Eggs Benedict Ingredients:
Hollandaise sauce:
Egg benedict
30g butter at room temperature
½ English muffin 1 slice of soccer ball ham 1 egg
1 egg yolk (slightly beaten) 2t lemon juice
1t butter (for muffin) Dash of vinegar
¼ dry mustard 1/8t salt
Tomato Spring onion
15ml cream
Sprinkling of cayenne pepper Methods: Method 1: hollandaise sauce Method 2: poached egg
1. Place a heat proof bowl over a saucepan that is quarter filled with water (the bowl should not touch the water) 2. Remove bowl and place the lid on bring it to the boil. Uncover and reduce heat to a very low barely simmering. It important not to have it too hot, the egg yolk will cook too much and the sauce will curdle. 3. Place the egg yolk in heat proof bowl over the pan. Use a wire balloon whisk to constantly whisk for 1 minute. 4. Add butter, 1 small cube at a time, whisk constantly until it dissolved completely before adding another cube when the previous one is incorporated completely. (it should take about 10 minutes in total to add it all) don’t cook the sauce for too long or it may curdle. 5. The sauce will begin to thin once you start adding the butter. However, once the emulsion is established, after about the third cube, it will begin to thicken again. If it begins to separate or curdle it can be saved as long as it isn’t too grainy and the eggs haven’t set. Gradually add the cream, whisking constantly. 6. Remove the bowl from pan and place on a heatproof surface. The cooked sauce should have the consistency of very lightly whisked thickened cream. Whisk in the lemon juice, dry mustard and salt. 1. Place sauce pan on the heat, with 5cm of water. add a splash of white wine vinegar to the water. 2. We the water is almost simmering whisk the water creating a world pool motion, crack egg into ladle and lower into the water. 3. Cook for 2 ½ -3 minutes, remove yolk from the water and check runniness of yolk with your figure. 4. Toast the English muffin and top with ham. 5. Place egg on top drizzle with hollandaise sauce 6. Serve as desired
