SPRING INTO SPRING WITH A GREEN SALAD Spring is here and so is the warm weather! It’s the best time to enjoy a fresh salad as a meal or side dish. Make a delicious spring salad following these steps: INGREDIENTS For the salad: • ½ cup quinoa, rinsed and drained • 1 tsp ground turmeric • Salt & pepper to taste • A bunch of fresh asparagus (7-8 spears), cut in half • 1 tsp olive oil • ½ cup fresh peas • ½ cup sweetcorn (fresh or tinned) • ½ cucumber, thinly sliced • 2 big handfuls of spinach leaves • 2 tbsp pine nuts • A bunch of fresh mint leaves, roughly chopped • 2-3 sprigs of spring onions • 1 avocado, thinly sliced • Juice of ½ lemon

GLUTEN FREE
For the dressing: • 3 tbsp olive oil • 1 tsp balsamic vinegar • 1 tsp lemon juice • Honey or maple syrup to taste INSTRUCTIONS • Combine water and quinoa in a saucepan and bring to a boil. When it starts boiling, add the ground turmeric, season with salt and pepper, cover with a lid and simmer on medium heat for 1015 mins until all the water is absorbed. When cooked, fluff it up with a fork and let it cool down a little. • Whilst the quinoa is cooking, heat the olive oil in a grill pan. When the pan is heated up, add the asparagus, season with salt and pepper and cook on high heat for 3-5mins until the asparagus is tender yet still a little crunchy. Set aside. • In a big mixing bowl, combine fresh peas, sweetcorn, cucumber, spinach leaves, pine nuts, mint leaves, spring onions, avocado, grilled asparagus and slightly cooled quinoa. Squeeze the lemon juice and mix well. • To make a dressing, combine the ingredients in a jar and whisk well. Pour over the salad just before serving. Enjoy!

QUEENSLAND’S TRANSITION TO THE NDIS COMPLETED The NDIS released an official statement on 23 September stating Queensland’s transition to the National Disability Insurance Scheme (NDIS) will be officially completed on 1 October. To date, approximately 85,000 Queensland residents are in, or currently seeking access to, the NDIS. Minister for the National Disability Insurance Scheme, Stuart Robert, said the full scheme agreement is a significant milestone in the NDIS rollout. “Queensland now joins the rest of the country, apart from WA, with the NDIS operating under a full scheme agreement, securing the future of the NDIS for all Queenslanders,” Mr Robert said.
