Blistered Shishito Peppers & Serrano Ham

Shishito peppers are small green peppers that are uniquely sweet and hot. Since its seeds are tender, you can eat everything but the stem, for ultra-simple prep.
2 tsp olive oil 20 shishito peppers (about 6 oz) ¼ tsp coarse salt 2 slices Serrano ham (about 1 oz) 2 lemon wedges 1. In a large skillet, heat the oil over high until very hot. Add the peppers. (The peppers should sizzle when they hit the skillet.) Cook, stirring occasionally, until peppers are blistered in spots but still green, about 3 minutes.
2. Divide the peppers between 2 plates. Tear the ham into thin strips and drape over the peppers. Serve with the lemon wedges.
