The latest addition to King’s Cross’s vibrant and varied dining and drinking scene is now open. RAILS Restaurant & Little Bar (www.railslondon.com) a stone throw from the Eurostar and on the first floor of the Great Northern Hotel, offering modern and elevated British classics with subtle French accents in homage to its proximity to the Eurostar. Formerly Plum + Spilt Milk, the restaurant has been reimagined and the new menu, created by Executive Chef Stéphane Cerisier, features elevated yet accessible dishes made using only the finest seasonal ingredients, many locally sourced. Open for breakfast, lunch and dinner some of the must-try mains include seared Cornish cod with buttered leek, apple and thyme dressing; roasted guinea fowl with sweet corn purée and chicken jus; and Moules Frites in a white wine, shallot and parsley sauce.

Cranberry Chicken “Crispy chicken thighs smothered in a cranberry gravy with bursts of fresh cranberries and thyme”
Method
Preheat your oven to 190°C/375°F/Gas 5. Heat the oil in a large frying and add the chicken, skin side down and cook for 2 minutes. Turn the chicken thighs over and cook for a further 2 minutes. Put the cranberry sauce, balsamic, maple syrup, garlic, stock and salt and pepper in to a blender and blend until smooth. Pour half the sauce in to an ovenproof dish. Add the chicken to the dish. Top with the rest of the sauce, the fresh cranberries and thyme. Put into the oven for 25-30 minutes.

100g cashews 1 carrot, sliced 1 sweet potato, diced 300ml almond milk 50g vegan hard cheese, grated 300g macaroni pasta 1 bag spinach 1 tbsp vegetable oil 1 leek, sliced 100g cherry tomatoes, halved 50g homemade breadcrumbs
Method
Preheat the oven to 200oC, gas mark 6. Cook the cashews, carrot, and sweet potato in boiling water for 10 minutes, drain and puree in a food processor with the almond milk until smooth, season and add half the cheese alternative. Cook the macaroni in boiling salted water for 10 minutes, add the spinach until wilted, drain well and return to the pan. Heat the oil in a frying pan and fry the leek for 3-4 minutes, add the tomatoes and cook for 2 minutes more until softened. Mix the sauce and leek mixture into the pasta and stir to combine. Transfer to an ovenproof serving dish, sprinkle with remaining cheese alternative and breadcrumbs and bake for 20 minutes until golden.

Ingredients
125g unsalted butter, chopped 300g dark chocolate, chopped 1 cup (150g) self-raising flour, sifted 3/4 cup (165g) caster sugar 1/3 cup (80g) brown sugar 1/4 cup (25g) Dutch cocoa, sifted 2 eggs, lightly beaten 1/4 cup (60ml) milk 1 tsp vanilla extract 1/2 cup roasted salted peanuts, plus 2 tbsp extra, chopped 1/3 cup (95g) smooth peanut butter Vanilla ice cream, to serve
Salted Peanut Brownie
Method
Preheat oven to 160°C. Place butter and 200g chocolate in a heatproof bowl set over a saucepan of barely simmering water (don’t let the bowl touch the water). Stir until melted and smooth. Add flour, sugars, cocoa, eggs, milk and vanilla and stir until just combined. Stir in remaining chocolate and the peanuts. Divide between 3 x 2 cup-capacity ovenproof dishes (or use a 2L-capacity baking dish). Top with spoons of peanut butter and swirl with a butter knife. Top with extra chopped peanuts. Place on a baking tray and cook for 35-40 minutes until set around the edges but slightly soft in the middle. Cool for 10 minutes before serving with ice cream.
