Champagne Overview
“Champagne is one of the elegant extras in life.” - Charles Dickens
Champagne is a sparkling wine produced from grapes grown in the Champagne region of France following rules that demand secondary fermentation of the wine in the bottle to create carbonation. Some use the term Champagne as a generic term for sparkling wine, but the majority of countries reserve the term exclusively for sparkling wines that come from Champagne and are produced under the rules of the appellation. The primary grapes used in the production of Champagne are Pinot Noir, Pinot Meunier and Chardonnay. Champagne appellation law only allows grapes grown according to appellation rules in specifically designated plots within the appellation to be used in the production of Champagne. Royalty became associated with Champagne in the 17th, 18th, and 19th centuries. The leading manufacturers made efforts to associate their Champagnes with nobility and royalty through advertising and packaging, which led to popularity among the emerging well off middle class. The Champagne production zone (AOC vineyard area) is defined and delimited by the law of July 22nd, 1927. It lies to the east of Paris. The zone stands at roughly 34,000 hectares of vineyards, spread across 319 villages (‘crus’) of which 17 traditionally rank as ‘Grand Cru’ and 44 as ‘Premier Cru’. Behind this mosaic of micro-vineyards lies a unique combination of natural factors. Climate, soil and topography have produced a region with almost as many geographical permutations as there are acres of vineyard. Making the most of that diversity is Champagne’s 15,000-strong team of well practiced winegrowers. The vineyards in Champagne are planted at altitudes from 90-300 meters, on predominantly south, east and southeast facing slopes. The average gradient is around 12%, rising to nearly 60% in some areas. Champagne’s undulating to moderately steep terrain creates ideal vineyard sites that combine good drainage with optimum exposure to sunlight. Champagne is produced with the same varying levels of sweetness, ranging from the driest to sweetest designated by grams per liter of residual sugar; Extra Brut (0-6 g/l), Brut (0-12 g/l), Extra Dry (12-17 g/l), Sec (17-32 g/l), Demi-Sec (32-50 g/l), Sweet (50+ g/l) Only when wines have followed all of the guidelines of the Comité Interprofessionel du vin de Champagne (CIVC), can they be classified as Champagne.

Founded in 1860 by Edmond de Ayala and based in the village of Aÿ, Ayala is one of the most historic houses in Champagne. Ayala was one of the eighteen founding members of the “Grandes Marques de Champagnes" and went through a golden age in the 1920s and 1930s, when it was one of the largest ten houses in Champagne. Known more recently as “the sleeping beauty of Champagne,” it began its re-ascent to fame when it was purchased by the Bollinger group in 2005. The House of Laurent-Perrier was founded in 1812 by André Michel Pierlot and took the name Vve Laurent-Perrier when Mathilde Emilie Perrier, the widow of Eugène Laurent. In opting to blend its Brut champagne with a majority of Chardonnay, Laurent-Perrier was expressing its difference and asserting the signature ‘House’ style of freshness, lightness, and elegance. It was during the 1950s that Laurent-Perrier, decided to install stainless steel tanks for its wines. The tanks were a major contributor in forging the House style. Situated in le Mesnil-sur-Oger, in the Côte des Blancs, the house of Salon has only one Champagne. This Champagne is produced from a one-hectare parcel owned by Salon: “Salon’s garden”, and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Eugène-Aimé Salon at the beginning of the century. The wine produced here is rare on all counts: always a single harvest, single cru, single grape variety and to complete the singularity in this wine, it is only produced in the best vintages. Sparkling Wine Overview
Production of sparkling wine
The primary fermentation of sparkling wine begins like most other wines, though winemakers may choose to use specially cultivated sparkling wine yeasts. The wines may go through malolactic fermentation, though producers wishing to make fruitier, simpler wines will usually forgo this step. After fermentation the base wines are then blended to form a cuvée. While there are examples of varietal sparklers, such as blanc de blancs (white of whites) are made from 100% Chardonnay. Most sparkling wines are blends of several grape varieties, vineyards and vintages. Producers with wide access to grapes will use wines from several hundred base wines to create a blend that reflects the "house style" of their non-vintage wine. It is through the initiation of a secondary fermentation that distinguishes sparkling wine production and gives the wine its characteristic "bubbles". One of the by-products of fermentation is the creation of carbon dioxide gas. While this gas is able to be released during the first fermentation, efforts are taken during the second fermentation to retain the gas and have it dissolve into the wine. This creates a high pressure within the wine bottle (on average around 5 atmospheres) and wine producers take care to package the wine in strong glass bottles. When the wine is open and poured into a glass, the gas is released and the wine becomes sparkling. There are several methods used to carry out this secondary fermentation. The most well known is the "Methode Traditional" or "Champagne Method" where the base cuvée is bottled with a mixture of sugar and yeast. The introduction of a fresh yeast and food source (the sugar) triggers the fermentation process in the bottle that the wine will eventually be sold in. Through the process of riddling and eventually disgorgement, the dead yeast cells (lees) are removed from the wine while still maintaining the dissolved carbon dioxide gas. A dosage mixture of fresh wine and some sugar syrup is used to adjust the sweetness level of the wine after it has been disgorged. The "Charmat method" takes place in stainless steel fermentation tanks that are pressurized. The fresh yeast and sugar mixture is added to the wine which rapidly stimulates fermentation in the pressurized environment. The wine is then cooled, clarified and bottled using a counter pressure filler. The process of carbon injection (or carbonation), the method used to make soda pop fizzy, does not involve initiating a secondary fermentation but rather injecting carbon dioxide gas directly into the wine. This method produces large bubbles that quickly dissipate.
Domaine Des Baumard is situated right in the heart of the Anjou, in the town of Rochefort-Sur-Loire, just south of the town of Savennières itself. The property has been in the Baumard family since 1634, but it was reconstituted and improved by Jean Baumard in the mid-1950s. Baumard has become something of a specialist in Crémant de Loire, producing no less than four cuvées of exceptional, hand-crafted sparkling wines from Chenin, Chardonnay, and Cabernet Franc. 27135

Domaine de la Minotiere is a small 15-hectare single domaine of cidre orchards cultivated under 100% organic certification. The specialty is traditional farmhouse cidre produced both in a dry (Brut) and sweet (Doux) style. The Domaine de la Minotiere owns a long tradition and elaboration of farmhouse cider coming from the fruit of its orchards, in a place called the "Golden Triangle" - known to be the best area to produce cider. Cava Overview
Cava is a sparkling wine of Denominación de Origen (DO) status, most of which is produced in Catalonia, Spain. It may be white (blanco) or rosé (rosado). The Macabeu, Parellada and Xarel·lo are the most popular and traditional grape varieties for producing Cava. Only wines produced in the Methode Traditional may be labeled Cavas, those produced by other processes may only be called "sparkling wines" (vinos espumosos). About 95% of all Cava is produced in the Penedès area in Catalonia. In the past, Cava was referred to as "Spanish Champagne", which is no longer permitted under European Union law, since Champagne has Protected Geographical Status (PGS) and Spain entered the EU in 1986. Colloquially it is still called champán or champaña in Spanish or xampany in Catalan. Today it is defined by law as a "quality sparkling wine produced in a designated region". According to Spanish law, Cava may be produced in eight wine regions: Aragon, Basque Country, Catalonia (Catalunya), Extremadura, La Rioja, Navarra, and the Valencian. The aging Requirements for Cava is a minimum of nine months on the lees. Reserva is a minimum of fifteen months on the lees and Gran Reserva has a minimum of 30 months on the lees (Brut, Extra Brut, and Brut Nature only). To make rosé Cava, small quantities of still red wines from Pinot Noir, Garnacha, Garnacha Tinta, Monastrell or Trepat are added to the wine. Besides Macabeu, Parellada, and Xarello, Cava may also contain Chardonnay, Pinot Noir and Subirat grapes. Like Champagne, Cava is produced with the same varying levels of sweetness, ranging from the dryest, brut nature, through brut, brut reserve, sec (seco), semisec (semiseco), to dolsec (dulce), the sweetest.

Over the years, Segura Viudas has earned a reputation as one of the top producers of cava. The winery has been noted for its high production standards, its labor-intensive approach to winemaking, and its penchant for releasing some of Europe's finest artisan sparkling wines. Segura Viudas dates back to the 11th century. At the beginning it was an inhabited watching tower that experienced several work extensions, which explain the presence of diverse architectural styles: Visigoth, Romanesque and Gothic. In the 13th century the tower lost its military importance and was converted into a masía, which is the name given to country houses in Catalonia. The Suriol family has lived and made wine in the same masia, the Castell de Grabuac, in Font-Rubí, Penedés, since the 15th century. Their 25 hectares of vineyards are divided up into 20 different microplots and surround the masia. Located in the Alt Penedés, the higher elevation wine growing area of the region, the Suriol vineyards are planted at 250 to 350 meters altitude on "heavy limestone" clay-calcareous soils. It’s a family affair at Cellars de Can Suriol, an estate that manages to embody tradition while producing some of the most delicious Cavas. “Naturally” in this case means working only with their collita propia (own vineyards) and certified organic grapes, no added commercial yeasts or enzymes, very little sulfur additions, and no dosage, or sugar addition, at bottling of their Cavas. Prosecco Overview
For over two centuries the hilly zone lying between Conegliano and Valdobbiadene, a mere 50 km from Venice, has been the true home of D.O.C. Prosecco, a sparkling wine obtained from the identically named grape variety. The weather conditions in this area are ideal, thanks to the mitigating effect of the Dolomites, which shelter it from cold northern winds, as well as the Adriatic Sea, which also has a positive influence on the climate. Since 1969 this area has been the D.O.C. production zone for Prosecco made from grapes of the Prosecco variety in sparkling and semi-sparkling. Prosecco is produced according to the rigorous D.O.C. regulations. For Prosecco DOCG, however the grapes come exclusively from an area that is circumscribed by law; vinification can take place only in the 15 Communes of the D.O.C. zone and the prise de mousse and bottling many only be carried out within the Province of Treviso. Before being offered for sale, every bottle must conform to a severe set of winemaking standards laid down by the Treviso Chamber of Commerce. The production area for D.O.C. Prosecco is today Italy’s first legally recognized “Sparkling Wine District”. Since 1963 the Consortium for the Protection of the D.O.C. Prosecco has guaranteed the observance of these rules, supervising and guiding all of the phases of production, from the vineyard to the bottle. Prosecco is produced mainly as a sparkling wine in either the fully sparkling (spumante) or lightly sparkling (frizzante, gentile) varieties. Unlike Champagne, Prosecco does not ferment in the bottle. It is typically to be drunk as young as possible, preferably within three years of its vintage, although high-quality Prosecco may be aged for up to seven years. Compared to other sparkling wines, Prosecco is low in alcohol, about 10.5 to 11.5 percent in volume.
