NATIONAL CUISINE National cuisine is a reflection of the ages-old traditions, history and identity of any nation. Kazakh cuisine perfectly reflects all the features and characteristics of the Kazakh traditions and mentality. Kazakh people were once nomadic hand heavily dependent on horses – Kumys was prepared from the milk of mares to have medicinal properties and tonic properties, and horse meat was used for the main dish in Kazakh cuisine – Beshbarmak - flavorful meat with thinly rolled and boiled dough pieces. Beshbarmak is traditionally served according to ritual. The head is put before the most honored guest, usually the eldest one. The younger adults often receive the bones of the legs and shoulders. Youths are given sheep’s ear with wishes to be careful; girls get a palate so as to be diligent. The most respected guests are treated to gammon and shank. A young bride receives the brisket; however, married women are given the neck bones instead. Children are given the kidneys and heart, which are supposed to help them mature.
