ou have seen my byline many times and now you get to see me. (Sorry about that…) Kendra thought it might be nice if you heard from a man, considering this is our men’s issue. Well, here I am with my Y chromosome and all the baggage that comes with it. And, yes, this issue is all man — but the women will love it — because everybody loves baseball, gun-toting cowboys on horses, and businessmen in really nice suits. Did you know that you can see some of the best baseball talent in Central Florida at Pat Thomas Stadium in downtown Leesburg — for free? That’s right, all you have to pay for… at reasonable prices of course… are the hot dogs, popcorn, and soft drinks. What better way to spend a beautiful summer afternoon than watching baseball with family and friends. Is this Heaven? No John, it’s Leesburg, but it sure looks like Heaven doesn’t it? Mamas let your babies grow up to be cowboys… because they are all straight shooters. And when it comes to straight shooters, Eric Anderson is the straightest around. James Combs tracked this desperado down in the backwoods of Sumter County (my stomping grounds) and has written an explosive story detailing just what makes him so good with a six-shooter — or any gun for that matter.

For the past 23 years, Kids’ College has been offered to small scholars at Lake Sumter Community College’s Leesburg campus. This summer program is for students ranging from second to ninth grades and offers a range of classes — from academic and sports to performing arts and crafts. Students can sign up for six two-week sessions with half-day and full-day offerings. Volunteer opportunities are available for high school sophomores, juniors, and seniors. Sighting In April, Mickey Mouse made an appearance in Lake County. Mickey was here with a prize patrol and special awards for students Ava Deleon of Pine Ridge Elementary School, Emilie Palmer of Lake Montessori Learning Institute, and Joseph Caggiano of Mount Dora High School, who were chosen as “2012 Disney Dreamer and Doer Shining Stars.” These Lake County students were selected along with 400 other applicants for serving as role models in their
schools, their homes, and their communities. A panel of judges then chose the final 18 students from elementary, middle, and high schools in Orange, Osceola, Seminole, Lake, and Polk counties and commended them for outstanding community service, character, and caring spirits. The students received annual theme park tickets to Walt Disney World for themselves and immediate family, a gold medallion, and an invitation to attend the Kids and Nature Celebration.

PR BLEMS WITH YOUR PROSTATE? Does this sound familiar? As you grow older do you realize you are getting up more often at night to urinate? Have you come to accept this as an inevitable part of aging as did your father or his father before him?
“Men no longer need to suffer from frequent urination because they are getting older,” says Dr. James Young, a down-to-earth urologist with 29 years of experience at Urology Associates of Lake County in Eustis. Although the cause of these symptoms is most likely an enlarging prostate (BPH), a normal part of the aging process in men, treatment options are more numerous and less invasive than those offered to our fathers and grandfathers. Years ago there were two options for treating an enlarged prostate… surgical excision via an open operation (knife) or much more commonly by performing a transurethral resection of the prostate (TURP), commonly referred to as a “rotorooter” by patients and physicians. Both required hospitalization as well as major anesthesia and could be fraught with complications such as bleeding, infection, loss of bladder control and even death. “In my career I have performed over 3,000 TURPs; however, I no longer perform any” says Dr. Young. “There are presently too many excellent alternatives to consider a hospital operation for the vast majority of patients with BPH.” “When I see a new patient I perform a physical examination and properly evaluate the patient’s symptoms, thus diagnosing the underlying problem(s),” he says. “Next I describe to the patient what’s normal and then explain what is abnormal with him. Lastly I teach him his treatment options. If I’ve done a good job of teaching, he will select the correct option for himself.” While prescribing medications for BPH can be done by primary care physicians, only urologists are trained to thoroughly evaluate the bladder and prostate
(including ruling out prostate cancer) as well as providing extremely effective minimally invasive office-based therapies as alternatives to lifelong medical therapy. One such option is Prostiva-RF Therapy, a procedure performed by Dr. Young in his office under local anesthesia that usually takes less than 30 minutes. Prostiva utilizes low level radiofrequency energy to ablate (destroy) the obstructing component of the enlarged prostate. “I am very happy with the results I have achieved for my patients using Prostiva-RF Therapy” says Dr. Young, who has successfully treated more than 900 patients with this procedure. “Medtronic is a $13 billion a year publicly traded corporation that perfected the technology for Prostiva and produces the necessary hardware. Recently Medtronic produced an educational DVD for international distribution to inform patients and physicians worldwide regarding the benefits of Prostiva therapy. Seven of the eight patients featured on the DVD are my patients. I am very proud Medtronic selected my practice to feature the benefits of Prostiva-RF Therapy. However it is sort of a bad news/good news thing. The bad news is neither my patients nor myself received a penny for our participation. The good news is Medtronic gave us all the DVD’s we want, so if anyone wants one all he needs to do is drop by my office at 801 Northshore Drive in Eustis and we will give him one!” And with an office staff with nearly as much experience as the doctor, (many have worked with Dr. Young more than 20 years) you don’t spend a great deal of time waiting to see him. “We pride ourselves in being timely in seeing our patients’. We respect our patient’s time

as much as we do our own,” adds Dr. Young. “Patients appreciate this; many of our patients tell me I have the best office staff on the planet. KEVCO BUILDERS Imagine purchasing a remodeling company just before the country heads into a severe economic downturn. That’s the challenge Joe Ziler faced when he bought Kevco Builders five years ago. Between the collapse of the real estate market and the ongoing recession, the residential remodeling industry has been hit rather hard. Because homeowners have been forced to save money rather than spend it on large home projects, many remodeling companies have permanently closed their doors. Kevco did not succumb to a similar fate. As a matter of fact, the company is stronger than ever despite the economic downturn. One reason is because Ziler and his team never wavered from the superior service and unsurpassed attention to detail the company has delivered for 32 years. He also diversified the business by adding a homebuilding division last October, and now he works with insurance companies to provide fast, reliable service in claims dealing with storm and fire damage. Kevco’s homebuilding division made an instant splash at the 2012 Home Builders Association of Lake County’s Parade of Homes. The company’s first home constructed in Tavares received the “Best
in Value Merit Award” as well as “Best in Class.” In addition, Kevco won an additional award at the Parade of Homes Remodelers Showcase. “I feel very humbled that our company did so well,” Ziler says. “We competed against national homebuilders so I really did not expect to win. I give a lot of credit to my wife, Missy. Her encouragement, support, and advice were instrumental in getting me to push through the hard times as well as keeping me grounded through the good times.” Ziler has worked in homebuilding for 22 years, including a seven-year stint with Jim Walter Homes. His experience and passion, combined with his heart for making the dream of home ownership come true for families, is what drives him to succeed in the industry. “Homebuilding is one of the few industries where in 10 years or 50 years you can drive down the road and say, ‘Look, I built that.’ Housing is a people business and not a money business,” he says. “When you take the right approach, money takes care of itself. On the remodeling side, I love taking something older and making it into something new. With remodeling, we are taking something that somebody doesn’t like and updating and turning it into something the homeowner loves.”

Ziler is quick to credit Kevco’s success to his dedicated team of employees. There’s nothing like the starstruck faces and excited chatter of children as they watch their heroes take the field, fans erupting in loud cheers and giving high-fives as a player belts one out of the park, or the smell of hot dogs and popcorn wafting from the concession stands. No, we’re not talking about Wrigley Field in Chicago or Fenway Park in Boston. This is the scene that plays out every summer at Pat Thomas Stadium in Leesburg, where America’s pastime is alive and well. Fans who attend a Leesburg Lightning game enjoy a nostalgic trip down memory lane to the good old days of baseball in its purest form. They watch as players play for the love of the game rather than multimillion dollar contracts. Since the Lightning formed in 2007, the community has stepped up to the plate and showered the team with an outpouring of support. The atmosphere on game day is electric, and the passion and fan following is unrivaled. Fans show up several hours early and deliver baked goods to players in the dugout. Children and adults alike enthusiastically sing “YMCA” and spell out the letters with their arms. Dozens of volunteers brave the summer heat to man the concession stand, sell Lightning memorabilia, walk up and down the stands selling raffle tickets, or perform upkeep on the field so it is in tip-top shape on game day. On average, more than 1,000 fans packed Pat Thomas Stadium for each home game during the 2011 season. That’s twice as many as the other five Florida Collegiate Summer League (FCSL) teams averaged for their home games. More impressively, that support extends well beyond Pat Thomas Stadium. The FCSL is a woodbat league that allows collegiate baseball players from around the country to continue playing during the summer and polish their skills against high-caliber competition. During the nine-week season, host

HOME AWAY FROM HOME Bill and Mindy Mathias of Mount Dora have hosted Lightning players for five summers. At first, they were understandably reluctant to allow a stranger into their home. However, those concerns were quickly alleviated when Florida Atlantic outfielder Mario Duarte first pulled into their driveway in 2007. He wasn’t a stranger for long. “I remember being outside with my son, John, and we were throwing the baseball around,” says Bill, who owns Mathias Foodservice Equipment Company in Leesburg.

“Mario got out of his vehicle and began throwing the baseball with John before he ever stepped foot into our home. He was the first player we hosted and he instantly became family. They all become family.” The Mathias family has grown exponentially larger throughout the years, as they’ve hosted other players such as shortstop Mark Stewart, Jr., right fielder Evan Taylor, pitcher Garrett Bush, first baseman Will Leonard, third baseman Nick Smelser, and pitcher Mike Clutterbuck. They also open their home to players’ parents who roll into town to attend a Lightning game. Bill and Mindy offer their guests much more than a place to eat, sleep, and do laundry. The first night a player or players arrive at their home, they treat them to dinner at Vic’s Embers in Leesburg. They take
them back to the restaurant the night before they leave. On days when the team is idle, they enjoy a day out on the boat together waterskiing and wakeboarding. Talk about good, old-fashioned hospitality! In reality, though, it’s the Mathiases who are benefiting. “As a host family, we get so much more out of it than we give,” Bill says. “Today’s youth receives so much bad press, yet every player I’ve hosted is a goal-driven, All-American kid. I’d be proud to have each of them as a son.” That’s not just lip service. This summer, Bill and Mindy will be vacationing in Spain and Italy. Yet, the couple is allowing Mike Clutterbuck and one of his teammates to stay in their home while they are away. “We hosted Mike last summer and he is a great kid,” Bill says. “I have no qualms whatsoever about letting him stay at my home.” The Mathiases remain in contact with the players primarily through Facebook. In 2011, Bill, Mindy, and

John attended a University of South Florida (USF) football game with Mario, who is currently employed by the USF athletic department. Being a host family is equally enjoyable for Bruce Ericson, director of parks and recreation for the City of Leesburg and general manager of the Leesburg Lightning. He has hosted Lightning players for four years. For him, it’s a trip down memory lane. As a player for the Minnesota Twins organization in 1971, he spent one year living with a host family. “I think back on my experience and do everything I can to make this an enjoyable summer for the players I host,” he says. “I want them to have a wonderful time in Leesburg
so they’ll return to their colleges and tell their teammates how great it is here. We have 10 returning players from the 2011 team, and I think that speaks for itself.” The average fan knows these players only as sluggers or ace pitchers. Bruce enjoys knowing them on a personal level. “Their parents will come down and watch a few games so you get to know them. And their girlfriends will visit so you get to know them, too. The players I’ve hosted during the past four years have all been very well-mannered. During down time, they enjoy playing video games, communicating with their friends back home, or going to the local gym and working out.”
Like the Mathias family, Bruce communicates with former players via Facebook. He also follows the careers of former Lightning stars Alan Oaks, a minor league player with the Florida Marlins, and Chris Berset, a minor league player with the Cincinnati Reds. Typically, 12 host families are needed each season. It’s safe to say they treat their guests well, evidenced by the fact some former Lightning players now call Lake County home. Among them are Nick DelGuidice, who is coaching in the Clermont Little League, and Jonathan Bolt, an assistant baseball coach at Eustis High School.

FAN-ATICS Leesburg attorney Chuck Johnson serves as the team’s public address announcer and is widely known as “Voice of the Lightning.” One of his favorite memories at Pat Thomas Field occurred before the Lightning came into existence. In 2006, Florida Collegiate Summer League president Sarah Whiting met with leaders in Lake County about the possibility of forming a FCSL team in Leesburg. Realizing how much the community embraced baseball, local leaders pitched the idea of allowing Leesburg to host a FCSL game. On July 4, 2006, the regularseason game between the now defunct Altamonte Springs Snappers and Winter Park Diamond Dawgs was moved to Pat Thomas Stadium. “That day was a great day in history,” Johnson says. “We wanted to show members of the FCSL what we could do here in
Leesburg. We marketed the event to the community and on game day you couldn’t fit one more person in the stands. That had never been done at any other FCSL venue. The game preceded the fireworks show at Venetian Gardens. It was a spectacular all-around event.” FCSL commissioners were impressed, and one year later the Leesburg Lightning fielded its first team. Since then, the Lightning has struck fast and furious, becoming the league’s first team to capture two championships, the latest in 2009 under former coach and major league pitcher Frank Viola. While watching championshipcaliber teams is fun, fans are guaranteed to enjoy more entertainment than they bargained for simply because the games are free (a donation hat is passed through the stands to raise money for the team). Several traditions have emerged at Lightning games that
make the environment even more special. In-between innings, fans can participate in the dizzy bat race, attempt to be the best in the stadium at throwing a rubber chicken into a basket, and watch as children (affectionately called the “Lightning Bugs”) race around the bases. Then there’s the Fourth of July tradition where fans gather in the infield following the baseball game and watch as fireworks illuminate the night sky over Venetian Gardens. “We have succeeded in creating an outstanding family environment,” Johnson says. “We do not sell alcohol at the games. That translates into a safe environment where families can bring children and they too can enjoy the ballpark.” As public address announcer, Johnson does more than introduce starting lineups or inform fans which player caught a pop fly. He is the man with the booming voice whose passion is evident every time

he takes his seat in the announcer’s booth. His colorful and entertaining style adds even more excitement to the games. Once, he allowed a man to use the public address system to propose to his girlfriend. And he routinely sings “Happy Birthday” to fans and players who are celebrating that special day. “As long as it’s in good taste, I do things to raise the level of entertainment,” he says. “I also make sure the crowd becomes the tenth player. If you are a visitor, Pat Thomas Field is a tough place to play. The Lightning players are in awe of how crowded the stands are. I’ve heard some say they don’t see crowds as large or loud at their college stadiums.”

MEET THE PLAYERS The Leesburg Lightning will hold its first practice at Pat Thomas Stadium on June 5. At 6p.m., the public is invited to attend a meet-and-greet event, where they’ll have an opportunity to talk with Lightning players. Outback Steakhouse is catering the event.
BASEBALL OF YESTERYEAR For fans, watching players play for the love of the game brings them back to a simpler time when baseball shone its brightest. “Attending a Lightning game is like traveling back in time,” Johnson says. “For just a couple hours a night, you can sit back and not have to worry about healthcare, gasoline prices, two wars, and whether Congress is doing the right thing. You just become lost in the moment.” Johnson’s enthusiasm is shared by his longtime friend Jack Meier, a Leesburg resident who serves as the Lightning’s team statistician and scoreboard operator. Meier recently created a Lightning Hotline (352.435.9450) as a source for fans to check the latest weather updates. “The community’s interest in the team is unbelievable,” Meier says. “We’ll get 300 to 400 fans showing up just to watch the team practice, and when we play road games we often have more fans in the stands than the home team. ERIC ANDERSON ANXIOUSLY AWAITS HIS OPPORTUNITY to perform at the 2012 Florida State Cowboy Mounted Shooting Championship. Donning a brown cowboy hat, long-sleeved western shirt, shiny belt buckle, and boots, the veteran gunslinger leads his Paint Horse, Lightning, into the ring at the Lady Lake Equestrian Center. He carefully surveys the targets, which are red balloons strategically situated throughout the course. As Lightning begins running, dust stirs up behind his thundering hooves. Eric draws his .45-caliber Ruger Vaquero and aims at a balloon.
Bang! One balloon pops. The smell of gunpowder fills the air. He and Lightning weave in and out of traffic cones — similar to barrel racing — to another set of balloons that are placed atop poles. He aims his weapon again. Bang! Bang! Two more balloons burst. Before you can blink an eye, the competition is over. He completes the course in 16 seconds. Ten shots taken. Ten balloons eliminated. In the world of cowboy mounted shooting that is known as a clean run. A landfill supervisor in Astatula by day, Eric spends many weekends atop Lightning showing why he’s one of the sport’s quickest guns and steadiest hands.
Born to shoot Eric, a down-to-earth cowboy from Webster and eight-year Marine Corps veteran, makes using a firearm look easy. The skilled marksman has spent a lifetime mastering the fundamentals of shooting. He was first exposed to guns as a 5-yearold boy visiting his grandmother in Anacortes, Washington. And no, he wasn’t using a Red Ryder BB gun. “My grandmother owned a private beach on the Puget Sound,” he says. “We used to sit cans out at the edge of a bluff and hold shooting competitions with .22-caliber rifles. This is how our family had fun together, and I was always so excited to be able to fire a gun. Whenever my father or grandfather gave me pointers, I listened to everything they said because I wanted to win the competition. When you won you were the man!”

He has been fired up about shooting ever since, serving as a firearms instructor for the United States Marine Corps and becoming a national champion in the world of cowboy mounted shooting. “I love shooting sports because it’s all you,” he says in a deep, confident voice. “There are no excuses. You use proper fundamentals, tune out everything around you, and focus on the target in front of you. It’s very personal.” In 2011, Eric’s shooting prowess became a little less personal when he appeared on Top Shot 2, which aired on The History Channel from February 8 through April 26. He was one of 16 contestants who took aim at the coveted title of “Top Shot” and the $100,000 grand prize. Although he was eliminated in the season’s fifth episode, the memories he created and the friendships he forged will last lifetime. “This was a bucket list thing for me,” he says.
Taking aim Top Shot Season 1 became an instant hit when it debuted June 2010. The show pits 16 civilian, law enforcement, and military shooters in competitions using a variety of historic and modern weapons: rifles, shotguns, handguns, bows, knives, and hatchets. One by one, contestants are eliminated until one remains. Denny Chapman, a cowboy mounted shooter from Ocala who appeared in Top Shot’s inaugural season, encouraged Eric to vie for a spot on the show. Eric’s exten-
sive and impressive firearms background made him an ideal candidate. He has served as a marksmanship instructor in the Marine Corps, earned the title of Florida Police Academy “Top Shooter,” and is currently a certified hunting safety instructor for the Florida Fish and Wildlife Conservation Commission. He has also become national champion in the Cowboy Mounted Shooting Association’s (CMSA) Men’s Class 4 division as well as champion of the Florida State Single Action Shooting Society. After making the initial cut, Eric spent a week in California for final casting. There, he underwent a drug-screening urinalysis, two psychological evaluations, and three interviews— the final one with producers of Pilgrim Films, the largest reality television production company in Los Angeles. Making an impression during the interview session is very important, Eric says, because producers seek contestants who not only possess superb marksmanship skills but can also adapt to pressure-packed situations and communicate effectively. “I remember sitting around a table with five bigwigs and I’m in the middle with a spotlight and camera on me. They poke and prod and try to make you happy then sad. They want to find out how you are going to handle yourself in front of a camera. From the standpoint of building a television show, producers need contestants who can put sentences together and be able to articulate and communicate. The entire process was rigorous, every
bit as rigorous as my entrance into the Marine Corps.” One week later, Eric received the good news that he made the show. Producers began filming Top Shot 2 in October 2010 and wrapped up production in November. The show is filmed in the hills of Santa Clarita, California, located about 90 minutes north of Los Angeles.
More than meets the eye In each episode of Top Shot, viewers see the marksmen participate in a team practice, team competition, and an elimination round. However, few have any real idea what goes on behind the scenes. “From the time you opened your eyes in the morning to the time you went to sleep at night, you were wearing a microphone,” he says. “There was somebody listening to everything going on. If two contestants are in one part of the house and begin having a conversation about Top Shot or another contestant who isn’t around, a cameraman would instantly show up. Other times we’d be sitting at a table and see a cameraman dart to another part of the house. They are going there because somebody is talking about something that the producers feel is newsworthy. There are cameras all over the house. Nothing goes on or is said that the producers don’t know about.” During downtime, the marksmen staved off boredom by “clowning around.” There were no television sets or reading materials inside the ranch, and contestants were not allowed to call their loved ones. “When you put 16 Type A personalities together in the same house, there is going to be some craziness. We threw bean bags at each other and had little wars going on all the time. After I was eliminated the guys shot each other with Nerf guns. You have no contact with the outside world the entire time you are on the show. That’s the thing
that weighs on your mind the most. I constantly wondered whether my wife, children, and horses were okay.” Eric’s sense of humor emerges as he jokingly offers advice to future contestants. “I’d buy an untraceable TracFone, tape it to the underside of the toilet, and call your family at 3a.m. That way you can make sure everything is fine back home.” While he missed his family immensely, the proud Marine took comfort in being sequestered with other military servicemen. Of the 16 contestants on Top Shot 2, eight served in the military and four were fellow Marines. “The civilian contestants were able to see what military camaraderie is all about,” he says. “The fourth day I gave the producers money and told them to buy an American flag. I had our three active duty military shooters put the flag up on the bulkhead and we recited the Pledge of Allegiance and said a prayer each night. Most of the shooters on the show are squared away and possess qualities found in other shooters I’ve met throughout the years — namely honor, respect, integrity, and humility.” Eric exhibited those traits in the episode when he was eliminated. He felt he performed poorly in a team competition called “Quickfire Face-Off.” Rather than shun responsibility or attempt to weasel his way out of a bad situation, Eric owned up and asked his teammates to nominate him for elimination. He ultimately lost to Navy rescue swimmer Jamie Franks in the elimination round, where he fired a RazorCat race gun for the first time. “I wasn’t satisfied with my performance in the previous team challenge either, so I felt like I needed to
prove myself,” he explains. “I told my Marine teammates to shoot my target at the nomination range. They listened to me because that’s the way Marines roll.” While he didn’t win the money or the coveted title of “Top Shot,” Eric came away with something very valuable: lifelong friendships. He remains close to several of the contestants. “In the very beginning, the owner of Pilgrim Films told us we’re competing for $100,000. He said none of us would become friends because we’re competitors and also that it takes five years to become friends,” Eric says. “That’s obviously untrue. The contestants on Top Shot wake up together; eat breakfast, lunch, and dinner together; shoot together; compete together; and goof off together. We had more than enough time to become friends. We’re talking about people who share the same personality types, the same interests, and think like one another. How hard is it going to be to become friends?”
Battle from the saddle During his appearance on Top Shot, Eric put his marksmanship skills to the test in unusual ways. In one challenge, he fired a M1911 pistol at billiard balls set up on a special course at distances of 25 to 50 feet. Another contest saw him using a compound bow to shoot an arrow into a curved tube 35 feet down range. After leaving the show, Eric returned to Webster and saddled up for a much more familiar type of shooting competition: cowboy mounted shooting. In this sport, competitors dress in period clothes

from the Old West and ride horses around a course of balloons that are mounted on poles. They must shoot the balloons as they go by and attempt to beat the times of other competitors. Riders use two .45-caliber pistols that are each loaded with five black powder blank cartridges. Think of it as something you’d expect to see in an old Wild West show — where shooting from atop a galloping horse looks easy. Not so fast there, pardner. “It’s not easy,” Eric says. “You have to be able to ride your horse and concentrate on shooting. Doing both of those things independently takes your full concentration. You have to understand a horse’s gait, the mechanics of a horse, and how to get your horse to move with you. When you are shooting, your body mechanics are different from when you are just riding. And your horse has to become desensitized to gunfire. So the best thing you can do is practice, practice, practice.” For Eric, this sport comes naturally because it combines two disciplines near and dear to his heart: marksmanship and horsemanship. Eric has ridden horses for most of his adult life and formerly competed in team penning competitions. In 2004, fellow horse enthusiasts talked him into giving cowboy mounted shooting a try. He immediately fell in love. “The first time I tried cowboy mounted shooting I thought it was the greatest thing ever. You are riding a horse and you are shooting. Are you kidding me? I also liked the fact that in mounted shooting there is only one person who can screw things up — you. You run the horse and you shoot. It’s your brain and the horse’s brain working together as a team. In team penning, there are two other humans, two other horses, and 30 cows that can screw things up for you.” Since then, he has competed in cowboy mounted shooting com-

petitions throughout the country — from Tombstone, Arizona to Tunica, Mississippi and everywhere in-between. His wife, Sharyl, also shares a love for the sport and has won the titles of Florida State Champion and Georgia State Champion. The couple is equally skilled in horse-riding events such as jumping, barrel racing, dressage, and trail obstacles. They competed at the 2009 and 2010 Florida Police and Fire Games held at St. Lucie Fairgrounds and captured various gold, silver, and bronze medals. “We ask our horses to shoot on one weekend and the next weekend we’re asking them do to obstacles,” he says. “One week I am scolding my horse because he knocked a barrel over and the next week I ask him to knock a whole pile of them over. The diversity to get the horse to understand what I want is a chore. There’s so much that goes into riding you don’t see behind the scenes. Again, it takes hours of practice.” Three years ago, the Andersons decided to share their love of horses and guns by opening Xtreme Horsemanship. They use their 52-acre property in Webster as a training ground where horse owners and their horses can learn to work together as a cohesive unit. They hold monthly clinics in obstacle course training and mounted shooting. They’ve also trained the Lake County Sheriff’s Office Mounted Posse, which later won two championships in mounted police obstacle competitions. “For Sharyl and me, it’s a lot of fun to share our passion with others,” Eric says. Eric plans to continue saddling up for future cowboy mounted shooting competitions. With his passion for shooting and riding horses, there’s little doubt he will continue making a big bang in the sport.

You also don’t have any recoil, which allows you to concentrate on the fundamentals of marksmanship. You can breathe, relax, aim, squeeze, and follow-through, and all of that is fluent.”

Dr. Qamar played an active role in creating the atmosphere of his new building, which is warmly decorated in blue and green hues. also where they would feel comfortable, as if they were in their own homes. The sterility of a clinical hospital setting is nowhere to be found at ICE. Instead, art-lined walls and cozy waiting rooms are the norm. Each exam room features its own television, and every recovery room is designed so visitors and family members remain comfortable while their loved one recovers from a procedure. A concierge service is available, so those from out of town don’t have to worry about finding a restaurant. Patients and loved ones
will be provided with everything from a simple snack to a full meal in the cath lab. Dr. Qamar feels that patients who are relaxed and comfortable recover from a procedure quicker and with better success. Today, his practice boasts a team of nine board-certified, fellowshiptrained cardiologists who share his passion and enthusiasm in the diagnosis and treatment of cardiovascular and peripheral vascular care. The level of services offered by these highly skilled cardiologists are second to none. For starters, the practice offers same-day cardiac consultation for patients experiencing chest pain, shortness of breath, and/or palpitations. intervention, the better chance there is of preserving healthy heart muscle. Another service offered by Florida Heart and Vascular Center is EECP, which is an alternative to traditional bypass surgery and angioplasty. The goal of this non-invasive procedure is to allow the heart to grow its own bypasses. Blood is gently massaged out of the legs and back to the heart, thereby encouraging the growth of new collateral blood vessels where blood flows around the coronary artery blockages. One of Florida Heart and Vascular Center’s crowning achievements occurred in December 2003. That’s when Dr. Lew unveiled a new three-story expansion building complete with two state-of-the art cardiac catheterization labs and 11 private patient rooms, each equipped with a television and recliner. The cath labs allow the team of cardiologists to produce high-quality images of the heart and identify lesions, blockages, clots, and other abnormalities. The cath lab is also where several minimally invasive treatment options are performed on patients with cardiovascular or peripheral arterial disease. One of those procedures is angioplasty, which involves inflating a balloon-tipped tube at the site of the blocked artery to compress the plaque and
widen the artery. Other patients are treated with a stent, a small metal-mesh tube that is placed at the blocked site and props the artery open, maintaining adequate blood flow. Some patients are treated with atherectomy, which removes plaque deposits in patients whose arteries are heavily calcified. “When we opened the cath lab that year, we went to the next level with our commitment to cardiology services in Lake County,” Dr. Lew says. “That expansion represented our promise to Lake County residents to provide exceptional healthcare in Lake County for many years to come. To this day, patients are very appreciative of having their own private rooms before and after a procedure. This helps minimize any stress they may be experiencing.” Other services offered by Florida Heart and Vascular Center include, but are not limited to, computed tomography (CT) scanning, cardiac rehab, vascular ultrasound, nuclear stress testing, and nerve conduction studies. The practice also features a Coumadin clinic, a sleep study lab, and a pacemaker clinic. No doubt, Dr. Lew and his team offer patients a multitude of resources and procedures to effectively treat even the most complex cardiovascular conditions. Of course, with new drugs and technologies, Dr. Lew realized that it was no longer possible for an independent practice to provide everything his patients require for optimal health. Oyster Troff Sitting at the oyster bar inside The Oyster Troff, I can barely believe my eyes. Lightly steamed oysters continue piling up in front of me as manager Chris Clark shucks one after another with a great deal of speed and skill. The fresh oysters glisten in their shells, begging me to devour them. I take my small fork and detach the plump oyster from its shell. As I lift it toward my mouth, the smell of the ocean comes alive. I feel the soft, creamy texture on my tongue, and the sweet and sea-like flavor bursts forward as I begin to chew. I’m impressed with the succulent taste of these moist and tender oysters. As I consume one, I slide the empty shell over the counter into a trough. Fortunately, my manners are intact because that’s perfectly acceptable here. Then I become creative. I begin putting the oysters on crackers and sprinkling them with a dab of fresh horseradish, hot sauce, butter, and cocktail sauce — an interesting combination of hot that my taste buds were craving on this particular day. It’s quickly down the hatch and on to another. An admitted oyster novice, I quickly learn one thing: oysters are like potato chips and cookies because you cannot have just one. Anyone who frequents The Oyster Troff will agree with me. As a matter of fact, the restaurant serves anywhere from 4,500 to 7,200 pounds of oysters each week, depending on the season. And just like steak, you can order your oysters rare, medium, or well-done. The Eustis-based restaurant, which is celebrating its 15th anniversary this month, is owned by Chet and Cindi Pando. Their children, Chris Clark, Brian Clark, and Stephanie Pando, also work at the restaurant full-time. The 151-seat restaurant features three oyster bar rooms where guests can enjoy conversations with friends and strangers, play a round of darts, shoot a game of pool, or allow children to play on the Nintendo Wii. Oyster bar seating and table seating are available, and there is an extensive selection of wine, beer, and liquor. “We offer a fun, relaxed, family atmosphere where you can enjoy great food with great
friends,” Chris says. “We sell more food than alcohol, so parents often bring their children here and they have as much fun as adults.”

Don’t be deceived by the name. In addition to oysters, the restaurant offers a nice selection of other seafood favorites, ranging from Alaskan snow crab and grouper to Maine lobster and Mahi Mahi. For an appetizer, I order tried-and-true chicken wings, which Chris says are the restaurant’s “second claim to fame” behind oysters. The wings come in many flavors, including Jamaican Jerk, honey glazed, garlic, lemon pepper, garlic parmesean, and hot teriyaki. I go with the Ragin’ Cajun, which are tender and generously topped with a homemade, spicy sauce. That’s a good thing because I prefer wet wings over dry wings. Next, I order Brian’s popular Maryland handmade crab cakes. I am pleasantly surprised when my plate arrives with two lovely, perfectly browned crab cakes. Brian cooks them with a combination of lump crab, Italian breadcrumbs, butter, Worcester sauce, garlic, mustard, salt, and pepper. Sprinkled parsley gives this delicious item an extra zip of flavor. At the recommendation of Chris, I choose the increasingly popular white fish dinner, which comes fried, grilled, or blackened. I opt for blackened and soon realize why Chris himself eats this fish two or three times a week. For starters, I am often turned off by fish that tastes too strong or too “fishy.” The white fish is mild and is not likely to turn anyone away. The texture of this fish is extremely flaky and is slightly sweet. The blackened seasoning brings a limited amount of heat without detracting from the flavor. With all due respect to the restaurant’s famous oysters, I have to say it was the white fish that impressed my taste buds the most. No doubt, a visit to The Oyster Troff is well worth your time. Between the excellent seafood and upbeat, vibrant atmosphere, guests may feel like they’ve been transported to one of their favorite beachside restaurants.

Their appetites grow too. To keep their tanned bellies full, I’ve found it is easier to take meals outdoors where cleanup is a breeze and manners can be a bit more relaxed in keeping with the season. These easy and speedy recipes — with entrees cooked on the grill and refreshing sides — are a small taste of the outdoor go-to meals I love in the summertime. Pans/Utensils/Equipment Needed: Grill Pair of poultry shears Measuring cup Set of measuring spoons Small mixing bowl Mixing spoon Cutting board Paring knife Ingredients: 4 boneless, skinless chicken breasts (approximately 4 ounces each) 4 French hamburger rolls 1 cup shredded Monterey Jack cheese ¼ cup mayonnaise ¼ cup cooked bacon pieces ½ cup green onion, thinly sliced 1 large tomato, sliced ½ red onion, sliced Iceberg lettuce Junior Chef Jobs: • Measuring • Combining and mixing cheese mixture Instructions: • Heat grill to medium heat, 350 F. • Rinse chicken breasts and trim off all fat. • Cook chicken on grill over direct heat for 14 minutes, flipping half way through. Chicken should have an internal temperature of 175 F. and juices should run clear. • While chicken is cooking, mix Monterey Jack cheese, mayonnaise, bacon pieces, and green onion together in a small mixing bowl. Set aside. • After chicken cooks on grill for the full 14 minutes, place ¼ of cheese topping on each piece of chicken. Let cook for an additional 1–2 minutes. • Serve on a French hamburger roll and garnish with tomato, red onion, and lettuce.

Wine glasses come in hundreds of shapes and sizes, and choosing the right one is more about how you want your wine to taste than how the glass will look on your table.
When my husband and I attended our first wine club meeting a decade ago, we committed a faux pas that still brings a fair amount of teasing our way. We showed up with plastic wine glasses. I thought the red-stemmed acrylics were cute as well as practical because they wouldn’t break when we transported them back and forth to meetings. As newbie club members, we didn’t realize how important glassware is to tasting and understanding wine. Plastic glasses do not enhance the flavors of wine the way glass or crystal does.
If you have ever been to a dinner where both red and white wines were paired with the meal, you’ve probably noticed two different sizes of stemmed glassware at your place setting. The smaller glass holds white wine because it is served cooler; the red wine can stay at room temperature while consumed. Chances are you’ll finish a smaller glass of white wine before it gets too warm, but you can swirl the red for hours and the flavors may get better and better. But things get much more complicated at a true wine-tasting event where you’ll see even more various-

shaped glassware. Riedel Crystal, the wine glass many connoisseurs aspire to own, offers more than 300 shapes of glasses for wines and spirits. The 300-year-old Austrian company was the first to design functional shapes to improve the character and flavors of wines. Robert Parker of The Wine Advocate told Time magazine a few years ago that the Riedel family “has done more to enhance the oenophile’s pleasure than almost any winemaking dynasty.” When we match shapes and sizes of glasses with different varietals, wine drinking becomes
much more enjoyable. It is easier to distinguish the flavors and nuances of a particular wine when it is served in the proper glass. Riedel glasses, as well as many other less expensive versions, have slightly different shapes that do, in fact, enhance each particular type of wine. For instance, red wine glasses are fuller and rounder so that you can swirl the wines to release the flavor and to detect the aroma. The Bordeaux glass, which is the tallest, allows wine to flow easier to the back of your mouth to maximize flavors. White wine glasses are generally more u-shaped so that aromas are released, yet the smaller bowl keeps the wine cooler. To see just how glassware affects the taste of wine, I poured a 2005 Writers Block Zinfandel by
Cline (about $20) side-by-side in a large Bordeaux glass, a thick-crystal Burgundy glass, a stemless “O” glass, and a small U-shaped wine glass — the type often given free at wine tasting events. I later tried the same experiment with a $10 Apothic Red cabernet sauvignon. The wine in the large Bordeaux glass tasted smoother almost immediately because the larger surface area allowed it to breathe more. The wine in the smaller glasses tasted slightly astringent with a lingering taste of alcohol. The wine in the crystal glass eventually smoothed out, but a full 45 minutes passed before the wine in the freebie glass was drinkable. It continued to taste astringent with very little nose, which makes me wonder how many times people taste a red wine in those small glasses and dump it without giving the wine a real chance. The wine in the stemless “O” glass was also smooth, and it had the best nose of all four glasses. Maximilian Josef Riedel, an eleventh generation member of the glassmaking dynasty, designed the “O” stemless glass series for casual wine drinking about 10 years ago. The series has become the fastest selling in Riedel’s history, and less-expensive imitations are getting easier to find. After my personal wine glass experiment, I’ll be more inclined to use my stemless “O” glasses in the future. So how many wine glasses do you really need to own? It depends upon how many varietals you serve regularly. According to the website www.basic-wine-knowledge.com, a good rule of thumb is to have both Bordeaux and Burgundy glasses for red wines, smaller U-shaped glasses for whites, flutes for sparkling wines, and small dessert wine glasses. And save those plastic wine glasses for your next picnic or pool party.

Juneteenth Celebration
and the Royal Homecoming THE ROYAL HOMECOMING CELEBRATES THE RICH HISTORY AND CULTURAL HERITAGE OF ONE OF CENTRAL FLORIDA’S OLDEST AFRICAN-AMERICAN COMMUNITIES: ROYAL. “The Royal homecoming has been growing for 45 years,” says Beverly Steele, founder of the Young Performing Artists, Inc., a community program dedicated to developing young AfricanAmericans interest in the performing and visual arts, located in Royal. “It started as a community family reunion event — where people returned to visit family and friends, came to the community center for Sunday church service, and brought a covered dish.” More than 40 years later, this event has grown by word-of-mouth and now averages from 3,500 to 5,000 visitors. People come from all across the state and as far away as Chicago, New York, or Detroit, according to Steele. Some are family members of the former slaves who founded Royal, returning to celebrate history, freedom, and faith. Many who grew up here return year-after-year to stay connected with the Royal community and remember its rich heritage. Others have heard of Royal and want to know more. “The Saturday Juneteenth Celebration is new this year, says Steele. “It’s open to the public and everyone is invited. We want young people to know not only the history of the Royal community, but to be abreast of AfricanAmerican history.” The Juneteenth celebration begins Saturday, June 16 with a parade at 10a.m. Buffalo Soldiers, Black Seminole Indians and Royal’s history will all be topics covered during educational programs. The Royal Homecoming begins Sunday morning June 17 with worship services at 10a.m. 120 120 12

The two-day festival includes a motorcycle and car show, food and craft vendors, entertainment, education programs, fun, fellowship, and games. JUNETEENTH Juneteenth marks the celebration of June 19, 1865 — also known as African-American Emancipation Day — when General Gordon Granger arrived in Galveston, Texas to enforce the Emancipation Proclamation. It is also important to note this came two and a half years after the Emancipation Proclamation was signed into law by President Lincoln on January 1, 1863. This day commemorates African-American freedom and emphasizes education and achievement. Within the African-American culture this is a time for reflection and rejoicing, but also for assessment, self-improvement, and planning for the future, according to the Juneteenth website. Worldwide, people mark this day by contemplating what freedom truly means and remembering the suffering and commitment of those who worked, dreamed, and waited for freedom. Many also make pilgrimages back to homes or birthplaces — originally in an attempt to reunite families broken by slavery. Royal was among the growing communities founded by newly-freed slaves who were hoping to not only reunite families, but also build communities in which to live and prosper as a free people. As in many other newly established black communities, the church and elders played an important role providing leadership and guidance in the life and development of these new towns.
THE HISTORY OF ROYAL “When you come into this community you can see the connection between the black people and the Native American people,” says Steele. “My grandfather’s mother was full Cherokee. All the families out here have a connection to Native Americans — Seminole or Cherokee — or black slaves because the community was involved with the Underground Railroad. A lot of slaves passing through went into the Indian tribes and they hid them; some blacks stayed and made their families here.” The Royal Warriors are the keepers of the history and the foundation for the remembrance and celebration of Royal’s rich black history. Steele explains, “Every year we recognize the Royal Warriors who are more than 80-years-old.” These are the living keepers of the history and the heritage of the former slaves who founded Royal. Even though the Supreme Court’s Brown vs. Board of Education ended segregation in 1954, Sumter County schools were not integrated until the 1970-71 academic year when children from Royal left their local schools to begin attending schools in Wildwood. Alonzo A. Young, Sr., the Royal School’s last principal, was a respected leader in the Royal community since 1947. The Alonzo A. Young, Sr. Enrichment and Historical Center in the community of Royal is named to honor his memory and dedicated service to the community of Royal. “I grew up in Royal. I moved away to go to college, and then to New York City for my first job in corporate business. I stayed away for about 20 years, but in 1992 I came back into this community — back home — and founded the Young Performing Artists,” Steele says. Just like the whole community of Royal, Steele is committed to the preservation of black history and the celebration of freedom for all people.

When the weather is too hot to handle, cool off at The Florida Aquarium where you can swim with sharks and explore the shores. Unique exhibits, high-tech galleries, and more than 20,000 aquatic plants and animals make The Florida Aquarium one of America’s best aquariums. The attraction has received numerous honors, including Nickelodeon’s Parents Picks Award for “Best Tampa Tourist Spot” and Parents Magazine’s ranking for top five “kid-friendly” aquariums in the U.S. But don’t think The Florida Aquarium is just for kids’ entertainment. The 200,000 square-foot facility is designed to inspire and educate the entire family to become better stewards of nature. The aquarium is divided into four main galleries where visitors can experience hands-on encounters and get up-close looks at Florida’s ecosystem and aquatic habitats. Make your first stop the Wetlands Gallery just under the spectacular glass-dome that dominates the modern structure. When you enter the aquarium’s mangrove forest and hammocks, it’s easy to forget you are in the heart of downtown Tampa. The sights and sounds of free-flying birds, playful river otters, and even a few alligators transport you deep into Florida’s natural habitat. The Wetlands Gallery is a photographer’s dream where turtles, ducks, spoonbills, and even a wise old owl seemingly pose for every snapshot. Before you exit the Wetlands Gallery, climb to the top of the dome to check out “Aquariumania,” an exhibit dedicated to home aquariums. After leaving the fresh waters of the Wetlands, you can explore the brackish, salt waters in the Bays and Beaches Gallery. From lush sea grass beds to sandy beaches, this gallery is home to unusual and sometimes endangered creatures, including sea turtles, spiny lobsters, and stingrays. And be sure to look closely for the 300-pound Goliath Grouper who has been known to blend into his surroundings like a motionless statue. The Ocean Commotion Gallery uses equal parts of innovation, education, and high-tech animation to celebrate the energy of the seas. Kids and grownups love entering the interactive gallery through a colorful curtain of fog. Be sure to check the program schedule, because you do not want to miss the exciting “Shark Divers!” in nearby Shark Bay. Trained divers swim among sharks and moray eels — all while answering questions from the audience through an underwater speaker system. Shows are held twice daily but are subject to change. If you are a certified SCUBA diver, age 15 or older, you also can come face-to-face with live sharks. Stop by Guest Services to learn more about diving in Shark Bay. Prefer to stay dry? Stand for a moment in the narrow tube near the deep sea panorama and watch moray eels, queen triggerfish, tarpon, and more just on the other side of the acrylic barrier. Or sit and unwind while the tank’s 2,300 inhabitants glide across a panoramic window in rhythm with soft background music. Guests six years or older may swim in the 200,000-gallon Coral Reef tank with advance reservations. Be sure to stop “Down Under” and visit the Australian sea dragons, leafy creatures that look more like a plant than an aquatic animal. The Florida Aquarium is one of only a handful of aquariums and zoos in the world allowed to exhibit these unique creatures. The sea dragons are cousins to the nearby seahorses, also on display in the Dragons Down Under exhibit.
Among the most popular shows at The Florida Aquarium is the “Penguin Promenade” through the red-carpeted lobby where guests come face-to-beak with African black-footed penguins. Guests form a boundary where the penguins strut their stuff. Be alert because shoelaces and bracelets can become their new favorite toys. Check show times for the Penguin Promenade when you arrive at the aquarium. Finally, head outside where it’s your turn to get wet. The outdoor water adventure zone, known as “Explorea-Shore,” is filled with water cannons, slides, and even a pirate ship. The nearby Cantina Bar offers parents a shady place to watch all the action.
