recipe Corn Crusted Catfish with a Louisiana Hot Sauce Beurre Blanc Corn Crust 2 Cups Cornmeal 1/2 Cup Flour 1/2 tsp cayenne pepper 1 tsp fresh ground pepper 2 tsp salt Beurre Blanc 2 Cups white wine 3 shallots, finely diced or 1 small onion 1/2 lb butter, chilled & cut into cubes 1 qt Cream 1/2 Cup Louisiana hot sauce
Preparation Combine all of the corn crust ingredients into a nice large bowl and mix thoroughly. Set aside. Then, pour heavy cream into a saucepan and set at low heat. Reduce by almost half, stirring occasionally. In another saucepan, sauté the shallots, then add white wine. Boil until almost dry, then put into a food processor and puree. Push the mixture through a fine mesh strainer into the reduced heavy cream. Stir in the hot sauce and add the cubes of butter a little bit at a time, making sure that the butter is fully incorporated before adding more. Soak the catfish in buttermilk for about 10-15 min in the refrigerator. Remove the catfish from the buttermilk, letting the excess liquid drip off. One at a time, dip the fillets into the reserved corn flour, pressing lightly to adhere. In a large saucepan, heat 1/4 cup of olive oil over medium-high heat. Add as many fillets as you can fit comfortably into the pan. Fry until golden brown and crisp on one side, about 3 to 5 minutes. Reduce the heat and flip the fillets over: continue cooking 3 to 5 minutes. Transfer fillets to paper towels. Heat the sauce back up, whisking constantly. Place the fish on a plate and pour the sauce over it. Serve with hush puppies or, my favorite, cilantro and lemon lime rice.

In September of 2012, when Sarah Jane Johnson was selected as the Senior Vice President of the Ada Chamber of Commerce, it was both a homecoming and an opportunity to strengthen her connection with a community she loves. Johnson, formerly Sarah Jane Cody, was born in Ada and grew up on a cattle farm in Coalgate, the daughter of Steve and Nancy Cody and sister to former NFL player Dan Cody. After high school (where she was a stand-out on the Colgate basketball team), she graduated from the University of Oklahoma as a Presidential Leadership Scholar. There, she met her husband, Erik Johnson, an attorney now in private practice in Ada. The Johnsons have three children and they lived in Miami, Oklahoma for 10 years prior to the return to Ada in March 2012. Johnson brings to Ada and the Chamber of Commerce a superior level of professionalism, experience and enthusiasm for promoting the community, supporting business development and creating networking opportunities for chamber members. “In Miami, I was the Chamber Director for a number of years and later the Executive Director of the Ottawa County United Way organization. I found those positions offered a great opportunity to not only become an engaged member of the community, but also a voice in economic development and community support issues,” Johnson said. “Here in Ada I see even more opportunity and I’m excited to be a part of this thriving community.” Working under the umbrella of the Ada Jobs Foundation and its CEO Michael
Southard, Johnson is helping to create a stronger partnership between the two organizations that ultimately benefits the entire community. Southard and Johnson have teamed up on a strategic planning process with in-depth involvement of the Ada Chamber Board of Directors. In February, the chamber held a planning workshop, the first step in an overall “community visioning process” that
community beautification projects and leadership in designated civic projects. The Ada Chamber of Commerce currently has approximately 400 individual and business members and one of Johnson’s key initiatives is to grow that number and increase that support. “Our number one objective is to help the business community to thrive here in Ada,” Johnson said. “The more involved members
“Here in Ada I see even more opportunity and I’m excited to be a part of this thriving community.” will include research and public input to define this community vision. “Ada has a long-standing tradition as a hub for smaller communities in the area and at the same time it’s achieved tremendous growth as a result of institutions like the Chickasaw Nation, East Central University and, of course, our small business community,” Johnson said. “How we are able to define assets and opportunities of this community and promote them internally and externally is what this visioning process is about.” Concurrent with this planning Johnson and her chamber associates are working hard to enhance chamber programs that include: professional development, monthly legislative luncheons, business and retention programs (partnering with other local organizations), tourism and

There are very few things in this world better than a good cup of coffee. One thing that is better, though, is being able to have this cup of coffee in a friendly establishment with a comfortable atmosphere. Hot Shots Coffee House meets all of this criteria and even more. Walking in, past the outdoor patio area, you can’t help but breathe in the rich aroma of freshly ground coffee beans. Music appropriate for the time of day is piped in through speakers. The warm brown walls have a soothing quality about them, allowing you to relax as your step in the door. Tables, chairs, and couches fill the coffee house, yet are spread out enough to still seem spacious. All of this is wonderful, yet the best is when you step to the counter to place your order. The owners and employees at Hot Shots are most proud of the quality of their product. Their beans are roasted here in Oklahoma by Nordaggios, a roaster out of Tulsa. When they were first opening the coffee shop, they had several taste tests. Nordaggios won every time, making them the clear choice for Hot Shots. Sugarbakers, a local bakery, makes the muffins that pair so well with your morning coffee. They also offer oatmeal or waffle paninis for breakfast or soup and made-from-scratch paninis for lunchtime. Hot Shots has a full service coffee bar, complete with hot, iced, or frozen drinks, coffee, tea, flavored syrups, smoothies, and frappes. Their menu board is filled with suggested flavor combinations, but, of course, they are also more than
happy to make whatever combination you desire. While many people automatically think of coffee as being hot, there is definitely something refreshing about an iced coffee drinks, especially in the Oklahoma summer. It allows you to have the beverage you enjoy while also staying cool. And, if you like, you can just have a plain old cup of coffee with nothing fancy about it at all. Hot Shots is also a great place to meet people or host many different kinds of events. You can reserve it for meetings, baby showers, or whatever event you might think of. So far, they have hosted poetry readings, a meet and greet for potential foster parents, as well as all sorts of other types of meetings. Eventually, they would like to expand into art showings and open mic nights for music and poetry as well as becoming a center for community information and engagement. They would like to have business days, where patrons can come in and speak with a banker, find out about insurance, figure out how to begin publishing on the internet, or any host of other things. They want to be a
comfortable, low-pressure place for people to learn more about what this community has to offer. This family owned and operated business has a great vision for the future. achel Miller, born in Ada, always had a deep desire to be a mother. She just had a yearning to care for others and was always excited about the day she would have her own child. After graduating high school from Stratford, she was closer than she knew to having her desire fulfilled. When she married her husband, Scott, she became an instant mom to a set of twins from his previous marriage. Rachel’s journey as a mother had begun and the journey was far from over. Before she knew it, at the age of 20, Rachel had her first biological child. She admits being a bit scared, but 12 • www.adahub.com
had great support from her husband, family and her church. She began to wonder how women with no support system could handle the overwhelming responsibility of carrying and birthing a child all alone. One day when Rachel was buying clothes for her baby, she stumbled into a conversation with the director of the Crisis Pregnancy Center. The director mentioned she would be retiring soon and said they were seeking out a replacement. Rachel’s passion for caring for others was about to be taken to a whole new level. “I was 20 years old at the time with a six month old baby and I didn’t feel like I was qualified at

all for the job”, Rachel said. “However, I felt in my heart that I should pursue the opportunity”. She submitted her resume, and with the confidence of the current director, Rachel was hired for the position. It wasn’t long as the director when Rachel decided to change the name of the Crisis Pregnancy Center to it’s current name, House of Hope. She didn’t want to relate pregnancy to a crisis, rather an exciting and hopeful time despite any circumstances. Rachel did not just want to see girls pop in from time to time and never have the chance to really know them. She longed
to have a greater impact on their lives so she began pre-natal counseling and parenting classes. These new classes provided an opportunity for staff and volunteers to spend more time with the expectant mothers. It was exciting to be able to provide the girls with strong female role models that could set an example of motherhood for them. In the middle of all this, Rachel became pregnant with her second biological child. This didn’t prevent her from beginning even another new program called, “Earn While You Learn”. The House of Hope accepts donations from the community to help provide the expectant and current mothers items that they need. The Ada community has been so generous that they had to build a shed to house all the items in. Instead of just giving out the items, Rachel thought it would be a good idea to reward the participants by giving them “mommy money” for each class they attend. The participants can then use the “mommy money” to get items at the “store”. “It was also a good opportunity to teach commitment and how to handle money”, Rachel said. The House of Hope also strives to help mothers choose adoption over abortion. Rachel expressed her idea, “The answer to abortion is adoption. It’s not giving up your child, rather it is choosing a better life for your child”. Assisting others with adoption caused a new desire to build in Rachel. She began to realize their was a great need for adoption, both locally and internationally. Her husband Scott had always felt like he would like to adopt one day. With four kids at home already, Rachel and Scott set out on the long journey of adoption. Cost was an immediate concern, but with the encouragement of friends and trust that God would provide, they pursued adoption on the international level. “We just felt like we were supposed to adopt from another country”, Rachel explained. They were originally thinking about adopting from China, but this all changed when they were looking at a brochure. Rachel just connected with the country of Ethiopia and it was like she couldn’t get it out
of her head. As they filled out the paperwork, they left the space blank where it asked the question, “What Country_________________?” After finishing the enormous packet, Rachel called the adoption agency and just asked a simple question, “What country has the greatest need?” The person responded with, “Ethiopia”. They filled in the blank and never turned back. After learning how at risk girls were in Ethiopia for being sold into slavery, the Millers decided to put in the request for a little girl. Much time, money and paperwork passed by as the family anxiously awaited the moment they would get to meet their new daughter. Once the final paperwork was completed, they were told to expect a nine month wait. Rachel was getting some homemade goods ready to sell at the Stratford Peach Festival, when she heard her cell phone ring and noticed the familiar area code. “It must be another change we need to make to our paperwork”, she thought to herself. Rachel was shocked when she heard a voice say, “This is your referral phone call. We have a five week old little girl named Tarike. We are going to send you an email with her picture”. Rachel rushed into the bank where Scott was and began to tell him the exciting news. “I was hyperventilating and the people must have thought I was about to rob the place”, she said as she laughed. They both left the bank in a hurry to get to a computer so they could see the face of their new baby girl. Their home was too far away so they sped to their friends home, which was much closer, and asked to use a computer. The mouse click opened up the email and they were suddenly staring into the biggest, most beautiful brown eyes they had ever seen. Slightly choked up, Rachel commented, “It was at that moment that all the fear and anxiety just vanished”. Scott and Rachel met Tarike for the first time in October 2010. She was five months old at the time and had a huge smile on her face when she saw Rachel. They decided to give her a new name, Aamina, which means “I Am Safe”. The court
process ended and they brought her home in January of 2011, where she immediately bonded with their four other children. Motherhood comes in many different ways. Some biological moms. Some step-moms. Some moms by adoption. Some, a little more rarely, a combination of all three. Although Rachel strives to teach her children and clients valuable lessons, there are some she has learned along the way that she would find joy in sharing with you. Lessons I feel, she best describes herself.
“Every life has a purpose. It is all valued by God and should be valued by us. From the unborn American baby to the orphan in a third world country. From the unwed teenage mother to the couple with a heart for adoption. We have a chance to love and live life every day and we should embrace that. Time is precious. I honestly can’t believe that my oldest two are graduating high school this month. I wish that I could tell every new mom to not wish away the hours, because they quickly become weeks that turn into years that fly by faster than you could imagine. Take time to rock your newborn even after they have finally drifted to sleep, hold your toddlers hand even after your arm has fallen asleep, color with your preschooler, go to basketball games and baseball tournaments, have dinner together, sing songs, play games, read books, tell stories and cherish every single moment! Whatever stage your child is in, don’t wish it away. Drink in this precious, sometimes exhausting phase of motherhood. Love your children completely and ridiculously.”

Have you ever been hard at work, huffing and puffing over some difficult task, and thought, “There has to be a better way.” The difference between most people and an inventor is that the inventor will take that opportunity to do different work, trying to solve the problem, making life easier for themselves and other people. Scott Pardue is one of these people. It is how he was raised to look at the world. This way of thinking has led to three different inventions, one of which will change the world of contracting forever. Born and raised in Southern California, Pardue came by invention naturally. His stepfather was an Aerospace Engineer and inventor. Part of his job was to solve problems for the government, inventing solutions. Pardue’s grandfather was also an inventor. Among other things, he invented the collapsible box and the machine that makes the flex straws that we all love so much. So, when Pardue was growing up, it only made sense that experimentation and problem solving was encouraged. His father might nudge him in the right direction, but in general he was left to discover his own solutions. Because of this, it is easy for Pardue to just see what needs to be done. And all of his inventions come from problems that he encountered himself through his work as a contractor. His first invention, the Springdriver, came out of the difficulty of getting screws to stay in place while using screwdrivers—especially the high powered ones for commercial use. He looked at the problem, saw what needed to be done, and found the solution. When he figured it out, his fellow workers immediately saw the usefulness in his invention and wanted their own work to be eased as much as his. 14 • www.adahub.com
The next invention, the Kleenkutter, was a joint project between Pardue and his father. Pardue had seen the danger and difficulty of cutting corrugated metal firsthand. There had to be a better way. And so he and his father set to task and discovered how to do it. Between his father’s engineering skills and Pardue’s practical knowledge and common sense vision, they were able to invent a tool to cut corrugated metal without all of the safety hazards previously encountered. When this was first available to the public, contractors from all over the world purchased one. In fact, the very first call Pardue got was from Guam. It is his latest invention, however, that will change the world of contracting forever. If you have ever watched people pour concrete, you will notice that, as soon as the concrete dumps out on the ground, workers hustle to the mount and use two-by-fours called screeds to quickly spread it out before it dries. It is very difficult work, quickly moving a heavy pile of concrete from one place to another while bent over using only a piece of wood. However, this is the best way that had been found to do it. Contractors today are using the same method that was used when the Romans were building the Colloseum. There is another method, the vibratory screed, but it is highly expensive and at times, breaks code. Only about 10% of contractors are willing to pay that expense and risk the possibility of more expense in the form of fines. Pardue encountered this problem many times himself. He knew firsthand the toil and backbreaking labor of spreading concrete with a screed. Once again, he saw the solution in the simplest terms. Some people had tried to solve the problem by creating machine suits reminiscent of Iron Man, but those would be too costly and time consuming to
put on. Pardue, however, invented the Ape Arms™. This is a simple way to capitalize on the human body’s natural strength, making it more powerful and efficient. And the tool maximizes the power that one person can produce, using the technology of simple machines. Best of all, this invention isn’t prohibitively expensive, allowing any contractor, large or small, to purchase it for their workers. Pardue looks at the world in terms of problems and solutions. His main focus, though, is the average worker. He doesn’t just want to invent things, he wants to invent things that will help make hard work a little bit easier and a little less backbreaking. In the end, though, he just wants to leave something to the world, and make it a better place than it was before. He wants to be a part of human progress—that great push toward a better future.
