Our Story Dublin Whiskey Company, in the historic Liberties area of old Dublin, is the first distillery to open in the capital in over 125 years Irish Whiskey has nourished Dublin’s conversation, argument, debate, humour, music and poetry for over a thousand years. How production of the national spirit ceased in the capital city is a long story, but thankfully it’s a story with a new beginning –

Dublin Whiskey Company, in the historic Liberties area of old Dublin, is the first distillery to open in the capital in over 125 years – and the first to produce whiskey in Dublin since the early 1970s. The independently owned Dublin Whiskey Company is reviving a legacy that goes back many generations but it is also innovating, creating new ideas and new products with the ancient craft of distillation at their heart.

we’re proud to say that Dublin Whiskey Company is both a cause and a consequence of its revival. Our belief in the future of Irish whiskey is inextricably linked to the rebirth of the Liberties. Indeed, we have located the new distillery in a former mill, built in 1691, which was powered by the River Poddle, the river upon which the original town of Dublin developed. The Black Pool, or Dubh Linn, from which Dublin gets its name, is part of the same river.

From the 15th century, The Liberties area of Dublin had many industries and was a centre of brewing, distilling, weaving and other manufacturing. Whiskey production in the area would have reached its height in the late 18th century, when it was home to more distilleries than any other part of the country.

Our distillery is the only place in Dublin where you can experience the craft and processes of whiskey making, from grain, to glass. We look forward to welcoming you to this unique environment, to share tales of our past and plans for the future.

The larger distilleries exported whiskey to the four corners of the British Empire, while a great many ‘free spirits’ produced their own. It could be said that if duty was paid it bore the name ‘Whiskey’, if not it was illicit Poitín.

There are many theories about why Irish whiskey lost its position as the leading whiskey/whisky in the world. Sit down over a glass and you’ll hear some blame the canny Scots who were able to exploit US Prohibition to better advantage. Others will tell you it was the trade war with Britain, following Irish independence. Those of a more technical mindset will say, as they inhale the complex vapours, that it was Ireland’s insistence on maintaining Pot Still, batch production, while other countries used the cheaper, faster Coffey Still (no relation to Irish Coffee,

And, while we have remained loyal to our ancient craft, we are looking to the future as we restore Dublin Whiskey to its former glory. As well as producing a variety of other distilled liquors, we will be helping to create a wider range of Irish Whiskey, giving variety and contrast to help our native spirit appeal to a wider range of palates.

OUR WHISKEY

Our WHISKEY Dublin Whiskey Company produces both a single malt whiskey and an Irish pot still whiskey, both produced in the single batch process. The two most important factors in the production of whiskey are the quality of its ingredients and the ageing process. We source the fi nest, unadulterated Irish spring water and the highest quality barley, from Dublin’s lush hinterland. We distil them at the Mill Street premises in a two tonne mash and copper pot still.

The rest of the process is down to the choice of casks and the amount of time the whiskey is left to rest in them. We carefully select the casks in which we age our whiskey, so as to create a unique, rounded nose and flavour before bottling. That distinctive flavour, and the passionate craftsmanship that went into it, is evident in every golden glass.
