At half past three, everything stops for afternoon tea Tea consumption increased dramatically during the early 19TH century and it is around this time that Anna, the 7th Duchess of Bedford is said to have complained of ‘having that sinking feeling’ during the late afternoon. The solution for the Duchess was a pot a tea and a light snack taken privately in her boudoir during the afternoon, hence her being widely attributed as the creator of Afternoon Tea.

More recently, Afternoon Tea has enjoyed the most miraculous resurgence as a wonderful way to catch up with friends or as an alternative ‘comfort break’ for delegates in an increasing time conscious world. Luke Davis, our talented Executive Chef from Rowhill Grange Hotel, has worked with some impressive establishments including serving The Queen Mother and presents superb Afternoon Tea options at the hotel. Here he embraces this most British of traditions

CHAMPAGNE AND STRAWBERRY JAM

MINI KENTISH SCONES

900g fresh strawberries, 800g castor sugar, 150ml champagne, 3 drops of freshly squeezed lemon juice.

375g butter, 140g sugar, 1.2kg flour, 45g baking powder, 200g sultanas, 425ml full fat milk

You will need a food thermometer and jam jars. 1.

Wash, remove tops and hull strawberries.

2. Place in a heavy bottomed saucepan and crush the strawberries with a potato masher. 3. Add sugar, lemon juice and champagne. Stir over low heat until the sugar is dissolved. 4. Increase heat rapidly and bring to full rolling boil. 5. Boil, stirring until the mixture reaches 150 degrees. 6. Allow jam to cool for 5 mins (but remember it is still very hot!) 7. Sterilise the jars with hot water. 8. Transfer to hot sterile jars, leaving 1cm headspace and seal. 9. Allow to cool for 10 mins and place in the fridge.

Place the flour, butter, baking powder and sugar together in a mixing bowl and rub together (as you would pastry).

2. Add the sultanas and mix in the milk until a dough is formed then rest for 20 mins. 3. Roll, cut into bite size rounds, pop them on a greased tray and bake for 20 mins at 150 degrees. 4. YUMMMMMMMM - eat whilst still warm and serve with a huge dollop of strawberry jam and clotted cream, all washed down with a proper cup of English tea or champagne.
