American food is an ongoing conversation, something contemplated as well as eaten. The Roots of American Food is a platform for this conversation, not only between influential chefs such as the honoree Jeremiah Tower, whose impact has created seismic jolts in the industry and inspired generations of young cooks, but also between everyone attending the conference. The Roots of American Food will turn attention inwards, verbalizing the impacts of influences like Jeremiah Tower and other American culinary greats. The conference will engage a larger and varied audience, and legitimize American cuisine as a cause to be advanced.
