Ticonderoga Historical Society Prepares for 30th Festival of Trees Ticonderoga, NY – The Ticonderoga Historical Society has added some new features to its annual Festival of Trees, as it celebrates the 30th anniversary of the popular holiday event. Organizations and individuals are invited to participate and compete for cash prizes at the Festival of Trees, taking place at the Hancock House from November 25 through December 29. “Decorated trees, centerpieces, and other displays do not have to follow the suggested theme,” said THS President Bill Dolback. “However, we will be handing out some cash prizes for themed trees, as well as other displays and décor. Who couldn’t use a little extra money around the holidays?” Because 30th anniversaries are “pearl” anniversaries, the planning committee chose “Pearls of History” as an optional theme for the Festival. Trees will be judged by an anonymous panel of three individuals. Prizes will be awarded for best theme, with a $100 prize; most creative, with a $100 prize, best children’s (under 18), with a $50 prize; and best non-tree holiday display, with a $50 prize. Winners will be announced and prizes awarded at the free Champagne Reception held Sunday, December 1 from 1 until 3 p.m. Also new this year will be a holiday train layout, courtesy of the Upstate Model Railroaders. The train layout, and educational material about the history of trains in our region, is made possible by grants from Stewart’s Shops and the Ticonderoga Cultural Arts Alliance. Trees can be any size; however, fire regulations allow only artificial trees. Additionally, lighting must comply with UL approval codes. Decorated trees must be in place no later than November 24 and must be removed the week of January 2nd. Group tours for schools and other organizations, as well as a pre-arranged visit from Santa, are also available by reservation. The Annual Holiday Train
The annual Holiday Train is rolling through Central and Upstate New York, spreading cheer and helping feed the hungry this Christmas. Two trains make the journey in both Canada and the U.S, stopping in 164 communities, including Saratoga Springs and the Adirondacks this year, collecting food and donations for local food banks. "The CP Holiday Train program is our way to help in the fight against hunger by growing awareness of this
issue and providing a fun and engaging way for the public to show their support," said Keith Creel, CP's President and Chief Executive Officer. The U.S.-bound train will depart from Montreal on November 25 and head south, making several stops in central and upstate New York. Alan Doyle and Beautiful Band will be aboard, performing at each stop. Here's where you can see the holiday train and help local food banks at the same time. Ingredients • 1 1/2 tablespoons extra virgin olive oil • 1 pound shrimp, peeled and deveined • salt to taste • 6 cloves finely minced garlic • 1/4 teaspoon red pepper flakes • 3 tablespoons lemon juice • 1 tablespoon white cooking wine • 3 teaspoons cold butter • 1/3 cup chopped Italian flat leaf parsley

Directions • Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring. • Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute. • Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, white cooking wine, 1 1/2 teaspoon cold butter, and half the parsley. • Cook until butter has melted, about 1 minute, then turn heat to low and stir in an additional 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes. • Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste. • Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley. Ready In 25 minutes
Sweet ‘n Sour Meatballs We just had to include this old family favorite! • 1 lb. lean ground beef • 1 c. soft bread crumbs • 1 egg, slightly beaten • 2 T. onion, minced • 2 T. milk • 1 clove garlic, minced • 1/2 t. salt • 1/8 t. pepper • 1 T. vegetable oil • 2/3 c. chili sauce • 2/3 c. jellied cranberry sauce Combine all ingredients except oil, chili sauce and cranberry sauce. With wet hands, form into 40 bite-size meatballs. Brown meatballs lightly in oil. Cover and cool over low heat for 5 minutes. Drain fat. Combine chili sauce and cranberry sauce and pour over meatballs. Heat, stirring occasionally, until jelly is melted. Simmer at least 15 minutes, until sauce has thickened, gently stirring to combine flavors. Makes 40.

The Poinsettia
At Christmastime there appears in homes, churches, offices, and many other settings a beautiful potted plant star-shaped flowers which are surrounded by large green leaves. This is the poinsettia which magically blooms on Christmas or during the Christmas season.
The true flowers of the poinsettia are the small brilliant yellow protuberances set deep inside the large bracts, or special leaves which are usually red, but may sometimes be yellowish, pink, or white in color. The bracts contrast with the green leaves of the poinsettia making it a colorful Christmas decoration. Joel Roberts Poinsett, a botanist and congressman from South Carolina, was the first United States ambassador to Mexico. In the early 1800's, he brought from Mexico the tropical plant which bore red-star flowers and grew from two to ten feet tall. Poinsett
and his botanist and horticulturist friends grew this plant in their greenhouses in Charleston, South Carolina, and they called it the “poinsettia”. By 1830, the plant was being grown in Philadelphia greenhouses. In the south, the poinsettia is a garden plant. But in cooler climates it can be placed outside during the summer months when the night temperatures stay above 50 degrees F. By late August it should be taken inside. The plant requires much attention, plant food, watering, and pruning after blooming. When the winter season approaches it starts to bud. Give it plenty of light during the daytime, but it should have twelve to fourteen hours of complete darkness at night. Place it in a dark closet or cover it each night until Thanksgiving when the bracts should be coloring. The plant is then ready for another Christmas season.

The origins of Christmas caroling The festive nature of the holiday season makes it an ideal time to sing, especially in groups. Perhaps it’s no surprise then that caroling, a tradition that dates back many centuries, ultimately collided with Christmas. Caroling and Christmas caroling are two different things. According to History.org, the origins of modern Christmas caroling can be traced to wassailing, a term that has evolved for more than a millennium. What started as a simple greeting gradually became part of a toast made during ritualized drinking. Time magazine notes that the word “wassail,” which appeared in English literature as early as the eighth century, eventually came to mean the wishing of good fortune on one’s neighbors, though no one can say for certain when this particular development occurred. During medieval times, farmers in certain parts of Britain would drink a beverage to toast the health of their crops and encourage the fertility of their animals. By 1600, farmers in some parts of Britain were still engaging in this ritual, and some were by now taking a wassail bowl filled with a toasting beverage around the streets. These wassailers would stop by neighboring homes and offer a warm drink, all the

while wishing good fortune on their neighbors. During this period, wassailing had nothing to do with Christmas, but that began to change in Victorian England, when Christmas became more commercialized and popular. It was during this time when publishers began circulating carols, forever linking the tradition of wassailing with Christmas. Christmas caroling as Victorian Englanders knew it might have fallen by the wayside. But while carolers may no longer go door-to-door singing Christmas songs and wishing their neighbors good fortune, those intent on seeing the modern manifestation of this tradition that dates back more than a millennium may be able to find some carolers at their local mall or church.

Christmas tree tips and tricks Christmas trees are an iconic symbol of the holiday season. Whether they are personal trees nestled in the corner of a living room for families to enjoy or towering evergreens serving as the focal point of a town square, Christmas trees are a wonder to behold. Many people have fond memories of time spent around the Christmas tree sharing gifts and family traditions. Live trees and their pine-like aroma can be especially nostalgic trees to include in holiday plans. The National Christmas Tree Association says that approximately 25 to 30 million real Christmas trees are sold in the United States every year. North American trees hail from all 50 states and areas of Canada. While freshly cut trees can be particularly beautiful and aromatic additions to the season, they require a bit more work than artificial trees in order to remain beautiful and thrive throughout the holiday season. Maintenance can help keep Christmas trees as perfect as possible. • Even though it is tempting to buy a real tree as early as possible, their shelf life is limited even with the best care. Dural Christmas Tree Farm advises that, under the best conditions, a real tree should last up to four weeks before drying out. • Consider the needles when looking for a real tree. Pull your hand toward your body along the branches. If many needles fall off, the tree is past its peak.
• Think about the room in which the tree will be located. Leave at least 6 inches between the tip of the tree and the ceiling, accounting for the height of the tree stand as well. • If needle retention is a goal, the Scotch pine variety has the best needle retention and a high survival rate, lending to its popularity, offers Precision Tree and Landscape. Douglas fir and balsam fir are other durable trees. • If possible, buy a freshly cut tree from a reputable nursery or tree farm, advises The Old Farmer’s Almanac. Many precut trees sold elsewhere were likely cut weeks before and may not be fresh. • Cut the bottom of the tree trunk before bringing it home to facilitate the uptake of fresh water daily. Trees can absorb as much as a gallon of water in a day, so make sure the tree gets fresh water every day. • Keep trees away from as many heat sources as possible and away from direct sunlight to prolong longevity. • According to Karabin Farms in Connecticut, to make a Christmas tree last longer, boil a gallon of water and then dissolve one cup of sugar in the water. Allow to cool. After freshly cutting the trunk, pour in the warm sugar water. Continue to add fresh, cool, plain water to the tree stand afterward. Once needles begin to fall off with frequency, the tree is reaching its prime. Remove it so it does not become a fire hazard.

Holiday hosting in small spaces
Gatherings of family and friends are a big part of the holiday season. Hosting such gatherings can be a great way to show loved ones how much you appreciate them, and hosting also saves hosts the trouble of traveling during one of the most hectic travel seasons of the year. When hosting a large crowd at home, space can be a difficult hurdle to clear. However, a few helpful strategies can help space-starved hosts pull off a holiday soiree where everyone is comfortable. • Pare down the menu. Holiday feasts don’t have to resemble medieval banquets with excessive amounts of food and drink. Hosts with small kitchens and tiny dining quarters can pare down the menu, limiting offerings to just a single entree and a few simple side dishes, so everyone feels comfortable at the table and has ample room to eat. A small menu also gives hosts more time to spend with their loved ones during the festivities. • Don’t overdo it on drinks, either. When planning the drinks menu, avoid offering cocktails, which take time to prepare and often require guests to visit the kitchen for refrigerated ingredients. Limit drinks to wine, beer, water, and soft drinks, storing cold beverages in a cooler kept outside on a front or back porch or in an area outside the kitchen so cooks can work without interruption. • Move some furniture. If your main living space is small, consider moving some bulky furniture into a bedroom or office where guests won’t be spending time. Then make better use of the open living space by placing folding chairs

or other accommodations to ensure there’s ample seating for everyone. A single recliner can only be enjoyed by one person, but removing it from a room may create enough space for as many as three folding chairs. • Go small on decorations. If you know you’ll be hosting in advance of the holiday season, decorate with guests in mind. That might mean skipping a six-foot Christmas tree in favor of one that takes up less space. Avoid leaving any fragile decorations out, as adults or overexcited kids may knock them over as they try to navigate a cramped space. Holiday hosting can be fun, even in small spaces. The 12 days of Christmas “On the first day of Christmas, my true love gave to me, a partridge in a pear tree.” The familiar lyrics of this tune are sung as part of Christmas caroling and holiday celebrations, reaching a crescendo each time singers belt out “five golden rings.” The song is an English Christmas carol that was written in 1720. While it references plenty of gift-giving, it’s easy to assume the song is about giving Christmas gifts. However, the 12 days in the song actually refer to the birth of Jesus Christ. The 12 days of Christmas, also known as the Twelvetide, refers to the festive Christian season that celebrates the Nativity of Jesus. In fact, the start of these days occurs on December 25 and extends until the evening of January 5th, the day before the Epiphany, known as Twelfth Night. Each day corresponds to a remembrance of different religious events or people. Christmas celebrants can celebrate well into the new year. Commemorating the 12 days of Christmas can include small festivities from December 25 to January 5. On Twelfth Night, historically known for parties, modern-day fanfare can mark the culmination of the Christmas season — with the last of gift-giving occurring on the Epiphany. Gifting, hosting friends and family, attending religious services, participating in charitable events, or opening one’s home to neighbors and those who can use some companionship are all ways to make the 12 days of Christmas more special.

Much of the focus of Black Friday is on finding the best deals, but it can be interesting to take a breath and learn how this phenomenon developed and how it has evolved over the years. “Black Friday” The term “black Friday” was originally associated with gold prices and manipulation on the part of speculators Jay Gould and James Fisk. This scandal occurred in September 1869. Commodity prices plummeted 50 percent as a result, and the term “black Friday” was coined to refer to that drop. The phrase “black Friday” also became famous for all the wrong reasons in 1966. Philadelphia police used it to refer to the Friday traffic jams and crowding in downtown stores from tourists and shoppers who flooded into the city in advance of the Army-Navy football game held the Saturday after Thanksgiving each year. Bigger crowds and rowdiness contributed to long hours and stressful shifts for local police. Black Friday reinvented The retail industry started using the term “Black Friday” in the late 1980s. Spin doctors turned previously negative connotations into positive ones by associating the phrase with stores turning a profit and moving accounting ledgers from “red to black” thanks to big year-end sales. Retailers and consumers rallied around low-cost “doorbusters” and other discounted prices. Interestingly enough, according to the National Retail Federation, Black Friday really hasn’t been the most lucrative day for retailers over the years. In fact, greater profits and larger crowds are often seen on the last Saturday preceeding Christmas. Shopping weekend evolves While Black Friday may have been the catalyst, in recent years shoppers have made the entire weekend of Black Friday a lucrative one for retailers. Many stores now open on Thanksgiving and extend sales through the entire weekend. Small Business Saturday and Sunday promote patronizing mom-and-pop stores. Cyber Monday emerged when online shopping became a popular way to grab deals, and it marks the close of the opening weekend of the holiday shopping season. In 2017, Black Friday weekend attracted 174 million shoppers who spent an average of $335.47, according to the NRF.

From a religious standpoint, gifting others around Christmastime can be traced back to the stories of the Three Kings (also referred to as the “Three Wise Men”) who visited Jesus after his birth. Frankincense, a fragrance involved in worship; gold; and myrrh, an incense associated with funerals, was presented. These gifts symbolized worship in Christ, that He would be the King of Kings, and that suffering and death would come to Him. Another giver of gifts is part of many Christmas celebrations. St. Nicholas, a fourth century saint, is a beloved figure across the globe who has a reputation for giving gifts in secret and helping the needy. The figure of “Santa Claus” is based on St. Nicholas, and the blending of the two has evolved as history has mixed with folklore and personal traditions.

Keep safe during a season of holiday ‘spirits’
The weeks between Thanksgiving and New Year’s Day are some of the most festive times of the year. Family and friends socialize and exchange gifts while many people take inventory of their good fortunes. Many things are enjoyed in abundance during the holiday season, and that unfortunately can include alcoholic beverages. A 2018 survey conducted by OnePoll on behalf of the supplement company Morning Recovery revealed that, among 2,000 American respondents, the average person consumes twice as many alcoholic drinks over the holidays than any other time of year. That uptick in drinking likely has something to do with the holiday social scene. In normal, non-holiday weeks, Americans attend just one social event, but that number climbs to three when the holidays arrive. The National Institute on Alcohol Abuse and Alcoholism, a division of the National Institutes of Health, warns that the holidays can be a time when some people are more likely to drink to excess in the name of merrymaking. Despite the known dangers of excessive consumption of alcohol, many people still overindulge. Perhaps some sobering statistics can be just what people need to avoid drinking too much this holiday season. SCRAM systems, which make alcohol monitoring software systems for the criminal justice market, offer these statistics. • Seventy percent of holiday drunk driving deaths are caused by drivers with a blood-alcohol level of 0.15 or higher. • In December 2017, 885 people were killed as a result of alcohol-impaired crashes. • A BAC between 0.08 and 0.14 causes noticeable impairment of coordination and driving skills. It is illegal to drive at this level in all 50 states. • One in eight drivers who consume alcohol say they’ve driven when they thought they were close to or over 0.08 BAC in the past year, according to AAA. • The NIAAA reports that 40 percent of traffic-related deaths during Christmas and New Year’s involve drunk drivers. Alcohol lowers people’s inhibitions and affects their judgment, potentially contributing to reckless decisions. Many people think that a cup of coffee is all that’s needed to sober up and get home safely. The NIH says even after someone stops drinking, alcohol in the stomach and intestines continues to enter the bloodstream, resulting in impaired judgment and coordination for hours after one has had his or her last drop. Impaired driving and other activities can make for unsafe conditions this holiday season. Celebrants should be aware of their alcohol intake and have responsible ways to get to and from social occasions.

Using a medium ice cream scoop, scoop dough into muffin tins, press down with a spoon to create cups. Bake for 15-20 minutes until the cookie cups are golden brown and set. (Don’t worry if the cookie cup centers rise!) • While the cookies are still warm, make the cups. Spray the bottom of a small shot glass with cooking spray and press the shot glass down into the center of each cookie to create cups. Let cool in pan for 15 minutes, then transfer to wire cooling racks. • Meanwhile, melt about 2 tablespoons butter in large nonstick skillet over medium-high heat until beginning to brown. Add apples and sauté until beginning to soften. Add the remaining sugars, nutmeg, cinnamon and cornstarch and cook until soft and caramelized. • Spoon the apple filling into the cups. Drizzle with caramel and serve warm or at room temperature.

Tips for baking better Christmas cookies that can help yield better, buttery bounties.
Cookies and other baked treats are everywhere come the holiday season. It’s not uncommon to give cookies as gifts or arrive at holiday gatherings with cakes and other decadent desserts. Cookies are a classic holiday treat, and some families even build entire traditions around baking Christmas cookies. Novice bakers making cookies for the first time may be a little overwhelmed when perusing recipes. Baking is a science, and sometimes it takes practice to get the results just right. However, there are some tips
Handle butter with care Butter can make or break a cookie recipe, as butter is often the glue that holds the cookie together. Therefore, it is key to follow the directions carefully regarding how to handle butter. Smithsonian.com says to leave butter at room temperature for 30 to 60 minutes to properly soften it. This takes patience, but fiddling with butter too much can damage its delectable integrity. While purists may say butter is best, margarine may be acceptable if it has a high fat content; otherwise, cookies may spread out and flatten. When it comes time to cream the butter with sugar, be sure to do so thoroughly to incorporate air into the butter and remove the grainy texture of the sugar. Measure flour properly Measuring flour the right way can ensure cookies come out right. The Cooking Channel says to spoon the flour lightly into a dry measuring cup, then level it off with a knife. Do not dip the measuring cup into the flour or tap the knife against the cup. This will pack too much flour into the measuring cup and re-

Pointers for pet owners traveling with pets in tow
Many individuals and families simply cannot part with their companion animals for long periods of time. As a result, it’s become much more common for pets to accompany their owners on vacations. A study by AAA and Best Western International found more than half of American pet owners take their cats and dogs with them when they travel. Pet owners traveling with their four-legged friends in tow can make the experience a fun and safe one by planning ahead. Be sure the pet is up-to-date with immunizations and bring documentation of those immunizations with you when traveling. Update any dated information on secure tags so pets can be returned promptly and safely should they become lost. Take frequent breaks on road trips to allow the pet to get some exercise and relieve itself. Some pets do not fly well and certain airlines no longer transport certain breeds in the cargo hold, so inquire with airlines before planning a getaway.

How to make holiday wreaths the easy way There are many different ways to decorate homes and businesses for the holidays. Tall evergreen trees are among the most visible symbols of the holiday season. However, wreaths hung on doors, windows or fences also are ubiquitous this time of year. Wreaths adorn homes primarily during the holidays of Easter and Christmas. Wreaths have also been worn around the head or neck in ceremonial events around the globe for centuries. It is believed the first wreaths date back to ancient Greece and Rome. Members of the Greco-Roman society were known to hand-make ring-shaped items using fresh tree leaves, small fruits, flowers, and twigs. Oftentimes these headdresses symbolized a person’s social status. Others suggest wreaths evolved to become a Christian symbol of immortality. Regardless of how wreaths are viewed, many people like to display wreaths for the holidays. Wreaths can be purchased premade, but making a wreath on your own can make the holidays even more fun. One of the easiest ways to make a wreath is to design it around a circular floral foam form. Gather supplies to make the wreath. For traditional wreaths, supplies will include sprigs of evergreen (real or artificial), ribbon, floral wire, bows, and artificial berries. Working around the foam form, arrange the boughs of evergreen, using the floral wire to wrap or pin into the foam itself. Keep the layers coming until you get the desired coverage. Embellish with a ribbon or place a bow. The blog A Piece of Rainbow says that creating a wreath jig is an easy way to make a wreath. Cut a dollar-store laundry basket bottom from the top ring to make a template, on which you can place wreath-making materials so they keep their circular form. Use floral wire or natural jute string to tie the materials together. Experiment with fresh evergreen, twigs, holly branches, or whatever materials you choose. Thick card stock also can serve as the wreath template. Attach artificial flowers or leaves, spray snow, ornaments, or other items to the card stock ring with a firm adhesive.

Christmas PETS Holiday safety for pets
While people are ho-ho-ho-ing and hustling and bustling, pets may not be as enamored with the holiday season as their human counterparts. That’s because, amid the blur of activities that fill the season, there are potential sources of stress and dangers to pets. Approximately 1,300 people are treated each year in emergency rooms for injuries related to holiday lights. Another 6,200 are treated for injuries related to holiday decorations and Christmas trees. These injuries are occurring to people who know better. Just think about the pets that do not understand the dangers around them. Pet parents have to be responsible for their animals’ safety, too. KNOW WHAT’S TOXIC Everything from snow globes to tinsel can wreak havoc on pets’ delicate intestinal systems. Many holiday plants, like holly and poinsettia, contain oils that can be fatal to pets if consumed. Snow globes often contain antifreeze, which is well known as toxic to pets. Snow sprays and snow flock contain chemicals that can be irritants if inhaled or consumed. Tinsel and pine needles can cause choking and intestinal obstruction if consumed by smaller animals, like cats and rodents. DECORATING DANGERS Decorative glassware, trinkets and other breakables can prove hazardous to animals.
Inquisitive dogs and cats may break glass ornaments and be cut by shards of glass. It’s easy for lit candles to be knocked over and even Christmas trees to be pulled down by boisterous pets. Water kept in Christmas tree stands and other décor may harbor harmful microorganisms or chemicals that become dangerous if lapped up. Cords and lights may look like chew toys to rodents, dogs and cats, who can become electrocuted or strangled while investigating. GOODIE GLUTTONY Many pets have stolen a piece of people food from here or there or have been offered some table scraps. There are some items that can be dangerous during the holidays and year round. Beware of feeding pets fatty meats, gravies, poultry skin, poultry bones, chocolate, and alcohol. These items can cause illnesses from vomiting and diarrhea to highly serious pancreatitis and other toxic reactions. When eating, keep pets out of the dining area and maintain a close eye on scavengers who might leap for dishes at the edges of tables. Gifts, like food baskets and boxes of chocolates, should be kept out of reach of pets. Buy pet-safe treats this time of year to reward animals so they will not be inclined to steal snacks. The holidays can be a wonderful time of year to share with your pets, but safety should never be too far out of mind when preparing for the season.

The history of Black Friday Black Friday marks the unofficial start of the holiday shopping season. Come Black Friday, shoppers strive to get the lowest prices on gifts for their loved ones. Much of the focus of Black Friday is on finding the best deals, but it can be interesting to take a breath and learn how this phenomenon developed and how it has evolved over the years. “Black Friday” The term “black Friday” was originally associated with gold prices and manipulation on the part of speculators Jay Gould and James Fisk. This scandal occurred in September 1869. Commodity prices plummeted 50 percent as a result, and the term “black Friday” was coined to refer to that drop. The phrase “black Friday” also became famous for all the wrong reasons in 1966. Philadelphia police used it to refer to the Friday traffic jams and crowding in downtown stores from tourists and shoppers who flooded into the city in advance of the Army-Navy football game held the Saturday after Thanksgiving each year. Bigger crowds and rowdiness contributed to long hours and stressful shifts for local police. Black Friday reinvented The retail industry started using the term “Black Friday” in the late 1980s. Spin doctors turned previously negative connotations into positive ones by associating the phrase with stores turning a profit and moving accounting ledgers from “red to black” thanks to big year-end sales. Retailers and consumers rallied around low-cost “doorbusters” and other
discounted prices. Interestingly enough, according to the National Retail Federation, Black Friday really hasn’t been the most lucrative day for retailers over the years. In fact, greater profits and larger crowds are often seen on the last Saturday preceeding Christmas. Shopping weekend evolves While Black Friday may have been the catalyst, in recent years shoppers have made the entire weekend of Black Friday a lucrative one for retailers. Many stores now open on Thanksgiving and extend sales through the entire weekend. Small Business Saturday and Sunday promote patronizing mom-and-pop stores. Cyber Monday emerged when online shopping became a popular way to grab deals, and it marks the close of the opening weekend of the holiday shopping season. In 2017, Black Friday weekend attracted 174 million shoppers who spent an average of $335.47, according to the NRF.

Honey-Glazed Pork Tenderloin with Homemade Applesauce
Ingredients for Apple sauce • 5 apples peeled and chopped • 4 tablespoons butter, melted • 1 tablespoon lemon zest • 2 tablespoons fresh lemon juice • 1 tablespoon sugar • 1/4 teaspoon sea salt
Ingredients for Pork tenderloin • 2 (12-oz.) pork tenderloins, trimmed • 3 tablespoons olive oil • 1 1/4 teaspoons ground cumin • 1 teaspoon black pepper • 1/2 teaspoon apple pie spice • 2 tablespoons honey • 1 teaspoon sea salt • 1 tablespoon butter, melted Directions Preheat oven to 425°. Sauté apples in 3 tbsp. melted butter in a large saucepan over medium-high heat 5 minutes. Stir in zest, juice, sugar, 1/4 tsp. salt, and 1 cup water; bring to a boil. Reduce heat to medium, and simmer, stirring occasionally, 40 minutes or until apples are tender. Brush pork with oil. Stir together cumin, next 2 ingredients,
and salt; rub over pork. Place pork in a roasting pan. Bake at 425° for 12 minutes. Whisk together honey and 1 tbsp. melted butter; brush half of mixture over pork, and bake 2 minutes. Turn pork, and brush with remaining honey mixture. Bake 3 more minutes or until a meat thermometer inserted in thickest portion registers 145°. Let stand 5 minutes. Mash apple mixture to desired consistency, and serve with pork.

Keep safety in mind when decorating for the holidays Decorations help make the holiday season a magical time of year. Stores are awash in color and twinkling lights, and similar imagery is on display in private homes. Designing holiday displays can be a great way for families to spend time together and kick off the celebration. In fact, according to Electrical Safety Foundation International, around 90 percent of Americans decorate their homes for the holidays. When trimming the tree and decorating this holiday season, families must keep safety in mind. A little planning and some precautionary measures can ensure displays are enjoyed all season long. Travelers Insurance offers the following holiday decorating safety tips. • Do not overload outlets. Plan displays according to the number and location of available outlets. • Never exceed the maximum number of light strands that can be attached together. • Use lights and products that have been tested for safety. Certification marks like UL, ETL and CSA are from nationally recognized laboratories. • LED lights should be used whenever possible. Such lights consume less energy and run cooler than other bulbs.
• The ESFI says candles start almost 50 percent of all decoration fires. Minimize the risk by using candles only when they can be monitored. Artificial candles can be used in place of real candles. • Check for freshness in live trees. A fresh tree will last longer and is less of a fire hazard than an old tree. • Place Christmas trees at least three feet away from all heat sources, including fireplaces and heaters. • Use decorations that are non-combustible or made from flame-resistant materials. • Pay attention to the age recommendations of decorations to see if they can be used in homes with young children. Some items, however common, are choking or strangulation hazards.
