Santos Dumont XO is made on the pure, freshly squeezed juice from fresh sugar cane. The freshly squeezed juice is a delicacy in itself; so when the juice is distilled gently on old copper boilers, pot-still, you get crisp, quality liquor. This newborn rum is then poured into three different types of oak barrels that previously respectively contained:
• Bourbon, which gives the rum notes of vanilla and black pepper.
• PX sherry which adds ripe fruit, honey and a touch of old oak.
• Port with a sweetness, sharpness and soft vinous character.
Then it is up to the very knowledgeable and experienced master blender to put the three types of barrels together in the magic blend that gives us an old and noble rum. Then the rum rests for the last time in the single hand-picked barrel, where the rum develops its very special single barrel character.
