Food in Italy, Spain and Poland In this issue of our magazine you will learn about the food of our countries. Get ready because you are going to see a lot of delicious dishes! Let’s start with Italy. Which is the most popular Italian dish? Of course…… pizza! Pizza is famous all over the world. There a lot of different types of pizza, or better, you can make it the way you like, you’ve only to choose the ingredients. Pizza has its origin in Naples. The ingredients to make a pizza are: flour, water, olive oil, salt and brewer’s yeast. You can find pizza everywhere: in restaurants, in pubs, bars but you can also cook it at home.

But pizza is not the only dish Italy is famous for. Ever heard of Spaghetti alla Carbonara? It has its origins in Rome. The ingredients are: eggs, cheese, bacon and black pepper. In the preparation the hot pasta is combined with a mixture of eggs, cheese and a fat (butter or olive oli) and the eggs should create a creamy sauce.

ORIGIN OF THE NAME The name comes from Carbonaro, the Italian word for charcoal burner and some believe the dish was first made as a hearty meal for Italian charcoal workers.

Olive all’Ascolana - Ascoli style stuffed olives is another typical food in Italy. The dish comes from Marche, in particular from Ascoli Piceno.

This dish was prepared for the first time in the 19th Century by the inhabitants of Ascoli In in this dish, there is an olive in brine with meal, and then fried. This dish is accompanied with some simple appetizers like fried vegetables (aubergines, zucchini), meal and fried cream (that is another famous appetizer in Italy).

In the region there a lot of delicious dishes. Frico is a typical dish of Friuli. It is composed of potatoes, onions and melted Montasio, which is a typical Italian cheese). The frico is accompanied with sausages and polenta. In the sausages there are : meat of mutton and pork, a lot of spices and red wine.Here in F.V.G. a lot of restaurants prepare this typical dish which is very very good. How can you make it? Find out below!

INGREDIENTS Seasoned cheese 500 gr Potatoes 500 gr Onions 200 gr Oil 50 gr Salt and pepper

Boil the potatoes in their peel, when they are cold, take the peel away and grate them in a bowl.Grate the cheese and put it away. Prepare the onions and put them

Here are other popular dishes in FVG Musetto and Brovada, in Friulian (the dialect of our region ) “muset e brovade”, is a typical Christmas dish from F.V.G., our region. The brovade is the resultant of “white rape” and the musetto is a part of the animal’s muzzle. The union of this two elements is thought to balance the taste of this delicious dish. You can make it cooking brovada with musetto, onions, rosemary, oil and lard.

CJARSONS Cjarsons is a typical Friulian desert.It consists in Ravioli stuffed with marmelade,cocoa and ricotta.Cjarsons were cooked for the first time in the north Friuli,because it’s a dish invented in the high mountains of Carnia. According to tradition, all the family cook this food because it’s considered a moment of aggregation.

And finally Plum Dumplings is a typical dessert and single dish of the Friulian culture.It is composed of dumplings stuffed with plum, sugar and cinnamon.The dish was introduced into our region during the Austro-Hungarian domination, because there were a lot of plum coltivations. Dumplings must be served out of the oven with melted butter and cinnamon

FOOD IN POLAND

Polish cuisine is very famous in the world and especially in East Europe. The cuisine affects the history of our country. The Polish cuisine is connected to a few countries, especially Turkey, Russia, Germany, France, Italy, and also to Jewish cuisine. Most popular national dishes are bigos, pierogi, gołąbki, kotlety schabowe, rosół, zupa ogórkowa, barszcz. Polish specific dishes and drinks are flaki, ogórki kiszone, kapusta kiszona, zsiadłe mleko, maślanka. Almost all of the dishes are eating with potatos, pasta or rice.

Polish dishes are really various. Polish cuisine is rich in dishes with flour e.g. pierogi, kluski leniwe. In our country people also like different kinds of soups like tomato soup, pickled cucumber soup, beet soup and many others. We usually have four main dishes: breakfast, dinner, dessert and supper. Between these meals we usually eat some fruits, some sweets or just sandwiches.

Some dishes from Spain Our delicious journey continues with more delicacies

Breakfast

for breakfast we usually drink milk with biscuits and jam on toast.

In Italy pizza, in Spain ……paella!!! Paella is actually really popular, not only in Spain. This dish has seafood, also meat, peppers, rice with paprika and you can also put lemon sauce on it. In Spain, another typical dish is “tapas”. In all restaurants we have “tapas”. The most typical is “Marinera”, “Ensaladilla”, crisps with lemon and pepper, potatoes omelette, squid, “ Croquetón” and salad.

MEAT In Spain we eat a lot of meat. Some are Serrano ham, pork, chicken and rabbit.

FISH We also eat a lot of fish. The most typical fish are: tuna, salmon, sardines, hake

SEAFOOD We also eat seafood. The most delicious are prawns, and squids

Lunch

We eat lunch at 2 or 3 o’clock. We usually have paella,

lentils, potatoes ,omelette, pasta and so on. Dinner

Dinner is the smallest meal we have. We usually eat pizza, salad and meat.

Desserts Some typical desserts in Spain are: Ring-shaped cakes: we normally eat it on 6th January. “Turrón”, “Polvorón” and marzipan: we eat it on Christmas ( the shops only sell it on Christmas Catalana cream: It’s made with custard and brown sugar. Rice with milk: It’s made with milk, rice, sugar and lemon. Fried milk: It’s done with flour and milk and after that you fry it..

SOME DISHES FROM MURCIA Meat cake: It’s made of puff pastry, meat, pork, boiled eggs and “chorizo” Garlic and tomatoes: It’s made with garlic mixed with tomatoes. Michirones: It’s made with “habas”, bacon, onion, ham and “chorizo” and garlic. “Ropa vieja”: It’s made with chickpeas, chicken, carrots, potatoes, turkey and pork. “Marinera”: It´s made with a piece of crunchy bread with with the shape of a ring and an anchovy on the “Ensaladilla”. Zarangollo: It’s made with fried pumpkin, potatoes and fried egg. Paparajote: It’s made with flour, lemon, water and after that, you fry all of them.

And now some recipes……… Tortilla de patatas List of ingredients: 4 eggs ½ kg of potatoes 1 medium onion (optional) olive oil salt Preparation step 1: peel and wash the potatoes. Cut them into small pieces. Add salt. step 2: put olive oil in a frying pan. When it is hot, add the potatoes and onions. step 3: put it in medium heat. Once the potatoes and onions are soft and golden, remove from the heat. step 4: whisk the eggs in a bowl until they are foaming. step 5: add the potatoes and the onions to the eggs in the bowl. Leave it ten minutes to soak. step 6: put two spoonfuls of olive oil in a non-stick frying pan. step 7: heat the frying pan until it starts to boil. step 8: put the mixture in the frying pan and put it in medium heat for about 15 minutes. step 9 (probably the most difficult one): use a plate or lid; put it on top of the frying pan and with a quick move, flip it over. step 10: put the mixture back in the frying pan with the cooked side up. Leave it at medium heat 15 minutes more or less.. step 11: take off the heat and save it hot or leave it to cool down if you prefer. Enjoy!!


The Polish students prepared Gazpacho too!

GAZPACHO It is a very typical Spanish starter. LIST OF INGREDIENTS 1kg of tomatoes 1 green pepper 100 gr of onions ½ cucumber 1 clove of garlic 50 gr of bread 125ml of water 3 spoonful of olive oil a little bit of salt 3 spoonful of vinegar PREPARATION Put all the ingredients in a container, except the salt, olive oil and vinegar, and mix them with a blender. When your mixture is liquid, add olive oil, vinegar and salt. Serve cold. You can also add crouton of fried bread on the top. It’s delicious!!


Of course ….PAELLA INGREDIENTS (for four people) 500 gr of rice. 800 gr of chicken (cut into small pieces) 600 gr of rabbit (cut into small pieces) (this kind of meat is optional) 250 gr of green beans 100 gr of tomato (cut into very small pieces) an onion 150 ml of olive oil salt paprika pulverized saffron (it is used so that the rice is yellow) 1 litre of water PREPARATION First, we need to heat the paella (the “paella” is like a frying pan where the food is cooked). We put some olive oil on it. When the oil is hot, we add the chicken and the rabbit. We add salt. The secret to make a good paella is that the meat should be well cooked. Once the meat is cooked, we put it on the sides of the paella,where the heat is less intense. We add the green beans and the onion in the middle. They need less time than the meat to be cooked. We need to keep stirring so that it doesn’t burn. When the green beans are done, we add the tomatoes. We don’t stop stirring because we don’t want to burn our paella. We add the paprika. Then, we add the rice. We stir and add the water. In a paella the quantity of water should be double of the quantity of rice, so if we use 500 gr of rice, we need 1 litre of water. In any case, the water should cover all the ingredients. We add the pulverized saffron or the colouring. Check if we need more salt. Once everything starts boiling, we leave it to boil for 5 minutes high heat. Then leave for slow cook for 30 minutes. Remove from the fire and leave it for five minutes. Then, it is ready. Bon apetit!


And finally something sweet!
 TARTA DE SANTIAGO LIST OF INGREDIENTS 250 gr of almonds 250 gr of sugar 5 eggs lemon peel ½ spoonful of sugar glass to sprinkle a round baking tin of about 22 cms and a “cruz de Santiago” (Santiago cross) made on paper (optional, it is for decoration).

PREPARATION

Preheat the oven to 175º for 10 or 15 minutes Put the sugar, the crushed almonds, cinnamon and lemon peel in a bowl. Mix them. Whisk the eggs in a different bowl. Then, add the eggs to the mixture and stir for two minutes. Put butter on the baking tin and add the mixture. Put the baking tin inside the oven to 170º for 50 minutes. When the cake is cold, put the cross made with paper on it and sprinkle sugar glass around it. Then, remove the paper. Your cake is ready!
