Normally I would tell you that this is one of my favorite seasons of the year when we put together our Business Men/Women of Style issues. It is a time when our office is buzzing with energy. It seems as though every day business leaders are coming in for photo shoots and interviews, and watching my staff welcome them and masterfully cycling them in and out with ease makes me feel like a proud mother. Unfortunately, this season has been a bit clouded by the fact that it is a political season, and my husband has forced me into becoming a political junkie. Every night we switch back and forth between news channels to see what happened that day and if there were any events that occurred that may help us make up our minds about who will get our vote. This has been emotionally draining for me. I get so frustrated when I hear comments from the candidates about issues targeted to women. It seems as though politicians feel women have a handful of issues that we are interested in, and those issues dictate our decisions when it comes time to vote. That frustration becomes more prevalent when I speak to local businesswomen as they visit our office. In this month’s issue, we have more than 30 pages of women who are leaders within this community and in their prospective fields. We feature bank president Gail Baker of Reunion Bank, Jessy Flynn, owner of Gourmet today, Theresa Morris, owner of Morris Realty & Investments, one of Lake county’s largest real estate companies, just to name a few. These are extraordinary women who all have an interest in what’s going on in our entire nation, not just what affects them personally. As female voters, we are interested in national security, our economy, education, taxes, etc.—all the same issues male voters have an interest in. So I say, enough of the bantering back and forth about what women care about. Just treat us as equals, not special-interest voters. This year the Business Women of Style issue represents the power and vibrancy of our female leaders. We are strong, we are smart, we are educated, and we can do most anything a man can do, and some things a man cannot do. So, stop singling us out, speak to us as American citizens, and let us vote. ake & Sumter Style attended the inaugural meeting of the group of veterans who will be restoring a Vietnam-era UH-1 “Huey” helicopter for the Veterans Memorial at Fountain Park in Leesburg. Volunteers will disassemble the big bird and prepare it for its perch about 200 feet from the veteran’s wall in the park. Local company Brainerd Helicopters is providing space and support for the group. Chuck Brainerd, who owns the company, flew a Huey for various missions in Vietnam. He said plans are to strip the olive-colored aircraft and paint it in the colors of his old unit, the 57th Assault Helicopter Company. “A lot of Vietnam vets are alive because they could ride in one of these. They didn’t have to wait for a medevac helicopter,” Brainerd said. “If you were alive when you got on the chopper, you had a 90 percent chance of survival.”

TRAILING TREVATHAN Leesburg natives couldn’t be more proud of NFL superstar Danny Trevathan as his career moves forward. This past February we cheered him on during the Super Bowl with the Denver Broncos for a second time. Many remember him in Leesburg High School’s orange and black, but Trevathan just got a new set of colors. On March 9, he signed with the Chicago Bears for $24.5 million. He’ll be in a weightbearing position within his new team’s defense, a role everyone at home knows he was born to play. The 6-foot1-inch, 240-pound linebacker racked up 279 tackles during his career with the Broncos. What could four years with the Bears bring? We can’t wait to see what you’ll do next, Danny!

Though her focus will be Lake Business Magazine, she will write for all Akers publications. Originally from Anderson, Ind., Theresa worked for The Herald-Bulletin for many years. After experiencing a winter with 53 inches of snow, her late husband asked her to get a job in Florida, and they headed south. Well known in the area, Theresa worked with The Daily Sun and The Daily Commercial prior to joining Akers. “I finally have my dream job. I’ve wanted to work for a magazine since I was a teenager, and I’m very excited to be here,” Theresa says. “There is such positive energy at Akers that it’s infectious.” Theresa has three grown daughters—Julia lives in San Francisco, Emily is in Austin, Tex., and Maria is at the University of Central Florida.
There’s a new feature at Lake Idamere Park in Tavares that was built to make dreams come true. A ribbon cutting was held March 12 for Miracle Field, a specially engineered baseball diamond meant to better accommodate players with special circumstances. The surface is padded and smooth so those with wheelchairs, and others with decreased mobility, may maneuver with more ease.
This has been a life-changing project spearheaded by Lake County Board of County Commissioners and the Miracle League. The field will be the home turf for the Miracle League, which had their inaugural game following the ribbon cutting. It’s going to be EPIC! Mount Dora has been patiently waiting for Epic Theaters, and it looks like the wait may be over. Though a part of the city’s land development code caused the highly anticipated project to be shelved for several months, movement is being made to correct the problem so construction can begin on the 17-acre property located in the growing U.S. Highway 441 cor-
ridor between Target and Wal-Mart. According to Epic Theater’s website, the Mount Dora theater will feature an assortment of impressive amenities, including leather electronically controlled recliner seating with footrests, wall-to-wall screens with 3D capabilities, a lobby bar that will serve adult beverages, and reserved seating with online ticketing.

WHAT IS THE RESPONSE SO FAR TO THE CHANGE? Our No. 1 clients are our student body, and they were very excited with the new name and the new logo, as were salon clients. Change brings excitement and it brings a new chance to market yourself to students and clients.
QUOTE TO LIVE BY? I saw a quote somewhere that stuck with me: “I choose to remember my success and not dwell on my failures.” There are lots of failures along the way but you can’t focus on that; you focus on the achievements and positives. That’s what I choose to do.

WHAT WAS THE PROGNOSIS? Eva: The baby owl (Athena) was fine. What they asked us first was if we saw the mother, and when we said yes they got excited because it meant they could bring her back. The mother goes through a mourning period and will wait around awhile for the baby to come back.
Eva and her stepdaughter, Skyler, rescued and adopted a great horned owl. That experience sparked the writing of a children’s book, “A Hoot Story.”
HOW DID YOU FIND THE BABY OWL? Skyler: There’s a path we had been walking with our dog, Dawn, and we found the owl at the base of a tree. Eva: She matched the color of the tree, and we could have actually missed her if it weren’t for these big yellow eyes.
WHAT DID YOU ALL DO? Skyler: My dad ran back and got a bucket and gloves to scoop her up. Eva: We were like, “Now what do we do?” After searching, we found the Audubon Center for Birds of Prey, so the next morning we drove down to Maitland to get her checked out.
WHAT HAS THIS EXPERIENCE DONE FOR YOU? Skyler: Getting to see the owl and its family made me look at wildlife differently. Eva: It was a life-changing thing for me; animals are more like us than we think. HOW DID IT INSPIRE YOU? Eva: A mother owl will adopt and has great mothering instincts, and the father is involved as well and will teach them how to be an owl…how to fly and hunt. They have a strong family structure, which is something to be admired. This was a catalyst for me to write. WHAT DO YOU WANT “A HOOT STORY” TO DO? Eva: We want to share the experience with others and encourage them to get outside. There’s a lot to learn just by going out in nature.

WHAT DID THE CENTER DO? Eva: About a week later they brought Athena back with a baby boy owl named Hermes for the mother to adopt. We saw them after a few months, and there were four owls back in our pines. We want to be careful interacting with them further, though, because we don’t want to imprint on them.

HOW DO YOU GIVE BACK? I’m a student volunteer at the Boys and Girls Club of Lake and Sumter counties for almost two years. I help around the club, clean up, help kids with their homework, and help Mrs. Tonya with anything she needs. I plan to go by in the summertime, too, a couple hours a week. WHAT’S YOUR FAVORITE PART? Interacting with the kids. Playing board games with them and watching movies. WHAT OTHER GROUPS OR ACTIVITIES ARE YOU INVOLVED IN? I’m a part of Key Club; we do community service. We have DCM projects, too, where we go to schools and clean them up and even paint. I’m also baseball manager for my school and I dance. We do performances every three months.

AN OLD FRIEND SIGNS OFF FOR THE LAST TIME STORY: FRED HILTON
I
lost a dear old friend recently. The end came quickly and was totally unexpected. The loss is enormous and I’m trying to cope, but it is difficult. We were close for 25 years. When I was still working, he would provide the coffee that kept me awake and semialert in countless deadly dull staff meetings. More times than I care to admit, he helped me recuperate from a nasty hangover. After I retired and moved to The Villages, he would join me on the lanai where I would drink coffee while reading the newspaper and doing the crossword puzzle. (All except the Saturday one which, as you know, is designed by sadistic Mensa members and cannot be solved by normal human beings unless IBM’s supercomputer Watson is helping.) My old friend was the perfect size. He was big enough to hold a 10-ounce pour from my Keurig but short enough to fit beneath the top rack in the microwave. He was clearly the best coffee cup anyone could ever have. We became friends when he was given to me on a visit to a television station. His name was Mr. TV3 Coffee Mug. Large black letters on his side proclaimed the call letters of WHSV, a Virginia ABC affiliate that proudly serves the 178th largest television market in the country. Mr. TV3 Coffee Mug’s demise came suddenly. He had a close encounter of the worst kind with a tough saucer in the kitchen sink. The result was a tiny chip on Mr. TV3 Coffee Mug’s rim. It didn’t appear large enough to cause any harm other than a bit of aesthetic damage. But when I next filled Mr. TV3 Coffee Mug, I noticed a tiny crack that ran from the chip down across his whole body. Coffee slowly seeped from my old friend. Admittedly, old age does cause many of us in The Villages to develop leaks. We can get away with it but a coffee mug can’t. Sadly, Mr. TV3 Coffee Mug was retired. I put him in the den in a place of honor next to an urn containing the ashes of the late, great Teddy, who was our purebred Big Brown Dog. I used the powers of Facebook to share my grief over the untimely passing of Mr. TV3 Coffee Mug. I was astonished over the response from friends through The Villages and the rest of the country. Many shared their condolences over my loss. I was offered a Wartburg College mug as a replacement,

which would likely have been the only Wartburg College mug in The Villages. A friend offered me a Virginia Tech cup. While I do appreciate the thought, offering me a Virginia Tech mug is like offering an Auburn fan a Roll Tide sweatshirt. One friend expressed outrage that WHSV-TV3 had not come forward immediately with an emergency replacement. I was hurt that they didn’t seem to care. Finally, my wife got tired of my melancholy and bought me a new cup. A 24-hour mourning period for a coffee cup was adequate, she said. The new cup is quite pedestrian looking and was named Mr. Plain Black Coffee Mug. Mr. Plain Black Coffee Mug met all the size requirements but I never could bond with him, although I did try. It was clear that Mr. Plain Black Coffee Mug was not a “replacement” for Mr. TV3 Coffee Mug. Mr. TV3 Coffee Mug was irreplaceable. Mr. Plain Black Coffee Mug was simply a new cup. An unexpected package came in the mail the other day, which made all right with the world again. An old friend and co-worker in Virginia has a contact with WHSV-TV and acquired a shiny new 2016 version of the TV3 mug that she sent to me. He has been named Mr. TV3 Coffee Mug Two. At first, I worried that I might not be properly honoring the legacy of Mr. TV3 Coffee Mug. I then realized that Mr. TV3 Coffee Mug Two was undoubtedly a direct descendent of Mr. TV3 Coffee Mug. After all, they were both born in China.

The competition was tough, but in the end only one could hold the title of 2016 Business Woman of Style. Licensed interior designer Marilou Stones entered the race as part of a 10-member team from BNI Powerhouse that banded together to participate in Lake & Sumter Style’s Sixth Annual Business Women of Style event in April. When team members huddled at the event finale at the Leesburg Opera House, home of Akers Media, they quickly selected Marilou to be the face of their winning group. It was an example of relationship building at its best. BNI Powerhouse is the local chapter of Business Network International, the world’s largest networking organization with almost 3,000 chapters. With just over 70 members, the local chapter targets businesses serving The Villages. The members provide a positive and structured environment for quality business referrals, and in the past year generated more than $12.3 million worth of business for local members. “BNI Powerhouse has been very good to me…and for me,” says Marilou, who owns Stones Design LLC. “I joined because I saw the value of the organization. Networking enhances you as a person because you meet all kinds of people. You learn how to talk to people and how to get along. You become a better business person.” Surprisingly, being a part of a professional networking group is relatively new for Marilou, who joined BNI Powerhouse only a year ago. She wanted to join the organization when her two sons were younger, but she knew the commitment would take away from her family—something that has always been her top priority. The boys are older now—14 and 20— so she was looking for opportunities to expand her business into the fast-growing area around the mega-retirement community. Her husband, Fred, talked her into attending a BNI Powerhouse meeting with him. “A plus was getting to spend an hour together in the car when we drove up to

The Villages,” says Marilou, who lives in Windemere in Orange County. “We talked about everything.” Her husband changed jobs and doesn’t attend meetings any longer, but that hasn’t discouraged Marilou from making the commute several times a week on her own. And that drive may become more frequent in the coming year. Through a BNI Powerhouse referral she landed a contract to become the in-house designer for Grand Oaks Manor, a 400-luxuryhome development being built near Highway 301 in Wildwood. “I’ll meet with every homeowner who buys in Grand Oaks and help them make design choices for their homes,” she explains. Being a designer comes naturally for Marilou, whose mother was also an interior designer. When she was in high school, she went through a list of possible occupations but being a designer always came out on top. After graduating from Virginia Commonwealth University in 1986 with a B.F.A. in interior design, she worked with her mother before opening her own company, Stones Design. “My mom and I were best friends,” she remembers. “After my mom died, I found out that most people didn’t have that kind of relationship with their mothers. I am fortunate that I also have a great relationship with my mother-in-law.” She took a brief respite from running her own business to take a marketing job with an Orlando-based furniture company in 2008 during the economic downturn. “What I learned from that experience was that if I’m going to market something, I want to market myself,” she says. One of the keys to success, she believes, is knowing how to work with all kinds of people. “Interior design is relationship built,” she says. “I have to interact with clients, builders, and architects. It’s important to like people.” She’s old school in that she is more of a “face-to-face girl” rather than a computer nerd. “I’m really not into social media.
Most of my business has been from referrals and repeat clients.” Most importantly, though, she believes it’s about having passion for a job. “In whatever field you choose, you have to like what you are doing in order to be successful,” says Marilou. Loving her job is important because she “doesn’t shut down at five o’clock.” Her work day begins at 5:30 a.m., and she often wraps up the day after her youngest son goes to bed. Her sister Cindy French of Freeport was visiting when Marilou was named Business Woman of Style. “I’ve never seen anyone work as hard as Marilou,” says Cindy. “She has survived so much with grace and humbleness, so I’m thrilled to see her get the recognition she deserves.” Marilou is quick to tell you that her success in her career and her life come because of her spiritual faith. “My life runs through God...I don’t produce anything without God,” she says. “Faith is an important part of everything I do, whether it’s mopping floors, going to PTA meetings, or selling a multimillion dollar project.” Although she works hard at her career, she and her husband, Fred, are devoted parents who love watching their sons play basketball. Her oldest, Michael, plays college basketball while 14-year-old Joshua plays for his middle school. “We are definitely a basketball family,” she says with a laugh. The couple lost two children years ago, and Marilou describes Joshua as her miracle baby that brought the family even closer. “I wear a lot of hats, but my most important job is ‘mom.’ I make lunches and pay attention to the details…that will never go away,” says Marilou, who grew up in a close-knit family of six children. “At some point you have to rein in [your career], because family comes first. When she does have time to relax, it’s with a good book. “Give me a book and put me in the sun at the beach and I’m good,” she says with a smile.

Do you enjoy magic acts? How about a tai chi demonstration? Is a short comedy skit about the nation’s presidential candidates more to your liking, or are you an avid country music fan? Have you dreamed about being able to showcase your unique talent on
stage but never had the chance? Well, you’re in luck. The first Saturday of every month there’s an event called the Bohemian Spotlight Café where amateur performers get an opportunity to spotlight their often unique talents. It’s an evening of fun, surprises, and laughter.

Native-New-Yorker-turnedVillager Camille Likes is the brainchild behind the café. “It’s like a Greenwich Village café or the cafés in the 1920s where Bohemians would go,” she says. “It’s a place where people have an open mic to self-express and have a fun time while doing it. People that have something to say have a chance to say it.” Do you have to be talented? “It’s not too serious,” Camille responds diplomatically. “I do encourage people to do their own thing. It’s just a fun night and people love it. I also get up to sing songs and play the guitar, so it’s an opportunity for me to self-express, too.” Audience members say it’s the diversity of the acts and performers that don’t take themselves or others too seriously that makes the evening such a success. A man commented to the woman he was sharing a table with, “This is your first time, right? Well, this guy isn’t the best performer, but he’s still fun to watch.” Another audience member who was a newbie told her neighbor, “This is a lot of fun; it takes a lot of courage to get up there. I’m going to come back next month.” An evening at the Bohemian Café is similar to what Tom Hanks said in “Forrest Gump. “ “Mama always said life was like a box of chocolates. You never know what you’re gonna get.” That seems to be the general consensus of many audience members. Sit back, relax, and take a huge bite out of the evening—you never know what you’re gonna get.

MEMORIES OF MOM Every May my heart, my mind, and my soul travel back to those tender days of growing up in a small Vermont town. We didn’t have a lot of money but still, it was a happy time. We couldn’t miss what we didn’t have because no one else around us had much either. I’ve lived in The Villages for almost 10 years and have met many people who grew up under similar circumstances. One central figure frequently rises to the surface of our bittersweet recollections, like cream rising to the surface of raw milk: our mothers. Mothers that knew how to create something from nothing, make a soup from food scraps, and alter a woman’s size 16 down to a little girl’s size 4 and do it all without complaint. When I was 12 years old, my dad passed away and left my mom with

mounting bills, three children to raise alone, and a threat from the bank to foreclose on our modest home. I can remember when Mom traveled 20 miles in an old Plymouth station wagon, picked apples all day at a large orchard, came home exhausted, and gathered enough strength to cook a hot meal for her children. There wasn’t any job too lowly or beneath her to tackle. If the work netted a few dollars to buy groceries and it was physically possible for her to do it, well, she did it. Over the years my mom raised chickens and sold the eggs in nearby Canada. She wandered along the back roads of Franklin County picking a rare decorative vine called bittersweet and shipped crates of it to New York City to pay for Christmas. We went berry picking and canned
jars of blackberry jam. We had a large garden that not only yielded fresh vegetables in the summer and early fall, but provided us with enough left over for canning; an action that kept us in good health throughout the cold Vermont winters. Like many Villagers, I was blessed to have a hardworking and loving mom who continually demonstrated that the only limits I had were the ones I placed on my own back. Thank you, Mom. Four powerful women who, prior to retirement held demanding yet fulfilling jobs now share a common life experience—each is struggling with the transition of being a senior single person. Carol Tierney worked in education, including being a principal and as a program director and coordinator in Wisconsin and Chicago. Her transition began with a real fear of being financially destitute. The second struggle was personal. “I was powerful in my job but I was minimal in my personal life,” says the founder of The Villages group Adjusting to Living as Singles (ATLAS). “I was in an abusive relationship and afraid I would be punished; that he would come and get me. I was a school administrator at the time and I was truly afraid he would come to school and do something that would hurt the children. I was always looking over my shoulder in fear.” Joanne Howard also had a career in education, teaching, school psychologist, running a nursery school and daycare center, and working at Rhode Island College setting up school age child care in the state. Joanne says her financial health was a worry during her transition, but another concern loomed larger. “Having to adjust to one income [was a concern] but that wasn’t the big thing,” she admits. “The big thing was getting to know who I was. [I wasn’t in] my first marriage, but I figured [this one] would be forever. Right from the beginning it was wrong, but I kept wanting it to work.” Eventually Joanne realized she had to end the relationship but it left her questioning whether she’d ever want to commit to another person. “Did I really want to go through this again? Did I want to share my closet with anyone ever again?” Pat Miller was office manager for
a police academy in Cincinnati. Like Carol and Joanne, she was fearful of going from a dual income to a single one. “It was not just about making ends meet each week,” she explains. “It was also about periods throughout the year when you had to pay taxes or get new tires on the car. That’s been a real struggle for me.” Barbara Bikley owned several beauty salons in Ohio and also worked in banking and insurance. Like Carol, Barbara was in an abusive relationship for years until she gathered enough strength to divorce her husband—an action that left her raising three young children alone. Later she met the love of her life. They were together for 20 years before he passed. “It took awhile to really get over [his death]; that was tough,” she says. “I had to do everything I could do every day to keep moving forward and to be happy.” These four women, who met while attending events in The Villages, are now happily living their lives as single seniors, a population that represents 20 percent of the total community. But first, they had to explore and move through the unfamiliar and oftentimes frightening terrain of being single. These women know their life experiences are not unique, but those very experiences, many of them difficult ones, and the lessons learned might help others navigate their own transition from a world of we to a world of me. “Every one of us has a story of grief, separation, loneliness, and pain,” Carol says. “For most, that was then and this is now. You’re either going to live back there or move forward.” Carol believes the single seniors ready to move forward and embrace their newly found independence oftentimes are unsure exactly how to do it. How do you work through

the pain or loneliness of being single again? How do you make new friends? How do you deal with downsizing your finances? What about dating? “When you become single and still have a job, still live in your support community, and still have your family nearby, [being single is an easier adjustment],” Carol says. “But when you move here there’s a whole new dynamic going on: finding new friends, finding support, trusting new people, and dealing with loneliness because you’ve distanced yourself from your support, your family, and your old friends.” Carol, Joanne, Pat, and Barbara formed a dedicated team of four
simple. Limit each session to 80 people, begin each session with a brief overview of the subject to be discussed, and then break into small groups of five or six for talking. It is a first-come, first-serve event. The format appears to be working. They were amazed at the turnout for the first meeting held several months ago. “We thought we’d have about 50 people,” Carol says. Joanne adds that although they didn’t want to exclude anyone at the first meeting, interest was so high, they had to turn away at least 100 people. However, that proved they had hit on a theme very important to their single counterparts. Even though Carol considered
cluttering your life, aging and facing death, and dealing with loneliness. “We aren’t promoting ourselves as psychologists or any other kind of mental health experts,” Carol says. “But there are emotional issues out there that we all have experienced, and people can support one another in that. Things go through your mind that you haven’t been able to ask of anybody. We offer a place where you can be comfortable asking. “Adjusting to Living as Singles is a perfect title for our group. We want to represent strength and taking charge, that by coming together we can develop our own atlas of resources.” Joanne said the discussion group

working toward a common goal: provide Villages singles experiencing change in their lives an opportunity to meet and discuss the very real concerns that single seniors experience. From there they offer each other solutions to those problems and feel supported. Their intention is to help single seniors empower themselves to step into their new lifestyle with confidence and positive expectations. They will do it by positioning ATLAS to address those and other pertinent subjects via informal discussion groups. The women believe singles sharing life experiences and the lessons they’ve learned along the way in a nonjudgmental environment is key to the success of their discussion group. The team is keeping the format

the logistics end of that first meeting needed a serious overhaul, participants were pleased with the event. “One group said they had a great discussion and were going out to eat afterward. They had really pulled it together,” Carol says. “They said [an event like this one] was long overdue.” The women knew choosing the right discussion topics was critical to ATLAS’s success. “We took everything we encountered and made them into topics,” Barbara says. “Living as a single in a couple’s oriented world, handling our own finances, buying our own house and buying our own car—all of those things.” Other subjects on the ATLAS agenda include: emotional health, dating/relationships, spirituality, un-
is aimed at people searching for solutions to problems. Joanne adds: “They want to talk to other people about it and find a way to deal with it. But if you’re stuck in something, you need more help [than the group can offer].” Future plans for ATLAS include organizing a focus group to monitor the needs of the singles community, create a website, and a library of businesses that singles recommend or own, and initiate panel discussions for larger audiences each year. Ultimately, Carol and her team want to help ATLAS participants move forward from a place of uncertainty to a place of empowerment and enter their new lives with open arms and open minds.

MONASTERY TO MATRIMONY A DEEPLY MOVING COMING-OF-AGE TALE Mary Ann Weakley is a petite, soft-spoken lady. Her appearance belies the fact that she has faced a number of life-changing events that she bore with grace and fortitude. Her memoir takes us through that journey. Mary Ann Cahill was born and raised in Bement, Illinois, about 25 miles east of Decatur. The tomboy daughter of Irish-Catholic parents with four older brothers, she was most at home running barefoot around the family farm. At the age of 14 and looking for adventure, she persuaded her parents to enroll her in St. Mary’s Academy, an all-girl boarding school in Nauvoo, Illinois. She explains, “The commitment I made that day set in motion a future I could in no way have predicted. The tumbling domino dots were connecting to a new path.” Four years later at the age of 17, Mary Ann entered the Benedictine Order. As she ascended from postulant to novice and then took her final vows, Sister Mary Magdalen earned her Bachelor of Science in business education and became a teacher, a vocation she never aspired to. Change was in the wind in 1962 when Pope John XXIII convened the Second Vatican Council. The council had a profound impact on the church, the sisters, and the laity. One of the documents specifically called for nuns to re-examine the work of their founders and open their doors to the poor, the sick, and the uneducated, Sister Mary Magdalen said. “Insulated as we were, I didn’t grasp the dynamics of what was happening across the American church and in religious communities throughout the country.” She soon realized the importance of Vatican II in her life. Following the directives of Vatican II, the principal of St. Mary’s Academy formed an administration based on team leadership and

Sister Mary Magdalen was now dean of girls at her alma mater. The sisters became increasingly concerned about the future of the school. Enrollment was declining; discipline problems increased; the students were often from single-parent homes where parents were desperate for help. The sisters drafted a proposal to meet the changing needs of the students. That proposal was completely dismissed in a merciless tirade by the former principal, Sister Rose, who not only tore apart the proposal but criticized the sisters and their ideas. It was then Sister Mary Magdalen lost heart for the future of St. Mary’s and the seed of doubt was planted. She soon discovered something had died inside her and her mounting frustration culminated in her decision to leave the order. There were mountains of questions to be answered and practical considerations to be dealt with. Unfortunately there was no structure for nuns who left their orders even though many did leave during the 1970s. They continued to be dedicated to the church and took their places in the community as teachers, nurses, social workers, and civic leaders, but many also lived in abject poverty. There was no social security for nuns. How Mary Ann transitioned from adventurous school girl to Sister Mary Magdalen, then to become Mary Ann Cahill again after 20 years and ultimately to marry a wonderful man, Harold Weakley, is an intimate account of a woman’s life. She bares her soul to her readers. As she told us, “As my life progressed, I grew closer to reaching the apex of the spirituality I had searched for, but never found in the convent.”
The author bares her soul with her personal story of entering the convent and becoming a nun. After the changes in the Catholic church (brought about by Vatican Council II), she starts to re-evaluate her life as a nun and makes a life-changing decision to leave the order. Her story includes how she adapts to her new life with many unknowns. She keeps your interest with very touching stories of her experiences. Jeffrey Ryerson came to the expressive art he does now by way of biomedical illustration, which was his major at the University of Tennessee, the school of abstract expressionism and the premier school for theory. “My specialty was pseudostratified epithelial squamoses and viruses, a magnification of 600 times the actual size,” Ryerson says. “I studied all that and also did drawings of cadavers, and I illustrated human anatomy.” However, as a professor saw the talented student working every day, he told Ryerson, “You’re going to get a twitch looking at a microscope. Go get your master’s degree and paint.” So that’s what he did. The postgraduate degree led Ryerson into teaching at the University of South Florida and Hillsborough Community College and doing art therapy for the state., which was both rewarding and challenging. “Mostly I dealt with people who were paraplegic and painted with a brush in their mouths,” Ryerson says. “These people taught me what life was really about through their misfortunes and afflictions. That led me to God.” Ryerson’s own art became popular and appeared in galleries around the world.

Although he truly felt teaching was a noble profession, he was unable to get tenure so he left it behind and began opening galleries. “I’ve had some pretty cool places. One of them was in downtown Tampa where we had Monday morning Christian men’s meetings, and at night, we’d play music.” An accomplished musician, Ryerson plays the guitar and piano, often composing original music. After he became a Christian, he found many ways to express his faith with music and art. Eventually he and his wife, Kimmie, moved to Denver and joined a vibrant congregation. After a particularly moving Good Friday service, Ryerson talked with his wife about Mary and what the followers of Jesus felt on that miserable, dark day. “I went to the studio and the first thing I did was called ‘Singing with the Volcano Choir’ because I’d had 30 people standing next to me singing during that service, and I was out of body,” Ryerson says. “I was high as a kite and drunk on the Holy Spirit. The second thing I did was called, ‘Silenced on Friday,’ and the third piece I did is called ‘Twins at the Gate.’” These pieces are among the artist’s favorites. He often donates art to raise money for

church mission projects. “God has given me a gift, and I should be giving to others.” Some of the money went to a small village in Uganda, where young girls walked four miles to and from a mosquito- and disease-infested river to get water for their families. “By putting two wells in, we made a difference,” Ryerson says. “You should have seen the faces of those children. We had given them life. You gotta pay it forward.” Ryerson says ideas for his art usually come to him while he sits at night playing the guitar or piano. “They usually start broad, and I start arrang-
ing and then I work down to detail. There’s probably more time spent just staring at [the canvas] trying to figure out what I’m going to do than the actual implementation.” The Ryersons have only recently come to Lake County, and they’ve already found a church home here and are enjoy fellowship with new believers and friends. “I’ve always thought I was contemporary. I’ve been told by publishers and interior designers that I’m a transitionalist, which I think means I’m somewhat representational, even suggestive,” Ryerson says. “Some pieces I’m needing you to believe it’s a landscape or seascape.”

Forget the same-old beach condo this summer and head to Paris, France, for an unforgettable experience. With lower airfares and a decent rate of exchange for the Euro, there’s never been a better time to visit but be sure you do your homework before you go.

have two kinds of girlfriends: the first group absolutely loves Paris; the second group has never visited the City of Light but it’s high on their bucket lists. Some friends have visited as a group, while another brave soul went completely by herself—and had the experience of a lifetime. And, if you are a guy, maybe you should think about a rendezvous with your special girl in the world’s most romantic city. Tons of guide books and an infinite number of blogs exist about things to see and do in Paris. Finding the right one for your trip is a quest within itself. Many will point you to the crowded tourist sites with little advice about getting off the beaten path. Taking a guided cookie-cutter tour leaves you even less time for discovering the true Paris—a magical city that has drawn writers, students, and adventurers for centuries. The best advice I received when I was planning

my most recent trip was to take it slow and savor the Parisian lifestyle. Years ago, on my first trip when I was an energetic 20-something, I flitted from site to site, not really understanding what I was seeing or enjoying the culture. It was a race to see as much as I could. Now that I’m older (and more laid back), I know that is not the way to truly experience a country. Rather than racing through the city at breakneck speed (which you can’t do anyway because of the traffic), I decided to prioritize the places I wanted to see and cover what I could. Most importantly, I built in time to sit and enjoy the Parisian café scene where people-watching is an art form. I also sat in the Champs de Mars, the area between the Eiffel Tower and the École Militaire, and the only thing missing was my wine and cheese because I realized too late the park is great place for a sunset picnic.

PLANNING YOUR TRIP Preparation is the key to any great trip, and I’ve found it’s particularly easy with Paris because so many resources are available. Before you buy a travel guidebook, thumb through several to find the most applicable for your trip. Most guidebooks are available for tablets. However, the most helpful books are not always guidebooks. Before my trip, I read “The Sweet Life in Paris,” by American David Lebovitz, and “The Greater Journey: Americans in Paris,” by historian David McCullough. Both books are enjoyable even if you aren’t planning a trip anytime soon, and they can put things in context when you do visit Paris. Learning a few words of the language is always helpful. Enroll in a non-credit “French for Travelers” class or buy a language CD or app. Just knowing the pleasantries, such as “hello,” “please,” and “thank you” goes a long way with the local shopkeepers when exploring on your own. If you have a smart phone, be sure to download walking tour apps— just be certain updates are current. I downloaded one for the Musée d’Orsay that I thought would help me avoid the cost of renting the museum’s audio guide. However, I was quite confused when my iPhone app was describing paintings on other floors, not the ones where I was standing. The Musée d’Orsay had recently undergone a major renovation, but my app was not current. Walking-tour apps are priceless because you don’t have to fumble with paper maps. And you can even get them based on your interests. I recently downloaded a Paris literary tour guide from GPSmyCity.com. This particular app offers not only a mapped route but also an estimated time duration, the total distance (3.7 miles), and a brief synopsis of each stop. Walking tours are available for

all kinds of interests, including best food markets, best galleries, and, of course, shopping.
FASHIONABLE SHOPPING Girlfriend getaways must include shopping! Be forewarned Paris can be expensive, especially with so many high-end designer shops. After all, it is the fashion capital of the world. The Champs-Élysées and Rue St-Honoré are the ultimate destinations for shopaholics with stores like Cartier and Gucci. Window shopping may be all you can afford, but that’s okay because a walk along these boulevards is a memory you’ll cherish. For more purchasing power, head to Rue Oberkampf in the Marais district, which is popular with youthful fashionistas. And don’t miss the most famous department store in Paris, the Galeries Lafayette Haussmann, which opened in 1893. Discover its history with a free, 45-minute guided tour.
PRACTICING SAFE HABITS As with travel in any city, be aware of surroundings. If you are jet-lagged when you arrive, don’t try to do too much. Save the major sightseeing for when you are more alert and spend the first evening enjoying a walk and a quiet dinner. On our first day, my husband and I opted for one of the hop-on, hopoff buses so that we’d get an overview of the city. A river cruise on the Seine is also a great way to relax. Unfortunately, pickpockets and gypsies frequent the major tourist areas. You know the drill: keep your wallets hidden and purses securely next to your body. Be aware that there are scams everywhere, and many guidebooks address the current ones making the rounds. Paris is still safe even if media reports lead you to believe otherwise. Paris is divided into 20 municipal districts called “arrondissements.” I stayed on the fringes of the 11th arrondissement within sight of the Eiffel

VISITORS IN 2015. IT REMAINS THE WORLD’S LEADING TOURIST DESTINATION. Tower. Although it was a hike to other parts of the city, I never felt threatened. My friend who traveled alone, stayed in the first arrondissement and felt perfectly safe, albeit in a “noisy neigh-
borhood,” she said. Another friend, who was a part-time Paris resident, lived in the fifth arrondissement (the Monge/Mouffertard area) and recommended it along with the fourth (near Notre Dame). A group of girlfriends recently rented an apartment in the seventh arrondissement near the Eiffel Tower. Short-term rental apartments are available throughout the city, and when you split the fee among a group, the cost is much less than individual hotel rooms. Friends who travel to France every summer recommended the rental site, www.apartofparis.com. I can’t think of a better way to embrace the Parisian lifestyle.

“We’ve found the best way to bring people to Mount Dora is entertainment events. Most of the lodging establishments rent out all their rooms, which is our goal,” says Brian E. Young of Visit Mount Dora.

The festival was originally organized by a group of blues music lovers, and this year’s coordinators are staying with their model with one important change: free admission. Gates open at 5 p.m. on Friday, and attendees may bring their own chairs or blankets to watch. However, the new model features a paid VIP section, which is closer to the stage BETH MCKEE
and allows interaction with the bands. Chairs are provided for VIP ticket holders, and bluesandgroove.com/ tickets is the place to go to purchase tickets. “This opens up the opportunity for blues lovers to come down and enjoy a couple of nice nights on the waterfront,” Young says. “We’ll have concessions and craft beer, and barbecue will be available.” In the past, familiar names like John Mayal and Leon Russell have headlined, so music lovers know they’re going to hear great performers during the Blues & Groove Weekend. Attendance has been around 2,500 in the past, but there’s hope to double that number this year with the no-cost admission. “Elizabeth Evans Park is a great venue for this event, and many of the artists have told me it’s one of the most beautiful places they’ve performed in,” Young says. “Looking out over a large audience with water surrounding them is fantastic.” This year’s headliner is the Devon Allman Band, featuring the next generation of Allman music. Devon is the son of music legend Greg Allman, though he hasn’t used that connection to make
his way easier. His music is his own, and it’s the result of years of hard work establishing his personal sound. Coming out of Orlando, The Smokin’ Torpedoes open the festival on Friday evening followed by Joe “Survival” Caruso, who is a popular with Daytona blues lovers. The Damon Fowler Group with Beth McKee finishes out Friday night. Fowler, who’s from Tampa, began wowing audiences as a teenager, and his music is considered a rock, blues, and sacred steel hybrid. The blues and rock fusion band Petey & the Ravens get things started Saturday night, warming the crowd for the Devon Allman Band to add the ultimate touch to a total blues experience. Keep in mind coolers aren’t allowed. Food, beer, and wine will be available from vendors throughout the event. All craft vendors will have items following the blues music theme. “Last year we had a jeweler who made musicthemed items, and there will be a number of sponsors and vendors with art-related items and things of that nature,” Young says. The Florida Department of Veterans’ Affairs reports that Florida has the third largest veteran population in the nation—1.6 million strong. That’s 12 percent of the state’s population 18 and older. Ironically, it’s that same population that is in trouble—big trouble. Why? Veteran suicide rates in Florida are among the highest in the country. The Department of Veterans Affairs 2012 Suicide Data Report says that military and veterans account for nearly one in every four Florida suicides. Nationally, 22 veterans are committing suicide every day—that’s one every 65 minutes. In 2013, The National Coalition for Homeless Veterans (NCHV) reported that 44 percent of all homeless veterans in the nation live in just three

states: California, New York, and Florida, with Florida having the second highest rate. Local nonprofit organizations regularly assist groups of homeless veterans, some with young families, who live in the Ocala National Forest. At the national level, it’s estimated that more than 150,000 vets and their families live in national forests.

According to the Florida Department of Veterans’ Affairs, Florida has more than 249,000 disabled veterans, the third largest population in the nation. Critically disabled veterans, including multiple amputees, vets who are severely burned or veterans with debilitating PTSD, are returning home to Florida only to discover overburdened and complicated state and federal support systems. Those same systems are often unable to meet the vet’s critical needs. One wheelchair-bound veteran living in Central Florida waited more than five years before she received a service
erans, existing support systems and organizations that are intervening on behalf of these veterans, and those areas of needed support that are severely lacking or not addressed at all. Style will report on local businesses and nonprofit organizations providing housing assistance, educational opportunities, career counseling, job prospects, mentoring, and other support programs geared to helping veterans help themselves. Local experts will share more detailed information about the growing number of Central Florida nonprofit
PTSD or were physically injured while in service to their country will share personal experiences about the daily challenges they face dealing with spouses, children, other family members, and relationships. They will discuss their greatest needs, how local organizations have helped, and where significant voids still exist. Unique organizations and initiatives will be spotlighted like the newly formed Coalition for Florida Veterans, which was founded by David Booth, a nationally recognized combat veteran who is an expert on veterans’ issues.
To Careers, this initiative is being specifically designed with veterans in mind. The National Coalition for Homeless Veterans believes the most effective programs for veterans at risk are those developed at the grassroots level including community-based nonprofit organizations, many of them run by fellow veterans. It is Style’s intention to support local veterans by providing insight into their dilemma and highlighting the initiatives that can help.

“Men no longer need to suffer from frequent urination because they are getting older,” says Dr. James Young, a down-toearth urologist with 33 years of experience in treating men with prostate problems in Lake County. Although the cause of these symptoms is most likely an enlarging prostate (BPH), a normal part of the aging process in men, treatment options are more numerous and less invasive than those offered to our fathers and grandfathers. Years ago there were two options for treating an enlarged prostate: surgical excision via an open operation (knife) or much more commonly by performing a transurethral resection of the prostate (TURP), commonly referred to as a “roto-rooter” by patients and physicians. Both required hospitalization as well as major anesthesia and could be fraught with complications such as bleeding, infection, loss of bladder control and even death. “In my career I have performed over 3,000 TURPs; however, I no longer perform any,” says Dr. Young. “There are presently too many excellent alternatives to consider a hospital operation for the vast majority of patients with BPH.” “When I see a new patient I perform a physical examination and properly evaluate the patient’s symptoms, thus diagnosing the underlying problem(s),” he says. “Next, I describe to the patient what’s normal and then explain what is abnormal with him. Lastly, I teach him his treatment options. If I’ve done a good job of teaching, he will select the correct option for himself.” While prescribing medications for BPH can be done by primary care physicians, only urologists are trained to thoroughly
evaluate the bladder and prostate (including ruling out prostate cancer), as well as providing extremely effective minimally invasive, office-based therapies as alternatives to lifelong medical therapy. One such option is Prostiva-RF Therapy, a procedure performed by Dr. Young in his office under local anesthesia that usually takes less than 30 minutes. Prostiva utilizes low level radio frequency energy to ablate (destroy) the obstructing component of the enlarged prostate. “I am very happy with the results I have achieved for my patients using Prostiva-RF Therapy,” says Dr. Young, who has successfully treated more than 2,400 patients with this procedure. “Medtronic is a $13 billion-a-year, publicly traded corporation that perfected the technology for Prostiva and produces the necessary hardware. Recently, Medtronic produced an educational DVD for international distribution to inform patients and physicians worldwide regarding the benefits of Prostiva therapy. Seven of the eight patients featured on the DVD are my patients. I am very proud Medtronic selected my practice to feature the benefits of Prostiva-RF Therapy. However it is sort of a bad news/good news thing. The bad news is neither my patients nor myself received a penny for our participation. The good news is Medtronic gave us all the DVD’s we want, so if anyone wants one all he needs to do is drop by my office at 801 Northshore Drive in Eustis, and we will give him one!” And with an office staff with nearly as much experience as the doctor, (many have worked with Dr. Young more than 20 years) III PAID PROMOTIONAL FEATURE III

After marrying beekeeper Bill she desired to contribute her portion to his work with bees. Although she had no prior experience running a business, Diane began selling honey and making a variety of candles at a farmer’s market while still working as a nurse. When it became obvious she could no longer continue both jobs, she traded her stethoscope for an apron (beeswax can be sticky!) and turned her dining room into a workshop. Along the way, she discovered burning beeswax candles was beneficial to her asthma. Honey and beeswax have been known
to aid in a variety of health issues. Diane’s 100-percent beeswax candles, with natural cotton wicks, emit negative ions (cleans air and decreases odor and allergens in the air). They are nontoxic, hypoallergenic, and burn a long time. Diane didn’t stop with candles. She was given a starter recipe for soap and has since altered the recipe to make it her own with the help of her son, who just so happens to be a chemist. Each bar of soap contains honey, beeswax, and goat’s milk, which makes a combination unlike any other. She now raises Nigerian dwarf goats and twice a day

is in the barn milking the cutest brown and white goats you’ve ever seen. She and Bill raise the bees, milk the goats, extract the honey, and clean the wax. “It’s as home grown as you can get it” says Diane. “I use as many organic and natural products as I can.” Her soap has gained a following and is practically flying off the shelves. Colored and scented soaps are also available, which contain clay for color and essential oils for fragrance. Currently, the most popular scent is frankincense and myrrh. Let’s not forget the honey! Diane bottles pure raw honey with the following flavors: orange blossom, clover, all-season wildflow-

er, and palmetto in a variety of sizes and containers. Even though she does not advertise, she says “People are chasing me down.” KayDee Kay Gourmet Foods in Mount Dora and Olive Pantry in Lake Mary approached her, and both stores now offer her honey in their shops. What seems like a whirlwind of success has not come without dedication and sacrifices. Diane started from scratch and had to teach herself how to create labels, design a logo, calculate production costs, create business cards, and every other tedious task associated with becoming a licensed business owner. She’s up at daybreak every

day joyfully preparing for the tasks ahead and dedicates five days a week to bottling honey and making soaps and candles. “My business is taking over my house.” She says she works harder now than she ever did as a nurse and loves every minute of it, confirming the adage “if you work at something you’re passionate about, it’s not work.” Diane is exploring plans to build a workshop next to her home with a self-service honey stand so she can have her dining room back! Humbled that her business has blossomed, Diane encourages every woman who dreams of starting a business to choose something they love. “There are many
opportunities now, because consumers want handmade natural artisan craft items. If you have the desire to work on a craft that you love, maybe you can make a business out of it.” Diane can be found at the Eustis Farmer’s Market every Thursday from 8 a.m. to 1:30 p.m. during the winter months and 8 a.m. to 12 p.m. this summer. She’s also occasionally at craft or garden exhibits. At the market, she gladly teaches how to make products with honey and wax such as salves, deodorant, lip balm, and other household remedies.

STATE ROAD 417/BOGGY CREEK ROAD INTERCHANGE
DRIVING SUCCESS The Central Florida Expressway Authority does more than just build roadways; it supports hiring local businesses and creating jobs that make a positive impact on the communities it serves. When the Central Florida Expressway Authority (CFX) needed a company to provide Florida’s first fabricated curved U-beams for the State Road 417/Boggy Creek Road interchange in Orlando, it looked to
Leesburg-based Dura-Stress to get the job done. The new fabricated beams used were the first in the state and only the second in the United States, an impressive feat for a local
company known nationally for its work. Lake County Commissioner Welton Cadwell, who was recently re-elected to serve another term as chairman of CFX, called DuraStress’ recent work aesthetically

and structurally innovative. However, Dura-Stress is no stranger to working with CFX; the precast concrete company has done so for many years on many important roadway projects throughout the Central Florida region. “We’ve worked on (State Road) 417, (State Road) 429, and (State Road) 408 over the years,” says Tim Morley, general manager at Dura-Stress. “We have a great working relationship with them and, in turn, they’ve helped create a lot of jobs within our company.” For example, the recent State Road 417/Boggy Creek Road interchange project created 40 full-time jobs for a year. Positions included everything from laborers to quality control to management. Morley explains when jobs like these are created, it benefits Lake County as a whole. “These workers then cash their checks here and then they

Both bridges will be part of another important CFX project that affects Lake County: the Wekiva Parkway (State Road 429). The estimated $1.6 billion tolled expressway will connect to State Road 417, essentially closing the space between U.S. Highway 441 and Interstate 4. A majority of the the Wekiva Parkway will be finished in 2019 with the remainder targeted for completion in 2021. Morley anticipates the project will yet again create nearly 40 full-time jobs for people in Lake County. “These multimillion-dollar projects put people right here in Lake County to work,” Morley
says. “There are very few local manufacturing jobs that offer decent pay; therefore, it’s important to have projects of this magnitude come our way.” Once the Wekiva Parkway is complete, it will not only stimulate business growth and bring new residents to Lake County, it will also create new job opportunities that will positively impact the county’s economy beyond the construction phase. “It’s a pretty big project that will have a truly amazing longrange effect on Lake County,” explains Cadwell. “It will give us the connectivity needed to help us with our future … We are prepared for growth, but we will also maintain what Lake County is. We will be a part of Metro Orlando without losing our identity.” With Chairman Cadwell at the helm, CFX proudly represents the vested transportation interests of Lake County and lends a voice to
the one feature that connects us all: roadways. It’s a source of pride for CFX, which has supported more than 12,000 local jobs and worked with nearly 600 local businesses. “We always want to bring jobs to the communities that matter to us,” says Cadwell. “We’ve become a great organization with great regional collaboration. We have a very dynamic Board where everyone serving brings so much to the table. Our hearts and heads are in the right place because before we do anything we consider how it will affect our customers and then our local businesses.” In looking to the future, Morley says Dura-Stress is excited to continue its relationship with CFX. “(CFX) does the best they can to use local companies, so it is our hope we’ll continue to have the opportunity to do projects with them, especially when the work is happening in our own backyard like the Wekiva Parkway.”

A brewery is coming to downtown Leesburg, and people couldn’t be more excited. The Great Chicago Fire Brewery & Tap Room will be going in the old Jewelry Works building on West Magnolia Street. Plans are to have the tap room up and operating early this month with the café and brewery following in July. As reported in Style in December, Chef Norman Van Aken is opening a restaurant in Mount Dora. 1921 by Norman Van Aken is set to open as soon as the major renovations to the historic building at 142 E. Fourth Ave. (formerly The Garden Tea Room) are completed. The restaurant is across the street from the Modernism Museum.

He won over the judges with a unique dish: coconutbattered rabbit in a cream and Sriracha sauce. This competition is part of a series in Lake County hosted by Chef Graham Ellis. Though Bob Evans Farms’ restaurant chain was chosen No. 1 for breakfast in a recent Market Force Information poll, they’re still sweating in the kitchen. Even with 548 locations, the company has been floundering for years. Last year, the breakfast menu was revamped, and this year, the company is focusing on lunch and dinner, as well as a new computer system and improved customer service. Hopefully, this will stop the decline in restaurants sales, which have been outdone by the prepared-food division.
CATFISH IN THE SOUTH (LAKE) Chef Matthew Condron is getting rave reviews for the newly opened Bubba’s Catfish House in Clermont. The young chef is a native, attended Le Cordon Bleu in Orlando, and was voted second best chef of the southeast region of the U.S. and Caribbean during competitions with Chaines des Rotisseur. Bubba’s catfish is locally sourced for optimal freshness and it’s all-you-can-eat every day! Bubba’s Catfish House is located at 1800 S. A ‘THYME’ TO NOURISH
Chef John Woods schools teens on the ABCs of cooking and baking at The Villages High School’s Culinary Arts Academy. STORY: SHEMIR WILES PHOTOS: FRED LOPEZ
The culinary arts academy at The Villages High School (TVHS) is a far cry from the home economics classes of yesteryear. Chef John Woods does more than just teach cooking and baking basics; he teaches life lessons that he hopes stay with students even after the last burner is shut off for the school year. “I know not every kid will go on to have a culinary career,” he says. “However, if I can teach them to cook at least five meals for themselves, that’s five less fast food meals. If they can just keep that passion and still cook, then I consider that kind of a win.” For nearly 13 years, Woods has served as the culinary arts instructor at TVHS; however, his career within The Villages didn’t start there. After working as a food service specialist in the U.S. Army, Woods landed his first job at the now-defunct Silver Lake Country Club at the age of 19. From there he worked his way up to becoming the executive chef of The Villages banquet department. Eager to gain a more formal culinary education and certification, Woods enrolled in Lake Tech’s American Culinary Federation (ACF) apprenticeship under Chef Ken Koenig. He
graduated from the apprenticeship program in July 1999 and within a year, was a certified chef de cuisine and later as a certified executive chef. However, to make the move from working chef to teaching chef, Woods credits a fleeting conversation with the late H. Gary Morse himself as the catalyst for making his dream into a reality. “I was working a party…and the people there were discussing plans for building the high school. So I walked up to Mr. Morse and asked if the school was going to have a culinary program and if it was, to put me on the list to teach it,” he says. “Back then everyone knew each other so it wasn’t a big deal for me to say something.” Nevertheless, his bold move proved to be the right one because when it came time to build the high school, not only was a culinary program created but Woods was tapped to be its instructor. He was able to give vital input on how the curriculum should be structured, even down to the design of the commercial size open kitchen.
TRAINING TOP CHEFS
Students interested in the culinary
arts academy have to wait until their junior year to sign up. It’s a two-year commitment with the first year tagged for learning the fundamentals. The juniors don’t even cook for the first nine weeks; instead, Woods focuses on giving his students a strong base of knowledge before entering the kitchen. From there, while working in small groups, the teens learn the physicalities of the job. “They don’t have to be experts,” Woods explains, “but they have to be proficient.” Senior year is more hands-on as students must operate the dining room business that funds the program. “In the beginning of the year we have a safety and sanitation review. Then we learn all the jobs in a restaurant and learn the business,” Woods says. Every week, students are assigned a job within the “restaurant.” From servers to sous chefs, they each have a responsibility that helps them gain real-world experience in a controlled environment. A lot of planning goes into the weekly menus, and after “action day,” there’s no rest for the weary. A tight schedule means preparation is constant, and jobs change weekly. New this school year to the culinary arts academy is the baking and pastry program. This is TVHS’ beta year for the program, and Woods says things have been going quite well. Sean Ratzman, an 18-year-old senior in the program, says his initial motivation for choosing the baking and pastry track was his love for sweets in the morning. But over time, Ratzman learned culinary arts isn’t just about the food. Though his dream is to become a firefighter, he knows he’s learning work skills that are priceless. “[Chef Woods] is a very interesting character; he’s one of the most remarkable teachers I’ve ever had, and I’ve been to three other high schools,” he says and laughs. “He’s taught me how to be responsible and how to

QUINOA SALAD
Ingredients: 1 pint campari or heirloom tomatoes (halved, sliced, or diced) 1 head broccoli (cut into florets and blanched) 1/4 cup olive oil 1/4 cup red wine vinegar Salt and pepper to taste 2 cloves garlic, minced 1 cup quinoa, uncooked 2 cups water or chicken stock 1/2 cup chopped fresh basil Salt and pepper to taste Directions: Rinse the quinoa well in a fine mesh sieve before using. In a medium saucepan, combine the quinoa and water or stock. Cook the quinoa according to the package directions, until tender and fluffy. Set aside. Place cooled quinoa in a mixing bowl. Add the tomatoes, broccoli, basil, olive oil, vinegar, salt, and pepper. Stir to combine, chill until ready to use.

He’s taught us how to work as a team, which is good practice for what I want to do in life.” Eighteen-year-old Kristen Roethlisberger has always loved to bake so choosing the baking and pastry program was a given. This year, she says she’s been able to learn several different techniques for desserts, and she’s grown more accustomed to baking with others as opposed to doing it alone. With tentative plans to continue her baking and pastry education in Switzerland, Roethlisberger says the TVHS program helped her discover new tricks and interests she never knew she had. “My favorite is to bake cakes and cupcakes, but now I’ve learned I really enjoy making macaroons,” she says. “They’re different and remind me of France.” Ultimately, Woods would like to have the program certified by the ACF, which would make TVHS the only high school in the U.S. with a dual accreditation in culinary arts and baking and pastry. “There are local technical centers and regional vocational schools with the dual accreditation but not any high schools that I’ve been able to find,” he says. “Gaining the accreditation won’t be easy, but if we accomplish it, it would be a big bragging point.” Meanwhile, Woods is looking for ways the baking and pastry program can generate its own funding, much like its culinary arts counterpart. He also would love to establish a culinary arts program for adults and maybe even publish a cookbook one day. Woods’ enthusiasm never wavers when it comes to talking about his students. Whether they chose a career in culinary or not, his greatest hope is his passion shines through with every interaction he has inside and outside the kitchen. “I always try to get better because if I’m challenged, I’m growing,” he says. “And that means I can be a better teacher.”
CREOLE MUSTARD AND LEMON PORK TENDERLOIN SKEWERS INGREDIENTS: 1 pound pork tenderloin, trimmed and cut into 1-inch cubes 1 red bell pepper, cut into 1-inch cubes 1 onion, cut into 1-inch cubes 1 pint mushrooms, cut in half MARINADE: 1/4 cup creole or Dijon mustard 1/4 cup olive oil Juice of one lemon Salt and pepper to taste DIRECTIONS: Toss pork and vegetable with marinade ingredients and allow to set one hour. Alternate vegetables and meat on large skewers and place on hot grill until desired doneness is reached. Serve hot on chilled quinoa salad.

As you’re traveling along State Road 44, you’ll probably notice Traditions Antique Mall off the side of the highway. It’s not only a delightful place to look for antiques and trinkets, it’s a great place to grab a good, freshly prepared meal. You go in through the main entrance and wander down the aisle to the stairs leading up to the café. There are antiques everywhere, but everything is beautifully presented and you’ll get a whiff of furniture polish as you move through. Upstairs is a beautiful dining area with polished wood dining tables and chairs. There’s plenty of seating for small and large groups. It’s decorated like a cherished dining room with one exception—you don’t often see

price tags on the pictures. However, it’s very nice if you see something that might look good in your dining room. They take reservations so it might be nice to let them know if you’re bringing a group.
My friend and I enjoyed a late lunch with only a few other people in the café. I have to say, this is the

perfect place for monthly outings that include shopping and lunch. I had received a recommendation for the sweet cranberry pecan chicken salad, and that’s what I ordered. I had mine on a bed of fresh greens with grape tomatoes, cucumbers, carrots, and croutons along with a warm roll and butter. You can also order it as a sandwich. The chicken salad is made on site, and there’s no skimping on the tasty ingredients. It has a slightly sweet flavor that’s so good with the white meat of the chicken breast. I had poppy seed dressing and it was the perfect complement. My companion ordered the turkey bacon melt with sweet potato fries. The grilled sandwich comes with your choice of American or Swiss cheese and a side of regular potato fries.
There’s only a small upcharge for sweet potato fries. The sandwich was warm and crunchy, and I can say the sweet potato fries were perfect as I enjoyed a couple of those myself. We couldn’t leave without dessert, so I picked the homemade German chocolate cupcake, and, going with a theme, my friend had sweet potato pie. Though most of the desserts are homemade, the pie was a sample from a vendor, and we gave it two thumbs up.

The constant flow of cars into the parking lot of Texas Roadhouse off U.S. Highway 27/441 in The Villages may not dwindle for some time. It’s not entirely due to eager first-timers either; wonderful service and lively surroundings make for many sure returns and soon-to-be regulars. For two people at dinner, the wait time was an entirely manageable 15 minutes. If waiting is a concern for you, they do offer a call-ahead service so part of your wait can be spent at home or at any of the shops across the way.
When our table was ready, a cheery host stopped at the window to get a fresh basket of sweet bread and showed us to a comfy booth, of which there is no shortage. People love Texas Roadhouse for different reasons. Maybe it’s the boisterous ambiance with its western backdrop and the bucket of peanuts and you can shuck shells where you please. It may be the staff line dancing to “Watermelon Crawl,” or the fact that your server has the lowdown on how to order the perfect steak. And it appears fact the entire staff just

seems to genuinely love their jobs. All of these things contribute to a full experience, which few other places can offer. However, my favorite is the sweet bread. Topped with a light glaze and served with cinnamon butter, it melts in your mouth. For me, it goes straight to my carb-loving soul! Though I had about four rolls to myself, when dinner came I made room. I ordered the Fort Worth rib eye cooked medium. This cut is for someone who enjoys the marbling of fat in the steak. For a leaner steak, choose the sirloin. The meat was neither over-seasoned nor overcooked. These steaks are never frozen and are cut in-house. This freshness is apparent in the taste. My combo came with a grilled shrimp skewer, Caesar salad, and a side. I chose the sweet potato. My server caught on to my sweet tooth after I demolished the cinnamon butter, and made it a candied sweet potato with perfectly charred marshmallows. My only regret about my experience at Texas Roadhouse was I had to leave, but at least I left with sweet bread.

Ice cold beer and tasty wings are what Sinbad’s Bar & Grill is known for in Tavares. Located on scenic Lake Eustis, the view itself is enough to make you want to fall in love with the modest waterfront hangout. On the evening a friend and I visited, the weather was temperate enough to sit in their screened-in dining area. Our server promptly asked us our drink order and gave us plenty of time to comb over the menu. I had my stomach already set on garlic butter wings while my companion decided to give the fried catfish fillets a try. In addition to my wings, I ordered a side of hush puppies, and for an appetizer, we requested breaded roasted garlic mushrooms as our dinner “vegetable.” As we waited for our appetizer, my friend and I took in the pleasant scenery and casual atmosphere. For a moment, I forgot I was at a restaurant as people came and went through the screen door that accesses the patio space. It feels more like you’re dining on someone’s back porch, which gives Sinbad’s a nice, homey ambiance. The mushrooms were, for me, the highlight of the visit. They were served hot with a delicious side of horseradish Tiger Sauce. Once they cooled

a bit, we were able to savor these delightful bite-sized morsels and enjoy their simple, deep-fried, earthy flavor. And I liked the horseradish dip so much I held on to it in case I needed it with my wings. Not too long after scarfing down the last ’shroom, our dinners arrived. My wings looked amazing, as did my friend’s catfish. Both dishes were too hot to handle so we gave it a few minutes before truly diving in. My wings were a good size and quite yummy; however, I did find myself wanting just a bit more garlic. I wasn’t too impressed with my blue cheese for dipping, so I broke out the horseradish, which gave the wings a nice flavor boost. My hush puppies were good and tasted great with the horseradish, as well. And as for the catfish, my friend said it was a fresh and fried just right. She also liked the fries and coleslaw that come as sides. Next time, I’ll have to try their coconut shrimp, which I hear are amazing, and the charbroil island grill where you can cook your own New York boneless strip or grouper fillet. If you decide to visit Sinbad’s, be sure to bring cash because they do not accept credit cards. However, if you forget, they do have an ATM on the premises. Good ol’ fashioned Southern hospitality and no-frills food make Sinbad’s a great place to enjoy good times and some of Lake County’s best views. Customers become family, and that’s how every restaurant should be.

WOMEN OF THE VINE Making wine has never been just a man’s world. Some of America’s first winemakers were women. And, it seems, once winemaking is in your blood, it’s hard to leave as three well-known women vintners who have had 30+ year careers will attest. STORY: MARY ANN DESANTIS
In 1886, Josephine Tychson established one of Napa Valley’s first wineries, Tychson Winery, on Route 29 in St. Helena, a prestigious address in the valley. She was a young bride whose husband committed suicide, and plans for a vineyard were too far along for her to give up and return to her native Philadelphia. Josephine had a penchant for business and she embraced the role of supervisor, making decisions and working with her foreman to assemble a new wine cellar—one that could hold 20,000 to 30,000 gallons of wine, very impressive for the time. She made

Zinfandel, Riesling, and Burgundy and was the only woman listed in the 1889-90 Napa-Sonoma County Directory as a fruit grower/winemaker. Tychson Winery was sold several times before becoming Freemark Abbey, the winery on the same site today. The foundation that Josephine laid not only influenced the current owners, but many women who chose to follow her footsteps through the vineyards.

Kristen Belair doesn’t believe that
women as winemakers are really a news flash any longer—at least not in Napa Valley where 14 percent of the winemakers are females. I was able to spend an afternoon with Kristin learning more about what she does at Honig Winery, a small, family owned operation that focuses exclusively on hand-
crafted Sauvignon Blanc and Cabernet Sauvignon. She has numerous winemaking awards and, lucky for me, unlimited patience when it came to teaching a novice how to prune a grape vine. That patience reveals itself in her ability to create award-winning, nationally recognized wines reminiscent of those from France’s Loire Valley. Armed with an enology degree from UC-Davis, Kristin began her career as an intern with Trefethen Winery in 1981. She did everything from driving a forklift to cleaning tanks while learning about small winery operations. Her first full-time winemaking position came in 1985 at Johnson-Turnbull, and she joined Honig in 1998 as the winemaker. “What is most satisfying is knowing I play a part in creating something that people are enjoying in many different settings, with family and friends,” Kristin says. “Wine has an extraordinary way of connecting people, places and experiences.”

embarked on a 33-year career. She is now the vice president and director of Winemaking Operations at Florida’s largest winery, and her job encompasses not only winemaking but also research on hybrid grapes. “My family was in the business, and making wine was always intriguing to me,” she says. Winemaking was indeed in her blood—her father was an amateur winemaker who opened a small winery in the Florida Panhandle, near where Jeanne grew up. Although she received a degree in physical education from Florida State University, the call of the vineyards was too strong to resist. She returned to school to study viticulture and enology at Mississippi State University. She’s seen a lot of changes in the field over the years, but the most exciting one is how the public embraces wines from places other than California. “I think the level of acceptance, not only of Florida wines, but also of regional wines has been phenomenal,” Jeanne says. “People are much more willing to try different wines.” A petite and energetic woman, Jeanne constantly moves between the laboratory, the filtering and bottling areas, and her office where she keeps a collection of vintage wine bottles. She is well-known in the industry for her dedication to cultivating hybrid grapes into award-winning wines. At last count, Lakeridge has won 772 awards in wine tasting competitions.

Diploma of Enology in 1974, guided winemaking operations. Geneviève moved to Napa Valley in 1978 where she recognized her winemaker father’s holistic approach to quality was shared by the legendary Robert Mondavi. She began as a lab enologist at the Mondavi Winery in 1978. She held other positions and took time to explore California’s winemaking regions before becoming director of winemaking at Mondavi in 1997. Three years later, she helped implement the To Kalon Project, the winery’s first major renovation since it was founded in 1966. As a mentor, Mondavi pushed her “to make the very best wines possible.” Her goal continues to be making approachable, fruit-forward wines that complement food.

GROWING PAINS I dislike goodbyes, especially when it means something good is finished. But in my nearly 30 years of living, I’ve come to realize farewells don’t always have to be a bad thing. As a young businesswoman who wants an incredible career to look back on in my old age, I recognize it’s important to say goodbye to things you love and embrace things that will help you grow. Therefore, with an extremely heavy but optimistic heart, I say goodbye to the workplace I’ve called home for so many eventful and memorable years. Walking away from Akers is one of the hardest decisions I’ve had to make. Not only are the people I work with incredible at what they do, they’re passionate and fun to be around. After all, Akers taught me about the essentials in life, like three o’clock snack time, and gifted me with some amazing memories, like the time everyone freaked out because they thought I was missing even though it was on the company calendar that I was at an interview in Tavares. It’s a blessing when you can wake up every day truly excited about your job— and your coworkers. Even during trying moments, I never lost my love for the magazines or the people I’ve come to admire. But I’m a naturally curious soul who likes to learn new

things, and my dreams are always evolving. So when I was recently offered a job with a public relations firm, I knew I had to jump at the opportunity, even though my heart sank knowing it meant goodbye to Akers. As a young woman in the ever-changing business world, you sometimes have to push yourselves past your comfort zone to grow. It’s never good to become too comfortable because you can’t shatter glass ceilings by just looking at them. And even though I harbor my own set of insecurities and anxieties, I realize my fear of the “what-ifs” are more powerful than any selfdoubt. If I fail, at least I can say I tried; there’s no shame in reaching for the stars and falling a little bit short. Heck, some people never even think they can touch them. Being young and careerminded, you sometimes have to be courageous enough to take an impromptu detour. Leaving behind something I know I’m great at to pursue something I’m slightly unsure about is scary, but someone I think quite highly of once told me to “find joy in the journey.” I found so much joy at Akers, and that’s why it will always be a special place to me. However, life is indeed a journey and I have to see what’s next, even if it means the occasional sad and hard goodbye.
