Vietnam native Anh Vo knew nothing about Jewish food before taking over Cindi’s NY Deli in 1989. “I didn’t know anything about corned beef or pastrami,” she says. “But I learned everything I could.” Now, Cindi’s is one of the most respected delis in Dallas, and few can match the matzo ball soup. Chef Jerry Jones has been making it for more than 30 years. “It comes natural,” he says. He keeps the recipe simple with chicken stock, carrots, celery, onions, bay leaves and, of course, matzo meal.
