We invited Samuel Srouji to provide us with an absorbing insight into this historic hotel. Built in the 11th century by William the Conqueror, Château d’Audrieu was turned into a luxury hotel as of 1977 and this year the establishment is celebrating 40 years as a member of the prestigious Group Relais and Châteaux. The hotel, which is on a mission to be the place to visit in Normandy, relies on well trained, committed staff which are the backbone of its success, as Samuel explains.

Drawing on a rich history that dates back to 1936 which the Elysée opened on 13 Percy Street in Fitzrovia by George Varnava, a former Maître D’ at The Savoy Hotel this authentic Greek restarunt has since grown into a wonder which draws diners from across the nation to sample its delicious dishes and excellent hospitality. Originally a French, silver service restaurant, it became an instant sensation attracting Londoners across the city and travellers worldwide. The venue built a strong reputation, successively establishing itself into the 1940s as a hot spot for artists, writers, big screen stars, celebrities and members of the British and Greek Royal families. This period marked the beginning of a family legacy that still lives to the present day. In 1962, The Elysée was bought by Varnava’ nephews George, Michael and Ulysses Karageorgis. The restaurant evolved into a leading Greek institution, one of Central London’s most significant cultural contributors and late night scenes. The Elysée’s continued success in the 1960s saw visits from His Royal Highness Prince Philip and the 1966 England World Cup winning team to celebrate their victory, amongst many other high profile guests such as The Beatles and Mohammed Ali.

After a remarkable 48 years, the three brothers retired handing the baton to cousins Giggs Karageorgis, Kyriacos Pattihis, Kerry and Alex Karageorgis, who brought a new vision to life. Located in Asheville, North Carolina, in the historic Biltmore Village at the gates of the world-famous Biltmore House, Rezaz specializes in a high-end fusion of classic French, Spanish and Greek cuisines with traditional Middle Eastern flavors. Highlights include Egyptian koshari with braised duck confit and ground duck kibbeh; local mountain trout with beluga lentil pilaf, Greek hollandaise and Moroccan crab salad; and grilled lamb loin with garlic thoum aioli and potato-tahini puree. Chefs and Owners Laura and Brian Smith also offer a custom designed, completely unique experience at its Chef’s Table. Located in the kitchen, underneath our “Pan’delier” made from the original sauté pans that were used to establish the kitchen’s greatness, guests enjoy a five-course tasting menu celebrating the ideals that have made Rezaz great. While all are differently inspired, every one satisfies: starting with a street food platter, whole fish of the day, lamb tasting, dry aged, French styled beef and house made chocolate tasting plate. Tender marinated “Tawook” chicken kabobs are served over tabouli with a green salad, grilled pita and cucumber tzatziki. A grilled harissa lamb burger topped with fresh cucumber, tzatziki, grilled red onion and feta is one of our most popular. Try the “Taboon” flatbread pizzas topped with ground lamb, feta, arugula and fresh pomegranate seeds. Enjoy a grilled stuffed “Manekish” panini filled with caramelized onion, feta and spinach. Not ready to try something different? Stick with the classic grilled Caesar salad and harissa marinated skirt steak with house cut pomme frits and their famous tomato jam. Like most established restaurants, the hardest part about succeeding is keeping up and adapting to the ever-evolving technology. Soukitchen arrived in Bristol six years ago, bringing Middle Eastern market food to Southville’s North St, and more recently Clifton’s Apsley road. Owners, husband and wife team Darren and Ella Lovell say they wanted to move away entirely from what people expected from Middle Eastern restaurants, offering a completely fresh approach whilst still maintaining the regions tradition of serving up food that was made for sharing with family and friends in relaxed and friendly surroundings. This is evident from the moment you step through the door and you are met by bright patterned wall paper and cutlery in harissa tins, rather than the dimly lit, smoky room and walls hung with faded carpets that one might have envisaged. Darren discusses the inspiration behind this innovative dining concept. “Here at Soukitchen, our inspiration came from our travels to the souks found across the Middle East. These open-air market places are often found in the middle of towns and cities and provide a centre for food and produce. Here you will always find a hub of activity, with market goers sharing recipes, tasting fresh ingredients and sampling the finest in local cuisine. Souks also often extend beyond buying and selling goods, to include major festivals involving various cultural and social activities. They serve a social function as being a place for people to meet and experience together, in addition to their commercial role. At Soukitchen, we are attempting to re-create that same passion, authenticity and atmosphere right here in the UK. With a Bristol Good Food award for best Mediterranean for the last 3 years consecutively, it would appear that the residents of the city have embraced our enthusiasm

for this style of food.” “Eating out in the Middle East is a way of life. Everywhere you go there are market stalls and street vendors serving up great food and we wanted our menu to reflect this. Our menu is all about simple dishes that pack a punch, made from the best local ingredients. We also encourage customers to try their hand at recreating some of our favourites at home, and offer recipe cards to help them on their way, as well as featuring one of our favourite recipes in a local cookbook. One might think that it would be impossible to get hold of the more unique ingredients used on our menu, but with the opening of our Clifton restaurant in 2014 came the addition of the in-house Souk Shop. Here we sell all those hard to come by speciality ingredients such as Argan oil, pomegranate molasses and mograbieh couscous. Alongside these we also sell our own blend spice mixes including Ras-el-hanout and Baharat, staples of cuisine found along the spice trail. “Recreating the food of the souks is not our only aim, we also strive towards having the same sense of community. We work closely with charities and ethically source our ingredients. We have been a part of ‘Streetsmart’ over recent years and our customers have raised more than £5000 which goes to aiding vulnerable members of the local community.” Each of Soukitchen’s restaurants serve brunch, lunch and dinner.
