Västerbotten Pie

“A simple pie made with tangy västerbotten cheese and served with a refreshing salad, this is sure to be a summer hit”

Pie Base

100g butter

100g flour

2 tbsp cold water

Filling

3 eggs

250ml heavy cream

100ml milk

300g västerbotten cheese (can substitute with cheddar if you cannot find västerbotten)

Pinch of salt and pepper to taste.

Set oven to 200 degrees. Rub the butter and flour together using your fingers until it looks like bread crumbs. Add the water and combine to make a dough

Roll out the dough and place in a 24cm pie dish Place the dish in the fridge for 30 minutes

Remove from the fridge and use a fork to poke holes in the dough and back in the oven for about 10 minutes, allow to cool before adding the filling

Whisk together the eggs, cream, milk and salt and pepper. Mix in the cheese and pour the mixture into the cooled pie crust

Bake in the oven on the middle shelf for 30 minutes or until the pie is golden and bubbly on top
