COVID-19 VACCINE ROLL-OUT FOR CARERS Since the announcement of the COVID-19 vaccine arriving in Australia, we have been anticipating confirmation on when the vaccine will be available to carers and support workers in the disability sector. We understand your concerns regarding the roll-out. Please the read below information from the Department of Health website. The vaccines for Australia will become available in phases to priority groups based on medical research. The information received from the Australia Government outlines their aim is to have as many people as possible vaccinated in 2021. Phase 1A will be available to quarantine and border workers, frontline health care workers, aged and disability care staff and aged and disability care residents. The second phase 1B will be available to elderly adults aged 70 and over, all other health care workers, adults with underlying medical conditions, including those with a disability and Aboriginal and Torres Strait Islander people aged 55 and over. This phase will also include high-risk workers such as defence, police, fire, emergency services and meat processing. The next allocation under phase 2A will be for adults aged 50-69, Aboriginal and Torres Strait Islander People aged 18-54 and other critical high-risk workers. Phase 2B will then be for the remainder of the adult population and any previously missed vaccinations for the first three phases. The final phase 3 will be for children aged 16 and younger if recommended. BLUEBERRY PANCAKES Pancakes are an easy and delicious option for breakfast! INGREDIENTS • 1 cup plain flour • 1/4 cup quinoa flakes • 2 tbs caster sugar • 2 tsp baking powder • 1/4 tsp bicarbonate of soda • 1 cup almond milk • 1 free range egg, lightly whisked • 1 tbs dairy-free margarine, melted • 1 tsp apple cider vinegar • 125g fresh blueberries • Maple syrup and dairyfree yoghurt, to serve METHOD 1. Preheat oven to 150°c. In a large bowl, mix flour, quinoa, sugar, baking powder and bicarbonate of soda. In a jug, whisk milk, egg, margarine and vinegar together. Make a well in the centre of flour mixture and add milk mixture. Stir together lightly until batter is almost smooth. 2. H eat a large non-stick frying pan over medium heat. Pour 3 x 1/4 cups batter in pan and spread to a round. Top with a few blueberries. Cook pancakes for 3-4 minutes or until the edges are set and bubbles appear on the surface. Carefully lift an edge to check base is golden, then flip over and cook for a further 3 minutes. Transfer to a baking tray and cover loosely with foil. Keep warm in oven. Repeat with remaining batter and blueberries. 3. Stack pancakes on plates, drizzle with maple syrup, top with remaining blueberries and serve with yoghurt. Tip: challenge yourself and reduce the cooking time by using two frying pans!
