1. the expression of one’s own personality, feelings, etc, as in painting, poetry, or other creative activity. Many people wonder why self expression is so important for an individual to grow. Self expression is important because we all have feelings and we all have a need to communicate. There have been countless examples of peopledeprived of human contact and communication. The result has been that they are emotionally stunted and their brain literally stops growing. In order for an individual to progress and get to know themselves and others, they must have an outlet for their feelings which includes verbal expression, artistic expression and many other avenues. (mental health, ask.com) We all have something special inside of us. Some choose to get it out there for people to see while others just hold on to it. Maybe they are scared or fear being rejected. Maybe they believe what they have is not good enough for others. Some may just not even know what it is they have to offer yet. Either way, it is important for all of us to find a way to express ourselves as individuals. Let’s take a look at Cody Wilson and see how he does it. Cody was born in Okmulgee in 1984 to Gary and Susan Wilson. He can remember liking art at a very early age. “I found some old drawings from before I was in Kindergarten and they were actually pretty developed. It was the only thing that I would focus on and hold my attention for very long,” he told me. Cody’s father took some

art classes at ECU before he was born and he watched him do some drawing in his free time. He would look at the work his dad was doing and had a desire to try it as well. He drew as he grew older, but during his junior year at Ada High School, he really began to develop a passion for it. He did the normal still life drawings like a boot and a cow skull, but one day got interested in drawing people. His art teacher, John Boettcher, saw real promise in his work and Cody was selected to participate in the Oklahoma Summer Arts Institute. “It was two weeks of camp and they brought in some serious artists. We would get up early and do figure drawings for about 9 hours a day and I just ate it up. Other kids were getting bored, but I just was hungry for more. It all clicked to me during that two weeks that this is what I wanted to do,” Cody shared. He took some of his work to Scholastic Meets throughout the remainder of his High School years and did really well. Cody is thankful for his high school art teacher and others who encouraged him along the way. After high school, Cody began his college studies at East Central University. He started with an English Major and an Art Minor for the first year and a half. He took some time off from school and played music in a band, but then returned to school and it was at this

time he took on the Art Major. Some of his professors were Kate Rivers and Brad Jessop. Before graduating, Cody was married to Bethany in 2006 and they now have to girls, Margo and Juliette. Cody painted them a pretty awesome nursery by the way. He has taken his work to shows in the Oklahoma City area including Momentum, Red Dot at Untitled and 12 X 12. He also did a show in July of 2013 here in Ada at Karen’s Art and Framing. His latest show led him to doing two portraits, which turned out to be his favorite two pieces of art. Today, Cody carries a sketchbook around with him just in case that perfect picture happens right in front of him. He really enjoys figurative paintings of people and likes to stay a little on the abstract side. His favorite medium is acrylic paint. He actually starts with red, blue, yellow, black, white and then mixes them together to get the specific colors he needs for the painting. He is inspired by Egon Schiele, Jean Michel Basquiat and Lucian Freud. Cody does portraits with pencil or paint on commission if you are interested. Parents or caregivers can provide ample opportunities for learning just by being aware and utilizing playtime during every day routine activities. Long before a child can read they are able to identify environmental print. Children are able to identify recognizable logos, pictures, and individual words called environmental print. This print surrounds us in our daily environment. Talk to your child during your daily commute or while running errands. They will be able to recognize their favorite eating places, from the Golden Arches to the Colonel on the bucket of chicken. While riding around the grocery cart children will spot their favorite cereal, pizza, or ice cream. They are even able to identify words by the font or color on labels. Take this knowledge to the next level by asking questions which builds on prior knowledge. Examples might be: what colors are in the stop lights? What does red mean? Look at the stop sign, what color is it, what shape is it, spell STOP etc…. Be mindful about learning throughout the day and in all that you do with your child – and never miss an opportunity for learning.

Quitting smoking and Dipping can be hard. And that might be the understatement of the month. People can try gum, patches, or just cold turkey. These methods treat the nicotine, but not the problem of enjoyment and the repetitive hand to mouth movement and most worry when quitting that they will replace smoking with food. What does it mean to have healthy eyes? Dr. Chris Gurley, of Ada Family Eye Care, says it is when a patient achieves 20/20 vision and lacks any eye health problems. Children with undetected vision problems often will have trouble with their schoolwork. Many times, children will not complain of vision problems simply because they don’t know what “normal” vision looks like. If your child is having trouble at school, you may want to schedule an appointment to make sure their vision is okay. There are also some things you can do to maintain healthy eyes. Save the world. Buy green coffee beans.

by: adam flanagan In a society where more and more people are concerned about the environment, I believe the coffee drinking population can do their part by purchasing green coffee beans. That was just a joke. Okay, maybe we will not be able to save the world one coffee bean at a time, however, we can save a little money and have some fun in the process. Coffee beans do not start out with a dark (sometimes burned) hue to them. They are plucked off the plant sporting a nice shade of red and they are actually the seeds of a cherry-like fruit. All we know is that we need that little bean to give us a cup of energy in the morning. Just think, in a matter of time, even you could be roasting your very own delicious coffee beans in the comfort of your own home, or perhaps your garage if your spouse is not keen to the smell of a small grass fire. I first discovered that I could roast my own coffee beans about three years ago. My dad had given me an espresso machine and I was really getting into the process of making that perfect shot. I bought about every different brand of roasted beans on the shelves and they all had a little label that read, “best if used by...”. I began to think about those four little words and I decided there must be a better way to have the freshest beans. Fresh food tastes better, so why not attempt to have fresh beans. I did some research on the web and I found that you could buy green (un-roasted) coffee beans for fairly cheap. I learned that you can buy beans from different countries and they all have their own special flavor. Some will have fruit notes and others will even be described as having a taste of chocolate or caramel. I was so excited about all the different possibilities that I had to get a sampler pack. Several days later I had my first bags of beans and I was ready to roast them to my exact specifications. I may have actually burned the first batch. Okay, I definitely burned the first batch. You are probably wondering what I used to roast them. The piece of equipment I used to roast my first batch will probably startle you. You may even think that it is way too complicated and decide not to even try this. Now that you are on the edge of your seat, I will let you know that I used a cast iron skillet. Seriously. That’s it. I must tell you that it is a little tricky at first, but with a little practice, you can be roasting some pretty great beans after a few attempts. The trick is to keep stirring, watch the color change and listen closely. Stirring keeps the beans moving and helps make sure that you get an even roast throughout. Watching the color of the beans helps you know if your are roasting too much or too little. Listening for a “crackling” sound tells you when you are getting close to achieving the best roast for that bean. The beans will “crack” a second time, but if you keep roasting too far past this point they will burn and not produce a pleasant cup of joe. I roasted on the stovetop for a long time, but one day my wife gave me a roasting machine as a gift. There are many different ways to roast coffee beans. You can use a skillet, you can roast them on a baking sheet in the oven, you can use an old stovetop popcorn maker or a hot air popcorn popper and then you can purchase a roaster. There are roasters for all budgets and vary in size and functionality. 18 • www.adahub.com

If you are going to roast your own beans, you must store them properly to keep the integrity of the bean flavor. It is good to let your beans rest for at least 24 hours. This gives them time to release CO2 and allows their flavor to develop nicely. You can buy vacuum sealed bags or a container with a good tight seal on it. You also need to remember that roasting your own beans will require you to have a way to grind them up for brewing. You can buy a cheap grinder at a local box store, but I recommend getting a ceramic burr grinder. The ceramic does not heat up like a metal grinder which keeps you from burning your beans during the grinding process. There is something primal about doing things yourself. If you are a coffee drinker, you should definitely consider roasting your own beans. It is not as hard as you may have thought. It has become a hobby for me and I find great joy sipping every last drop. It won’t be long till you are singing, “The best part of waking up, is freshly brewed coffee from beans that I roasted all by myself steaming in my cup”.
