Welcome I welcome you to the 2019 edition of the Champlain Valley Local Food and Farm Guide. The Guide is produced and distributed to 21,000 readers each year via the combined efforts of the Addison County Relocalization Network, ACORN, and The Addison Independent. ACORN is a grassroots organization whose mission is to promote the growth and health of the local food and agriculture system in the Champlain Valley. Chef Pierre Thiam, formally of Senegal, and now a chef in New York, spoke at a recent conference in Paris, sponsored by the World Wide Fund for Nature and Knorr Foods. He spoke of the need to diversify our diets (read more in the booklet “Future 50 Foods: 50 Foods for Healthier People and a Healthier Planet,” which you can read online at tinyurl.com/Future50Foods). One part to the solution that he mentioned was an ancient grain called fonio. Fonio is widely respected in sub-Sahara Africa not only for its high nutritional value but also for its ability to grow in and replenish substandard soils. Thiam says that farmers are the backbone of the African economy and that boosting their ability to make a living would lift up the entire continent. He has created a non-profit company to help farmers produce, process, and market fonio to developed nations. This is important work. It is done to create food justice and sustainable jobs in the part of the world producing the single largest numbers of migrant people fleeing poverty and starvation. An obstacle in the way of Chef Thiam’s goals is the difficult and labor-intensive system of processing fonio into usable human food. Although we are operating on a much smaller scale, ACORN is similarly concerned with issues of processing, markets, and food security. We at ACORN are excited about the work we do and proud of the part we play in keeping a working landscape in our beautiful Champlain Valley. Our work plan for this year has a focus on the equity and food security of some of our most vulnerable citizens.You
will find an article inside describing the Addison County Farmacy Project. This project will be launched during the summer of 2019 and will bring together numerous community agencies, organizations, and farmers to provide fresh fruits and vegetables to Addison County residents experiencing diet-related health issues. Another story you will find describes a partnership with local providers of early childhood learning that connects our youngest residents to local foods and the farmers that produce that food. You will hear the stories of the dedicated teachers and administrators that combine their passion for local food with their passion for early childhood education. You will read other stories, as well, about producers, processors, and distributors all working to sustain a robust farming economy in Addison County and the Champlain Valley. Those stories will cover everything from hemp cultivation to organic vegetables and farmhouse cheese. All are interesting and exciting stories. Many are written by ACORN board members. The next Orb Weavers:
Cheese legends are passing the torch in New Haven By Charlie Mitchell & Miyo McGinn In the late 1970s, two women moved to Vermont looking for land. All they wanted was to grow food for themselves and their neighbors, and for 40 years, they did just that, selling milk, vegetables, and a unique farmhouse cheese that became somewhat legendary. As of this past winter, they’ve stopped milking and making cheese. Instead, they are taking walks in afternoon light they’ve never seen before on their farm on Lime Kiln Road in New Haven. “We can take a walk, at like three o’clock in the afternoon, and there’s a whole world out there!” marvels Marjorie Susman. She and her longtime partner, Marian Pollack, have owned Orb Weaver Farm since 1981. “I mean, not everybody milks cows: it’s astounding.” Making cheese in the cave, milking morning and night, and rotating the pasture are responsibilities that now belong to Kate Turcotte and Zack Munzer, a couple in their early thirties. Kate is an experienced cheesemaking alumnus of Shelburne Farms and Consider Bardwell Farm; Zack has years of experience breeding livestock. After three years of “dating,” the two parties signed an agreement last November that transferred the Orb Weaver name, brand, business, and eventually property to the next generation. Pollack and Susman will still run the market garden and live in the house they have occupied since the early ’80s. Having secured a retirement and succession plan puts Orb Weaver Farm in the minority of aging New England farmers, 92 percent of whom have no young successor for their land or business. Dairy farming’s decades-long nightmare of foreclosure and consolidation has been punctuated by a historic year for farm loss,

and finding ways to support farmers young and old in keeping land in use is of primary concern for those around the state looking to Vermont’s economic and social future. Marian Pollack explains that passing the farm down wasn’t always part of the plan. “We thought we were just going to stop farming, sell the cows, watch the pastures grow up and the barn fall down,” she said. “That would have been really sad.” But as the couple grew older and friends began to encourage them to think ahead, they became open to a new chapter for Orb Weaver, whatever it was. “We had great faith that something would become apparent,” (See Orb Weavers, page 8)

Orb Weavers continued from page 7 Susman adds. That faith landed them the property in the first place. When the couple arrived to work as dairy hands in the late ’70s, “we thought it was just going to be a stop along the way,” describing the house as a “falling down hovel.” But then their landlords, Jim and Margaret Morse, decided to relocate to Virginia, and offered to mortgage the land to Susman and Pollack. Money was the only obstacle, and they faced some discrimination getting loans. “We got laughed out of a few FHA offices initially,” remembers Pollack. They managed to secure the first loan ever made by the Vermont Economic Development Authority, two weeks after being denied. “I think they didn’t find anybody as qualified as us,” Susman said. With the VEDA loan, another grant from a no-interest lending program for beginning farmers through the Stockbridge School of Agriculture out of UMass Amherst, and flexible financing from the Morse family, Orb Weaver Farm was born. “It seemed like things were just falling into place,” says Susman. For years, the couple shipped commodity milk from a small herd, grew vegetables for the Middlebury Natural Foods Co-op and a handful of restaurants, and made farmhouse cheese from the milk in their dairy. They were proud of the cycle they created by making cheese from the cows they milked and building up their soil with the manure. Alongside Golden Russet Farm in Shoreham and Lewis Creek Farm in Starksboro, they become a vanguard for the local food and farming movement that has blossomed across the state in recent decades. As Susman and Pollack see it, success came from thrift, common sense, and modest ambition: as long as they were feeding themselves and neighbors, they were satisfied. The years were trying, and after the mid ’90s Orb Weaver stopped shipping milk and downsized their herd. Still, few farmers manage making a prestigious farmhouse cheese while running a full-scale vegetable operation and a small dairy. It’s into these legendary shoes that Kate Turcotte and Zack Munzer are now stepping as they enter their first year at the helm of Orb Weaver Creamery, the new official name for the cheese operation. But the financial reality for Turcotte and Munzer is even

less forgiving than the one faced by Pollack and Susman years ago. In addition to taking out loans and dipping into their savings, both the new owners still work off the farm to make ends meet. “The only reason we’re able to do it is because mentally, we know it’s just temporary,” says Turcotte, reflecting on the hectic schedule and long hours. Facing steeper costs and debt, Turcotte and Munzer plan to scale up the business and expand into direct sales. In addition to producing the original recipe developed by Pollack and Susman, Turcotte plans to make several new types of cheeses. “We are re(See Orb Weavers, page 9)

Orb Weavers continued from page 8 ally dedicated to continuing to be a community cheese. Not make a fancy cheese that only gets sold in New York City and stuff like that. We know that people buy this as their table cheese, or the cheese they put in their kid’s sandwich and stuff like that.” Despite a shared appreciation for handcrafted cheese, Turcotte comes at cheesemaking differently from her predecessors. “I’m more of a science-based cheesemaker,” she says. “Marjorie, a lot of it for her is feel and smell and taste and everything like that, whereas for me I’m used to like temperature, pH, graphs and all that kind of stuff.” Turcotte appreciates that these differences have ultimately been complementary instead of conflicting. “Learning to make cheese from [Marjorie] has strengthened me as a cheesemaker. Because those are skillsets that you don’t get when you take a class.” The process hasn’t been easy for the incoming or outgoing couple. But it was the baseline of trust and care between the two couples that was able to eventually make it all come together. “We would never have been able to go through some of the hard times we went through without that foundation of just our relationship, and that shared vision that we had.” Stepping into an established operation with a devoted following didn’t just make business sense for Turcotte and Munzer; making sure that Orb Weaver cheese would continue on was a driving motivation. “It was this or nothing,” says Turcotte. “I don’t think that Vermont needs another cheese farm, I think Vermont has a lot of great cheeses. But Vermont needs to have Orb Weaver.” The original Orb Weavers are pleased with the arrangements. “We’re so lucky to have somebody that wants to take over,” said Marian Pollack, her partner by her side adding, “It’s amazing that we’ve been able to live our lives like this.”

Farmacy opens
New program aims at health By John Flowers MIDDLEBURY — The Addison County Relocalization Network, participating physicians and a group of farmers this year are launching a new “Farmacy” program, through which select local households will be provided free produce and related information aimed at improving their overall health. Lynn Coale, executive director of ACORN, said Farmacy organizers have identified three farms to supply what will be 8-10 pounds of food per week to each of the 45 participating households. Suppliers will be Firefly Farm in New Haven, New Leaf Organics on the Bristol/Monkton line, and Opia Farm in Sudbury. Coale added New Haven’s Lester Farm will be tapped to fill in any produce gaps that might emerge during the 12-week Farmacy run, slated to commence on July 10 and end on Sept. 25. Participating farms weren’t just selected based on their ability to grow the requisite food.They were also picked because they’re new, emerging farms, and ACORN officials figured they could use an extra boost. “One of the goals of this project all along was to help newer farms get a market,” Coale said. Farmacy allotments will be “prescribed” by providers at Addison Family Medicine and Pediatric Primary Care in Middlebury, along with the

Shares, depending on what’s in season at the time, will include such foods as lettuce, green beans, cucumbers, tomatoes, eggplant, kale, beets, onions, carrots, summer squash, beans, broccoli, blueberries, cabbage and leeks. Mountain Health has a head start in its understanding of how Farmacy works.The office has since 2014 been collaborating with New Leaf Farm on a separate “Farm to Patient” initiative that also links patients with nutritious foods. In 2014, the center began growing tomatoes, spinach, arugula, Kale and other veggies in its own garden. Mountain Health has opened its raised garden beds to physicians, patients and surrounding community members alike. “It made sense to continue that relationship,” Coale said. ACORN is spearheading Farmacy with substantial help from Porter Medical Center, Middlebury College, and others. Several other Vermont counties already have “Farmacies” up and running, and ACORN officials are getting advice from statewide practitioners of the program. The Vermont Farmers Food Center’s Farmacy program has reached more than 1,006 unique individuals in Rutland County since launching in 2015, according to the organization’s website. Farmacy has also made inroads in several other states, including West Virginia and NewYork. And it should be noted that Addison County’s Farmacy offering is
about more than receiving food. Participants will be given a variety of support services to make sure they get maximum benefit from the fresh produce, aimed at turning the tide on health woes ranging from hypertension to diabetes.Those services will include: • Counseling provided through a variety of Porter Medical Center dietitians, nurse case managers and referral specialists. • Cooking, menu preparation and nutrition advice through weekly sessions hosted by the Patricia A. Hannaford Career Center. Staff from the Middlebury Natural Foods Co-op and Helping Overcome Poverty’s Effects will lend their expertise to the cooking/menu education effort. Organizers are already turning their attention to growing Farmacy’s reach and making it an annual offering. It’s being piloted this year with a budget of around $26,500, thanks to major financial commitments from ACORN and Porter, along with grant support fromVermont Rise, the Middlebury Maple Run, and Ben & Jerry’s Homemade, as well as individual donations. “We know that good food is good for you,” Coale said. “But what we need to do is convince legislators, insurance companies (and other potential funders).” Coale cited results of a new study led by researchers from Tufts and Harvard universities that suggests offsetting the cost of healthy foods by 30 percent for Medicare and/or Medicaid participants could prevent about 3.28 million cases of heart disease and stroke, and could be cost effective within five years. “We believe (Farmacy) should be Medicaid and Medicare funded, which is a recommendation of the Tufts report,” Coale added. Program connects farmers, preschools By CHRISTOPHER ROSS ADDISON COUNTY — A dedicated network of early care education (ECE) providers, farmers and community supporters this spring are rolling out a pilot program in Addison County to connect preschool children with local food producers. Thanks to a grant from the Vermont Agency of Agriculture, Food and Markets, Farm to ECE in Addison County has developed an Action Plan that will put fresh local food on preschool tables, provide food-related education, “Farm to ECE supports facilitate pre-K farm visits and establish a structure to integrative learning, hold it all together. including social and “Farm to ECE supports integrative learning, emotional development for including social and young learners.” emotional development for

Phil Scott signed a bill in 2017 to expand the Farm to School program. “Great work is already being done in the state, and we’re excited to grow the movement into more childcare settings and schools with the Vermont Farm to School Network.” The program’s Action Plan includes four components. CLASSROOM Patti Starr Smith runs Bristol’s Starrship Gardens in conjunction with her in-home childcare business, Starrship Kids. For years she has been working with organizations like Northeast Organic Farming Association, the Addison County Relocalization Network (ACORN) and the Vermont Community Garden Network to establish a solid foundation for the county’s emerging Farm to ECE program. Preschool continued from page 37 work she does. “Gardening is a rich experience for children,” Smith said. “It keeps or gets them tuned in to nature and the outdoors. They make new discoveries, even if it’s something like snails consuming their hopeful goods. It teaches them about life sciences and life cycles, and the effects and importance of weather year-round.” Smith’s Farm to ECE committee is developing a curriculum for the program, and this year they’re planning four workshops: • Playing with Wool (spring). • Grains and Bread (summer). • Apples (autumn). • Sprouts and Microgreens (winter). They’re also developing workshop-related kits to share with ECE providers. CAFETERIA ACORN Executive Director Lynn Coale has been helping create Farm to ECE’s food distribution plan. “We asked ourselves, ‘How can we interact with farmers to get fresh fruits and veggies and how can we work with cafe staff to prepare them?’” Coale said. Farm to ECE plans to establish connections with local farms like Golden Russet in Shoreham and Elmer Farm in Middlebury, and with local food distributors like Middlebury Foods. But answering this initial question immediately leads to other issues. For instance, local preschools have limited, if any, space for food storage, Coale said. This hinders their ability to purchase directly from farmers or to purchase in bulk. To solve that problem, the Cafeteria Committee hopes to centralize food distribution. For now, Coale said, “My wife and I have bought a big fridge.” As the program evolves, however, the committee hopes to develop a sustainable distribution system centralized in a permanent site, and to develop for ECE providers weekly shared menus that are based upon the availability of local food. COMMUNITY, COORDINATION Farm to ECE Addison County also plans to create a resource guide for ECE providers and families with preschoolers that would identify which local farms welcome tours for young children, offer activities on the farm or are willing to visit ECE programs. Efforts are also under way to increase awareness of the Farm to ECE program and to develop community pride around it, according to the Action Plan. Say Hello To The Cannabis Plant Fifty years of hemp prohibition ended with the 2018 Farm Bill, and CBD is on the rise. Hemp it turns out grows very well in Vermont. All good news. Now, let’s meet some of the farms, the businesses, and the cannabis compound superstar of Vermont’s craft-hemp movement. Hemp, a common name for Cannabis sativa L. is a legal but regulated agricultural commodity and the source of thousands of food, fiber, medicinal, and “industrial” products. CBD or cannabidiol is a non-intoxicating compound found in all varieties of the cannabis plant. CBD may be the latest hemp revelation, and it won’t be the last. Cannabis sativa goes by lots of unscientific names, with hemp and marijuana being the most common. Both have CBD but what legally sets them apart is the amount of euphoria-producing THC or tetrahydrocannabinol in each variety. By current legal definition, hemp can contain no more than 0.3 percent THC by dry weight (a trace amount). This is an arbitrary quantity of THC that legally distinguishes hemp from marijuana, which is cannabis that measures over 0.3 percent THC. No matter the source, CBD itself will not make you high. Period. And yes, it is legal in all 50 states. According to the World Health Organization, cannabidiol presents no risk of toxicity or dependence. Other research on CBD points to its excellent safety profile. With hemp’s new legal status, we can expect to see considerably more clinical and human trials delving into CBD’s effectiveness. So far, the dozens of peer-reviewed studies I’ve evaluated point

Hemp continued from page 41 is shown to have potential medical benefits in the treatment of addiction, anxiety, arthritis, cancer, cognitive decline, depression, diabetes, epilepsy, nausea, pain, and post traumatic stress disorder, or PTSD. Just Google “CBD” and you’ll get 190,000,000 hits. That’s a lot of CBD. According to one recent report, 22 million Americans, or an estimated 7 percent of the U.S. population, are using it. How could this be? Quite simply, they’re finding relief. If all this seems like new news, or too good to be true, consider that humans have been growing cannabis for 10,000 years. And in the U.S. for 100 years before 1940, cannabis tinctures from the likes of Parke-Davis (Pfizer) and Eli Lilly were routinely prescribed by physicians to help treat muscle spasms, chronic pain, and sleep disorders, as well as melancholia, migraines, and much more. Modern medicine might not see the interconnectedness of these ailments, but apparently, cannabis surely does. Vermont CBD Artisans’ Tour de Hemp The year before Alejandro Bergad moved to Hardwick to buy a farm, he’d gotten a good feel for growing hemp in Colorado. In 2016 he and his close friend Jacob Goldstein started Green Mountain CBD, now called Sunsoil; it isVermont’s first commercial, vertically integrated CBD wellness company. Their inspiration for starting Sunsoil rings a familiar note among Vermont’s hemptrepreneurs. “Jacob and I shared a clear vision of the utility of CBD and the benefits of using hemp oil,” says Bergad. Now their Vermont-grown, certified organic, full spectrum tinctures, capsules, and edible salve are gaining national attention. Twentyeight full-time employees work at Sunsoil, and 60-100 more are needed during the 60-day harvest and drying season. Hemp gives good reason to come to Vermont to work, live, play, and stay. About the time Bergad was eyeing Vermont, Carl Christianson was returning to the Green Mountains to be part of the new hemp economy. Carl brought with him his family, a Ph.D. in natural products chemistry, and a passion for hemp. This combined for a fitting launch, when he and his close friend Noah Quist established Northeast Processing (NEP); a premier botanical processing, testing, and hemp extracts company located in Brattleboro. “Noah and I identified a gap in hemp processing
services and lab testing in Vermont,” says Christianson. “We brought Northeast Processing’s team together to help small farmers. They needed the infrastructure.” NEP uses a cold ethanol process, and by adhering to precise and consistent standards for purchasing, testing, and processing hemp, Quist and Christianson are able to, in Carl’s words, “showcase the Vermont brand as an exemplar of quality.” Those words echoed my recent conversation with Alejandro. “What’s most important to look for in a CBD product?” I had asked. There was no hesitation, “Transparency,” he replied. Bergad maintains that organic production, GMPs (Good Manufacturing Practices) and third-party lab documentation are the keys to CBD product safety, “This is what builds customers’ trust; that what it says on the label is what’s in the bottle.” Due-north 150 miles from Brattleboro, Rebecca DeGiuseppe and her husband John run Lily Hill CBD from their farm in Eden. John and Rebecca are full-time hemp growers and artisanal producers of organically grown, CBD-rich tinctures, capsules, topical salves, and manicured flowers. Rebecca carries a certificate in family herbalism, focuses on formulations and sales, and assists John with the farm. Their neighbor, Ryan Podd of Northern Roots Nursery, supplies the hemp starts and seeds. All of Lily Hill’s products are third-party tested multiple times for accuracy and consistency. Curious if there was a customer favorite, when I asked Rebecca, she replied that their tinctures sold the most. “It seems people are able to find their correct dosage more readily,” she said. John pointed out, “I’ve been taking our CBD caps daily for two years… they really help me over the afternoon hump.” This sounded strikingly familiar. As I was saying goodbye to Carl earlier, I asked about his experience using NEP’s extracts. “No question,” Carl told me, “having daily access to our CBD helps with stress relief.” A pattern of craftsmanship and “product benefit” among these entrepreneurs was emerging. I reached out for additional confirmation to MP Labs in Burlington. They buy or processes Vermont-grown hemp for others, and to supply the main ingredient to their own CBD line, Mansfield Provisions. Following a common theme, “transparency is key,” all their products are also third-party tested. For partners Kyle Rapoza, and Drew Kaigle, having steady access to their own supply of CBD has been a real benefit of starting the two companies (Drew has been hampered by sports-related pain). Tim Ruarks, the third partner, solidly confirmed my realization that regular CBD use is soothing for entrepreneurs and their families. Said Tim, “40 mg of our tincture every morning in my coffee not only helps me with the stress of running the business, it’s helping me to raise my one-year-old, and I’m sleeping better.” The last stop on this Vermont Tour de Hemp was with organic farmers Rebecca and Joe Pimentel, who started Luce Farm Wellness in Stockbridge. The couple puts a great deal of care into their line of organically grown CBD-infused products, and it shows. All are third-party tested, from field to jar. The Pimentels moved family and farm operations here from Massachusetts in 2013, eventually settling at the old Luce Farm. Their first crop was a true adventure. “Our plants were very productive our first year,” Joe told me. “And no one was set up to process yet in Vermont, so I ran all over New England looking for an extraction lab. That experience showed us why it’s much better to have a plan in place before you start the crop.We’re better prepared now.” He and Rebecca went “all-in” for 2017 as full-time artisanal hemp farmers and craft formulators to produce their infused-honey, elderberry syrup, extracts, and body rubs. Online sales on their eye-catching website are brisk. “It’s exciting,” says Joe. It’s also intense, but that, he says is what the CBD

The Clemmons Family Farm: A Sense of Place in Charlotte By Lindsey Berk The word “culture” is at the very heart of the word “agriculture.” Anthropologists and historians agree that as a species, humans did not create civilizations until the advent of agriculture, which then enabled people to start living in cities. We quite literally cannot have one without the other. Lydia Clemmons, one of the second generation of the Clemmons family on the eponymous farm based in Charlotte, recognizes the importance of culture and how it helps to not only define a person’s uniqueness, but also acts as a connector across differences. “I’ve spent most of my adult life working in rural communities throughout sub-Saharan Africa where diversity and culture are sources of pride and joy,” reflects Lydia. “It’s exciting to bring that perspective home to Vermont. A Recipe for Every Season Tourterelle’s Spring Vichyssoise
Two Brothers’ Winter Cheddar Ale Soup
By Chef Tom Morris from Tourterelle Restaurant & Inn
Ingredients: Yields approximately 120 ounces, or 15 cups.
Ingredients: • 2 bunches of ramp leeks -rough chopped • 5 potatoes-diced • 4 stalks celery- diced • 1 spanish onion- diced • 2 leeks-diced • 5 cloves of garlic-sliced
• 1 medium white onion, finely • 1/8 tsp ground white pepper diced • 16oz Monument Farms Dairy heavy cream • 24oz Switchback Ale • 3 quarts water • 2oz vegetable base • 2.25 lbs of shredded Cabot cheddar cheese
• 1 ½ qt chicken stock • 1 cup heavy cream • 2 bay leaves • Salt & pepper to taste • 4 tblspoons olive oil • 2 tblspoons minced chives
Roughly 10 servings.
Roux: - 9oz butter & 9oz flour
Preparation:
In a large stock pot, sweat the celery, onions, garlic, leeks, and bay leaves over low heat until soft and translucent. Add potatoes and stock and increase temperature to medium. Simmer until potatoes are soft, then add cream. In a second pan , boil water, add ramps for 20 seconds, then strain and cool in iced water. Combine all ingredients in blender and blend until smooth. Run through fine strainer, season with salt & pepper to taste. Chill for three
hours or overnight. Serve chilled with minced chives.
Preparation: Caramelize the onions in 2T of butter. While onions are cooking, make your roux by melting butter then whisking in flour. Leave on low heat. After onions are caramelized, add water, beer and vegetable base. Bring to a heavy boil. Add the roux. Blend with an immersion blender until smooth. Remove from heat and add cheese and pepper. Blend until creamy and smooth. Cool to approximately 80 degrees. Whisk in cream.
Middlebury Inn’s Fall Seared Sea Scallops 3 Squares Cafe’s Summer Red Quinoa Tabbouleh with Smoked Feta By Chef John Hessler • 1 lb fresh dry sea scallops • 1/2 lb brussel sprouts • ½ lb fingerling potatoes
• 1/4 slab bacon (unsliced) • 2 T real maple syryp • 2 T unsalted butter
Ingredients: (makes dinner for 2) Preparation:
Heat your oven to 350 degrees Cut bacon into half inch cubes. Cook on a sheet tray for approximately 30 minutes until cooked through but not crisp. Slice the potatoes in half lengthwise. Toss in olive oil, season with salt and pepper. Bake on a parchment lined tray until tender, about 25 min. Nick the stem off of the brussels and cut them in half lengthwise. Boil salted water and blanch until tender, 6-8 min. Drain and submerge in ice cold water, drain again. Inspect scallops for the little side muscle, peel and discard. Dry with towel. In saute pan heat half centimeter oil. Add the bacon, brussels and fingerlings. Saute for one minute over medium heat, then transfer to the oven. Heat half centimeter oil in a second saute pan. It is important that this oil is very hot. Carefully place scallops in the oil. Sear until bottom edges brown, roughly 90 seconds. Cut the heat immediately and then flip the scallop. The heat from the pan will continue to cook the second side, two minutes. Remove the brussels and bacon from the oven and arrange on a plate. Place the seared scallops on the brussels and bacon mixture. In the saute pan used for the brussels melt the butter until it begins to brown, add maple syup. Drizzle over the scallops, the bacon and brussels. Garnish with lemon, shaved parmesan or micro greens. Pairs well with a good IPA, sauvignon blanc or gruner veltliner.
INGREDIENTS: YIELD - Makes 8 servings • 1 cup red quinoa, rinsed well seeded, cut into 1/4” pieces • 1 pint cherry tomatoes, • 1/2 teaspoon kosher salt plus more halved • 2 tablespoon fresh lemon • 2/3 cup chiffonade flat-leaf juice parsley • 1 garlic clove, minced • 1/2 cup chopped fresh dill • 1/2 cup extra-virgin olive oil • 2 scallions, thinly sliced • Freshly ground black pepper • 1 pound smoked feta • 1 large English cucumber, PREPARATION:
Bring quinoa, 1/2 teaspoon salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Meanwhile, whisk lemon juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper. Spread out quinoa on a large rimmed baking sheet; let cool. Transfer to a large bowl; mix in 1/4 cup dressing. Add cucumber, tomatoes, herbs, and scallions to bowl with quinoa; toss to coat. Season to taste with salt and pepper. Add diced feta and drizzle remaining dressing over.
