The story of the Agricola Paglione is the story of a family. In 1994 Faccilongo and Albano families, always been farmers, through Beniamino and Maria Costanza begin converting the company into an organic farm, with its own processing plant and using the philosophy of ‘short supply chain’. The Paglione farm, led by their son Nicola Faccilongo, focuses its work on the respect for the land, the history and the gastronomic culture of its territory, the ‘Daunia’, the northern most part of Apulia, enhancing the indigenous varieties. Every product has a story, each one sums up the roots of our family and the experience that for generations has been handed down from parents to children. The fields in the countryside of Lucera, between Tavoliere and the Sub Appennine Dauno zone, are grown in organic manner respecting the seasonality and they are cared for the entire year prior to harvesting. After the work in the fields there is the handcraft in its own laboratories, meticulous and patient as embroidery. Everything is fresh, ensuring the highest quality of the ingredients, worked without dispersing the natural flavors and aromas.
The Paglione method
The activities carried out in the fields, from sowing to harvest, far outweigh the principles of organic agriculture to be an ‘original’ concept of the agriculture, or rather “syncretic”. The use of a large crop rotation systems; the green manure; the polycolture; the enhancement of the handicraft skills of farmers (pruning and hand-picking of products); the reuse of waste materials for the enrichment of soils. These are the knowledge of a profession with deep and nobles roots, which today merge and are renewed with the innovative spirit of the last generations with tools drawn from the bioeconomy and information technology. An ideal timeline that through four generations connects past and present, combining different elements and practices, reinterpreting – where necessary - knowledge and traditions handed down without ever turn them into a job.
An old love for the land is what makes the work of the Agricola Paglione a vocation.
It is necessary to know the earth, to know its time, its language and, above all, her moan. It is important to know when to ask for more and when put it to rest. It is not easy to predict any reaction, but you can respect it and ensure that it is lenient in giving its fruits.
Paglione Tomato
The Prunill
From the dialectal word ‘Prun’, literally bump, derives the name of the indigenous varieties of tomatoes grown in Lucera: the Prunill. It is grown with the dryland farming system, it’s small size and elongated, characterized by pointed ends. The Prunill bunches are harvested in August and are kept hanging, held together by a wire, in typical necklaces or crowns. The unique and intense taste of this tomato, with its silky texture, worked from fresh raw material and then potted, is unmistakable.

Tomato Roma has a mainly sweet taste and a fleshy pulp, for these reasons has been grown and processed as a variety of preserves thanks, also to deep red color and its compact shape but elongated. After two years of trials and “exhausting” taste test, Agricola Paglione resumed this cultivar and made it the flagship product of the new line No Salt Added. Paglione Yellow Tomato
The first tomatoes known by Europeans, in the 16th century, were yellow. The name itself, which derives from ‘pomo d’oro’, indicates the golden color of the fruit of plants unknown at that time and that were initially used only as an ornament for fear that they were poisonous. Yellow, therefore, like red, comes in many varieties and with infinite shades of intense yellow, green yellow and finally orange yellow. The unusual color, however, does not detract from the nutritive properties of the tomato, containing a high quantity of antioxidant substances and vitamins of groups A, C and B. Paglione proposes three different recipes, guaranteeing the same method and the same quality.

Our olive groves
“Since my childhood I was fascinated by the large olive groves. The branches full of leaves filtered the sunlight letting the sky glimpse. The olive tree symbolize for me the quietness. A tree anchored to its land seems to be dozing but, is waiting there. I asked my grandparents to tell me everything, I was amazed how they could recognize every tree, every olive: you have to learn to look at the leaves, they are like the palms of the hands.” The olive trees are testimonies of the memories of our family, of the generations that have guarded the heritage of the earth and have guaranteed a future. Paglione olive groves are a triumph of olive trees for different varieties of oil and table olives. To preserve the correct biological cycle of the olive trees, various fruit trees have been planted: quinces, pomegranates, pears, walnuts, apricots, figs and almonds. During the entire year, before harvesting,we make various interventions such as pruning, natural grassing and the reuse of processing waste for the enrichment of the land, non-invasive interventions that pursue the principles of the “paglione method” used in our fields and in our vineyards.
From olive to oil
Nasuta, Peranzana, Leccino, Coratina are the varieties of olives that distinguish Paglione olive groves, including the oldest trees which have more then one hundred and fifty years. The harvested olives are placed in perforated crates and pressed within 12/24 hours. The harvest follows the ripening times of different varieties, keeping intact the organoleptic characteristics of the fruits. The olives are transformed into paste byolive hammer mills, followed by a twophase processing with a cold extraction process to maintain the higher content of polyphenols. The oil obtained is left to decant in stainless steel tanks before bottling.
Nasuta Extra virgin olive oil
The Nasuta is the most precious olive and is a native variety of our territory (Lucera). It has a tapered shape and the characteristic “nose” at the end. The content of monounsaturated fatty acids, tocopherols and beta-carotenes is important for the anti-cholesterolemic and antioxidant action, and also for the prevention of cardiovascular diseases. The oil obtained has a persistent fragrance, with an intense fruity scent and bitter notes of fruit (green almonds, green apple, green banana).
— It is suitable for all those dishes based on fruit and sweet vegetables, where you want to enhance all the flavor of fruit.

The Peranzana has a tapered shape; to enhance its flavor with even greater intensity, the harvest during the olive veraison takes place in two different moments: half when they are green and half when they are black. The oil produced has a very low acidity and a slightly spicy taste, these characteristics make it very balanced if it is savored and tasted raw. It has a high content of chlorophyll and carotenoids, as well as a time of rancidification longer than other oils.
— It is suitable for dishes that want to enhance the smell of the herbaceous, it is preferable to use it raw on salads, on cold or hot dishes prepared with vegetables.

The Coratina is a typical variety of central Apulian region, then spread over the entire territory and has become one of the most popular and appreciated gastronomic symbols of the region. It has a medium-large oval shape, the oil obtained is known for its strong spiciness and the final bitter notes due to the very high concentration of oleuropein and polyphenols. These are nutritional characteristics that make it a precious elixir for a good life. —

From olive grove to the table
The relation between drupe and kernel, the percentage of oil contained and also the method of harvesting are some of the characteristics that mark the differences between the varieties of olives that can become table olives compared to those usedto produce the oil. The table olives, have different flavors and characteristics and, combined in the right way, can characterize a recipe in a unique way. The Paglione recipes want, once again, to better enhance the individual varieties by proposing, also in the table version, the olives Nasuta, Leccino and Peranzana. With regard to the pitted olives we also find Sant’Agostino, San Francesco and Dolce tonda varieties. The olives are harvested by hand to not be spoiled and placed in barrels with water and the right dose of salt for a variable time depending on the variety, in some cases even more than one year. Then there is the selection and the washing in the laboratory and finally, once placed in the jars, they are pasteurized to allow the proper preservation.

The visual identity of our company reinterprets points and lines of the ancient embroidery, a typical tradition of southern Italy. The in-depth study of the history and of the work done, starts from the earth and its crops. In this way the embroidery stitches become rows, the outlines of a plant or a fruit.
