Eggs Benedict Hollandaise sauce: 30g butter at room temperature 15ml cream 1 egg yolk (slightly beaten) 2t lemon juice 1/8 t salt 1/4 t dry mustard
Eggs Benedict: 1 slice of sourdough bread 1 egg 1 slice of smoked salmon 1 cherry tomato ¼ avocado Dash of vinegar
Sauce: 1. Heat a medium saucepan that is quarter filled with water and bring to boiling point with the lid on. 2. Uncover the saucepan and reduce heat to very low so the water has barely any movement. 3. Place a heatproof bowl over the saucepan. The bowl should not touch the water. 4. Place the egg yolk in the bowl and whisk constantly for 1 minute. 5. Add 1 small cube of butter at a time while whisking constantly and adding another cube when the previous one is incorporated completely.
6. The sauce will begin to thin when the butter is being added but it will start to thicken again once the emulsion is established. Gradually add the cream while whisking constantly 7. Remove the bowl from the pan and whisk in the lemon juice, dry mustard and salt.
Poached egg: 1. Place a small saucepan on the heat filled half the way with water and add a dash of vinegar. 2. When the water is just starting to simmer start whisking it ion a whirlpool motion. 3. Crack the egg into the water and cook for 2-3 minutes.
Analysis Food: The red colour of the tomato and the green colour off the parley were added to brighten the meal up as the colours of the other ingredients are more beige. The meal has a messy edge to it which shows that it is homemade. Visual appeal is good due to the contrasting colours. Garnishes: The garnishes add to the dish and make it look more interesting. The parsley was used to add extra colour and some greenery. The rock salt was used to make the dish stand out more and make it more intriguing. A cherry tomato was used to add more colour and brighten the dish up. Props: Black plate was used so the dish itself would stand out and the rock salt would stand out on the black plate. I photographed the dish on a white table cloth so the black plate was visible and didn’t blend in to any other background. Lighting: In the process of photographing my meal I attempted good lighting as this is very important for good photography. The lighting of the meal is lit from above, which lights up the whole meal and makes sure all the points of interest are visible.
