I also want to thank my family. Through all my life, my travels, and my many changes of my homes and careers, they have always supported me. Even when they didn't understand much of what I was doing, they always allowed me to fully experience life. I would like to thank my mom for always believing in my dreams, for listening to my crazy ideas and saying, "God willing." She worried, as I travelled to the other side of the world, without being able to communicate in any other language, but always made sure I was well and always encouraged me to go beyond the unknown. And I thank my father—for never really agreeing with any of my decisions but supporting me anyway, and for showing me how to have a drive in life and to go for it, always trying to grow and make it better. Also I'd like to thank my sister for always believing that I am better than I actually am. Even when she thinks I am crazy and out of my mind, she is always the first to say she'll buy my food and buy my book and be anxious to read it, even having no clue what I am writing about. PREFACE For years I had different people suggesting, and even recommending that I should write a book. My reply was always that I was a chef not a writer. I was not even good at writing recipes as I never cooked with measurements nor did I follow recipes myself-until I was the head chef of a vegan cafe that is. when not only did I have to create a menu but also train the others chefs to make sure they followed the recipes, I created a booklet for the kitchen with recipes and photos, including presentation of the plates. After I finished the booklet I realized that I was closer to a cookbook than I could ever be, and this was my chance to make it a reality. I wrote the book, created more recipes and showed it to a friend who told me that they loved the content but that it wasn't a book because it had no story. So I changed the whole idea of this book, lost all my fears about writing, and let go of all belief that I was not good enough to write a book. I don't believe I am a good writer, but that made things even better because this made the content simple and easy to read and understand. When I was starting to write this book, I came to the realization of what I was actually supposed to write about-l am not only supposed to teach people how to cook, and show them how easy it is to cook, but actually help them take this as the first step to awakening for a spiritual journey. Food and cooking was and is my way that I connect with and express the divine within me. When I enter the kitchen it is my time to shut out the world around me, look within me, listen to my mind and connect with my soul. That is why I was never able to write or follow a recipe—whatever I cook comes to me through "meditation". Cooking is my way of meditating. Once the story of the book finally became clear, I understood that writing a book wasn't just a thing I would do, but was a thing that God wanted me to do, All these years, answering all the requests for me to write a book had finally become so easy, and such a divine story that I understood that writing this book was my purpose, that God wanted me to share a message. Before I started to write I would ask God to show me the message and I would pass it on to you. I never thought I would be able to write a book, yet once I got started I was never so determined to do something in my entire life.

INTRODUCTION When Buddha was looking for enlightenment he detached himself from everything material in this world so that he could connect with God's world. He detached from the palace he lived in, his money, his power, his wife and his child.

One day he decided he would sit under a tree, refusing to eat or move until he achieved enlightenment. As time passed by he almost died from starvation. One day, after realizing that dying of starvation was not the key to enlightenment, Buddha was walking and he came upon a man tuning his guitar. Watching him for a while, he realized that if the string was too tight, the guitar wouldn't play well, and that if the string was too loose, it wouldn't play properly either. So he concluded that to be in-tune it needed to be in the middle—to be balanced. After this realization, Buddha once again sat under the Bodhi tree and it was then that he achieved enlightenment. The same is true with our diet. Being too strict with our diet limits our nourishment, while being too loose allows too much of everything, including the wrong foods into our diet. Both extremes get in the way of our vital health. I d ea I ly, we h ave to fi nd a bal a nee. But why is it so h a rd to fi nd a ba I ance? As e ve ry string has its own sound, every person has his or her own needs. Therefore, each person's diet should be adapted to his or her unique constitution. It is necessary to find the perfectly balanced diet and to connect with your body's intelligence and listen to it needs. In this book I will explain how the desire to look good can lead you to connect with Mother Nature. Once you understand how organically grown food, vegetable juicing, and a plant-based and wholesome diet will not only make you lose weight, but also help to maintain your ideal weight and help you feel fantastic, you will realize that nature is the only source of every healthy food available. You will also learn the importance of taking care of nature, as nature takes care of us, providing us with the food we need to live, and to look great. You'll learn how to connect with your body by becoming aware of the present moment. The truth is that we also want to feel good, but looking good without feeling good is not being in balance. You will learn to look within and understanding how you feel, and how emotions can cause or heal illness. Ayurveda, an Indian holistic form of medicine, believes that most diseases are psychosomatic, and are caused by negative thoughts and emotions. Therefore it is necessary to connect your body and mind, as your mind will tell your body how to feel.

This is a great green, cooling juice. Parsley is good for the kidneys, helps to heal urinary infections, and improves circulation. It also contains oxalic acid (which can irritate the kidneys) so be sure to use it in moderation. Celery and romaine lettuce are good for the nervous system and can help w i t h constipation. Kale is cooling for the liver, and helps w i t h ulcers and circulation issues.

Beets are a good tonic for the liver. They help to build blood and prevent menstrual-related

anemia.

Recent

studies have shown that beets also help w i t h high blood pressure. Spinach is good for the liver; it helps improve poor digestion, constipation and the lymph system. Carrots are good for the liver and help w i t h ulcers and weight loss.

Dandelion greens are loaded with nutrition, are a good source of iron and calcium, and are loaded with antioxidants. They are the number one vegetable for cleansing and detoxification. They help with weight loss, are good for the liver, constipation and anemia. Carrots are rich in vitamin A, C, K and B6. Cucumber helps with high blood pressure, fluid retention, weight loss, detoxification and inflammation, and it is a good source of vitamin K, copper and calcium.

It's incredible that not many people juice or eat fennel, which is agood pain reliever. Italsohelps withdigestive problems such as bloating, and helps to promote menstruation and reduce PMS. It helps with anemia, blood pressure, constipation and it has a licoriceflavor. Mint is also good for pain relief, menstrual pain and headaches. It helps with flu, coughs, and digestion. Lemon is great for indigestion, constipation, weight loss, toxin elimination, and it is high in vitamin C.
