The story of Agricola Paglione is the story of a family.
In 1994 Faccilongo and Albano families, always
been farmers, through Beniamino and Maria Costanza
begin converting the company into an organic farm, with its own processing plant and using the philosophy of
‘short food chain’. The Paglione farm, led by their son
Nicola Faccilongo , focuses its work on the respect for
the land, the history and the gastronomic culture of its
territory, the ‘Daunia’, the northern most part of Puglia, enhancing the indigenous varieties.
Every product has a story, each one sums up
the roots of our family and the experience that for
generations has been handed down from parents to children. The fields in the country side of Lucera,
between Tavoliere and the Sub Appennine Dauno zone,
are grown in organic manner respecting the seasonality
and they are cared for the entire year prior to harvesting.
After the work in the fields there is the handcraft
in its own laboratories, meticulous and patient as an embroidery. Everything is fresh, ensuring the highest
quality of the ingredients, worked without dispersing the natural flavors and aromas.
The vineyards
The vineyards of Paglione Farm are situated
in the countryside of Lucera, between the vast expanses of wheat, the olive groves and fields
of tomatoes which make the land of Capitanata famous for its variety and beauty, between the Tavoliere and the Sub Appenine Dauno zone. They are located in Contrada Perazzelle and Mezzana Grande, we produce Nero di Troia,
Montepulciano, Sangiovese, Bombino Bianco and Malvasia Bianca, following the methods of organic farming, in total respect of the environment.
In Contrada Perazzelle, close to the main
building, the soil is calcareous with a medium
consistency. In Mezzana Grande zone, located in the countryside of Lucera, the soil is calcareous, in some places is stony, devoid of water sources so without artificial irrigation.

The vinification
The wines of our farm originate from a careful
selection of grapes followed by a delicate grape
pressing with classical red wine vinification at
controlled temperature, between 24 and 26° C for the reds and between 18 and 20° for whites, in stainless steel tanks. During the fermentation stage the must is submitted to processes of
refitting and punching down, to obtain a better and clearest wine that guarantee the desired
extraction of constituents present in the skins. The fermentation occurs spontaneously,
that means without the addition of selected yeasts, this gives the wine, thanks to the
contribution of different yeast strains that
contribute to the process of transformation, a greater complexity and a rustic character.
The product obtained is subsequently
aged, partly in steel and partly in barriques of
the second step. The wine obtained is not subject to any clarification and pre-bottling filtration treatment.

The Doc Cacc’ e Mmitte of Lucera
The vernacular name refers to the traditional
method of the vinification. Typical of Southern
Italy, the millstones were some places where the
grapes were pressed to produce the juice that was stored in large tanks, sometimes carved into the rock. The owners of millstones rented out the
equipment for the production. The operations
had to be finished throughout the day to leave
the equipment to the following user. Therefore a tenant took the must just produced from the tanks of the millstone “Cacc” to bring it into
their wine cellars, and a new tenant poured in the tanks “Mmitte” their grapes for crushing.
The Doc Cacc’ e Mmitte was recognized in 1975; the production area includes the municipalities of Lucera, Troia and Biccari.
The Cacc’ e Mmitte is a blend of grapes, that is a mixture of varying quality, with a similar or distinct ripening period to create a wine with different organoleptic qualities and has the
advantages of different types of wine variety used.
According to the procedural guideline the varieties accepted shall be: - Nero di Troia, from 35 to 60 %
- Trebbiano Toscano, Bombino Bianco and Malvasia
- Montepulciano, Sangiovese and Malvasia Nera of
of Chianti, alone or together, from 15 to 30%
Brindisi, alone or together, from 25 to 35 %

Caporale
Our grandfather Nicola. Nicola, born in 1930, is first of all a farmer but is also the grandfather of all those who cross the doorway of the Agricola Paglione. “Ariopp, Ariopp” is his mantra learned as a teenager, the transliteration of “Hurry up” a phrase uttered by the American soldiers arrived in Foggia at the end of the Second World War. Our grandfather, who produced its Cacc’e Mmitte even before the Doc recognition, preserves invaluable sources and historical memories as an encyclopedia. The Caporale is similar to him, with a strong nature, frank and a lover of the conversation. The wine varieties used are Nero di Troia, Montepulciano and Bombino Bianco, in the proportional amounts required by the specification of the Doc Cacc’e Mmitte of Lucera. This wine presents an intense ruby red color with light garnet reflections. To the nose is delicate, clean and fruity with hints of raspberry, plum, blackberry and with a spicy finish. The flavor is fresh, despite his alcoholic note, moderately fruity and easy to drink.

Perazzelle
The wine culture If in Latin the word ‘erudite’ means ‘remove the roughness (from ‘ex-ruin’), achieving a higher education obliterating any rudeness, in this view, the Perazzelle is going beyond the simple tradition to reach, through an original thought and a critical view of the knowledge acquired in the wine field, to a completely new product. The Agricola Paglione, always attentive to the recovery and redevelopment of the history and tradition of the territory, wanted to innovate a practice with deep roots. Metaphors aside, if the Caporale represents the respect for their roots, the Perazzelle is the next generation which in those roots finds its history. The wine varieties present are Nero di Troia, Sangiovese, Bombino Bianco and Malvasia Bianca, in proportional amounts to the requirements of the specification of the Doc Cacc’e Mmitte of Lucera. The Perazzelle presents an intense ruby red color with light garnet reflections. To the nose is clear and with intense sensations of fruit and spices, with clear balsamic notes; it gives off hints of raspberry, plum, blackberry, clove, cinnamon and rose perceptions. It is fresh, with a tannin distinctive but not intrusive. Its important alcoholic component allows the perception, during the retro-olfactory phase, of red fruit, spices, licorice and graphite.

Mania
This strange “mania” to follow our dreams. Karl Jasper describes the “mania” as an “overflowing cheerfulness and primary euphoria, where the things, the world, the future appear in a rosy light”. In these words, we find all the character and enthusiasm of this new wine, enriched by a good dose of contradiction. It starts with a memory, of a ruby but transparent color, a definite flavor that keeps company: it is our cacc’emmitte. The authentic one, that of the past. Closer to a rosé than to a red. The idea is to propose it again, with a new formula, with an attenuation of the contradictions and evolving it like any experimentation that Paglione pursues. The result is a rosé of a thousand nuances, which recalls summer and all the enthusiasm it can evoke. Mania has a light pink color. On the olfactory plane, it shows a delicate note of cherry in spirit with a spicy fragrance and a floral note at the end. From the gustative point of view, it offers freshness and a right balance between flavor, structure and roundness, with a persistent and sweet end.

L’Eclettico
Nomen Omen The eclectic is the one who “in the arts and sciences draws elements from different genres and schools, to harmonize them in a new synthesis. L’ Eclettico is the synthesis between the intuition and the wine science. The red wine vinification of Malvasia Bianca and Bombino Bianco grapes, when the skins are left to macerate for about eight days, defines its character. The result is a white wine that reflects the dynamic nature of the Agricola Paglione and meets a winemaking process away from the standards. Like everything that is eclectic - not always easy to interpret for its inherent versatility and diversity - this wine also lends itself to new languages, in which tradition and taste are balanced to open up to the future.
L’Eclettico has a straw yellow color with golden reflections, slightly cloudy due to the lack of filtration; during the olfactory phase it highlights a strong scent of ripe fruit, with a slight feel of flint. Full-bodied on the palate, with a good acidity that is supported by a strong flavor; this identifies a great level of affinity.

The essence of the earth The rows of grapes of Nero di Troia, Sangiovese and Montepulciano, arisen on the same earth, forming a mixture of fragrances and colors. How about a painting, each with their own nuances a geometric design perfect. They create, each with their own nuances, a perfect geometric design, as if drawn on a canvas. The texture of the soil where grow the grapes, all that the earth has given to the plant, with its peculiar dynamics of water and air, remains in each grape. The wine produced, aged in the wood, has preserved and harmonized this essence crystallizing it into an immortal tribute to the native land. The Componimento n° 2 presents an intense ruby red color with an evident garnet reflection, from the olfactory point of view it is clean, complex, with a delicate hints of cherry in spirit and berries, with a balsamic nasal back. The toasted sensation is present but amalgamated with the aromatic wine complex. On the palate it is full, savory and persistent.
